T
he inaugural GABS Beer, Cider & Food Fest in Auckland promises a unique and fun festival experience showcasing the best breweries and cider producers from around New Zealand and Australia. There are several hundred beers and ciders to choose from – including about 75 made specifically for GABS, exhibitor stands, outstanding local food, educational experiences and incredible entertainment. GABS began in 2011 as the Great Australasian Beer SpecTAPular at our Local Taphouse beer bars in Melbourne and Sydney when 22 of Australia’s leading craft breweries made a new ‘Festival Beer’ specially for the event. The events were such a success that GABS 2012 took place at Melbourne’s World Heritage-listed Royal Exhibition Building and saw almost 8,000 people enjoy 60 Festival Beers submitted from across Australia and New Zealand. In 2016, GABS is expected to attract around 30,000 people across Melbourne, Sydney and now Auckland. Why Auckland? Well, we have showcased the best Kiwi craft breweries for many years at GABS as well as our venues, and felt the time was right to create a Kiwi version that flipped the Australian model on its head and showcased the best of New Zealand craft breweries, with a few outstanding Australian breweries represented too. Rather than drink beers you’re familiar with, we encourage you to step outside your comfort zone and sample a wide variety of beers you wouldn’t normally try. The reward for expanding your horizons and discovering new flavours is a fun adventure that will stay with you long after GABS 2016. Like GABS Sydney in its first year, GABS Auckland is taking place over just two sessions but with your support and that of the New Zealand brewing community we are excited about growing the event in future years. With so many incredible beers and ciders on offer, sampling a wide variety is really the name of the game at GABS. While individual 85ml tasters can be purchased, tasting paddles consisting of five x 85ml tasters are the most efficient and popular way to sample different beers and ciders, certainly at the Kegtainer Bars where the specially brewed Festival Beers are sold. To help the bar staff, please mark the drink numbers (as shown on the menus) in chronological order on the paddle with the chalk provided BEFORE you reach the bar for service. If the sheer choice on offer overwhelms you, turn to the GABS Tasting Tools on page 22 or the GABS App, which is designed to help. Empty wooden tasting paddles to help you easily carry up to five samples are free to use at the event and are available at each of the Kegtainer Bars.

GABS CURRENCY CARDS BY GLOWNET GABS has introduced an exciting new GABS Currency Card from Glownet Event Technology for 2016 to ensure maximum efficiency at the bars and stalls. All food and drink purchases at GABS must be paid for using the GABS Currency Card. No cash transactions are allowed. Currency Cards can be pre-purchased along with your entry ticket or purchased and/or topped up at Currency Card stands around the festival hall as well as by roaming Currency Sellers. If you would like the $2 deposit you paid for the Currency Card refunded, this can be only done at certain times at the venue (see details below). You will be able to get a refund of any unused currency at one of the Currency Card stands or the Box Office outside during the festival, or online for a week following the festival. FESTIVAL BEERS One of the things that makes GABS unique is the 65 ‘Festival Beers’ brewed especially for GABS each year to celebrate innovation and originality. Festival Beers are sold from the two Kegtainer Bars and there is a limited allocation. Some session allocations may run out but the beer will be back for the next session. Introduced to GABS for the first time this year, Festival Ciders are new ciders made especially for GABS by 10 of the leading craft cider producers from across New Zealand and Australia. The circus performers and roaming musicians are a fun part of the GABS experience. The GABS Carnivale will be rolling into Auckland with favourites ‘The Ale Capones’ along with other roaming performers and acrobats. LET THE GOOD TIMES ROLL ‘Natural conditioning’ or ‘bottle fermenting’ is a traditional brewing technique in which beers undergo a secondary fermentation after the beer has been bottled or kegged. While there are only a few breweries that still take the time to do this, natural conditioning extends the beer’s shelf life, helps to enhance its flavour and eliminates the need for preservatives or additives.

ADDING THE YEAST
BOTTLE/KEG FERMENTING
Yeast eats away at the remaining sugars in the beer creating alcohol and CO2. As the CO2 is trapped it naturally carbonates the beer and displaces the remaining oxygen. This maintains the beer’s integrity and removes the need for additives and preservatives.
Once bottled or kegged, extra yeast is added to begin the natural conditioning process.

Coopers encourages people to roll their bottle or agitate the kegs before serving the beer. This helps move the sediment through the beer, enhancing its flavour and giving it that signature, cloudy appearance.

The ales are held in cellar conditions for two weeks at ambient temperature while the bottle fermentation takes place.

