Create a Christmas Village
A
miniature Christmas village is the perfect decorative piece to add to your home for the holidays. Here are a few tips to help you create an enchanting display your whole family will love. The components Take some time to consider what elements will make up your village before you go out to buy any. For example, you’ll want to opt for figurines and buildings from the same brand to ensure everything is proportional. Be sure to include: • Moving parts. Animated features such as a skating rink, cable car, train, windmill or merry-go-round will bring your village to life and draw the eye to various sections. • Infrastructure. Streets, bridges and walls will provide structure and help you organize buildings logically. • Accessories. Benches, fire hydrants, street lamps, trees, flagpoles, birds and other details are essential to create a realistic display.
The assembly First, you need to choose a spot for your village, such as under the Christmas tree or on a fireplace mantel. The location should give you enough room to create depth and varying heights in your display. If certain features need to be plugged in, make sure there’s an electrical outlet nearby. To maximize your village’s wow factor, test out several configurations with the lighting turned on and choose the option that
best showcases each element. Use risers, boxes or books to elevate sections of the village as needed. Once you’ve settled on the layout, add the streets, artificial snow and accessories. If there are wires, make sure they’re hidden. Finally, place the figurines near street lamps or illuminated buildings so they’re visible in the evening, too. If some areas of the village are in shadow, add a miniature spotlight or a tiny strand of string lights.

he 2020 holiday season will be vastly different from seasons past. Amid the COVID-19 pandemic, many events have been reimagined as virtual celebrations because of social distancing protocols. For those with large families or people with inherent risk factors that make them more susceptible to illness, sharing the holidays over video conferencing apps may be the safest way to go in 2020. The following tips can help holiday hosts make the most of a virtual gathering.

Choose a bright, festive spot Set up your tablet, smartphone or computer in a bright area with a festive backdrop. You’ll want others who join the virtual hangout to be able to see you clearly. A Christmas tree or a decorated fireplace in the background can set the scene.

Instructions on everything from woodworking to crochet to making favorite holiday recipes can be found online. Join an isolated individual daily by engaging with him or her in virtual lessons. Sharing this experience can provide purpose and distraction.

Egg Nog
Many families gather around the dinner table and enjoy seafood on Christmas Eve. Called the Feast of the Seven Fishes, this tradition traces its origins to Italy and was brought over to North America by Italian immigrants. While people can enjoy seven entirely different seafood options, it also is customary to serve one or two types of fish seven different ways. This recipe for Cioppino from “Soup’s On” (Chronicle Books) by Leslie Jonath and Frankie Frankeny manages to include seven types of seafood. (Serves 4) • 1/4 cup extra-virgin olive oil, plus extra for drizzling • 1 white onion, chopped • 1/2 cup thinly sliced leeks, white part only • 4 garlic cloves • 6 anchovy fillets or 2 tablespoons anchovy paste • 1/3 cup chopped flat-leaf parsley • 4 sprigs fresh marjoram • 1/2 teaspoon red pepper flakes • 1 live Dungeness crab (2 to 2 1\2 pounds), cleaned and sectioned, crab fat reserved • 8 ounces lingcod or other white fish • 1 cup dry white wine • 1 1/2 cups tomato puree or peeled, fresh whole tomatoes • 8 ounces clams, well scrubbed • 4 ounces mussels, scrubbed and debearded • 8 ounces raw prawns or large shrimp, peeled and deveined • 8 ounces calamari • Kosher or sea salt • Freshly ground black pepper
Warm the oil in a heavy, nonreactive pot over medium-high heat. Add the onion, leeks and garlic and sautee until the garlic is golden. Add the anchovies, parsley, marjoram and pepper flakes and stir to mix. Add the crab and fish and cook until the fish begins to fall apart, 7 to 10 minutes. Add the wine and cook to reduce the liquid by one-third. Mix together the reserved crab fat, 1 cup water and the tomato puree in a small bowl. Add to the pot, raise the heat to high, and bring to a boil. Add the clams, mussels and prawns and cook until the clam and mussel shells begin to open and the prawns turn pink, approximately 3 minutes. Discard any clams or mussels that do not open. Add the calamari and cook until opaque, approximately 1 minute. Season to taste with salt and pepper. Ladle into soup bowls and drizzle with olive oil. Serve immediately with a green salad, crusty country bread and white wine.
(Makes 1 cocktail) Rum, whiskey and brandy are customary liquors to use in eggnog recipes. However, The Spruce: Eats, a culinary website, has taste-tested them all and believes brandy tops the others for the perfect finished product. Enjoy their version of “Quick Brandy Eggnog.” • 1 ounce brandy • 1 1/4 ounces milk • 1/2 ounce simple syrup • 1 egg yolk • Grated nutmeg or cinnamon for garnish In a cocktail shaker, combine the brandy, milk, simple syrup and egg yolk. Dry shake without ice. Fill shaker with ice, then shake vigorously for about 30 seconds to ensure the egg is well mixed. Strain into an old-fashioned or cocktail glass. Add a dash of grated nutmeg or cinnamon as a garnish. Note: Only use a fresh egg. Test the egg’s freshness by placing it in a glass of water. If the egg floats, discard it, as this indicates the egg is too old. Only use eggs that rest on the bottom of the glass. This will ensure the most flavorful drink and helps to reduce the risk of salmonella poisoning.

