As summer progresses, thoughts turn to garden grooming. This year, we’ve fallen for the wonders of water: discover how it can be used to create a statement whatever the size of your outdoor space. Of course, city living means that even the tiniest terrace isn’t a given, luckily we have access to some wonderful open spaces, as cover star Lily Newmark will tell you. The rare occasions she’s not working, she spends as much time as possible in the park, enjoying the healing nature of being amongst the trees (something that was particularly important after her latest project). Perhaps next time she’d like to take a picnic: she’ll find inspiration in the recipe on our food pages. “I did a lot of crying,” Lily Newmark tells me, emphatically, when I ask about the making of her latest project, feature film debut Pin Cushion, an all-female fairy tale set against the backdrop of the workingclass suburbs. The film tells the story of eccentric single mother Lyn (played by Joanna Scanlan) and her awkward teenage daughter Iona (played by Lily), who move to a new town in the hope of making friends and starting afresh. It is, at heart, a tale of bullying and mental illness and being disconnected from reality. It is not a happy film, but it is uniquely watchable. Writer and director Deborah Haywood has described it as a very personal project, saying that: “The physical events aren’t autobiographical, but the emotions are.” Something Lily very much relates to, having herself been bullied as a child. “It was quite difficult to make, but it was also a very cathartic experience for both of us, because it meant that we could face demons that we hadn’t been able to in the past,” she explains. Adding: “although there were a lot of tears, they weren’t traumatic tears. It was a very strong, female environment and it felt safe to cry.” Having premiered at the Venice International Film Festival, the film received unanimously positive reviews from the critics. It is up for general release this month and Lily is intrigued to see how the public will react. “It is a film about mental health, and even though people seem to be very encouraging about mental health issues these days – coming forward with their own stories, or being very positive and encouraging towards people who have – it seems that it is still a very touchy subject for some.” Of course, negative feedback is always harder to swallow when the subject matter is so personal, “but that is just the risk you take when you make art,” she reasons. “People will take what they want from it, and project their own experiences 44

onto it, and it won’t always be positive for everybody,” she tells me, with a shrug. Iona is an especially interesting choice of role for Lily, given that she was originally attracted to acting because of a desire to make people laugh. “At school I was a bit of a class clown,” she admits. “I wasn’t always the best student, in the sense that I was constantly getting into trouble for making a clown out of myself, but I made people laugh and that was important for me. And now I definitely think that physical comedy is my forte really. It is where I am happiest.” She says that she briefly toyed with the idea of studying theology or philosophy, but knew deep down that it wouldn’t have made her happy. Having been involved with making costumes for the National Youth Theatre as a teenager, acting felt like the obvious next step. She spent two years with the Albany Theatre Company in Deptford and later joined the National Youth Theatre as an actor, before going on to study Acting and Contemporary Theatre at East 15 Acting school, graduating in 2016. Lily made her television debut even before she graduated, with a recurring role in NBC’s Emerald City. Nevertheless, she is glad that she took the course. “It was definitely worth it,” she nods enthusiastically. “I recommend taking classes, even if you have an amazing instinct. You are never too young or old to learn.” It does seem to have been time well spent – less than two years out of drama school Lily has been cited by BBC Entertainment as ‘one of the UK’s most promising young actresses’ and she was nominated as Most Promising Newcomer at the 2017 British Independent Film Awards for her role in
Pin Cushion. “I have achieved a lot and I do feel proud of myself,” she smiles. “I only graduated two years ago and I have done 11 or 12 projects so far. I have worked very hard, but a lot of it is about being in the right place at the right time.” Up next is comedy Juliet, Naked, in which Lily plays a supporting role: another hugely positive experience for her. “It was produced by Judd Apatow and directed by Jesse Peretz, and I was acting with Chris O’Dowd who is one of my favourite comic actors. And Rose Byrne, who is hilarious as well. And Ethan Hawke was in it…” she enthuses. “It was my first comedy – I’ve done a couple since – and we had such fun making it. I’m sure that is going to come across to viewers and that it will be a hit.” Whether or not she is right remains to be seen – it is due for release in the States next month, and later in the year over here – in fact she hasn’t actually seen it yet. That is, though, quite normal, she assures me. “You generally don’t see much of what you have worked on. I’ve done a lot of projects over the past year and a half and I haven’t seen any of them. It’s a bit of a waiting game really.” How does she deal with that? “You’ve just got to forget about it and move on to the next project.” The long, long list of things Lily is currently trying not to think about includes the upcoming BBC adaptation of Les Misérables, in which she has a supporting role; and Rudolph Herzog film How to Sell a War, in which she stars opposite Katherine Parkinson. “My agents are constantly telling me to chill out and just be happy, because I am doing well. But I want to be working non-stop really. I like having things lined up,” she laughs.
