elcome to our Growth issue, another action packed edition of your favourite local Life & Style magazine. Go grab a coffee and plant yourselves firmly in your seats, let’s get started
Growth is a funny word – mostly because it can be applied to so many different things. Personal growth can see you settling down and taking on new responsibilities. Financial growth can see your business branch out into new territories. Intellectual growth can lead you to master new mental disciplines. Muscular growth can make you fitter and more attractive. Spiritual growth can see you move to Alaska with a small coterie of disciples to set up a new mystical cult that will survive the inevitable apocalypse resulting from the observed exponential growth of our universe. It’s a big word, and as we discover more and more about ourselves and the universe in which we live, the word itself is following suit and, well… growing, to accommodate more meanings, more areas into which the human experience can expand. Lets return, briefly, to more mundane meanings of the word. Fortunately for us all, we live in one of the few relatively unspoilt corners of the developed world – you guessed it: Isle of Man. Whether it’s the wild and windswept cliff paths, adorned with the vivid colours of the wildflowers that grow thereon, or the burgeoning seas that grow and diminish with the swell of the tide, we are literally surrounded by the flux of the natural world – growth is all around us. And of course, something that’s often overlooked about nature is that we, each and every one of us, are a part of it. Our society (and the individuals it’s made up of) is growing daily too. How many of us have been enjoying a quiet beer in town one evening when we find ourselves wondering how we know the person ordering the round next to us, only to realise (with some dread) that they’re the son or daughter of an old school friend? And for those of us lucky enough to have children in the family, their turbo-charged growth is ever a reminder of the onward march of father time. One of the best things about getting older is the opportunity it brings for a person to grow from the awkward uncertainty of childhood into the person they want to be. Another of the best things about getting older is the pleasure it’s possible to obtain by observing those around you making that same journey into a chosen, fulfilled, reality. Enjoy. SR

The Victory watch LI M ITE D E D ITION The making of the uniquely special Limited Edition Victory timepiece, unlike any other watch ever created, has been produced by Bremont with the blessing of the Royal Navy and the National Museum of the Royal Navy. A totally unique mechanical retrograde watch that includes parts of oak timber and copper from the original ship to commemorate Nelson and the ship itself. HMS Victory is the only remaining 18th Century ship anywhere in the world and remains the oldest serving warship still to be in commission- she still retains her own Captain, offices and crew and flies the flag of the Second Sea Lord, Commander in Chief Naval Home Command. Laid down in 1759 and launched in 1765; she is most famous as Lord Nelson’s flagship at the Battle of Trafalgar in 1805. HMS Victory as with any ship has had constant work carried out on her over the years. The ship sustained considerable damage after the battle of Trafalgar and had a major re-fit in 1814 and 1888 and then in 1903 following an accident where she was almost sunk on her mooring as a result of being struck by another boat. In 1910 the Society for Nautical Research was set up and in 1922 she was placed into dry dock where she currently stands. Many years of exposure have taken their toll on HMS Victory and in 2010 a major refit was commissioned to preserve her for future generations. Part of the proceeds of each watch will go towards the refurbishment and preservation of the ship.

funny Farm Talking of the weather… Yeay! After months of filthy weather, Spring is here at last! Well, at least the beginnings of it… A time of new growth, planting seeds, digging the vege beds and tidying the appalling winter mess in the garden so we can enjoy the spring flowers without feeling guilty… Oh, and er… visiting the Garden Centre. OK, we’ve all done it. One pack of seed potatoes and a small tree to fill a gap, nothing else. Mmm… sixty quid and a trolley full later and it becomes quite hard to remind yourself of the money you’ve saved by growing your own. Well, alright, so I just couldn’t decide which variety of spud to donate to the slugs, or turn into a slimy, smelly squidginess with potato blight… they all look so impressive on the packaging. And, it should be illegal to put brightly coloured primulas and nodding little narcissi by the tills, really! After a summer where the only things that grew had snorkels and flippers, where ‘weather resistant flowers’ did not mean growing successfully in a foot of rainwater and even the chickens learned to water ski down the fields, you would think that I would have learned better. But, sadly, each year, those first little rays of sunshine bring on that terrible affliction, ‘mad gardeners disease’. The symptoms include casually swapping the housework for weeding and the need to dig out compost heaps while trying desperately not to turn the chickens into kebabs as they dash under your fork in search of worms.

Place the cleaned-out frying pan over a high heat until hot and add a dash of oil. Add the chops, garlic and thyme and fry for 2-3 minutes until coloured. Turn and fry for a further 2-3 minutes on the other side, pushing the thyme under the chops and breaking up the garlic a little.

Chop off the green stalk and stand the flat end on your chopping board. Now slice down from the top, almost like peeling an orange, working your way around the pepper, to leave a tree of seeds. Now place the pepper slices down on the worktop, and holding them down with your three middle fingers, cut them into slices. Don’t try to rush: speed will come with practice.

Towards the end of cooking time, add 3 knobs of butter and baste the chops with it as they are cooking, to speed up the cooking process and keep the chops moist. (Push the fatty edge of the chops towards the back of the pan to help render the fat.) Squeeze the garlic out of its skin and place with the herbs on top of the chops. Transfer the chops to a plate, and rest for 5-10 minutes, spooning over the basting butter now and again. Serve the chops on top of the peppers with the resting juices and a little juice from the peppers.

Although it’s not essential to salt aubergine before you fry it, doing so draws out the moisture and makes it absorb less oil. Simply chop or dice the aubergine as required, place in a colander and sprinkle with about one teaspoon of salt. Leave for 30 minutes, then rinse well, pat dry on kitchen paper and cook as you wish.

Add a glug of oil to a heavy-based casserole dish and fry the onion for 5 minutes until soft but not coloured. Add the pepper and garlic and cook for 2 minutes. Slit the sausage skins and crumble the sausage meat into the pan, then cook over a medium heat for 4-5 minutes until coloured. Add the smoked paprika and mix. Season to taste.
StirSERVES in the butter 4 beans and pomegranate molasses with a generous pinch of salt and grinding of pepper. Add the tomatoes and sugar. Bring to the boil, then lower the heat and simmer, uncovered, for 40-45 minutes until the aubergine is tender and collapsed and the stew reduced and flavoursome. (If you find the mixture is drying out too much, add a couple of tablespoons of water.)
HOW TO FRY ONIONS
To serve, slice the bread and toast on each side until golden. Stir the mint through the aubergine, spoon onto the slices of toast and scatter over the crumbled feta. Serve warm.
If frying onion, don’t slice it too thinly or it will burn before it has had a chance to caramelise. Never rush cooking an onion. Always give it 5 or 6 minutes in the pan on its own.

Heat a heavy-based casserole dish over a high heat. Add a glug of oil and fry the aubergine for 3-4 minutes until coloured on all sides. Add the garlic and onion and fry for another 5 minutes until the onion is tender.

SPICY SAUSAGE RICE This is like an old-fashioned jambalaya - a mixture of rice, vegetables and meat, a bit like risotto but without the need for stirring. Sausages are cheap but packed with flavour, and taking them out of the casing first flavours the rice beautifully. You can use any sausage you want - chorizo, merguez, pork or beef, depending on how spicy you want it.

Using a sharp knife, make cuts into the fat of the chops, about 5mm deep and at 3-4cm intervals, making sure you don’t cut into the meat. (This will stop SERVES 4 the meat from curling up during cooking and will make it cook more evenly.) Season the chops really well on both sides, pushing the seasoning into the meat.
“In truth, there’s no one with a genuine interest in learning who can’t improve and, with enough practice, become a decent cook,” he adds.

Add the vinegar and let it bubble for a minute or two until it has reduced and the peppers are soft. Turn down the heat, add the tablespoon of extra virgin olive oil and cook for a further 2-3 minutes. Stir in the shredded basil and continue to cook for 30 seconds, then turn off the heat. Decant into a bowl and set aside to infuse. Wipe the pan clean, ready to cook the pork.
And to all those who say they simply can’t cook, the restaurateur reckons they’re just not interested enough in trying.

