Pampered into submission?
T
he globe is warming up, the high street is declining and the lunatics are running the asylums now. Yes, yes; we know! We get it; the world is changing. But change can also yield great creativity and the savvy individuals of the world are certainly rising to the challenge. The pampering and beauty industry vultures know how we love to feel broken and overwhelmed and they are all too eager to help us fix our worn out bodies and exhausted minds with a little pampering, they love to gently massage our backs, egos and bank balances with one deft movement and a soft robe. They have well and truly seen us coming with our tortured souls and weary overburdened minds. “There, there, have a facial and a plantbased drink that costs more than a double gin.” Pampering and relaxing, de-toxing and disconnecting all sound very calm and oh so caring but it’s a cold hard business and it has become very crafty recently; its duping qualities are ones that should be greatly admired. In a time of adversity and decline it has shown remarkable resourcefulness as it rinses out its gullible market. Pampering isn’t just about popping on a sheet mask and scrolling through instagram; pampering is all about selling a lifestyle now, a lifestyle where we must constantly reward ourselves and pat ourselves on the back for being so amazing. We are so busy that we simply don’t have time to do anything for ourselves! We don’t have time to buy our own food or cook our own meals or make our own decisions, we must keep fit and pamper ourselves continuously. Truth is, these marketing tactics are really working because we are all clambering to be part of. Yes, that includes you! So what does this mean? Well actually nothing at all to us. We just wanted to make sure that you knew about the emperor’s new clothes and were happy going along with all this “essential” pampering, living your best life shizzle. We won’t judge you if someone else applies your nail polish, makes your sandwiches because you’re far too busy having me-time, or cuts up your fruit because you’re swamped with fake tanning and massaging and need a little pick me up. However, we will say this, you probably should keep a copy of Gallery close by, as a moral compass, or whatever, to guide you through and keep you on the right track. You’re so welcome! SR

I often say that lifestyle journalism is the toughest job of all, right after brain surgery and uranium mining. Whilst you were sitting in your offices, napping in front of Excel, I went all the way to the International Spa Show in Schwakskrotch, Austria to be soaked in exotic muds and then forcibly relaxed by women with severe eyebrows.
I
’ve returned unable to crack a smile, smelling like an expensive teabag, and allegedly looking ten years younger (perhaps forty years in some areas of my body) to inform our beloved readership about the hottest and strangest developments in the competitive world of expensive relaxation. If you assumed that the market for wellness is slow-moving and eternal, like the mighty banyan tree or the wise blue whale, then you’ve clearly never been at the sharp end of the industry - where poisonous TripAdvisor reviews are everyday currency and Gwyneth Paltrow has to maintain an elite corps of bodyguards in case somebody tries to off her with an exploding Yoni Egg. In the spa world you’re only as hot the last time you got tweeted about by a Kardashian, so there’s fierce competition to design the next treatment weird enough to warrant a photoshoot in Italian Vogue. Succeed and you will ascend to a white-jacketed elite that can charge $1000 an hour to decant fruit smoothie into a funnel and pipe it up the wrong end of somebody who owns a helicopter. Of course, there are only so many chopper hoppers to go around, so it’s equally competitive selling luxury to the likes of you and I. Ready, set, wax!

In today’s time-poor economy many of us have come to appreciate the basic things in life - close friends, a shared meal, or curling up with a good book. Personally I work too much to have friends and the majority of my meals come out of a box; I haven’t read a book in years because I need one hand free at all times to text. The needs of the billionaire class have been great for face creams made out of extinct animals, but the biggest growth area in spa world has been through everyday people who promote the service by being unable to turn off their phones, regardless of where the bleach is going. The spa is no longer a place of gentle solitude when the twin forces of hen parties and millennials insist on making sure everybody knows just how much they are enjoying themselves, at all times. Enterprising beauticians have responded with packages where the entire process is streamed online, accompanied by empowering music, custom gifs and a symbolic rebirth as you exit the therapy room by sliding down a hot pink stripper

my exes are all scum. We spent the next day clothes shopping (Marissa agrees I look fabulous), ate sinful desserts at local bakeries, before going back to the hotel to talk about my career and why my mother has always tried to undermine me. Overall I would describe the experience as being like WestWorld, if it were based on a romantic comedy starring Jennifer Aniston. I hope that neither Marissa nor any of the animals had their brains wiped afterwards, but I didn’t check in case it meant I had to leave a bigger tip. CONDITION YOURSELF AT… TOUGHSPA: HARDCORE RELAXATION
Some people understand that relaxation is an essential part of conditioning, but don’t trust a massage that doesn’t hurt, and associate wearing a robe with climbing

