Tom did succeed in securing a place to study at RADA, and to this day, he maintains that it is his biggest achievement. “It was game changing: that was the thing that gave me a way in, because it was like I was on a different continent, and the acting world was in totally another place, and how the hell do I get there, which flight do I have to get?” RADA undoubtedly opened many doors for Tom, whose CV since graduating has been impressively varied. Including, amongst other roles, appearances in BBC thriller Paula, legal drama Silk and period drama Dancing On The Edge, since a break out appearance in Ricky Gervais and Stephen Merchant’s coming-of-age comedy Cemetery Junction. Perhaps most notable is his brooding portrayal of Prince Albert in Victoria, ITV’s blockbuster about the British monarch; it was the first time Tom had taken a role that would see him appearing over the course of several series. “I am a restless soul I guess; I always want to change direction and challenge myself. But there was a real joy with staying with Albert for three years, and a real challenge within that,” he tells me. “And I loved that, I loved applying myself with that, and being able to take my time…” “The attraction of that character was that you know the arc of that story. You can focus on the little things, because you know where the story is going. I think maybe in my 20s I was always a bit cautious, because you can get to the end of season one, and they can go, ‘Oh, by the way, the character is a superhero’. Whereas, with Albert, that wasn’t the case, you can treat it as a film, or as any other kind of one-off job. It was amazing doing that for three years. But coming out of it and looking at the landscape, I guess I was keen to go back and challenge myself,” he explains. We didn’t have a clue. “THERE WAS AN HONESTY TO ACTING, IN TERMS OF HOW YOU COULD DELVE INTO THE HUMAN PSYCHE”
“It’s something that I have been keen to make for some time,” Tom tells me. Written and directed by William Nunez – who is thus far better known for his documentary work and as a news director for NBC, Bloomberg and CNN – the project has been a number of years in the making. “Robert was a fascinating man; very complicated and conflicted, but a genius in many ways when it comes to his poetry and his lyricism and his wit,” says Tom, explaining his desire to take the part. “He was not perfect by any means, but there are elements of Robert that were breath-taking. The way he lived his life, there was a bravery to him, an unabashed honesty about him. We had been trying to make that for a good few years, and we got that done right before lockdown, which was great. It was a really fascinating job.” Production may have wrapped, but there are still uncertainties surrounding when both of these films will be released. “They are both independent films, so COVID is going to have an impact on that,” Tom explains. “They will be the kind of films that will go to festivals… so the exact release date is dependent on how it works out in terms of COVID. You know, we are all kind of – the whole world, I guess, right now – just tentatively making decisions, but we just have right, which is why I wanted to be part of it. I bump into an old school friend and can’t help but notice how great (read: young) she looks. She lets me into her secret: Dr Anne Mendelovici. The approach is grounding and supportive. As we look in the mirror, Dr Mendelovici points out that one side of my neck has a more pronounced muscle than the other, something I had never noticed. She recommends Botox to even the appearance of this out, and also in my frown lines. After a single treatment I can’t even see the imbalance, and my wrinkles are vastly improved. Create physical and mental boundaries For Dr Luke James, Bupa Global’s Medical Director, it’s crucial to create clear boundaries at home: “We hear from many executives that they’re not able to turn off, or that they’re struggling to concentrate, and it’s here where a physical workspace, which can be exited after the working day is over, can really help.” It also means imposing psychological boundaries too, ensuring that both work time and family time are protected. For some, this means shutting down emails and collaborative technologies once the working day is over, or reducing non-urgent calls at weekends. Founder, The Italians What’s the last thing you cooked? I recently made some homemade spinach and ricotta ravioli; I was really craving it after Christmas. My mother taught me how to make it years ago and it’s something I come back to again and again. What’s your signature dish? Spaghetti (I like to use Pasta di Gragnano) with Piennolo tomatoes and lobster. I like to pull this one out when entertaining in the summer, during tomato season. Usually with a chilled bottle of Lugana – you can’t go wrong. What’s the best meal you’ve ever eaten? Always my mum’s cooking, she makes the best food. I grew up in Calabria, so we always had the most delicious fresh produce. Mum would often make aubergine parmigiana; it is a favourite of mine to this day. Whenever I make it I follow her recipe. Guilty food pleasure? I have a slight addiction to cheese, especially Alpeggio cheeses. They are my vice. If you could cook for anyone, who? I would love to cook for my daughters, they are both living in Australia and I miss them very much. They both love food with a bit of spice so I would probably make a nice spaghetti with tomato, olive oil and lots of fresh chili. What should no kitchen be without? Space! Utensils and equipment are important but what is a kitchen without the space to store it all. My pantry is my favourite part of my home, I don’t think I could cope without it. Neil Borthwick’s Paris-Brest with chocolate sauce
We might not be able to get out and about and experience the best chefs at the moment, but a new book, out this month, introduces us to some rising stars from around the world and allows us to try out their personal recipes at home. In a celebration of the next generation of culinary leaders, Today’s Special sees twenty iconic chefs from around the world choose four newcomers who they consider to be rising stars. Each of the 100 nominated chefs was asked to contribute a menu, along with the recipes needed to create it, and everything has been illustrated with beautiful photography of the dishes and the chef’s restaurants. One of Margot Henderson’s nominations was Neil Borthwick of Soho’s iconic The French House, here, he shares a delicious dessert recipe from the book. Bon appetit. (£39.95, phaidon.com)
METHOD
INGREDIENTS For the choux pastry 250ml water | 100g unsalted butter | Good pinch of sugar | Pinch of salt | 140g all-purpose (plain) flour | 5 eggs| Egg wash | Sliced (flaked) almonds Caramelised hazelnuts 25 blanched hazelnuts | 100g superfine (caster) sugar Praline Chantilly 250ml double cream | 10g praline paste Chocolate sauce 50g sugar | 200ml water | 160g dark chocolate, chopped Assembly Praline paste | Powdered (icing) sugar
Make the choux pastry Preheat the oven to 180°C. Line a sheet pan with parchment paper. In a saucepan, combine the water, butter, sugar, and salt and bring to a boil. Whisk in the flour and cook over medium heat until the paste comes away from the sides of the pan. Transfer to a stand mixer with the paddle attachment and beat until it’s cool enough to add the eggs. Add the eggs one at a time, beating well after each addition. Transfer the dough to a piping bag and pipe into rings (to represent a bicycle-wheel shape) on the lined pan. Brush with egg wash and top with the almonds. Bake for 20 minutes. Rotate each pan front to back and bake until cooked, 20–30 minutes longer. Caramelise the hazelnuts Spread the hazelnuts on a sheet pan and roast in the oven for 10-12 minutes.

