Instead, Prince Harry was using the occasion to disguise a very special event... a huge engagement party for his brideto-be, planned with the help of her co-stars and friends. “Everyone on set wanted to do something to celebrate Meghan and Harry’s engagement, as well as her leaving the show, so they arranged a huge party,” an insider tells Woman’s Day. “Initially, Meghan was nervous about people finding out about the

fter weeks of speculation and break-up rumours, Woman’s Day can reveal history has repeated itself for Sophie Monk – with insiders confirming she and Stu Laundy have been forced to draw a line under their relationship once and for all. Friends say the pub mogul, 45, was sick and tired of playing second fiddle to popular Sophie, 37 – so much so he decided to call it quits on the relationship. Now Woman’s Day has learned the Bachelorette winner is already relentlessly pursuing another woman.

“Stu couldn’t cope with the fact no one was really interested in him,” our source says. “He felt he was constantly fighting to even get a word in, because all the attention was on Sophie. He found it a big blow to his ego. “You have to remember, Stu is from one of the wealthiest families in Australia and he’s used to being the centre of attention. Sources say worried mum Terri, 53, is doing everything in her power to protect the family’s multimillion-dollar assets and has even been talking about asking Bindi’s boyfriend Chandler Powell to sign a pre-nuptial agreement – since Woman’s Day revealed he is set to pop the question any day now. “Of course Terri’s overjoyed Bindi and Chandler are so happy, but she’s always been cautious about them making

such a big commitment so young. She’s worked so hard to keep Steve’s legacy going since his death and she wants to make sure if things were to turn sour between Bindi and Chandler, it’s not the family business that suffers,” one source says.

HOTEL SHOWDOWN Terri’s fears that money could become an issue between Chandler and Bindi were reignited last week when Bindi was spotted footing the bill for what was supposed to be a romantic Sydney getaway. Bindi, 19, excitedly told us Chandler was taking her away for “a wonderful adventure” and “you can’t predict what will happen on a wonderful

adventure” – seemingly hinting that Chandler might finally propose. But things appeared to hit a roadblock when the couple were seen in a heated exchange outside the modest Airport Hotel in Arncliffe. Hands raised, a fed-up Chandler looked tense before he and Bindi decided to ditch their cheap digs for the 4.5-star Rydges Hotel in Sydney’s CBD. But as our exclusive pictures show, it was Bindi who was left footing the bill when the duo checked out the next day. The 1970s teen heartthrob, who was once almost deported from Australia after prompting mass hysteria from fans Down Under at the height of his music and television career, died of multiple organ failure following a battle with dementia. “David died surrounded by those he loved, with joy in his heart and free from the pain that gripped him for so long,”

ith his father under armed guard in hospital for a month and accused of multiple counts of child sexual assault, Australian tennis star Mark Philippoussis is enduring what must undoubtedly be the most difficult time in his life. But those close to the former tennis bad boy, 41, say his marriage to Silvana Lovin, 32, is stronger than ever, and they insist his wife has made him a better and stronger man as he faces one of his greatest challenges yet. Mark and Silvana – who were devastated when his beloved father was arrested and charged with 14 counts of child sexual abuse of nine-year-old twin girls in June – have been inseparable as the court case against the longtime tennis coach drags on. Nick, who has been in custody since his arrest, was last week revealed to be sick in a San Diego hospital when he failed to show at the North County Superior Court for a remittance hearing ahead of his trial next year. His defence lawyer Ryan Tegnelia told Woman’s Day Mark has chosen not to disclose why his father is receiving care. “It’s up to Nick’s son if he wants to tell people,” he says. “I can say he’s been in hospital for just over three weeks but can’t comment any further.” A source within the San Diego Sheriff’s Department adds that despite the fact he’s been awaiting trial at the San Diego Central Jail,

they suspect he’s under armed guard in a normal hospital. Mark has refused to comment publicly about his dad – who was his tennis coach through most of his career – and is believed to be standing by him ahead of the trial.