4. Turn your engine off when going downhill - I’m never in that much of a hurry, why would I waste perfectly good 4 star on speeding to the bottom of the hill? First prepare the peppers. Heat a little olive oil in a large frying pan, then add the onion and peppers. what this has got to do with savings, but if we’re on the subject of quantitative easing I’ll also say that the budget brand toilet issue is a fool’s economy, unless you fancy the idea of spending your Co-Op dividend on Preparation H. Beryl told me to keep this to myself, but I don’t notice newspapers asking her to write up her opinions about how to play Boggle and why the cleaner keeps hiding her dentures.
Myself and Beryl manage on our savings, and by only heating the house for two hours a day, but the line outside the Parish hall tells me that a lot of the young lads are having trouble finding steady work. I remember the economy was like this during both wars, and the only way we pulled ourselves out of it was by rationing eggs and banning the consumption of gin on weekdays. Now I don’t think we’re about to run out of eggs quite yet, but maybe those chaps over in London could resist the temptation to take a triple dip from the recession. It was bad enough the first and second times, and that’s coming from somebody who remembers not seeing a banana for ten years. I don’t want to go back to eating limpets, and perhaps Tony Blair would be minded to remember that next time he invites the king of Prussia over for a slap up meal on the British taxpayer.

rowing old is an unavoidable fact of life – well, not strictly unavoidable, but the alternative is less desirable. ‘Old’ is relative of course, but there’s a certain stage of your life where you start becoming more aware of the decreasing number of people you know that are older and the increasing number that are younger than you. I’m 28 years old. Not quite ready for the retirement home of course (although some mornings I feel like it), but old enough to actually start having to consider boring things like the future, which in my book is enough to qualify me as at least ‘a bit old.’ Here are some telltale signs that you’re getting old. If you’re my age or older, you’ll recognise some of these. If you’re still a wee whippersnapper, you’ve got it all to look forward to.
People born after you start to get on your nerves…
I’ve written about this previously within the pages of Gallery, but it bears repeating. There’s a certain point in one’s life after which your brain refuses to accept that new people will be born. Mine is July 1993, the release date of Jurassic Park. I went to see it four times at the cinema and was marginally obsessed: I read everything there was to read about it, collected every bit of merchandise I could afford with my pocket money, and to this day my first viewing remains an important milestone for me. I assumed it was the same for everyone. However, some time between 2009 and 2011 I started to notice more and more young adults born after July 1993. The very concept of someone being born after Jurassic Park – the very epitome of modernity, with its groundbreaking CGI and depictions of such cutting edge sciences as genetic engineering and chaos theory – seemed to me inherently absurd. Now, there are people born after Jurassic Park (AJP) who are NINETEEN years old. Old enough to get jobs and drink in pubs and drive cars. Who the hell do they think they are?

You start creating spreadsheets for meal plans…
I’ve never actually done this, but I came close recently, creating a Word document to make a list of all the possible meals I could make using the ingredients from my latest shop and thus to see how long it would be until my next supermarket trip. Incidentally, I figured I had about three weeks worth of food. That alone is symptomatic of getting old I think. Ten years ago, my fridge may as well have been unplugged: if I was hungry I’d go to the shop and buy a pizza to put in the oven. If I was hungry and the shops were shut, I’d go without food. That’s how prepared I was to live life on the edge. More broadly, planning ahead is just a simple fact of life when you reach a certain age. It’s obviously an entirely reasonable thing to do in many respects, such as saving for a mortgage or making sure you have insurance on stuff that you don’t want to pay to replace at a later stage. It’s when that ‘planning ahead’ mentality takes a hold of the aspects of your life which are meant to be fun – like planning your route home on a night out before you’ve even left the house, or buying Christmas presents three months in advance – that you realise that those days of joyful, spontaneous frivolity are a thing of the past.
You start to realise what grownups meant when they told you your favourite bands were just copying old ones…
Around 2001 and 2002, I was a huge fan of the new wave of garage rock revivalist bands like The Strokes, The White Stripes and The Libertines. Dubbed the ‘New Rock Revolution’ by the NME, many, myself included, were convinced it was the most important movement in popular music since the Britpop years. My parents, and my friends’ parents, however, were summarily dismissive, telling me that The Libertines were a mere rip-off of The Jam and The Clash, that The White Stripes were simply copying Led Zeppelin and that The Strokes were a pale imitation of The Velvet Underground and Television. Now, I was a big fan of those bands and it wasn’t as if I couldn’t see the comparison, but I always tried to argue that the contemporary bands were adding a modern twist that spoke to my generation in the same way that Led Zep and co spoke to theirs. So why is it that now, I can’t apply the same logic when I hear a new, modern band? “Oh ‘X Band’ is just a rip-off of The Libertines. ‘Y Band’ is just a rip-off of The White Stripes.” I catch myself doing it all the time. If youth culture starts to get away from you at the age of 28, it’s little wonder that governments run by ageing politicians are so out of touch with the kids.

Retro nights become a nostalgic affair rather than an ironic one…
Remember when you used to go to ‘70s parties wearing oh-so-hilarious orange flared trousers with a paisley shirt and a massive afro wig, because the seventies were just, like, SO HILARIOUS, and dancing to disco music was really, really funny? Okay, now you know when you go to 90s nights nowadays and you hear Blur and Ash and Supergrass and Pulp, and it’s really cool because that music was so great and it reminds you of getting drunk on one can of cider and of your first snog and of watching Shaun Ryder swear on TFI Friday? Well, there are kids at those 90s nights who are a lot younger than you, and they’re there not for Blur, Ash, Supergrass and Pulp, but instead for Take That, The Spice Girls, 2 Unlimited and Kris Kross. Why, I hear you ask? For a laugh. Just as you once did to people that grew up in the 70s, the kids are trampling on your dreams, because it’s HILARIOUS.

At a certain point in your life it becomes undignified to keep up with modern slang terminology unless you’re a rapper, or mental. Have you ever heard someone in their forties use the phrase ‘sick’ or ‘sweet’? If not, picture it. They sound stupid don’t they? Far from being something you’re sad to not be joining in with any longer, youth vernacular will actually just start to wind you up something chronic. It’s inevitable. Text speak, people referring to mobile phones as ‘burners’, kids using the word ‘beast’ as an adjective – e.g. ‘A guy just smacked himself full in the face for no reason. It was beast” – grate on me in the same way that words like crikey, lawks-a-lumme, gadzooks and boyakasha have grated on elder folks at various points throughout the ages. If you do feel a sense of loss at not being able to get involved with youth lingo, however, don’t fret. When you’re seventy-ish, you’ll be able to start using modern slang and people will think you’re being ironic, and therefore both cool and funny.
You start checking the ages of successful people for comparison…
I’m sure I’m not the only person to do this. I guess I’ve always looked at people that I admire, whether they’re writers, actors, musicians, athletes or whatever, and made a note of their ages when they first tasted success to see how I measure up and how much time I’ve got to ‘make it’ myself. The point is though, that this used to be a source of reassurance and now it’s a reason to panic. At the age of eighteen I’d look at someone like Jack Kerouac and think, ‘oh that’s fine, he didn’t publish anything until he was 28. I’ve got ten years.” Now I look at him and think, “Oh yeah, I forgot to write a book.” I guess the people I’ll have to aspire to be like now are people like Ricky Gervais, who didn’t do The Office until he was forty, or Stan Lee who didn’t create Spiderman until he was 43. If I get to 43 and I’m still waiting for some sort of breakthrough, I’ll comfort myself with the thought that Colonel Sanders was 66 before he started KFC and he’d never previously worked with food. Yeah, I could be the new Colonel Sanders. Shoot for the moon and all that.

YPE IN “GROWTH” INTO ANY SEARCH ENGINE RIGHT NOW, AND YOU WILL FIND A VARIETY OF DULL, UNAPPEALING AND (IN SOME INSTANCES) DOWNRIGHT REPULSIVE TOPICS: I CONSIDERED WRITING THIS ARTICLE ABOUT ALL MANNER OF ‘GROWTHS’: PHYSICAL GROWTH, CELL GROWTH, ECONOMIC GROWTH AND A SEEMINGLY DELIGHTFUL HORROR FLICK FROM 2010 SIMPLY TITLED “GROWTH.” HOWEVER, AS TANGIBLE FOR THIS MAGAZINE AS A STEP BY STEP BREAKDOWN OF THE NO DOUBT OSCAR NOMINATED “GROWTH” WOULD BE, THERE WAS ONLY ONE CLEAR WINNER: PERSONAL GROWTH.
Thus I have chosen to attack a rather more abstract concept than the way that life forms physically grow. I’m also going to attempt to link this into my personal experiences and growth over the last eighteen years of my life. Now you may be reading aloud with disgust, “In what world does this eighteen year old wannabe writer know more about life and development than me, a handsome, charming man in his early fifties.” That is exactly the point. I don’t know about life, I can only voice what I think I know so far and hope that it leaves some sort of impression on my reader. What I can tell you is that your teen years (if you have yet to experience them - or as you’ll already know if you’re simply reflecting on them) will be filled with many highs, but also many lows. And it is part of growing up to realise that things need to be bad so that we can appreciate the good in order to grow. That is, the old saying “Things must get worse in order for them

