Although the sea season has yet to start in Georgia, it’s no surprise that Where.ge is putting the spotlight on one of Georgia’s most spectacular seaside regions, Adjara, and its capital Batumi. Shatili This historically unique settlement in Khevsureti region can be described as the “Watchmen of north,” having done so for centuries. Shatili was both a castle and residence, with tiny towers featuring flat roofs. Restoration of the various constructions was carried out in the 1970s. It’s only open from May to September due to snowfall. Don’t miss it this summer!

Vardzia This is a monastery complex carved into the rocks which once had some 10,000 people living there in the 12th-13th centuries. The place is almost totally inaccessible, which is why it endured numerous attacks from various enemies over time. The complex consisted of living rooms, wine stores, dining rooms, churches and a pharmacy. There are still tunnels you can climb which people once used to move around in. A fascinating place for both adults and children.

DASHBASHI Canyon Georgia is rich in mountains, rivers and other amazingly beautiful places. One such place is just 2 hours from the capital city, Tbilisi. Dashbashi Canyon is not reachable by car: you have to walk alongside the river bank, past trees and over rocks to discover its numerous waterfalls. Dashbashi Canyon is the place for lovers of hiking and adventure.

Pheasant’s Tears in Sighnaghi Georgia is known as the Cradle of Wine. That’s why many of its people are winemakers. I want to distinguish “Pheasant’s Tears” from the others. This company produces wine using old Georgian traditions and methods. They have a different connection with the vine and their wine tasting process can be described as an art. Visit this place in the “city of love” Sighnaghi, have a taste of their unique wine, and listen to some interesting stories about it.

Choose your favourite colour No matter when you visit, there’s always something to see in the Adjaran capital of Batumi and its surroundings

GEORGIA MAY BE small in size, but it’s packed with things to do. Located at the crossroads of Europe and Asia, the Land of the Golden Fleece (as it is referred to in Greek mythology) is a colourful, diverse country known for its beautiful landscapes

and welcoming people. This is particularly true in the region of Adjara, which is one of its most popular tourist destinations. Black Sea, blue waters Adjara’s capital, Batumi, is a coastal city

that overlooks the Black Sea – a body of water so blue and inviting that the Greeks referred to it as the “Hospitable Sea”. It’s close to a range of top resorts – Kobuleti, Tsikhisdziri, Chakvi, Mtsvane Kontskhi, Makhinjauri, Gonio, Kvariati and Sarpi –


where guests can sunbathe on the beach or go scuba diving. Also check out the city’s Maritime Station, where you can observe the region’s native dolphins frolicking in the sea. Alternatively, head to the popular Batumi Dolphinarium, which hosts daily dolphin shows. Paint the town red If you’d rather keep your feet on the ground, there are several walking and bicycle tours that enable you to get up close and personal with Batumi’s eye-catching architecture. Highlights include Piazza Square’s dancing fountains and Man and Woman , an 8m-tall rotating sculpture created by Georgian artist Tamara Kvesitadze. The statue depicts the eponymous duo from Kurban Said’s famous 1937 novel Ali and Nino , and is regarded as a symbol of love and diversity. The grass is always greener However, there’s more to Adjara than its urban attractions. Batumi Botanical Garden is a tranquil oasis that features one of the most extensive floral collections in Europe, as well as unforgettable views of the coast. Just outside of the capital is Mtirala National Park, where visitors can discover waterfalls and endemic, relict species. You can even camp overnight in a tent and let the sounds of the forest lull you to sleep. Adjara is also a birdwatcher’s paradise. Every September, millions of raptors fill the Adjaran skies during their annual migration. This natural phenomenon is the focal

point of the annual Batumi Birdwatching Festival, which takes place from 24 to 30 September this year. White-knuckle action Adjara is an excellent destination for winter sports, too. Just 110km from Batumi lies Goderdzi, a ski resort situated 2,200m above sea level. It’s covered with soft, dry snow from November until the end of May, which makes for great skiing conditions. Plus, it’s home to various accommodation options, such as cosy cottages and local guesthouses, making it ideal for a weekend escape or an extended winter getaway. Served on a silver platter Of course, it’s worth visiting Adjara just for the food. Be sure to try an adjaruli khachapuri – a soft bun with an egg baked into its middle, and then topped with gooey melted cheese. The bread is intended to resemble a boat sailing on a sea of cheese, with the egg representing the sun. The best way to eat it is to tear off a chunk of bread and dip it into the runny middle – a tad messy, but the taste is well worth it. Do try a traditional Adjaran cup of coffee too, which is prepared by placing a metal pot of finely ground coffee over hot sand. Adjara is a place of a thousand colours, and a destination for all seasons. Whether you’re looking for blue seas, green meadows or white slopes, there’s something for everyone. gobatumi.com

