This year has been unpredictable and certainly not what any of us imagined. Challenging doesn’t even begin to describe what many of us have been through! However, I have personally witnessed the true resiliency and spirit of community in La Quinta in a whole new way because of these circumstances. I am so proud of how families have come together to lend each other support when starting back to school in a completely unprecedented way, and how our residents have made an extra effort to shop local and keep our small businesses afloat. I’ve heard inspiring stories of people finding new ways to help each other and connect when doing so is more difficult than ever. Eric Rias, Fitness and Healthy Lifestyle Coach

Staying fit and healthy has become more of a challenge over the past few months. With gym closures, finding creative ways to stay fit has been a must. We sat down with fitness and healthy lifestyle coach and La Quinta resident, Eric Rias, to discuss meeting this challenge. What do you do? I am a fitness and healthy lifestyle coach. My background is body building and weight loss, sports nutrition, mobility, and fascial stretch therapy. I help people shift into a healthier life by focusing on nutritional programming, where we find the eating style that works best for each individual. Nutrition works in concert with custom workout programming that’s sustainable and enjoyable in addition to stress management skills through journaling and mindfulness. How did you get into fitness? Being a sober man and mental health advocate, fitness was my introduction to personal development. Two weeks into recovery, I started physical training. I quickly realized that if I did the next indicated step, ate well, and was consistent with my training, I would change, physically and emotionally. That was a metaphor for the trajectory of my entire recovery. I have supplemented my health and fitness certifications with continued education in nutrition and the mind-body connection. The same principles apply in every aspect of my life. Be patient, do the work, and we change. What is a fitness and lifestyle coach? I consider myself a healthy lifestyle coach in addition to fitness coach because we’re making lifestyle changes. Healthy body is more than just being aesthetically fit. A healthy body is well fed and moves regularly. A healthy lifestyle isn’t just eating and training, its healthy thinking. The goal is to observe and access a healthy relationship to body and mind. That is what a fitness and healthy lifestyle coach does for and with each client. Can you give us a few workouts people can do at home? Yes, of course. I have a library on my site, Bigmoodcoach. com, where you can find workout execution videos to show you exactly how to execute the movements. Let’s start with a simple body weight workout: Workout 1 • Body weight squats -15 Reps

Even if someone doesn’t lose 1 pound, if a meditation or mindfulness practice is adopted, we’ve succeeded. Meditation is one of the most difficult disciplines, as we all know, but the benefits pay dividends. Stress management, emotional well-being, re-wiring of neurochemistry and, if you choose, a spiritual practice, will change your life forever. This isn’t my opinion. The scientific evidence is available to all of us. This changes the game! Is there anything you would like to add? I often say, everyone deserves a healthy life! Healing isn’t a luxury item. I think, culturally, we have to shift that perspective. When we show up for our health and wellness, the way we show up for our families, our careers, and ourselves, improves. White Fish Ceviche Ingredients: 1lb White Fish (choice of sole, tilapia or basa) 1 1/2 cup diced tomato 1 cup diced red onion 1/4 cup fresh lemon juice 1/4 cup fresh lime juice 1/4 cup fresh orange juice 1/3 bunch of cilantro

Instructions: Cook fish in oven at 350º for 12-15 minutes, let cool, put aside and chop your tomatoes, onion and cilantro. Combine all ingredients in a bowl then add lemon, lime and orange juice as well as salt & pepper to taste. Let chill for 20 minutes. Enjoy with tortilla chips or favorite crackers *For added acidity to elevate flavor, add a teaspoon of ketchup

Chicken Breast Chashu This recipe is low in calories and high in protein. Ingredients: Skinless chicken breast Water 500cc Salt 80g Kelp 15g Black pepper a pinch Instructions: Making Chashu sauce first. Add salt to warm water

and let salt melt, then add kelp and black pepper. Wait for 10 mins. Put the chicken breast and some Chashu sauce in the freezer bag with the sauce covering the chicken breast. Boil the water at 65-70 degrees Celsius, then put the chicken in the freezer bag in the boiling water for 45 minutes. After this is done, leave it in ice water to cool down.

Easy and Fresh Salsa Verde (measurements yield salsa for about 8-10 enchiladas) Ingredients: 1-1/2 lbs Tomatillas 1 bunch Cilantro 1 Serrano Chili, cut off ends 1-2 cloves garlic, pressed/chopped ¼ onion, chopped Salt & Pepper to taste ¼ cup sesame oil Pinch of pepper

Instructions: Peel, wash and cut tomatillos, place in blender add about 1 cup water, blend on high until mixed; add cilantro, onion, garlic, Serrano Chili, salt and pepper; blend all… if too thick, add a bit more water, blend well. You don’t want salsa too thick or too thin, sauce thickens as it cooks. Place in pot and bring to full boil, reduce heat and simmer on low about 30-45 minutes (stir occasionally).