into a ring and then getting punched. Some of these people have plenty of money, and where there’s probable concussion there’s a good market in offering a comfortable place to lie down. The new breed of tough spas targets the same audience as premium “man moisturisers”and beard TLC services, offering wellness and cosmetic treatment for men who want to look younger but worry that enjoying a mud mask will turn them into Graham Norton. There’s massage, but it’s delivered either by women who resemble personal trainers or craggy Scottish men in martial arts pyjamas; the treatment room looks like a gentleman’s club and everything smells like artisan gin. Instead of botox, you can get injections of scorpion venom to freeze your features into permanent “blue steel”, as well as a range of “nutritional supplements” designed to imply they can enhance muscles or cure baldness. Some ladies worry that too many visits to the clinic will leave their faces frozen in one expression - but here that’s a selling point as it increases the chance you could get mistaken for Jason Statham. CUTTING EDGE WELLNESS TECH AT… TECHSPA: RELAX 2.0
In 2019 there is no form of economic activity that can’t potentially be “disrupted” by wacky efficiency consultants and a signed delivery of silicon valley investment money. According to the minds behind Tesla and Amazon, relaxation and natural human ageing are inherently inefficient processes and are thus ripe for the same kind of transformation that brought us a bluetooth speaker that spies on you for the government. There’s also a lot of what they call “hierarchical synergy” because most of these companies are run by Monty Burns types who would literally drink your blood if they thought it would improve their golf handicap. This means that using the consumer as a human guinea pig is worth the investment if it increases the odds that the suspended body of a billionaire god-king can reach the Mars colony without getting freezerburned. Try not to think about this when you’re enjoying a facial that you booked with an app, paid for with Bitcoin and was delivered by a machine remote-operated by a factory worker in Kuala Lumpur. It was 35% cheaper - so who cares if the Ts&Cs had a line about allowing the company to back up your memories? My weekend at the Techspa Relaxation node was so pleasant that my computer keeps crashing when I try and say anything negative about the experience; it was so lovely that I barely noticed when I woke up in an ice bath with an MP3 player where one of my kidneys used to be.

A LITTLE PIECE OF HOPE TAKES ON CHARITY SKYDIVE A group of courageous Manx thrill-seekers have jumped 15,000 feet out of a plane, in memory of two very special little girls.
With travel support from the Isle of Man Steam Packet Company, 10 volunteers and supporters of A Little Piece of Hope, a charity which provides financial support and assistance to bereaved parents and children with mental and physical disabilities, took part in a sponsored tandem skydive at Black Knights Parachute Centre in Lancashire over two weekends. Although all 10 jumpers were due to complete the skydive in one session, a fault with the plane meant five had to be rescheduled for the following weekend. The Steam Packet Company offered its support to both trips, providing reduced travel for the intrepid jumpers as they travelled to and from the UK. The skydive was in memory of two precious baby girls who were stillborn, Hope-Samara, daughter of Helen and Phil Walmsley and Esmee-Sue, daughter of Robbie and Sara Quayle. Helen and Phil set up the charity in 2011 after the loss of their little girl, and have since helped hundreds of families on the Isle of Man who have been unfortunate enough to find themselves in similar circumstances.

Helen said: ‘Through dedicated fundraising and events we’re able to offer financial support to families for things like travel to and from UK hospitals, medical equipment and funeral costs. When you find yourself grieving the loss of a child or looking after a baby in need of medical care, the impact on your wellbeing is unimaginable. On top
of that to have to consider the financial implications is almost too much to bear, so we founded A Little Piece of Hope to take a tiny piece of that strain away, and provide them with that small piece of hope. ‘So far the skydive has raised an astonishing £2,000, with final donations still coming in. MANX CARRIAGE DRIVING 4 DISABLED TO EXTEND ITS OFFERING A charity which offers equestrian activities for people who have restricted physical mobility or are wheelchair bound is to extend its activities, thanks to a £5,000 grant from Manx Lottery Trust. The support means Manx Carriage Driving 4 Disabled (MCD4D) can meet the costs of two ponies over the next 12 months to provide carriage driving sessions for pupils of Flexible Learning Academies (designed to support students with learning difficulties) in Island schools. Established in 2014, MCD4D is based at Ballavartyn Equestrian Centre and offers opportunities for people with disabilities with pony and trap. All sessions are conducted under the supervision of an experienced carriage driving coach to make sure drivers have fun at the sessions and, most importantly, stay safe. The project has already been trialled successfully in three Island schools and will now be made available to all Flexible Learning Academies which express an interest. Liz Lillie, Group Organiser for MCD4D, said: ‘To be able to make the sessions more inclusive is super news and a sincere
thank you to the Manx Lottery Trust for its generosity. ‘The benefits are clear and those who have taken part in the past have seen a number of improvements, including stronger muscles, improved co-ordination and balance, as well as working on social skills by making new friends, gaining confidence and having fun throughout the year. ‘We will be contacting the remaining schools and offering them the opportunity for new driving experiences.’
MCD4D, which has carriages with wheelchair facilities and three suitable pulling ponies, will also be recruiting and training new volunteers. Sarah Kelly, Chairman of Manx Lottery Trust, said: ‘MCD4D offers a safe venue for people with a disability and is a great chance for them to drive a pony and carriage, as well as meet new friends. ‘SUPER HERO’ CHLOE MEETS THE MAYOR Chloe Rollitt was guest of honour at a reception hosted by the Mayor and Mayoress of Douglas, Jon and Angela Joughin, to celebrate her success in the Marvelsponsored Super Hero triathlon event when she completed a 150km swim in Dorney Lake, Windsor in August and raised £12,000 for new beds for the children’s ward at Noble’s Hospital. Nine-year-old Chloe, who is a pupil at Ballacottier School, and entered the event dressed as ‘Wonder Woman’, was joined at Douglas town hall by members of her family including her mother Joanne who said: ‘ ‘At BECAUSE QUALITY MATTERS
first Chloe was going to raise money for teddies in the ward but then decided on new beds. Originally she’d hope to raise £4000 but she’s exceeded everyone’s expectations in what’s been a real family effort and a way of giving something back to the community. The support from local businesses and individuals has been amazing and now Chloe’s joined the Dream Catcher Little Star campaign.’

