New Year and Christmas celebrations are really quite unique in Georgia. There are many reasons for it, but the one that stands out most is the fact that Georgians celebrate both holidays twice in two weeks! The Georgian New Year holiday is almost a month long, running from late December to mid-January. In Georgian we call it “Akhali Tslebi” (New Year in plural). When someone here suggests meeting (or partying) “at New Years”, it can mean anything from December 31 to January 14- so be warned that you’re in for some non-stop fun this season! My selection includes five must-see locations, each of them a clear illustration of every epoch of Georgian history.

vaNi archeological MuSeuM aNd vaNi city of teMpleS This is an opportunity to grasp the Age of Antiquity not in Athens or Rome, but locally, from a local perspective. The majority of the national treasure of Georgia was discovered right here, including exquisite golden jewelry of Medea Colchis, which dates back to the 8th century BC. Clay and copper exhibits, bronze sculptures and fragments of pottery found on the territory of the Vani City of Temples are assigned to the same time period. Currently, reconstruction works are being carried out on the territory of the Vani Archeological Museum, funded by the World Bank. After their completion, the museum will represent one of the most significant tourist destinations in the region, which will radically change the already existing geography of tourist routes in Georgia.
architectural MaSterpieceS A number of medieval architecture masterpieces are presented in Kutaisi and its surroundings, including Motsameta and Gelati Monasteries. However, an unconditional symbol of Kutaisi and the statehood of Georgia in general is Bagrati Cathedral, which has embellished the city for more than 11 centuries.
the White Bridge 19th century Kutaisi… European approaches that are seen in almost every ornament and baluster of the old balconies of the buildings of those times. I suggest they influenced the architectonic of the White Bridge. It is difficult to say exactly what creates the feeling of airiness in this place, the simple modest construction of the bannister, white stones or everything collectively. But the truth is that this composition and landscape represent the identity and are a symbol of our city.
the parliaMeNt BuildiNg iN KutaiSi The first precedent of 21st century creative architecture in Kutaisi, designed by Spanish architects Alberto Domingo and Carlos Nazaro. Unique shapes and an unusual structure create the impression of a spaceship. Writer David Turashvili once compared it to the elephant sketch from ‘The Little Prince’ of Antoine de Saint-Exupéry. It is one of the must-see places for visitors to Kutaisi.

The Winter Season in Gudauri is Officially Open! The winter season in Georgia’s mountain resort of Gudauri has officially been opened and along with this event the resort is celebrating the 30th anniversary of the very first launch this year. The opening ceremony took place in New Gudauri and was supported by the Ministry of Economy and Sustainable Development, Georgian National Tourism Administration and Mountain Resort Development Company. There were numerous entertaining activities organized for the opening, including a costume show, theatrical acts, photo zones and prize-giving. Musicians Gio Shenge-

Construction of the Kobi-Gudauri 7.5km cable car will make this area one of the top clusters of the Kazbegi region. New ski lifts of the open ‘bubble’ type - ‘Soliko’ and ‘Kudebi’ (Tails) - will be available for six people per cabin and will secure them from the cold, while ski lift ‘Pirveli’ will be of an open type. Pirveli will be able to serve 2,800 passengers per hour and Soliko 2,200. Over the last few years, the number of both domestic and international tourists has increased rapidly. From the 2011 ski season to the 2017 season, the total amount of visitors to the four mountain resorts of Georgia (Gudauri, Bakuriani, Godzerdzi and Svaneti) has shot up by a massive 491%.

proMetheuS cave Prometheus Cave is the most popular protected area in Georgia. It may be regarded as one of the country’s main gems. The cave is located 20 km away from Sataplia. Here, you have the chance to descend 40 meters into a magical world full of stalagmites and stalactites and witness the wonders of six chambers, including Argonauts, Kolkheti, Medea, Love and Georgia (Iberia). Who cares about the weather outside when the temperature in the cave is a constant 14 degrees all year round? So don’t hesitate to visit on a cold winter’s day.
NaveNaKhevi cave Navenakhevi Cave, located in Terjola Municipality near the village of Navenakhevi has just opened to the public.

The diverse and beautiful cave is a 250-meter-long, two-storied cavern comprising four chambers with stairs leading to the second floor, but there is no separate exit from the cave as it is blocked by a 7-meter stalagnate, or pillar. Bring your family and friends and enjoy exploring the cave.
tBiliSi NatioNal parK Tbilisi National Park is situated just 20 km away from Tbilisi centre. In winter, it turns into a magical world, where the snowy Sabaduri Forest awaits visitors. The National Park has a network of various trails, allowing visitors to enjoy the diverse landscape and beautiful views. Pack a picnic and explore on horseback, on foot or even by car.
BorjoMiKharagauli NatioNal parK Borjomi-Kharagauli National Park is the most popular destination among visitors. One-day or multiple-day hiking tours can be arranged, as well as horse-riding treks,
snowshoeing, cultural and educational tours. The National Park is equipped with tourist shelters, campsites, picnic areas and fire pits. Snowshoeing is the most exciting activity in winter, with the season starting in December and lasting until February.

What to See in Winter By Katie ruth davies
BorjoMi parK The Borjomi Mineral Water Park is something special and magical, full of snowy Christmas magic. Put on your winter gear and come for a walk with us… On your right before the gates is the cable car which runs up the mountain, affording beautiful views over the town. At the top is a big wheel (closed in winter) and a vast expanse of woodland to picnic in. Back at the park entrance, you’ll need to pay 2 GEL per person (children under 6, free). On your left you’ll see the original bottling factory, now empty (the Borjomi company uses others of the 40 local springs nowadays) save for a vast entrance hall, still in the original style, with a selection of enlarged black-and-white photos showing the history of Borjomi town, park and spring water- well worth popping in! Head along the clean paved paths past snow-covered flowerbeds and twisted vines, to the famous pavilion at which you can easily imagine the elegant 19th century ladies and gentlemen partaking of the waters, though this is not the original fountain (which can be seen in a huge photo behind you adorning the old cinema building). On busy days there will be one or two ladies down near the taps to fill up your cups or bottles as requested. At quieter times you can go down yourself