THE SEDIMENT
Once fermentation process is complete, the yeast falls to the bottom of the bottle or keg leaving fine sediment. When that happens we know the beer is ready to be enjoyed. This is why Coopers’ ales and stouts have a ‘best after’ rather than a ‘best before’ date.

THE BIG FOUR
It takes four ingredients to make beer: hops, malt, water and yeast. But within these four elements new exciting things are always happening.
W
hen it comes to craft beer, most of us think about the work brewers do. Less often do we think about the supply chain behind them. A brewer can have high standards, but without the right suppliers, the end product will suffer. After so many centuries of brewing, the suppliers of these four core ingredients are still finding ways to innovate. Hop farmers breed new varieties, maltsters refine their roasting techniques, mineral content in water is adjusted and different yeast strains are developed.
(1) HOPS Formally known as Humulus Lupulus, hops are vinelike plants that act as the seasoning for beer, delivering bitterness, aroma and flavour, while balancing malt sweetness. In many ways, the modern craft beer movement has been built off the back of hops, with the influential American craft beer scene almost synonymous with India pale ale (IPA), a beer style that emphasises hops. Hops add two things to a beer: bitterness and aroma/flavour. Often you’ll hear brewers talk of ‘bittering’ hops, or those which are added into the boil early, to impart bitterness. Aroma hops are added nearer to the end, to give beer that fruity, tropical, pine nose many associate with craft beer. Dual purpose hops can be used for both. The popularity of big hoppy beers has led to a global hop shortage, with many brewers struggling to secure certain varieties. Across New Zealand, Australia, UK, France and Germany, well-developed breeding programs have begun replicating the big, fruity profiles pioneered in the States to help combat the shortage. In New Zealand, varieties such as Motueka and the intensely-tropical Nelson Sauvin are familiar to a lot of drinkers, but new varieties 14 #GABS2016 BEER, CIDER & FOOD FEST 2016
such as Kohatu, Wai-iti, Rakau and new dualpurpose hop, Brooklyn, will start to make an impact.
(2) MALT The malt market is less about new barley varieties and more about refining existing techniques with the help of technology. To make malt, farmers harvest barley and store it in a silo. Maltsters then buy the grain, transfer it to their own silo and begin processing a batch by steeping it in water. A 43 per cent moisture concentration is enough to trick the barley into germinating, as if it had been continually rained on. At that point, the plant’s starches begin converting to simple sugars, which yeast will eventually feed on to create alcohol. Once the sugar concentration is right, the maltster puts the barley in a kiln to remove the moisture content and halt germination. Then it’s ready for the brewer to use. Like hops, malt has two gears. The sugary base malt, which provides the majority of the body and alcohol in a beer; and the specialty malts, which are used in low concentrations to add flavours such as coffee, toffee, caramel and chocolate, and colours ranging from pale gold to black. “I always refer to malt as the canvas the brewer can paint their beer upon using yeast and hops,” says David Cryer, who has been selling malt since the early 90s, through his company Cryermalt. A talented brewer strikes the balance between the two, playing the bready, biscuity, nutty sweetness of malt against the bitterness of hops and embellishing with yeast. Despite the focus on refinement over trends, Cryer believes heritage malt varieties such as Golden Promise, Barke, Hana Maris Otter and Malteurop are on the way back. Malteurop is New Zealand’s local malt of choice, with it being grown for more than 100 years in Marton in the North Island and Canterbury in the South Island.
(3) WATER Water, by volume is the main ingredient in beer and deserves more attention than it is usually given. Historically, many breweries and styles became famous purely because of the unique make-up of their local water. For instance, obscure styles Gose (German) and Grodziskie (Polish) were both invented with the help of mildly salty water. These days, most commercial breweries purify their local supply using a carbon filter and then adjust the mineral content to suit their exact needs.
(4) YEAST Yeast converts barley sugars to alcohol and produces esters and phenols – aromatic compounds with their own distinctive flavour profiles. German hefeweizen is the most common example as its aromas of banana, bubblegum and cloves come from a specific yeast, rather than malt or hops. Historically, prized yeast strains have been maintained by keeping a living sample and continually feeding it. These days, things are far more scientific, with new yeasts engineered in laboratories, propagated, then cryo-packed or freeze-dried. Currently, everyone is talking about a strain of yeast called brettanomyces (or brett), and a bacteria named lactobacillus. The former gives beer a distinctive taste that’s described as tart, funky, barnyard and old blanket, which people either seem to love or hate. The latter is the same bacteria which gives fermented sourdough and yoghurt their tang. Together, these two microbes produce sour beer styles such as Lambic, Gose and Berliner Weisse. he beer brewing process is relatively simple, although making good beer is a whole other story. At its core beer is simply a fermented liquid with a layering of sugared malt and hops. Essentially, beer = water + hops + malt + yeast. Brewers are able to create unique flavour profiles from these four key ingredients, however much like cooking, they can throw pretty much anything in they like. Think seaweed, belly button fluff, oysters, bacon, doughnuts, chilli and peanut butter. The challenge of course is to achieve a wellbalanced beer, as well as a striking flavour profile. So just what does balance doughnuts?
THE BREWING PROCESS 1. MALTING The first step of the brewing process, malting refers to the process of preparing the barley as it is