International Media Promotes Georgia International Media Promotes Georgia More than a thousand articles and a hundred TV stories have been published and broadcast in international media in 2017, focusing on Georgia as one of the most in-demanded and attractive travel destinations. This comes as a result of regular media tours arranged by the Georgian National Tourism Administration (GNTA) under the Ministry of Economy and Sustainable Development of Georgia, says George Chogovadze, Head of the GNTA. One of the most recent comprehensive articles about Georgia appeared in the influential journal Forbes magazine following a visit by its journalists arranged by the GNTA. “Why Georgia (The Country) Is The Next Great Food And Wine Destination,” published by Forbes, was written by journalist Adam Morganstern, who focuses on Georgian wine and the diversity of dishes, interwoven with lively descriptions of the historic districts of the capital of Georgia, Tbilisi. “I only had to learn two words in Georgian to enjoy my way around the country: ‘thanks’ and ‘cheers,’” he reports. “There were other phrases I’d prepared, but with all the endless food, wine and genuine warmth that was thrown my way, I was about three days into the trip before I even needed to say anything else. I’m not sure people even knew I wasn’t Georgian.” “Do not sit down for a meal with Georgians without an exit strategy,” he advises. “Whether at a restaurant or someone’s

home, the dishes keep coming — it’s even common to stack serving plates on top of each other. “To the Georgians, the guest is a gift from God,” the Forbes contributor says, quoting food writer Carla Capalbo, “having a guest at your table is both a responsibility and a pleasure.” He goes on to note that food lovers in Georgia will be happy to enjoy different kinds of meat, including poultry and fish dishes, as well as vegetables. “Everywhere you go, there will be fresh tomato and cucumber salads, homemade cheese and delicious bread, tonis puri, made from fresh dough smacked onto the side of barrel-shaped ovens,” Morganstern notes. The author of the article then describes in detail Khachapuri, Khinkali and other dishes, also telling his readers about the 8000 years’ history of Georgian wine and describing old Tbilisi, Narikala, Abanotubani and Metekhi. Forbes has said it will prepare another article with a focus on Georgia’s wine regions, traditional winemaking methods and Georgian monasteries. in 2017 the GNTA (Georgian National Tourism Administration) has invited 683 journalists and 239 tour operators from different countries to present and popularize Georgian tourism potential in international markets. Over 1000 articles and more than 100 TV stories have since been produced and transmitted.

Guria By Máté Földi Said to mean “the land of the restless,” the region of Guria is a magical part of Georgia which holds true to its name, with its passionate and fiery locals and natural beauty leaving one, well, restless to discover more. Tourism and subtropic farming are the staples of the economy of a region that is famous for its natural monders, mineral water (Nabelgavi), the

altitude of 2100m, 17km from the Gurian capital of Ozugreti and a two-three hour drive from the Black Sea resort of Kobuleti, Gomis Mta is located in the gorge of the Bzhuzi river. Famous for its pine forests, panoramic views, Yellow Azalea flowers, beautiful mountains and cottages, it’s a location that proves popular and worth seeing year-round. Easily accessible from

Since then, it has seen its audience rocked by the likes of Aerosmith, and this summer, on July 19, will see rock legend and Led Zeppelin frontman Robert Plant shower music lovers with a whole lotta love at the Black Sea Jazz Festival. Ureki A popular beach down famous for its black and slightly magnetic sand that allegedly has healing properties, Ureki provides the perfect beach getaway. 60km north of Batumi and about 300 west of Tbilisi, the sandy shores of this town are a must-see, for even if it doesn’t end up healing you or stealing your loose change, the fact of the matter is that the existence of the sand itself is a rare commodity, as most Georgian beach resorts are made up of crushed stone or gravel. You can get there by railroad, bus, car and, of course, minibus. If swimming and lounging on a sandy beach don’t cut it for you, make sure to

Vashlovani National Park

Vashlovani National Park is situated 150 km away from Tbilisi, in Kakheti region, Dedoplistkaro Municipality. The national park is unique for its natural landscapes of desert and semi-desert steppe vegetation and mud volcanos. Similar distinctive places can’t be found elsewhere in Georgia and it creates incredible memories to every single person once visiting the sites.

