The spaghettini, clams, peas and chilli plate at Dilly Dally is as pretty as a picture, especially when you’re eating it outside, on a balmy evening with all of Subi doing its thing around you. Whether it’s the festive season or just a long, sunny day in February, you’ll always find the cafe’s best seller on the menu - crispy fried calamari with aioli. Nostimo!

RESTAURANT CALEB 23 Railway Road Chef Caleb Azuka has injected bursts of colour on his plates after opening his self-named restaurant this spring. The rooftop restaurant’s Instagram feed is a kaleidoscope of vivid hues. It’s as if an entire art class was given free range to decorate the kitchen with purple edible flowers garlanding spaghetti and slow-cooked roo ragu. There are huge scallops in their shells, surrounded by sun-yellow sauce and napped in a claret-coloured jus. Then there’s the insanely fruity cocktails to sip under the big blue Perth skies as DJs spin the beats on weekend nights. Italy may be the cuisine

upon which chef Caleb draws his inspiration, but there’s a healthy shot of modern Aussie in his summer menu as well. He holds cheese-making classes too, pulling long sheets of mozzarella before your very eyes.

LULU LA DELIZIA 5/97 Rokeby Road If you’re looking for a quiet get-together, maybe choose another venue. Lulu La Delizia self-describes as ‘not a library’, so for a raucous night in the company of some of the Perth’s best pasta, this is your go-to place. Expect exuberant, confident use of extraordinary produce – like scarlet Northcliffe marron embracing a pile of fazzoletti (folds of thin pasta, like handkerchiefs) drenched in butter, or a crown of creamy burrata with unripe nectarines and Chardonnay vinaigrette. Come for the rowdy room, stay for the sensational cooking.

I suggest you try the Chef Selection, eaten in the alfresco area at the front of this popular venue. The banquet menu for Christmas ($65 per person) is the perfect way to feed the masses in style, with a whistle-stop tour through Morocco, Lebanon and other sun-kissed parts of the Middle East. Think tajine and spiced saffron pilaf, slow-cooked black garlic lamb shoulder with smoky eggplant purée, syrup-drenched pastries and memories for miles. It’s summer dining done right. 8

BE FREE ORGANICS 9D/531 Hay Street From tragedy, something beautiful has been born. Be Free Organics was created by husband and wife team Caillan and Alessia Richards after Alessia’s father was diagnosed with an incurable brain tumour. The pair turned to organic food to help ease his suffering and struggled to find much choice in Perth. Sadly he lost his battle in 2018 but the pair believe their dedication to providing him with nourishing, organic food in his last months added precious time. Be Free Organics opened earlier this year – right in the middle of COVID-19.

Undaunted, the couple have created a Scandi-inspired space for organic food and eco-friendly products to shine. Many are locally produced too - cutting down

on food miles - and recycling and reusing keep cups and glass jars are encouraged. The range of homemade ready meals - frozen and fresh - is inspiring and

The deli counter is a source of inspiration too (especially if you love cheese). It’s the perfect one-stop shop if you’re putting together a special New Year’s postparty feast and we strongly encourage you to pick up some of Aimee’s sweet bakes for that sugar hit once you’ve left the dancefloor.

Depending on the size of your soirée, they have capacity for up to 50 and you can reserve an area, half the venue or entire venue with no venue hire fee. There is a beautiful decking area out the front which can also be booked and is lovely for summer evenings. With grazing boards, bites and bigger options like sliders and skewers, this is a good choice for a relaxed get-together. Got the morning after blues? Try the Bloody Mezcal where they’ve ditched the vodka and added a shot of Vida Mezcal instead to sort you out with a hair of the dog.

In one of the most anticipated rejuvenations of the year, Subiaco Hotel has thrown its doors open to a new era, just in time for Christmas. Owners Dave Allan and Lawson Douglas bought the hotel last year and have spent the past 12 months revitalising and restoring this grand old lady, yet maintaining the venue’s architecture and 123-year-old heritage. Inside you’ll find new dedicated function spaces including Mezz Decks which float above the revamped courtyard space offering

privacy from the hustle downstairs. There’s also the Sky Deck, a revamped roof space for up to 30 people. I can’t wait to see what the menu will be like - still a secret at the time of going to press. The smart money’s on slick service and inventive cocktails if their other venues are a benchmark.