to get better” is entirely true. For example, last year, a low point for me would’ve been when my best friends left for university. While I was excited and proud that I would be starting a new job, it was still gutting to be seemingly abandoned like that. Obviously that wasn’t the case and I was being a selfish, over sensitive brat, but hey! I have feelings too, you know! However, if not for those low few days, weeks, I wouldn’t have appreciated the great time off that I had at Christmas when they were back. It was literally as if they had gone yesterday, we slipped back into our old ways. Thus proves my first and most important point about personal growth: chin up and persevere through the bad, and the good will seem all the better. Something else to consider is how I had to come to terms with the fact that I wasn’t treating the people I cared about as well as I should because of my foul mood and quick temper. If, like me you have a bad temper (I have brutally murdered three pencils whilst writing this article alone, simply because they failed me) please, don’t take out your own miserable outlook on the people who care about you, because at the end of the day, they may be the only ones there for you in the future. This occurred to me one day after ranting at my parents because of my fowl mood, I thought to myself “Christ, did I seriously just yell for 10 minutes at my mum because of a stupid game?” While these arguments will no doubt be forgotten, it is still a rotten thing to do, and part of my personal growth was to accept and be rid of my poor temper, and start thinking more about the people that mattered most. As such, I would encourage anybody, not just of my age who thinks that their life is ending because they can’t go to a party or a game they want (I really did want special edition Skyrim, damn it) to think about what really does matter in life, (clue- it won’t be a plastic dragon model that costs three times what it is worth) and think
about what you say before you say it- you really will grow to be a better person for it. But the single most important thing I can tell you about personal growth is this: learn to move on. Things will not always be the same and that is a terrifying prospect, trust me. When I was in school I thought (naively) that my group would be best friends forever. Needless to say, we weren’t. I jumped friends about five times until I finally landed the best friends I have now, but of course they have left the Island. The most important thing was to find something to keep me preoccupied. For me, that was the gym, amateur dramatics and a local singing group. It was through the latter that I met my current group of friends and they truly helped me grow with encouragement and constant companionship and all that good stuff. But it honestly does work and while it was hard at first, it honestly did make me not so reliant on my school friends and help me grow as a person. It’s at this point after deep nature of the last paragraph that I would like to apologize for sounding like a really rubbish version of the Samaritans. I know that most people probably don’t want to take life advice from someone who still wishes that he could be Batman. (But seriously who secretly doesn’t?) But if you have read to the end, (other than deserving a medal for your efforts) I would like to think that you could at least see something resembling advice from this rambling young fool, especially if you are in your delicate teen years (which so many of us seem to both fondly remember, and feel hideously embarrassed by). We can see how much we’ve changed and, although it’s sometimes cringe-worthy or painful, can look with joy on the fact that we have changed for the better.

BARCLAYS BANK SUPPORT THE MILLION STEP CHALLENGE - Eagle Court, Douglas
The Barclays 200,000 Step Challenge Supporting Roger Davies 1,000,000 Step Challenge. Barclays Wealth and Investment Management in the Isle of Man held a fantastic event on Friday 22nd March to raise money for an important local charity. The event was organised by the Barclays People Forum (a dedicated team of employees whose aim is to organise events

that raise money for good causes and to volunteer multiple hours to the community) with the idea being for Barclays colleagues to complete 200,000 steps in a single day whilst raising a target amount of ÂŁ3,000 for Manx Cancer Help. The inspiration for the event came from Roger Davies, a local personal trainer who set himself the personal challenge of completing 1 million steps over the course
of a year. Roger joined Barclays on the day, to offer his support and get stuck in with some steps of his own using the Eagle Court office stairwell. Despite adverse weather on the day, Barclays saw over 80 colleagues participate and managed to smash their target by achieving a massive 253,880 steps. Sponsorship money is still rolling in and as with the number of steps tackled, Barclays is on track to smash the fundraising target too.

PC World - Know How staff recently held a team building evening and decided to take on the challenge of MANN V FOOD. The team of 16 got together at the Grill in the Park located in the grounds of Noble’s Park.

APPLEBY STAFF ‘STEP UP’ FOR MANX CANCER CARE - Athol St, Douglas
Staff at legal, fiduciary and administration services provider, Appleby (Isle of Man) LLC have raised over £400 for local charity Manx Cancer Care after holding their own step challenge at the firms Athol Street office. Inspired by local personal trainer, Roger Davies, 30+ staff ran over 150,000 steps on Fridaypaparazzi@gallery.co.im 22 February to raise awareness of the Million Step Challenge and raise funds

for the worthy cause. Roger also stopped by the office to run a few steps of his own, completing over 22,000 in the afternoon. Appleby have followed Roger’s progress since the beginning of his challenge and immediately signed up as a corporate sponsor to support him.
Roger added: “ I thank all of the partners and staff at Appleby for their continued support throughout this challenge.” He continued, “Corporate days are priceless as they give me valuable time to spend on the steps with the added motivation of other runners to race with. They also bring in much needed funds for the charity total which has now tipped the £20,000 mark.”

BOSTON PUB QUIZ IN AID OF IOM CHILDRENS CENTRE - The Embassy Bar, Douglas
Boston Limited employees, along with their friends and family came together on Tuesday 19th March to take part in a quiz night at The British, in aid of the Isle of Man Children’s Centre £50 challenge. Boston Limited is part of an independent, privately owned financial services group with offices in the Isle of Man and Malta. Boston’s Employees have been partaking in the Isle of Man Children’s Centre £50 challenge where they are required to turn

£50 into as much money as possible which will then go towards funding for the Isle of Man Children’s Centre projects. The Boston team have been working hard in their fund raising efforts from weekly cake sales to daily tuck shops and dress down days. Through the generosity and support of the 8 teams that entered the quiz and also all those who bought raffle tickets the amount raised on the night was £419.30. Grant Thornton stormed their way through the quiz to become the winners. This will be
added to the grand total at the end of the challenge which finishes on the 28th March. ISLE OF MAN BANK PREMIUM BANKING TEAM MAKING A DIFFERENCE
ISLE OF MAN UNVEILS BID TO REGAIN THREE-LEGGED RACE WORLD RECORD
STAFF from the Isle of Man Bank’s Premium Banking team have joined in “making a difference” to the Island’s beaches by joining volunteer group Beach Buddies as part of the bank’s annual commitment to assist a community project.
A MASS three-legged race involving up to 1,000 competing pairs is planned for Bank Holiday Monday on May 6 in a bid to smash the current world record for the most pairs taking part, currently held by the Japanese.
The team spent two days involved in beach cleaning, tackling a stretch of around two miles between Glen Mooar and Balleira on the west coast, followed by a visit to a 1.5 miles stretch at Pooill Vaaish and the Scarlett areas in the south.
The Guinness Book of World Records monitored race was won by the Isle of Man in 2009 with 468 pairs, breaking the then existing record of 346 by 122 pairs. However in 2011 Japanese students set a new world record with 502 pairs.
The bank was divided into two groups - the first tackling the west coast, where 20 bags of rubbish were collected, and the second taking on Pooill Vaaish and Scarlett where another 15 bags were collected. Much of the rubbish collected, such as plastic bottles and tin cans, was recycled with assistance from the Island’s civic amenity sites.
The ambitious attempt to bring the record back to the island will take place at the Onchan end of Douglas beach with the race being run over 200 metres and everyone taking part having to run if the record is to be broken. The race is once again being organised by employees at Barclays Wealth and Investment Management and will be part of a Bank Holiday ‘Family Fun Day’ with events taking place on Douglas Promenade and beach throughout the day, culminating in the world record breaking attempt for the three-legged race. ON YOUR MARKS! GET SET! LOGO! A new Team Isle of Man logo has been launched which over the next year will become a familiar sight on the Island in the countdown to the Glasgow 2014 Commonwealth Games. The new design uses the three-legs triskelion motif to create a depiction of a runner bursting through the finishing tape. It was created by Douglasbased marketing and communications firm MM&C - the company is working to promote the Isle of Man Commonwealth Games Association (IoM CGA) which is a registered charity responsible for the publicity, fundraising, travel and support for Team Isle of Man’s participation at the Games.