Go Slow in Racha By Tekla Davituliani

All great journeys begin with a first step, and spring is the best time for it. There are places to discover; places that bring you face-to-face with novelty and new emotions; places that grab those emotions and amplify them. Racha. Next time you pick up your backpack and decide to head out

on the road, keep in mind that Racha is one of those places: somewhere ready to fill you with newly discovered emotions and leave a lasting impression in your heart and mind. Escape the noise and stress of the daily

grind. From Tbilisi, head west along the central highway; turn right after Terjola and let the road lead you to this place, to Racha; a region full to the brim with stories and legends. Right after you enter Racha, your first delight of a surprise will be the sight of Shaori against a backdrop of


snow-capped mountains. Then there’s Nikortsminda, Udabno, Sayinule, the place where Shareula was born, and there you’ll find yourself truly enveloped in the magic that is Racha. The Qvabtkari Waterfall flows in a heart shape, which is why people call it The Waterfall of Love. Everyone’s heard the tale that you can find your future partner here, but it is just a legend when all’s said and done. Then Barakoni, and close to it Minda Tsikhe, then the high mountains and Mravaldzari, the highest point of Racha, the place of bare-back horse riding and old men with white beards. The adventures never end, and even though the fresh mineral water you drink will satiate you, you’ll still have the Rachan cuisine to explore. If you haven’t tasted Racha’s Lobiani, then you know nothing of Lobiani, especially when paired with ham. Learn the story of how ham and Lobiani became friends and how their path led them to Racha’s Alexandroul-Mujuretulian Khvanchkara wine. The perfect combination and love of these three exceeds every taste in the world. Such genuine flavors can be found in families throughout Racha; in the small, cute hotels; and, of course, in every Rachan kitchen. Racha does not boast many restaurants, but we recommend you try Gharistskali, Tavern Krikhula and Restaurant Racha in Ambrolauri. 3 Day Trips out of Town Tbilisi has much to offer the curious tourist. Like any city, it has museums, historical buildings, cute backstreets to explore and numerous restaurants, bars and shops to keep you fed, watered and entertained. But beyond the capital there are many more treasures to be found. If you find yourself longing for some fresh air and a “change of scene” this weekend, check out our recommendations below. rather than following the easier route you took on the way up. This dark, handcarved tunnel (with metal steps constructed over the original stone version) makes a brilliant end to your trip back in time! Uplitsikhe, 10km from Gori OPEN 11 AM to 6 PM (but times can change depending on the season/ weather!)

KOJORI or TSKHNETI These two villages are both 20 minutes out of the city- Kojori via Freedom Sq and Tskhneti via the Vake district (through Bagebi). The two used to be connected until the mountain road collapsed in a rain storm some years ago- it has yet to be fixed.

UPLITSIKHE CAVE TOWN Uplistsikhe (“the lord’s fortress”) is an ancient rock-hewn town around 10 km east of Gori center. Built on a high rocky bank of the River Mtkvari, it contains various structures dating from the Early Iron Age to the Late Middle Ages. Once housing 20,000 people, it is notable for the combination of various styles of rock-cut cultures from Anatolia and Iran, as well as the co-existence of pagan and Christian architecture.