Right now she is taking a break at home in London before heading off to complete filming on a project for Netflix, although she is unable to tell me anything more about it. She’s spending time with her family and her sausage dog Wilfred. “He’s my soulmate,” she grins. “He bounds about the place, inspiring me to get up and enjoy life and be grateful and happy. When I am not filming we go to the park every day. I watch the birds and sit amongst the trees and take deep breaths. It is very healing. We are lucky in London to have so many lovely green spaces where you can do that.” Having been born here, Lily is evidently a big fan of London. And she feels very lucky to have grown up in the Capital. “It is never boring; there is no way it ever could be. It is just filled with so many different people and cultures, and things to see and do. Even just walking around without an agenda is very exciting.” Perhaps surprisingly, she feels very safe here. “Even though there is a long way to go when it comes to politics, it is a pretty easy going place, and in contrast with a lot of places in the world, it feels like a pretty safe place to be a liberal woman,” she tells me. The doorbell rings, and Wilfred, who has been dozing on Lily’s lap, leaps up and starts manically barking – not just a soulmate, but a bodyguard too, then. Our peace disturbed, it feels like the right time to bid farewell to Lily, for whom a date with one of London’s finest green spaces is evidently on the cards. He then sets to work cutting and styling my hair in a way which will be easy for me to care for at home, while giving the impression of greater body. The Petersham, Covent Garden “It’s meant to be amazing!” It’s the third time I’ve heard those words and now I’m not sure The Petersham will ever live up to the image I’ve built up in my head. Hidden in plain sight, among the buzz of the diners and theatre-goers, you’ll find the aptly named Floral Court. With a glass of rose petal Prosecco in my hand, I settle in for the evening. Behind me is a large floral display and the heady scent of fresh flowers lingers in the air – it certainly lives up to its name as a nursery. The rustic furniture, along with the weathered, vintage mirrors and opulent chandeliers are also reminiscent of a Parisian café. It’s elegant but in an outdoorsy rough-around-the-edges way – we are, after all, sat on what looks like fancy garden furniture. Likewise, the food is beautifully presented without being too fussy. From the pea and mint risotto that has me wondering whether I should ask the chef for the recipe, to the melt-in-themouth fillet of John Dory, each dish is light but still generous in size. And let’s not forget the almond and apricot tart that I’m not sure I’ll ever be done talking about. But it doesn’t stop there, because it wouldn’t be Petersham Nurseries if there wasn’t a flower or two to finish each dish off – a fitting nod to the setting and its ever-popular sister restaurant. It seems Petersham Nurseries is not the only one making the move to the West End. Between now and September, 20 new restaurants will be opening in the area, turning Covent Garden into the place to eat. Good news for fans of Antipodean coffee roaster Caravan, the brand is opening its first West End restaurant this month. Bringing Caravan’s signature all day dining and craft coffee to Fitzrovia, the new site will be located in the old BBC Radio recording headquarters. In a nod to the building’s history, the basement will house a ‘record room’ offering private parties the option to hire the space, with a dedicated bartender and a sideboard of treats. Upstairs, a large bar weaves throughout three defined dining rooms, making it the perfect destination for both post-work drinks and dining all day. In search of the perfect summer crowd-pleaser? We think you’ll find it in Sarit Packer and Itamar Srulovich’s beautiful new book, At Home: Middle Eastern recipes from our kitchen, published this month (£26; pavilionbooks.com). It’s the third book from the pair, who are behind diner Honey & Co., deli Honey & Spice and grill house Honey & Smoke, all in Fitzrovia. The mouth-watering recipes are quick and simple to make, using wholesome, fresh and seasonal ingredients. Here’s one of our favourites. Sarit and Itamar say: “The nutty, crumbly pastry and the oozy, melting cheese inside make for a timeless combo. You can make the relish here, it’s easy enough, or use any fruity chutney you like. Change the fruit with the seasons – grapes work well, as do poached pears or quince, but figs, of course, are always the best.” INGREDIENTS Serves: 6–8 as a starter or cheese course 2 small goat’s cheese rounds (about 100g each) For the pastry casing 70g walnuts 70g butter
