You’re a devoted fan of creamy guac and trendy avocado toast. Learn why there’s even more to love about avocados.
It seems everyone’s talking about avocados these days. These rich and creamy fruits (surprise, they’re fruit!) have a mild buttery flavor and are easy to mash, dice, and slice for a quick-and-healthy menu addition and an awesome snack. They’re so packed with nutrition you can put avocados right into the superfoods category! If you’re new to avocados, here’s the skinny on why they’re healthy and how you can add them to your day: 1. TAKE IT TO HEART: Avocados contain a heart-healthy 5 grams of monounsaturated (“good”) fat to help lower LDL cholesterol and reduce the risk of heart disease. The majority of fats in your diet should come from monounsaturated or polyunsaturated sources and 75% of the fat in avocados are these “good” fats. 2. FILL UP WITH FIBER: Just one serving of avocado offers 11% of the Daily Value for fiber to promote healthy cholesterol levels, improve digestive health, and stabilize blood sugar. With more than 10 grams of fiber, avocados have more fiber than almost every other fruit. 3. GET YOUR VITAMINS: An avocado is a vitamin powerhouse! It’s rich in vitamin C to support strong bones and teeth and high in vitamin E to support a healthy immune system, and it supplies vitamin A to promote healthy vision. You’ll find more than 20 vitamins and minerals, all-important for a healthy immune system

4. PICK A PERFECT ONE: 95% of the avocados you’ll find are the California Haas variety with bumpy skin that turns from green to purple-black when ripe. To test for ripeness in the store, place the avocado in your palm and squeeze your entire hand, checking to feel the fruit’s give. If it’s tight, it’s probably not ripe yet. If it yields to pressure and springs back in shape, it’s a good pick. If it yields and doesn’t spring back, it’s probably overripe. Still unsure? Try this foolproof method for picking a ripe avocado for immediate use: Try to pry off the stem. If it comes off easily and you see the beautiful green of the fruit beneath, it’s ready. If the stem is difficult to remove or you see yellow or brown, the avocado isn’t ripe yet. 5. USE IT NOW OR LATER: For Haas avocados, the darker the fruit, the more ripe it is. The lighter green the fruit is, the less ripe it is. If you need an avocado in a few days, buy it when it’s dark green and heading toward a purple-black color. You can let it ripen right on your countertop. Or buy them early and ripen them yourself. Place avocados in a brown paper bag to speed up ripening or in the refrigerator to slow the process. 6. CUT AND EAT: Avocados are truly slice and eat. Cut the avocado in half from top to bottom through the peel and around the pit, then twist the halves apart. Place the half with the pit on a cutting board and slip a spoon between the pit and the fruit and gently remove the pit. For slices, use a paring knife to slice the flesh inside the peel; for cubes, cut across the slices, then scoop out with a large spoon. If you need to store an avocado half, drizzle it with lemon juice and wrap it tightly with plastic wrap. Use firmer avocados for slicing and cubing for salads and sandwiches, and use softer, more-ripe ones for guacamole, smoothies, and other recipes that call for mixing, pureeing, and blending.

SOARING INTO SPRING ANNUAL BIRD HOUSE DISPLAY AND SILENT AUCTION
Late winter’s lingering cold will soon give way to blooms and birdsongs. Greet spring with a tour of the Annual Bird House Display and Silent Auction. This is the tenth year for the event, which started in 2009, by woodshop members to raise money for the Benevolent Fund. In recent years quilters and crafters have donated beautifully handmade items consistent with a bird theme. Plan now to visit the Village Square Indoor Park from February 1-28, in order to get your dose of bird beauty, combat that spring fever, and place bids on items that pique your interest. Scores of unique bird houses are on display, along with quilted and other handcrafted items. The silent auction bidding ends at 5pm on Wednesday, February 28. Plan now to visit the Village Square Indoor Park before the end of the month. The unique items in the silent auction make nice one-of-a-kind gifts to usher in the start of spring. Thank you to the members of the woodshop, quilters, crafters, cross stitchers and other talented residents who have created and donated items to raise money for the Benevolent Fund.