The way is well-marked and the tickets cost just 3 GEL (less for children, students and the elderly). Follow the well renovated footpath and then head up the sandstone cliff and explore your heart out. Not much (if anything) has been done to conserve the place, so it is degrading over time. Yet there is still a sense of grandeur in the ‘throne room,’ and the ceiling carvings in two of the caves is a real treat, as is the church atop the rocks. If you’ve got kids with you, keep a close eye on them as safety barriers come at a minimum here. Stunning views over surrounding countryside. Warning: it can get windy, so dress warmly. Tip: try to find the steps down

Both are historically favorite summer destinations for the city-dwellers, many of whom own houses (dachas) or rent rooms there during the hottest and most humid months of the year. Up there, it’s around 10 degrees cooler than down in the city. Kojori offers both woods and open fields. From the village center, you can walk to the Kojori Fortress ruins- well worth the incredible views over the countryside. The fields make ideal walking and picnicking spots- though please do be aware of fire regulations and take your rubbish home with you. The village itself has a real ‘old, frozen-in-time’ feel about it- with a mix of old soviet, traditional country and more recent architecture. There is a school, a nice playground and a mini-market or two.

Inside the wall is the domed church of the Nativity of the Mother of God (constructed in the 12th 13th centuries), the small church of St. George (1196), and a ruined tower.

Tskhneti is nestled in the woods on the edge of the mountain and is growing by the year, boasting many large properties owned by Tbilisi’s rich and famous. The village center here is much livelier than in Kojori, with the Kopala Entertainment Center offering a restaurant, bowling alley, billiards, pool, gym equipment, table tennis, slot machines, and a cinema hall. If you’re there to walk, head west out of the village to Akhaldaba to enjoy the woods and surrounding views.

BETANIA The Betania Monastery of the Nativity of the Mother of God is a medieval Georgian Orthodox monastery 16 km southwest of Tbilisi, reached via Kojori; well-signposted once you’re near, hidden down in the wooded Vere River valley. It is a beautiful piece of architecture from the Golden Age of the Kingdom of Georgia, built at the turn of the 11th and 12th centuries, and well worth a visit for its frescoes which include one of few existing portraits of Queen Tamar.

A series of conflicts and foreign invasions left the monastery depopulated and half-ruined until it was rediscovered by artist Gagarin then restored in the late 19th century by Abbot Ketiladze. During Soviet times, Betania was the only operating Georgian monastery, though unofficially so, until 1963 when it became defunct for the next 15 years. In 1978, the Patriarch of Georgia Ilia II obtained permission from the Soviet authorities to reopen the monastery at Betania and in the 1990s, the cloister was refurnished and the local monastic community began to grow again.

Inside the church you’ll see numerous damaged and degraded frescoes, most notable of which is the royal group featuring King George III (r. 1156–1184), his daughter Queen Tamar (r. 1184– 1213), and King George III (Tamar’s son, r. 1213–1223). After all that walking and admiring, head back out onto the road and choose a spot for a picnic: there are plenty of fields and wooded areas on the way back to Tbilisi that are good for it (please be aware of fire regulations and take your rubbish home with you!), while the best restaurants are found closer to the city on the Kojori Highway.

Kartuli Life: Impressions of My New “Home” BLOG by Máté Földi Having left my country of birth at three years old, my perception of the concept of “home” is perhaps an odd one. Home is both everywhere and nowhere: it is not somewhere I long to return to, but where I currently find myself: Georgia. I was only supposed to live here for four months, but as has often been the case in my short time on this planet, life had other plans. I now my find myself staying for a year. After throughly exhausting myself with an almost two-decade tango with the Arab world, I came here hoping and expecting to experience a new culture and part of the world, something totally different. The irony, as I soon found out, is that there is one unescapable truth that makes these two parts of the world very similar: the suffocating grip that religion and an

inherent undying conservatism have over society. The traditional gender roles, with boys and men allowed to enjoy themselves with impunity while girls and women are trapped with their wings clipped and liberty throughly curtailed, an almost blind subservience to religious dogma, the treatment of minorities, et cetera — it’s all very similar, as Georgia struggles to reconcile the winds of change coming from the West; an unstoppable force meeting an immovable object. Though at least here with places like Fabrika and Bassiani, there is a blossoming, if not frictionless, compromise and change, however slow, in the works. Lest, after reading these words, you are tempted to reach for the “you’re just being an orientalist white boy” card, let’s make one thing abundantly clear: there’s nothing