In a saucepan, cook the sugar to a golden caramel, add the hazelnuts, coat well, and spread on a tray to cool. Make the praline Chantilly Lightly whip the cream and praline paste together and place in a piping bar with a star tip (nozzle). Make the chocolate sauce In a saucepan, bring the sugar and water to a boil. Whisk in the chocolate and cook over gentle heat to thicken slightly. To assemble Halve the Paris-Brest horizontally. Pipe the Chantilly cream on the bottom half, then drizzle a little more praline paste on top, and add some caramelised hazelnuts. Place the other half on top, pour the chocolate sauce in the middle, and dust with icing sugar.

ucked away in a side street off Caledonian Road is this award-winning mixed-use complex, which Sarah has shared with partner Jeremy Till for 21 years – not counting the nine months spent in an on-site caravan while the ambitious project came to life. The ground breaking property, which comprises one and a half levels of live/work space, three bedrooms and a five storey tower, is a masterclass in modern sustainable living. What were the main reasons behind the retrofit? The retrofit had two aims: one was to improve the building’s energy efficiency and the second was to make it age-friendly, so we could continue to live here safe and well into our ‘fourth age’. How have you upped the property’s eco-credentials? The eco work mainly comprised improving the building’s external envelope. Specifically, this meant improving the levels of insulation in certain places, increasing air tightness throughout the building, replacing some old and malfunctioning windows, and replacing the heating and the mechanical ventilation and heat recovery systems. As a result, we’ve improved its energy efficiency by 62 per cent.
And how have you futureproofed? I love the idea of a property that can, in time, adapt to the resident’s needs. Buildings should never stay still. The building was designed for us in our 40s and now we’re in our 60s and want to stay here for as long as possible. Needs change and our knowledge and outlook are different now. Having lived here for 20 years, we knew which bits we liked best and which bits worked less well, and we thought about how best to convert what we had to address our future needs. One area that saw the most change was the utility room. The removal of the composting toilet released a fair bit of space and we converted it into a new kitchen for a future carer. Now the entire ground floor is almost a self-contained apartment, ready for someone in case we need live-in help in future. Tell me about some of the playful elements The most playful are the red staircase and the mezzanine, and the tower room. The red stair has treads large enough to sit in and read a book; the mezzanine balustrades are made of rubber bungees so it looks a bit like a boxing ring. Here we have scatter cushions. The tower is a place of dreams – there’s a day bed for that! It’s used for writing and has a tiny window for spying on the street below.
“Living in the tree tops we definitely wanted to bring nature in and the colours reflect that” How would you describe your interiors style? And how have you personalised the space? A bit eclectic. The off-white walls and ceiling are a quiet backdrop to our furnishings and pictures. Quite a few items were inherited from my father who bought nice pieces in the ’50s and ’60s. Some pieces were commissioned by us and are built in, such as the kitchen table made of recycled glass and the ‘Welsh dresser’ that we commissioned for the living room. We designed this along with other bespoke fittings and they were made specially for the building out of birch plywood. All the movable furniture was repaired or re-covered in new fabric when we renovated. The house is filled with earthy colour pops both in the décor and within the structure of the building itself – was this a deliberate move to connect with nature, to bring the outside in? We’re on stilts, but in nature. You have an abundance of natural light flooding in. How does this evolve from day to night, and through the seasons? Light is a very important determinant of mood and wellbeing. This is another connection to nature. There’s a huge difference between summer and winter, day and evening, or even overcast and sunny. The curved larder wall captures this beautifully – it’s a canvas for moving sunlight. My favourite place is sitting in the living room in the month of