City Manager’s Message By: Jon McMillen, La Quinta City Manager Hello La Quinta and welcome to September. As we see temperatures begin to lower and our children returning to distance learning, we would like to wish our students well during this unique school experience. City improvement projects are moving forward, virtual events are becoming more common, and new businesses are opening in our Gem of the Desert. Please join us for a Virtual 9/11 Memorial Ceremony that will take place on Friday, September 11, 2020. This will be the 19th anniversary of the tragic event. Once again we will remember and honor the 2,977 lives lost and the first responders with a virtual memorial. Event details can be found at www.laquintaca.gov. The City of La Quinta is working with the business community to create a temporary outdoor area for businesses during the COVID-19 crisis. We want to ensure that businesses have more operation options, while also meeting all public health and safety guidelines. We are pleased to have some new businesses coming to La Quinta. A create-your-own pizzeria called Pieology will be opening next door to The Coffee Bean and Tea Leaf in the Pavilion at La Quinta Shopping Center. It is expected to open this Fall. Construction of a new drivethrough Starbucks has begun on the corner of Calle Tampico and Washington. This Starbucks will replace the current one and completion is expected by the end of 2020. Another new restaurant called Torakichi Ramen is now open at the Komar Shopping Center where Costco is located, and Nutrition and Brow Bar has opened at the Centre at La Quinta Shopping Center.

This fifth phase of the Measure G funded La Quinta Landscape Renovation project is located at the La Quinta Rancho Ocotillo Development on the south side of Fred Waring Drive, the entrance on La Palma Drive at Adams Street, the east side of Adams Street, and the two retention basins within Rancho Ocotillo. The project converts approximately 80,000 square feet of parkway, median, and retention basin including the replacement of 28,000 square feet of turf with the Desert Oasis plant palette. Financial Gems What You Need to Know About Trusts

Trusts from a second marriage are usually specific as to who gets what. If the second husband is the trustee, an annual accounting is strongly recommended to ensure the income and assets are not depleted before they pass on to the children.

Be sure you fully understand your responsibilities as trustee by consulting with your CPA and trust attorney.

Becoming a trustee for a parent’s trust is usually a crash course in tax filings, financial management and fiduciary responsibilities, so you should have a discussion with the attorney that drafted the trust to be sure you have a complete understanding of “fiduciary” responsibilities. Here is a typical scenario: 30 years ago, mom and dad placed their assets in a revocable living trust and assigned you as their successor trustee.

Ten years later, Dad dies. Two trusts are created – mom’s “Survivors Trust” and a “Marital Trust.” A tax return is filed each year for the Martial Trust under a new Tax ID. No tax return is filed for the Survivors Trust, as all income is reported under mom’s Tax ID. Two years later, Mom remarries. Mom updates the Survivors Trust and adds a provision to provide income to her and her new husband during their lifetime. Upon the passing of mom, all the assets will pass on to her children after they are both deceased. As long as mom is still alive, the income from the Survivors Trust is reported under mom’s Tax ID and is shown on her tax return. Then mom passes away. Unfortunately, the discussion of what the trust owns did not happen, or happened so long ago, everything is significantly different when you take over as trustee. Not only will you be taking over mom’s income from the Marital Trust, but you also get her bills. You will need to manage banking for the trusts and obtain a Tax ID for the Survivors Trust after mom dies. Be sure you have certified copies of death certificates as well as copies of the trust. You will have at least 3 tax returns to file the first year after mom’s death – mom’s final 1040 (likely filed joint with her new husband), the Marital Trust, and the Survivors Trust. The Marital Trust can often be dissolved the year of mom’s death by distributing all assets to the children and filling a final tax return. Once mom’s second husband dies, all assets can be distributed from the Survivors Trust to the children and the trust can be closed.

According to mayoclinic.org, the average American walks 3,000 – 4,000 steps a day. Many fitness enthusiasts aim for a daily goal of up to 10,000 steps. Whatever your individual goals, to start its recommended you first track what your average daily step count is and increase it by 1,000 steps every 2 weeks until you reach your overall goal. With the COVID-19 pandemic impacting our daily lives, many have found it challenging to accomplish their daily step goal. Below are some paths you can take to get your steps in utilizing La Quinta’s beautiful trail system, parks, and other recreational activities. Boo Hoff Trail 12.8 Miles | 29,428 steps Boo Hoff Trail is a 12.8-mile heavily trafficked loop trail that features beautiful wildflowers and is rated as difficult according to alltrails.com. It is located at the top of the La Quinta Cove.
