e live in times of minor celebrity. You can get famous for five minutes for doing just about anything these days. With just an iPhone and a YouTube account you could make, literally, pounds. You could bite a finger, chase some deer across a park, mock someone’s music video, or even cook.... The voracious appetite we have for watching mindless clip after clip (I’m as guilty as any) is driving the thirst for amateur video stars everywhere.
Some are more entertaining than others but as this is our ‘Appetite’ issue it seems fitting to mention ‘Epic Meal time’; described by its creator as ‘Jackass in the kitchen’. Started in Montreal in 2010, it’s the pinnacle of cooking, as long as your cooking involves Jack Daniels and bacon; Lots of bacon. It’s a tour de force of calorific creation that has spawned many imitators. Take time out and look it up on your iPhone. This month we teach you how to brew your own fizzy drinks. MICROBES ARE YOUR FRIENDS: HOW TO BREW YOUR OWN FIZZY DRINKS
You can use any old sugar, although different types of sugar make different tastes. I use caster sugar, brown sugar, honey and molasses depending on what I’m brewing up. If I had more money I’d try agave syrup and maple syrup too, because my ever-expanding colony of yeasts will eat anything sweet. You can use fruit juices too, although not pineapple as it’s a buzzkill for yeasts. No bootleg Lilt, I’m afraid.
It turns out that brewing your own fizzy drinks isn’t even that hard, providing you’re happy with something that’s more along the lines of the fancier fizzes you get from Waitrose. Posh drinks like Fentiman’s tend to be tastier anyway, and I suppose if you really want something that tastes like Panda Pops you could always just slosh in some random e numbers and a shot of drain cleaner. The important thing to understand is that you can easily fiddle around with the timings and turn posh, home-made cocktail mixer into posh, home-made alcopops. It’s basically prison hooch for middle-class foodies.

A couple of months ago, I ate too much cheese before bedtime and had a terrifying dream I was living in prohibition-era USA. Luckily, I keep a hipflask of gin under to my pillow for emergencies such as this, so by the time I passed out again I’d stopped fretting about a booze ban in the country parishes.
Yeast: the plant of wonders The key ingredients for the soda homebrewer are yeast, flavourings and a skipload of sugar. I’ll go into detail about those shortly, but you’ll also need something to brew it in, something to filter out the yeast gunk from the finished product, empty plastic bottles for storage and powdered citric or tartaric acid to provide bite and counteract any chlorine in your water. I use 2 litre kilner jars to brew and jam straining bags to filter out the yeast, although I suppose that a brewer’s demijohn might actually work better as it’s designed for the job. You can get citric acid from chemists, and tartaric acid is in cream of tartar.

Once you’ve acquired those, you’ll need a yeast of some kind. You can do a perfectly decent job with brewer’s yeast or even bread yeast added to warm water, but I’d recommend purchasing a weird oddity named ‘ginger beer plant’ over the internet. It isn’t really a plant, so you’ll just receive a sachet with what looks like translucent jelly in it - this is actually a tiny colony of yeasts and other bacteria that likes nothing more than turning sugar water into delicious fizzy drink for you.

This might take another four days, and means it is carbonated, although you can always let off some pressure, add more sugar and keep brewing. Transfer this to a fridge for another three days to stop the yeast working, and then its ready to store or drink. At this point, it could be anywhere between 1 and 5% alcohol. Like a North Korean rocket scientist, you’ll need to experiment.

Caffeine is not actually a flavouring Now, the most important part is flavour. You should probably start with cloudy lemonade or ginger beer, because these are the easiest, and you’ll be so impressed with the results that you’ll be emboldened to try new stuff and won’t get discouraged when you inevitably muff up trying to make cola. Who knew that cola requires at least seven essential oils? I’d always assumed it was just caffeine, sugar and road tar.

The base of most sodas is something sugary combined with something sharp. You can make a perfectly good one by adding lemon juice and sugar into 2 litres of warmish water until it tastes too sweet to drink. Put in a quarter teaspoon of tartar or citric and then add your yeast. If you’re using Ginger Beer Plant, you simply add a few tablespoons of the plant and loosely cover the jar for between three and seven days, tasting periodically to check the yeast hasn’t eaten all of the sugar. If it’s not sweet, add more. Providing there’s enough yeast-food you’ll soon notice a fizz begin, which is caused by the yeast pooping out carbon dioxide. This is why you don’t seal the jar, unless you want sugary explosions in your house.

This season’s modern stripes are big and bold, creating an almost nautical look minus the navy, of course. You don’t have to go the whole hog with a Beetlejuice-inspired suit, but stripy trousers or skinny jeans are a big statement if you dare.
Contrasting separates is the simplest way to do this. Team your colours the right way around and you can expect instant figure flattery too. If you’re pear-shaped, for instance, stick to black bottoms and white tops and vice versa to balance out your body proportions.

The trend may not have been ‘spotted’ as much on the spring/summer catwalks but the pop art print is in keeping with the Sixties vibe that designers adopted. White spots on a black background is the most common colourway. To lighten up your look for summer, try switching things up with a black on white reversal. If spots feel too primary school for you, try a black and white leopard print for a print with extra bite.
Take minimalism to the max in uber-bold black and white square checks. Wallflowers may feel more comfortable in a significantly smaller houndstooth check. Floaty shapes can sometimes work out but this geometric look is a far better style equation when teamed with structured, clean silhouettes. Tip: To poach eggs, bring a wide, shallow pan of water to just simmering. Using the handle of a slotted spoon, swirl the simmering water to create a whirlpool or vortex then crack the eggs, one or two at a time, directly into the centre of the whirlpool.
THE BREAKFAST STACK
As the eggs cook, use the spoon to keep the water moving and ensure the egg whites wrap around the yolks (do this carefully so as not to break the eggs). After 1-2 minutes, or when the egg white is cooked, remove them from the pan using the slotted spoon and set aside to drain on kitchen paper. For a firm yolk cook for a further minute or so.

Place all the ingredients in a liquidiser or food processor and blend until smooth. Pour into a glass and drizzle over some extra honey to serve (optional).
Dry fry the oats and nuts for about 3 minutes over a medium heat until toasted. Stir in the honey and dried fruit and allow to cool slightly. Reserve 1 tablespoon of the mixture and stir the rest into the yogurt. Spoon into a glass and top with the reserved oat mixture before serving.
Tips: For a smoother texture, soak the bran flakes in the milk for 5-10 minutes in advance.
Tip: Try using a flavoured yogurt like strawberry or add fresh fruit for a different taste.

Obviously everyone remembers Dan’s crash in the Supersport race, but before that he was having a great race battling with John McGuinness for fourth. Dan told me; “I was bouncing between fourth and fifth fighting with John McGuinness, I’m not sure what it was but we were struggling with a bit with speed on the Suzuki. We didn’t really have it at the top end, we had to try and punch it out of the corners onto the straights. It was the same kind of thing with the Superbike, we didn’t really have a lot of time on it and we weren’t able to try and bits and pieces on it. So I think I was pushing harder than I wanted to be pushing to get to where we were and that caused the crash, it was just one of them things really.”

Preheat the oven to 220ºC, gas mark 7. Grease a baking tray. Heat the oil in a large frying pan and fry the mushrooms for 4-5 minutes until golden. Grill the bacon whole and chop the bacon into small pieces, roughly 1cm. Mix the flours and baking powder in a large bowl and rub in the butter until it resembles breadcrumbs. Stir in the bacon mixture and half the cheese. Mix in the milk to form a soft dough. On a floured surface, roll out the dough to 2cm thick and using a 6cm round cutter, cut out 10 scones and place on the tray. Sprinkle over the remaining cheese. Bake for 10-15 minutes until golden. Perfect for eating on the go, wrapped in a napkin. The scones will keep for 2-3 days in an airtight container. The scones can also be frozen (best to freeze once cooled, on the day they have been baked) so you have a ready supply for busy weeks.
Coming out of Governors Bridge during the Supersport race Dan hit a damp patch on the road, lost control of his Suzuki and hit a wall, something nobody wanted to see and no doubt it wasn’t what Dan wanted either. Talking to Dan about the crash he said; “I just remember coming out of Governors and I hit a bit of a damp patch on the left hand side of the track. I was using slightly more of the road to try and get a better run out of the corner but it just caught me out and that was that, and before I knew it the bike was ripped out of my hands and I was just a passenger really.” Speaking about the injuries he sustained from the crash Dan said; “They let me out of the hospital after a couple of days and told me I had just squashed a few vertebra but then about a month later after I had another doctor, who was a specialist look at it he told me I had actually cracked four of them so I had to rest and just go from there.”

Before his big crash in the second race of the TT week Dan had an impressive result in the first Superbike race finishing eleventh on a bike he had hardly ridden. Speaking to me about the race Dan said; “Well to be honest, everything was very last minute with that bike. I only got it built and finished just before that last practise session and I only got one lap on it. I had never ridden it before that so after only one lap in practise, the race was then just a way to see how we go basically. The suspension wasn’t adjusted or anything, we basically pulled it out of the box and rode it so to finish in eleventh and do a 126mph lap wasn’t bad considering. I think if we had a bit more time on it we would have been able to have a decent go at it but as it was I was only able to ride round and do what I could.”

Here are a variety of breakfast options for you to try at home...
Remove the stalks from the mushrooms and place in a grill pan. Slice the ends off the tomatoes and cut in half to create 2 circle shapes and place in the grill pan with the mushrooms. Place under a preheated grill for 5 minutes each side. Set aside and keep warm. Meanwhile, poach the eggs for 2-3 minutes (one at a time if easier). Place the bacon in the grill pan and grill for 5-6 minutes, turning once until golden and towards the end of cooking, toast the muffins. Stack the bacon on top of the muffins then top with the mushrooms, tomatoes and then egg. Scatter with the chives and season with black pepper.
Spot luck For a monochromatic ensemble that’s less sharp, more youthful, but just as statementmaking, look to super-sized polka dots.