May, looking out over the tree canopy in the garden when the leaves are brightest, newest green and the sky is blue. Every morning, after the nursery drop off, I head straight to Moberly Sports Centre for my daily workout. It was completely renovated a couple of years ago and now offers a wide range of facilities that the family can enjoy, all at affordable prices. As a freelancer, it’s important to start the day off in a positive way and exercise is my method. I’ll sometimes treat myself to a coffee at Wildcard or Vicki’s, and on occasion grab lunch if I have a busy day ahead. If I need a change of scenery from my four walls, then The Alice House is a good alternative: friendly atmosphere with strong Wi-Fi and welcoming staff, not to mention good food options. I visit the Queen’s Park Children’s Centre regularly; they offer a wide range of services
for new parents within the area and I’m able to touch base to gain valuable feedback on the maternity services within the area. Imperial Maternity Voices Partnership is a service user group that enables mums and dads to get involved directly with how the Imperial College Healthcare NHS Trust runs its services. It’s so valuable to hear about experiences firsthand; enabling improvements to be made. I encourage all parents to get involved and have their say. The weekend is very much welcomed and usually kicks off with a bottle of our favourite Pinot Noir at The Salusbury Winestore. Fast forward to Sunday, my favourite day of the week, and you’ll find me at the farmers’ market, which offers an amazing selection. Some of
my favourites are Wild Country Organics, the tomato stall and Joli, who serve the best gyoza dumplings and sauces to match. They’ve also opened a store in Kensal Rise, which is great for my midweek cravings. If I’m not at home preparing a Sunday roast, then I’ll be at The Paradise, where the food, wine and service are all great. If not, The Whippet Inn does great beer and a vegetarian roast option. Afterwards, we’ll slowly walk it off with a lap or two around the park before returning home and preparing ourselves for the week ahead.

Dexters’ David Luxton describes this neighbourhood watering hole, which has been serving the community for 20 years, as the pinnacle of Queen’s Park. “It is well known by locals for its pub, dining room, deli and wine store – not forgetting the best crispy dough pizza in town,” he says. “The Salusbury’s friendly team provide a fantastic atmosphere and there’s both indoor and al fresco dining available.” We’ll be there just as soon as we possibly can.
Offering all day brunch and evening seasonal sharing plates, this trendy Aussie eatery is a firm favourite amongst NW6 residents. Savills’ Euan Williams confirms that “Milk Beach is a really cool Australian restaurant and bar. It’s a quirky place that may not be on many people’s radars but it is loved by Queen’s Park locals. They source coffee from all over, which they roast themselves. And they offer organic food, which is great for anyone with intolerances. In normal times, if you’re lucky enough to book a space, they offer a wine tasting night two or three times per month.”

Queen’s Park Rangers football club was formed in 1882 by the old boys of Droop Street board school, who originally named the club St Jude’s. On its merger with Christchurch Rangers in 1886, the current name was adopted. Don’t be misled by the name though, the team have played outside the neighbourhood for much of their existence, mostly at the present Loftus Road ground. 71

Lockdown learning With the country once again in lockdown, and schools closed, there are so many unanswered questions for parents. What impact is the constant policy change having on our children? Will it affect their development? What might it mean for their behaviour and social skills? What about future opportunities? And more importantly, how can we best support them whilst maintaining our own sanity? From both her own experience as a parent, and her professional research, Kate Edwards, Pearson’s Chief Learning Officer has some of the answers. Here are her top tips to make the online learning experience more manageable for everyone. Convey calm Encourage your child to talk to you about what they are feeling and respond with empathy and understanding. It’s an uncertain, and often frightening time; we need to show our children that we’re here for them. Children are receptive to learning when they feel safe and secure.