wrong with subscribing to tradition, being religious and having a conservative view of the world. Just, for the love of God and all things sacred, make it a club of the willing; don’t force people into it and keep them there at the pain of extinction, banishment and shame — that’s slavery. Nonetheless, I am enjoying life here. There is something inescapably exciting and surreal in being part of — even if just in the capacity of an observer — a pivotal moment in a country’s existence. As a journalist, it’s fascinating to cover and observe a nation at the forefront of change, as it tries to juggle liberalism and tradition, with EU flags fluttering everywhere (as it attempts to become a part of the so-called beacon of freedom and tolerance that Brussels and co claim to be), despite seriously struggling to embrace a tolerant mindset. Though I do get the feeling that there is a silent majority, slowly tiring of the old ways, secretly wanting change but too afraid to speak up out of a risk of being shamed and disowned, not realizing that many around them share these very same sentiments, and it’s just that no-one dare make the first move. Or perhaps that’s not the case at all and I am just romanticising things as Westerners are prone to do, blinded by their own arrogance and insistence that their way of life is correct — maybe, just maybe, people are OK with the traditions because it’s all they ever known and it’s their “normal.” Whatever the case, I really do wish that I spoke Georgian, or at the very least Russian, so that I could have the means to sit down and chat with members


of the conservative vanguard resisting this new age, and understand their perspective. Life in Georgia for me is pretty great, actually. Though I am blessed by the circumstances of my birth. As a straight white male with an EU passport, roaming free in the world and being the beneficiary of an institutionally racist world — and embracing it — definitely has its perks. More often than not, I am welcomed into new countries and cultures with open arms, shown their ways, free to navigate the seas of tradition at will. And when things get too uncomfortable or difficult, I can always just say “sorry, I am a foreigner,” pull a Moses and split that sea and escape. The point being that there is no expectation to conform weighing on my shoulders, and that makes things a hell of a lot easier and enjoyable. There are, however, some parts of the Georgian reality that I have decided to embrace, despite their antithesis to my being. Yes, I am talking about the culture of dating. Not long after moving here, I got together, and eventually fell madly in love with a Georgian girl. You can imagine the culture shock that my free white boy spirit received when confronted with the conservative gender norms ruling this country and the minds of the older generations especially — not even a straight white male with an EU passport can unlock that door. The reality that the amount of time we can spend together on a given day is limited by the fact that there is an expectation and need for her to go home every night, despite being in her late twenties, is one that I struggled to get my head around at first. But hey, no regrets or complaints whatsoever; I made the conscious decision to become a part of this. Besides, where would the fun in living in exotic countries be if everything worked

as it did in the West? Sometimes you just have to improvise, adapt, overcome. Since moving here last August, despite the cultural differences that I share with my new home, I have really enjoyed life here. The beautiful geography and landscapes, the exotic language and history of the place, and of course the food make Georgia a truly special place. I have been able to see and experience so much more in this tiny part of the world than I would ever have thought. From the beautiful and relatively untouched mountains of Tusheti, to the slopes of Bakuriani, the hot pools of Borjomi, the shores of Sokhumi, and the underground raves carrying Tbilisi’s social revolution, I have seen many truly wonderful and unique things. Greeted in all places by a passionate hospitality, where hosts are keen to show everyone with a fiery passion, proudly beating their chests, that THIS is Georgia, and that despite all the

hardships, the wars, the invasions, the suffering and the suppressions, they are still here and not about to go away. When my father visited, he told me with a smile that coming here was like taking a time machine back three decades to his youth in Budapest. From how things looked, to how people dressed, their body language, and how they interacted with each other, everything reminded him of Hungarian society at the cusp of change at the end of the 1980s and early 1990s. Indeed, to that extent Georgia is stuck, in a good way, in a surreal time of its own. Coming here, one can experience the changes that developing countries all around the world are going through as they come to terms with globalization. And I for one am looking forward to continuing to observe and document the changes in the upcoming months, because Georgia is definitely somewhere you have to go, see, and experience.

Lose half a day here wandering around the world in the Batumi Botanical Gardens, which are divided into areas presenting flora and fauna from East Asia, North America, New Zealand, South America, the Himalayas, Mexico, Australia, the Mediterranean, and the Caucasian humid subtropics. It is spectacular all year round, but especially in spring when the flowers and trees begin to bloom. The gardens were officially opened in 1912 but were created decades before in the 1880s by the Russian botanist Andrey Nikolayevich Krasnov near his residence.