1 tbsp light brown sugar 1⁄2 tsp sea salt 140g spelt flour 1 egg white 1 egg yolk, for egg-washing For the fig relish 50ml water 6–8 ripe figs, diced
(about 400g) 80g light brown sugar or golden caster sugar 2 bay leaves a pinch of chilli flakes 1 star anise 4 tbsp red wine vinegar
To serve (optional) 1 bag rocket, washed in iced water 6–8 fresh figs, quartered 60g roasted walnut halves a drizzle of olive oil a sprinkling of sea salt
METHOD
To make the pastry, place the walnuts in a small food processor and blitz to a rough crumb consistency. Add the butter, sugar, salt and flour and blitz until the mixture starts resembling bread crumbs again, then add the egg white and blitz once more until you have a ball of pastry. 1
2 Remove from the food processor and divide into two balls. Flatten them onto the work surface with the palm of your hand to create two rounds, each about 10cm in diameter, more or less. Place one goat’s cheese in the centre of each round and, using your hands, lift the pastry up the sides to wrap it. Don’t worry if the pastry cracks a little; it is very pliable and you can patch as needed. 3 Lift each one up, and press and smooth the pastry around the cheese to create a solid casing.
Pinch off any excess pastry and use the trimmings to create a pattern for the top, if you like (you can create a little leaf by hand or cut out a specific shape). Pat the pastry down all around so you have a clean, sealed finish. 4 Top each parcel with the decoration made from the trimmings and a walnut half (if you wish), then place on a small tray, lined with baking paper, in the fridge to rest for at least 30 minutes before baking. You can leave these in the fridge for a couple of days to bake fresh when your guests arrive. 5 To make the relish, place all the ingredients in a small saucepan with 50ml of water and set on a high heat. Bring to the boil and stir well. Cook for 5 minutes, stirring occasionally, then reduce the heat to low and cook for a further 8–10 minutes until thick. Remove from the heat.
6 When you are ready to bake, heat your oven to 200°C/180°C fan/ 400°F/gas mark 6. Add a splash of water and a pinch of salt to the egg yolk you set aside earlier, and mix well to create a thin glaze. Carefully brush this all over the cold pastry (apart from the base), which will give the end result a nice shine. Place in the centre of the oven for about 15–17 minutes to bake to a lovely, light golden colour. 7 Remove the pastry parcels from the oven and place on a serving platter. Add the fresh rocket, cut figs and roasted walnut halves to your platter and drizzle with olive oil and salt. Serve with the relish on the side. This is best eaten while the cheese is still hot and oozy, but we have been known to eat a cold half at midnight, and it still tastes delicious.
Ice, ice baby As the weather heats up, our thoughts are turning to ice cream, and no ordinary Magnum will do. This summer we’ve gone a little bit dippy for Pierre Marcolini’s new Summer Breeze collection. The do it yourself ice cream counter at the Marylebone boutique offers customers the chance to pick their favourite lolly flavour, and then have it dipped in one of six signature chocolate dips. We think the new luscious coconut ice cream goes particularly well with the dark chocolate and chocolate nibs (call it a posh Bounty, if you will), but caramel with milk chocolate roasted hazelnut and fleur de sel comes a close second. And if soft scoop is more your thing, the Frissons selection of tubs will be hard to resist. How does rose petal ice cream with raspberry coulis, Garrigues honey and roasted pistachios sound? HAVE YOU MADE YOUR WILL? Death can be a difficult topic to broach. However, we need to be realistic, says Jan Atkinson, the Head of Wills, Probate & Disputed Estates Department at Osbornes. If we die without making a will, we are leaving our loved ones a whole lot of hassle, in addition to coping with their loss.