and drink as much water as you can stomach. Not to everyone’s taste, the warm water is packed full of minerals, somewhat slimy in taste. Georgian’s swear by it as a cure for many ills- a belief which dates back centuries! Energized with that “magic” Borjomi water, you can now explore the park further. The 3km path follows and criss-crosses the Borjomula River on sturdy wood-and-iron bridges, passing children’s rides (shut until May) and play areas. Next to the giant swinging pirate ship, the paved path ends and you can turn back or carry on into the woods. The woodland path is part gravel-part mud and if you’re wearing the shoes for it, and you’ve got your swimming gear with you, definitely head on in! The recently built Borjomi Crowne Plaza hotel very kindly
offered to renovate the hot spring pool at the end of the park (3km from the entrance), dividing the single traditional pool into three, one of which is shallow enough for children, and all constantly fed by the 27-degree water flow. Women are as welcome as men and children. You’ll need to have paid the 5 GEL at the entrance to get past the security guard, and for that money you can stay all day! Get changed in the bathroom up the hill, choose a bench on the wooden-tile terraces and get soaking! When we were last there at 9:30am on a Sunday morning in late November, there were locals in the pools in their swimming trunks, so be brave- it’s good for you! Need to know: Security guards are on duty throughout the park. The entire 3km route is pushchair-friendly, though the far section can get muddy depending on the weather and there is one mild hill to navigate.
BaKuriaNi Half an hour east and up the mountain road from Borjomi is one of Georgia’s most popular ski towns, Bakuriani. Offering a more family-friendly, cheaper and down-toearth atmosphere than the lavish slopes of Gudauri, it’s a favorite spot of many locals looking for a weekend or even a day’s get away from the hustle and bustle of the capital. Leave early enough in the morning and you’ll have the whole day to enjoy the picturesque, pine-clad slopes of this little gem of the South Caucasus, skiing and snowboarding until nightfall. If you’re not a sports-person, you’ll still enjoy a snowy stay horse-riding or hiking.
raBati fortreSS / SaMtSKhejavaKheti MuSeuM This impressive fortress in Akhaltsikhe (which means “New Castle”) is easy to spot on the hill overlooking the town. You must pay to get in, but it’s well worth the visit. The castle was renovated in 2011-12 and several times prior to that since receiving heavy damage from Mongolian and Ottoman invasions in the XIV – XV centuries, as well as during the Russo-Turkish war in 1828. You’ll discover stone steps and courtyards, sunken baths and fountains, a mosque and a synagogue, and a great view from the tower. The museum is located in the palace building and offers a rich exposition of archaeological and ethnographic artifacts that help you understand this region much better. It was reopened after renovation in 2018 and now features lighting and displays of European standards.

The resort itself (a little past the official ‘town’ of Abastumani) is now a little run down. Once touted as one of the best anti-tuberculosis resorts in Georgia, it is now a shadow of its former grandeur. That said, it is interesting to see the ornate woodwork on dilapidated buildings constructed by German Prisoners of War, the stone building of the old baths ordered by the Romanov royal family in the 19th century, the ruins of Tamar’s Fortress and the surrounding deep green forest. Take a dip in the 40-degree mineral pool (follow signs to the Sulphur Baths); while nothing glamorous (unisex, changing rooms lining the pool and divided from it by curtains, no lockers, one toilet and one cold shower), the water itself is sure to soothe away your aches and pains. 10 GEL adults, 7 GEL for under 12s, not recommended for those with heart disorders.

Back outside, drive or walk up to the Space Observatory (well-signposted)- a narrow winding road through the forest. At 1650-1700 m. above sea level, the air is
spectacularly clear and crisp and begs for a picnic spread, walk or sit- and-chill moment or two. Park outside the gate to the Observatory complex, pay the entrance fee (9 GEL, kids free) and go for a wander. There are 14 telescopes, mounted between 1934 and 1978, most of which still function today, though they look a little worse for wear from the outside- unchanged since Soviet times. The first building on the left, housing a 40cm Zeiss refractor from 1937, was in 2008 brought under the aegis of the Ilia State University. A USAID program turned a portion of the observatory building into a museum and the office of founder Eugeny Kharidze was restored to look as it had when he worked there in its heyday of 250 employees.
Take the tour: it begins in the round telescope room. The safety barriers are minimal, so keep small children close as they won’t have the concentration to absorb the lecture. The guide (Georgian/ Russian speaking) will explain the history, the technicalities and answer questions, before taking you back out into the hall to look at images captured through the telescope, including the sun’s rays, Saturn’s rings and a valley on the moon named after scientist Mikhail Vashakidze, who was also among the first to discover polarized radiation in the Crab Nebula. Enjoy the abovementioned office and a display of space and observatory goodies in the main museum hall. If you come after dark (last visit 9pm), you’ll get to peer through the giant telescope into space, as thousands of scientists have done before you. A cable car runs infrequently down into the village, worth the stunning views if you can get on it.
Sapara MoNaStery
This is a Georgian Orthodox monastery near Akhaltsikhe dating back to the 9th century, and has counted among its monks many important figures in Georgian ecclesiastical history. At the end of the 13th century, Sapara came into the possession of the Jakeli family, whose head, Sargis Jakeli, kept good relations with the Mongols, enabling Samtskhe to enjoy a peace unusual for the time. When he grew old, Sargis took monastic orders and changed his name to Saba. His son Beka built the largest of the 12 churches here, St Saba’s Church, named after the saint whose name his father had adopted, and one of the most architecturally important churches of its time. The 14th-century frescoes inside are of very high quality.
the greeN MoNaStery This hidden gem in the emerald-green valley near Borjomi is officially known as the Chitakhevi Monastery of St. George. It was built on the right bank of the River Kura somewhere between the 9th-10th centuries. The rough stones that were used all bear faint shades of green that vary in intensity. Because of this, it is referred to as ‘the Green Monastery’.
From the end of the 16th century until the beginning of the 17th, the Sapara Monastery was abandoned due to the expansion of the Ottoman Empire into Samtskhe. The monastery’s icons and other treasures were taken to mountainous Georgia for protection.
Take the main road south out of Borjomi for 13km until you come to a small road on the right. Follow the single-lane track into the forest. It is possible to drive the final kilometer to the monastery, but many people will advise you to walk it. The straight, even route to the monastery can be made in 10-15 minutes, but most tend not to rush. You will be lulled by the gentle flow of the River Kura, transfixed by the fresh, dewy air and seduced by the luscious landscape.
Today you can explore the church on the grounds and the woods beyond.
Nothing breaks the sublime silence once you arrive at the courtyard, which, thanks
to the monks, is kept in pristine condition. Step inside and immediately you will smell the rich, echoing scent of ceremonial incense. It is a truly spiritual place that will make you feel like you are closer to God. It has not always been this peaceful, though. The Green Monastery was raided in the 16th century during the invasions of Shah Thamaz. Dozens of monks were violently tortured and killed and it is said that the bloody remains were tossed into the adjacent river. Many believe that this is where the rocks in the river bed got their morbid, crimson appearance. They are known as the ‘bloody stones’ and can be seen along the length of the river directly adjacent to the monastery. The rocks are said to have a healing power and maintain the red hue regardless of the season. Need to know: Dress modestly. Women must cover their hair, men must wear long trousers. Cameras are allowed, flash must be off. Entrance is free, but a donation for upkeep is suggested.
tSKhaltuBo Should you tire of the cold this winter, we can highly recommend a soak in the baths of Tskhaltubo, a well-known spa resort near Kutaisi in western Georgia. A hit with the tourists in Soviet times, the area is being slowly redeveloped and modernized. That said, the giant Soviet sanitoriums still loom over the central park, some filled with squatters, the remaining IDPs from the 1990s war in Abkhazia, others falling into horror-house ruin as the smaller Europeanized bath-houses within the park take the easier custom.