COMMUNITY HUB RECEIVES RENOVATION BOOST FROM MANX LOTTERY TRUST Renovations have been carried out at a community hub in the north of the Island.
SCALING THE HEIGHTS - PWC STAFF COMPLETE ICONIC CHALLENGE After months of training with Fitbit’s at the ready, staff at PwC Isle of Man have completed an iconic 24-hour adventure. A group of 25 colleagues participated in the National Three Peaks Challenge, ascending more than 10,000 feet as they climbed the three highest peaks in Scotland, England and Wales – Ben Nevis, Scafell Pike and Snowdon. Each climb was expected to take up to four or five hours after which they were taken to the next summit by minibus with the support of mountain guides. However, the group managed to climb Ben Nevis (four hours, 31 minutes), Scafell Pike (three hours, 20 minutes) and Snowdon (three hours) much quicker than that.
A total of £6,000 in sponsorship was raised and will be split between two charities: Motiv8 – the organisation dedicated to treating those affected by alcohol, drug and gambling addiction in the Isle of Man – and Cancer Research UK. Paul Jones, Partner PwC, said: ‘This was an amazing achievement by the staff, especially as our guide told us the majority of the groups fail to complete the challenge within 24 hours, simply due to modern traffic conditions. ‘Given that we did so in a time of 23 hours 57 minutes, including a total travel time of 13 hours, is particularly pleasing, especially as the organisers often add 10 and a half hours for travel on top of mountain time, so we completed the challenge in its purest form.
The Manx Lottery Trust has awarded £3,150 to the Local Church Council of Kirk Bride. The old wooden flooring at Bride Church Hall has been replaced for the first time since it was built. Without the work, use of the hall would have been restricted which would have had an impact on regular fundraising activities. Events at the hall include social and charitable get-togethers and annual TT teas which have become a much-loved tradition among bikers and locals alike since 1993. Pamela Kinrade from the Church Council said: ‘We are delighted to be awarded such a generous grant from the Trustees of Manx Lottery Trust. The centre is an integral part of Bride’s heritage so the funding will go a long way towards ensuring we can continue to open to the public and host events, as well as educating visitors on our history.’
LAST CHANCE TO APPLY FOR MANX TELECOM IT’S OUR COMMUNITY SCHEME GRANTS Time is running out for community groups, charities, sports clubs, and schools that want to apply for a 2019 Manx Telecom It’s Our Community grant. Every year the scheme awards grants between £100 and £1,000 which benefit communities across the Island. Over the last 12 years it has helped more than 160 charities, clubs, groups, and other good causes. The closing date for entries this year is September 30, so there’s still plenty of time to apply. It’s a simple and straightforward

process that only takes a few minutes – just go to mt.im/ itsourcommunity and fill in an online form explaining what your group does, and what you want the money for. All of the applications will be considered on merit by a judging panel. Grants can be awarded for a wide range of purposes such as buying equipment, decorating club rooms or other meeting places, or paying to produce leaflets or other materials to promote events – but there are many other possibilities.

It has enjoyed remarkable success over that period, growing from a team of 4 when it first opened its doors in 1987 to a workforce of over 170 today – a workforce that currently age ranges from 18 to 73 The company administers in excess of £17 billion of investments and is currently experiencing unprecedented growth in new business. Anticipating further growth the company is now on the search for the next generation of talent and during the recent summer months welcomed a number of local students to its business as Vicki Hotchkiss, Head of Talent and Organisational Development, explains “this summer we launched a new programme to give local students a flavour of a career with CLI. We wanted to offer something far more than a standard work experience programme. The students that joined us took on real, paid roles that exist within our business, providing them with the opportunity to interact with teams across the company and in some cases dealing directly with customers and financial advisers.” The company took on a total of 16 students across the summer, 11 joining the front BECAUSE QUALITY MATTERS

