Wine Routes of Kakheti and How to use Them

While traveling around Georgia, you’ll be sure to see the brown road signs with WINE ROUTE written on them. Welcome to our ongoing project! We also have a map detailing the best wine-related places

to see which you can pick up from your nearest information center. There IS a huge amount of choice for places to drink wine in Georgia, so we’ve listed and signposted the options for you. Note: you may need a

car to get to some of the wineries on our list, or at least be willing to grab a minibus. So, where to start your wine trip? We suggest either Kvareli or Telavi (Kakheti


region) as they also offer nice places to overnight, as does Sighnaghi, famous as the ‘City of Love’, which is set back (and above) the main roads, and so it is less easy to include as part of a day trip. In Telavi numerous wine cellars await: just a few kilometers away is Alaverdi Monastery and Ikalto village. Alaverdi has a long history and was once a big educational and cultural center of the ancient Kakhetian kingdom and Georgia as a whole. Near the well-preserved monastery building you can find a winery where tasting is possible.

On the way to Alaverdi, you pass through the village of Ikalto. Shota Rustaveli, the most significant XII century Georgian poet, is thought to have studied here, in the academy of the local monastery. The taste of history is really intense in this area! Wine in the cellars of Ikalto also tastes amazingly good. Following the Wine Route signs to find the other wine treasures we picked out for you nearby. Passing by Ikalto, on the way to the Zemo Alvani village, you’ll spot the cellar and restaurant of Papa Zurabo. This is the last stop on the way to the highlands of Tusheti. On the way from Telavi to Kvareli, you should pop into the wine cellar of Shaloshvili in Shilda and the vineyards of Chelti. Kvareli town is famous not just for its beautiful lakes, but also for two big wine factories: Kindzmarauli and Khareba. Kindzmarauli offers a free excursion, and Khareba offers paid tours of its huge wine tunnel and a tasting inside. While in Kakheti, be sure not to miss the beautiful mansion of Alexander Chavchavadze, noble XIX century poet, in Tsinandali. The drive from Kvareli to Tsinandali takes 40 minutes, from Telavi

Winter Fun in Batumi

From the so called “bullock cards,” with which the first postal transfers were made across the country, to the establishment of the postal services and the post itself in the 19th century - a landmark moment associated with prominent Georgian Ioane Batonishvili, the man behind the idea of establishing the first postal stations and later the Post as an institution in Georgia, Georgian Post is undoubtedly a brand tightly linked with the history of development of our country. In 1993, Georgia became a member of the Universal Postal Union, bringing the Georgian Postal network into the Universal Postal Union. While constantly aiming at enhancing their work with the latest innovative approaches,

Martvili Canyon, Boat Ride & Monastery By Katie Ruth Davies

To get to the canyons, you have to drive through the town of Martvili- a typical ‘everything on the central avenue’ kind of place, so stock up on snacks and water here and make use of the ATMs for money to pay for entrance tickets.

Ten minutes’ out of town, you’ll see the sign to the canyons. Park in the carpark on the right, then walk the few minutes downhill to the ticket office. Entrance to the canyon walk is 5 GEL, a boat ride is 10 GEL, children under six go free.

Be careful on the path as it has been constructed of smooth stone which is easy to slip on- even in dry weather. If you want to see the canyon before you go paddling on it, take the left path and follow the short trail around, over and through the canyon.

It’s six to an inflatable boat, two-by-two, with three paddles per ‘team’. There will be a ‘driver’ at the back who’ll tell you where paddling is needed, and lifeguards positioned on the riverbank in case of (very unlikely) accidents. The river

waterfall pouring down and bubbling across the rocks. There and back makes a 20-minute journey, though you’ll more than likely feel inclined to keep paddling! Very family-friendly: my youngest was five when she climbed aboard. Back in Martvili, we drove up to the monastery and climbed the stone steps to the church building and side chapel.

Spectacular frescoes cover the church walls floor-to-ceiling. Men, remember that legs and shoulders should be covered; women are provided with scarves for their hair and wraps to cover their legs at the

entrance. A well-kept garden surrounds the church, offering beautiful views over the Megrelian countryside and town. If you time it right, you can take a free ride down on the cable car- just two minutes top-tobottom.

Abastumani Health Resort & Space Observatory By Katie Ruth Davies

“Abastumani, hidden in the wild Georgian mountains, was a once-secret Soviet observatory. The area was at the forefront of astronomical development. The town, famous in the 19th Century for the quality of its air and thermal waters, was a popular summer resort for the Romanov royal family who then controlled Georgia as part of the Russian Empire. Tsar Nicholas II’s brother, Georgy Romanov, was an avid amateur astronomer, and it was he who brought the first wave of scientists over from St Petersburg,”- BBC.