Make a plan that helps achieve outcomes In the world of learning, ‘outcomes’ is a word used quite often; it refers to the learning goals that students are meant to achieve. The outcome might be to understand a topic, develop a skill, or for students to socially develop and connect with peers. Get clear on what these outcomes are for your child, based on what they want to learn, what their teacher’s goals are, and how you as a parent can support them.
Help your child believe they can do it Everyone is going to experience setbacks and frustrations. It’s key to try and see those moments as useful markers on a journey towards learning, rather than signs that it is time to give up. If students struggle with an assignment use statements such as: Tell me what you’ve tried so far What else can you try? What have you learned so far?
Create routine Students usually work best within routines. Work with your child to prepare a schedule of what needs to be completed each day/week. Part of effective scheduling is building breaks into the day and not trying to put too much learning into one block. If you are working from home, make sure your child knows when you are available and unavailable to help them. Setting clear boundaries is essential for your sanity and for your child’s self-esteem.
Ensure there is a focus on individual progress and feedback Every school will have a slightly different approach in terms of how they assess students. As a parent, you need to make sure that your child’s knowledge and skills are being tracked in a meaningful and productive way. This should be a depiction of their individual progress (not how they compare to classmates). Ask your child’s school how progress will be shared with your child and with you. On top of making sure

that your child’s school is measuring progress, it’s essential that your child is receiving regular feedback on how they’re doing. Provide opportunities for developing soft skills and social skills Whether it’s communication, collaboration, or critical thinking – acquiring and developing these skills is just as important as enhancing knowledge. Much of your child’s time at school is about having fun, connecting with new ideas, and socialising with friends. During this time away from school you can use technology to take virtual field trips to museums or foreign countries, play interactive games, and video call with friends and family. Or you can develop these skills without technology – have siblings work together to solve a problem (e.g. how can you earn enough money to buy that new video game) or have your child plan a new layout of their bedroom to maximise space. Look after your own wellbeing This is probably easier said than done, but try not to put too much pressure on yourself. You don’t have to become a professional educator; you are a parent. Communicate with your child, empathise with each other, and try to take some time for yourself. Winter warmers at St. Anthony’s School for Girls From care home visits to book donations, this winter, pupils at Hampstead’s St. Anthony’s School for Girls have embraced the spirit of giving Several charitable initiatives took place at St. Anthony’s over the last few months, encouraging the girls to think about others less fortunate than themselves – as well as helping them to support their local community. Wrapping up warm against the cold, Years 2 to 6 accompanied their teachers to the nearby Sonesta Nursing Home. While COVID-19 restrictions meant the girls were not allowed in, they were able to entertain residents by singing to them outside their windows. Sonesta’s manager said “The residents were upset that the children had to stand outside but they absolutely loved it. It made their day.” Pupils were also asked to bring in unwanted books that could be passed to the Children’s Book Project. Deputy head, Raffaella Merolla explains: “Across the UK, one in four disadvantaged children own fewer than ten books, while one in eight have none. Our girls
were so generous in their donations of books, meaning we were able to donate 200 titles to this initiative.” In addition, Miss Merolla, along with Friends of St. Anthony’s, had all pupils involved in the school’s Giving Tree for CARIS Camden Families, which saw gifts purchased for 65 children who spent Christmas 2020 in Camden hostels. Each pupil was buddied up with a child and wrote a card to accompany a gift bag. Year 3 pupil, Zoe says: “I was really pleased that the book going to my buddy was George’s Marvellous Medicine by Roald Dahl, he’s one of my favourite authors!” St. Anthony’s pupils also enjoyed sweet treats after school, tucking into a charity bake sale in aid of Magic Breakfast, which raised over £200. Magic Breakfast works with almost 500 UK schools to provide healthy breakfasts to pupils who would otherwise go hungry. Headteacher Donal Brennan says: “I’m
so proud of the hard work and exemplary behaviour of our girls. Pupils have adapted smoothly between school life and remote learning and our Year 6 girls have confidently sat their 11+ entrance exams under current pandemic restrictions. Yet, despite the ongoing challenges around all of us, our pupils have engaged enthusiastically, willingly and happily with our numerous charitable endeavours, thus supporting some great causes and reaching out to the wider community.” Now the school is looking forward with renewed vigour, optimism and a willingness to embrace the challenges that may come its way.