That’s invaluable knowledge we can then use to shape how we operate, how we service our customers and advisers of the future and how we set ourselves up to provide a diverse workforce with the career opportunities and challenges that are both rewarding and fulfilling”. Keep your eye on it This is one for the smaller children. Little ones love to save things, whether it’s money or Lego bricks – but what’s the point in saving anything if you can’t see your stockpile grow? Using a clear jar instead of an opaque piggy bank provides a visual incentive to keep going and creates a feeling of real achievement.
It used to be that a few games of Monopoly and a lecture about the importance of putting a little bit aside each month was sufficient to teach your kids about money. Not so in today’s economic climate. The way of the world has evolved when it comes to earning and saving - just ask a Millennial how likely they think it is that they’ll ever own property. It’s not easy out there. Surely, then, starting early with some key practical financial advice is the way forward?

2. Control your impulses The odd impulse buy is good for the soul but haemorrhaging money on complete tat at the drop of a hat is not. And it’s certainly not good for the bank balance. It’s about self-control and setting a good example for the next generation. Behaviour is learned and how do you expect your child to respect their money when you’re frittering your own away with little or no thought?
3. The value of hard work As your mother’s old saying goes ‘Money doesn’t grow on trees’. So, show them this is the case. If you have a job you’re already leading by example. Also, instead of simply tossing a note their way as they rush out of the house, make them earn the money in advance and save it for later. Chores are a great for this, and it also means less for you to do, so it’s a win/win.
6. Create a budget The importance of creating and sticking to a budget cannot be overestimated. And this is an easy one to introduce at an early age. There are always things a little person wants from the toyshop, but can they afford it? Regular pocket money is the easy solution here. The difficult part is sticking to your guns when the wheedling begins. Don’t cave, they can wait another week.
4. Hold them to account As soon as they’re old enough, open them a Post Office or a Bank Account. Don’t just deal with all the admin yourself, however, make sure they are involved in the process from start to finish. If they’re a bit older, make them responsible for their own bank card. Above all, explain the consequences of the term ‘overdrawn’!
7. Invest in the future One for the older kids. It’s likely to be a hard sell, given you’re dealing with people who find picking their own clothes up off the floor exhausting, but they’ll thank you in the long run. Take their saving a step further and suggest they look into investments. It’s worthwhile learning about the stock market and how to make it work for you. When they realise it’s possible to make their money grow, they’ll listen.
5. Save with purpose Saving for little treats here and there is great but why not ask your kids to take responsibility for some of the bigger things in life? Thinking ahead is a vital part of money management and every young person has some big milestones coming up for which it would benefit them to prepare. What do they want to save for? A car? University? A house deposit? They’ll understand the satisfaction of having made a contribution.
8. Avoid the plastic Time to get hypocritical. There are very few of us who haven’t used a credit card at some time in our lives. Luckily, most of us know that we’re not spending ‘free money’ and manage to settle our bills regularly. The message here is to use credit cards or borrow money sparingly. The delayed gratification involved in saving for and then paying for something outright is a much better feeling than that sinking in the pit of your stomach when your borrowing snowballs. 9. Don’t worry, be happy Social media is blamed for pretty much everything these days. Where it used to be rappers, flaunting their gold jewellery and cars, now its online influencers sporting top brand clothes and accessories. It’s an image not wholly based in reality and it’s worth teaching your kids this. Aspirations are great but they shouldn’t get in the way of enjoying what you already have. 10. Just giving Show your kids that money isn’t a just one way street. Receiving money is undeniably great but giving can be massively satisfying too. Money does make the world go around but it only works if those who have some of it share it with those who don’t. Giving to charity is a good way of reinforcing the value of those notes and coins your child has accumulated.

Supporting economic growth was the theme of the Isle of Man Chamber of Commerce gala dinner at the Villa Marina.
G
uests from across the business community attended. It was a chance to reflect on the successes achieved by the Island’s biggest business network over the past year, and look ahead at Chamber’s future plans to support economic growth. Guest of honour was renowned after dinner speaker Graham Davies, aka ‘The Presentation Coach’. The gala dinner took place two days after Chamber’s AGM which was when Caren Pegg was officially appointed as Chamber’s President.

The practice Foster Lomas has completed a unique house set in a 7-acre site on Sartfell Mountain, Isle of Man. The retreat is the result of a unique collaboration between the clients - a retired scientist and a retired teacher with a broad range of specialisms and interests in insect neurology, zoology and biological science, the architect Foster Lomas and the local charity Manx Wildlife Trust. The clients’ commitment to the project was borne out of their deep respect for the island’s new status as a UNESCO world biosphere region. The project forms part of a master plan whose vision will see the addition of a Visitors’ Centre, serving as an important educational platform about biodiversity, recently granted planning permission. The design of the retreat is constructed using drystone walls, meticulously executed by local craftsmen. The walls weave through the site and are embedded with a three quarter open bed to allow local ecology to inhabit the voids. This creates a synergy with the land, reinforced by the use of stone harvested from the site.