Zugdidi is not one of the main destinations for travelers, but if you do happen to find yourself here, then the Botanical Garden is a delightful way to spend an afternoon. It’s a break from the noise of the city and a breath of fresh air in a green corner of paradise.

How to get there? The Garden can be discovered 10km from Batumi city center. Take a number 150 or 31 bus for 0.5 GEL- it’s a 20-30 minute journey.

Nestled in the TsavkisiS-Tskali Gorge on the southern foothills of the Sololaki Range, the Tbilisi Botanical Gardens are something not to be missed in your visit to Georgia. Root around in your pockets for the 2 Lari ($0.8) entrance fee, take your complimentary map, and step out of the city of Tbilisi into a rich, 400-year-old forest; you can lose half a day as you discover the 161 hectares laden with an array of over 4,500 taxonomic groups. Follow one of many different paths - both in what you will see and in difficulty - through the complex, or combine them. With a river dissecting the gardens, multiple bridges present a pleasant way to pass between them. Find the entrance adjacent to the entrance of Narikala Fortress, which can be accessed wither by a 15-minute walk, 1.5GEL ride on the cable-car, or, if you are feeling adventurous, a zip-line ride from the fortress itself. Based on the principles of Bauhaus and using the experience developed by Modernism, especially the heritage of “Tbilisi Avant Garde,” the main task of Art Villa Garikula is to spread the word about social changes through Contemporary Art. The main instrument Art Villa uses to achieve this particular aim is Fest i Nova, the International Festival of Contemporary Art in Honor of the Zdanevich Brothers, held there annually since 2009.

Art Villa Garikula, a regional center for Contemporary Arts, is a cultural enterprise which has taken on the mission to support the creation, presentation and dissemination of Contemporary Art through diverse programs and projects. Housed in the former Bolgarky family summer residence in Akhalkalaki, it represents a multifunctional international platform offering the first artists’ commune and residency in Georgia, an exhibition space and a school. Spread across 2400 sq. m of land mostly occupied by fruit trees and a vineyard, Art Villa is a place which brings together artists from all over the world to exchange ideas and implement different projects; it is a place where imaginative energy is accumulated, creating international opportunities and promoting joint contemporary art projects, mobility of artists and people-to-people links.

Recent guests François Mere, stepson of Iliazd and founder and president of Iliazd Club, is a frequent guest at Art Villa Garikula. In September 2017, he was accompanied by Professor Regis Gayraud, a literary scholar and researcher of Avant Garde; Boris Friedman, a large collector of Livre d’Artiste pieces; and Marika Jeanty, a delegate and archivist of Historic Heritage of Coco Chanel. In October 2017, Art Villa Garikula hosted Ado Theater Collective, the first Baku-based independent theater in Azerbaijan, which showcased three street performances in the vast courtyard of Art Villa Garikula, fully making use of its environs.

Art Villa considers Contemporary Art an important tool for the promotion of democratic values such as freedom of speech and human rights; for challenging ecology problems, and for boosting community-based initiatives. My mother is Georgian and my father English, so I was always in Tbilisi during the summer holidays, and it was really nice to come here and see such a developing place, which is why I decided to stay and be a part of it. I love Georgian food and I’ve always grown up eating khinkali and mtsvadi, and I absolutely adore it. But I also think that Tbilisi has a lot of new and fantastic restaurants. Here’s my top five.

Restaurant Qalaqi This is a very new Georgian-European restaurant that opened at 45b Kostava Str. The chef David Tavernier is French and is very good at what he does. All his dishes are extremely delicious. You absolutely have to try their Caesar salad, totally different to what you might expect and all extremely fresh. The interior is something very unique, too. Well worth a visit!

At 34-36 I. Abashidze Str., La Boheme is also something very unique. The food is contemporary Mediterranean, so everything that you choose here is very authentic. If you choose calamari, expect something like what you’d be served in Greece. The pizza is genuinely Italian; the pasta fresh. We don’t use any fatty foods, but a lot of fresh ingredients. La Boheme is also great for its cocktails, ideal for a night out with friends or a drink with colleagues after work.

