The Winx Stand Welcome to the WINX Stand, Sydney’s newest and most exciting world-class venue at the iconic Royal Randwick. Named in honour of the immortal racehorse Winx, the new WINX Stand is a two-level $46.6 million state-of-the-art venue. The ground floor features an expansive, fully enclosed indoor space flooded with natural light offering fantastic panoramic vistas over the picturesque Royal Randwick.

KRAKEN It is told, a merchant trading ship carrying precious SPICED RUM from the Caribbean was ferociously and furiously attacked by the MONSTROUS Kraken. The ship was lost, along with all but one of the barrels of rum, badly stained by the Kraken’s black ink.​

EMERGING VARIETALS - THE NEW NORMAL Exploring a range of up and coming varietals from around NSW. Unheard of not that long ago, we will explore just some of the New Normal wines we are seeing in Australia today.

WHAT IS SOUR BEER AND WHY IS IT COVETED? A Master Class with Dollar Bill’s Ed and Fiona Nolle. What is Sour Beer and why is it coveted? A deeper look into how a centuries old style of beer and the processes around it has made a resurgence and why it is consistently ranked among the champion beers in Australia and the world

GIN COCKTAIL MIXOLOGY CLASS This is a “Cocktail-making” class that is designed to give you the basic practical skills to make your own cocktails and host your next cocktail party at your own home. Become a gin cocktail mixology expert for the day and personalise your very own cocktail! We’ll guide you through the process as you mix 2 Cocktails that are carefully selected form the West Winds gin range. Along the way, you’ll learn a touch of the rich history of gin as well as how we produce our award-winning gin here West Winds.

THE WORLD OF BOURBON & BEES Join Maker’s Mark National Ambassador Rhi Lucas for a unique flavour experience. Be guided through a tasting of four distinct and delicious single varietal honeys from Beechworth Honey, expertly paired with rare expressions of Maker’s Mark bourbon. Guests will then try a Maker’s Mark and Mead cocktail, showcasing how whisky, honey and seasonal ingredients come together.

FLAVOUR FIRST SPIRITS Join Brogan Clark as he takes you through the latest releases from Karu Distillery. Start this masterclass off with a Outcask Barrel Aged Rum Old Fashioned, the perfect expression of Karu's love of barrel aging spirits and bespoke craft cocktails. This will be followed by our Outcask Rum, a 2.5 year aged Australian Rum. The last product is our flavour forward vodka Morita. This award winning vodka is one the touch points in a new category of flavoured vodkas. Our masterclass will runt through the present and into the future of craft spirits in Australia.

Experience THREE BLUE DUCKS RESTAURANT The Ducks is a great story of food, born in the surf! It all started with three good mates travelling the world, cultivating ideas around a better, more sustainable approach to eating and living. During this time, with a shared belief for cooking food that is delicious and ethical, Three Blue Ducks was hatched. They returned to Bronte to enjoy the coastal surf lifestyle and soon their crew of three grew to six. They all became friends organically over their love of sharing great food with no frills, cooking, fishing and surfing together, whilst maintaining an ethical and sustainable business that they are amazingly proud of to this day! Since opening their flagship Three Blue Ducks restaurant in Bronte, they’ve opened an authentic and relaxed range of dining venues in Byron Bay, Rosebery, Brisbane, Melbourne and Nimbo. DRINKS MENU TO START Bleasdale sparkling wine NV Blanc de Blanc This is an elegant wine with ‘Granny Smith’ apple acidity and almond biscotti flavours combining into a delicious drink to enjoy with friends.

ENTRÉE Bleasdale white wine 2023 Adelaide Hills Sauvignon Blanc An aromatic wine with great citrus, tropical, snow pea and nettle aromas, finishing crisp and light with refreshing acidity.

ALTERNATE MAIN Bleasdale red wine (chilled) 2022 Cabernet Franc Bright crimson red with purple tints, the perfume is inviting with rose petal, musk and raspberry from whole berry fermentation along with some candle wax and star anise/fennel complexity. The palate is lively with a silky middle palate, some structural savoury tannins and a crunchy red apple finish. Bleasdale white wine 2023 Adelaide Hills Pinot Gris Nashi, ginger and rosewater perfume leads to a generous and textured palate with nutty complexity from the barrel ferment component. A satisfying yet moreish wine, textured and complex middle palate, with a hint of sweetness.

DESSERT Manly Spirits Nightcap A delicate combination of Grape and grain vodka, Cold brew coffee liqueur ,Triple sec, Chocolate bitter with Orange peel. Warm, rich and comforting, the Nightcap combines a rich coffee flavour with hints of chocolate and gentle orange notes. Smooth, sweet yet intense, a cocktail that’s a delight for all the senses.