The careful attention to the characteristics of the existing nature can be seen in all aspects of the design. A weather station was installed on the site a year prior to construction to gather important data, ultimately driving the form of the building. Carbon-capturing hay base and native wildflower planting create the house’s biodiverse green roofs, complementing the drystone walls and further blending the dwelling with its environment. The new construction arranges the bedrooms on the lower ground level accommodation, where deep reveals puncture the walls demonstrating the mass of the 620 mm walls. On the upper ground level, the living floor engages with the expansive views across the landscape and as far as the coast, with a ribbon window reminiscent of a scaled up bird hide. The windows are set back and framed with Corten steel plate, preventing solar gain and reducing reflections. All the spaces are ordered around a staircase core forming a triangular plan which cunningly houses the library. Running throughout the three levels, the ‘Knowledge Centre’, as the library has come to be known, is at the heart of the scheme. It signifies the long-term vision that the clients have for the place and for future generations of scientists, educators and wildlife enthusiasts. The drama of the staircase is topped with a clerestory which frames the study whilst capturing the shifting light of the island throwing shafts of luminescence into the core and animating the concrete interior. The poetic orientation of the staircase aligns the ascendance with views up to the

mountain, whilst the descent directs views down into the valley. The original Manx cottage, a local landmark named ‘Cloud 9,’ next to the new construction, was taken back to its original form and is fully disabled compliant. The clients are planning the second stage of development to construct a Visitors’ Centre on site to ensure the care of ecosystems vulnerable to climate change. Acid bogs on site, for example, home to rare orchid species, have been susceptible to ploughing which releases carbon monoxide. The Visitors’ Centre, also designed by Foster Lomas, was granted planning permission and is due to go on site in 2019. ISLE OF MAN PREMIER MAGAZINE

NOT HAPPY WITH YOUR HOME? THESE ARE HOMEOWNERS’ TOP 10 GRIPES They say a happy home comes down to who you share it with, but, according to a new survey, there’s an awful lot of other aspects too. The research, commissioned by nested. com, found that more than half of those quizzed (53%) says they’re unhappy with where they live, citing everything from cramped interiors to poor parking as reasons.
NUMBER OF BEDROOMS (53%) Room-related quibbles take up our second spot too, and how many bedrooms your home has is apparently almost as important as how large they are. Recent history shows a similarly downward trend - from a peak 3.58 bedrooms per household in the 1980s, the modern UK home now averages fewer than three.

Nationally, Leicester houses the most unsatisfied customers, with a table-topping two-thirds of respondents from that region dreaming of a move. London comes next with 65%, and the south coast city of Plymouth comes in third, with 64%.
LOCATION (52%) The traditional market leader, for many homeowners, it’s still all about location, location, location. And it’s not just a mantra for estate agents - location has long topped the wish lists for house-buying Brits.
At the other end of the scale, in Belfast, only a quarter of residents are planning to up sticks in search of the perfect pad, followed by 40% in Edinburgh, and just under half in Brighton.
In a 2015 survey by Santander, a third of Brits said that being close to work was their number one residential priority - ahead of space, investment potential, and even being near family.

SIZE (57%) For many Brits, a spacious home is a bucket-list item, but UK homes started shrinking in the 1970s and have been getting gradually smaller ever since. According to research by LABC Warranty, the average Seventies living room clocked in at 24.89m2, which became 21.33m2 in the Nineties, and stands at just 17.09m2 today. For space-starved citizens, it’s now a hotbutton issue. The people have spoken: Size matters.

PRICE (50%) Money talks and always has, but these days it’s practically shouting. Government stats released in June showed that the average house price in the UK was upward of £230,000, while roughly half of all wealth in the UK is tied up in property, far and away the highest in the G7. Compared with our American and European cousins, Brits like to own rather than rent, and value houses over flats. That may be fine if you got on the property ladder in 1980. In 2019, not so much.

PROXIMITY TO GREEN SPACES (46%) Cited by nearly half of all respondents, it appears the public is finally waking up to
the power of a daily dose of green. Earlier this year, a joint study by the Universities of Newcastle, Warwick and Sheffield found that living within 300m of green space was more important to mental wellbeing than more conventional factors like income.

PARKING (38%) This one’s a no-brainer: If your car is your primary mode of transport, you’re pretty stumped if there’s nowhere to put it. Expect this figure to fall as private car ownership slowly gives way to car clubs, congestion charges, and expanding public transport networks.

ACCESS TO PUBLIC TRANSPORT (31%) On the other side of the coin, public transport is creeping up in popularity. Official 2018 figures clocked a record 270 million journeys by tram or light rail, while the 1.71 billion National Rail journeys represents a 149% rise since 1985.

PROXIMITY TO GOOD SCHOOLS (29%) So often the given reason for urban families moving to suburb or countryside, being near a good school ranks pretty high.