You can churn that lot up with some gum arabic binder and add it to sugar water to get a basic cola, and then add in whatever you want. In the interests of health and safety, Gallery’s lawyers instruct me to add that powdered caffeine is actually highly poisonous, and although Coca-Cola used to contain it, cocaine is illegal, dangerous and may turn you into moustachioed eighties funkster Rick James. My tip is to stick to dark rum and lime juice.

“I think it was somewhere around six weeks before I was actually able to do much really. I just had to take it steady because there’s no point trying to rush back with an injury like that. In the end you’ll probably damage yourself more so I didn’t rush it.” Dan’s comeback meeting was at the Ulster Grand Prix in August where he picked up a very impressive two 8th place finishes and two 7th places, just two months after his crash at the TT. Dan said; “With the Ulster I was happy enough because I hadn’t ridden a bike from the TT and wasn’t able to set them up, change them or anything like that. We struggled a bit with set up at the TT so we just worked away at it throughout practice and tweaked a few bits and pieces for the races. We had some good races that week, we would have liked to have done a little better in some of them but after coming back from the crash it was good enough.” With having a very impressive year despite his crash at the TT it was easy to see that Dan was well suited to the Suzuki’s and I was keen to find out what his plans were going into 2013, he told me; “This year I’ll be sticking with the Marks Bloom Racing team but I’m still trying to get some sponsors onboard because it can be a bit of a struggle with funds. Maybe this year we’ll have to cut back on some of the meetings and just do the main ones which would be a shame but unfortunately that’s just the way it’s been going recently.” With funds and sponsorship being difficult to come by many riders are sticking to the three main International race meetings, I

wanted to ask Dan what races he has plans to do in 2013 and if he would be sticking to the main three or taking in any other races throughout the year, he said; “Our plan was to do the British Championship but at the moment we might be a bit stuck so we might just do a few of them and we were thinking of doing a few of the National Irish Road Races but we’re still not sure yet. I’ve thought about it because we’re going to have to pick and choose the races this year and I was thinking of doing something a little bit different, it would nice to do it for a bit of a change so we’ll see what happens.” With Dan being a Manxman I wanted to ask that if living on the Isle of Man helped him in any way to prepare for the TT and if it has helped him in learning the 37.7 mile long track, he told me; “I don’t know, I suppose it’s easier because the workshop’s here and stuff like that and you can’t really learn it driving around it compared to riding it. You can sort of work out what’s coming next and things like that but as for learning it properly you can only do that once a year and pick out a few new things. People say it can be a big advantage but it’s not really.”

Having a very impressive Ulster Grand Prix and until his crash he was having a great TT, even with limited bike time so heading into 2013 I really wanted to know what Dan’s aspirations are, he said; “I would like to get on the podium at some of the big races, which would be nice. Especially with us being a smaller team and building the bikes ourselves it would be good. We’ll just take it one step at a time, some day I would love to win one obviously but if I was to get onto the podium it would be great for the confidence because I’ve missed out on it a few times like in 2011 in the wet race I was laying in third before it was red flagged and in a few more we’ve had breakdown’s and things but the guys have worked really hard so it would be good for them as well but it’ll come!”

A couple of months ago, I ate too much cheese before bedtime and had a terrifying dream I was living in prohibition-era USA. Luckily, I keep a hipflask of gin under to my pillow for emergencies such as this, so by the time I passed out again I’d stopped fretting. >>>>>>>>>>

I awoke craving a breakfast of baked brie and Cherry Coke, vowed to purchase some cows and begin brewing my own sugary toothrot, or die trying. You’ll pry my bottle of Irn Bru from my cold dead hands!
You can use any old sugar, although different types of sugar make different tastes. I use caster sugar, brown sugar, honey and molasses depending on what I’m brewing up. If I had more money I’d try agave syrup and maple syrup too, because my ever-expanding colony of yeasts will eat anything sweet. You can use fruit juices too, although not pineapple as it’s a buzzkill for yeasts. No bootleg Lilt, I’m afraid.
It turns out that brewing your own fizzy drinks isn’t even that hard, providing you’re happy with something that’s more along the lines of the fancier fizzes you get from Waitrose. Posh drinks like Fentiman’s tend to be tastier anyway, and I suppose if you really want something that tastes like Panda Pops you could always just slosh in some random e numbers and a shot of drain cleaner. The important thing to understand is that you can easily fiddle around with the timings and turn posh, home-made cocktail mixer into posh, home-made alcopops. It’s basically prison hooch for middle-class foodies.
Yeast: the plant of wonders The key ingredients for the soda homebrewer are yeast, flavourings and a skipload of sugar. I’ll go into detail about those shortly, but you’ll also need something to brew it in, something to filter out the yeast gunk from the finished product, empty plastic bottles for storage and powdered citric or tartaric acid to provide bite and counteract any chlorine in your water. I use 2 litre kilner jars to brew and jam straining bags to filter out the yeast, although I suppose that a brewer’s demijohn might actually work better as it’s designed for the job. You can get citric acid from chemists, and tartaric acid is in cream of tartar. Once you’ve acquired those, you’ll need a yeast of some kind. You can do a perfectly decent job with brewer’s yeast or even bread yeast added to warm water, but I’d recommend purchasing a weird oddity named ‘ginger beer plant’ over the internet. It isn’t really a plant, so you’ll just receive a sachet with what looks like translucent jelly in it - this is actually a tiny colony of yeasts and other bacteria that likes nothing more than turning sugar water into delicious fizzy drink for you.

This might take another four days, and means it is carbonated, although you can always let off some pressure, add more sugar and keep brewing. Transfer this to a fridge for another three days to stop the yeast working, and then its ready to store or drink. At this point, it could be anywhere between 1 and 5% alcohol. Like a North Korean rocket scientist, you’ll need to experiment. Caffeine is not actually a flavouring Now, the most important part is flavour. You should probably start with cloudy lemonade or ginger beer, because these are the easiest, and you’ll be so impressed with the results that you’ll be emboldened to try new stuff and won’t get discouraged when you inevitably muff up trying to make cola. Who knew that cola requires at least seven essential oils? I’d always assumed it was just caffeine, sugar and road tar.

The base of most sodas is something sugary combined with something sharp. You can make a perfectly good one by adding lemon juice and sugar into 2 litres of warmish water until it tastes too sweet to drink. Put in a quarter teaspoon of tartar or citric and then add your yeast. If you’re using Ginger Beer Plant, you simply add a few tablespoons of the plant and loosely cover the jar for between three and seven days, tasting periodically to check the yeast hasn’t eaten all of the sugar. If it’s not sweet, add more. Providing there’s enough yeast-food you’ll soon notice a fizz begin, which is caused by the yeast pooping out carbon dioxide. This is why you don’t seal the jar, unless you want sugary explosions in your house. Once it tastes slightly too sweet to drink, strain out the yeast to save for another brew and funnel the liquid into an empty plastic

The buffet. The socially acceptable place to gorge yourself to bloatation. To force feed yourself like a festive goose. You can eat seconds, thirds, even sevenths. Sidestep the side plate and head to the larger for your starter. Trust me on this Please. I come from a foodie family. They encourage eating. It’s a compulsion. It borders on some sort of eating disorder.
M
y family’s the kind that sees you and says, “mymy, you’ve put on weight!” Unlike most families, the connotations are nearly always positive. Shimmering eyes that glisten like polished diamonds gaze at you as family members incessantly grab your cheeks in a dramatic display of familial love. Worse still is the notion that “you’re too skinny!” This line of argument often forces parents to field off questions from well-meaning, if not intrusive elders who have too much experience, wisdom and love to be reckoned with. It’s no wonder that the prospect of unlimited food and unrestrained helpings, not to mention unmonitored by my Big Fat Greek Wedding-sized family, is so psychologically compelling on Hangover Sunday. It allows me to regain my strength gradually, and anyway, it’s more cardio than I’d be doing lying in a blacked-out bedroom fumbling for bottles of water and paracetamol.
I feel, however, that the buffet is a place of equal splendour and whimsy as any theme park to a child. The real beauty of it is they can pick what they want, and for children this is the most magnetizing part. There are no real rules. No enforced Brussels sprouts. The principles of free will are of the utmost importance here. It’s an exercise in parental trust in their children and childhood mistrust in endlessly nagging adults. Gleeful, open-mouthed faces scanning endless deserts and artisanal fruit arrangements make them wonder just how far they can push it. After all, no parent likes a scene. They surreptitiously load their plates with enough sugary delights to keep them awake for a fortnight. Staining their Sunday best with remnants of a strawberry cheesecake smeared into just ironed clothing. There’s enough to feed the Third World, yet we still feel deflated when, on reflection, we missed out on some crab claws or some kind of overcooked rice dish. The family leaves the restaurant in a near narcotized stupor that makes the drive back heavenly with the appetite fully satiated. For the freedom it entails and the sheer abundance of foods, many of which we rarely eat, the buffet is the apex of eating experiences. It offers up choice without the requirement to plan and prepare. It removes us from queues and laden food prices that, for the moment, seem to be ever-soaring. We pay upfront, have a general idea of what we’re getting and can’t easily get a refund if we don’t like it. It gives us the illusion of choice at a fixed price and I for one like it more than heavy bags of food, bored checkout staff and extortion.
The buffet makes Man feel victorious over all food groups. He presides over his edible domain with a salivating mouth and anxious hands. Secretly all that’s lacking is elasticated trousers, since being limited by fabric is an insult to his masculinity. But today Modern Man can have a day off from the drudgery of the kill, relax, and fill up on meat galore. For poor 1950s-style wives, yes, there are still some among us, the day’s cooking is spared her. Parental responsibility is limited to ensuring that their little angels don’t make a mess, cause a commotion, or vomit on a silver platter.

RELAY FOR LIFE LAUNCH 2013 - The Crescent, Douglas
The launch of this year’s Relay for Life campaign was held at The Crescent nightclub on Friday 22nd February. The fundraising target is £50,000 this year, to add to the £130,000 already raised in the Isle of Man. Relay For Life is an inspirational community and familyfocused event, and the relay itself is open to all ages and all abilities. Relay is a fun 24 hour event but one with a serious message,
People can register or donate online at relay.cancerresearch.org.uk and get fundraising, then come along and do the Relay to celebrate their achievements. Although Cancer Research UK is a UKregistered charity, the money raised from the campaign will go to centres treating Isle of Man patients, and this year, Celton Manx are continuing their support for the event as lead sponsor.

