Le Coin Français The newest addition to the Franschhoek cuisine scene is a restaurant really and truly for Franschhoek, says chef du cuisine and owner, Darren Badenhorst (previously executive chef of The Restaurant at Grande Provence).

The aptly named “Le Coin Français” – which literally means Franschhoek – will embody the valley’s essence in heritage, cuisine, art and wine, in both concept and name. Guests can expect cuisine where cutting-edge methods meet time-tested French elegance, a carefully selected, locally-focussed wine list showcasing the best local wines, a French sommelier’s selection and an everevolving association with art photography. Multiple award-winning Badenhorst will take diners on a sensory journey through his interpretations of nostalgic food memories encompassing “art on a plate” and lead them through a unique culinary exploration of flavours, textures and interactive creations. The décor includes natural elements and custom-made

items from all over the country. Natural woods and stone are prominent, adding earthy tones and textures. This stretches across lighting and the handmade service bar area too. A natural feature wall is sure to become a talking point. Local Franschhoek favourite, Rob Armstrong of Haut Espoir, has assisted Darren in felling invasive alien trees – including Black Wattle, Port Jackson and poplars – in areas he forages in. These were then used to create a wood wall that adds natural texture to the double-volume space. Chef Darren adds, “I am so honoured to be able to open my own space in such a close-knit and historic town. Franschhoek as a community has been amazing to me; allowing me scope for my creativity to flourish. All the support shown and encouragement given has made this journey all the more enjoyable.” Le Coin Français will be open for lunch from Wednesday to Sunday and dinner form Tuesday to Saturday. Inspired farm dining at Boschendal Few chefs have a pantry quite as impressive as Christiaan Campbell’s. While other winelands kitchens may enjoy a well-stocked pantry or suppliers on speed-dial, Campbell is in a rather more fortunate position. Just a few steps from the Werf Restaurant on Boschendal Farm are more than 2000 hectares of farmland producing everything from exportquality fruit to pasture-reared Black Angus beef and free-range chickens. “The sustainable philosophy of Boschendal Farm is precisely the direction I have always wanted to go in,” smiles Campbell, looking out over the nine-hectare vegetable garden that is the culinary heart of the rejuvenated Boschendal Farm.

“Everything has to be used, whether it’s lamb, beef or pork,” says Campbell. “Whatever the butcher says we have to use up the team in the kitchen has to come up with a creative way to present it.”

Between the raised beds a flock of hungry Indian Runner Ducks forage for grubs and pests, while gardeners are hard at work harvesting fresh produce for the farm kitchens. After winter rains, Campbell is often found in the forests alongside the nearby streams, basket in hand as he goes in search of Poplar Boletus and Pine Ring mushrooms.

Campbell’s passion for constant improvement has also sparked a quiet evolution in the menu and dining experience at the Werf Restaurant.

“The vegetable garden certainly dictates the menu at the Werf Restaurant, it feeds our creativity in the kitchen,” says Campbell. While the vegetable garden under the care of horticulturist Megan McCarthy is certainly impressive, it’s just one ‘shelf’ in the Boschendal pantry. Boschendal Farm is fast becoming famous for its 900+ strong herd of Black Angus cattle that deliver a steady supply of marbled grass-fed beef to the Werf Restaurant kitchens. The Angus herds are rotated between pastures, with thousands of laying hens following in their wake, producing up to 1000 free-range eggs per day. On another corner of the property hundreds of broiler chickens run freely on pastureland, while a small herd of sheep keeps the farm kitchens well stocked through the busy summer months. In the stands of poplar trees below the vegetable garden a handful of Duroc pigs mark the beginning of another ambitious project, to produce pasture-reared pork on the estate. Campbell admits that they’re really spoilt with the meat on the farm. “Both the flavour and texture of the beef from the farm is just incredible.” “In the butchery we work with whole carcasses, dry-ageing the meat on the bone for up to six weeks,” explains Boschendal’s butcher Rainer Raschbichler, standing in the farm’s dedicated production butchery. “We farm in a very natural way, so I try to use the same approach in the butchery to really show what the meat is all about. And I make sure nothing goes to waste.”

