A QR code on Taste the Dairy Difference promotional materials in retail outlets will lead directly to the mobile site, where consumers can access additional recipes. Cheesy Mediterranean Salad
Chilled Raspberry Yogurt Soup
Makes 4 servings
Makes 4 (6-ounce) servings
Ingredients: 4 cups cottage cheese 1 tablespoon olive oil 2 tablespoons fresh lemon juice 1 cup Roma tomatoes, diced 2 tablespoons red onions, finely diced 1 teaspoon smoked paprika, plus more for garnish
Ingredients: 2 cups fresh or frozen unsweetened raspberries 1 cup vanilla yogurt 1 cup milk Juice and zest of 1 lemon (about 2 tablespoons juice and 1 1/2 teaspoons zest) 1 to 2 tablespoons light brown sugar, packed, to taste
Directions: In medium bowl, mix all ingredients with a spoon. Let stand 10 minutes and sprinkle with additional paprika, if desired.

Sweet and Crunchy Cream Cheese Spread
Garlic Lime Yogurt Sauce Makes 4 servings Ingredients: 1 cup plain yogurt 1 clove garlic, minced 1/4 cup fresh lime juice 1 tablespoon fresh ginger, minced
Makes 2 1/2 cups Ingredients: 1 cup small curd cottage cheese 1 8-ounce package cream cheese, softened 2 tablespoons honey 1/4 cup walnuts, chopped 1/2 cup raisins
Directions: In small bowl, mix yogurt, garlic, lime juice and ginger. Cover and refrigerate at least 30 minutes or up to 2 days. Drizzle garlic lime yogurt sauce over top of your favorite grilled vegetables, such as asparagus or zucchini.
Directions: In medium bowl, combine all ingredients using a spoon or electric mixer; mix well. Cover and chill 4 hours or overnight. Serve with toasted bagels, toast or muffins.

S’more Ice Cream Cake Makes 10 servings Ingredients: 1 3/4 cups graham cracker crumbs,* divided 1/4 cup sugar 6 tablespoons butter, melted 1 rectangular container (1 1/2 quarts) chocolate ice cream 10 ounces mini marshmallows Chocolate sauce, if desired Directions: Line a broiler-safe 8x8-inch glass or metal baking dish with foil and grease with butter.

Sour Cream Green Curry Salmon Makes 4 servings Ingredients: 1 1/2 pounds fresh salmon fillets with skin on one side (4 to 6 ounces each) 1 tablespoon olive oil Salt and pepper, to taste 1 teaspoon Thai green curry paste* 1 cup sour cream 1 tablespoon fresh dill, chopped
Directions: Brush fillets with olive oil and lightly season with salt and pepper. Bring broiler or grill to medium heat; brush broiler pan or grill rack with olive oil. With rubber spatula, spread curry paste on bottom of small bowl.** Add sour cream and dill; blend well with paste. Spread sour cream mixture over fillets and grill or broil 5 to 10 minutes, until salmon is done, turns pink and begins to flake. *Available in Asian sections of most supermarkets or specialty food stores. **Curry paste is very dense; spreading on the bottom of a bowl will help incorporate it into the sour cream.

Cheese Stuffed Grilled Portobello Mushrooms Makes 6 servings Ingredients: 6 large portobello mushroom caps 3 bottled roasted red peppers, halved 18 ciliegine (cherry size) Wisconsin Fresh Mozzarella balls 1 1/2 cups (6 ounces) Wisconsin Fontina, shredded 1 cup panko-style bread crumbs with herbs 1 teaspoon Italian seasoning
Directions: Brush outdoor or indoor grill rack with olive oil. Clean portobellos and place face down on large platter so you can place filling inside the cap. Top each mushroom cap with one roasted red pepper half, followed by 3 Fresh Mozzarella balls. In medium bowl, toss together Fontina, bread crumbs and Italian seasoning. Divide mixture evenly among caps, pressing down lightly. Place mushroom caps directly on grill; grill 5 to 10 minutes or until cheese is melted and mushroom is soft.

Ice Cream Over Grilled Pineapple Makes 4 servings Ingredients: 1/2 cup Key or other fresh lime juice 1/2 cup light brown sugar, packed 1 pineapple,* trimmed and cut into 1/2-inch thick slices 4 large scoops vanilla bean ice cream Chocolate sauce, optional
Makes 4 servings Ingredients: 1 tablespoon olive oil 1/4 cup plus 1 tbsp adobo sauce,* divided 1 pound jumbo shrimp (10 to 12 count) 1/2 cup sour cream 1 teaspoon fresh lime juice 2 tablespoons poblano peppers, finely diced
Directions: In shallow dish, combine lime juice and brown sugar; mix well. Add pineapple, stir to coat; cover and marinate 30 minutes or more. Caramelized Creamed Corn
Fresh Mozzarella and Prosciutto Sandwich
Makes 4 to 6 servings Ingredients: 8 slices (8 ounces) bacon 1 tablespoon butter 1/2 cup onions, thinly sliced 4 cups corn, fresh or frozen 1 cup sour cream 1/4 teaspoon cayenne or red pepper 1 tablespoon fresh basil, chopped
Makes 4 sandwiches Ingredients: 1 cup mixed red, yellow, green peppers (julienned) 1/4 cup prepared balsamic vinaigrette 1 tablespoon fresh tarragon, chopped 8 slices hearty bread (such as roasted garlic or rosemary), toasted 4 ounces prosciutto, thinly sliced 1/2 cup prepared olive tapenade* 8 ounces Wisconsin Fresh Mozzarella, thinly sliced
Directions: In large, nonstick skillet over medium heat, fry bacon until crisp. Remove to a cutting board, coarsely chop; set aside. Melt butter in large skillet; add bacon. Add onions and cook over medium-low heat, stirring occasionally until onions begin to brown and caramelize, about 10 minutes. Add corn, sour cream, pepper and basil; mix well. Cook over medium heat until bubbling. Serve immediately.

Vanilla Yogurt French Toast Makes 6 servings Directions: In shallow bowl, combine yogurt, eggs and vanilla with a spoon; mix well. In large nonstick skillet, melt 1 tablespoon butter over medium-high heat. Dip bread into yogurt batter and place in heated skillet. Repeat until skillet is filled with a single layer of bread slices. Cook until golden, 2 to 3 minutes, then flip and cook an additional 2 to 3 minutes. Remove to platter and keep warm. Melt another tablespoon of butter in the skillet, and repeat until all slices are cooked. Sprinkle slices with sugar and serve warm. *You may substitute honey, if desired.