The illness prompted Mark’s infamous fall from grace. Not only did his success on the court suffer, but he began partying, driving fast cars and womanising – he famously dated a string of household names including Aussie singer Delta Goodrem, fellow tennis player Anna Kournikova and US stars Tara Reid, Paris Hilton and Jennifer Esposito. Once Nick recovered, the now 68-year-old said of his son, “[The partying] is gone. He had everything some people dream about. Now he has his surfing. No nightclubs, just surfing. I’m happy with that.” Nick is due to face his rescheduled remittance hearing on January 24, in which it’s expected his plea of not guilty to the charges – including two counts of oral copulation/sexual penetration of a child under 10 and 12 counts of lewd acts upon a child – will not change. He faces a maximum life jail sentence if convicted.

Chill overnight. 5 CHUNKY PEANUT FUDGE Make basic fudge, stir peanuts through. Pour into pan and dollop with peanut butter. Use a skewer to swirl peanut butter into top of fudge. ALMOND FRUIT MINCE PIES MAKES 16 PREP 20 MINS + CHILLING COOK 25 MINS F 1 ½ cups plain flour F ½ cup almond meal F 1⁄3 cup caster sugar F ¼ cup custard powder F 150g butter, cold, chopped F 1 egg, separated F 2 tbsp iced water F 1 tbsp demerara sugar F icing sugar, to dust FILLING F 410g jar fruit mince F ½ cup chopped mixed glace fruit salad (ginger, cherries, pineapple) F ¼ cup slivered almonds, toasted, roughly chopped F 2 tbsp brandy F 2 tsp grated orange zest 1 Preheat oven to moderate, 180°C. Lightly grease 16 patty pan recesses. 2 Sift flour into a large bowl. Stir in meal, sugar and custard powder. Using fingertips, rub in butter until mixture resembles fine breadcrumbs. Stir in yolk and enough

water to make a pliable dough. Knead lightly. Wrap in plastic wrap. Chill 20 mins. 3 FRUIT MINCE Meanwhile, combine all ingredients. 4 Roll out pastry between 2 sheets baking paper until 3mm thick. Using an 8cm cutter, cut 16 rounds. Ease into pans, pressing into sides. Using a 5cm cutter, cut out 8 rounds from remaining pastry (you may need to chill, then re-roll pastry). 5 Spoon 1 tbsp fruit mince into each case. Brush edges with a little egg white, top half the tarts with smaller rounds, pressing edges to seal. Cut two slits in top for a steam vent. 6 Cut small strips from remaining chilled pastry. Criss-cross 4-6 strips over remaining tarts. Trim to fit. 7 Brush tops with egg white and sprinkle with sugar. Bake 20-25 mins. Serve dusted with icing sugar.

ROAST BEEF ON MINI CRUMPETS SERVES 8 PREP 25 MINS + RESTING COOK 25 MINS F 1 cup milk, warmed F 1 tsp dry yeast F 1 tsp caster sugar F 1 cup plain flour, sifted F 2 tsp chopped thyme leaves F extra-virgin olive oil to serve TOPPING F ¾ cup creme fraiche F 1 tbsp wholegrain mustard F 1 tbsp chopped chives, plus extra to serve F 250g beef fillet (see tip) 1 Preheat oven to moderate, 180°C. Lightly spray a 24-hole mini muffin tray with oil. 2 In a jug, combine milk, yeast and sugar. Set aside 10 mins until frothy. 3 In a large bowl, combine flour and thyme. Season, then gradually whisk in milk mixture until smooth. 4 Spoon into recesses. Bake 12-15 mins until slightly puffed and golden. Transfer to a wire rack to cool. 5 TOPPING Combine creme fraiche, mustard and chives. Season. Heat a frying pan on high. Spray with oil and sear steak 2-3 mins, each side, until cooked to taste. Set aside, loosely covered, 5 mins. Thinly slice. 6 Serve crumpets topped with a little mustard, creme fraiche and a slice of beef. Drizzle with oil and sprinkle extra chives over.

Line two oven trays with baking paper. 2 In a bowl, toss zucchini, mint and oil. Season to taste. 3 Arrange two sheets of pastry on separate pieces of baking. Brush each lightly with egg. 48 WD

Scatter each sheet with half the grated haloumi. 4 Arrange a single layer of zucchini slices lengthways on top of cheese, using smaller slices to fill gaps. Top with remaining pastry sheets, brush lightly with egg. 5 Cut each pastry stack into 8 x 3cm strips. Cut each strip in halves to form 16 pieces. Working from the centre outwards, carefully twist each strip. Arrange on trays. 6 Sprinkle twists with parmesan. Bake 15 mins until warmed through. 4 Heat pancakes following packet instructions. Spread each wrapper with 1 tbsp plum sauce. Top with duck, cucumber and onions. Roll up to enclose. Secure with skewers to serve.