What is a will? Your will is an official, legal document in which you outline what happens to your affairs and your assets after your death. If you die without making a valid will, the rules of intestacy will decide how your assets are distributed. Only close relatives and married or civil partners inherit under these rules, which means that you may not have your final wishes met. If you have no surviving relatives, your estate will be passed to the Crown under the auspices of the Treasury Solicitor. Who should make a will? Everyone over the age of 18! Depending on your circumstances, your will: outlines precisely who gets what from your money and possessions determines arrangements for the care of any dependents, such as children and pets may reduce the amount of inheritance tax payable by any beneficiaries records your funeral wishes.
How can I make a will? First of all, list your assets and their value. Do the same with any debts. Assets include property, possessions and money, including savings,
investments and bonds. Debts include loans and mortgages. Note provisions you have made for any children under the age of 18 years, including naming their legal guardians and delineating any financial support. You then need to decide who should benefit under your will. You can include your favourite causes and charities. It is also a good time to stipulate your wishes for your funeral and whether you wish to be buried or cremated. Name the person who will be appointed executor of your will – this can be a friend, family member or solicitor. Now put it all down on paper. It is usually best to get advice from a solicitor in any other than the most straightforward cases. Get your will witnessed and signed. A will is only valid if it is signed by you and two other people who witness your signature. Be careful: a witness or their partners cannot benefit from your will. If there is any question over your mental capacity, such as in the case of dementia, you may require a medical certificate to confirm that you understand what you have signed. Finally, store your will in a safe place – with a solicitor or a secure place at home. It may also be stored with the Probate Service. Above all, make sure you tell at least one of your loved
ones where it is held and make sure that your executor also knows where to find it. Can I change my will? There may come a time when you wish to alter your will – usually when you have had a change of circumstances. You can either draw up a new will, or for minor changes, add a codicil to your existing will. Making a will is one of the most important things that you do in your life. It is not difficult. Every year in the UK, thousands of people die intestate. Make sure you are not one of them.

My home for the weekend, the family-run La Réserve, was founded by Sylvian Floirat back in 1967. Perfectly located to offer easy access not only to sea and beaches, but also forests and mountains, it purports to be a rural traveller’s dream. And first impressions are good. Standing atop the cliffs on the outskirts of the SaintJean-de-Luz, the hotel feels almost suspended between sky and ocean. It sounds clichéd, but the scale of natural beauty on this stretch of coastline, not to mention the panoramic views from the hotel, are truly breath-taking. I’m staying in the La Résidence, a newly refurbished collection of studios and apartments set slightly back from the main complex. Each comes with its own kitchen and a private terrace or balcony overlooking the hotel’s brand-new infinity pool (and, of course, that ocean panorama). All of the rooms are bathed in natural sunlight and comfortably decorated – deeply inviting armchairs, patterned textiles, richly-textured cushions and large throws. It is, of course, nothing like home, and yet I feel so at home here. Curled up on my terrace, the air is warm and I can hear nothing but the salty wind rustling through the large palms and the mighty waves crashing on the cliffs below. I stick around to enjoy the last of the day’s sunshine, and as

the distant lights of Biarritz begin to twinkle against the inky blue night sky, I decide to turn in. A long day of travel, a blast of sea air and the comfiest of beds set me up for a sleep deeper than I’ve enjoyed in months. Invigorated, after breakfast the next morning I take a walk down into Saint-Jean-de-Luz, where I discover that the rewards are well worth the ten-minute stroll down the coastal path from La Réserve. Sardines and sea hake are the local delicacy, baked with a splash of olive oil and razor-thin slices of garlic, and the mouthwatering aroma permeates the town. I spend the day happily wandering the quaint streets, admiring the Basque architecture and exploring the markets. I stop at a small beachside café where I watch the surfers while enjoying a quick café crème. The Atlantic is rarely calm here, and the waters are cooler and cleaner