LOCAL JOB PROSPECTS (23%) Some people get a job and have to move, but others move and then have to get a job. We reckon this one speaks for itself: No job, no money for a nice house.

COMFORT FOOD & WINE MATCHING WHEN IT COMES TO FOOD AND WINE MATCHING MOST WON’T GIVE IT A SECOND THOUGHT AND WILL SIMPLY DRINK THEIR FAVOURITE WINE NO MATTER WHAT THEY’RE SERVING UP, BUT THERE IS A SKILL AND A SCIENCE BEHIND IDENTIFYING PERFECT PAIRINGS. WITH THE NIGHTS DRAWING IN AND THE TEMPERATURE DROPPING, NOW IS A GREAT TIME TO GO THROUGH SOME BASICS, USING COMFORT FOODS TO DEMONSTRATE.
First, you need to understand the golden rule of food and wine matching: food and wine must complement and interact with each other, rather than drown each other out. Second, avoid the palate killers. Vinegar is at the top of the list so whilst one of the ultimate matches is Champagne with fish and chips, leave the vinegar on the shelf otherwise it becomes an expensive mistake. Eggs are another key one to avoid (in spite of the number of people that seem to want to drink wine with an omelette) and mayonnaise will also massively dull your palate. Lastly a wine will never taste worse than it does after an apple so avoid at all costs. Onto the main principals. Consider flavours that go together: salmon with lemon and pepper is a popular combination, but instead of using lemon, choose a citrusy wine like a Chablis to do the same job. This is also an example of the chemical reactions involved since the acidity in the wine cuts through the oiliness of the fish. If you were to match a full-bodied red wine to the same piece of salmon the resulting flavour would be highly metallic, as tannin (the drying sensation in red wine and black tea) clashes with oil. However, protein softens tannin so a full-bodied red is more at home with mature cheese or a nice steak. There are a few one-size-fits-all
wines that interact with a multitude of complex flavours; Viognier is a superb example. You may learn that Chardonnay goes well with chicken, but a poached chicken has different flavours to a roast chicken so consider the cooking method to balance flavour, intensity and richness. Thus, an unoaked Chardonnay pairs poached chicken better whilst an oaked Chardonnay suits a roast chicken. Finally, consider sweetness levels; sugar coats the inside of your mouth and so a sweeter white wine is great at cooling your mouth down with spicy food. If you prefer to enhance the spiciness of your food then you’ll need a full-bodied, tannic and spicy red like a Shiraz. If choosing puddings then you’ll need a dessert wine to stand up to it, or in the case of Pedro-Ximenez sherry (think black treacle) and ice cream - to pour over it! Onto the live examples… It is hard to even consider comfort food without thinking of Macaroni Cheese. For this you need an unoaked, but nonetheless creamy, Chardonnay such as our Domaine Talmard Macon Uchizy from Burgundy:

Crisp, with ripe melon, pear, lemon oil and almonds, creamy with a lovely green apple freshness. Steak is an effortless meal to rustle up and seldom tastes better than when served alongside an Argentinian Malbec. Try pairing this with the Zuccardi Serie A from the Uco Valley, a wine that both looks and tastes purple: Bursting with blackcurrant and plum aromas. Full-bodied with rich black cherry and chocolate notes and a velvety finish. Food and wine tend to evolve as part of every country’s culture and Italy created the perfect wine to match their rich tomato, meat and cheese based cuisine - Chianti; for Lasagne, Spaghetti Bolognese, Pizza etc. Why not try our Mazzei Ser Lapo Chianti Classico Riserva: Cranberry, raspberry, and red cherry with hints of leather, smoky cedar, thyme, and cocoa powder. Shepherd’s Pie is another favourite and pairs beautifully to a fuller-bodied Merlot. A great mix would be the Morgenhof Estate from South Africa: Smooth, rich and luxurious, full of black cherries, mulberries and mixed spice. Enticing and supple with dark chocolate and soft tobacco. Ourfinal recommendation is for all you curry lovers out there. Chicken Tikka Masala is the most popular for which you want a white wine with a little sweetness to it. Our popular choice of the moment is the Novas Gran Reserva Riesling from Chile’s Bio Bio Valley: Medium-dry led by fresh lime, with tropical notes of grapefruit, pineapple, peach, apricot and honey. DRINKING TO DOWNTON A lavish cocktail compendium, “replete with recipes, cocktail trivia, historical notes, and excerpts from the show”, The Official Downton Abbey Cocktail Book celebrates this sumptuous costume drama and golden age of mixed drinks. Here one to try at home... 1. Clover Club Developed by barman George Boldt, who owned Philadelphia’s Bellevue-Stratford Hotel on South Broad Street, this frothy and delicate drink is named for a local men’s club that met regularly at the hotel from the late-1800s to the early-1900s.
Ingredients: 30ml gin, 30ml dry vermouth, 15ml fresh lemon juice, 15ml egg white, 15ml raspberry syrup, 1.5 barspoons simple syrup. Method: Combine all the ingredients in a shaker and shake hard for 10-15 seconds so the egg white froths up and emulsifies. Half fill the shaker with ice, re-cover, and shake hard for about 10 seconds longer. Strain into a chilled coupe glass. Libation note: Although this drink doesn’t traditionally come with more than its frothy head as a garnish, try it with a mint sprig, slapped between your hands in a clapping motion to release the aroma before dropping it into the glass.