With rooftop views perfect for summer sunsets over the city, Storehouse at the new Vibe Hotel Subiaco is a welcome addition. Chef Mark Eskdale (ex-The Reveley) has been cooking around the world for 15 years, working under Michelin-starred chefs, and is now bringing his ethos of using fresh, local and sustainable produce to Subiaco. It’s best described as contemporary Australian, with food that is humanely

and sustainably sourced. For summer festive celebrations there are spritzes in the sunshine, including The Supritz, a pink watermelon and ginger twist on an Aperol Spritz or Jungle Bird (dark rum, Campari, fresh pineapple and lime). The wine list is loyally focused on wonderful Western Australian producers across our Great Southern and south west regions.

of options for functions and parties for your very own corporate village residents. With lots of room to spread out if you’re with a crowd, including private rooms, The Village Bar can cater for small groups of 20 people to cocktail parties for 200 with a large selection of grazing

boards, as well as cold and hot platters to make your work party memorable. If a sit-down meal is more your scene, their food menu is pretty expansive, from shared plates, to pasta and pizza and there’s plenty to keep veggie villagers happy too. There’s also an eclectic wine list which includes many Australian favourites and a wide selection of bottled and tap beers to quench a summer thirst.

COME AS YOU ARE

If a bar’s at capacity almost every night, then you can bet the owners are doing something right. Gail Williams meets Juanita’s head chef Luke Foyle. Images TABARAK SALMAN

W

hen Luke Foyle took over Juanita’s humble kitchen, he felt like he had stepped into a pair of comfortable old slippers. What made him so happy was a sandwich press, a domestic hotplate and a bench top deep fryer, all vastly different to the equipment he used in a former life as a fine dining chef at one of Perth’s top restaurants. (A)lure at Crown Perth was where, as a teenager, Foyle mastered the art of cooking with sous vide machines, teppanyaki grills, pizza ovens, blast chillers and blade flame cook tops. But 14 years on, while

labouring day and night with his two business partners to freshen up their new bar venture, he rekindled his love affair with Subiaco and chucked his ego out the door. And without any whizzbang gadgetry or industry awards to vie for, he’s as happy as a puppy with a pig’s ear. “I was born in Subi and lived here until I was two before the family moved to Albany,” he says. “So coming back was like coming home. I couldn’t be happier than I am now. I love the community atmosphere here, regulars dropping in

who have become friends. And I love churning out the food I like with the basic equipment I have got.” Foyle – and his business partners, Jeremy Diaz and Anthony Princi who he previously worked with at Bivouac – are part of a new breed of hip hospitality dudes breathing new life into Rokeby Road while discovering its many charms.

When the trio bought Juanita’s from Murray Gill and Juanita Hille last December they found themselves in good company – Patrick Ryan and Jeremy Prus (Dilly Dally), Paul and Jaycinta Zammit (Lady of Ro), Dave Allan and Lawson Douglas (Subi Hotel) and, most recently, Larry Cherubino (Cherubino’s City Cellar). What do they all bring to the ‘Make Subi Cool


Again’ party? Truckloads of hospitality cred, that’s what. Foyle’s resumé alone reads like a flow chart for culinary caché with references from some of the most respected operators around. It goes back to 2006 when, on the day he passed his driving test, he set off from Albany with little more than a chef’s hat gleaned from Albany’s Esplanade Hotel. He was quickly scooped up by (A)lure restaurant, which was rated one of the best in Perth at the time. “I finished my apprenticeship there under

Sean Marco who was a huge mentor to me,” says Foyle. “I still make one of the dishes sometimes at home, the lobster ravioli, which people still talk about.” The experience equipped him with all the sophisticated cheffy skills and techniques to guarantee him a job almost anywhere. But his career took a casual Mediterranean turn when Michael Forde approached him to work at now defunct Mt Lawley’s Cantina 663. “I fell in love with that style of restaurant,” he says. He’s also done stints

at Ace Pizza, Joe Beef in Montreal, The Old Crow in Newcastle Street and Mrs S in Maylands. But he’s perhaps best known for his Middle Eastern-inspired share plates such as goat shoulder braised in master stock, roasted eggplant and grilled haloumi at Bivouac. And that’s how, while working at Subiaco’s Lulu La Delizia, he was offered a chance to join his former bosses in what he calls “this crazy Juanita’s venture”. “I got a phone call from Jeremy saying this site had become available and asking me to go for a drink here,” he says. “I told him he had lost his mind. It wasn’t our vibe at all. It was full of brica-brac. It was all cluttered and cramped. Jeremy’s got this great power of seeing potential in things, while I can deal with the here and now and just focus on the labour and be the workhorse. But I trusted his instinct and here we are.” The trio threw themselves into repainting the walls, redoing the floors, opening up the side room and adding more couches and tall tables. “As we worked, I started falling in love with it,” says Foyle. “It’s an old house which had been turned into a corner art supplies store, and then Juanita’s. It just started to take on a life of its own.” And, it seems, the regulars have also fallen