The resort itself (a little past the official ‘town’ of Abastumani) is now a little run down. Once touted as one of the best anti-tuberculosis resorts in Georgia, it is now a shadow of its former grandeur. That said, it is interesting to see the ornate woodwork on dilapidated buildings constructed by German Prisoners of War, the stone building of the old baths ordered by the Romanov royal family in the 19th century, the ruins of Tamar’s Fortress and the surrounding deep green forest. Take a dip in the 40-degree mineral pool (follow

signs to the Sulphur Baths); while nothing glamorous (unisex, changing rooms lining the pool and divided from it by curtains, no lockers, one toilet and one cold shower), the water itself is sure to soothe away your aches and pains. 10 GEL adults, 7 GEL for under 12s, not recommended for those with heart disorders. Back outside, drive or walk up to the Space Observatory (well-signposted)- a narrow winding road through the forest. At 1650-1700 m. above sea level, the air

is spectacularly clear and crisp and begs for a picnic spread, a walk or a sit- and-chill moment or two. Park outside the gate to the Observatory complex, pay the entrance fee (9 GEL, kids free) and go for a wander. There are 14 telescopes, mounted between 1934 and 1978, most of which still function today, though they look a little worse for wear from the outside- unchanged since Soviet times. The first building on the left, housing the a 40cm Zeiss refractor from 1937, was in 2008 brought under the aegis of the Ilia State University. A USAID program turned a portion of the observatory building into a museum and the office of founder Eugeny Kharidze was restored to look as it had when he worked there in its heyday of 250 employees. Take the tour: it begins in the round telescope room. The safety barriers are minimal, so keep small children close as they won’t have the concentration to absorb the lecture. The guide (Georgian/Russian speaking) will explain the history, the technicalities and answer questions, before taking you back out into the hall to look at images captured through the telescope, including the sun’s rays, Saturn’s rings and a valley on the moon named after scientist Mikhail Vashakidze, who was also among the first to discover polarized radiation in the Crab Nebula. Enjoy the abovementioned office and a display of space and observatory goodies in the main museum hall. If you come after dark (last visit 9pm), you’ll get to peer through the giant telescope into space, as thousands of scientists have done before. A cable car runs infrequently down into the village, worth the stunning views if you can get on it.

Harvest: Kakheti By Tony Hanmer

If Georgia is the birthplace of wine, for which title it does have strong archeological evidence, then its most important place for this precious liquid is the large province of Kakheti, in the east of the country. Here, many different varieties and colors of grape are produced as they have been for millennia, and the whole experience of growing them and making wine is available for the casual or serious

tourist to explore, with both official Wine Route destinations set up and less known but equally interesting and worthy unofficial locations waiting for you to discover in the entire region. Autumn is the season of Rtveli, the Harvest, a joyous time with much celebration. Although some parts of Kakheti were badly affected by hail this spring (includ-

ing the vineyard of my in-laws in Lagodekhi region), this also left many other areas quite untouched, as it typically does. So hearing that a particular vineyard or orchard was devastated and left fruitless does not mean that others nearby are in the same condition. Such is the nature of normal hailstorms, so one need not despair.

such as apples and pears, are ripe, along with corn, pumpkins and more. These products are now being gathered and stored for winter, or sold, or processed, and there are many opportunities to watch, learn, participate and record the events in still photos or on video. Some fruit will be dried on strings, candied in syrup, made into tqlapi (fruit leather), jam, compote, liqueur and more for the coming season when less fresh produce is available. Given Georgia’s love of guests, and very generous hospitality, Rtveli is a magical time indeed. The months of sowing, hoeing, pampering and pruning are about to pay off in a big way, making it all worthwhile. Grape picking often requires either hiring workers for a few days, or relatives and neighbors helping each other out in turn for the intensive work. The bunches of delicate fruit are carefully put in wooden boxes, to be either sold or pressed and then the juice used for wine in massive clay amphorae, called Qvevri, or the famous Georgian national sweet, churchkhela. This is a string of whole shelled hazels or walnuts, dipped in a paste of grape juice thickened with flour. Very nutritious, simple and tasty with only these three ingredients!

Since the ups and downs of the Soviet period, with wine and moonshine production being either encouraged or repressed depending on who was in charge, followed by the chaos of postSoviet times with the collapse of infrastructure, Georgian wine making is getting firmly back on its feet. There are new factories, quality control is being re-established, new export routes and locations

are being set up, and more prizes are being won in international competitions the world over. It’s once again time for Georgian wines to impress the world, beginning right at home. But the harvest is not only about grapes: many other autumn fruits are in season at the same time, and the fall colors of leaves are at their best, too. The temperate fruits,

Anyone is legally allowed to own and operate a still, and to sell the resulting product, but it’s always best to try or buy from sellers with a good reputation. Warning: this is potent stuff! I find that its best use is as a base for making liqueurs, which is a simple process with many online pages and videos offering instruction.

My advice for those wanting to photograph or video the action and scenery is to include both details and large shots. The fruit or vegetables and leaves, the fields, orchards, vineyards, trees and mountains, various times of day (morning and evening offer long shadows and more dramatic lighting). People at work, in groups and individually, close-up. All of this will allow you to tell a whole story in all its parts, from near and far. And if you are able or

allowed to get past the usual observer-only “honored guest” status, roll up your sleeves and get involved in what is happening yourself, you will learn the best way: hands-on. You can gain more respect in this manner, too, as a participant. Whatever your level of comfort and involvement, Rtveli beckons you in at the peak of organic freshness to see and understand why Georgia deserves to be famous for its food and drink.