72 people gathered at The British Embassy on Thursday 7th February for an evening of Italian fine wine and food, in aid of Red Cross Isle of Man. Six courses, consisting of small plates of Italian food were served together with a sampling of three white and three red Italian wines. Wine sommelier, Patricia Sliwa introduced each one and was paparazzi@gallery.co.im

...spring is here! There’s nothing like post-Christmas blues to depress the appetite. But come March, after weeks of deprivation – food, alcohol, fun – it’s time to stop moaning about your waistline, to remember when exercise was something you did outside and not in a sweaty gym, and to put a smile back on your face. Facebook is all very well in the miserable dark days in January, when it’s just too much effort to actually talk to real people, and status updates about your crossfit body, the miles you’ve clocked up on the treadmill and your (static) cycling proficiency are the nearest you come to communication. Tweets from Z-list comedians can make you smile (sometimes) when you’ve not heard a decent joke in months, but once Spring is here then it’s only fair to reacquaint yourself with the people and places that make life worth living.
The sun is out (maybe just a couple of hours a day, but it’s only March so don’t be greedy) and somehow everything looks much better. When the sun shining through the windows makes you realise that they really do need cleaning, the only thing to do is get out of the house (where you can’t see the grime) and take advantage of this beautiful Island. But enough of the tourist flimflam. I’d rather spend my summers on a beach somewhere nearer the equator than Port St Mary but somehow Spring brings out the best in me. I can get enthusiastic about salads, walk to the shops instead of taking the car and even smile at strangers (sorry if that’s you I freaked out in Strand Street). I’m not a hippy-dippy-rainbows- and -unicorns person (for rainbows you need rain, so no thanks

, and unicorns are mythical creatures who may or may not be as scary as horses who’ve got eyes on the side of their heads so can’t see forwards, and unicorns have horns) but when the sun peaks out from behind winter’s bloody great snow clouds I get a little spring in my step and that optimistic thought that maybe, just maybe, summer 2013 will be the warmest, driest on record and I won’t have to resort to fake tan to ensure that my pasty legs won’t scare small children. My dog (and I’d like to put him on record as the slowest, laziest mutt in Ramsey if not the whole Island) even wants to go for a walk and, shock horror, I actually want to take him. Ipod on shuffle, smile on my face, shorts (if the postmen can change into theirs on 1 April, then what’s so odd about a sunny day in March?) and I’m ready to embrace Spring. One small less optimistic thought: If it snows at Easter – 1998, I’ve got the photos to prove it – I’ll be back in hibernation, heating on, catering vats of soup on the hob and a TV tuned to re-runs of all those property programmes suggesting I emigrate to somewhere a little bit warmer. And when I’ve watched them all you’ll find me tweeting about the miserable un-Spring like weather and updating my facebook status to just plain SAD.

What kind of tax planning do I need to consider when setting up a business locally?
A.
One would be wrong (but forgiven!) for assuming that a Manx trading company paying company tax at a NIL rate does not need to engage in tax planning. In fact, there are many areas that business owners should be aware of if they want to minimise and/or better plan their tax liabilities. Self-employed business owners (not operating via a company) are taxed on their ‘taxable profit’ irrespective of whether they have drawn it from the business. Such business owners should consider trading through a limited company, where they will be taxed on drawings and salaries only (i.e. dividends) from the business. In addition, they avoid Class 4 National Insurance and have the benefit of limited liability. If shareholder loans (advanced to the company) exist, then consider taking a loan draw down (tax free) instead of or combined with dividends. However, loans advanced to Manx resident shareholders (or participators) will incur a tax charge on the company; this refundable if the loan is repaid. By deferring drawings from their company, shareholders can better plan their own tax liabilities in the long term. Owner managed companies should consider how much salary they should pay their working shareholders. A high salary attracts significant National Insurance liabilities. A low salary, e.g. £5,000, paid by a company may incur no NI liabilities. There are, however, other implications of salary level such as state pension entitlement. There are many more ideas to consider, including the use of company cars and benefits in kind.

Mortgage approvals are at an 11 month high in the UK, how does this compare to the Isle of Man and does this signify renewed economic confidence?
Can you give me some tips on how to save tax before the tax year end?
A.
A.
The Bank of England’s latest figures do indeed show that mortgage approvals are at an 11 month high as of December 2012 and rose from 54,011 in November to 55,785 in December, 2012. Although this was well above lending analysts’ expectation for 2012, it is important to note that these figures do form part of a larger picture for the UK and Isle of Man, which shows that 2012’s rates are in keeping with long-term norms. Although it would be injudicious of me to talk on behalf of the Isle of Man’s situation overall, at Lloyds TSB IOM, we too have experienced positive lending figures over past years. Between January 2012 and January 2013, for example, we experienced a 55.55% increase in mortgage appointments, and a significant 8.56% increase in sanctioned mortgages in 2012 compared to 2011. These are certainly positive findings and show that local households and mortgage lenders are looking towards a brighter future in credit lending for 2013. This recent success in the UK can be attributed, to a large extent, to the Bank of England and UK Treasury’s Funding for Lending Scheme as well as a greater emphasis on customer approval rates on behalf of the banks. This January, for example, Lloyds TSB committed to lending £6.5 billion to help people make their first step on to the property ladder, which is expected to help around 60,000 customers buy their first home by the end of 2013.
As the tax year ends on 5 April 2013, there is very little time left for “big picture” tax planning. However, in addition to ensuring your tax return discloses all the allowances/ deductions you are entitled to claim, and any deductions from income you may have already suffered, there are some time-sensitive issues worth considering. Tax relief is available on annual contributions into a pension scheme of up to the lower of £300,000 or 100% of your earnings. So, if you are in a position to accelerate pension payments, and have not exceeded the maximum contribution, this will reduce your taxable income for the tax year in which the contributions are paid. Similarly, if you are in business and there is any expenditure that can be incurred before 6 April, this will also reduce your taxable income for the current year. By contrast, it may be worth considering deferring income, if possible, until after 5 April so that it falls into the 2013/14 tax year rather than the present one, and means you get an extra year to pay the tax. The taxation of married couples is a topic in its own right but particularly where husband and wife are taxed independently, and especially where one is liability capped and the other is not. Consideration should always be given to possibilities such as, for example, structuring investments to fully utilise personal allowances and the 10% tax rate band. Don’t forget you can also do yourself a favour by getting your tax return in on time i.e. by 6 October. If not, it will cost you £50. Finally, do check that you are satisfied the figures contained on any communication from the Tax Office are correct. Mistakes do happen!

I keep hearing about this ICE conference. What is it and why is it important to the Isle of Man?
A.
Over 100 people from the Isle of Man attended ICE, the world’s largest eGaming show of the year on February 5-7 in London. There were over 1,500 delegates and 400 exhibitors including myself and colleagues from Boston Trust supporting the Isle of Man Department of Economic Development eGaming team stand. This was my 8th ICE show and this year I can truly say the Isle of Man presence has never been greater. Ice is a fantastic meeting place for the Island’s eGaming eco-system, from the operators, to the software providers, to the support advisors. It offers opportunities to create new partnerships, to work together, and establish new contacts from around the globe. As eGaming has become a significant part of the Island’s GDP this is a massive event, which is close to home, to promote the Island and the services we can offer. For Boston Trust, the business generated and the contacts made were beyond our expectations. We had inquiries from many operators looking to switch their existing eGaming operations from other jurisdictions to the Isle of Man, which is amongst the top jurisdictions in the world for licensed and non-licensed eGaming companies alike. We have also made quite a number of excellent new contacts from key growth markets in Asia, which is one of the world’s biggest eGaming markets that we will be following up on at another eGaming conference in Macau in March. I am speaking on 2 panel discussions in Macau which should help to raise the Island’s profile at this important event. The Macau event will also be attended by Tim Craine and Ray Davies of the Department of Economic Development’s eGaming team. We look forward to continuing to build the Isle of Man brand internationally through our participation in these key eGaming conferences.

SOUTHERN BEFRIENDERS HELPED BY MANX TELECOM DONATION The Southern Befrienders charity has been given two mobile phones by Manx Telecom to help volunteers and service users. The charity provides home visits through a group of volunteer befrienders who call in on elderly people in the south of the Island. Two rugged Samsung mobile phones have been donated by the telecoms company. Southern Befrienders was set up to assist the elderly in the south of the Island who may be experiencing feelings of isolation and loneliness, and is based at Thie Rosien, Castletown Road, Port Erin. NEARLY £13,000 RAISED FOR LOCAL MULTIPLE SCLEROSIS SOCIETY IN 2012 A successful year’s fund-raising saw the MS Society in the Isle of Man receive donations of over £12,700 during 2012. Funds were raised by Parish walkers, Peel dippers, marathon runners, cake makers, skydivers, donations in lieu of birthday and Christmas presents, and donations in memoriam as well as corporate support from dress-down days, dinners and similar events. This has allowed the Society, which celebrates its 60th birthday this year, to both continue and expand its programme of support for those with MS – and their carers – through the Island. As well as responding to requests for financial assistance to purchase specialist equipment, the Society runs two exercise classes at the NSC in Douglas, supervised by qualified trainers who have adapted their usual routines to enable people in wheelchairs or with other mobility problems to benefit from regular exercise. There is also a yoga class which can be enjoyed by those might not normally able to stand unaided, but who benefit from the stretching and posture exercises yoga provides.
BARCLAYS WEALTH RAISES £37,000 FOR CHARITY OF THE YEAR 2012 – CROSSROADS CARE Crossroads was established in the Isle of Man in 1988 - the aim of the charity is to help improve the lives of carers and to offer practical support and advice to carers, their families and people with care needs. Each year, Crossroads provides over 50,000 hours of respite support so that carers can have a few valuable hours to themselves to relax and do all of the things most people take for granted.

