Majeka Kitchen Invites You In Delaire Graff Estate Celebrates 10 Years of Fine Cuisine

Ten years on, the eponymously named restaurant of Delaire Graff Estate has begun a fresh chapter in the capable and creative hands of newly appointed Head Chef Kevin Grobler. Attached to the winery, Delaire Graff Restaurant’s timeless interiors are characterised by sophisticated acknowledgments of South African heritage and dramatic artworks by celebrated artists, such as William Kentridge and Deborah Bell. Already well-versed in showcasing the finest South African hospitality to a global audience, Grobler is excited to be back on home ground with his family after three years as head chef of the Michelinstarred JAN Restaurant in Nice, France. Born and educated in Bloemfontein, Grobler worked under some of the finest chefs in the Cape at the likes of Terroir, Cavalli, and Delaire Graff Restaurant, before expanding his horizons and heading to Europe. Grobler has come full circle by returning to Delaire Graff Estate, having earned his stripes under previous head chefs Christiaan Campbell and Michael Deg, who remain his highly respected mentors. Grobler’s fervour for sustainability and ethically sourced ingredients is matched only by his overflowing passion for each perfectly assembled, delicious plate that leaves his kitchen, following a nose-to-tail, root-to-leaf philosophy to reduce waste. Constantly evolving as the seasons shift, the sustainably focused à la carte lunch and dinner menus, as well as a new nine-course tasting menu in the evenings, are complemented by an extensive wine list that champions the estate’s own labels. Delaire Graff cellar master Morne Vrey’s 10-year journey developing the brand, has created a wine-driven tasting menu, with each course inspired by one of the estate’s elegantly crafted, terroir-driven wines. Menu highlights include Delaire Graff Cabernet Franc Rosé 2019, paired with rosé cured salmon gravalax or braised beef short rib, Jerusalem artichoke purée, charred onions, poached baby leeks, and onion chips with the flagship Delaire Graff Botmaskop 2017. Another match made in heaven is the dark chocolate cake, roasted guavas, guava, and port gel and the Delaire Graff Cape Vintage 2016. Welcome into a kitchen of culinary delights, where hyper-local ingredients and the sheer enjoyment of dining culture is celebrated. Chef Lucas Carstens celebrates the ingredients that give his dishes a distinct taste and texture of the Cape, sourcing almost all of the produce for his contemporary cuisine from within a 20-kilometre radius of his Stellenbosch kitchen.

His menu reads like a guide to foraging edible plants, featuring wild amaranth, spekboom, and sea lettuce, as well as traditional ingredients, such as amasi being used in new and innovative ways. Many ingredients are also grown in Majeka Kitchen’s garden and dishes are treasures to be discovered, layer by delicious layer. Surrounded by small-scale, ethically minded farmers who are keen to have working partnerships with chefs, his mantra is only the best and brightest will do! Fish is supplied by Abalobi, the small-scale fishing initiative that empowers local fishers. “From hook to cook”, these sustainably caught, 100% traceable fish are delivered directly to chefs. Fresh yellowtail, mackerel, bream, octopus, and many other Cape coastline delicacies are often showcased on Majeka Kitchen’s menu. Organic suppliers such as Genesis Farm and Mason, and meat suppliers such as Ryan Boone Meats, Farmer Angus, and Glen Oakes Farm are chosen with as much care as everything else. When visiting Majeka Kitchen, guests are encouraged to compile an eating experience by choosing between four and seven plates of dishes that include baby marrow carpaccio, whole grain mustard, and cured egg yolk and shu shu fruit poached in Pernod, lemon, vanilla. Incidentally, shu shu is one of Chef Lucas’s indigenous finds, a relative of melons, cucumber, and squash with a refreshing, unusual flavour. The Etienne Hanekom designed interior reflects Majeka Kitchen’s ethos of showcasing hyper-local ingredients and of sharing local fables, from the botanical prints and whimsical textiles to the contemporary finishings, every table tells its own story and invites the diner into an immersive experience. The wine list is the domain of restaurant manager and sommelier Brenda Karamba, with the majority of the wines coming from local Stellenbosch farms and many from smaller boutique producers. www.majekahouse.co.za

Tokara Celebrates the Fruits of 25 Years of Pursuing Perfection It all began in 1994 when G.T. and Anne-Marie Ferreira purchased a farm on the foothills of the Simonsberg to build a home for their young family amongst the beautiful old oak trees. With the lure of the land and the insight of illustrious neighbours, the kernel of the dream that would eventually become TOKARA soon took root. Fast forward 25 years and today TOKARA is a tourist destination that offers visitors elegant, award-winning wines, two beautiful restaurants, an art gallery, and sculpture garden, as well as some of the best South African Extra Virgin Olive oils you’ll find in the country. “After 25 years I still savour our good fortune of living on such a beautiful property and having so much fun while producing one of the most delightful products in the whole world,” is how proprietor G.T. Ferreira describes the great joy their investment and long-term vision for TOKARA has brought the family.