and of varying infrastructure and style. Bakuriani is more family-oriented, Gudauri is for extremists and Mestia and Goderdzi, the ‘new kids,’ are just discovering their niche. At 2000m above sea level, and 120km north of the capital, the resort town of Gudauri is Georgia’s most popular ski destination. Highly rated even among the international skiing community, the season gets underway at the tail-end of December lasting until the end of April, with the best snow falling in January and February. There are 70km of pistes of all difficulty levels (black, red, blue, and green), between an altitude of 2000m to 3285m, connected by five chairlifts and a gondola line. Tskhaltubo is a village built around a huge central woodland and park area whose paths, lighting and bath houses have been renovated. Most holidays and evenings see the local community strolling, exercising or playing with their children there. The resort’s fame was won by its unique mineral water, well-known even in ancient times. The water offers stable-chemical properties, belonging to the class of “weak radon, chloride-hydrocarbonated-sulphate” and “sodium-calcium-magnesium” waters, rising from the earth at a steady temperature of 33-35-degree Celcius. The waters are said to help treat illnesses of the locomotor, heart-blood vessel, and nervous systems, gynecologic disorders, and skin and endocrine diseases.

the gergeti triNity church Surrounded by the mountains of the Caucasus, the Gergeti Trinity Church and nunnery is one of the most famous travel destinations in Georgia. The church was built in the 14th century and is the only cross-cupola church in the Khevi province. The church was named after the village Gergeti, situated on the right side of the River Tergi, opposite Stepantsminda. Stepantsminda can be found in the north of Georgia in the region of Mtsketa-Mtianeti. From 1921 to 2006, the name Stepantsminda was changed to Kazbegi, in honor to the georgian writer Aleksandre Kazbegi. Need to know: Unlike in other churches in Georgia, taking pictures is not allowed inside the holy walls.

NeW year’S deStiNatioNS iN georgia Georgia is an amazing place to ring in the New Year, especially since the holiday season is longer than in most places. Decorations start appearing in mid-November and by mid-December the renowned tree is set up in Liberty Square in Tbilisi. December 31, New Year’s Eve, is Georgia’s biggest holiday, celebrated nationwide with a big family dinner and prolonged, dense, and unregulated fireworks shows. January 2 is bedoba, a prediction of how you will spend the rest of the year. January 7 is Orthodox Christmas, largely a religious holiday, and January 14 is Old New Year by the old calendar. Tbilisi is a dynamic, beautiful city that offers travelers endless points of interest, particularly at the New Year. Being out of the city also has its advantages, and there are plenty of options for whatever your style is, from getting cozy with friends in a woodland cabin to a serious ski vacation or a party-lover’s paradise. There are lots of options for where in Georgia to spend the holiday! Here are our top 5...
tBiliSi Number one, of course, is Tbilisi. Georgia’s capital, largest city, and indisputably the country’s hub of culture, food, and nightlife. Tbilisi is rivaled only in the summer by Batumi, and while the ski resorts do compete for visitors during ski season, Tbilisi still takes the crown for the most events on New Year’s Eve, and the most to do overall during the season. Although most Georgians have a big New Year’s dinner with their families, many restaurants will host special dinners, sometimes with live music or dance performances, for which you must book a table in advance. After dinner, the tradition is to go around to friends’ houses to share a drink, but more and more young people are going in large groups of friends to bars and clubs far into the early morning hours of January 1. Around the New Year’s season, Tbilisi also has plenty to do, including Fabrika’s annual Christmas Fair, beautiful, elaborate light displays, and parks converted into miniature Christmas villages. Holiday classics can also be enjoyed in the capital’s theaters, from The Nutcracker at the State Opera and Ballet Theater to The Snow Queen at Akhmeteli Theater and Jack Frost at the Griboedov.