Color Parade: Svaneti By Tony Hanmer

One of the great bonuses to living in Georgia, or visiting, is the great variety of landscapes and micro-climates this small country has to offer. Case in point: the magnificent autumn colors as the leaves of Svaneti’s trees change. From October to November, all the region’s deciduous trees undergo this change, highest and coldest areas first (e.g. Ushguli), followed by those lower

down and warmer. (Either in the direction of Lentekhi: hurry before the road closes for the winter, or back towards Mestia and down to Zugdidi). As the trees are mixed in with conifers, the reds and yellows are interspersed with the unchanging greens of the needles. One wants to be here while the leaves are still on the trees, though, before they fall and carpet the ground. From this time on into December, the province is arguably at its least pretty,

with dead-looking trees, few colors remaining aside from the greens, and no long-lasting snow to make it beautiful again. Once that seasonally permanent snow does come, the whole look of the place changes again, but that is a story for another time. If you are really lucky in your timing, though, you may get to see a light snowfall on the top layer of the mountain

landscape, turning that mostly white while the lower layers retain their wonderful show of fall hues. This hint of winter’s coming dominance acts as a bridge between the seasons. It may not last long if it happens at all, as winds can almost instantly carry away that delicate white layer, so one should not hesitate to photograph what comes then and there as soon as conditions permit.

If you have the opportunity to shoot what is called HDR, or high dynamic range, now is the time. This kind of photography or video usually involves a series of images at different exposures, none of which can capture a very contrasty scene’s entire range of shadows and highlights, but which then combines the details of these areas to their best. It results in a scene with maximum interest across the blackest to whitest areas. The human eye can easily work to see this detail without help, but usually film sensors (or film itself) do not have enough sensitivity to such great dynamic ranges in one shot. This is a workaround which can be very successful, but which also needs care not to look overdone and “cheesy” or unrealistic. Usually, three or more images are required, taken as close to each other in time as possible. If your camera or phone cannot do this automatically, using a tripod to keep the frame constant will help to line up the set of images in post-processing. The same kind of workflow is available for some video cameras as well, involving HDR sets for every frame, an impressive achievement. If your setup allows it, you can add motion to the effects and really achieve dazzling results. All of the snow at this time of the year is likely to be short-lived. Indeed, the new Tetnuldi ski resort between Mulakhi and Ipari had its first snowfall in early Septem-

there and capture what you can, whether the sun has come out to help or not. In these days of digital dominance, you can always erase or just not use what doesn’t work out, and there is no point in “saving frames” for possibly more successful work. Shoot away! You should also be ready for much colder weather than in the warmer Georgian lowlands, protecting both yourself and your equipment. Fingers, toes, noses, ears and camera batteries all need a bit of extra care not to suffer and stop being of any use. But as many great scenes are visible straight from the main road, you may not even need to go far at all to see amazing sights. A wide angle lens will allow you to fill the frame, while more telephoto lenses can show the details of particular locations or crop out distractions at the edges of your frames. The higher you can go, though (Hatsvali’s ski lift above Mestia runs year round during the day if the weather isn’t awful), the more possibilities of Caucasus landscape await you. All the hotels and guest houses of Svaneti remain open year round, so the same choices of locations to stay and levels of budget or comfort are available. Mestia has by far the largest selection, but practically every other village will offer something, especially Ushguli and Becho. Zoe Whittaker, Formula 1 Test Pilot to Promote Georgia’s Tourism Potential By Nino Gugunishvili

Zoe Whittaker, one of the few women Formula 1 racers in the world, visited Georgia this summer to launch her new project ‘Race with Zoe,’ the focus of which is the promotion of Georgia’s tourism potential. The idea to do so came up on a visit to Le Monde’s famous 24-hour race in France, where Zoe, together with her Georgian friend, Berdia Kamarauli, founder of the UK-based Cenimex, a British import-export venture specializing in Georgian wine export to the UK under the Georgian Wine Club brand, suggested that Zoe taste Georgian wine, “because, of course, French wine is good, but Georgian is better.” It was an ambitious statement which rightfully took Whittaker by surprise and so was borne the idea of promoting the Georgian wine route by organizing a rally, which later expanded into a project for promoting Georgian tourism. Zoe’s introductory trip to Georgia was then organized, involving important meetings with Shalva Obgaidze, Head of the Georgian Automobile Federation (GAF), where she was appointed the Non-Executive Director of GAF to promote Classic cars and Classic car international races in Georgia”. “The concept of the project is to promote Georgian tourism in the West,” Kamarauli says. “We’re aiming to attract a slightly different category of people with it, as

Georgia has the potential to be able to host classic car races, bringing yet another dimension for promoting Georgian tourism abroad”. “With Motor sports, Georgia can easily become a center for organizing international sports events,” Kamarauli says. “Georgia has many possibilities, and we shouldn’t focus on promoting just food and wine”. “I had no idea that Georgia produced wine. I wanted to see the country for myself and, despite warnings that the country wasn’t safe, I decided to get in my car and give it a go,” Whittaker says. “Now I’m here, I’m absolutely blown away. The people are so friendly. Every single person I’ve met has welcomed me like I’m family, the countryside is absolutely stunning and the agriculture here, with all those walnuts and tasty pomegranates, is just outstanding,” she says.