unusable in its normal state. Brewers carefully malt the barley to release the starch, which will later act as a thickening agent in the beer. A labour intensive process of cracking, drying out and heating is employed to process the grains. 2. MILLING/MASHING The grain is crushed and mixed with hot water to make a porridge where starches are converted to sweet fermentable sugars that the yeast can ‘eat’ later in fermentation. The liquid is filtered to end up as bright, sweet liquid called wort. 3. BOILING A rolling boil is carried out to sterilise the wort. Hops are added to the kettle/copper for bitterness and flavour, and sent to the whirlpool where aroma hops may be added. The wort is spun to remove solid
material such as hop debris and other bits called trub. The liquid is then chilled on the way to the fermenting vessels. 4. FERMENTATION Now we have a liquid that has a malt character balanced with bitterness. But a crucial element is missing, alcohol. Yeast, the agent of fermentation and producer of alcohol, is pitched and allowed to ferment. Yeast and trub are removed from ales and then sent to bright beer tanks with fresh yeast and liquid sugar. Lagers are stored at -1°C for numerous days, forced carbonated with CO2 awaiting packaging. 5. PACKAGING Beers are then bottled, canned or kegged, checked for quality and released for sale.

HOW TO TASTE BEER
Whether you are a seasoned beer taster or a novice, these tips will help you fake it and make it during GABS.

CHECK
Once the beer is in a clear glass, give it a good look. Hold the glass in front of you and pay attention to its colour. Pay attention to its consistency, colour and the head on the beer. Don’t hold the beer to a light, as the colour of the light will interfere with the real look and colour of the beer.

SNIFF
Most of what you experience when you taste something is smell. Don’t believe us? Hold your nose and taste something. Then taste it again normally. You will notice a huge difference. Take a deep sniff of the beer to fill your nose with its aroma. This will give you a basic idea of the smell and the taste before you drink it. Sniff but don’t inhale the beer through your nose. You’re bound to choke and make a scene and no one wants that!

FEEL
At this point, you should be noting the consistency of the beer in your mouth (called mouthfeel) as well as some of the basic flavours in the beer. While the beer is still in your mouth, breathe out through your nose. This action, called retro-olfaction, will be similar to your initial smell of the beer, but should be slightly different due to the temperature difference of the beer. At this point, notice the different flavours of the beer, including sweetness, bitterness and acidity/ tartness. ‘Feel’ refers to mouthfeel, not the feel of pouring the beer over your head, sticking your fingers inside your glass or stroking a keg.

SWIRL
Gently agitating your beer in the glass allows the smells trapped in the beer to escape. This prepares the beer for the next step. Swirling the beer also helps you see the colour and head retention, or how well the head on the beer stays in one piece – this head also traps some of the aromas for you to taste. The emphasis is on gently. Don’t go splashing everyone around you. That is the best way to lose friends quickly.

TASTE
Take a small sip of the beer. Remember that you are trying to experience the beer, not down it like at a party. Swish the beer around in your mouth so all your tastebuds get their turn with it. Don’t guzzle, scull, or drink out of a shoe.