BaKuriaNi Bakuriani is one of Georgia’s top ski resorts. The setting is beautiful, surrounded by mountains covered green-black pine forests often coated in a thick blanket of snow. Bakuriani presents a classic winter wonderland atmosphere. The skiing is also excellent with a good range of options for skiers of different skill sets. Several hotels and restaurants host New Year’s parties, popular among young people and families.
gudauri Gudauri is another one of Georgia’s best ski resort towns. The slopes here are a bit more advanced than Bakuriani, but even those who don’t ski can enjoy the dramatic, breathtaking views of the mountains. Around the ski area, the tall mountains are mostly devoid of trees, creating a dizzying, all-white landscape in every direction when there is snow on the ground. Several hotels and restaurants host New Year’s parties. The resort town is popular among foreign tourists, mainly those from Russia.
KazBegi Kazbegi is a bigger town, just 20 minutes north of the Gudauri ski resort. Kazbegi is known for its natural beauty and charming, village-feel paired with easy accessibility and amenities. So close to Gudauri, many skiers chose to stay in more budget-friendly accommodation in Kazbegi and travel to the resort during the day to ski. If you’re looking for a party and a social atmosphere, the place to be is definitely Rooms Hotel.

With the regular snowfall in the Lesser Caucasus and the iconic Greater Caucasus ridge along the northern border with Russia, Georgia’s mountains offer perfect conditions for skiing from December to April. The standard of facilities and teaching at Georgia’s ski resorts is quickly improving as the hype about the excellent slopes spreads around the world.

How to get there: Goderdzi is approximately two hours from Batumi. It is especially easy to reach if you have a 4x4 car as public transport doesn’t run during winter. However, minibuses run from Batumi to Danisparauli village twice daily from which you can take a taxi to the resort.

Discovering Tbilisi’s art nouveau Legacy By amy jones

Behind crumbling facades and a patchwork of paint and plasterwork, the neglected legacy of Georgian art nouveau is hidden in many buildings in Tbilisi. Despite years of rejection during Georgia’s dark Soviet past when it was considered to be an unimportant art form, some of the finest examples of art nouveau in Europe can be found in the city. Although it is slowly gaining academic recognition, little attention was paid to Georgian art nouveau for a long time. Some academics believe the art movement came to Georgia via modernist movements from France and Germany which trickled down through Russia, whilst others

say it came directly across the Black Sea. One thing is certain: Georgia developed art nouveau into their own art movement at the turn of the 20th century. The once incredibly popular style, synonymous with glamor and luxury, has much been forgotten in Georgia. Its condemnation by the Soviet regime as “a crime of ornamentation” due to its connection with the bourgeois of society led to years of neglect and decay. Nonetheless, the curved lines and decorative motives, asymmetrical shapes and natural forms are not completely lost. Classically art nouveau, iron-railed
stairways and detailed tiles linger among the flaking buildings waiting to be discovered in many of Tbilisi’s cinemas, theaters, shops, and industrial buildings. And, you can now do an art nouveau walking tour to find them.
3B la Kargareteli Street The oldest example of art nouveau is a residential house on Rome Street, once known as Vartisikhe Street. Tucked away behind 36 Agmashenebeli Avenue, the crumbling facade is adorned with multi-colored tiles and undulating iron
balconies, the work of Georgian architect Simon Kldiashvili. The stripped walls and naked brickwork are a reflection of the bad maintenance and neglect of the work of one of Georgia’s most prominent art nouveau architects.
Kote MajaNiShvili theater Built in 1907 by Simon Kldiashvili, Kote Marjanishvili theater combines the French style of art nouveau with Georgia’s “still modern” interpretation. The green ironwork at the front of the building is easily comparable to Paris metro stations.
the apollo ciNeMa The Apollo Cinema, dating back to 1909, was once a thriving movie theater, where the introduction of art nouveau along with the art of film arrived simultaneously in Georgia. However, the Apollo cinema has become a tragic testimony to the neglect and risk hanging over the art nouveau heritage of the Georgian capital. The building was listed among Tbilisi’s most
endangered monuments, and until recently it was on the verge of condemnation. While its restoration may have saved the building from being torn down, the Apollo has undergone poor renovations, which resulted in the loss of its original features. The need to put Tbilisi’s unique examples of art nouveau on the map has been noted in recent years. Hopefully, it will soon receive the recognition it deserves before it is too late.
Shops, industrial buildings, theaters, and cinemas also carried the style. The Kote Marjanishvili Theater, built in 1907 by S. Krichinski, captures the spirit of the age. Originally known as the K. Zubalashbili People’s House, named for the building’s commissioners the Zubalashvili brothers, the Marjanishvili Theater marries Frenchstyle art nouveau with Georgian “still modern”. His sack fell open and irreversibly deposited 40 languages over Daghestan in the Russian North Caucasus, which persist to this day. Practically every valley has its own tongue, some related, others
not, spoken by anywhere from hundreds of thousands to a few hundred people. A similar thing might be imagined to have happened with the Angel of Flora and Fauna, who clearly presumably had her stumble even earlier than the Language Angel. The news is not all good, though. Quite a few of the species unique to Georgia are also on another list, the Red List of those with populations which are threatened, endangered or near extinction. These include such “poster children” mammals as the lynx, leopard, panthera tigris, hyena, brown bear, gazella subgutturosa (extinct in the wild, being reintroduced), Cauca-

certainly vouch for the speed at which my neighbors, in our village in Upper Svaneti, run for their rifles whenever a raptor of any kind takes to the sky: threat to the chickens! Ditto if a bee-eater approaches the hives…) Insects, plants, fungi? Who cares if any of these are Red-Listed? We should all care: being nearer the bottom of the food chain, they are more important as food supplies to higher members of the chain. Their shrinking or disappearing populations could have catastrophic upward ripple effects among multiple species, higher and higher.
Hunting, climate change, deforestation, human population spread, prohibited wildlife trade, industries such as mining, general pollution: the possible reasons for threats to local flora and fauna are many. Answers? Enforcing hunting amounts and seasons; policing woodcutting and requiring replanting; cracking down on pollution and industrial abuses with tougher laws. Establishment of more national parks, with their own strict rules. All easy to say but of course very difficult