TROPICAL SPLICE WITH MOJITO FRUIT SALAD SERVES 8 PREP 55 MINS + FREEZING, CHILLING COOK 5 MINS F 1 litre mango sorbet F 1 litre good-quality vanilla bean ice-cream F 2 tsp finely grated lime zest 50 WD

F ½ cup caster sugar F ¾ cup water F 1 lime, eight wedges, wedges halved F ½ cup white rum F ¼ cup strained lime juice F 1 pineapple, peeled, quartered, cored, thinly sliced F 1 mango, seeded, thinly sliced F 1 kiwifruit, thin wedges F 1/3 cup passionfruit pulp F ½ cup micro mint sprigs

1 Line an 11 x 25cm, 6-cup loaf pan with plastic wrap, allowing ends to overhang. Spoon sorbet into pan, smooth surface, cover with plastic wrap. Freeze 1 hour. 2 Scoop ice-cream over sorbet, scattering with lime zest as you go. Smooth surface, cover with plastic wrap. Freeze overnight. 3 Reserve 1 tbsp sugar. In a medium saucepan, stir remaining sugar and water over medium heat, without boiling, until sugar

dissolves. Bring to the boil, then boil uncovered 1 min. 4 In a large heatproof bowl, combine lime pieces and reserved sugar. Use the end of a rolling pin to crush lime. Pour over warm sugar syrup, rum and lime juice. Add fruit, tossing to combine. Chill. 5 Rub the outside of the loaf pan with a warm cloth and invert onto serving platter. Peel away plastic wrap. Scatter with fruit salad and mint sprigs. Serve sliced.


COCONUT & RASPBERRY ICE-CREAM CONES

Make this ice-cream up to 1 week ahead.

SERVES 8 PREP 30 MINS + COOLING, CHURNING, FREEZING COOK 5 MINS F 2 cups coconut cream F 2 x 10cm stalks lemongrass, white part only, thinly sliced F 2 tsp ground star anise F 600ml store-bought vanilla custard F 100g coconut macaroons, lightly crushed F 8 waffle cones F ½ cup toasted flaked coconut F 100g frozen raspberries, crushed 1 In a medium saucepan, bring combined coconut cream, lemongrass and star anise just to the boil on medium. Transfer mixture to a large heatproof bowl. Cool to room temperature. Strain mixture into a large jug. 2 Stir custard into coconut cream mixture. Transfer to an ice-cream machine. Churn following manufacturer’s instructions until almost firm (or freeze 2 hours in a large metal container until firm around the edge, beat until smooth, cover and freeze until firm). 3 Scoop ice-cream into a bowl. Stir macaroons through. Spoon mixture into a 10 x 20cm loaf pan. Cover with plastic wrap. Freeze overnight. 4 Before serving, place ice-cream in fridge 15 mins to soften. Scoop ice-cream into waffle cones. Top with coconut and raspberries.

T his can also be made in a 24cm springform pan.

FROZEN SALTED CARAMEL CHEESECAKES MAKES 12 PREP 20 MINS + FREEZING F 274g packet Oreo cookies F ½ cup salted caramel sauce F 625g cream cheese, chopped, softened F 1 ½ cups sweetened condensed milk F 1 vanilla bean, split lengthways, seeds scraped F 50g caramel popcorn F 1 tsp salt flakes 1 Line a 12-hole muffin pan with straight-sided paper cases. 2 In a processor, process

cookies until fine crumbs form. Divide crumbs between cases. Press firmly with the end of a wooden spoon. 3 Spoon 2 tsp caramel sauce over each base. Run a teaspoon under hot water and use the back to spread the sauce evenly. 4 In same clean processor, pulse cream cheese, condensed milk and vanilla seeds until smooth. Spoon between cases. ICE CUBE TRAY CHOCOLATES MAKES 12 PREP + FREEZING 10 MINS Combine ¾ cup desiccated coconut, 2 tbsp condensed milk, 1 tbsp crumbled frozen raspberries and ½ tsp salt. Melt 300g dark chocolate. Dollop a little into 12 hole ice-cube tray, tilting to coat. Freeze 10 mins. Top with 2 tsp coconut mixture, then top with remaining chocolate. Freeze 20 mins. Tap lightly on bench to unmould. TOPPING Combine 100g melted white chocolate, 1 tsp oil and few drops pink food colouring. Dip in top half of chocolates. Place on a lined tray and sprinkle with extra crumbled frozen raspberries. Freeze 10 mins.