(Makes 6 servings) Utilizing a slow cooker to make a beef roast reduces time spent in the kitchen, giving hosts more opportunities to mingle with their guests. That’s just the idea behind this recipe for “Beef Roast With Dark Rum Sauce” from “Crock•Pot 356 Year-Round Recipes” (Publications International, Ltd) by Crock•Pot Kitchens. • 1 teaspoon ground allspice • 1/2 teaspoon salt • 1/2 teaspoon black pepper • 1/4 teaspoon ground cloves • 1 beef rump roast (about 3 pounds) • 2 tablespoons extra-virgin olive oil • 1 cup dark rum, divided • 1/2 cup beef broth • 2 cloves garlic, minced • 2 whole bay leaves, broken in half • 1/2 cup packed dark brown sugar • 1/4 cup lime juice In a small bowl, combine allspice, salt, pepper and cloves. Rub spices onto all sides of roast. Heat oil in skillet over medium heat until hot. Sear beef on all sides, turning as it browns. Transfer to a slow cooker. Add 1/2 cup rum, broth, garlic and bay leaves. Cover. Cook on low 1 hour. In a small bowl, combine remaining 1/2 cup rum, brown sugar and lime juice, stirring well. Pour over roast. Continue cooking on low 4 to 6 hours, or until beef is fork-tender. Baste beef occasionally with sauce. Remove and slice roast. Spoon sauce over beef to serve.
Spiked with paprika, Dijon mustard, Worcestershire sauce and Parmesan cheese, this warm spinach and crab dip has a deeply savory flavor, and thanks to a thickened milk mixture and a modest amount of cream cheese, it is delightfully creamy without being heavy or overly rich. Serve it with a variety of crisp, cut vegetables, crackers or baguette slices, and watch it be devoured. (8 to 12 servings) • 1 tablespoon extra-virgin olive oil, plus more for the baking dish • 1 (10-ounce) package frozen chopped spinach, defrosted • 2 tablespoons all-purpose flour • 3/4 cup low-fat milk • 1 stalk celery, finely diced • 1/4 cup finely diced shallot (about 2 medium shallots) • 1 clove garlic, minced or finely grated • 1 teaspoon sweet paprika • 1/4 teaspoon kosher salt • 1/4 teaspoon freshly ground black pepper • 3 ounces cream cheese • 1 tablespoon Dijon mustard • 1 tablespoon Worcestershire sauce • 1/2 cup (1 1/2 ounces) grated Parmesan cheese • 12 ounces lump crabmeat, drained and picked over to remove any cartilage Preheat the oven to 400 degrees with the rack in the middle. Lightly oil a shallow 1-quart baking dish.
Place the spinach in a colander or fine-mesh strainer and, using your hands, squeeze out as much water as you can. In a small bowl, whisk the flour into the milk until dissolved. In a medium skillet over medium heat, heat 1 tablespoon oil until shimmering. Add the celery and shallot and cook, stirring, until softened but not brown, 2 to 3 minutes. Add the garlic, paprika, salt and pepper and cook, stirring, until aromatic, 30 seconds more. Stir in the milk mixture and cook, whisking constantly, until the mixture thickens and comes to a gentle boil. Add the cream cheese and cook, whisking frequently, until the cheese has melted. Remove from the heat. Stir in the mustard, Worcestershire sauce and half of the Parmesan. Add the spinach and crab and stir until everything is combined. Transfer the mixture to the baking dish, sprinkle with the remaining Parmesan, and bake for about 25 minutes, until bubbling and browned on top. W
hile the holiday season is important for small businesses every year, with the unprecedented struggles they face due the coronavirus pandemic, this year finds many of them—from retailers to restaurants—challenged as never before. A ZenBusiness survey of more than 1,000 small business founders, senior managers and decision makers found that 37% of small businesses that employ between 11 and 25 people were considering laying off more than one-fifth of their workforce. It’s no surprise, then, that many in our communities want
to support them now more than ever. Here are ways you can help. • Shop in person. If you’re healthy and comfortable visiting local stores, consider making the trip instead of buying online from the big e-commerce sites for at least some of your gifts. After all, many of our small shops offer unique items you won’t find on the big websites. • Shop small businesses online. Many small businesses have increased their e-commerce capabilities to generate revenue. Those concerned about shopping in person this season should explore the delivery and curbside pickup options available at locallyowned small businesses. Even
businesses that have not traditionally been allowed to deliver, such as breweries and wineries, have been able to do so during the pandemic. • Buy local gift cards. Gift cards take the guesswork out of holiday shopping, they’re easily shipped or emailed to loved ones. That’s a significant benefit during the 2020 holiday season, when delivery times are expected to be lengthy. Gift cards to local businesses simplify shopping, support small businesses and help shoppers avoid potential delivery delays. • Order holiday meals. Save yourself the time prepping and cooking this year’s holiday feasts by ordering from a local restaurant. If the restaurant
does not deliver, chances are you can pick up curbside. Even if there are some homemade culinary traditions you don’t want to give up, consider ordering part of the meal, such as dessert, from a local bakery. • Share your experience. Word-of-mouth is vital to small businesses at any time, and can be especially valuable as they try to overcome the challenges posed by the pandemic. On social media, share information about the lengths local small businesses have gone to in regard to safety measures, order fulfillment and their delivery and pickup efforts. This could encourage neighbors and friends to follow your lead and provide vital support to local businesses in need.