There are thought to be upwards of 250,000 Georgian Jews in the world today – the vast majority of them living in Israel. After perestroika policies in the 1980s softened emigration laws, and the subsequent collapse of the Soviet Union, Jewish people in all of the former Soviet states left to Israel or other Western countries en masse. What was once a thriving Jewish population, distinct from nearby Ashkenazi and Mountain Jewish populations, well integrated into non-Jewish Georgian culture, and influential in society,

quickly became small, fading clusters of the left behind and remnants of holy temples. If you are interested in Georgian Jewish culture and history, though, there is still plenty to explore in Georgia today. The historic sites tell the story of a people who made this land their home for centuries. Georgia was home to more than 80,000 Jews as recently as the 1970s. Today, the population is estimated to be between 3,000 and 10,000 people. In April
2018, the Government of Georgia recognized Georgian-Jewish relations as part of Georgia’s Intangible Cultural Heritage. During a ceremony at Tbilisi’s Museum of History of the Jews of Georgia, then-Prime Minister Giorgi Kvirikashvili said, “26 centuries ago, the Jews settled in Georgia and since then we have jointly created a common cultural heritage, which has made both Georgian and Jewish cultures [more] diverse. A 26-century friendship is impossible without the strongest love.”
The community members who remain have incredible stories of sacrifice and loyalty and faith, but also of isolation and poverty – particularly outside Tbilisi. The largest Jewish community outside Tbilisi was once the town of Oni in the mountainous

The Georgian Co-Investment Fund has announced a new project. Marriott International will build a five-star, Autograph Collection Hotel in the town of Abastumani in Georgia’s south-central Samtskhe– Javakheti region. The hotel will have 140 rooms with “spectacular views over the coniferous forest,” alongside a full list of ammenities

The ethno-menu will include: Dolma (stuffed grape leaves) with natural yoghurt and cinnamon; Gomi and Kuchmachi baked together; Gresta (beef or chicken with mushrooms and pepper baked in cheese); Beans (Lobio) served with traditional cornbread or pickles; Tashmijabi (potato mash); Ojakhuri (pork ribs) served with pomegranate mousse; mushrooms with stretchy cheese; and Abkhazura with eggplant and natural yoghurt.

The idea of creating the ethno-menu was catalyzed by the desire of the Meama team to go beyond the limits of the standard dishes presented in the vast majority of Georgian restaurants, to expand the variety of courses offered to guests and at the same time to find something interesting and innovative in the existing colorful Georgian cuisine. Chef Jegadze, with other members of the team, explored the gastronomy of the country and worked on the creation of the ethno-menu using recipes found in old cookery books. The launch of the ethno-menu does not only mean expanding the number of dishes, it includes conceptual changes in the restaurant too, as Meama has made a number of alterations to the interior dĂŠcor and has also created a special dinnerware line for the new menu. The ethno-menu is sure to attract not only visitors to Georgia, but will also intrigue locals, as the courses offered also represent a novelty for the Georgian population. With this new concept, Meama restaurant proposes a real culinary treat for guests.
dolMa (Stuffed grape leaveS) With MatSoNi aNd ciNNaMoN Dolma is a dish met in the national cuisines of a number of countries. From the first sight it may seem to be identical in every country, but the way it is served in each of them is so diverse in reality. In the ethnomenu, the chef of Meama Restaurant has revitalized the traditional recipe of Dolma and added a pinch of novelty to the dish. The new feature comprises of stuffing the grape leaves with the balanced mélange of lamb and beef and serving the course with ‘Georgian yoghurt’ matsoni, enriched with piquant taste of cinnamon. With the combination of these flavors the visitors of Meama will have an opportunity to enjoy a whole bouquet of marvelous tastes.
loBio (BeaNS) Lobio is one of the unalienable elements of traditional Georgian cuisine. It is a dish of various kinds of beans, enlivened with an assortment of herbs, including coriander and parsley, walnuts, garlic and onion. Meama’s Lobio will be served with cornbread and pickles. By adding Lobio to the ethnic-menu, Meama presents a marvelous opportunity for vegans to catch a taste of the Georgian culinary arts.
goMi aNd KuchMachi Gomi is a traditional dish from the Samegrelo region made of cornmeal and topped with Sulguni (stretchy) cheese. Kuchmachi is made with the heart, liver, kidneys, spleen and lungs of pig, calf or chicken. Kuchmachi is always garnished with pomegranate seeds and sometimes also with walnuts. Meama is planning to offer an interesting ‘integration’ of the dish, serving Gomi and Kuchmachi baked together. If someone says ‘pine tree’ to you during the winter season, your mind will most likely picture it dressed up for Christmas. But Georgians, with their age-old traditions, still do so much more than just sprinkle their pine trees with lights and baubles. Check out the options below, but first- let me introduce the Caucasian Fir. The Caucasian Fir (also known as the Nordmann Fir after Alexander von Nordmann, 1803–1866, the Finnish zoologist who “discovered” it) is a large evergreen coniferous tree growing to 55–61 m tall and with a trunk diameter of up to 2 m. In the Western Caucasus, some specimens have been reported to be up to 80 m. They are found in the Caucasus, Anatolia, the Russian Federation and the continent of Europe. The Caucasus Fir is one of the most important species grown for Christmas trees, with needles that are

piNe jaM & duSt Around May-time, Georgian pine grows bright orange soft “cones”. In a gust of wind, the dust from these growths blows into the air. It is the call to all health-conscious parents to get their kids up to the mountain resorts (particularly around Borjomi) to breathe in the curative properties! Those wanting to jar those health benefits pick the soft pine “hearts”, boil them with sugar and serve them with bread-and-butter, or just by the spoon.
piNe toothpaSte Pine heartwood is antibacterial, antifungal and germ-reducing. Toothpaste with this as an ingredient cleans the teeth thoroughly

while also helping to rid and prevent gingivitis. The ingredients of the wood also positively affect the overall oral flora.
cheWiNg guM This is a “love it or hate it” thing- with many Georgians having grown up in the dark post-Soviet days having this as their only kind of chewing gum (and as such, for them it is a matter of nostalgia to enjoy it). The bitter gum, made out of the sap of the pine tree and dried to solidity which only a time in your mouth can soften, has all the health benefits mentioned above, and gives your jaw a good exercise into the bargain. You can buy it in broken chunks at the roadside in and around Borjomi. To my knowledge, it has yet to be commercialized here.

Add sugar and simmer again for 2-3 minutes. Transfer the mix onto a damp cutting board and roll it out before cutting into diamond shapes.