Anona is also new to Abashidze Street (number 43). Chef Guram Baghdoshvili is fantastic at what he does and is very popular for his Portuguese and Spanish fusion dishes. I definitely recommend going.

The Kitchen Restaurant This restaurant in Rooms Hotel, at 14 Kostava Str., was the first restaurant I was taken to in Tbilisi and I was pleasantly surprised by the modern interior, which is retro New York with a bit of vintage. And the delicious European cuisine is stunning! The staff is extremely friendly and multi-lingual, and the wine is highly recommended!

Amo Rame restaurant This is my personal favorite, at 4 Ingorokva Str. I discovered this restaurant when I was wandering through Old Tbilisi. It’s very sweet and cozy, ideal if you want to go and be by yourself or just relax or catch up with some friends. I recommend their Rosé wine, it’s the main reason I go there! The cuisine is very modern and European and on Sundays they have delicious khinkali.

From the standard dishes to unique local delicacies, Georgia’s gastronomy is a fascinating symphony of pleasure, wonder and tastes. My mouth is watering from writing these words alone... The western seaside region of Adjara is famous for its khachapuri — “cheese boat” as outsiders like to call it — but a visit to the area will reveal that there is a lot more to Adjaran cuisine than their infamous khachapuri. Here are nine delicacies that you simply have to try on your next trip there:

Adjaruli Khachapuri I suppose it’s best if we confront the elephant in the room. While we did just say that there is more to Adjaran cuisine than their khachapuri, no food-list is complete without it. Served with fresh egg and a generous serving of butter on top, this is a one of a kind cheese boat that is

Georgian Easter has those faithful to Orthodox traditions rounding up one of the longest fasts of the year, the last day of which sees them on bread and water alone. That said, the fasters have a good “cheat sheet,” with everything from donuts to chocolate cake available, made, of course, with fast-suitable ingredients.

The traditions:

Red eggs The Georgians grow grass from seed some weeks before and dye hard-boiled eggs various shades of red, using sticks of boiling “endzela”. These are then eaten from Easter Sunday onwards. The red symbolizes Christ’s blood, the egg itself- new beginning. Children like to try to choose the hardest egg to crack and bash against those of whoever will play. The red

eggs stay on the table for days- offered to guests along with the pasca cake.

Pasca Cake Though it is meant as a fast-breaker, Georgians start buying these dry, rough sponge cakes some three weeks before Easter. The choices are wide- from large to single-portion; with icing sugar, chocolate or sprinkles. The typical texture of the cinnamon bread-like sponge is quite dry, with only a scattering of raisins to add “juice,” though some home-made and top-bakery varieties are moister.

The Feast The fast officially ends on the Saturday night and the devoted remain in church from early evening until well after midnight to welcome the resurrection of Christ and exchange well-wishes: “Kristi aghsdga!”

(Christ is risen!); “Cheshmaritad” (He truly is!). After this, people head home for a grand feast and drinking session. Then back to church the next day- often slightly worse for wear but celebratory, nonetheless.

Visiting the Dead On Easter Monday, it is tradition for all family members to go to the cemetery where they lay eggs, pasca cakes, a glass of wine and candles on the graves of loved ones. If you tag along, you’ll be sure to notice the beggars- from Kurd children to the elderly and disabled, who, aside from taking your generously given coins, will go about picking up the eggs and bread after you move away from the family grave. A fine example of “waste not, want not,” and in general well-enough tolerated by the locals.

Yet, there comes a point you can have too much of a good thing, either because you’ve had enough and need to change things around, or your body starts to shut down from an overdose of calories, meat, and fats. To that end, it’s good to give our digestive systems a rest from time to time and enjoy a lighter variety of culinary delights, be they vegetarian, vegan, or halal. While most Georgian restaurants do offer fasting menus that tend to be vegetarian and/or vegan, you can’t always be sure of their quality. The story behind this cozy restaurant sounds incredible. “Barbarestan” means “At Barbare’s” in Georgian, but it’s not the owner’s name. Back in 1847, noble lady Barbare Jorjadze, a truly progressive mind of the XIX century, speaker for women’s rights and dedicated housekeeper, published a book of recipes and practical household tips. Mid-2010s, one of the copies was discovered at the Tbilisi flea market by one of the restaurant’s founders. The founders are, by the way, the parents of 11 children, and the elder children are also involved in family business. While working on the restaurant concept, they decided to make Barbare’s book the base of the whole menu. The interior design also remembers XIX century Georgia, when nobles gathered for beautiful dinners: brick walls, traditional tablecloths, wooden