Practical and emotional support is available from the Branch’s support officer Andrea Rycroft, who visits as many people as she can, as well as doing her own fundraising in this year’s Peel Dip. As well as providing local support, the donations the Isle of Man branch has received in 2012 have meant they were able to make sizeable grants towards research into symptom relief and a possible cure for MS. CONOR CUMMINS APPOINTED AS TEAM ISLE OF MAN AMBASSADOR
Sophie Black, 16, Victoria Kinrade, 15 and Elizabeth Holden, 15, have progressed through the Team RL360° ranks and their achievements are the result of a great deal of hard work and dedication to cycling. Revolution is the world’s premier elite cycling league. It aims to bring track cycling to a wider audience by creating an exciting atmosphere at meetings held in velodromes across the British Isles during the year. Being chosen to take part in the Future Stars races means a cyclist has been tipped as one to watch. In addition to being chosen as a Future Star, Elizabeth Holden has been co-opted on to the British Cycling Talent Team. To put this into context, previous members of the Talent Team include multiple Tour de France stage winner Mark Cavendish and Olympic Gold medallist Peter Kennaugh. RL360° Director of Marketing Natalie Hall said: ‘RL360° is very proud to be associated with the cycling league and with the young people from the Isle of Man who are achieving so much in the sport. Conor Cummins has been appointed as an Ambassador for the Isle of Man Commonwealth Games Association. The TT star, known to fans as ‘Conrod’ and ‘The Ramsey Rocket’, is the third Ambassador to be appointed to represent the Association and help to promote its vital role as a registered charity responsible for organising and raising funds for Team Isle of Man at the Commonwealth Games. Conor was named Ambassador of the Year at the 2012 Isle of Man Bank Sports Awards and was chosen for the role of Team Isle of Man Ambassador due to his status as one of the Island’s most respected and popular sportsmen. Team Isle of Man Ambassadors have been appointed to help raise the profile of Isle of Man Commonwealth Games Association and its fundraising events in the build up to the next Commonwealth Games which will be in Glasgow in 2014. Conor is racing for the Milwaukee Yamaha team this year and his schedule includes the North West 200, Isle of Man TT, Ulster Grand Prix and the Southern 100 and possibly the Macau Grand Prix at the end of the season.

Every Tuesday morning, Emma finds an excuse to escape from the office. Popping into the newsagent to pick up a pint of milk, she can’t stop herself glancing over at the magazine racks. And there they are on the middle shelf – the new delivery of the weekly glossies. She scans them all - Heat, Star and Look until she sees the familiar bikini shot, tanned skin stretched tight over newlytaut curves. ‘Britney loses 20lb on brand new juice diet!’ screams the strapline. Emma’s heart starts to beat faster. If it works for Britney, it could work for her too. Maybe she could look like that in time for Magaluf, she thinks as she heads back to the office to Google Britney’s new diet.

She manages to stick to her diet for a couple of days, until, light-headed and giddy, she just can’t resist the lure of a Friday night drink after work. And before she knows it, she’s woken up bleary-eyed and bloated after four glasses of wine, a couple of tequilas and a kebab. Depressed and hungover, she breaks into that packet of caramel chocolate biscuits she hid at the back of the cupboard and thinks that she might as well order a takeaway. After all there’s always a new diet to start next
But tomorrow she’s going to try something that really works. No, not liposuction. The Master Cleanse. You probably read about it in last week’s Look – it’s the diet where you only drink maple syrup and lemon juice with a dash of cayenne pepper. Apparently, the weight just falls off you. Emma’s sure this one will work. After all, you only have to look at the pictures the latest Grazia ran of Beyoncé to see the difference….
Emma’s a celebrity diet addict. Every new delivery of celebrity magazines brings with it a new celebrity diet. There was Kylie’s grapefruit diet - which gave her bad breath and a nasty burping habit, and Katie Holmes’ raw food diet which she had to stop because she was getting jaw ache from all that chewing. She’s even tried that Puer laxative tea all the celebrities use. More like pooey though – no wonder you lose weight, the smell alone was enough to put her and the rest of the office off their lunch. Mind you, Posh’s ‘pink’ diet where you eat just prawns and strawberries worked surprisingly well. Although she doesn’t want to admit that a dodgy prawn gave her such a bad dose of food poisoning that she ended up 10lbs lighter without having to do anything… Emma firmly believes that there’s some magic combination of foodstuffs that will magically melt her wobbly bits away. And every week, thanks to celebritydiet.co.uk and Heat magazine, she tries to find it. She likes how virtuous she feels turning

Not that they’ll find out from her. She’s so determined that her clients’ weddings go well that she’s provided a morning-after rescue service more than once for an errant groom who’s woken up in the wrong place on the morning of his big day.
Arabella’s been so busy with Confetti that when it comes to meeting her own Mr Right, she just hasn’t had time. She thought it would be easier, after all, aren’t weddings supposed to be the place to meet? The trouble is that while everyone else is thinking of love and romance, Arabella’s just wondering where the peacocks have got to and whether anyone will notice that the vin d’honneur is cava and not champagne. And someone really ought to tell her that first-date conversation shouldn’t revolve around which would be better – a summer or a winter wedding. I
t’s now just over 4 months to go till my wedding day, and whilst I’m sure the stereotype is that I should now be in full ‘Bridezilla’ mode, I hate to disappoint everyone by saying I am feeling very calm about the whole thing. For me, this process started 2 years ago, when my fiancé & I started looking around wedding venues. From that moment onwards I realised I was entering a world that I knew nothing about; for example, the wedding breakfast that kept being mentioned (strange because I wanted a full sit-down meal) - it took a few days to sink in that it WAS in fact the sit-down meal I was after. There were several heart-stopping moments along the way, like the time I thought I had allowed plenty of time to start looking for a wedding dress, only to discover that dresses can take up to 6 months to order in, not forgetting about allowing time for fittings once it has arrived. This information left me with about 3 weeks to find a wedding dress. Very-Luckily thanks to the help of one particular bridesmaid, we managed to find ‘THE’ dress with minimal time & effort. So to any brides out there, if you take away any advice from this, allow LOTS of time to find your wedding dress. Oh, and the same applies to bridesmaids’ dresses! Let’s just say my florist’s face fell to the floor when I said I hadn’t got bridesmaids’ dresses yet (with only months to go before the big day). But even after all this, I am still very calm. Everything from the photographer to the caterer is booked, dresses and suits are all on order, invites are being processed, and so I am now down to the task of finalising all the horrible last-minute details such as booking manicures, pedicures, preparing for my hen party and buying clothes for the honeymoon… It’s a hard life. As for how I feel about ‘the marriage’ bit, well without wanting to sound all cheesy & cliched, (I’m actually quite cynical about love & romance), I can honestly say I am not in any way scared /anxious / terrified about the commitment I am about to make. I am purely looking forward to the exciting future that awaits me and my future husband. In our case, I think it truly was love at first sight and so this is a day we have been planning for a long time in order to spend the rest of our lives together. Just like kids at Christmas, we can’t wait.

his month, in the eleventh hour, Gallery was left at the alter by our groom... Typical. Our designated writer got cold feet and left us to reflect on the man’s role. Rather than be bitter and sulk we thought we’d give the rest of you grooms a helping hand and some top tips (turning up on the day being one of them).
First Things First Maybe you stumbled upon this wedding section by accident, maybe your beloved shoved it under your nose, either way you’ve been presented with a prime brownie point scoring opportunity. If your fiancée (the correct spelling for a female engagee) is in the room repeat after me (in a non sarcastic voice) “hmmm, this wedding feature in Gallery is fascinating and full of lots of usefully information that could help make our day really special”, cheesy we know but she’ll eat it up! (If she isn’t in the room while you’re reading this then just regurgitate the above sentence later in her presence.) Talkin the Talk As a fellow procrastinator I understand the urge to put things off, but leaving writing your speech until the prespeech champagne is being poured is not ok. People will notice that you’re reading off a napkin and the woman sitting next to you will be far from impressed, your guests will find it slightly awkward being witness to your first marital tiff, whist they down their drinks. Thanking everyone for coming and personally thanking everyone who was involved with the wedding preparations is a good way to kick off your speech and helps you flow into the rest of it. It’s the first time you’ll be speaking publicly about your wife so being wasted is ill advised (I refer you back to the awkward spectator situation). Suiting Up Something I learned while working in a shop is men always think they’re a size smaller than they really are. So I’ll say this. Get measured. Do not leave it until the last minute otherwise you’ll find yourself standing at the alter in a suit that’s either too big or too small, an ill-fitting suit does not a dashing groom make. The Hangover Unless your idea of a wild night is a glass of milk and a game of scrabble you are going to be hungover the day after your stag do. So, to be on the safe side, we recommend you have your stag do at least a week before. This allows for plenty of recovery time and also ensures that if you find yourself trapped on a casino roof insanely sun burned and dehydrated you still have time to be rescued, rehydrated and moisturised. Little Fact In the United States, there is no law or religious dictate that says the bride must take the groom’s last name. However, approximately 70% of Americans agree that a bride should change her last name.

Espresso A Strong, Bold short thriller with a lasting kick February saw the premiere screening of the strong, bold, 20 minute thriller film ‘Espresso’ at the Manx Museum Film Theatre. The event was attended by over 160 guest including The Lieutenant Governor Mr Adam Wood and Hon Graham Cregeen MHK raising over £1000 for the local Naseem’s Brain Tumor Charity. ‘Espresso’ was Written and Directed by Christopher Whitlow and Co-Produced by Matt James. The film features a cast and crew of the Island’s leading talent, British raising star Jan Uddin (‘Black gold’, ‘Shank’, ‘Eastenders’) and was shot 95% on Island. The screening was followed by a well received ‘Making Of’ presentation by the Producers and Director providing an insight into what goes on behind the scenes and the process involved in getting a film from script to the big screen. THE PLOT: Beatrice and Harry Radcliffe were making their way home one night. They were followed by two men who had been insulted by the wealthy couple earlier that day and have the means, motive and opportunity for revenge. Moments later, a panicked Beatrice screams for help as Harry fights for his life following a brutal mugging. There are however, two sides to every story and as Beatrice and Harry learn the hard way, people are often capable of the unexpected. THE THEME: The film touches upon themes of social class and racial prejudice in society and how we might not always see the ‘real person’ beyond the outward appearance they project.

