Since its inception back in 2011, GABS has been a beacon of connection between craft beer loving consumers and hundreds of craft breweries! WHEN TASTING A BEER, THERE’S SO MUCH MORE THAN SWILLING IT DOWN. EVEN THOUGH TASTING IS AN INDIVIDUAL THING, THERE ARE A FEW STEPS WHICH IF FOLLOWED WILL TAKE YOUR BEER TASTING TO A BLISSFUL LEVEL

First things first! Pour your beer into a clear glass, pause and take a good look at it. Raise the beer in front of you but don't hold it up to direct light Pay attention to the colour, clarity, foam and consistency

Gently swirl the beer in the glass to unlock its aromas, stimulate carbonation and test head retention

Take two quick sniffs through your nose and then one long one Try breathing with your mouth open and closed and take note of what you sense

LOOK SWIRL SMELL TASTE

Take a small sip but don’t swallow right away Instead, allow the beer to linger in your mouth which will allow the beer’s characteristics and flavours to shine through Fruity, smoky, smooth? What do you experience.

MOUTHFEEL

How does the beer feel in your mouth? It could be light and airy or it might be heavy and viscous? Is it very bubbly? The mouthfeel will be different depending on the style of beer, brewing methods and ingredient quality

Take notes! Beer tasting is an individual experience The more tasting you do it, the better you’ll get at understanding your own preferences

CRISP

Crisp beers are light, clean and crisply refreshing

Subtle fruit flavours and depth to these beers

Some sweetness from a biscuity malt profile

Fresh, refreshing hop aromas with crisp bitterness

Earthy, hay-like, grassy, and woody hop flavours with a dry malt profile

Hop flavours and bitterness are the hallmarks of these beers Each hop varietybringsitsowncharacteristics

Expect some sweetness and flavours of nuts, toffee, caramel, toast and fruit.

The highly roasted malts in these beers give coffee or cocoa style flavours

Smoked malts impart characters similar to some malt whiskeys or smoked meats

Yeast and bacteria give a combination of sour, rustic and earthy characters

If you’re new to craft beer, here’s a great place to start These are approachable, balanced and great examples of some of Australia’s favourite styles

Bursting with hop flavours and a complex or rich malt profile

Mild malt and heavy use of hops creates citrus, resin and tropical fruit flavours

Full malt flavours and toasty or nutty accents and hints of dark stewed fruit

The malts provide flavours such as dried fruit, plums or toffee

Smooth and decadent with flavours of milk chocolate, coffee or hazelnut

Full on roast characters such as espresso, dark chocolate, and raw cocoa

The smoke is usually gentle, intriguing and in harmony with the other flavours

Bonfire and smoky bacon flavours, with subtle malts and yeast underneath

Bubblegum, citrus and banana flavours

Yeast and dark malts create dark fruit, banana bread and rich spice flavours

Mild acidity and with crisp, tart characters

Vinous with pronounced acidity and fruit characters

Sour and funky, these are often aged in oak

Here you’ll find beers that are a bit more challenging, including bigger hop profiles and darker styles There’s a whole world of creativity and flavour to explore

GABS2024 HOW TO APPROACH FESTIVAL BEERS

EVERY YEAR WE PUT THE CALL OUT TO AUSTRALIA AND NEW ZEALAND’S BEST BREWERS TO CREATE SOMETHING SPECIAL FOR OUR FESTIVALS.

For those brewers, it’s an opportunity to push their creative flair, break boundaries, and showcase their talents. These beers, ciders and seltzers are unique, one-of-a-kind, first time, and exclusive releases in every sense. Some are made in a traditional style, perhaps with a twist, while others are highly creative. Whith so many Festival Beers on offer at GABS, sampling is the name of the game.

There are 120 festival beers to choose from They are served from two huge festival bars, each with 3 sections of 20 taps on each side.

Tasting paddles each hold five 100mL glasses

You may only select from 20 festival beers in a section. The traffic light indicators are a guide to what might suit your taste.

Simply grab a tasting paddle and piece of chalk at the festival bar, pick your beers off the menu and write the numbers down on the paddle in sequential order

Give the paddle to one of our friendly bar staff to have your glasses filled ENJOY!