furniture, wonderfully painted plates… The staff is extremely attentive and polite, and if you happen to meet one of founders, a member of that big Qurasbediani family, you will be enchanted by the manner in which they will treat you. The food is prepared according to old Georgian recipes, so some names and ingredients might surprise you. The waiters can advise you well, plus they are trained to pair wines with dishes, too. In June 2010 an idea emerged to develop a project -“Treasure of Georgian Feast”, which meant searching for indigenous Georgian meals, recipes and rules of preparation, in order to save them from oblivion, to familiarize modern society with them and to preserve these traditions for the future generations. In summer 2010, search expeditions were organized under the aegis of m|group in almost all regions of Georgia: Tusheti, Adjara, Guria, Imereti, Kakheti, Racha-Lechkhumi, Samtkhe-Javakheti, Samegrelo, Svaneti, Kvemo Kartli, Kazbegi, Khevsureti, Tianeti, Shida Kartli, and also in historic part of Georgia – Tao-Klarjeti. New Wine Festival On May 12, 2018, The Georgian Wine Club will host its ninth New Wine Festival. Having become a people’s favorite, the festival aims to promote Georgian wine, enhance consumption culture in Georgia, and improve wine education. Last year’s edition brought over 200 participants which included small, medium and large wineries, associations and state agencies. This vineyard can be found nestled in the foothills of the Greater Caucasus mountain range, within sight of the major historic and cultural sites of Kakheti. Its vineyard produces a unique and exquisite wine from grapes cultivated at a height of 550 meters above sea level on 10 hectares along the Babaneuri Strict Nature Reserve. The natural and unfiltered wines come from four Georgian grape varietals: Rkatsiteli, Kakhetian Mtsvane, Kisi and Saperavi, handpicked then fermented in Qvevri (an ancient Georgian traditional method of winemaking) to produce a limited quantity of wine. In 2017, the vineyard branched out to open a boutique hotel, ‘Babaneuris Marani,’ in the center of the vineyards and nestled on the slopes just under the Nature Reserve. It overlooks the whole of Kakheti and welcomes you with delicious traditional wines, amazing food, beautiful walks through the forests, and a warm family welcome.

Gvirabi (which means tunnel in English) is carved in the rock of the Caucasus Mountain Range. The tunnel was opened in 1962 for the World Wine Congress. In the beginning, it belonged to the government and wine from the entire Kakheti region was stored here. Nowadays, it is the Winery Khareba cellar, used to age wine. The constant temperature - 12-14 degrees, with around 70% humidity all year round, creates the ideal, natural conditions for wine to age in French oak barrels, as well as to store bottled wines for extended periods. The tunnel consists of two main parallel tunnels and 13 smaller perpendicular ones. The total length of the entire tunnel is 7.7 km.

The entrances to the long parallel tunnels have their own functions: the first is for tourists and is used for wine tours, while the second belongs to the industrial part, where the company stores and ages its finest wines in French oak barrels and steel tanks. In 2011, special tour facilities were created around the wine tunnel: a big recreational park, which includes the river and old Qvevries, as well as a Georgian water mill, traditional Georgian bakery Tone, a Chacha (grappa) distilling facility, a traditional Georgian marani (wine cellar) with the Satsnakheli (Georgian traditional wooden grape press) and other cultural sites. The tourism complex also includes wine tasting for more than 30 varieties of the best wines produced by Winery Khareba, as well as many other activities tourists can take part in: distilling Chacha, baking Georgian bread, making Chuchkhela, grilling meat (Georgian barbeque), and harvesting and pressing grapes in the Satsnakheli.

The honey in Georgia is as varied as its landscapes: from the bitter tasting lowland honey to the sweet floral mountain honey of Svaneti.