HEART CANDY CANE POPS MAKES 15 PREP + SETTING 10 MINS Line two trays with baking paper. Arrange 30 mini candy canes in a heart shape on trays. In a microwave-safe bowl, melt 290g bag white chocolate melts in 30-second bursts until melted, stirring. Divide ¾ between hearts, spreading evenly. Scatter 2 tbsp hundreds and thousands over. Allow to set. Use remaining chocolate to attach 15 pop sticks (remelt if necessary). Allow to set.

Using a 250g packet of triple wafer biscuits, cut 7 in half and set aside. Using 3 biscuits at a time, pipe a little melted white chocolate (using a 290g bag melts) along two long edges of one and then attach remaining 2 biscuits to form sides. Attach 2 biscuit halves to complete sleigh. Attach 4 Oreo halves to form wheels. Pipe chocolate along top of sleighs and sprinkle with cachous. Fill with assorted lollies.

Beat 125g butter with ½ cup caster sugar until creamy. Beat in 1 egg yolk. Fold in sifted combined 2 cups plain flour, 3 tsp ginger and 1 tsp bicarb soda with ¼ cup warm golden syrup. Roll out to 0.5cm thick. Cut shapes using a 10cm jumper cookie cutter. Place on lined tray. Bake 180°C, 12-15 mins. Cool. Prepare 2 x 330g packets royal icing. Tint half red using gel food colouring. Pipe an outline around cookies. Allow to set. Flood centre with red icing. Allow to set 1 hour. Pipe a pattern on cookies, using picture as a guide. Trim a mint leaf lolly to form Christmas tree and half mini marshmallows to form snowmen. Allow to set. 53

1 Cut a piece of the A4 paper in half lengthways. 2 Fold it back and forth to form an accordion shape. 3 Fold the accordion in half and tape the “U” together with double-sided tape to form a fan shape. 4 Repeat step 3 until you have three fan shapes. Stick

the three fans together to form a circle rosette. 5 Using a circle template or the bottom of a glass, mark and then cut a family photo into a circle shape. 6 Form a border around the photo by cutting a slightly larger circle from paper (or cardboard) in a different colour to your rosette, then stick the picture onto it. Stick the framed photo onto the centre of the rosette. 7 Attach a piece of ribbon to the present and stick the completed rosette on top.

Festive greeting card You’ll need F Coloured A4 paper or cardboard F Fabric remnants in complementary colours F Scissors F Lace edge scissors (optional) F All-purpose glue F Black felt-tipped pen F Ribbon or pompom tape F White paper 1 Fold the paper (or cardboard) in half and cut to form a card about 14 x 10cm. Cut the three open edges with scissors or create a decorative border with lace edge scissors. Do not cut the spine of the card. 2 Cut four small triangles from different pieces

of fabric. The triangles should easily overlap one another to create a Christmas tree shape. Mix and match different fabric patterns for a more whimsical design. 3 Organise the pieces of fabric on the front of the card then put glue on the back to fix them in place. Draw a small tree trunk below the bottom triangle with the black felt-tipped pen. 1 Layer 3 to 4 sheets of newspaper, then fold them once or twice and push inside the T-shirt to form a barrier between the front and back. 2 Wash the potato, dry and cut in half. Press the cookie cutter into the flat surface and cut around it using the knife to leave a raised shape. Remove cookie cutter. Cut a small rectangular tree trunk from the other potato half. Pat potato stamps dry. 3 Apply a thin layer of green paint to the tree stamp with a brush and press stamp on the T-shirt. Clean excess paint from edge with a cloth or brush and repeat to make two more pine trees on the T-shirt. 4 Brush the tree trunk stamp with the blue paint and press under trees. Dry overnight, then iron to set colour. 5 Using the needle and thread, sew the buttons to the top of the trees.