“Everything is getting so commercialized nowadays, and Georgia still has that authenticity. In Tbilisi itself, I’m surprised at the mix of old and new, it’s all so real,” Whittaker adds. “I really want to promote Georgian tourism to the outside world with my new project, ‘Driving with Zoe Whittaker,’ as Georgia has so much to offer people”. “Since I started posting images from the trip, I’ve had a huge response. I’ve been showing the roads, the countryside, the beautiful castles, monasteries and churches, and many people are already saying they’d like to come”. The project will start in June next year, and before that, Whittaker says she’ll be back in Georgia for more exploring prior to setting her race itinerary.

“On the count of three, start running; do not jump or look back — just run!” With our harnesses in place, helmets on, GoPro in hand, and safely strapped to each other, we were ready to go. As soon as the chute was up, it caught the gust of wind passing over us, violently dragging us backwards. Though this wasn’t anything to worry about, business as usual, in fact, and as soon as I had recovered my balance, the pilot shouted “Go!”. Not knowing what to expect, with the adrena-

line pumping through my veins, I put my left foot forward, then my right, and we began running as fast as we could towards the cliff. Don’t jump, just run! I thought to myself as we approached the abyss. 3 meters, 2 meters, 1 meter — my foot went over the edge and we were airborne! A quick trip to Tbilisi Sea that was only supposed to include a short, five-minute flight, ended up including three. “Every

cloud has a silver lining,” the old adage goes, and it certainly wasn’t any different this time. Alas, after the initial moment of euphoria that accompanied the take off — now officially being able to tick paragliding off my bucket-list— I realized that the GoPro they had given me wasn’t working. The pilot told me not to worry about it; after landing he would give me a new camera and we would go back up for a second flight. Thankfully for them, this happened on the short flight just next to

The Frog that Croaks in the Water By Tamzin Whitewood

Bakaki tskalshi kikinebs – ring any bells? When I think back to my first days in Georgia, as a foreigner and not having much of an idea about the culture, identity or indeed, language, of the former soviet republic, it makes me smile. Not simply because they are fond memories, but because the identity of that person eludes me. I don’t really recognise her anymore. This, if memory serves, was back in 2014. Personal ties took me, quite happily so, to the country. I remember it vividly. I instantly fell in love with Tbilisi; coming from London, I had never seen such contrast before. Yet, one prominent memory will always stay with me. Looking out of the window of a cab driving from Tbilisi airport to Didube, with a jaw-dropping expression on my face, trying to avidly comprehend how people could actually understand the Georgian alphabet, and pronounce letters that, to my naive ears, sounded incomprehensible. I’m

not going to bore you with anything other than my quest to learn the language, for fear of rambling on. Suffice to say, my initial trip took me to three Georgian cities, all in stark contrast to the other. Tbilisi, Batumi and, rather significantly, Zugdidi. I had already brushed up on my Russian before arriving, as I knew that English, at least outside of the capital, was not widely spoken. Sitting around the table in the Kakhati region of Zugdidi, at a Supra (feast) my hosts had put on in honor of my arrival, I vividly remember a dear, dear lady, who will always stay in my heart, slowly going through the Georgian alphabet and asking me to repeat. Wait right there; let me paint you a little picture, this very evening was the first time I’d ever ‘tasted’ Chacha. I was already two shots down. Megrelian Chacha is stronger than any other, and at this early stage and in my

slightly intoxicated state, I pathetically thought I could repeat back what was being said to me. Wrong. My vain efforts were met with uncontrollable laughter. Three letters in particular. If you are not Georgian, and have had some time in this country, no doubt you’ll know what these three letters are. ყ – Well blow me down, this ain’t a letter, it’s a trick of the tongue, no?! No. It is a letter, and one I thought I would never be able to master. კ – Ok, so a hard ‘K’ right? So why am I being told that I’m pronouncing it incorrectly? It’s what I like to call ‘the click’ – The word Yes (in Georgian: კი) is a prime example of this, and where ‘the click’ is best displayed. წ – A jumple of letters all rolled into one! ‘Tz’ was a real enemy of mine in the beginning.

So, I suppose then, looking back, I admitted defeat. I gave up trying and stuck to Russian. Then something weird happened… My life took me back to London for a while, but I would come back to Georgia every couple of months and drive by the same places. So, what was the triggering factor in my learning of the language? The word ‘Lombardi’. I kid you not. There in an area stretching from the church on Rustaveli up until the beginning of Vake on Chavchavadze, that has Lombardi’s (Bureau de Change) a plenty. So those were my first letters, simply because they were blasted everywhere and I knew what it said. Having 8 letters under my belt, I thought I’d test the waters and see if I could go any further. I went to a Biblus bookstore and bought a children’s book on the Georgian alphabet. A….B…..G…. three more. Maybe this seemingly impossible language was possible after all? My linguistic skills improved over the next year, with frequent visits to Georgia, me listening to Georgian radio and news in my office in London, and a year to the day that I first visited Georgia, I decided to move there. I got a job as a Medical Director and my daily sentence structure mostly consisted of an English base, with some Russian words thrown in and ending it with ‘Aba ra’ – I didn’t really know what I was saying, but knew I could finish off a sentence this way without sounding too conspicuous. I am frequently asked by Georgians and foreigners alike how I learned the language and, more specifically, how I learned to pronounce the letters. The secret? I have no friggin’ clue. All I can