Mirabilis: Wearable Art from Sarah Hendy

Imagine a dissolving dress – no, not in a wink, wink pervy way but as a work of art which disappears before your eyes. Sarah Hendy’s Wearable Art exhibition ‘Mirabilis’ at the Sayle Gallery from 1 -24 March includes just such a dress, and you really need to pop into the Gallery to see how she has made this happen. Imagine a dissolving dress – no, not in a wink, wink pervy way but as a work of art which disappears before your eyes. Sarah Hendy’s Wearable Art exhibition ‘Mirabilis’ at the Sayle Gallery from 1 -24 March includes just such a dress, and you really need to pop into the Gallery to see how she has made this happen. ‘Mirabilis’ is a collection of dresses exploring the bitter sweet journey of inevitable change, and - with a focus on using sustainablysourced materials - Sarah’s work shows an awareness of the value of everything from precious metals to the more mundane. Sarah uses a variety of both natural and industrial materials – feathers, plant life, handmade sequins, fibre optics, even cling film – in her work, and ‘Mirabilis’ shows how these materials can be transformed into oneoff pieces which mesh them together to result in some truly remarkable items. Sarah, who is the current Artist in Residence at the Sayle Gallery, has been working on this exhibition all year. “My year as Artist in Residence has been amazing,” she said. “I started in April 2012 with the intention of extending my use of textiles and other materials, and through the year I’ve bounced ideas off other artists, interacting with them to push myself and my practice into new realms. ‘Mirabilis’ describes the veil between our reality and other worlds and my dresses are both tangible and ethereal”. Although the concept of Wearable Art – items nearer to costume than fashion, which step outside the constraints of mainstream
clothing - is fairly new here, it is a recognised art discipline in New Zealand, where an annual competition ‘The World of Wearable Art’ attracts entries from around the globe. Sarah is planning to enter work in this, but meanwhile, closer to home, is taking part in the bi-annual Manx Wearable Art Show – now in its fifth year – on later in March. The visual inspiration for my dresses is organic forms in nature, and the aesthetic is quite art nouveau,” says Sarah. “But I haven’t stopped there. I have extended this ‘lightness’ into use of eco-friendly, responsibly sourced, sequins made by hand from recycled aluminium cans which are not just light in weight, but also reflect light to make the dresses appear even more other-worldly.

Celebrates 5th Anniversary
A student at St Ninian’s High School is to hold an exhibition of his photographs at the Tynwald Library.
The Manx Wearable Art Show celebrates its 5th anniversary on Friday 15th March at the Youth Arts Centre on Kensington Road in Douglas.
Wearable Art was started in New Zealand in 1987 and the Manx version has been held every other year since 2005.
“Whether you have a flair for fashion or a passion for the arts everyone is welcome”, said event organiser Doreen Dixon, “We have seen some fantastic outfits made from all sorts of materials over the years and we are hoping that this year we can attract the best yet! The Douglas Youth Arts Centre will host this year’s event, which will include a live catwalk show, refreshments and live entertainment from Dancexchange. In additional selected items from the catwalk will be chosen to form part of a static display at the Isle of Man Airport for the general public to peruse for two weeks after the show. Wearable Art was started in New Zealand in 1987 and the Manx version has been held every other year since 2005. Local businesses, charities and students from the Isle of Man College have all contributed outfits in the past using fibre, fabric, paper, wood, metal, rubber, plastic, flotsam and all kinds of recycled goods. 14-year-old Adam Peet will exhibit around 20 of his photographs of wildlife, mostly birds, from Monday, March 4th to Friday, April 5th 2013. The exhibition will not only provide an opportunity for the work of this talented young photographer to be viewed by members of the public including celebrated wildlife artist Dr Jeremy Paul but also by visiting parliamentarians from the UK, the Turks and Caicos Islands and Tristan da Cunha.

Monochrome is officially the colour combination of spring. Two simple colours, but endless ways to wear them, as Debbie Haynes reveals.

Do not adjust your sets. Your eyes are not deceiving you: the style world has decided to banish colour in favour of black and white this season. The usual fanciful florals of spring have been left to wilt, pretty pastels are in the shade and bright colours in the bargain bucket. Right now, black and white are the transition double act to ease you between seasons. If you haven’t joined the monochrome movement yet, it’s one of the chicest and easiest trends to work for both everyday or eveningwear. The versatility of monochrome means that there’s also a myriad of ways to wear it, from colour blocking to catwalkinspired checkerboards. Here’s how to be a black and white beauty.

Black with white accents or white with black accents - it’s a simple but bold combination that works every time with colour blocking. The higher the concentration of white, the fresher your look will be for spring/summer.

No ready-made monochromatic pieces in your wardrobe? Create your own look simply by pairing black and white clothing together.
This season’s modern stripes are big and bold, creating an almost nautical look minus the navy, of course. You don’t have to go the whole hog with a Beetlejuice-inspired suit, but stripy trousers or skinny jeans are a big statement if you dare.
Contrasting separates is the simplest way to do this. Team your colours the right way around and you can expect instant figure flattery too. If you’re pear-shaped, for instance, stick to black bottoms and white tops and vice versa to balance out your body proportions.
A dress is a much more versatile piece but beware of the direction of your stripes. Aim to create curves with bold, horizontal stripes and minimise them with vertical, skinnier stripes. If you’re wearing a voluminous dress or top, stick to vertical lines to avoid unflattering optical illusions.
Make your mono a little more subdued with accessories. Those with practically all-black wardrobes can simply inject a subtle flash of white with a two-tone bag or heels.
Linear style looks best when streamlined, so keep your look unfussy and accessories to a minimum to let your stripes do the talking.
Forget looking cool, this spring is all about being unapologetically square.
The trend may not have been ‘spotted’ as much on the spring/summer catwalks but the pop art print is in keeping with the Sixties vibe that designers adopted. White spots on a black background is the most common colourway. To lighten up your look for summer, try switching things up with a black on white reversal. If spots feel too primary school for you, try a black and white leopard print for a print with extra bite.
Take minimalism to the max in uber-bold black and white square checks. Wallflowers may feel more comfortable in a significantly smaller houndstooth check. Floaty shapes can sometimes work out but this geometric look is a far better style equation when teamed with structured, clean silhouettes.

February was a fun month for fashion, with Fashion Weeks in both London and New York showcasing upcoming creations from established and new designers, often paired with suitably theatrical, crazy make-up and hairstyles. Outside of the Fashion Week hype, however, another young talent was cooking up a rather different style storm. Elle Fanning, a 14 year old starlet whose fashion sense is praised by the likes of Vogue editor Anna Wintour, posed for New York magazine’s February edition in a ‘Fantasia’ photoshoot, wearing dresses and headwear made entirely from cake frosting, sweets and lollipops. For the shoot, artist Will Cotton created a world to rival even Willy Wonka’s chocolate factory and decked Elle head to toe in dresses and accessories that look, quite literally, good enough to eat. But while Will and Elle may have got just the right mix of fashion and food, similar ventures into the world of edible wearables and wearable edibles have not always gone down a treat… The 2012 Miss Universe contest saw a number of weird and wonderful outfits grace its stage. Miss Venezuela wore a dress and boots covered in chocolates, topping off the ensemble with a gigantic heart-shaped chocolate box headdress that would put any Valentine’s Day ‘Milk Tray’ efforts to shame. In an outfit perhaps suited to a more acquired taste, Miss Guam wore a bikini and crown made from her country’s rare orange oysters; an act of (likely quite pungent) patriotism that makes Geri Halliwell’s iconic Union Jack dress pale in comparison.

Burlesque star Dita Von Teese recently joined former Miss World Rosanna Davison at an event held by Lambertz, one of Germany’s top confectioners, and looked surprisingly resplendent in another example of cookery couture, a gown made entirely from biscuit trays. It was perhaps a little less refined than Dita’s usual glamorous vintage look, but the outfit was undoubtedly a veritable tin-foil triumph in comparison to an array of metallic monstrosities that graced the high street in 2012. And, of course, who could forget Lady Gaga’s infamous edible efforts? The singer wore her now notorious meat dress to the MTV Video Music Awards in 2010, claiming that she was conveying the message that ‘people must stand up for what they believe in to avoid being treated like a piece of meat’. That’s all well and good Gaga, but there are plenty of ways to change the world without smelling of sweat and steak in the process. Maybe just stick to a good old-fashioned Carmen Miranda fruit hat next time, eh Stefani?

Spinach (12mg in 100g) and red peppers (7mg in 100g) are both good sources. Add some hearty chunks of sweet potato for an extra fix of Vitamin E. Forget ice cream and try a small scoop of coconut oil for afters. Jennifer Aniston was spotted toting the ingredient in her shopping basket. The plant oil promotes supple, deeply hydrated skin and it’s versatile too...
If Christmas leftovers and curries haven’t put you off, turkey is also a healthy dinner alternative. A 100g serving contains nearly 75% of an adult’s Recommend Daily Allowance (RDA) of protein. It’s also low in fat and rich in zinc and selenium - an antioxidant that benefits the skin and immune system. For sides, try carrots: “Rich in alphacarotene and beta-carotene, which convert to vitamin A, this is essential for the manufacture of new skin cells. Chocoholics don’t have to deny themselves completely for dessert. Just stick to the dark stuff, rather than white or milk choc. Good quality dark chocolate, with high cocoa contents, contains a group of phytochemicals called flavonols that can help protect the skin against free radical damage, known to cause wrinkles and anti-ageing.