There’s also a new slogan to accompany the logo which was chosen after an IoM CGA competition was held for schools across the Island. Cronk y Berry School pupil Emma Hawke’s slogan - ‘Together we’ll make our Island proud’ - was chosen as the winner. Team Isle of Man Ambassador Conor Cummins presented Emma with a £50 gift voucher, and a £50 gift voucher for her school. Conor is one of three Team Isle of Man Ambassadors who have been appointed to help raise the profile of Isle of Man Commonwealth Games Association and its fundraising events in the build up to the next Games. Olympic and Commonwealth Games cyclist Marie Morgan, and the well known coach, sports teacher, and administrator Neil MacGregor, have also been appointed as Ambassadors Athletes aiming to win selection for Team Isle of Man at the 2014 Games will put in months of hard work from now until July next year. Behind the scenes, organisers from the Isle of Man Commonwealth Games Association will also be working hard to raise funds. Public support is vital and donations are always greatly appreciated. SCOTTISH WIDOWS RAISES £2040 FOR ROYAL BRITISH LEGION
NICK AND TOM CRAIG SIGN UP FOR MANX TELECOM END2END
The Royal British Legion’s funds have been boosted by more than £2000 thanks to fundraising efforts by colleagues at Scottish Widows Isle of Man.
Four time winner Nick Craig and his son Tom have both signed up for this year’s Manx Telecom End2End Mountain Bike Challenge. Nick, who rides for Scott UK and won the End2End in consecutive years from 2008 to 2011, is a former Olympian and a multiple winner of British national titles. In January this year he won the Veterans Over-40s category at the British Cyclo-Cross Championships on the same day as his son Tom won the Under-16 Boys race. Tom won the under-16s race in last year’s End2End which was the first time he had competed in the event. Under-16 riders race to St Johns which is approximately half of the full 46-mile race distance. The Manx Telecom End2End Mountain Bike Challenge online entry list states that Tom will be competing for Microgaming in this year’s race.
In 2011 the company, part of the Lloyds Banking Group, chose to direct the major proportion of its fundraising activities into supporting the charity during its 90th anniversary year and into 2012. Cake bakes, sponsored walks and other initiatives, combined with matched funding from the group, saw Scottish Widows’ Isle of Man managing director Juan Clarke recently present Graham Hooton, Royal British Legion’s Isle of Man district chairman, with a cheque for £2040 at the company’s Victoria Road, Douglas headquarters.
Entries opened on March 1 and there are already more than 1,500 on the start list. With the event being limited to a maximum of 1,700 riders it’s expected that the race will be full very soon, so anyone who wants to book their place for the race on September 8 is advised to enter online at: www.manxe2e.org - as soon as possible.

HERON AND BREARLEY ‘PAINTS THE TOWN RED’ FOR COMIC RELIEF Staff and customers of Heron and Brearley’s quayside pubs in Douglas have raised £1000 for Red Nose Day. In support of the campaign staff at the company’s Kewaigue headquarters rose to the occasion by making a donation to wear something red on Friday March 15th and two male regulars of the Saddle were transformed into smooth operators after they underwent a sponsored chest wax; the Railway, Bridge and British donated 10 per cent of their food sales between March 11th and 16th ; and workers in all four pubs wore fancy dress, with Thomas Lindsay of the British taking the prize for the fanciest. Heron and Brearley’s retail director Steven Taylor said: ‘We were pleased to get behind Comic Relief and support this worthy cause that brought our staff and customers together to raise this fantastic sum BECAUSE QUALITY MATTERS

BE PART OF HISTORY AS MANX TELECOM PARISH WALK CELEBRATES 100 YEARS The Manx Telecom Parish Walk can trace its roots back to the 1850s, but the first event that is comparable to the modern format was held in 1913. That year there was an event called the Parish Walking Match organised by the Isle of Man Times and the Manx Sporting Club. This year special centenary mementos will be given to all participants who reach one of the checkpoints along the route. Every competitor who reaches Santon, or one of the checkpoints further along the course, will receive a commemorative medal commissioned by the event’s main sponsor to celebrate 100 years of the race. News of the unique mementos was announced at an official launch for the 2013 event held at Manx Telecom’s headquarters. Entry for the Manx Telecom Parish Walk costs £30 and all those who sign up receive a commemorative centenary edition technical tee-shirt, goodie bag, and a ticket to the prize presentation. Talking of the weather… Yeay! After months of filthy weather, Spring is here at last! Well, at least the beginnings of it… A time of new growth, planting seeds, digging the vege beds and tidying the appalling winter mess in the garden so we can enjoy the spring flowers without feeling guilty… Oh, and er… visiting the Garden Centre. OK, we’ve all done it. One pack of seed potatoes and a small tree to fill a gap, nothing else. Mmm… sixty quid and a trolley full later and it becomes quite hard to remind yourself of the money you’ve saved by growing your own. Well, alright, so I just couldn’t decide which variety of spud to donate to the slugs, or turn into a slimy, smelly squidginess with potato blight… they all look so impressive on the packaging. And, it should be illegal to put brightly coloured primulas and nodding little narcissi by the tills, really! After a summer where the only things that grew had snorkels and flippers, where ‘weather resistant flowers’ did not mean growing successfully in a foot of rainwater and even the chickens learned to water ski down the fields, you would think that I would have learned better. But, sadly, each year, those first little rays of sunshine bring on that terrible affliction, ‘mad gardeners disease’. The symptoms include casually swapping the housework for weeding and the need to dig out compost heaps while trying desperately not to turn the chickens into kebabs as they dash under your fork in search of worms.

After all they have those amazing little packs of microwaveable veg in Marksies, you don’t even have to wash them, let alone spend 6 months growing the damn things! I often ask myself, why? Why, dig, manure, plant, weed, wage war on slugs, fight to keep one step ahead of my beloved, but cunningly destructive chickens or spend a fortune on fencing to stop my giraffenecked horses from neatly pruning my very expensive fruit trees to ground level?
Why do any of us gardeners do it? Madness? Escapism? Too many childhood episodes of ‘The Good Life’? Hell no! The thrill of that first seedling popping its head up, of watching a cucumber grow at a speed that would make Justin Timbersnake envious, of biting into that first homegrown supersweet, oh so juicy tomato, of casually saying to friends round for dinner, ‘Oh, of course it’s all home grown, even the chicken…(!)’
Better than a winning lottery ticket? Hell, yes! Madness? Goes without saying!

At first glance this new tax is undoubtedly a welcome move. There has been much consternation in recent years on the apparent uneven playing field where local owners of retailer establishments have been subject to Manx taxation whereas retailers owned off island were not in general. This new tax is aimed to level this out. Also, it only affects retailers with taxable profits of more than £500,000 (there will not be too many of these!). The direct effect of this is that the extra Government revenue created will reduce the need for further cut-backs or tax rises, with knock on benefits for the local population. The extra revenue for the Isle of Man will mean more spending power, which is self-perpetuating. The anticipated tax take of £3.5 million annually is not significant as a percentage of GDP but is nevertheless welcome. Will it add to the costs of the retailers affected? There are two obvious camps here. Firstly, retailers with UK parent companies. These groups should not suffer any additional overall tax due to the way in which their UK taxes are computed and due to double tax relief. This is great news as there is then no excuse for an increase in their prices. The second main camp is made up of locally owned retailers where the tax charge may increase their costs. This is potentially bad news for them but only in terms of the timing of payment of liabilities. This is because the tax liabilities of the retailer and Manx owners combined should not be affected over the life of the business, assuming tax rates remain the same.

I have received a windfall and I am thinking of creating a Trust for the benefit of my grandchildren, but I want to ensure they don’t receive funds until they are older. I’m not really sure how this works.
A.
Trusts are a product of common law and have existed in English law for many hundreds of years. A Trust has no legal personality of its own (unlike for example, a company) and in reality is no more than a binding agreement between the Trustees and the Settlor (the person who wishes to create the Trust) to hold certain assets for the benefit of a person or group of persons called the beneficiaries. The Trustees must administer the Trust subject to the terms of the Trust Deed. This is a private document which, unlike a Will, is not a matter of public record. Once you have passed your windfall into the Trust, you have effectively given up the legal ownership of the asset to the Trustees. The Trustees (subject to the type of Trust created) will then have total control over the funds and can consider requests from the grandchildren for a distribution in the future. They can then exercise their discretion as to whether to make the payment or not. I would recommend you speak to a specialist Trust lawyer in the first instance as Trust law is a complex area and as Trusts are generally irrevocable you need to be very sure it is the correct avenue for you and your grand children. As with any new tax, there are issues not yet resolved. For example, what does taxable profit mean and does it include tax allowances potentially available from prior periods? There are also undoubtedly retail businesses that were not intended to be caught by the rules that may be within scope –retailers with international customers, for example. I’m starting to think about my retirement now that I’ve turned 50 and would like to know at what age I will be able to afford to retire?
A.
In my experience there is barely a person on the planet contributing enough to their retirement plan to hit their ‘number’. This is the sum of money that you actually will need to be able to afford to retire. Don’t despair! We prefer to apply ‘new school thinking’, which works by identifying the shortfall but then working with you more creatively to show how it can be bridged over time. This is where cashflow modelling becomes essential. A pretty sophisticated piece of software, a money cash flow tool, uses different lifetime scenarios and analyses the impact they will have on your financial arrangements and long term plans for the future. In the right hands, it can take into account:
. Varying levels of inflation, growth, tax rates . What assets are available to contribute to meeting your retirement target, not just pensions.
. What pension do you have already to kick in and when; i.e. IOM Basic State Pension and any entitlement to Manx Pension Supplement. . If the income stream will last as long as you and/or your partner may last . What happens if you work 1/3/5 years longer? How do the numbers look then? . Could you salary sacrifice at work? . Do you expect to inherit? How certain are you that your inheritance won’t get eaten up with caring for your parents? . Could you scale down the family home and free up some cash? If you do, how much longer does your capital last? Is that long enough? . If it is possible (or preferable) to take a little more money in the early years of retirement while health is still good . What impact this will have in later life when you are more vulnerable . How much is a sensible (or safe) amount to take? What is the right level to trade-off the competing issues? The benefit of being able to model a range of scenarios is that you start to see more practical solutions to get where you need to be. It is essential that you can work out the answers to these questions. By creating ways to bridge the gap we are looking at ‘hope’ not ‘fear’, which is surely a better starting point.