“We realised we were still too focused on the visual aspects of the dish. So we decided to simplify the style of cooking, to work with fewer components on the plate in focused portions,” explains Campbell. “In reworking the menu I had only two criteria: whatever we do it has to be done with passion, and it must showcase the ingredients coming from the farm.” While dishes evolve and rotate with the changing seasons, look out for the likes of lamb broth with pulled lamb belly and Parisian gnocchi. The beef tartare is equally memorable; thanks to the intense dry-aged Angus beef and Campbell’s subtle flourish of pickled red onions and cured grated egg yolk. Main courses similarly make the most of the farm’s freeranging herds, whether it’s a slow-braised lamb shoulder with broccoli risotto or a brisket of Angus beef, hot-smoked for 16 hours and plated with creamy organic polenta and a salad of wild herbs foraged in between the vegetable garden beds.

The selection of side dishes are also a wonderful reflection of what’s been harvested fresh that morning, and could include anything from caramelized Jerusalem artichokes to baby carrots in citrus and cumin or aubergine hearts roasted in oregano.

At the Werf Restaurant the accomplished cuisine is matched by a welcome lack of ceremony in the service: kitchen staff dress in stylish grey work shirts and denim aprons, no stuffy starched whites or chef’s toques in sight.

The Werf Restaurant is open for lunch Wednesdays to Sundays from 12h00 to 14h30 (guests to be seated by 14h00) and for dinner Wednesdays to Saturdays from 18h00 to 21h00 (guests to be seated by 20h30). Reservations are essential.

As with good food and premium wines, so too fine art needs to be experienced to be appreciated. In 2016 the Franschhoek Wine Valley launched Art Franschhoek, affording visitors to the valley the opportunity to appreciate the fine art collections and exhibits on show during the months of October and November. This year Art Franschhoek will once again ‘open its doors’ to the public from 26 October to 27 November. To celebrate the start of this festival of art appreciation some of the participating galleries will be hosting special events during the weekend of 27 - 29 October, these include a series of curated artist walk-abouts. During the month of Art Franschhoek the world renowned Everard Read Gallery will be exhibiting major works by some of our country’s finest contemporary artists, in a variety of media. Everard Read Gallery’s involvement at this year’s event signifies that Art Franschhoek is without a doubt one of the top art events to experience. Ebony/Curated, with its exquisite displays of fine arts, sculptures and ceramics, will host four solo exhibitions in their two galleries, including a major retrospective landscape exhibition of the late South African master, Erik Laubscher. More than 20 celebrated South African artists will participate in this exciting event. All artworks will be for sale and will be replaced where required as a result of sales. You’re known by your fans as ‘The Cousin’. How did you come by this nickname? I started calling people ‘my cousin’ because I was, and still am, really bad at remembering names. To get around this problem, I just call everyone ‘my cousin’. Have you ever visited Franschhoek before? Any special memories or a bucket-list of things to do while you’re here? ​ It’ll be my first visit to Franschhoek and I’m really looking forward to it. My wife and son will be joining me and we’ll come a day early to truly experience as much as we can.​ Especially trout fishing. I want to relax and catch fish. Performing artists often have one or two ‘twilight zone’ or ‘off script’ type on-stage moments. Is there one that stands out for you? All the time as my shows are not scripted. I love working on my feet and my best material comes off the cuff. Tea with a View The Leeu Estates Afternoon Tea menu derives its inspiration from head pastry chef, Martin Senekal, who has extensive experience in various kitchens, including collaborations with Design Indaba, Hugo Boss and Cape Town Fashion Week.

The menu will change seasonally to ensure the freshest produce including home-grown fruits from Leeu Estates.
