Dr. Bhojraj or, as his patients like to call him, “Dr. B,” realizes that patients and families have many questions about the procedures he performs, and the care of their loved ones. His philosophy of practice is to take the time to listen to his patients’ questions, appreciate their unique points of view, and empower them to take charge of their health. Prior to joining Mission Heritage Medical Group, Dr. Bhojraj served as an assistant professor of medicine with the Loma Linda University School of Medicine, where he was both the director of the cardiac catheterization laboratory, as well as the medical director of the peripheral vascular laboratory. Griffith, MD, is an important medical director of the Adventist Heart & Vascular Institute team. Dr. Griffith has more than 25 years of surgical experience with more than 4,000 operations and is board-certified in thoracic surgery. He is a member of the Society of Thoracic Surgeons with several years of research at the National Institutes of Health - NHLBI. Grilled Mexican-Style Corn on the Cob with Lime Mayonnaise
Summer Fun
This version of elotes, the popular grilled corn on the cob that’s sold by street vendors in Mexico is grilled, then slathered with lime mayonnaise and coated it with crumbled Mexican Cotija cheese. Create a handle for holding the corn with the husks pulled back before grilling. See instructions below for how to make Street Corn in the air fryer or check out our Grilled Corn on the Cob Recipe with Mesquite Cilantro Butter.
Ingredients 8 Servings 1/2 cup McCormick® Mayonnaise With Lime Juice 1 teaspoon grated lime zest 1 teaspoon fresh lime juice 1 teaspoon McCormick® Paprika 1/4 teaspoon McCormick® Ground Cayenne Red Pepper 8 ears fresh sweet corn 1/2 cup crumbled Cotija cheese Substitutions available Instructions Mix mayonnaise, lime zest and juice, paprika and cayenne in small bowl. Refrigerate until ready to serve. Peel back the corn husks without removing husk or stem. Remove all of the corn silk. With husks pulled back, tie together with piece of husk. Grill over medium-high heat 10 minutes or until corn is tender and lightly charred, turning occasionally. Spread mayonnaise mixture over corn. Sprinkle with Cotija and additional paprika, if desired. Serve immediately. To Prepare in the Air Fryer: Reduce recipe ingredients by half, or prepare in 2 batches (only about 4 ears of corn will fit in an air fryer basket). Remove husks and silk strands from corn. Mix mayo, lime zest and juice, paprika and cayenne in small bowl; set aside. Brush corn lightly with oil. Preheat air fryer to 370°F. Place corn in single layer in basket; do not overcrowd. Air fry 12 minutes or until tender, turning corn halfway through cooking. Spread mayo mixture over hot corn. Sprinkle with Cotija cheese and additional paprika, if desired. Serve immediately. Don't forget to spice it up with your favorite Cholula® Hot Sauce!