Will the introduction of the 10% “retail tax” impact upon my convenience store business?
A.
The 2013 Manx Budget introduced an income tax rate of 10% applicable to the taxable profits of companies which carry on retail business in the Isle of Man. This measure has been designed to affect the largest retailers and, as such, only those companies generating annual taxable retail profits of more than £500,000 are subject to this new rate. Retail business is defined as “the sale of goods for consumption or use” and whilst there is, for the moment, some uncertainty as to what constitutes “goods” for these purposes, in most cases, including that of a convenience store, it will be fairly obvious. As such, the measure will apply to convenience store businesses if (i) the trade is conducted through a company (if not, and the activity is that of a sole trader, the proprietor will be subject to income tax on the profits in their personal capacity) and (ii) the taxable profits (on an annualised basis) exceed £500,000. It is worth noting that the £500,000 threshold is reduced proportionately where a retailer has associated companies which also conduct Isle of Man retail business. As such, there is a possibility that a group of companies could find itself subject to the 10% rate even though its combined retail profits are less than £500,000. In any event, if you are in the happy position to be making more than £500,000 of taxable profits from retail activity, now is the time to consider the impact upon your business! So Shan - tell everyone about yourself and the new company branding, Shan Fisher Photography. I am Shan Fisher - a fine art photographer and mother of a 3-month-old baby. Photography is both my profession and my passion. I have had a love for art, painting and photography since I was little. In 2007 I set up Shan’s Photography while studying at Royal Holloway University of London. I completed a degree and moved back to the Isle of Man as a full-time photographer in June 2010. My goal is to craft beautiful, elegant, fine art images that are as unique as the people in the photographs.

She visited Jo Pack’s Peel meeting on the Isle of Man to celebrate not only that local Weight Watchers members had lost in excess of 2,500st during 2012, but also to announce that the meeting had been named Weight Watchers’ ‘2012 Meeting of the Year’.
Each month, Weight Watchers awards a meeting ‘Meeting of the Month’. The accolade celebrates the outstanding meeting achievements of both the Leaders and Members. Weight Watchers Leader Jo Pack and her Isle of Man meeting were chosen out of over 6,000 Weight Watchers meetings which take place around the country every week, to win the ‘Meeting of the Month’ award in February 2012. Jo has now gone on to win the ‘Meeting of the Year’ award for 2012 – beating off 11 other meetings who each won the monthly accolade last year.
One of the members had the following glowing things to say about Jo and their meeting: “If I am having a bad week or have put on weight, Jo really picks me up and gets me back on track. Jo’s aim is to help you get to goal and to attend the meeting every week, I love her weekly encouraging text message the night before weigh in. ave you met baby Oliver? Of course you have. Ever since his birth was announced on Tom and Laura’s Facebook page, he’s been hard to escape. He’s got endless photos on Flickr, a clip of his birth on YouTube, and even his own blog – Oliverlicious – updated daily with photos and clips of baby doing… well not much at all. New parents Tom and Laura just can’t stop talking about their new baby, and Oliver creeps into almost every conversation. ‘He’s an old soul you know’, ‘I just can’t wait to take Oliver to his first rugby match’ and ‘the health visitor says he’s the best pooper she’s ever seen’. Their friends can’t understand how Tom and Laura have turned into the sort of people who can have whole conversations about poo, and who cheer every time baby Oliver farts. ‘How adorable!’ they say, forcing a grin onto their faces, as they’re passed yet another photo of Oliver sleeping. Tom’s work colleagues try to avoid passing Tom’s desk on the way to get their morning latte, in case he insists they watch the clip of Oliver’s birth again. The proud dad has completely Oliver-ised his deskspace, with a baby Oliver screensaver and mousemat – even his office mug has a close up of Oliver, carefully positioned so it looks like he’s giving Tom a snotty kiss every time he takes a sip of his coffee. It’s starting to get a bit much, especially as Tom interrupted a conference call with his new client yesterday to have a ten-minute gurgling phone conversation with his new son.
At least their friends don’t have to spend too long discussing the merits of cloth nappies over disposables, and Oliver’s dribbling habits. Oliver’s day is crammed full of baby classes designed to ‘nurture his inquisitive nature’. So you’ll be halfway through a midmorning coffee with Laura and baby Oliver when you’ll hear…‘Must dash – we’ll be late for Oliver’s baby signing class – you know he told me yesterday he wanted milk. Look – he’s doing it again! Clenching his fist like that – that’s the baby sign for milk. Isn’t that amazing? The teacher says she’s never seen such an advanced baby.’ Of course Oliver is brighter, brainier and bigger than all the other babies you’ve ever met. Even if you don’t notice it straight away, Tom and Laura will remind you. ‘Angus is positively tiny next to Oliver – of course he’s into his 6 to 12 months ski suit already’. And when they’re not talking about how adorable and advanced their baby is, they’re discussing how terrible all the other parents seem to be at their job. ‘Fancy taking Harriet out without a hat again’. ‘I can’t believe they give Charlie and Ed crisps…’ ‘I’m sure there’s something wrong with Amy, she’s not even crawling yet’. ‘Did you see that toddler – she had her ears pierced!’ Beware the new parent police.
Of course Laura probably wouldn’t confess to the countless times she’s scooped jars of baby food into Tupperware to make it look homemade. And you won’t catch Tom talking about the time he forgot Oliver was in the car and was halfway round the block before he realised he’d left baby in the car. That’s because Tom and Laura are sleepdeprived, scared and slightly paranoid. By the time they’re pregnant with their third they won’t be updating their blog every day or ordering vast canvasses of pictures of dribbling baby Oliver. Being besotted by their new baby is just a coping strategy to deal with how unprepared they feel about being parents. And also to distract them from wondering if they’re ever going to get their life back.
And then there’s the minefield of ‘The Discussion’. The one that starts with ‘So who do you think he looks like?’ Tom and Laura’s friends have learned to never say what they really think. Telling new parents their darling baby is the spit of Gollum, Voldemort or that senator that looks like a frog just won’t go down well.

ISLAND OF CULTURE 2014 The Isle of Man Arts Council and the Department of Community, Culture and Leisure have announce that 2014 will celebrate the Isle of Man as Island of Culture. Island of Culture 2014 will be the largest cultural celebration in the history of the Isle of Man. Spread over twelve months, it will celebrate the large and varied artistic and cultural life we enjoy. 2014 will give everyone in the Isle of Man a chance to be part of our rich cultural life and inspire creativity across all forms of culture, especially among young people. During 2014 everyone can celebrate our Island of Culture through dance, music, theatre, the visual arts and literature, cultural festivals, film and digital innovation, and leave a lasting legacy for creativity and the arts on the Isle of Man. SAM BARKS STARTS WORK ON THE CHRISTMAS CANDLE Filming commenced in March on The Christmas Candle. The Christmas Candle is a charming festive story about miracles both ordinary and extraordinary, set in rural England 1890. A lead role had been landed by Samantha Barks, the talented young Manx woman who shared the stage at this year’s Oscars with the rest of the Les Miserables cast, including Hugh Jackman and Russell Crowe. Other cast in The Christmas Candle are Susan Boyle, John Hannah, Hans Matheson, Lesley Manville and Sylvester McCoy (Doctor Who). The film will be directed by John Stephenson, who visited the Island in 2003 to make Five Children and IT starring Eddie Izzard and Kenneth Branagh. Samantha’s profile has been on a steady rise since making her name on BBC’s I’d Do Anything. Samantha said: “Having just landed from the Academy Awards I had an hour to unpack and repack and get to set. I’m very excited to be part of The Christmas Candle and I’m loving every second.” The Christmas Candle is a timeless and inspirational story based on the novel by bestselling author, Max Lucado. where art and fashion collide When compere Jo Shakespeare referenced New Zealand’s ‘World of Wearable Art’ in her introduction, we knew we were in for an entertaining and enthralling evening at the Manx Wearable Art Show in March. “Innovation and wit” were her words, and there was plenty of both for the sell-out audience to enjoy. Kensington Youth Arts Centre – with its catwalk and staging – was an excellent choice for over 40 local Wearable Art designers to show off their imaginations and skills. The venue team, led by Voirrey Kennaugh, and Martin and Paul, who controlled the lights and sound, generously gave up their time to make this a very special event. But what exactly is Wearable Art? Perhaps the best definition would be a fusion of fashion and costume, with a bit of performance art thrown in: think Lady Gaga with her telephone headpiece or her meat dress. The centre of the Wearable Art world is New Zealand where the annual WOW (World of Wearable Art) competition has been running since 1987, attracting entries from around the world I’m a Survivor by Nicola Dixon