Australian natives offer a chance for the brewer to innovate and showcase a beer that’s uniquely local and to promote environmentally sustainable practices. Our native flora’s unique flavours are the big drawcard, which any of us that have tried the likes of wattle seed, lemon myrtle, or finger lime can attest to Here we have the flavours of the Australian bush, and there’s really nothing like them anywhere in the world Building on a theme of cultural connection and authenticity also becomes an appealing story for adventurous patrons as brewers look for differentiation in a noisy market

GIN DISTILLERS SOMETIMES TALK ABOUT A “NATIVE BOTANICAL FATIGUE” BOTH AMONG

DISTILLERIES AND CONSUMERS. DO YOU THINK THIS IS IN THE FUTURE FOR BREWERS, OR DO YOU THINK IT WILL STAY POPULAR?

While this is possible, I think beer is safe for now With botanicals not an essential brewing ingredient and the frequency of application low, they are still a novelty with plenty of innovation to come. If you think of the many variables in brewing and actual beer styles, the possibilities are almost endless Native botanicals offer unique consumer engagement opportunities around storytelling, education, and community connection.

WE’RE SEEING A LOT OF SAVOURY FLAVOURS IN BEERS - SALT, SPICE, SMOKE, SPAGHETTI ETC. IS THIS A NEW TREND, OR HAS THIS EXISTED FOR A WHILE? WHAT IS THE APPEAL OF A SAVOURY FLAVOUR PROFILE?

With savoury flavours historically used in brewing, it seems their use is again on the rise With traditional use of salt in ‘Gose’ and smoke in ‘Rauchbier’, spices and herbs have also been used over time. Increased innovation and brewing capability within modern craft beer has also led to further experimentation of savoury flavours Whereas in the past it may have been just smoke or salt, now it’s a ‘Smoked Macadamia Stout’ or a ‘Spaghetti Saison’ Obviously, there is uniqueness and marketing cutthrough calling out your ‘Spaghetti Beer’ and a fair bit of consumer anticipation created. KING RIVER DOUBLE RED IPA

We have taken our best selling King River Red IPA and turned it up to 11! We put together a cranked up malt & hop bill to really enhance those big passionfruit, grapefruit and citrus notes. This is a beer for the flavour hunters.

DON'T TAKE THE PITH

A luscious chocolate and orange porter, combining rich chocolate malt with vibrant orange zest. The aroma is a tempting mix of bittersweet chocolate and citrus. With each sip, the beer unfolds with a velvety texture, balancing smooth chocolate with zesty orange notes Toffee and caramel undertones add sweetness, leading to a clean finish with a subtle dark chocolate bitterness. This well-crafted porter is a delightful fusion of decadence and citrus brightness

GRAPE ALE

Based on an Italian Grape Ale, with some local Brunswick flair! We sourced spent Shiraz grapes from our neighbours Noisy Ritual Urban Winery This beer was fermented on the pressed Shiraz skins, complimented by the use of a Belgian yeast to produce some delicate spice and fruity esters. This creates a nuanced, and at the same time, a very drinkable ale. Saluti!

Using vacuum distillation, we capture the essence of chilli PEPPER (habanero), black PEPPER and Szechuan PEPPER in this west coast IPA. This extraction get's all of the flavour and leaves behind the burn Lucky we added some horseradish distillate to spice things up a bit!

DUBBEL DUTCH

SOOLONG SUCKA

What would happen if you rocked up to your Nan's tea party with a 4 pack of freshly brewed IPA..? Probably something like this... Soolong Sucka is an American IPA that combines new world hops with old world tea to create something both Nan and Dad will enjoy Soothing aromas of Oolong and black tea complimented by subtle hints of raspberry and monk pear pair with new world hops to create a balanced but unique take on an American IPA. With a harmonious blend of tea and hops on the palate, this beer delivers a refreshing and nuanced drinking experience for tea and beer lover alike.

HOPLESS - BOTANICAL IPA

A classic IPA base, using anything but hops! With horehound for bittering, elderberry and honey for flavour and aroma, this well balanced, yet delightfully different IPA will leave you wanting more.