in love with him. People from all walks of life and all demographics fill the 100-seater on a nightly basis. Along with the 82-year old lady who can sink a pint of beer faster than any tradie, it’s not unusual to see Little Creatures founder, Nic Trimboli and his wife, Rose, take up a leather couch, or Adam Gilchrist and wife, Mel, popping by to say “hello”. Subiaco councilor Murray Rowe is a familiar figure along with former Perth City Councilor Rob Butler. And it all adds up to one big friendly party with people table hopping and doing their best to talk bartender, Gianni, into making them a margarita. “We generally don’t do cocktails but if a customer wants one we will get them to ask who’s on to see if they will make one for them,” says Foyle. “That’s how we roll.” With limited kitchen space and minimum equipment Foyle has kept his menu brief – it’s listed on the blackboard along with the wine selections. There’s his signature duck liver parfait, a charcuterie selection and sliders. There’s also a definite focus on European wines along with the usual suspects such as New Zealand or Australian sauvignon blanc, chardonnay and French rosé. Our motto is “come as you are and drink what you like.” Sounds pretty good to me. EDITION 3 | SUMMER 2020

lunch, visiting celebrities, colourful entrepreneurs and a legion of die-hard faithful locals. So, it’s no wonder the beloved old gal, the Subi Hotel, was feeling a little bit jaded when – after five decades at the helm – lease holders Judy and Michael Monaghan called time. Along came Dave Allen and Lawson Douglas, two energetic young guns who were itching to revitalise one of their favourite watering holes from their student days. Not only do they share a passion for history and hospitality, they also know how to pull a perfect

After a worldwide increase in pubs closing down they are now enjoying a renaissance. sh . . . Subi! Psst! Quiet please! There’s a grand old lady about to retake centre stage on the corner of Hay Street and Rokeby Road. And she deserves your respect because this ain’t any old lady. This one’s been around for 123 years. She was pouring pints for thirsty timber workers when Queen Victoria was on the throne and serving sherries in her ladies parlour before Edmund Barton became Australia’s first Prime Minister. She’s played host to emerging rock bands, dart competitions, ladies who

pint and connect with their customers – part of the job description for any publican. They’ve worked that formula successfully at other historic pubs – the Rose Hotel in Bunbury, the Exchange in Kalgoorlie and their most recent venture, the Treendale Farm Hotel in Australind. Says Douglas: “The

the building a new lease of life all we have to do is deliver a good product.” After taking over the Subi in September last year, they rolled up their sleeves, closed down the joint after COVID-19 restrictions were implemented, and have spent the past couple of months applying the finishing touches on their 12-month revitalisation project. And the doors are about to open on this reimagined iconic landmark – not with a bang or fireworks – but with a quiet gathering of Subi locals who have watched the transformation with interest. “No, we won’t have a big launch,” says Douglas. “The venue opens the week of November 30 to locals, hopefully all of Subi. After all, it’s their pub.” Douglas is reticent to put a ball park figure on the cost of the refurbishment which was carried out by Melbourne firm Technē Architecture and boasts a mix of contemporary and heritage in new entertaining spaces, two mezzanine decks above the old courtyard, a saloon and sports bar, bistro and a roof deck. And for those who complained about the upstairs bathrooms from the last renovation, yes, they have been moved back down to the ground floor. Douglas is also staying mum on the other hotly anticipated question: who is the chef?

“No comment,” he says. “But expect gastropub food with healthy contemporary options. The point of difference will be everything will be made in-house from pickles, to sauces, stocks and dressings. We will support local producers such as Stirling Ranges beef, local Berkshire pork and our own bakery which started out in the Subiaco markets years ago.” On the menu will be burrata salads, poke bowls, steaks and parmis, Fremantle sardines and seafood pastas. What no bangers and mash? The Subi favourite for over two decades?

A historic landmark According to Curtin University’s library, which along with the Subiaco Museum houses some historic images and documents of the Subiaco Hotel, the original plan for the venue was ‘drawn on linen, hand-coloured with some pencil alterations and shows elevations to Hay

What’s your go-to place for a morning coffee in Subiaco? What do you always order? You’ll find me at Little Rokeby Cafe most mornings, probably with our three pugs in tow. What other suburb could you walk around with a “grumble” of pugs and not get strange looks? I always order a small oat milk flat white and most times, three dog biscuits plus possibly a cinnamon scroll (they have the best ones in Perth). You’re meeting friends for dinner – where do you head to? I think the company at Bistro Felix is pretty special, Jeremy is quite a character and he’s a bit of a Subi legend. I reckon over the last two decades I’ve tried just about every eating spot in Subiaco and can generally recommend places to eat based on cuisine and cost. For example, I lament the loss of Funtastico for the unavailability of their pizzas but also know Delisio is very good. What are you looking forward to during the festive season in Subiaco? Spending time at my friends Larry and Winnie’s new cellar door, Cherubino City Cellar. It’s a venue that will really add something unique to our Subiaco community,sitting in Rokeby Road. .

What do you love about Subi? There are too many things to name as really I’m the suburb’s biggest fan but here’s five: 1. The Subi Farmers Market 2. The Subi Tram called Ruby.

3. The Subiaco Theatre Gardens. 4. Dog walking on Rosalie Park early in the morning. 5. The Jacaranda blooms in October and November.