but this hasn’t fazed Isle of Man artists and designers who have certainly been inspired, not overawed by the talent there. As local artist Sarah Hendy explains: “Often people, even artists, find contemporary art inaccessible and intimidating, but Wearable Art is not like that. I like the fact that although Wearable Art does - as the name suggests - have to be wearable (at least once!) it doesn’t have to conform to any fashion, to any branding, and can be made from absolutely anything. The whole idea is to let your imagination run riot.” Sarah, Sayle Gallery Artist in Residence for 2012/3, was just one of the designers who took part in this, the fifth Manx Wearable Art Show. Organisers Sue Robinson and Doreen Dixon were delighted by the response from the local art and design Rebecca House community – it was a true ‘pop-up’ show as they really had no idea how many designs would be there on the night – and the range and quality was outstanding.
And it wasn’t just a showcase for recognized artists. Hospice and Rebecca House had entries, the local Homeschool community collaborated on their garment, and the Godby girls had designed and made their garments in less than a week to be catwalk-ready for the Show. From QE11 students came an eco-project ‘Grow your own clothes’ which involved bacteria, green tea and sugar, and less scientific - but just as imaginative - was ‘Bosoms and Bows’ a dress designed and modeled by Lindsay Quayle representing Breakthrough Breastcancer , and made entirely from bras donated for the annual bra-dashes which take place around the Island.

Fashion Design graduate Callum Harvey, back on the Island after studying and working in London, showed his own ‘Strange & Sudden Surrenders’ - items featuring seat belts distressed to look like fur - and also advised IoM College students on their contributions, evening wear involving up-cycled clothing and accessories. After nearly 90 minutes of consistently exciting and surprising designs, complete with dance intervals from Dance Xchange, the lights dimmed and the audience gasped as Nicola Dixon modelled her own ‘I’m a Survivor’ made from emergency blankets and glow-sticks, and closing the show, Sarah Hendy’s ‘Aditi’ was a magical starlight flicker of fibre-optic lights inspired by the Hindi goddess of the night sky. But the last word should probably go to local artist Myra Gilbert, whose own work ‘Waterfall’ was a foaming, delicate confection knitted from the netting found round Christmas trees and thin strands of boning material:

Topshop has really picked up on the influx of comic-strip graphics and prints that are central to this trend and have offered up an array of kick-ass clothing. Key items that can be found in Topshop include a cropped knitted sweatshirt studded with ‘Bang’ in crystals, and a selection of tube skirts littered with exclamations straight out of classic Batman (note: episodes can still be found on ITV4). Inspiration is more Adam West era than Christian Bale, so think graphic illustrations and pops of colour with red, yellow, black and white rather than leather trousers and dark muted tones. Polka dots and stripes grace the catwalk season after season and, this Spring, are a far cry from the dainty nautical prints of last year. The only way to wear these patterns is with contrasting colours and supersized spots; again, head to Topshop for a cute collection of polka dot pieces including crop tops in red, green and black, skater dresses and even smart shirts. Gordon Ramsey’s Ultimate Cookery Course We’ve seen him overhauling failing restaurants, teaching prisoners how to bake and ranting at celebrities over their poor performance in the kitchen. But Gordon Ramsay’s latest TV and book venture sees him go back to basics - plain and simple cooking. In his Ultimate Cookery Course, the Michelin-starred chef aims to strip away the complexity of fancy restaurant cookery and show his fans how to prepare straightforward, tasty dishes at home. He shares a wealth of tips and tricks from his years as a professional chef - such as what to look for when buying a pan and how to chop an onion - to give home cooks that all-important confidence in the kitchen. “I really think that’s what separates good cooks from the mediocre ones,” writes Ramsay, who has confidence in spades.

Slow-cooked aubergine
And to all those who say they simply can’t cook, the restaurateur reckons they’re just not interested enough in trying. “In truth, there’s no one with a genuine interest in learning who can’t improve and, with enough practice, become a decent cook,” he adds. Got it? Good. Now try three of Ramsay’s dishes at home and see how you fare...
This vegetable stew is such a simple combination of ingredients, but they undergo this amazing transformation during cooking to become more than the sum of their parts. A dish that just gets better and better the longer you allow the flavours to mingle. (Serves 4-6 as a starter) Olive oil, for frying 2 aubergines, trimmed and cut into 3cm chunks 3 garlic cloves, peeled and chopped 1 red onion, peeled and diced 1 x 400g tin butter beans, drained and rinsed 2 tbsp pomegranate molasses (see page 205) 1 x 400g tin chopped tomatoes Pinch of caster sugar Sea salt and freshly ground black pepper To serve 1 loaf of crusty white bread, e.g. sourdough or pain de campagne Small bunch of mint, leaves roughly chopped 100g feta cheese, crumbled
Heat a heavy-based casserole dish over a high heat. Add a glug of oil and fry the aubergine for 3-4 minutes until coloured on all sides. Add the garlic and onion and fry for another 5 minutes until the onion is tender.
How to salt aubergines
Although it’s not essential to salt aubergine before you fry it, doing so draws out the moisture and makes it absorb less oil. Simply chop or dice the aubergine as required, place in a colander and sprinkle with about one teaspoon of salt. Leave for 30 minutes, then rinse well, pat dry on kitchen paper and cook as you wish.

StirServes in the butter 4 beans and pomegranate molasses with a generous pinch of salt and grinding of pepper. Add the tomatoes and sugar. Bring to the boil, then lower the heat and simmer, uncovered, for 40-45 minutes until the aubergine is tender and collapsed and the stew reduced and flavoursome. (If you find the mixture is drying out too much, add a couple of tablespoons of water.) To serve, slice the bread and toast on each side until golden. Stir the mint through the aubergine, spoon onto the slices of toast and scatter over the crumbled feta. Serve warm.