than the neighbouring Mediterranean Sea, making it the ideal place for those looking to catch a wave. Revived, I head to Maison Adam in search of some authentic French delicacies. Nestled in the heart of the town, this familyrun patisserie claims that its macarons are cooked using a secret recipe that has been passed down the generations since 1660, and have even been served to French royalty (Louis XIV). A fresh batch is made by hand every day, using the original recipe of almonds, sugar and egg whites. Their pride is justified: sweet, moist and chewy, these are the best macarons I have ever tasted. Around the corner I stumble upon Sandales Bayona, where – in the manner of an old fashioned sweet shop – hundreds of pairs of espadrilles in every style and colour are stacked invitingly behind the counter. At less than 20 Euros a pair, I can’t resist making another few purchases before calling it a day. Back at the hotel I take a refreshing dip in the new infinity pool, before drinking in the view (and a cold glass of bubbles) as the sun starts to set on the horizon. Dinner is at the hotel’s Ilura, where the menu focuses on
Basque specialities cooked using local produce from land and sea. I’m in for an extra special treat tonight, though, with Dîner à 4 Mains, a tasting menu created by head chef Fabrice Idiart and award winning pastry chef Thierry Bamas (dubbed World Champion of frozen desserts). All seven courses of sweet and savoury are truly spectacular. I’ve a serious calorie surfeit to burn off the next day, and decide to try my hand at Bungy Pump – an activity put on by the hotel. Hailing from Sweden (and similar to Nordic walking), it involves walking with weighted poles to burn calories, while toning and strengthening muscles. Our instructor for the morning is the super-fit Fabien, a former striker for French Ligue 1 football team Toulouse FC. He sets up my poles to the correct height and level of resistance (options are 4, 6, 8 or 10 kilos) and we set off for the countryside. I’m sceptical to start, but after five minutes hiking I’m completely converted. This really does do what it claims and I can feel my whole body working. Traversing the rugged Basque coastline, sucking in lungfuls of pure, fresh air, this couldn’t be more different from my usual gym routine at home in a small sweaty studio, and I feel great! If I wasn’t convinced before, I am now – I’ve been totally sold on the charming Basque way of life, and I will definitely be making a return trip very soon.

HOUSE IN THE TREES An oasis of calm in the centre of London, this L-shaped new-build property features a series of garden spaces with shrewd, lofty planting designed to obscure neighbouring buildings. KNIGHTSBRIDGE ROOF TERRACE Incorporating a fountain into a city roof garden might seem a tall order but the designers of this sky-scraping patch have achieved just that – and won a gold New Homes garden award for Best Roof Terrace in doing so. The space is divided into three key areas, unique in their design but sharing the same vernacular when it comes to materials. The boxy form of the water feature echoes the surrounding industrial planters with its bespoke steel tank, limestone cladding, and galvanised steel water chute – in itself a lesson in ‘less is more’, providing just enough running water to create a relaxing ambience. 4. BASEMENT JACUZZI GARDEN Every square inch of this Hampstead garden is utilised to full effect, such is the success of its astute design. Area guide Fitzrovia With its W1 postcode, and bounded to the south by Oxford Street and the west by Great Portland Street, you can’t get much more central than this, but alongside the offices, shops and restaurants, there are homes aplenty in fashionable Fitzrovia. From swanky new developments to grand Victorian houses, mansion flats and mews houses, there’s something for every taste (though with an average property price sitting pretty just under £1.5 million, perhaps not budget). The area has always had a bohemian reputation, and counts the likes of novelist Virginia Woolf and playwright George Bernard Shaw amongst its past residents; it is now home to fashion, advertising and TV production headquarters. Did you know? Standing 191 metres tall, when the BT Tower was completed in 1964 it was the Capital’s tallest building, taking the title from St. Paul’s Cathedral. Originally known as the Post Office Tower because it was commissioned by the GPO to handle the nation’s communications traffic, there’s an interesting Cold War story behind the iconic building’s circular design. It is said that, given the important nature of the work which would be done there, architects Eric Bedford and G.R. Yates were keen that it could withstand an attack. They noted that the only buildings that had survived the nuclear blasts in Hiroshima and Nagasaki were round ones, which allowed the blast wave to surge around them.