HOW TO MAKE IT Boil and dice the meat, sprinkle with salt and fry. Sauté the finely chopped onions. For the sauce, combine finely chopped walnuts, all spices and the sautéed onions and dissolve the mixture in the meat broth (with fat skimmed off) and stir until it is the consistency of thin sour cream. Put the meat into the sauce and boil for 5 minutes, stirring continuously.
Gozinaki is a traditional Georgian dessert made especially for New Year’s Eve using nuts and honey. It is, by tradition, a symbol of prosperity and happiness, and no family table will be without it during the holiday. INGREDIENTS 500g walnuts, hazelnuts, almonds, sunflower seeds or peanuts 230 g honey 40 g sugar HOW TO MAKE IT Pour the honey in a pan and bring it to the boil, leave to cool, then boil and cool again twice more. Add the nuts on the last turn and stir, letting the mix simmer for 5-7 minutes.

INGREDIENTS (DOUGH) 200 g flour 100 ml water or milk 5 g yeast 5 g salt 2 g sugar 20 ml vegetable oil (FILLING) 200 g Imeruli cheese 2 hard-boiled eggs (GLAZING) 1 egg yolk 50 ml milk HOW TO MAKE IT Dissolve yeast and sugar in warm water or milk. Add to flour and salt and knead it into a soft dough with greased hands. Put it into a bowl, cover it with a cloth and wait 30 minutes before kneading again. Then leave it to rise. Grate or crumble the cheese and slice the hard-boiled eggs. Take a handful of dough, roll it into a round shape and spread the cheese over half of it. Top with the egg slices and fold the empty dough half over the mix and pinch the edges together. Put it on a baking sheet, brush on the glazing and bake at 230-250°C for 8 minutes.

Churchkhela, “the Georgian Snickers,” is the most popular Georgian dessert and is eaten year-round but especially in the autumn and during the New Year festivities. Most commonly made with nuts, you can opt to put in raisins and dried fruits instead (or as well as). Slice it and put it on your Christmas table for guests to pick at before or after the feast. INGREDIENTS 1 kg walnuts or hazelnuts 1 liter condensed grape juice (red or white) 150 g wheat flour HOW TO MAKE IT Thread a needle and push through the half walnuts or whole hazelnuts. When you have a string of nuts, tie a knot to make a loop. Heat the grape juice and add a quarter of it to the flour. Gently stir it until it becomes a smooth paste, then slowly add the rest of the grape juice and stir. Pour the mix into a saucepan and stir over a medium heat until it thickens. Now dip the threads into the hot grape paste, pushing the nuts deep into it with a wooden spoon, then

Pumpkin, while best known as a Halloween decoration in the West, is considered an important part of the New Year feast in Georgia, with locals seeing it as a symbol of prosperity and longevity. It is often brought to the house as a gift by the “mekvle,” the first guest of the new year. INGREDIENTS 1 pumpkin 100 g prunes 50 g black raisins 50 g dried apricots 50 g almonds 100 g walnuts 10 g honey ground cinnamon ground cloves 50 g sugar HOW TO MAKE IT Cut the pumpkin in half and empty it of flesh and seeds. Chop the fruit and nuts. Combine with the raisins, sugar, honey, ground cloves and cinnamon and spoon the mixture into the center of the pumpkin halves. Bake both halves in the oven at 180° C for around 50 minutes.

oldeSt WiNe cellarS iN georgia Georgia is one of the oldest wine countries in the world, if not the oldest. Within this wine country are also some of the oldest wine cellars. Ikalto, the Chavchavadze House, Alaverdi, Telavi, and Vardzia Terraces are just five of them.
iKalto The Ikalto wine cellar is located in the village of Ikalto which is roughly 10 km from the town of Telavi in the Kakheti region. In Ikalto a monastery named simply the Ikalto Monastery was founded in the 6th century by one of the 13 Assyrian fathers. In the 12th century, the Academy of Ikalto was formed. The students of the academy were trained in theology, rhetoric, astronomy, philosophy, geography, geometry, chanting, but also in other skills including pottery and winemaking. The monastery can still be visited today, and there, visitors will see the cellars where the wine was made.
chavchavadze houSe The Chavchavadze House in Tskhinandali s another old cellar. Alexander Chavchavadze was a well-known aristocrat of the 19th century. Chavchavadze loved Georgia and its agricultural value and potential and brought back vines from Frnce and began to grow them on his land in Kakheti. The resulting wine was awardwinning. Chavchavadze’s home is now a museum and hotel, and tours enable visitors to soak up the process of winemaking, ongoing even today.

alaverdi Located in the river Alazani valley in the Kakheti Province is the Alaverdi Monastery Cellar. The monastery was founded in the 9th century, but its wine cellar cellar dates back to the 11th. Restored in 2006, the cellar is now operating once more and making wine including the famous red Badagoni wine, matured in wooden vessels.
telavi A perhaps slightly newer wine cellar is the Telavi Wine Cellar located in the city Telavi, also in the Kakheti Province. Founded in 1915, this cellar has been producing wine for over a century. Due to its younger age, Telavi Wine Cellar combines modern equipment alongside the ancient practices and vessels to create great wine and uphold Georgia’s title as one of the oldest wine regions and one of the most superior.
vardzia Vardzia Terraces Winery located near the cave city of Vardzia is within the village of Khizabavra in the Samtskhe-Javakheti region. Vardzia Terraces operates on ancient grounds. Gvirabi (which means tunnel in English) is carved in the rock of the Caucasus Mountain Range. The tunnel was opened in 1962 for the World Wine Congress. In the beginning, it belonged to the government and wine from the entire Kakheti region was stored here. Nowadays, it is the Winery Khareba cellar, used to age wine. The constant temperature - 12-14 degrees, with around 70% humidity all year round, creates the ideal, natural conditions for wine to age in French oak barrels, as well as to store bottled wines for extended periods.
The tunnel consists of two main parallel tunnels and 13 smaller perpendicular ones. The total length of the entire tunnel is 7.7 km. The entrances to the long parallel tunnels have their own functions: the first is for tourists and is used for wine tours, while the second belongs to the industrial part, where the company stores and ages its finest wines in French oak barrels and steel tanks. In 2011, special tour facilities were created around the wine tunnel: a big recreational park, which includes the river and old Qvevries, as well as a Georgian water mill, traditional Georgian bakery Tone, a Chacha (grappa) distilling facility, a traditional Georgian marani (wine cellar) with the Satsnakheli (Georgian traditional wooden grape press) and other cultural sites. The tourism complex also includes wine tasting for more than 30 varieties of the best wines produced by Winery Khareba, as well as many other activities tourists can take part in: distilling Chacha, baking Georgian bread, making Chuchkhela, grilling meat (Georgian barbeque), and harvesting and pressing grapes in the Satsnakheli.