Pork chops with peppers You’ll be amazed at how two such simple things can taste so good together. The sweet and sour peppers really cut through the richness of the beautifully sauteed chops and make for a really good, quick supper dish. As always when frying chops, leave them to rest as long as you cooked them so that they can tenderise and reabsorb their juices.
(Serves 2)
For the sweet and sour peppers:
2 pork chops, about 200g each
Olive oil, for frying
Olive oil, for frying
2 red peppers, deseeded and thinly sliced
2 garlic cloves, skin on, crushed Small bunch of thyme Butter
1 red onion, peeled and sliced Sea salt and freshly ground black pepper 1 tbsp caster sugar 3 tbsp red wine vinegar 1 tbsp extra virgin olive oil Small bunch of basil, leaves shredded
First prepare the peppers. Heat a little olive oil in a large frying pan, then add the onion and peppers. Season with salt and pepper, add the sugar and saute over a high heat for 4-5 minutes until soft and coloured. (Make sure you can hear the vegetables hissing in the pan. If not, the pan isn’t hot enough and you’re in danger of boiling the vegetables instead of frying them.) Add the vinegar and let it bubble for a minute or two until it has reduced and the peppers are soft. Turn down the heat, add the tablespoon of extra virgin olive oil and cook for a further 2-3 minutes. Stir in the shredded basil and continue to cook for 30 seconds, then turn off the heat. Decant into a bowl and set aside to infuse. Wipe the pan clean, ready to cook the pork. Using a sharp knife, make cuts into the fat of the chops, about 5mm deep and at 3-4cm intervals, making sure you don’t cut into the meat. (This will stop Serves 4 the meat from curling up during cooking and will make it cook more evenly.) Season the chops really well on both sides, pushing the seasoning into the meat. Place the cleaned-out frying pan over a high heat until hot and add a dash of oil. Add the chops, garlic and thyme and fry for 2-3 minutes until coloured. Turn and fry for a further 2-3 minutes on the other side, pushing the thyme under the chops and breaking up the garlic a little.
How to slice peppers
Chop off the green stalk and stand the flat end on your chopping board. Now slice down from the top, almost like peeling an orange, working your way around the pepper, to leave a tree of seeds. Now place the pepper slices down on the worktop, and holding them down with your three middle fingers, cut them into slices. Don’t try to rush: speed will come with practice.
Towards the end of cooking time, add 3 knobs of butter and baste the chops with it as they are cooking, to speed up the cooking process and keep the chops moist. (Push the fatty edge of the chops towards the back of the pan to help render the fat.) Squeeze the garlic out of its skin and place with the herbs on top of the chops. Transfer the chops to a plate, and rest for 5-10 minutes, spooning over the basting butter now and again. Serve the chops on top of the peppers with the resting juices and a little juice from the peppers.
Spicy sausage rice This is like an old-fashioned jambalaya - a mixture of rice, vegetables and meat, a bit like risotto but without the need for stirring. Sausages are cheap but packed with flavour, and taking them out of the casing first flavours the rice beautifully. You can use any sausage you want - chorizo, merguez, pork or beef, depending on how spicy you want it.
(Serves 4)
200g long-grain rice
Olive oil, for frying
½ glass white wine
1 red onion, peeled and sliced
500ml chicken stock
1 red pepper, deseeded and chopped
4 spring onions, trimmed and chopped
2 garlic cloves, peeled and finely sliced
1 tomato, chopped
5 spiced sausages, e.g. Italian chilli 1 heaped tsp smoked paprika
Small bunch of flat leaf parsley, roughly chopped Sea salt and freshly ground black pepper
Add a glug of oil to a heavy-based casserole dish and fry the onion for 5 minutes until soft but not coloured. Add the pepper and garlic and cook for 2 minutes. Slit the sausage skins and crumble the sausage meat into the pan, then cook over a medium heat for 4-5 minutes until coloured. Add the smoked paprika and mix. Season to taste.
How to fry onions
If frying onion, don’t slice it too thinly or it will burn before it has had a chance to caramelise. Never rush cooking an onion. Always give it 5 or 6 minutes in the pan on its own.

Add the rice and stir well to mix thoroughly and absorb the flavour. Deglaze the pan by pouring in the white wine and scraping any bits stuck to the bottom. Add the stock and bring to a simmer. Cook gently for 15-20 minutes until the rice is tender and the liquid almost entirely absorbed. Remove from the heat, gently fold in the spring onions, tomato and parsley and serve.

espite a general decline in wine consumption in Britain, there has been an increase in sales of sparkling wines over the last 12 months. With excise duty continuing to increase at above the inflation rate, Champagne prices have gone beyond the reach of many people, and many are turning to better quality sparkling wines for regular drinking, saving the Champagne for special occasions. Prosecco is seeing the biggest increase with UK sales almost doubling over the last twelve months. Prosecco has gone through some big changes in recent years, with much stricter regulation now applying to what can be labelled Prosecco. Prosecco was the name of a grape so any sparkling wine could be labelled Prosecco regardless of where it was produced and regardless of its quality. There is now a demarcated geographical region called Prosecco DOC, in addition to the upgraded ConeglianoValdobbiadene DOCG area and, in a very unusual move, the name of regional names. However, to add to the confusion, those grapes grown within the DOC and DOCG areas can still be called Prosecco. DOC or Denominazione di Origine Controllata and DOCG Denominazione di Origine Controllata e Garantita are in place to help
improve the overall quality of ‘Prosecco’ with maximum yields having been cut. These classifications also govern grape variety, wine making and ageing of wines and have served to prevent wines being labelled as Prosecco when they are not from the region, thus protecting the quality Prosecco producers. At The Wine Cellar we have recently revamped our range of Proseccos and Italian sparkling wine with four new additions, following a tasting of a dozen samples. The first is the superb value for money Passaparola Prosecco Pradio Brut (£10.75) This comes from a small family estate in the DOC and has aromatic pear aromas followed by a fruity palate of apple and pear character. It has a gentle fizz with a crisp and delicate finish, and is great to drink on its own.  Fiol, also DOC, is an Extra Dry Prosecco (£12.75). In Prosecco terms, Extra Dry means not quite as dry as Brut! It is more floral and aromatic than the Passaparola and has a delicious fruity character. Fiol is Venetian slang used in the 1400s by young people to describe a ‘cool guy’. Fiol has been made by a group of friends from different walks
of life, but all wine enthusiasts. Their aim was to produce a wine for friends to share and enjoy together! Stylish contemporary packaging and a great taste! The final two come from the same estate, Campo San Trovaso, which is situated in the DOCG Valdobbiadene. The white, a Brut, has a fragrant aroma and a dry but fruity palate and lots of delicate tiny bubbles. The Rose is not labelled as Prosecco, nor is it a DOCG. It is a lovely salmon pink colour and is deliciously fresh and fruity. Two very classy, well packaged sparkling wines, both at the very reasonable price of £13.75. One other reason for the increase in popularity of Prosecco is that it is light and generally only 11 – 12% abv. Great to drink on its own at any time, but it also makes a good accompaniment to salads and seafood. The perfect wine for sipping whilst out in the garden enjoying the Spring sunshine. As I sit here looking out at the snow falling, I can only hope that by the time you are reading this, the sun is shining and the Prosecco is chilling in your fridge.

“People are prepared to take a theatrical approach to rooms these days and they want drama and impact and a ‘wow’ factor” says Debbie McKeegan who with her husband founded the hugely successful Digetex, which specialises in digitally printed papers and fabrics. “Papers featuring period-style plaster work designs have undoubtedly been hugely boosted in popularity by TV’s Downton Abbey, while Scandinavian dramas help increase the demand for the pared-back effect, white-washed-boards or driftwood designs. Georgian brickwork remains the out-and-out favourite as it’s so characteristic of uberchic lofts. It has a natural rustic look and brings instant colour, warmth and texture to a room.”

offices into megasaunas. And even more weirdly, surely if a desk isn’t being used all the time, it should be called a cold desk because having someone sitting there day-in, day-out, would warm it up? A better name would probably be the more accurate “spare desk”. Anyway, back to el punto - when you are a visitor at someone else’s desk, you get to use all their stuff, which is fun. Unless of course they are particularly suspicious and lock everything away in one of those clunky under-the-desk sets of drawers and remove the key. Very unsportsmanlike behaviour. If this is the case, then your first port of call simply has to be the stationery cupboard, where you should take one of EVERYTHING (who knows when you might need blue highlighters/500 sheets of graph paper/200 of those green string tag things). In fact, I would personally recommend doing this on a daily basis anyway, but remember to bring a large bag with you so you can take it out of the building without arousing the receptionists’ suspicion. And you would be surprised at how
well a birthday present of 250 miniature bulldog clips goes down. Especially if you can get them in different colours. Variety is the spice of life. One final point about office politics: it’s also good being a temp because you don’t have to join in all the lame office stuff if you don’t want to, but you get to reap the benefits of the fun office stuff. For example, having to donate money to the whip round for someone’s charity abseiling - it’s OK, because you’re just the temp, you didn’t know, and oh whoops you don’t have any cash with you. Does Brenda take Visa? No? Oh dear...so sorry...hope it goes well etc. But on the other hand - oooh cake Friday! Homemade flapjack? Wow! So sorry, I’m just the temp, I didn’t know...are you sure? Well I’ll just take these five then, and a lemon slice...thank you! Of course, this isn’t the best plan if you’re hoping that one day your temp job will become more permanent, but if it definitely isn’t a career definer...