How does this beer make you feel? Do you want to drink it at the beach with a salty mouth? Would it taste delicious with dessert? When do you want to drink this and do you want to take it home with you? It’s not just the beer making an impression on you. You are making an impression on the beer. Treat it with respect. Enjoy it. ith craft beer growing exponentially, albeit off a small base, people are no longer just enjoying a few cold ones at the pub before dinner, they’re looking to enjoy beer with their meals. “Nothing annoys me more than going to a restaurant, which has an incredible food offer, a well thought out wine list and six indistinguishable lagers slapped on as an afterthought at the end of the wine list,” explains Kirrily Waldhorn, aka the Beer Diva.
1. Complement – does the beer complement the food, are there similar flavour characteristics, which will work in delicious harmony together? 2. Cleanse (or cut) – is the beer acting as a palate cleanser. Those wonderful bubbles from the carbonated foam are a perfect broom for sweeping through any richness on the palate. 3. Contrast – the most rewarding when done well, does the beer act as a glorious contrast to its food partner?”
THE THREE Cs
TRENDS TO WATCH
The basic rules to beer and food matching follow the same principles as matching wine with food, and that is, firstly, ensure the flavours in the pairing are balanced. For instance, if we look at wine, a sommelier would never pair a delicately seared scallop with a hearty shiraz, as the shiraz would dominate. The same goes for beer and food; a light Belgian Witbier would definitely lose the battle against a chargrilled steak. “So, where to start?” asks Waldhorn. “There are many Cs discussed in beer speak, ‘colour, clarity, carbonation’ but the three Cs relating to beer and food pairing relate to:
The great thing with beer and food is that anything goes and there is not a food that beer cannot match. As for exciting new trends in beer and food matching, it seems dessert and cheese is where it’s at. “We are definitely starting to see beer as a credible partner to cheese and many wine writers would agree that beer and cheese is a sublime pairing,” says Waldhorn. “Brewers are barrel-ageing beers, which impart incredibly rich characters that will stand up to decadent desserts and full-flavoured, slow cooked styles of cooking. Dessert and beer is still relatively undiscovered but can make for the most wonderful pairing when done well!”

Just like beer, cider can be an excellent pairing with food. The simplest way to match the two is by looking for dishes and ingredients that you’d cook with apples. Anything pork works well, as do cheeses. Another good approach is to try to identify the most prominent flavours in the cider and then match those in a dish. For instance, a crisp fruity cider will pair well with lighter meats like seafood, chicken and turkey. Whereas a traditional English or French-style aged cider can have bready almost biscuit-like characteristics, which match well with oysters and seafood. Just like sweet wines, if a cider is slightly sweet it will take some of the heat out of spicy Asian dishes. Also the carbonation in cider works well to cleanse the palate and scrape it clean, ready for the next creamy sauce or gooey soft cheese. Something to look out for when pairing cider with food is the tannins. Much like bitterness in beer, tannins can enhance spiciness and acidity in some dishes, making them unpleasant.

An indulgent English-style amber ale alongside a heavenly slowcooked pork belly. 2. A Belgian dubbel rich in rum and raisin characters is perfect with a big scoop of vanilla bean icecream…the grown-up coke float! 3. A rich, decadent stout (poured into a champagne flute) contrasts perfectly to the sweetness found in a gooey chocolate pudding. 4. A pungent washed rind cheese with a rich Belgian tripel. 5. The GABS Hottest 100 is a chance for beer enthusiasts to vote for their favourite beer of the year. A huge success in Australia, GABS is thrilled to be bringing it to New Zealand this December.
T
he GABS Hottest 100 is an annual poll, which attracts thousands of beer lovers who vote for their favourite Australian craft beers of the year. Once the votes are tallied, the results are announced on Australia Day when they are counted down live at Hottest 100 Official Venues around the country, and on websites and podcasts. Now in its ninth year, the poll saw record entries this year, with Stone & Wood Pacific Ale reclaiming pole position, knocking Feral Brewing’s Hop Hog off the top spot for the first time since 2011. However, the big mover was Pirate Life 20 #GABS2016 BEER, CIDER & FOOD FEST 2016
from South Australia, which less than a year since launching, managed to secure two spots in the top five, coming in at number three with its IIPA and number four with its Pale Ale. With GABS heading to New Zealand for the first time this year, it seems fitting the Hottest 100 should make the leap over ‘the ditch’ too. Voting for the first Hottest 100 Kiwi Craft Beers of the Year will begin later this year, so for updates on how, when and where to vote, simply subscribe to the GABS website. The results will be counted down on Waitangi Day.

The Yeastie Boys won the first GABS People’s Choice back in 2012 for Gunnamatta Tea Leaf IPA. We chat to Yeastie Boys co-founder Stu McKinlay about the win and the idea behind the tea-infused IPA.

Q DID YOU EXPECT GUNNAMATTA TO BE SO SUCCESSFUL? I don’t think we expected it to be as successful as it was but I did realise, even before we brewed the commercial version, that we’d come across something very special with the Earl Grey IPA. I worked pretty hard on finding the right tea and the trial batch was so fantastically drinkable.