open our latest restaurant, Kyseri here. I like to start my day by grabbing a coffee from Tap Coffee No. 144 on Tottenham Court Road, and then I might pop into Cafe Rio for a bite to eat. It’s a tiny, cute place and it has been in the same spot for years – it has quite the cult following! Late brunch or an early lunch at Honey & Co. is always a winner; we used
to go there lots when we were setting up the restaurant and needed to grab something good and wholesome nearby. I often pop out to the beautiful Fitzroy Square to clear my head when I get a bit too hot and bothered in the kitchen. It’s the perfect example of a London Georgian square and they don’t allow cars there, so it’s peaceful – a real oasis of calm.
H Mart Mini, the Korean superstore on Tottenham Court Road is brilliant for sourcing vibrant Korean ingredients, which go into creating some rocking staff suppers. Schools The fine art of nurturing creative talent When the Fine Arts College (FAC) in Hampstead opened its doors in 1978, the specialisms it offered – art and art history – were seen as “drop-out” subjects. Since then, the college has expanded to offer a full range of courses across the arts and humanities. And each year, demand has led it to introduce another year group. The FAC isn’t the only one to benefit from a growing demand for schools that nurture creative talent. The state-funded BRIT School in Croydon is an over-subscribed household name, thanks to its famous alumni. And several well-known boarding schools – including Bedales and Bryanston – are known for their drama, dance and music. Candida Cave, principal and co-founder of the FAC, puts this trend down to a concentration on academic subjects in recent years. “It’s a good thing, but it’s also squeezed the arts out from many schools,” she says. That’s not to say that the college is an easy ride academically, though. “Even if our pupils want to go into creative fields, we still suggest they do four A levels, and that two of them are in academic subjects. We’re clear that you need a good general education to be a good artist or musician.” So how do you know if a school like the FAC would be right for your child? “The more parents speak to their children about what both want from their education, the happier

A Level curriculum was added. By the early 1990s, a GCSE programme was in place. Today, the Fine Arts College also offers a Portfolio course, aimed at preparing students for Art Foundation, and from September this year, it will be taking Year 9 pupils – a natural entry point to prepare for GCSEs. Its founders always saw the Fine Arts College as a bridge between school and university, as a place that encouraged self-discipline and self-motivation, and this distinctive philosophy is still very much in evidence today. How did you get into design? I’ve worked in the luxury sector for over a decade, first at Edmiston superyachts, then at Linley and now at Oliver Burns, managing the business day to day. I have a passion for luxury design and love what I do.
To project-manage or not to project-manage? Extensions are a great way of gaining more space without moving. But even the simplest ones take around three months to complete and involve a small army of contractors. So should you project-manage yours, or pay someone else to do it? “Our clients are looking for peace of mind,” says Sebastian Sandler of XUL Architecture, which designs and oversees extensions, among other projects. “We help them to choose the contractor, then we supervise and inspect the works through to completion to ensure quality. We also keep clients informed on how their decisions affect the budget and timeline.” If you’d rather project-manage yourself, property and software developer Lawrence Rankin has created a piece of software to help. “NuVuw allows you to model exactly what your vision could look like, so you can give your architect a really clear brief,” explains Lawrence. “You can then choose from local architects, structural engineers and other contractors, and track the progress (and cost) right to the end.” But whether you decide to go it alone or relinquish control, you can still avoid pitfalls
if you do your thinking and planning upfront. Here’s how. 1 Before you agree plans, think about the effect your extension will have on the rest of the house. If it’ll make it look dark and dingy, Sebastian suggests asking your architect to find ways to pass the light from the back of the house to the front. (Or vertically, through skylights or shafts.) And make sure they incorporate shading into the design to stop the house becoming a sauna. 2 Spend time choosing and costing every element of the design upfront. “It’s easier to pick finishes when there’s no pressure from the contractors to make a decision fast,” says Sebastian. “Materials can also take time to get delivered, which slows the project down when it’s underway.” 3 Decide when your extension needs to be finished – then agree a plan with your contractors, including milestones. “NuVuw has an interactive Gantt chart for scheduling activities into your calendar,” says Lawrence. “You can then track important milestones (and costs) in an online dashboard.” (xularchitecture.co.uk; nuvuw.com)