When DEFA invited Selasi Gbormittah to be the VIP guest at this year’s Isle of Man Food & Drink festival, they were really on to a winner. Semi-finalist in 2016’s Great British Bake Off, Selasi is a regular visitor to the Island for TT as a spectator but not, as he told me, with any danger of taking part: “I’m too competitive, but also too laid back, which is a very dangerous combination,” he laughed. “And anyway, my mum would kill me!” Selasi’s road to Bake Off fame wasn’t an overnight success story. “I started cooking when I went to university,” he told me. “Food and mealtimes are a big part of my Ghanaian culture and I wanted to share the food my mum had always dished up for the family with my house-mates.” And always on in the background was Masterchef. “I suppose I liked the competitiveness – great cooking, great recipes and eventually a winner!” Baking came later. Alongside his Ghanaian/Masterchef diet, Selasi started to follow The Great British Bake Off and, now working for Deutcshe Bank, every week he recreated the recipes for the bank’s charity bake sales. “My friends and colleagues kept telling me I should enter,” he says, “so I did, and didn’t even get an audition.” But

he didn’t give up: “it just meant I had to try harder, refine the recipes and make more cakes!” And in 2016 – with Mary Berry and Paul Hollywood as judges – Selasi was one of the chosen 12. “What you see on TV is just a snapshot and I was still working at the bank,” he told me. “It was three days in the office, two long days filming and then practice bakes all weekend.” But did he enjoy it? “Oh yes – it was an amazing experience and I was doing what I love, baking. And I made some life-long friends,” he says, showing me the group WhatsApp messages from that very morning.

He’s also climbed mountains and run marathons for charity (he is currently an ambassador for World Vision UK) – offsetting his sweet tooth with serious exercise. And he’s also set himself baking challenges, most recently with a scholarship to the Culinary Arts Academy in Switzerland. “It was a bit like going back to school and on day one I completely misjudged it by turning up to class in a suit and tie,” he laughs, “and the tutor looked me up and down and asked me if I thought I was really meant to be there! Some people might have given up there and then but I’m really glad I didn’t as although my experience on Bake Off showed me that there was no single right way to bake, in Switzerland I learnt what are actually pretty basic techniques. I think Mary and Paul would be pleased to know that I’ve finallylearnt how to smooth icing without creating air bubbles!”
“We were all under the same pressure, and every week there were dramas. I have recurring memories of the week I left myself just five minutes to do some really intricate piping on a 3 tier cake. That clock doesn’t stop for anyone!”
Since following his own Masterchef heroes around at Food Festivals all those years ago, Selasi now knows what it’s like to be on the ‘celebrity’ side, and, just as we met, he was approached by some star-struck fans asking him to a party that night. “I love the Isle of Man!” he laughed. “That wouldn’t happen anywhere else! Every time I visit I’m made to feel at home and today is no different, I feel like part of the festival, not just a guest. If I hadn’t eaten far too much of the local produce on offer I’d enter the Hot Dog Eating Competition, but I’d have to go all out to win and I couldn’t do it justice today, so I’ll just have to come back!”

Hay Roasted Back Saddle of Manx Goat Recipe by: Tyler Livesey, Jean-Pierre’s Bistro - Winner of the Isle of Man Chef of the Year competition sponsored by Robinson’s
(Serves 2) Ingredients n 2 Back Saddle cut of Goat n 200g hay n Salt and pepper (to taste) n Manx Ellerslie Rapeseed Oil n Sumac
Method Firstly, you will need to marinate your Goat back saddle with the rapeseed oil, sumac, salt and pepper (overnight strongly advised). To start, preheat your oven to 180°C. Pan sear the marinated meat and put it in a parcel of tin foil with the hay inside. Cook for 8-12 minutes, depending on your cooking preference and allow to rest once cooked.

As Manx as the Hills Recipe by Vladimir Dvorak – Harbour Lights at the Sefton
(Serves 2) Ingredients n 3 sheets of savoy cabbage n 500g Manx carrots n 1 bunch of mini carrots n 1 Manx onion n 3 Large Manx potatoes n 3tbsp Laxey Flour n 2 Manx eggs n Fillet of Manx Lamb n Manx Lamb shoulder n Manx Lamb mince n 4 stalks of celery n Isle of Man Creamery butter n 200ml Isle of Man Creamery cream n 3tbsp corn flour n Drizzle of olive oil n Salt and pepper (to taste) n Staarvey Farm rosemary (to taste) Method Braise the lamb shoulder in a low oven for 6 hours, pull apart. To make the lamb jus, fry diced onions, carrots and celery in olive oil until the onions are transparent.

