St. Patrick’s Day Recipe: Irish Stew Ingredients
• 2 lb boneless, beef chuck roast cut into 1-inch cubes • 1/4 cup unbleached, all-purpose flour • 1 tsp salt • 1/2 tsp black pepper • 2 tbsp olive oil • 1 onion finely chopped • 1/2 cup beef broth • 1 bay leaf • 2 cup baby carrots • 4 russet potatoes peeled, and cut into 1-inch chunks
Instructions
• Place the beef cubes, flour, and salt and pepper in a large ziptop bag or bowl. Seal and shake to coat all cubes with flour or stir gently. • In a large skillet, heat oil until shimmering. Add the beef cubes and brown on all sides. Do not crowd meat in pan. Do this in batches if your pan is not large enough to accommodate all the meat at one time. As the meat browns, remove it to crockpot. • Add the onions to the drippings in skillet and sauté until tender. Add the onions to the crockpot. • Stir in the beef broth and bay leaf. Cover and cook on LOW for four hours. • Add the carrots and potatoes and stir gently to combine. Cook on LOW for another two to four hours or until meat and vegetables are tender. • Adjust the seasonings with salt and pepper to taste.

Catching Up with Our Seniors
Thanks to those who completed the Catching Up with Our Seniors survey sheet. We loved your responses and wanted to share them with all of our other seniors! Below are some awesome highlights from what some of our seniors have been up to since the Senior Center has been closed! J. Eubank “Working senior center packet puzzles, watching old Western movies and lots of traveling on YouTube” B. Kilpatrick “I have four girls and one of them is here each day of the week in the morning, so if the weather is nice, we go for a walk” W. Baker “Clean the yard, decorate my pecan tree, read books, and put puzzles together” M.L. Preston “My family has gotten closer, more discussions, more opinions are listened to” A. Jeannet “Raking leaves and trimming bushes in the yard, bird watching, and walking my dog Lady Bug” B. Lancaster “I ride my exercise bike twice a day for a total of six miles, chair exercises and walk outside when the weather is nice” L. Cook “I try to make myself busy with gardening and crochet, I also attend church activities online” Many of you may remember Miss Lizzie Traylor – who last visited our center in March 2019. She is one of the several centenarians (she is now 108) who participated in center activities. She liked to come on Mondays and Fridays to play BINGO, have lunch and visit with others until her daughter or grandson picked her up in the afternoons. During the recent snow storm, like many others, Miss Lizzie and her daughter were without power for several days and came to one of Garland’s warming centers. It was wonderful to be reacquainted with Miss Lizzie. Although her health is not as good as it used to be, she still remembers being at GSAC and playing BINGO. If you remember Miss Lizzie and would like to send her a letter or card, her daughter said they would be much appreciated. You can send them to us and we will make sure she gets them.