UP BEFORE YOU GOSE

Seaweed and rice? Sounds like a sushi roll to us. Brewed with rice base malts and Wakame Kelp, hand harvested from Victorian waters, then kettle soured to give a light, refreshing and delicately balanced gose - slightly salty, slightly sour, super refreshing. TWØBAYS specialise in brewing with alternative malts, so if you are looking for a refreshing GABS beer without the bloat, then WHAM!, this is it!

Inspired by the beer-based cocktail, this Michelager Is spicy, zesty and a whole lot of fun to enjoy! Brewed with tomato juice, lime, chilli, and a few dashes of salt, this beer is balanced with a spicy kick.

BLUEBERRIES AND SOUR PATCH KIDS!

Using copious amounts of the famous candy, our beer should start off with a sour front palate and finishing with notes of berries and other dark fruit We are going to use a European yeast which should add and element of funk as well.

CREATURE OF THE DEEP

A stout like no other, brewed with loads of oats, wheat and chocolate malt, finished with some tasmanian kelp to add a suble saltiness then put into 500l puncheons to age But thats not the end. The barrels are then loaded onto a work boat, and dropped into the Pacific Ocean to age at the bottom of the sea until the last minute when they are bought back to the light of day and packaged for your drinking pleasure. A beer like none other!

STICKY

Let’s turbo charge our Wet Hop Lager Sticky Fingers. Hops grown and hand picked from our farm in Forrest. How many hops can we fit in the kettle? Add this to a heavy base of Australian malt. Wet Hop gone mad Triple Sticky!!!!

We wanted to make a beer that celebrated where it was made - the Yarra Valley. The region is known for producing some of the best Pinot Noirs and Sparkling Wines in the country, and so we set out to produce a beer that evoked the same red cherry, spice and floral notes that these cool climate wines have This is a super crisp and dry saison, highly effervescent, with some spiciness from rye malt, floral notes from Victorian hops, and a slight pinkish hue from the additions of fresh cherries from a local farm in Wandin.

& KEY LIME MERINGUE PIE SOUR

A tantalizing fusion of citrus zing and sweet meringue delight in every sip. The tartness from the kettle souring process lights up your palate The bright notes of fresh lemons and key limes follow, creating a harmonious balance of sour and sweet. An NZ Pilsner like none you have ever experienced before Crisp, refreshing with big passionfruit and blackcurrant notes.

LOVERS - ANZIPA

Two nations, both alike in beer enthusiasm. In fair Newcastle, (where we lay our scene), a southern affair held apart by Bledisloe cups, a refusal of statehood and 4157km of Tasman. This forbidden haze amongst two bickering populations is far from a tragedy Stone fruit, passionfruit and pineapple blend into this thick, even chewy, golden IPA, creating poetry in a glass.

This fruited frappe (milkshake) IPA is packed with an absurd amount of strawberry, mango, passion fruit and mixed berry, dosed with lactose and vanilla and double dry hopped with Strata and Hull Melon. As the name suggests, this beer is a magical beast that will take your tastebuds on a mythical journey to land far far away.

Just like The Don himself when he was knocked over by Indigenous cricketer Eddie Gilbert on November 6, 1931 Dubbed by Bradman as The Fastest Bowler he'd ever seen, Gilbert took Sir Donald and gave him what for - much like we've done by whacking a stack of Ooray Plum in a traditional English Dark Mild.

This is one dope IPA, man. Dry hopped with at a massive zero g/L, all the late flavour and aroma additions are botanically derived terpenes, blended together to mimic some rad cannabis strains. This IPA is dank with plenty of that fresh bud goodness, rounded out with tropical fruit and citrus notes and finshed with a solid bitterness. No cannabis was used in the process of this beer, so you won't feel any effects of THC or CBD

Is it a wine or is it a beer? Who are we to put a label on such a unique creature. In order to mimic a 'brut' wine this beer is brewed super dry, using a high attenuating Saison yeast Nelson Sauvin hops help to add a white wine character to the beer.