RISE AND SHINE BREAKFAST ANYONE? From a full English to a fruit smoothie, there are plenty of tasty ways to start your day, yet many of us are still skipping breakfast. It’s time to rise and shine. Time and again we’re told it’s the most important meal of the day, but many of us are still failing to tuck into breakfast in the morning. According to a new study, nearly half of us skip brekkie at least once a week, while 15% of those surveyed never eat that vital early meal. The top reason given was not feeling hungry first thing, while 21% of respondents would rather spend longer in bed.
And one in 10 people miss out in a belief it will help them lose weight - despite breakfast-skippers being twice as likely to munch on crisps later in the morning. The research was conducted for Farmhouse Breakfast Week, which aims to put a stop to these bad habits and encourage people to start the day with a meal. From a full English to a fruit smoothie, there are plenty of tasty ways to start your day. Here are a variety of breakfast options for you to try at home...
4 large Portobello mushrooms 2 beef tomatoes 4 medium eggs 4 slices unsmoked back bacon 2 wholemeal English-style muffins, halved 1tbsp chopped chives
Remove the stalks from the mushrooms and place in a grill pan. Slice the ends off the tomatoes and cut in half to create 2 circle shapes and place in the grill pan with the mushrooms. Place under a preheated grill for 5 minutes each side. Set aside and keep warm. Meanwhile, poach the eggs for 2-3 minutes (one at a time if easier). Place the bacon in the grill pan and grill for 5-6 minutes, turning once until golden and towards the end of cooking, toast the muffins. Stack the bacon on top of the muffins then top with the mushrooms, tomatoes and then egg. Scatter with the chives and season with black pepper. Tip: To poach eggs, bring a wide, shallow pan of water to just simmering. Using the handle of a slotted spoon, swirl the simmering water to create a whirlpool or vortex then crack the eggs, one or two at a time, directly into the centre of the whirlpool.
The breakfast stack
As the eggs cook, use the spoon to keep the water moving and ensure the egg whites wrap around the yolks (do this carefully so as not to break the eggs). After 1-2 minutes, or when the egg white is cooked, remove them from the pan using the slotted spoon and set aside to drain on kitchen paper. For a firm yolk cook for a further minute or so.

200g jumbo oats 75g walnut pieces, roughly chopped (or other nuts, such as macadamia) 1tsp cocoa powder 100g raisins 25g plain chocolate chips
Preheat the oven to 180ºC, gas mark 4. Place the oats, walnuts and cocoa in a large baking tray and spread out evenly. Bake for 5 minutes. Allow to cool. Stir in the raisins and chocolate chips. Serve with milk, topped with sliced banana. Tip: You could swap the cocoa with drinking chocolate and try either milk or white chocolate chips. For added indulgence, add extra chocolate chips or nuts.

Oaty yogurt with nuts Serves 1
25g jumbo oats 1tbsp flaked almonds 1tbsp hazelnuts, roughly chopped 2tsp clear honey
Vanilla honey yogurt smoothie Serves 1
3 dried apricots, chopped
100ml semi skimmed milk
1tbsp dried cranberries
150g low fat natural yogurt
150g low fat natural yogurt
25g bran flakes
Place all the ingredients in a liquidiser or food processor and blend until smooth. Pour into a glass and drizzle over some extra honey to serve (optional).
Dry fry the oats and nuts for about 3 minutes over a medium heat until toasted. Stir in the honey and dried fruit and allow to cool slightly. Reserve 1 tablespoon of the mixture and stir the rest into the yogurt. Spoon into a glass and top with the reserved oat mixture before serving.

50g butter
100g mushrooms, chopped
30g cheese, such as Cheddar or Cheshire, grated
125g self raising flour 100g wholemeal plain flour
100ml semi skimmed milk
Preheat the oven to 220ÂşC, gas mark 7. Grease a baking tray. Heat the oil in a large frying pan and fry the mushrooms for 4-5 minutes until golden. Grill the bacon whole and chop the bacon into small pieces, roughly 1cm. Mix the flours and baking powder in a large bowl and rub in the butter until it resembles breadcrumbs. Stir in the bacon mixture and half the cheese. Mix in the milk to form a soft dough. On a floured surface, roll out the dough to 2cm thick and using a 6cm round cutter, cut out 10 scones and place on the tray. Sprinkle over the remaining cheese. Bake for 10-15 minutes until golden. Perfect for eating on the go, wrapped in a napkin. The scones will keep for 2-3 days in an airtight container. The scones can also be frozen (best to freeze once cooled, on the day they have been baked) so you have a ready supply for busy weeks. Tips: Serve spread with low fat cream cheese, sliced tomatoes or ham for a more substantial breakfast on the go.

Preheat the oven to 200ºC/400ºF/gas mark 6. In a large bowl, mix the yogurt, mustard, Tabasco and a squeeze of lemon and season to taste. Add the chicken to the bowl and turn to coat. Rub 1 tablespoon of the oil over the beetroot and season to taste. Wrap each in foil and roast for 45 minutes or until tender when pierced with a skewer. Cool, then peel and roughly chop. Transfer the chicken to a non-stick baking tray and bake in the oven for 15-20 minutes. Meanwhile, cook the quinoa according to the packet instructions. Steam the broccoli. Mix all the broccoli, beetroots, sunflower seeds, quinoa and herbs in a large bowl. Mix in the remaining 2 tablespoons of the oil and the remaining lemon juice and season to taste.

Place the sweet potato in a medium saucepan and just cover with water. Bring to the boil and cook, uncovered, for about 8 minutes or until very soft. Drain and transfer to a large bowl and mash with the yogurt. Stir in the pomegranate seeds and season to taste.

Meanwhile, heat a grill pan until very hot. Rub the steaks with 2 tablespoons of the sesame oil and season. Cook for about 3 minutes on each side for medium rare. Rest for 5-10 minutes.

Steam the broccoli, then transfer to a bowl. Drizzle with the remaining sesame oil and sprinkle with the chilli. Serve the steak with the mash and broccoli on the side.

Meanwhile, in a small bowl, whisk the dressing ingredients together. In a medium serving bowl, mix the lettuce, spinach, tomato, cucumber, olives and cheese and toss with the dressing. Slice the lamb across the grain and serve with the salad.
Arrange the quinoa salad in 4 bowls and top each with a sliced chicken breast.

Food presentation is most definitely back in vogue and like many fashions has, rather pleasingly, become something of a high art. As such, we at Coast Bar & Brasserie have teamed up to offer you some top tips to ensure you enjoy every second from pan to plate. Before we begin, however, the most important tip of all – balance. Regardless of how ornate, substantial, or simple your menu may be; the art of presentation, like most art, is ultimately subject to taste. Though it may be difficult, don’t let your fear of the white space on your plate tempt you into risking the balance of your dish by adding too much sauce or an imbalance of greenery. It all adds up, and sometimes to too much.
Then it’s on to structure, and the 5th Avenue of all techniques; landscaping. As you may have guessed, this involves layering your dish in a central (or just off central) arrangement, with the option to add a final flourish which really brings out the overall blend of colours and flavours available. This is a great way to make full use of the space you have, particularly for substantial meals, so break out the scaffold. Alternatively, and for the impressionists amongst you, we have the free-form plate, which involves placing your component ingredients in an abstract and artistically disordered manner. It may seem messy at first glance, but this is a great way to encourage your guests to experiment with different combinations of flavours and textures and really explore the plate. Whichever you choose, have fun and express yourself. If it’s pleasing to you, the same will probably go for those of your critics.

any people dream of becoming a winemaker, both those already in the industry and many outside it, as proven by Cliff Richard and Ernie Els!! As in any industry, there are, however, different types of winemaker. As a winemaker in a co-operative or large winery making bulk wine or mass produced wine, the hours will be regular and the job based around the Quality Control lab, where tests will be carried out to ensure that the wine is clean, has the correct levels of sulphur to stop it from oxidising and that it meets the specification of the buyer. There will not be much room for creativity. The wines will go through all the correct processes to make it perfectly clean but each process strips a little more character out of the wine.
The other type of winemaker is one who lives and breathes wine. He or she has a passion and wants to make a wine that will be noticed on the international market, be written about and recognised by leading wine critics, win competitions and stand out from the crowd. These winemakers are often owners or at least have an interest in the winery where they make their wines, and during harvest and while the wine is going through fermentation and maturation, they will be working almost 24 hours a day. They will also subject the wine to fewer processes with the aim of
keeping it as natural a product as they can. The wines will be fined, which is the process by which proteins and certain tannins are removed. A fining agent, such as egg white or bentonite clay is passed through the wine and the proteins and tannins are attracted to it and sink to the bottom. The wine that is racked from this sediment into a new vat is clear and stable. This can remove the necessity of filtration for many red wines, and although, the wine may throw a sediment during the ageing process, it will retain more character. The passionate winemaker does not mind if his wine has a sediment or tartrates because these do not affect the flavour or quality of the wine, and as the wine is not likely to appear on a supermarket shelf, they know that this will be explained to the consumer by an independent wine merchant or a wine waiter. Valenciso Rioja Reserva comes from a Bodega established as recently as 1998, by two winemakers with 28 years experience in a winery in Rioja. They produce one wine a year, aged for 16 months in French oak, none of which is older than 3 years old, and a third of which is renewed each year. Most Rioja is aged in American oak, which gives a stronger vanillin character than French. At Valenciso they are looking to produce a modern style of Rioja with more complexity and depth. Recently awarded 93 points by Robert Parker, this 2006 is harmonious with flavours of cherries, mulberries and dried fig. It is a wine that can be enjoyed now or any time over the next 10 years - if there’s any left!
Chablis Julien Brocard Domaine de la Boissonneuse 2010 Julien’s father, Jean Marc, built up this family estate from 1 hectare to 100 hectares over 30 years and they own some of the finest organic vineyards in Chablis. Julien was introduced to biodynamic ideals while studying oenology, and this fully certified organic and biodynamic Chablis is a stunning example of a wine made as naturally as possible from healthy grapes grown in mineral rich soil, giving a wine of great structure and balance. Better than many a Chablis 1er Cru on the market, it is well worth its price of £19.55. Rudi Schultz Syrah 2010 Rudi Schultz is one of South Africa’s new generation of innovative winemakers. Inspired to make wine after enjoying many a top Rhone red, he studied in Stellenbosch and his main role is now winemaker at Thelema. However since 2002 he has produced a Syrah under his own label, and has been awarded 90+ points in The Wine Spectator for every vintage since that first one. The 2010 is a sleek and seductive wine, with dark berry, black cherry and pepper aromas followed by plum and spicy flavours and a lingering finish. Well integrated tannins and a savoury element make it a great wine for enjoying with game or other meaty dishes.

