Delivering the nutritional benefits of oats in a beverage can be quite challenging due to the fundamental functionality of oats. Tirlán have overcome this, through the manufacturing of Oat-Standing™ Functional Oat Flours and by demonstrating its performance in various applications.
1. Solubility
Through our unique hydrolysis process, Tirlán’s OatStanding™ Functional Oat Flour delivers the ability to solubilise oats at a higher inclusion rate, with the added benefit of nutritional fibre present. Oat proteins have the highest solubility in an acidic environment, therefore making it the perfect ingredient for a breakfast or lifestyle beverage. Initial high shear mixing on the introduction of the functional oat flour is recommended, to ensure full powder dispersion, followed by constant agitation for at least 15 minutes, prior to the addition of other ingredients.
2. Stability
Tirlán’s Oat-Standing™ Functional Oat Flour naturally contains high levels of dietary fibre, therefore, the inclusion in a beverage can make a valuable contribution to the current recommended daily fibre intakes.3 As Tirlán’s OatStanding™ Functional Oat Flour contains both soluble and insoluble fibre, it is recommended to add a stabiliser prior to homogenisation to ensure stability during processing and during shelf life.
3. Viscosity
Tirlán’s Oat-Standing™ Functional Oat Flour demonstrates the ability to maintain low viscosity at higher inclusion rates in beverages when subjected to heat treatment i.e. pasteurization, ultra-high temperature processing (UHT) or retort.
4. Clean flavour
Using the highest quality Irish oats, a beverage acidified to pH <4 allows for lower heat treatment while ensuring microbiological safety without compromising on the silky, smooth mouthfeel and clean oaty flavour.