Q IS IT STILL A BIG SELLER FOR YOU TODAY? It sure is! It’s our biggest selling beer in every market we sell to. In New Zealand, it is a tight race with our flagship beer, the South Pacific Porter Pot Kettle Black, but Gunnamatta is streets ahead everywhere else.
Q HOW DID YOU COME UP WITH THE IDEA FOR THE BEER? I love tea, I drink it every day, and the world has too many coffee beers, so I figured it was time to restore some balance to the world.
Q WHAT GOES INTO THE BEER? The most important element is the Earl Grey Blue Flower from New Zealand tea merchant, t Leaf T. It’s really the defining factor in the beer and, I believe, the reason why it is such a good seller for us. In a market where there are 20 to 30 really great IPAs, there is only one great Earl Grey IPA. It changes the balance of this type of beer, using a gentle drying astringency instead of bitterness to balance the malt sweetness.
Q DID WINNING PEOPLE’S CHOICE HELP WIDEN YOUR REACH? It did. At the time I joked that we received more press, per litre brewed, than any brewery in the world. We’re probably still up there but that probably just means we haven’t taken advantage of the press by selling a whole lot more beer! Ironically, the win came at a time when our Australian importer was going out of business. We spent months trying to recoup $25,000 and find a new importer, when we should have been looking for opportunities off the back of the win. We never did get the money back but, with Gunnamatta becoming our biggest selling beer, we think we’ve at least been on the end of some good karma.

The Festival Beers bring out the competitive nature in us all, making it a lot more fun for the attendees and giving all the brewers a chance to play with an idea they might not normally have the excuse to do.
Q WHAT ARE YOU BREWING FOR GABS THIS YEAR? We’ve brewed Hellzapoppin’, a hot smoked IPA. Hellzapoppin’ is the debut album of legendary New Zealand rockers, The 3Ds. One of their members now has my old homebrew fermenter sitting in her house, as her partner is a homebrewer and I started listening to a lot of their music after he picked it up. Hellzapoppin’ immediately struck me as a fantastic beer name and I just started thinking about what a beer with that name would be. Fire and brimstone was the first thing I thought of. And, then, about how many hop heads will probably end up in hell ;-) In the end, we’ve created something that’s a good fit for hop heads and the hot heads! It’s got a lot of tropical fruit from the Nelson Sauvin and Rakau hops, with a generous dose of Manuka smoke from the malt, and then a warming finish from the Peach Bhut and Fatalii chillis. We’ve purposely avoided making it too hot. This is meant to be reminiscent of a good day in hell!

Joseph Wood, founder of Liberty with his wife STAND Christina, was a drinker frustrated by lack of choice in his part of the world (West Auckland) so began brewing his own. After becoming such a good customer of online homebrew store Liberty Brewing, the owners eventually sold him the business. In 2009 he started brewing under the brand as a form of marketing, but soon demand for his beer was so great that Liberty Brewing became what it is now; one of NZ’s best breweries.

Making "sweet as" beers since 2011, Mash Palace was formed by a bunch of mates with different backgrounds. They had one thing in common, and that was a love for good beer. Deciding over a pint to build their own brew kit they set themselves two goals: To win competitions, and to sell beer. After one of their recipes took out a homebrew competition in 2015, you now have a chance to taste what they've been building to all this time.

The Yeastie Boys started in 2009 as a partnership between two friends Sam Possenniskie and Stu McKinlay. Brewing out of a number of places around NZ, and now the UK, they say they stay ahead of the game by being food and drink lovers first and foremost and postmodern craft beer cult heroes on the side. Their 2012 GABS beer, Gunnamatta, which was a “tea leaf IPA”, won People's Choice and has since become favourite of their core range for many beer lovers. With dishes like Texas-style beef brisket, Georgia-style pulled pork shoulder, Eastern Tennessee pork spare ribs, Alabama BBQ chicken and Kentucky lamb it’s easy to know why Dixie Barbecue has developed such a cult following.
MISS CLAWDY Inspired by Lloyd Price’s 1952 New Orleans hit single, ‘Lawdy Miss Clawdy’, this soul food haven feeds hungry hearts with edible goodness wrapped in a lil’ Southern magic. Be warned, Miss Clawdy’s flavours are big, playful and have attitude, just like Miss Clawdy herself. Miss Clawdy
COREANO Coreano combines two flavour sensations, Korean barbecue and Mexican street food. Think tasty treats like the Carnitas Taco, a Mexican-style pulled pork taco, or a Galbi Taco, which is packed full of honey soy marinated beef short ribs. Coreano is also famous for its kimchi fries – French fries topped with grilled kimchi, carnitas, cheese, salsa roja and Mexican crema.
