“What made me fall in love with the whole mystique of wine is the fact that you can drink a Sauvignon Blanc from Jonkershoek and a Sauvignon Blanc from Constantia and they will taste different … even though it’s the same cultivar,” says Lanzerac sommelier, Fundiswa Ziqubu.

Fundi’s journey with wine started in 2008, when she tasted her first bottle of wine. It was a heady affair as, not only was the wine a Bordeaux-style blend from Stellenbosch, but she also fell in love with the person pouring the wine. From then on, she was hooked.

A sommelier has many important responsibilities and one of them is to recommend food and wine pairings for guests. The opportunity to add a touch of uniqueness to a guest’s dining experience, especially during food and wine pairings, excites Fundi. “You can either go congruent or complementary,” she explains, “as there are classic flavour profiles that one should not meddle with, but it is a thrill to combine two flavours, not knowing if they will pair, and then getting that burst of flavour sensation in your mouth”.

What is Fundi’s favourite wine? After a long wrestle, she settles on the Lanzerac Mrs English Chardonnay for its sheer complexity, vivaciousness and versatility.