Preheat oven to very hot, 220°C. Grease a scone tray. Sift 2 cups self-raising flour into a bowl. Rub in 30g butter.

W

hile blood tests and heart monitors do their job, did you know you can track wellness levels by taking a look through “nature’s window”, the eye? Iridology, a science used by natural therapists for more than 100 years, is a non-invasive

way of assessing the body by holding a magnifier to the eye. “Iridologists believe the fibres and pigmentation in a person’s iris can show potential future or current weaknesses,” says Will. Among other celebrities, Will has treated Miranda Kerr’s husband Evan Spiegel and now, exclusively for Woman’s Day, he assesses the irises of Goldie, Jen, Lisa, Delta and Kate! Here’s what their peepers tell us...

Goldie Hawn

I believe Goldie may have what’s called a lymphatic rosary, which looks like a string of pearls near the outer edge of the iris. Iridologists have linked this with potential for swelling or swollen sinuses or lung congestion, stagnant lymph nodes and aching joints. More specifically, magnification of Goldie’s eyes show flattening around the bottom third of the pupil, which can be indicative of spinal cord subluxation in the lower back. 62 WD

I’ve seen magnified photos of Jen’s eyes, and she appears to have lymphatic dots. These are indicated by white dots that go in a circular fashion around the iris, which is sometimes considered an indication of stagnation through the glands, or even some poor breathing under stress. I would consider she get some adrenal support.

Kate has some brown pigments, known as liver spots, randomly dispersed throughout the iris. An iridologist considers stress and other factors in the nervous system as the most common defining factors. There’s also a separation of fibres revealing darker layers underneath just inside the centre of the iris, which is the field for the uterus. It’s well documented Kate suffers from hyperemesis gravidarum during pregnancy.

A devoted penfriend

Irene Rivan’s letter (WD, November 13) about writing to a penfriend over 60 years struck a chord with me. I’m still writing to a penfriend after 74 years! During World War II, The Herald (Melbourne) newspaper asked folk to send food parcels to England, and my mother sent me to The Herald office requesting a penpal. Mrs Rumens, who had a daughter the same age as me and one older, received our parcels over the war years. Tea with Gran When I was young, I used to stay with my granmumma. She had a pond outside of her lounge room window – brimful of waterlilies.

Years later, I was sitting down having tea with my granmumma when my friend returned for a visit. And the magic of a childhood memory was revealed! I had to laugh aloud at my childish recollection. So many years had passed, until I’d made the connection.

When the first season of Struggle Street hit our screens two years ago, it ignited a national debate about the impacts of social and economic disadvantage in Australia – and the second season aims to do much of the same. Filmed over six months in Queensland and Victoria, viewers will hear from the forgotten battlers struggling to stay afloat. In the first episode we meet Norma, who provides shelter for Indigenous youth despite living in poverty, and has been evicted. It also explores the daily challenges facing those who live with mental and physical illness.

It’s been described as “one of the finest offerings of the year”, and for good reason. ‘My wife almost divorced me!’

H

e’s been married more than two decades, so it’s safe to say Brendan “Jonesy” Jones has the art of maintaining a relationship covered. But it seems his new book, based on his personal life and media career, has caused quite a stir in the Jones household! “I didn’t think of the consequences of the book. Helen almost divorced me because she didn’t like my portrayal of our early meeting. “And there’s a lot of stuff in there about my escapades during my teens. My son Dominic is in year nine [there’s also Morgan, 25, and daughter Romany, 20] and wants to put the book in his school library. I was like, ‘Oh, God!’” the radio star laughs.

In the book Jonesy, 49, also opens up about his relationship with WSFM radio co-star Amanda Keller, 55, and by the sounds of it, parts of the story have left her unimpressed, too. “Amanda is reading the book at the moment and she said, ‘I don’t think I’d have liked you when you were younger.’” Thankfully the pair now share a close bond, both in and out of the studio. “I can’t imagine doing a show without her. We have that brother-sister bond. When I first met her I was instantly smitten,” he gushes. Jonesy and Amanda even hang out at weekends. “We’re always around there for dinner.