say is I immersed myself in Georgian life. Not an ex-pat one. I had one British friend in Tbilisi, that was it. The rest of my beloved friends were Georgian speakers only. So, the only methodology I can come up with to explain my attainment was that firstly, I had no choice; I chose to really listen and mostly importantly, I TRIED. Sure, I failed on many an occasion, but if I hadn’t given it a go, I’d be no nearer to success. I am now somewhere near fluent in Georgian. However, I’m not exceptionally intelligent, don’t have a ridiculously high IQ, nor am I a bookworm who studied the language nonstop until perfection, at least in my eyes, was attained. No: I lived and breathed it. Most importantly still, I had a true passion for the language, and the country. I still do. I encourage those of you who may have some reservations about giving it a go, to really try. It’s possible. I arrive at Tbilisi airport to the greeting of ‘’You’re the English girl who speaks Georgian, right?’’ – enough of an incentive for me.

Bassiani was this summer voted the best nightclub in the world, coming in at Number 1 over competitors in Berlin, Kyiv, Paris, Tokyo and Ibiza, among others. As I belong to the generation that was “havin’ it large” in London’s best converted warehouses and theaters in the late 90s, early 2000s, my expectations were far from met, but here goes. For a start, it doesn’t open until midnightwhich is when the queues start to form. So, we recommend starting the evening with drinks in Meidan (Old Tbilisi) or on Akhvlediani Street, Vera, after which you can take a taxi for no more than 5 GEL to the Dynamo Stadium. Yes, the club is under the national football stadium! Head for Gate 9. Pay your 60 GEL, pass the rigid security check (face, pockets/ bag) and head on down into the dark. Industrial, black paint and concrete are the first things you “see”. End of the tunnel, turn left, and you’ll find the cloakroom. Then straight ahead into the main dance

At present, smoking is still permitted indoors (set to change from 2018), so you’ll need to pop back outside for air at some point.

The clientele consists mainly of collegeaged men, some women and a few middle-aged folks holding desperately onto their youth. A smaller dance room ‘HoRoom’ is up the stairs near the entrance. It also has a bar, is near the only toilets (typical low points for hygiene on a busy night) and plays host to local DJs, on some nights no less worthy than the international stars. Chavchavadze laid a decorative park in 1830 which now covers 18 hectares of land. In 1835, one of the first wine cellars in Georgia was built, in which was kept a unique collection of wine from many countries (16,500 bottles). The museum hosts exhibitions of works by various prominent Georgian and foreign artists, and has shown Salvador Dali, Elene Akhvlediani, Levan Mekhuzla, Dimitri and Sandro Eristavi, Sergo Kobuladze and Karlo Kacharava.

Where to Eat News! Washingtonian Article on First Georgian Restaurant in DC By Tamzin Whitewood Washington, D.C. is to see its first ever Georgian restaurant open, which is aptly named ‘Supra’ (Feast). The planned opening of the restaurant has led to an article by the Washingtonian, a leading paper in the US capital. The article talks about the inspiration behind the restaurant, as well as the fact that Georgian Wine is also becoming ever more popular in the US. Owner Jonathan Nelms is not Georgian, but he’s felt a connection to the south Caucasian country since his student years: growing up in central Florida, Nelms befriended a Soviet-Georgian exchange student who came to his high school in 1989. Then, in the last year of the Soviet Union, Nelms went to what is now northern Russia, where he remembers everyone talking about Georgia being their favorite place. “In my mind, it was like this mythical land far away,” the article quotes. Nelms ended up living in Moscow, where he frequented Georgian restaurants and

fell in love with the food without even stepping foot in the country. He finally managed to visit Georgia and instantly fell in love with the melting-pot type cuisine the country has to offer, with influences from its neighboring countries. When he returned to the US, he and his wife Laura found themselves missing that food and they decided to open their first restaurant. “Georgian cuisine shares some similarities with Mediterranean and Middle Eastern cuisines, but the country’s relative mountainous isolation means it’s also quite unique. You’ll find kebabs with sour plum sauce or chili paste, but also a lot of vegetable dishes. Walnuts and pomegranates play prominently in the food, as do spices and herbs like tarragon, coriander, dried marigold petals, and blue fenugreek,” the article reads. “Nelms has

The article mentions dishes such as Khinkali, describing in detail the etiquette behind the dumplings, and how to eat them the Georgian way. “You hold them by a small nob of dough on top, take a little bite, sip out the hot liquid, then eat the whole thing. Grab a… Georgian Snickers! How to Make Churchkhela By Katie Ruth Davies