Sure selected to trial cutting-edge portable energy device technology SURE has been selected by Intelligent Energy - a global power technology company - to trial a hydrogen fuel cell portable energy device. Intelligent Energy has asked Sure to assess the suitability of its fuel cell technology to power various mobile devices. Over the next few months, Sure will ask selected customers to trial the device and provide feedback. The device - which generates clean energy - has been designed to meet a growing demand for portable power driven by an everincreasing need for greater amounts of power for ‘on-the-go’ electronic devices, such as smartphones. A study of mobile users in the UK - conducted by Intelligent Energy - shows that more than 70 per-cent of users find themselves with a flat or near-flat battery on their mobile device at least once a week. Mobile operators across the world are keen to find a solution to the problem of battery power not keeping up with customer usage, so that they can deliver the best user experience, earn the loyalty of their customers and also increase the average revenue per user. “Fuel cell technology presents an attractive solution to powering our devices off-grid, which in turn provides a much longer operating life than a conventional battery. What professional training have you undertaken since you started?
In order to qualify I first need to pass 9 ‘Core Technical’ exams. These exams are designed to provide the technical knowledge required by an Actuary throughout their career. So far I have completed four of the ‘CT’ exams with topics examined covering Economics, Finance, Accounting and Financial Mathematics. I have also completed the Business Awareness course: a two day practical course which improved my understanding of the business environment I am working in as well as the responsibilities and challenges that accompany my role.
What do you do on an average day?
One of the best aspects of my job is that the work is really quite varied, so it is tricky to describe an average day. I would say that a lot of what I do could best be described as problem solving; with most of my work consisting of looking into potential issues, gathering enough information to determine the best course of action and then liaising with various departments in the firm in order to resolve the problem.
What is your next step?
I have my next two professional exams coming up in the next few months, so there may be a few late nights on the cards! Pushing on I am just going to try and get qualified as soon as possible and keep developing professionally. I still have a lot to learn but I’m looking forward to getting involved in some of the more advanced tasks.
What advice would you give to a graduate with the experience you have now?
My key piece of advice would be to keep your eyes open to opportunities and not to doubt your ability to achieve. If you’re not afraid of putting the work in and have a goal in sight then you can succeed once given the chance.

Of course, 360 matters to us because it’s a part of our name, but there are plenty of other reasons why it’s become a number of significance:

If you want to know why there are 360 degrees in a circle, this is a legacy of the Babylonians. They calculated that there were 360 days in a year - not an unreasonable rounding error, for accountants working 4,400 years ago. St Ninian (who kindly gave his name to both a church and a school in Douglas) was born in the year 360. 360 years ago Oliver Cromwell became ‘Lord protector of England’. On 26 September 2008, American Rocky Robinson became the fastest man on two wheels when he recorded a land speed of 360.913mph. 360 years ago, in 1653, New Amsterdam (later renamed New York) was founded as a city. The Ferrari 360 Modena is a two-seater luxury sports car. Both Hayden Christensen (Anakin Skywalker himself) and Matt LeBlanc (Friends’ Joey) are known to be partial to its charms. According to the European Space Agency, the International Space Station weighs 360 tonnes. It takes approximately 360 minutes to fly from London to Saudi Arabia or Dubai. The term ‘360’ refers to a trick in certain sports such as Freestyle skiing, motorcycle stunt riding, ice dancing and acrobatics, where the athlete rotates in the air a full 360 degrees. 360 is a famous model of electric guitar built by the Rickenbacker Corporation. Ah, the joys of office politics. They may not make it onto the front pages of newspapers but they often have a much bigger impact on our lives than actual politics. In the immediate sense, obviously. Anyone who’s worked in an office has tales to tell about awkward (romantic) moments with colleagues, stolen staplers and bosses from hell.

that they’re definitely not for the client meeting in room 402. But equally important is to work out the ownership of mugs. What may look like a nondescript white mug to you may well be the prized possession of Barry from accounting.
If, however, you have had a less than smooth career path and therefore had to do a lot of temping of an administrative nature, then you will understand that certain aspects of office life are replicated wherever you work. This kind of theme is played upon in art and media all the time, from the divisive comedy of Ricky Gervais’s The Office to the outstanding Then We Came To The End by Joshua Ferris. And the success of the office genre just goes to show how recognisable the stereotypical workplace situation is.
Possessive natures are commonplace in the office, something especially noticeable if you’re temping - or a frequent relocator, as I like to call it. And as the flipside to that coin, other people’s stuff is always so deliciously tempting. It’s the same as that inherent curiosity to see the inside of other people’s fridges and bathroom cabinets, the consequences of which can range from the inspirational to the downright alarming. The office desk is often a place which says much about the owner, whether it’s photographs of facepainted children and heart-shaped post-its (cringe) or an impressive amount of stationery organised with military-like precision, each pencil sharpened to within an inch of its life.
The routines, photocopiers, and even the types of people are part reassuring, part mind-numbing in their predictability. Having said that, every office has its own quirks and perks. Often bathrooms are in bizarre locations, and it’s best to suss this out early on, for obvious reasons. Another thing to establish is the whereabouts of the kitchen facilities and also what the rules are when it comes to food and crockery. If there is a plate of chocolate biscuits, it’s a good idea to refrain from helping yourself before finding out
When you are a visitor at someone else’s desk, it’s a bit like house sitting. You have to keep everything turning over, not break the computer etc. If you’re truly hot desking, then you won’t be at someone else’s desk but at an untouched work station in the corner which is shared between the part-timers and visitors. It’s quite a misleading term actually. You’d think that hot desking was an office-wide policy of only hiring attractive people. Or maybe some Scandinavian initiative, encouraging employers to transform their

offices into megasaunas. And even more weirdly, surely if a desk isn’t being used all the time, it should be called a cold desk because having someone sitting there day-in, day-out, would warm it up? A better name would probably be the more accurate “spare desk”. Anyway, back to el punto - when you are a visitor at someone else’s desk, you get to use all their stuff, which is fun. Unless of course they are particularly suspicious and lock everything away in one of those clunky under-the-desk sets of drawers and remove the key. Very unsportsmanlike behaviour. If this is the case, then your first port of call simply has to be the stationery cupboard, where you should take one of EVERYTHING (who knows when you might need blue highlighters/500 sheets of graph paper/200 of those green string tag things). In fact, I would personally recommend doing this on a daily basis anyway, but remember to bring a large bag with you so you can take it out of the building without arousing the receptionists’ suspicion. And you would be surprised at how
well a birthday present of 250 miniature bulldog clips goes down. Especially if you can get them in different colours. Variety is the spice of life. One final point about office politics: it’s also good being a temp because you don’t have to join in all the lame office stuff if you don’t want to, but you get to reap the benefits of the fun office stuff. For example, having to donate money to the whip round for someone’s charity abseiling - it’s OK, because you’re just the temp, you didn’t know, and oh whoops you don’t have any cash with you. Does Brenda take Visa? No? Oh dear...so sorry...hope it goes well etc. But on the other hand - oooh cake Friday! Homemade flapjack? Wow! So sorry, I’m just the temp, I didn’t know...are you sure? Well I’ll just take these five then, and a lemon slice...thank you! Of course, this isn’t the best plan if you’re hoping that one day your temp job will become more permanent, but if it definitely isn’t a career definer...

Lexus announces prices for new ‘IS’ Japanese car maker Lexus has announced pricing details for its new IS range ahead of its summer UK debut. The line-up, unveiled at the North American International Motor Show in Detroit earlier this year, includes the first full-hybrid IS, the IS 300h, together with the 2.5-litre petrol-powered IS 250. Both versions feature rear-wheel drive and will be available with a further evolution of Lexus’s F Sport package. The entry point to the new range will be the SE model, priced from £26,495 for the 2.5-litre IS 250, and £29,495 for the 2.5-litre full hybrid IS 300h. Standard specification for SE models includes 16-inch alloy wheels, cruise control, Dual-zone climate control air conditioning, eight airbags, HID headlamps with light sensing function plus DAB radio and Bluetooth connectivity. At the rear a smart new spoiler adds the finishing visual touch while also improving aerodynamic performance. The cabin design is now more driver-focused than ever. The steering wheel is finished in Alcantara and leather with a red raceinspired ‘top dead centre’ marker, as seen on the Juke Nismo. The sports seats are fully electric with special Nismo badging and red stitching. The finishing touch is a numbered Nismo plate bolted to the centre console. Nissan claims that performance, braking and high-speed stability were all priorities in the Nismo variant’s development. To aid its braking, the high-performance brake lines and fluid were taken from the ballistic GT-R. A Nismo exhaust boosts the aural charm factor for bigger grins than ever. Prices are yet to be confirmed, but are expected to be announced at the car’s unveiling at the Geneva Motor Show in March.
With an extra 16bhp and a whisker of extra torque, the 370Z Nismo is billed as ‘the ultimate Z’. Built as a coupe only and with a sixspeed manual gearbox, a lot has gone on under the skin to make sure that the Nismo version of one of Nissan’s flagship cars lives up to every claim. It will have a unique state of tune and chassis setup to better suit European roads and ‘driving tastes’. Producing 339bhp and 274lb. ft from its 3.7-litre V6, it will pass 62mph from a standing start

Mini is adding another model to its range in the shape of the Paceman, it will be available the Isle of Man from 16th March. Designed as a coupé interpretation of the Countryman, four versions will be available including the Mini Cooper S Paceman which will have a 0-62mph of just 7.5 seconds. The seventh unique member of the family, it will sell alongside the Hatch, Clubman, Convertible, Countryman, Coupé and Roadster. Built on the Countryman platform, bumper to bumper the car is 4,109 mm which makes it almost identical in size to its sibling. The coupe look includes longer doors, blacked-out window pillars with a choice of coloured roofs. The horizontal arrangement of the rear lights, which accentuates the car’s width, is a first for Mini. The Paceman is the only member of the brand’s line-up to be identified by a rear nameplate.
Inside, two individual chairs provide generous levels of head, shoulder and knee room with outstanding comfort and support. Armrests have been integrated into the rear trim. The Paceman is a strict four-seater, though practicality has not been sacrificed. Folding down the rear seats expands the rear load-carrying capacity from 330 litres to a maximum of 1,080 litres. Access is via a large and high-opening tailgate, offering extra practicality for owners. Lowered sports suspension as standard will help provide customers with a sharper driving experience, though regular suspension and ride height are available as a no-cost option. From launch, Paceman customers will have the choice of four powerful four-cylinder engines, two petrol and two diesel. All come with a six-speed manual gearbox, or the optional six-speed automatic with Steptronic function.