teliaNi valley paSt & preSeNt The story of Teliani Valley began in the 19th century when on the territory of the old wine cellar and winery of Prince Alexander Chavchavadze, a two-floor, 150 thousand-barrel winery was built at the decree of the Russian Emperor’s brother, Michael Romanov. In 1891, French winemaker Mossano from Bordeaux was invited there. He worked in Georgia for nine years and it was he who first introduced the European winemaking technologies to Georgia from local vines, and he who brought various French grape species to Georgia to cultivate. From all the foreign varieties, the Cabernet-Sauvignon cultivated at Teliani Valley worked best. Mossano sent the first bottle of Teliani Valley wine to the Emperor in Petersburg with the label, “Cabernet-Sauvignon, From Teliani Valley 1893, Antoin Mossano.” The wine was well-received, and it was Mossano and Teliani wine that made famous this small valley on the fertile soil of Kakheti. You can find Teliani and other Georgian-French wines and brandy of

different harvests in the old Tsinandali cellar. And though the first harvest of Teliani was over a century ago, and remembrances of Mossano have faded, one thing has remained unchanged: this is Teliani Valley, under the name of which Georgian wine has been produced with both Georgian and European methods for over 100 years. choKha & acceSSorieS The Georgian traditional Chokha has its roots in the 9th Century and has been worn across the Caucasus region as far north as Chechnya. The garment is made of wool and is typically worn by men. It was once designed to hold bullets and gunpowder. Currently, the Chokha is simply ornamental and has caught the interest of many Georgian designers, including Datuna Sulikashvili, Simon Machabeli and David Koma. Koma used the traditional Chokha for his London Fall 2017 collection to re-introduce the long-lost skills for making Chokha and present the established folk

costume to citizens of the modern era.
chiKhtiKopi Chikhtikopi is a traditional women’s hair accessory consisting of two parts: a headband and a veil. The headband is usually embroidered, coated or made out of beads, while the veil is attached to the headband and is usually edged by white cotton or silk and is see-through. Chikhtikopi was a necessary element of the traditional, national costumes and complemented the women’s dresses.
NaBadi Nabadi, made out of wool, is the national costume of Georgian and Caucasians in

general. The high squared shoulders and the long flowing “coat” was worn by men and had different features, such as a scabbard where a knife could be kept. The traditional national costume was even taken up by the Russian military in the 18th century as part of their uniform.
KaBalaKhi The woollen-silk mixture of Kabalakhi was worn by Georgian men and women and was known as being a warrior’s head cover. The interesting form and functionality of its use as a scarf is gaining popularity in its home country today. The scarf can be worn in many different ways and offers a sense of elegance, romance and a kind of fairytale touch.

If the purpose of poetry is to make us feel, the purpose of prose is to make us think. What if a work of fiction could do both? Fill our brains and feed our hearts at the same time? Vano and Niko is exactly such a work. A novel by Georgian author Erlom Akhvlediani, this collection of short parables blurs the boundary between poetry and prose.
vaNo aNd NiKo The literary critic Franco Moretti defines prose by “the rule of order over mood, of the permanent over the momentary, of quiet work over genius fed by sensation.” Poetry, by contrast, is a primal method of expression that dances around us with flowery flourishes and metaphors. Prose is
approach: “I would like to ask the reader, when he or she comes across something apparently incomprehensible in these stories, instead of trying to dig too deeply for meaning, to think in images.”
Akhvlediani is a follower of George Orwell’s rule: “if it is possible to cut a word out, always cut it out.” Vano and Niko features little character development, has no long descriptive paragraphs and is nearly free of adjectives. Akhvlediani has discovered that, in literature as well as in life, actions speak louder than words.
Each chapter of this book is a parable in its own right. Vano and Niko – polar opposites and the story’s only recurring characters – interact to reveal life lessons or universal truisms. Vano is gentle, kind and deferential. Niko is severe, selfish and quick to anger. In one memorable parable, “Stupid Vano and Clever Niko,” the contrast between these characters is expressed in particularly beautiful language. “Vano loved. Vano loved and cried,” the story reads. “Vano cried and laughed. Vano laughed and was still stupid.” And what of Niko? “Niko wasn’t stupid, since he did not love.”
This book certainly isn’t light reading, however. Nothing is handed to the reader. Everything must be understood. Some readers will find this book difficult. Translator Mikheil Kakabadze, anticipating that, asks readers to take a unique