Red, yellow, green and brown, a Churchkhela (Georgian: ჩურჩხელა) is a traditional candlestick-like sweet (yep, some people- like my grandmother- actually mistake them for candles!) made by dipping a long string of nuts in grape jelly and hanging it to dry. And now’s the season for making it! If you can get out into Kakheti (the biggest wine region) to give some DIY Churchkhela a go, definitely do! If not, you can read about it here as you chew on a city-bought Churchkhela of your choice! First sort out your nuts! Thread 25 shelled and de-skinned nuts (halved walnuts or whole hazelnuts- 2-3 minutes in a hot pan will do the de-skinning trick) onto a thin piece of string. Knot the ends. Leave the nuts to dry in the sun to prevent mold. NOTE- Locals often hang the “nut stings” on a broom handle to make transporting easier. When they’re sun-dried, get your grape jelly (tatara) going! NOTE- this is for ONE coat of tatara, but you will need TWO coats, a few days apart. Mix 300g flour and 3 tbs sugar in a bowl. Gradually add up to 500 g of badagi (boiled grape juice) and stir with a wooden spoon.

Once the flour, sugar and badagi are mixed, use an electric blender to make it smooth. Add 2 L of badagi to a deep cast iron pot and gradually add the above flour-sugar-badagi mix. Heat on a high temperature. The trick here, and a real testament to the devotion of many a Georgian housewife, is the non-stop vigorously stirring. Bring to the boil. Reduce the heat and continue to stir for 8-10 minutes so it thickens enough not to drip off your spoon. Now for the double dunking! Grab the top end of the thread and lay the nuts into the pot of tatara. Keeping hold of

the thread, push the nuts deep into the jelly with the wooden spoon. Then pull them out and hang them on your broomstick to dry. Leave them to dry in the sun for 3 days (until no longer sticky), then repeat the tatara-making-and-nut-dipping process, this time using a total of 2 L of badagi. Sun dry again for 3 days. Eat, store (3 months is the maximum ideal) or give away as gifts! ANOTHER NOTE- when stored, Churchkhelas become covered in white powdery sugar- this is NORMAL and tasty!

Armazis Tskaro If you’re over Mtskheta way, try Armazis Tskaro. It’s set near a stream leading to the river, on multi-levels amongst trees. Sit at your own individually placed table and enjoy the fresh air, bubbling water and cozy ‘woodland village’ feel. Huge servings, good prices and you’re most likely to see chickens and ducks passing nearby. You might also get a blast from Georgian musicians…though, without a doubt, it’s nicer when there’s quiet. Machakhela, Okrokana We recommend Machakhela Restaurant & Grill on the Kojori Highway just outside the village of Okrokana (7km up from Freedom Square). It offers the same delicious menu that you can get in the Machakhela chain elsewhere, but the view is infinitely better- wooden tables and hammocks scattered across the fenced-in mountainside above the city and under the shade of scented pine trees, lit by lamps in the evening. There is a fenced children’s playground with a modern plastic slide, seesaws and roundabout, and during the busy summer season a local lady supervises the children while you dine. Inside the large dining ‘hall’, the animal skins were finally removed this year and the décor is now a tasteful modern-rustic. Georgian Spices – The Performance of National Cuisine No-one knows for sure when the first spices were used in cooking in Georgian dishes, but today it’s impossible to imagine the special ties of Georgian cuisine without those flavors. In the Tbilisi of my childhood, on the noisy territory of the Deserters’ Market, you would often see sellers of dry spices; cheerful grannies with constant suntans and colored headscarves, selling coriander and saffron in wooden cups the size of small vodka glasses which you were not allowed to bargain for. You may still come across such grannies in the agricultural markets and streets of Tbilisi but the aromas of those colorful spices do not have the same sharpness they had before. This is why I would advise real gourmands to buy spices not in the city markets and supermarkets but in Georgian villages themselves. It is known that spices were brought to Georgia from the East and quickly became well established. The most popular spice is coriander- it suits a wide variety of dishes and is the leader in the cuisine of all regions of Georgia. It can stand a moderate winter and can be harvested all through the year. Seeds of dry coriander, in combination with other spices, suit meat and walnut dishes. Fresh coriander seeds squashed with garlic make sauces incredibly tasty and dry seeds go well with the pepper sauce Ajika. The crown of the Georgian table is trigonella, which can also be seen in African and Argentinean cuisines, used

together with dry spices. The sharpest flavored trigonella can be found in Samegrelo. Compared to coriander it needs more care – growing and keeping it requires special techniques. Satsivi, baje (walnut sauces), and pkhali (dishes with different types of greens) are unimaginable without it. Svanetian salt also includes trigonella. Dry wild basil adds a special taste to Georgian meat dishes. We should not forget the pennyroyal of magic taste, which grows in many places in Georgia, often wild. Laurel also grows in the wild and its leaves can be well kept all through the year. When speaking about meat dishes, we should also remember caraway. It is very good for fatty dishes as it helps food digestion. It goes very well with Khinkali, Shila,

and Svanetian Kubdari. Caraway is good in combination with red and black pepper. Certain spices divide Georgia geographically. For example, in eastern Georgia spices brought from Asia are more common– dry dill, celery, basil, wild basil, and mint. And there is no set rule; cooks often decide the amount of spices to use in this or that Georgian dish based on their visual consideration and intuition. Barbeque, or to be more specific, the Georgian version of it Mtsvadi, is one of the staples of famed Georgian cuisine, alongside Khachapuri and Khinkali. So it was only a matter of time until somebody put two and two together and set a Mtsvadi festival into motion. The wise folks at the Georgian Tourism Agency seem to have figured this simple math out, and as a result, I found myself embarking on a 4-hour journey from Tbilisi to Sairme, one of