GREED AND THE INFORMATION AGE I’m standing in the queue in the Post Office. A long queue. There are at least 8 people in front of me and I’m impatient, because I’m busy. So I take advantage of the fifteen minutes or so that I have to tick off more items on my ever growing To-Do List. By the time I reach the counter, I have sent five emails, two text messages, updated my business Facebook Page and Googled a recipe for dinner. Because this is my life; perpetually on the go, eternally switched on, constantly moving. All from my phone. If you think about how technology has enabled us access to everything and everyone, you’d initially see the positive. It’s cool that I can get stuff done whilst waiting to pay my parking ticket, right? Well, yes... and no. Our constant need for connection and our expectation to have the answers to whatever we want at our fingertips, usually via the Mighty Google, is both productive and distracting. I’m the first to admit I will download new apps or sign up for the beta version of the latest social networks, in the quest to make my life faster, better, more streamlined. Now that we have these tools at our fingertips, we are afraid to miss out on what’s next. And I am not alone. We are all doing it. Our greed for information has never before been so great. In the last 5 years accessibility to whatever we want, whenever we want, has grown at an exponential rate. In 2009, humans produced more data than the last 5,000 years. That makes my brain boggle. And it continues. Twitter counts an average of 110 million tweets per day. Google declares over 1 billion search requests

every 24 hours. Facebook reports users upload 250 million photos and click that oh so powerful “like” button 2.7 billion times, every day. Imagine where this will take us in another 5 years? I know a few people that have reached saturation point, and have, quite literally, unplugged. They only use their phones to send and receive essential information, they do the majority of their work via their desktops and they have unsubscribed from every social network. But the one thing they cannot do without, is the ability to search, find and rely on the internet to give them answers to every day questions and problems. My children don’t go to the library to research and source information, they expect this knowledge to come to them. We can disconnect to a certain extent, but do we really want to? We seek improved broadband connections, so that in our quest for data, we can get it faster. The impact this has had on society globally has, in the main, provided huge opportunity. Connecting through networks and the love of shared data has changed the way businesses and societies think, and by default, operate. We can achieve so much. There is a promise of greater to come. But burnout and distraction from information overload are very real issues today, and learning to consume data wisely is vital if we are to continue to live balanced and productive lives. Your laptop, your phone and your iPad all have an off switch. Use it somtimes.

In only a short time they have achieved gold and silver medals at the 2011 Island Games and qualified for world and Olympic trials in 2011 and 2012. Thomas has broken the IOM 60m hurdle indoor record twice, which had stood for 17 years. He is only 2 tenths away from breaking the 110m hurdle outdoor record which is one of the longest standing IOM records held for 29 years. Hannah has broken the Island record twice. This record was held for 16 years by Cheryl Done who went on to become an Olympian.

The End2End has seen some epic battles in recent years, most notably the wheel to wheel duels between former Olympic mountain biker and four time winner Nick Craig, and Manxman Elliot Baxter who is a five times End2End winner and the reigning champion. But among the 1,700 competitors each year there are always stories of riders overcoming personal challenges just to complete the course. For many of them finishing the End2End, or maybe just making it to the start line, represents the culmination of a long struggle to overcome hardship, injury or illness - or to raise funds for a charity that is close to their heart. It’s a rider who falls into one of these categories who will win a prize being introduced by the new sponsors - The Manx Telecom Merit Award.

DAN KNEEN One to Watch in 2013! Words | James Mc Cann
I
n 2012 young Manxman Dan Kneen will probably be remembered by many for his spectacular crash in the first Supersport Race at the Isle of Mann TT. In 2013 Dan is hoping to change that and make the fans remember him for the right reasons, his race results. Before his big crash in the second race of the TT week Dan had an impressive result in the first Superbike race finishing eleventh on a bike he had hardly ridden. Speaking to me about the race Dan said; “Well to be honest, everything was very last minute with that bike. I only got it built and finished just before that last practise session and I only got one lap on it. I had never ridden it before that so after only one lap in practise, the race was then just a way to see how we go basically. The suspension wasn’t adjusted or anything, we basically pulled it out of the box and rode it so to finish in eleventh and do a 126mph lap wasn’t bad considering. I think if we had a bit more time on it we would have been able to have a decent go at it but as it was I was only able to ride round and do what I could.”

Obviously everyone remembers Dan’s crash in the Supersport race, but before that he was having a great race battling with John McGuinness for fourth. Dan told me; “I was bouncing between fourth and fifth fighting with John McGuinness, I’m not sure what it was but we were struggling with a bit with speed on the Suzuki. We didn’t really have it at the top end, we had to try and punch it out of the corners onto the straights. It was the same kind of thing with the Superbike, we didn’t really have a lot of time on it and we weren’t able to try and bits and pieces on it. So I think I was pushing harder than I wanted to be pushing to get to where we were and that caused the crash, it was just one of them things really.” Coming out of Governors Bridge during the Supersport race Dan hit a damp patch on the road, lost control of his Suzuki and hit a wall, something nobody wanted to see and no doubt it wasn’t what Dan wanted either. Talking to Dan about the crash he said; “I just remember coming out of Governors and I hit a bit of a damp patch on the left hand side of the track. I was using slightly more of the road to try and get a better run out of the corner but it just caught me out and that was that, and before I knew it the bike was ripped out of my hands and I was just a passenger really.” Speaking about the injuries he sustained from the crash Dan said; “They let me out of the hospital after a couple of days and told me I had just squashed a few vertebra but then about a month later after I had another doctor, who was a specialist look at it he told me I had actually cracked four of them so I had to rest and just go from there.”

“I think it was somewhere around six weeks before I was actually able to do much really. I just had to take it steady because there’s no point trying to rush back with an injury like that. In the end you’ll probably damage yourself more so I didn’t rush it.” Dan’s comeback meeting was at the Ulster Grand Prix in August where he picked up a very impressive two 8th place finishes and two 7th places, just two months after his crash at the TT. Dan said; “With the Ulster I was happy enough because I hadn’t ridden a bike from the TT and wasn’t able to set them up, change them or anything like that. We struggled a bit with set up at the TT so we just worked away at it throughout practice and tweaked a few bits and pieces for the races. We had some good races that week, we would have liked to have done a little better in some of them but after coming back from the crash it was good enough.” With having a very impressive year despite his crash at the TT it was easy to see that Dan was well suited to the Suzuki’s and I was keen to find out what his plans were going into 2013, he told me; “This year I’ll be sticking with the Marks Bloom Racing team but I’m still trying to get some sponsors onboard because it can be a bit of a struggle with funds. Maybe this year we’ll have to cut back on some of the meetings and just do the main ones which would be a shame but unfortunately that’s just the way it’s been going recently.” With funds and sponsorship being difficult to come by many riders are sticking to the three main International race meetings, I isle of man premier magazine

The Year Ahead Dan will continue with Suzuki machinery for a second successive season. He hopes to take full advantage of the set-up mastered over the previous year. He will challenge for podium positions at the Isle of Man TT, NW200, UGP etc, and the British Championships. He will be competing on Superbike, Superstock and Supersport machinery.
2013 Sponsorship Opportunities Having already achieved so much, it’s time for Dan to become a regular podium finisher. To achieve his goals he needs additional funding and is therefore offering an exciting opportunity for you to join his already successful team. wanted to ask Dan what races he has plans to do in 2013 and if he would be sticking to the main three or taking in any other races throughout the year, he said; “Our plan was to do the British Championship but at the moment we might be a bit stuck so we might just do a few of them and we were thinking of doing a few of the National Irish Road Races but we’re still not sure yet. I’ve thought about it because we’re going to have to pick and choose the races this year and I was thinking of doing something a little bit different, it would nice to do it for a bit of a change so we’ll see what happens.” With Dan being a Manxman I wanted to ask that if living on the Isle of Man helped him in any way to prepare for the TT and if it has helped him in learning the 37.7 mile long track, he told me; “I don’t know, I suppose it’s easier because the workshop’s here and stuff like that and you can’t really learn it driving around it compared to riding it. You can sort of work out what’s coming next and things like that but as for learning it properly you can only do that once a year and pick out a few new things. People say it can be a big advantage but it’s not really.” With the Isle of Man being such a unique circuit I asked Dan how he and the Marks Bloom Racing team went about setting up for the TT and how they prepare for taking on “The Mountain Course”, he told me; “We do a bit of testing but the thing is you can’t really set up for the TT unless you’re actually because quality matters
riding it. There are very few circuits that are anything like the TT in the way of bike set up, the only one really would be the Ulster. So hopefully the set up we used there can help me with the TT this year.” Dan is definitely a rider to watch for in 2013 and has a very bright future ahead of him. Having a very impressive Ulster Grand Prix and until his crash he was having a great TT, even with limited bike time so heading into 2013 I really wanted to know what Dan’s aspirations are, he said; “I would like to get on the podium at some of the big races, which would be nice. Especially with us being a smaller team and building the bikes ourselves it would be good. We’ll just take it one step at a time, some day I would love to win one obviously but if I was to get onto the podium it would be great for the confidence because I’ve missed out on it a few times like in 2011 in the wet race I was laying in third before it was red flagged and in a few more we’ve had breakdown’s and things but the guys have worked really hard so it would be good for them as well but it’ll come!”