Add in the Manx Lamb mince and cook until done. Add lamb stock from the braised lamb shoulder and thicken with corn flour, seasoning to taste with rosemary, salt and pepper. Chop and boil the carrots, drain and season, add butter and cream and then blend until smooth.
“This is one of my favourite local ingredients and we use it regularly in the restaurant.”
Use the mixture of lamb meat and vegetables and press it into the savoy cabbage sheets, glaze with the thickened lamb jus and finish for a few minutes in the oven right before serving. Boil potatoes and pass through a sieve, mix in flour and eggs and season to taste. Roll into gnocchi logs and shape with a fork. Poach gnocchi until logs float in water then cool. A RECIPE FOR THE PERFECT CUPPA: WHERE TO SAVOUR SRI LANKA’S TEA COUNTRY HIGHLIGHTS By Melissa Jones
The Indian Ocean island is a glorious landscape of views and brews, says Melissa Jones. It’s a source of constant debate and disagreement, but the secret to a perfect cup of tea lies in the preparation. First, you need the appropriate tools china cups with dainty handles and a bulbous pot with enough room for satisfactory swirling; then the tea itself - fresh leaves rather than dusty tea bags; and lastly, a heavy dose of patience - because good things come to those who wait. Sat in the flower-filled gardens of Camellia Hills, where emerald tea plantations roll into the horizon, I’m watching the experts at work. Brits may account for some of the world’s most enthusiastic brewers, but when it comes to the art of tea-time excellence, Sri Lankans are true masters. Although originating in China, tea quickly became part of the Indian Ocean island’s national psyche when commercial crops were introduced in the heady days of 19th century colonial Ceylon. The British Empire inevitably faded, but the tea industry only continued to grow, and today it’s one of the many special bonds connecting English travellers to this part of the world. Earlier this year, when Sri Lanka was rocked by terrorist blasts on Easter Sunday, there were outpourings of sadness and sympathy from the British public; it was a situation made even more heart-breaking when the Foreign and Commonwealth Office implemented a travel ban. So when the green light was finally given to travel again in June, we were right at the front of the queue, making amends the only way we know how - by putting the kettle on and making a good cup of tea. If you want to savour great brews flavoured with the glories of Ceylon’s colonial past and Sri Lanka’s colourful present, take a tour of these high-grade tea country boutique hotels. Meet tea-time masterminds at Camellia Hills, Dickoya A four-hour drive inland from capital city Colombo, Castlereigh Reservoir is an idyllic scene of gloriously green valleys gushing with waterfalls, where colonialera churches sit comfortably alongside brightlypainted Hindu temples. Perched on one of the best viewpoints, the Camellia Hills bungalow was originally founded by Englishman L Kelly in 1875, although now it operates as a five-bedroom boutique hotel. Days start early with a sunrise boat ride on the Castlereagh Lake, accompanied by local fisherman, but the pace picks up with a white-water rafting ride in Kitulgala. There’s also a chance to visit the Tea Leaf Vision School, a non-profit organisation offering free employment skills training to the local community. Get a warmhearted welcome at Goatfell, Nuwara Eliya Open fires roar in this four-bedroom house which once belonged to the superintendent of a tea estate - a welcoming warmth on cool evenings at a high elevation. Snuggle up with a hot water bottle and slip into a deep, peaceful sleep, waking up to a sherbetorange sunrise as mist rises above cloud-kissing city Nuwara Eliya in Sri Lanka’s Central Province. A trip to the Pedro Tea Factory provides an education on the production of classic blends, while a walk through the plantations offers a snapshot of a profession practised for decades. Watch women pluck the freshest buds and pack them into baskets strapped to their backs. Enjoy the views at Nine Skies, Ella Laidback hill-town Ella swings to its own woozy beat, with ethnic cafes and hippy hang-outs creating a traveller vibe. Every spot makes the most of the superb views, and it’s easy to lose hours gazing at tumbling valleys and blue skies. But the best panoramas are reserved for guests of Nine Skies, a five-bedroom property set within several acres of private gardens; play croquet, go swimming or laze on a sun deck. Watch trains chug along the Demodera loop, or hike to Mini Adams Peak and zipline over the Ella valley. Reset you rhythm at Kumu Beach Exploring Sri Lanka’s tea country is relaxing, but who can resist ending a holiday with a trip to the coast? The 10-bedroom Kumu Beach is located on a secluded stretch of sand between fort town Galle and Colombo, on the west coast of Balapitiya. Sri Lankan interior designer Annika Fernando wanted to create a sense of calm in the sea-facing hotel, where guests can set their rhythm to the rise and fall of the ocean’s swell. It is built around those who are either new or experienced in aesthetics and Dr Bell concluded that as greater regulation looms for the aesthetics industry: “I can guarantee it will become industry standard.”