Eun Hee Jang, International Volunteer Exchange Program (IVEP) with Mennonite Central Committee (MCC) invites you to her monthly Culture Class. Eun Hee will share about herself, her family and her country. Join her as she talks about people, culture, marriage, religion, politics, the school system, weather and food. Exploring the similarities and differences between the USA and her homeland of South Korea, Eun Hee welcomes everyone to participate.
FRIENDSHIP AROUND THE WORLD Written by Juanita Fox, GSV Storyteller
Eun Hee Jang has a goal for her year in North America: to try a different kind and flavor of potato chips each Friday. She’s already decided she doesn’t like salt and vinegar chips! But, she loves whoopie pies. And she’s been enjoying her time in New Holland ever since she arrived in August. Another goal for her year in North America is to make many new friends. She’s well on her way! She greets everyone who passes her with a genuine smile and hello. Eun Hee says, “I know that the people who live here are very kind. I will do my best to make friends with everyone.” Eun Hee spends her time at Garden Spot Village serving in a variety of departments. On Mondays and Wednesdays she works with Lorrie Westenhoefer in Theraputic Recreation. On Tuesdays and Thursdays she works with the chaplains and participates in the Catholic Communion. On Fridays she works with Colleen Musselman in Life Enrichment, taking trips and helping in other ways. Eun Hee’s journey to the United States started two years ago when she attended the Christian Forum for Reconciliation in Northeast Asia in Hong Kong. The event was co-hosted by Mennonite Central Committee (MCC) and Duke Divinity School’s Center for Reconciliation. Her interest in peace studies and connection to the peace movement in South Korea made a year with MCC’s International Volunteer Exchange Program (IVEP) an ideal fit. In addition, she desired an opportunity to live out her beliefs in a new environment. After Eun Hee received a Master’s degree in Religious Studies and Catholic Theology in February 2017 the time was right to spend a year in North America. She applied to the IVEP program and was assigned to Garden Spot Village. Eun Hee lives in Gunpo, a city close to Seoul, with her parents, married sister and nephew. Her brother-in-law stays with them on the weekends. She says, “We live together. It’s our way to respect our parents in Korean society. Also, in the case of a married couple working double-income, like my sister and her husband, grandparents often take care of their grandchildren.” When Eun Hee returns to South Korea next summer she hopes to continue her studies, integrating theology with peace studies. Until then, she will be spreading sunshine with her smile and making new friends wherever she goes.

IT’S MARATHON TIME! We’re planning and getting ready to host all the runners, family members and spectators. The marathon is a wonderful event that does a number of things. It helps people see Garden Spot as an active, engaging and different kind of retirement community. Personally, I believe the marathon significantly contributes to our high occupancy. As all the volunteers interact with people they get a very comfortable feeling. They tell others. They send them to Look & Learns and we’ve had some runners return after the fact and join the future resident list. It’s amazing as a community engagement event and it brings people from all across the country and from around the world. Secondarily, the proceeds go to the Benevolent Fund and it has increased over the years. If you have any kids, grandkids or anyone else you know who likes to run, we are looking for more registrations. Plus, Volunteer Services is looking for more volunteers. It’s an exciting day and well worth volunteering. People love to interact with you and they particularly appreciate your hospitality.

For 41 years she has been a pastor’s wife, Bible teacher, conference speaker and soloist. Along with Ruthie’s motivational style and humor comes a deep message taken from the Word of God that she prays will be life-changing.

A single mom, Winnie works hard to provide for her sons. Trevor recently had surgery to help him walk. Thanks to surgeons at CURE Kenya he will soon be running to chase his dreams. Supporting a Friend in Skilled Nursing By Marcia Parson, BSW, Healthcare Social Worker
How many times are we asked “How are you today?” and we answer “Fine!” when we aren’t. If you have ever had a short term stay for some rehabilitation after surgery, you may have been asked “So, when are you coming home?” For many, the question can be quite simple but for others who may not be able to return home, it may be a very hard question to hear and answer. We know that sometimes our bodies may not cooperate with getting better. Listed below are some helpful statements to help avoid the “When are you coming back?” question. INSTEAD OF… TRY… When are you coming back to your apartment? How long are they going to keep you? Don’t let them keep you there.
How are you doing? I understand therapy can take some time. I’m sure you are doing your part to get stronger.
By changing how we ask a question, we allow our friends to feel successful and positive regarding their needs and where they are living. I would also suggest visiting your friends while they are in Skilled Nursing, so they can continue to feel connected.

It is time to think about getting your 2017 tax returns prepared. Unless you have a complicated return or have high income, you can have your returns prepared, for free, by a GSV resident who has been trained by VITA (Volunteer Income Tax Assistance) through the Lancaster United Way. To schedule an appointment, call Resident Services (6000). The returns are prepared on Thursday mornings, February 1 through April 12 in the Chapel Parlor. Don’t wait until you get all the information, slots fill up quickly, so make your appointment soon. If you have a brokerage account that sometimes sends revised information, make your appointment for March 15 or later.

Topic: The Wonderful World of Bernard Langlais. Although most do not know or remember Langlais, his work is well worth seeing. As a trained painter, his first love was wood. A major success in New York in the mid 1950s, he gave it up within ten years and moved back to his native Maine. Once there, he created commissions for income but focused on unique primitive-like wood carvings of animals and various public figures for himself. Surprisingly, this is why he is remembered. Come and learn about this unique art form by a very unusual man. All residents are welcome to attend this multi-media presentation.