and Niko was written during the 1950s and, due to its deep subject matter, has occasionally featured in university philosophy curriculums. Akhvlediani’s purpose in writing this novel is to teach us about ourselves. Vano and Niko represent the inner struggle for self identification that persists within each of us. Their relationship is constantly shifting; Vano isn’t always good and Niko isn’t always bad, and sometimes those labels mean nothing at all. But the story is a tug-of-war between our gentle, romantic self and our baser self, and in the end, Akhvlediani makes his choice. The two characters switch roles in the novel’s final chapter, “Vano and Niko and Niko and Vano.” Niko becomes Vano, who was “a good person and always did good things to others.” The now-transformed character is treating people with kindness for the first time and realizes that he has become who he wants to be, Vano. Vano becomes Niko, who was “an evil person and did evil things to others.” He decides that evil doesn’t suit him and desires to go back to being Vano. Ultimately, both characters are Vano, and the reader is left with a world in which people are good and do good things to others.
Me, Margarita ShoWS georgia through feMale eyeS By Ana Kordzaia-Samadashvili, published in English in 2015 by Dalkey Archive. Georgia is a patriarchal society, so we’re told. The Georgian family and community is ruled by Mama (“father” in Georgian, ironic to most foreigners) a man’s man with a bushy moustache, barrel chest and swollen stomach. Mama is tough but fair, and his stewardship is what keeps the household and village safe and calm during the storm. Mama is the backbone of Georgia. So we’re told. Mama is tough, most of the time. But standing behind – and sometimes in front of – Mama is Deda (“mother”) who is just as tough, more resourceful, and probably more instrumental in holding the home, community and country together. There’s Mama with his bold words and sound and fury, then there’s Deda with her calm strength and innate sense of responsibility.
This is Akhvlediani’s attempt at instructing the reader, showing that while a Jekyll and Hyde struggle goes on inside each of us, we have control over which comes out the winner. The story indeed has a message. But it’s more important for that message to be felt than to be understood.
Georgia’s story is usually told with male voices. It is written by male writers and features mostly male characters. It’s like stories told in most of the world. But in Me, Margarita, Georgian author Ana Kordzaia-Samadashvili has created a different narrative. Her Georgia is a story about women.

Me, Margarita is a book of short stories chronicling the experience of being a woman in Georgia. Each of the book’s 22 chapters features a female protagonist (or

group of them) enjoying the raptures of love, sex, friendship and motherhood. They also feel the pain of disappointment, loneliness, alcoholism and suicide. This book is bleak. But the tears are softened by black humor, like in this excerpt from An Insignificant Story of a Failed Suicide: “She ruled out the idea of hanging herself. She couldn’t possibly climb a tree to do it … The truth is she could barely climb the stairs. Never mind hanging herself, she’d never even managed to hang a picture.” Even the book’s most tragic moments occur without these women feeling self pity. In Nina, a story told by the critical voice of the titular character’s only friend, Nina is an ageing former debutante. She’s tired, drunk, and eventually discarded by a lover “who likes young women.” The decision she takes to end her life isn’t a display of strength, but it is carried out with wilful dignity. Me, Margarita is not a linear historical narrative. It tells Georgia’s story in fragments; a series of character studies where time, place and voice are often unclear to the reader. There are direct references to historical periods, however, such as in the first story, Me Margarita. The narrative begins in 1871 and charts the lives of a line of mothers and daughters stretching all the way to the 1990s. Later, we spend time in an apartment which withstood Tsarism and war, and later changed hands during Stalin’s collectivization drive during the early 1930s. Fast forward to 2004, and we’re given the chance to see Georgia through foreign eyes. The protagonist, whose name and country of origin are never provided, has this to say about the
And story about friendship country: “In this country, no matter who you ask, everyone says that everything will be alright and wishes will all come true … There are constant wars, or elections, they curse politicians the whole time, beggars are always running in the streets … It’s totally depressing, but still they are always happy.” This excerpt will resonate with anyone who has experienced Georgia as an outsider. It’s also an example of KordzaiaSamadashvili’s bittersweet tone. Life is hard, and everyone wants something better than what they have. But in these stories, a stubborn optimism grows out of the gloom. This is a book that breaks many taboos. Lesbian love and sex are treated as natural and acceptable. Drunkenness, lewd language and wanton sexuality are feminine behaviors. The book also contains an essay titled When A Parrot Flies Over You, offering the author’s views on love and sexuality. According to her, Georgia’s main contemporary problem is that the sexual revolution of the 1960s passed it by. Male characters also make an appearance in Me Margarita. And they aren’t villains. But the men usually aren’t present when the story begins, and they certainly aren’t there when it ends. They invariably lack strength. Notably, we rarely read dialogue spoken by a male figure. They often play key roles: father, husband, lover (usually absent or unreliable, in any case). But they rarely speak. They are merely spoken of.

Do You Know Where Your Christmas Tree Came From? By joseph larsen
The Christmas tree has been a cornerstone of yuletide celebrations in Europe and North America for more than 200 years. While common belief is that decorated trees first appeared in Germany during the 16th century, some maintain that its origins date back to the pre-Christian era. In any event, the Christmas tree spread from the Rhineland to homes across the continent, and this holiday season nearly 50 million households across Europe will adorn their living rooms with a particularly attractive species of tree, the Nordmann Fir. Consumers gush about its robust emerald color and soft needles, but how many are aware that the Nordmann Fir is actually the Caucasian Fir, and that the tree isn’t native to Germany, Denmark or Sweden, but comes from Georgia? Not many, according to Marianne Bols. Bols, along with her husband Lars, own a large Christmas tree farm in Denmark which specializes in harvesting and distributing Nordmann Firs. The seeds used at Bols farm are sourced directly from the area surrounding the town of Ambrolauri, in the Racha region of northern Georgia. While Bols and her

husband have been active in promoting awareness of the tree’s origin in the South Caucasus, she remarked that many consumers believe it is a seed sourced in Denmark, or Germany, or whatever. In today’s world of multinational value chains, the people behind the finished product are largely anonymous. Few European consumers are aware that the gorgeous tree standing in their living room is partially the fruit of dangerous, arduous work undertaken by Georgian

cone pickers. Caucasian Firs regularly reach 30 meters in height, and as any experienced picker knows, the best cones are found near the top. Pickers rarely use safety equipment and are paid only about .50 GEL ($0.2) per kilo of cones collected. Georgia’s immense forest wealth is publicly owned, with roughly 130,000 hectares available for cone harvesting. Licenses are distributed to individuals via auction, giving them the right to pick and sell cones on designated land. The best and most lucrative Caucasian Fir trees are found in Racha, a remote, mountainous region bordering the Russian Federation. The poorly regulated nature of the market has resulted in an annual “cone rush” in which laborers from across the country descend on Racha to harvest and sell cones, with or without the proper licensing. The annual influx of labor, coupled with the fact that the industry is heavily influenced by a small group of powerful buyers, has further depressed wages. While Racha is famed for its pristine natural beauty and rich folk traditions, it remains one of the country’s most impoverished regions. The region was underdeveloped even before Georgia’s succession from the USSR, then suffered from severe