While family remains at the core, the success of this incredible undertaking requires the hands of many. To this end, TOKARA still counts nine dedicated staff members who have been part of the story from the very beginning. The depth of knowledge about the unique terroir, vineyards, and winemaking accumulated by seasoned viticulturist Aidan Morton and winemaker Stuart Botha, is another key asset. “The future in the winery is exciting,” says Botha. “With the vineyards truly coming into their own, an already well-defined style and the introduction, after many trials, of the most innovative winemaking techniques in the wine world, we’re striving for vinous perfection in every wine we produce.”

TOKARA TRIUMPHS IN TIM ATKIN’S SA SPECIAL REPORT 2019 This pursuit of perfection is evident in TOKARA’s recent triumph in Tim Atkin’s South Africa Special Report. Atkin, a UK Master of Wine and accomplished wine commentator with extensive experience when it comes to South Africa, tasted 2,115 local wines for his 2019 report, now in its seventh year and his largest to date. TOKARA made it through the tasting with its flagship Director’s Reserve White 2016 being hailed one of Tim Atkin’s ‘wines of the year’ and with no less than 11 wines from this family owned Stellenbosch wine estate crossing the 90-point threshold.

Awarded 95/100, Atkin’s elite ranking comparable with the best wines in the world, the TOKARA Director’s Reserve White 2016 was one of just five wines to make the cut as a Wine of the Year in the White Bordeaux Blend category. This classic Bordeaux-style white blend is made from grapes grown on the highest slopes of TOKARA’s Stellenbosch property. Both varieties are fermented and matured separately in predominantly older French oak barrels and left on the yeast lees for nine months to impart superb integration and texture to this wonderfully complex wine. Rich layers of passion fruit and pink grapefruit intermingle with hints of lemon grass and freshly baked brioche. “Year in, year out this is one of the best white blends in the Cape,” is Atkin’s verdict, describing the wine as follows: “Meaty, salty, and subtly wooded, it combines Sauvignon Blanc with 30% Semillon to brilliant effect. Long and complex.” Numerous international wine commentators have also placed this flagship wine amongst the benchmark of South African Bordeaux-style white blends. Earlier this year, it earned Platinum with a score of 97/100 at the Decanter World Wine Awards, after bagging a Gold medal at the UK based Sommelier Wine Awards and yet another gold strike and a score of 95/100 from the prestigious

2019 International Wine and Spirit Competition in London in September. Next in line in the TOKARA ratings are three wines with scores of 94 points: the flagship Director’s Reserve Red 2015, the Limited Release Pinotage 2017 and what Atkins refers to as the “classy” Blanc de Blancs MCC 2012. This lattermost wine is one of the latest additions to the Tokara range, which also scored gold at the 2019 Amorim MCC Challenge. FURTHER TRIUMPHS IN OLIVE OIL The highly acclaimed, family owned wine and olive oil farm on the outskirts of Stellenbosch has also netted a slew of medals across its range of coldpressed extra virgin olive oils at the 2019 SA Olive Awards. Specifically, the 2019 TOKARA Multi Varietal Extra Virgin Olive Oil was a gold medallist in the ‘Medium’ category. A blend of Frantoio, Leccino and Mission varieties from TOKARA olive groves on the foothills of the Simonsberg, the Multi Varietal has elegant aromas of fresh green olive fruit, wild rocket, and butter lettuce that follow through on the palate, finishing off with walnut and spicy notes. Warlord Bordeaux Red Blend 2017 comprises 55% Cabernet and 24% Malbec with the remainder being Petit Verdot. A dark, intense ruby-coloured wine, it shows complex smoky and savoury notes in the aroma with shades of dark and red fruits, vanilla, dark chocolate, and liquorice. The wine is aged for 24 months in selected French oak barrels.

The wines scored 90 and 92 respectively, in Atkins’ assessment of just over 2,000 wines this year. The award-winning wine writer Tim Atkin has over 30 years’ experience, a strong international following, and is also a co-chairman of the International Wine Challenge, the world’s most rigorously judged blind tasting competition. For South African producers, Atkin’s perspective is highly prized and, significantly, he highlighted the 2017 vintage as “one of the best ever Cape vintages”. For winemaker Craig Barnard, the top-performing Colt Cabernet Sauvignon 2017 and Warlord Bordeaux Red Blend 2017 epitomize the capability of the Cavalli terroir to produce world-class wines. The nose of the Colt Cabernet Sauvignon 2017 shows loads of dark berries and plums with prominent mint, eucalyptus, cigar box, roasted coffee, and liquorice. The wine was
