The Franschhoek Hospitality Academy & Learning Centre (FHALC) will stop at nothing to make their Change4Twenty project a success. Since their opening in January 2018, The FHALC has had one mission - to train and upskill the disadvantaged youth in Franschhoek’s local communities and to afford them with employment opportunities and a bright future. The Change4Twenty project provides 20 students with basic Hospitality skills in a variety of areas such as Front Office, Basic Cooking and Kitchen, Housekeeping, Customer Service, Health and Safety and so much more. The Academy operates from a classroom in the Franschhoek Community & Sports Centre in Groendal, in partnership with Hope Through Action and Score. The students in the current 2018 class, have grown from strength to strength, with half of them already being placed in casual weekend jobs to further their learnings and earn some money. Together with ambassadors Reuben Riffel, Margot Janse, Matthew Gordon & Chris Erasmus, FHALC recently launched “KOPANO”– meaning “Gathering” in Sotho. This has become the vehicle for the Academy to raise funds to help cover their operational costs, as well as a platform for their 20 students to gain hospitality training with regards to Kitchen Basics, Preparation, Cooking and Customer Service. The Kopano Experience kicks off with a shuttle collection in town which transports you to a location within the Groendal

Squatter Camp. You are met with a friendly local, who takes you on a guided township tour engaging with the local community and ending with a unique stop at a shack. Here, guests will sample “Umqombothi” – a traditional township brewed beer, served in a round tin and shared among everyone to take a “dip” (sipping straight out of the tin). After the tour, guests gather at Bathos Place, to enjoy a traditional South African menu with dishes like Pap &

Wors, Chakalaka, fresh breads and so much more. The Academy Staff, Students and JMP Foundation welcome everyone with the sounds of traditional music, singing and drums. Tomato consommé with cherry tomatoes INGREDIENTS 100gr mixed cherry tomatoes FOR THE CONSOMMÉ 500gr whole plum tomatoes 50gr fresh basil 30gr fresh coriander 30gr flat leaf parsley 1tsp white wine vinegar 1 small shallot

METHOD • Pulse the tomato, basil, coriander, parsley, white wine vinegar and shallot until its nice and smooth. • Pour the pulsed tomato on a very fine sieve, cover the mix and place it in a fridge overnight. • Press or stir the pulsed tomato as it as it will make the tomato water go cloudy.

PLATING Slice the tomatoes in half and length wise, scatter them in the bowl. Season the tomatoes with Maldon salt and drizzle with extra virgin olive oil. Pour in the cold tomatoes consommé and garnish with Spekboom and Sunflower shoots.

TIP Only slice the tomatoes if you are ready to eat them as they are best eaten immediately once sliced. This is a very fresh dish and best served cold.

Refugee Food Festival WHEN RESTAURANTS OPEN THEIR KITCHENS TO REFUGEE CHEFS The Refugee Food Festival (RFF) is an itinerant event that sees restaurants opening their kitchens to refugee chefs for a gourmet and solidary event. This festival is very popular in Europe and it is the first time this concept has been brought to Africa. Liam Tomlin of Chefs Warehouse joins the RFF team in Cape Town to bring this exciting and worthy initiative to life. It is sure to be the first of many collaborations between Chefs Warehouse and the RFF which aims to accelerate the professional integration of refugees.

The StreetSmart Fundraiser Luncheon at Foliage raised R16,581!! Super hero Chefs, Chris Erasmus of Foliage, Darren Badenhorst,of Le Coin Français and Neil Jewell, of Bread & Wine joined forces for this exciting 3-course luncheon paired with distinctive Haut Espoir wines. StreetSmart SA, a non-profit organisation dedicated to the social integration and upliftment of street children, utilises the proceeds in support of affiliated NGO’s working with children in Franschhoek. In 2018 a total of R150,000 was raised for beneficiary organisation, Kusasa Projects by these and other participating StreetSmart Franschhoek establishments including Haute Cabrière, and Monneaux. StreetSmart invites all restaurants, accommodation establishments and wine tasting venues to join the initiative, where R5 is added to a guest’s bill, and every cent raised in Franschhoek, goes to local projects. Chef David Schneider of Chefs Warehouse Maison, will be working closely with RFF candidate Chef Bilolo Sendwe, originally from the DRC and currently working at Ash restaurant in Cape Town. He and his wife moved to South Africa ten years ago, fleeing war and unrest. Since moving to SA, Bilolo and his family are still under the ‘asylum seeker’ status and are awaiting refugee status from the Department of Home Affairs. Bilolo discovered his passion for food when he moved to Cape Town and describes food as being ‘who he is’ and what he loves. He enjoys experimenting with different flavours, cuisines, and culinary techniques. His dream is to one day open his own African-Western fusion restaurant, to celebrate tastes from across the continent and share them with people from across the globe. Together, David and Bilolo will be developing a unique menu inspired by traditional foods from the DRC. The Menu will be served “Chefs Warehouse” style and consist of 8 tapas dishes to share over 3 courses. The menu will also represent Bilolo’s journey and integration into other cultures as he has had to relocate several times in order to make a home for himself. The Big Little Wine Fest

On the 3rd of June, La Petite Dauphine will host the first Big Little Wine Festival which promises to be a fantastically intimate event. Unlike most festivals these days, this will be a smaller affair with the focus on great wineries, craft breweries and artisanal gin. The food offering will be an eclectic mix of street food and fine dining philosophy with a dedicated cheese and charcuterie bar too! The Travelling Art Gallery, will take South African art to three German cities in June and July 2018. The passion project has captured the imagination of both the South African and German public with the clear aim of raising the profile of South African art abroad. The Travelling Art Gallery will take between 60 to 70 art works to Germany for at least four weeks in June and July, setting up pop-up exhibitions in hip locations in German cities. Each city exhibition will last for eight to ten days and will be supported by a glamorous opening night party and a nationwide PR campaign to pull in as large an audience as possible. Dylan Lewis is internationally acclaimed for his monumental sculpture. His animals and figures embody the very soul of Africa and touch the collective unconscious of us all. In this group of bronze busts of the big cats, Lewis is revisiting, on an intimate scale, the subject that initially made him famous as a sculptor. His art is born of respect for our deep biological and psychological connection to the wild, and out of concern for the environmental issues of our time. By harnessing the shapes and forms of wild animals in his art, Lewis creates far more than elegant sculptures; he makes the resounding point that wildness and wilderness are not only “out there” – they exist within each one of us and are an essential part of human identity. He does this against the backdrop of a society that has largely forgotten its ‘animal’ roots and has spurned the earth that nurtured it: we have lost our sense of equilibrium with nature, our place in the web of life. Disconnected from our more primitive selves we have become a psychologically lonely and fragmented species. Lewis’s powerful and sometimes disturbing works mirror that which is rich and raw and untamed in us, and are fitting reminders of where we have come from.