Georgia’s best-known resorts. It’s a particular kind of fame: as a resort, Sairme has been a popular destination for all of Georgia’s soviet past and counting. Its (6 different types of) mineral water, of the same name, has been found to have a wide array of curing capabilities, mostly for stomach ailments. Sairme, together with Borjomi and Nabeghlavi, forms a holy trinity of Georgian mineral waters. However, fancy music festivals and entertainment gigs are a rarity

here, so Sairme remains a resort chiefly for connoisseurs of beautiful, pastoral landscapes and a calming atmosphere. And those four hours that you’d need to get there from Tbilisi? Easily compensated by the beautiful places you’ll get to see on the way. The resort itself is in the middle of a forest, with a sprawling network of baths and wells at the entrance. Sairme is also a place you’d have to try very hard to get lost in, unlike Tbilisi and a plethora of other places


in Georgia, here almost every wall and building is marked with one signpost or another. Particular care is spent upon explanation of the benefits of Sairme water and the rules for its consumption. And it’s all green! And there are hammocks everywhere! And it’s definitely one of the places in Georgia where riding a bicycle is very much encouraged and cherished. Oh, and if you happen to do sports, there are a couple of gyms around and a nice, multi-functional stadium. But back to the tasty part: the Mtsvadi Festival was co-organized by Hotel Sairme, biggest hospitality provider in the resort. They boast an open restaurant where you can enjoy some of the tastiest meals you’re going to come across in Georgia. So, if for any reason you’d eschew the opportunity to gorge yourself on Mtsvadi, there are plenty of alternatives. The festival was in fact a contest over the best BBQ, with some of the most popular restaurants in Tbilisi as participants, among them – Sakhli Madatovze, Tsiskvili Group, Begheli, Mtsvadiauri, Sami Saukune, Mais Bar and Restaurant, Kolkhuri sakhli, Sharbati and the restaurant of hotel Cron Palace. They traveled together with us and went straight to preparations on arrival. I’ll not lie if I say that when the smell of Mtsvadi, or shall we call it an aroma, weaved itself into the fresh air of Sairme, that one hour we had to wait till the tasting was one of the most pleasant, yet tantalizing, experiences in my gourmet adventures. And the judges? They had to taste so much of it that we were legit scared they wouldn’t survive. Though if any of them shared our concerns, they sure didn’t let it show. They dutifully chewed, gobbled and rolled their eyes and at the end, voiced their verdict. The overall consensus was that all participants did rather well, so much so that they apparently had to add an additional category.

Of those that were announced, Sharbati Restaurant won for Best Serving, Tsiskvili group and Mtsvadiauri won Best Taste, Begheli for the original serving, Sami Saukune – delicious delivery, Sakhli Madatovze – special taste, and Mais Bar and Restaurant took home the grand prix. All of this was followed by a massive dinner, where lots of fun was had until midnight. In the morning, we had an info tour reserved for Armenian tour operators

who were attending the festival and were very pleased with the result. Considering the regional rivalry in the Caucasus over the Mtsvadi (or Shashlik, as the Russians call it), to hear such praise from Armenians was indeed quite a revelation and testament to the festival’s success. Later; tired, dizzy but very satisfied, we embarked on journey home, with newly acquired knowledge over this deceivingly simple, yet unbelievably delicious meal.

Georgia – Cradle of Wine By Thea Morrison

Georgia is the cradle of wine, seeing the beginnings of winemaking some 8,000 years ago. This South Caucasus country boasts an enormous variety in grape species- over 500 different kinds, most of them very old and unique to Georgia.

There is no argument among specialists that the oldest remains of winemaking were found in Georgia.

“It means Georgia really was the cradle of viticulture from where the technology spread to the so-called ‘Fertile Crescent’ of Mesopotamia and the Eastern Mediterranean,” the article claims.

British newspaper Mirror published an article last year about the discovery in Georgia that proves it as the cradle of wine, pointing to traces of grape pollen from the world’s first vineyard which were discovered inside an animal-shaped ceramic jug used in ritual ceremonies. The jug was found at an archaeological dig site called Aradetis Orgora – 100km west of Georgia’s capital Tbilisi. The

The article also notes that the first evidence of domesticated grapes in the form of pips were unearthed in the southwest of Georgia and date back 6,000 years.