ICT PRESENTATION A SUCCESS The Manx Educational Foundation (MEF) hosted a successful first event in aid of the International Centre for Technology (ICT) at the Palace Hotel on Thursday, 21st March. The MEF’s more original project - the ICT - is to become a new dedicated facility and specialist centre for practical, worldclass tertiary education, specifically designed to enhance the profile of the Isle of Man’s information and communications technology sector. David Butterworth, MD of Skanco, Kurt Roosen, Head of Group Systems and International Operations at Duncan Lawrie Private Bank and Ron Berry, MD at 3FM outlined their progress on ICT project with Kevin Streater, a Member of BCS Academy of Computing Board (Chartered Institute for IT) to nearly 80 of the Islands business community, also attended by Hon. John Shimmin MHK, Minister for the Department of Economic Development, Hon. Tim Crookall MHK, Minister for Education and Steve Roden MHK, Speaker of the House of Keys. The Directors of the MEF have garnered both on and off-Island support from The Open University, the British Computer Society (the Chartered Institute for IT) and Huawei for the ICT project. SURVEY SEEKS TO BE ‘INFLUENTIAL TOOL’ TO ISLAND’S ECONOMY
Two local students will be awarded a three year bursary by Collins Stewart Wealth Management to support them during their time at university.
Businesses are being urged to take part in an ambitious online survey which could ultimately become an influential ‘tool’ in bringing about a significant boost to the Island’s economy.
The bursary scheme, which launched last month in schools and colleges, aims to help local students continue onto higher education by offering two bursaries of £1,500 paid annually for three years along with the opportunity to undertake work experience at the wealth management firm.
The survey is being conducted by Research Offshore on behalf of Action Mann, an organisation established on the Island by the Isle of Man LinkedIn group to support Manx business and the local economy.
Applications are welcome from any student about to start university, or with at least three years remaining on their university course. One bursary will be awarded to a student who is undertaking a finance-related course and the second bursary will be awarded for a course of a non-financial nature. Candidates are required to complete an application form and provide a copy of their existing CV. Shortlisted students will be invited for an interview and if selected, the candidate must provide evidence that they have been offered and accepted a university place and that they have gained at least 300 UCAS points. Application forms are available through schools and at the Careers Centre in Douglas and should be completed by 30 April 2013.

o you know the difference between boom and bust? I do, because I turned down my hearing aid to watch the air display, tripped over the cat and fractured my hip. I was in bed reading the Radio Times when the telephone rang, and although I didn’t catch every word I think the editor of a local newsletter wants me to share my investment strategies with his readers. My Beryl swears he had the wrong number, as I’ve been retired since 1983 and only have £7000 worth of Premium Bonds, but old Horace hasn’t turned down a bit of easy work since that misunderstanding with the ladies who wanted a full monty party with their hens. The less said about that the better....

‘Look after the pennies and the pounds will take care of themselves’ is what I always say, and it’s as true now as it was before they brought in that strange decimal coinage. Follow my common sense advice and you’ll be out of your ergonomic downturn before you know it. I may not know a whole lot about credit cycles and interest grates, but I do know that you can reuse teabags and that the TV uses less power if you turn the contrast down. Where there’s muck, there’s brass Myself and Beryl manage on our savings, and by only heating the house for two hours a day, but the line outside the Parish hall tells me that a lot of the young lads are having trouble finding steady work. It was bad enough the first and second times, and that’s coming from somebody who remembers not seeing a banana for ten years. I don’t want to go back to eating limpets, and perhaps Tony Blair would be minded to remember that next time he invites the king of Prussia over for a slap up meal on the British taxpayer. It’s also very important to watch out for economic depression. My cousin Helier lost a fortnight’s wages at the bookies, and I didn’t see him smile for most of the 1960s.

Apparently when you write this kind of advice you’re supposed to nominate a safe investment vehicle, so I’m going to start by advising that you stick with a British-made one, like a Vauxhall or Rover, as you never know when a car from the continent will break down. As far as whether PIPS or ISAs are a better idea, I’m no doctor, but I will say that you probably shouldn’t mix the two, and if anything makes you feel funny downstairs you should stay inside and wait it out. That brings me onto the subject of quantitative easing. Now, some people will swear by prunes, some will insist that Ex-Lax or fig syrup is the way to go. The golden rule is to eat well and you’ll go when you’re ready - forcing it out will do more harm than good. I hear a lot about the ’squeezed middle’, but if you ask me that’s a sure way to put your back out, and more besides. I don’t know quite

what this has got to do with savings, but if we’re on the subject of quantitative easing I’ll also say that the budget brand toilet issue is a fool’s economy, unless you fancy the idea of spending your Co-Op dividend on Preparation H. Beryl told me to keep this to myself, but I don’t notice newspapers asking her to write up her opinions about how to play Boggle and why the cleaner keeps hiding her dentures.

1. Wear extra layers - I never go out without a vest, hat and threepiece suit on. If I get run over by an omnibus I want to look my best when they lay me out in the chapel. When relaxing at home, I add a dressing gown and a few more scarves. The youngsters may like to run about in their hot pants and spinny jeans, but if they don’t catch a death of cold they’ll die of fright when the gas bill comes in. 2. Go to bed when it gets dark - God made darkness for a reason, it’s to warn you that if you wander about you’ll trip over something. I also don’t trust those recycled bulbs - if it wasn’t good enough for the first person, why should somebody else pay for it? 3. Be a thrifty shopper - I’m going to let you on to a little secret those sell-by dates are a load of rubbish. It’s true you shouldn’t eat a green egg or a furry pork chop, but a touch of mould is like an extra wrapper you just have to peel off. I like to keep my penicillin levels nice and high, in case the malaria comes back. 4. Turn your engine off when going downhill - I’m never in that much of a hurry, why would I waste perfectly good 4 star on speeding to the bottom of the hill? Until they find a way to put a tax on gravity, I’ll happily switch the engine off and enjoy the free ride. Also make sure you turn off the windscreen wipers when you’re at the stop lights. You don’t need them. 5. Don’t go on holiday - You may think that you fancy a nice trip abroad, but take it from somebody who went to Spain once, it’s overrated. The weather’s too hot, the food is awful and if you catch anything you’ll spend as much again on doctor’s fees when you get home. I have second cousins in France, but I won’t consider going there until they build toilets where you can sit down.

Mike Lightfoot has joined as Operations Director. A Manx native, Mike has returned to the island after living and working in Guernsey for the past three years where he was technical director of Kleinwort Benson (Guernsey) Trustees Ltd. There he oversaw the company’s international retirement planning and trust wrapper business, and was responsible for front- and back-office operations for the pensions business across Guernsey and South Africa. Prior to becoming technical director, he was chief operating officer for the company’s Offshore Distribution Partners business unit, which focused on distributing offshore trust, funds and pension wrappers through international intermediaries. Mike is a member of the Personal Finance Society and the Chartered Insurance Institute. Brigit Scott has been promoted from Manager to Director and manages the organisation’s trust and corporate team in the Isle of Man office. Brigit is a Chartered Secretary, having qualified in 2002, and has ACCA affiliate status. She joined FNTC in 1996 after completing an HND in Business and Finance and during her 15 years within the industry has gained experience in both the operational and trust and corporate aspects of the business. Chief Executive, FNTC, Declan Kenny said; ‘I am delighted with the new appointments at FNTC, it shows really progression within the company. Live Events & Corporate Hospitality Support It is almost approaching the Outdoor Festival season and the Isle of Man is fast becoming a place where these events are more frequent. From live music acts to corporate events the Island has seen a dramatic increase in all types of live entertainment taking place. With this comes the need to provide professional lighting and sound support to ensure the delivery is to the same standard as seen at most UK Festivals. Now in their 8th year, Event Lighting Services (ELS) are the Islands Premier Supplier of Professional Lighting & Sound equipment to the Islands Event Industry. ELS have recently invested in and taken delivery of the Islands very first dedicated large scale outdoor stage system aimed at the outdoor event market. The £45,000.00 structure is 10m wide by 8m deep and is the only purpose built Professional stage of its size currently on the Island. “It is designed to cater for crowds of up to 3000 people” which as company owner Justin McMullin explained “is ideal for the size & nature of events that take place on the Island”. “We used a 12m by 10m for last year’s garden party festival and it had to be brought in and sent back to the UK in an articulated lorry. To be honest the hire and transportation costs were ridiculous’. It was at this point we started to look at the various options available to us to reduce this inconvenience in both cost and time. By pure chance a friend of mine who owns a staging company in the UK had a brand new stage that they needed to get rid of. It was taking up valuable storage space in their rehearsal studio and Lady Gaga was due to start rehearsals in there for her recent tour and so he offered us the deal of the century and the rest as they say is History!! The stage itself is adaptable in depth from 3m, 4.5m to 8m which means it can fit in various locations and makes it much more useable than most other stage systems available on the market. The structure can support a total load of 2,500 kg. The roof of the stage is covered in smart grey PVC material, with a blackout lining. The back and sides are matching with solid PVC material. Handrails are fitted to the rear and sides of the stage platform, and various ramp and step options are available making it suitable & safe for all types of events.

ELS are also a huge supporter of many local charities and have provided equipment and crew for a large number of charity events such as: “Wish upon a dream IOM”, “Crossroads Care”, “Hospice IOM”, “Red Cross IOM”, “Oskars Dreams” and many others. “We love to be able to support these very worthy local charities” said Justin. “We get great satisfaction out of helping make charity events that little bit more special by adding our “Magic Touch” and giving them the best kit available at a very special charity rate that just covers our costs.”
To compliment the new stage ELS has also invested in the very latest Lighting CAD software which allows them to produce mock up designs of the stage for clients so that they can see what it is going to look like prior to it being built on site, these can then be printed out on paper or can be made into a video which allows the client to have a virtual tour of the stage showing all sides.