Moreover, according to the newspaper, a second similar vessel and a Kura-Araxes jar were found on the burned floor of a large rectangular area with rounded corners - arguably a sort of shrine used for religious activities. “Scientists used a technique called radiometric (C14) analysis which dates

specimens by determining proportions of chemicals,” the article explained. This showed the archaeological finds dated back to 3000-2900 BC. “The animals on both Georgian vessels could have represented gods and stand as a unique discovery in the region,” said Dr Eliso Kvavadze. “The context of the discovery suggests wine was drawn from the jug and offered to the gods or commonly consumed by the participants of the ceremony,” Professor Elena Rova, of the Ca’ Foscari University of Venice, stated after examining the vessels. The researchers claim it is a key-finding for Georgia, where wine culture still continues in the course of traditional banquets called the Supra.

The fourth International Symposium of Qvevri Wine, held at the Ikalto Qvevri School-Academy, has announced the winners of the competition. The competition was held on September 2-3 within the frames of the Symposium and 60 Georgian and 5 foreign wine companies took part. 22 gold, 20 silver and 29 bronze medals were awarded to 150 wines presented at the competition. The award-ceremony took place at the Ikalto Monastery Complex. The Georgian National Wine Agency (NWA) reports that the wines which won gold medals will be presented at the World Wine Civilization Center, Bordeaux, France, where the exhibition

The jury of the First International Competition of Qvevri Wine was represented by Georgian and foreign professionals, including the famous American master of wine, Lisa Granik. The Symposium was first held in Georgia in 2011. As a result of that first symposium, the United Nations Educational, Scientific and Cultural Organization (UNESCO) put the traditional Georgian method of Qvevri winemaking on the list of Intangible Cultural Heritage Monuments. The Symposium organizers and supporters are: the Ministry of Agriculture of Georgia, the National Wine Agency, the Association of Georgian Wine, and Alaverdi Metropolitan David. On September 14, Giorgi Kvirikashvili, Prime Minister of Georgia, officially opened the ‘Georgia- Cradle of Wine’ exhibition at ‘La Cité du Vin’, the Center of Wine Civilization in Bordeaux, France. Georgia is the first country invited to open a range of different exhibitions dedicated to wine-making, and is said to be the museum’s honorary guest. Cité Des Civilizations Du Vin is spread out over 14,000 square metres, introducing the history and traditions of wine making to its visitors, through to the ultra-modern technologies.

Ancient ethnographic and archeological materials from the National Museum are also being presented at the exhibition in Bordeaux.

In honor of the ancient Georgian traditional Qvevri winemaking method being on the list of intangible cultural heritage of UNESCO, a large Qvevri vessel, specially made for the exhibition, is situated at the main entrance, and will remain there as part of the permanent exposition.

For the three months that it is open, the exhibition will host scientific seminars, cultural events, conferences and wine degustations. Figures show that that for the first week of the exhibition alone, almost 4,000 people attended.

Gvirabi (which means tunnel in English) is carved in the rock of the Caucasus Mountain Range. The tunnel was opened in 1962 for the World Wine Congress. In the beginning, it belonged to the government and wine from the entire Kakheti region was stored here. Nowadays, it is the Winery Khareba cellar, used to age wine. The constant temperature - 12-14 degrees, with around 70% humidity all year round, creates the ideal, natural conditions for wine to age in French oak barrels, as well as to store bottled wines for extended periods. The tunnel consists of two main parallel tunnels and 13 smaller perpendicular ones. The total length of the entire tunnel is 7.7 km. The entrances to the long parallel tunnels have their own functions: the first is for tourists and is used for wine tours, while the second belongs to the industrial part, where the company stores and ages its finest wines in French oak barrels and steel tanks.

Georgian traditional felt is made by hand with processed wool and using natural dyes, by stretching and layering wool on a net, dampening it and squeezing.

Have a wander around souvenir shops near Shardin Street in Tbilisi, or elsewhere in town and you’ll be sure to spot the little colorful bags, scarves, slippers, hats and even jackets and coats made of felt (in Georgian: Teka [თექა]). The tradition of felt-making dates back to ancient times in Georgia, and is considered an integral components of the Georgian craft culture, specifically in the Tusheti, Svaneti, Kakheti and Javakheti regions of the country. In medieval times,

felt was exported from Georgia together with cloth. Primarily, felt was used by shepherds for their wool coats (Nabadi [ნაბადი]), large, heavy coats worn during the sheep migration across Georgia. Warming them up in cold weather, the coats could be used as a kind of tent protecting the shepherds from extreme weather while they crossed the mountainous terrain. The wool-coloring tradition is said to date back to the V-VI centuries AD, as, before that, felt items appeared only in their natural colors of white, brown or black. The color palette in Georgian felt products, from carpets and rugs to handmade accessories, now varies across the spectrum. The ingredients for making natural dyes (flowers, leaves and roots) are collected throughout the vegetation period from June to August, and from September until the cold temperatures hit. The plant matter is then washed and dried, stored in cold water for a day and then boiled for 15-20 minutes or, alternatively, is boiled in the same water for around two hours, and then dried. Before coloring, the wool is cleaned, then washed and boiled in water. From traditional Georgian men’s hats to Chokhas and wool coats; from rugs, carpets and bags, to scarves and handmade gifts, Georgian felt products are as popular today as they ever were, if not more colorful!
