You may be confused on where to start and a great place to begin is understanding when your return and payments are due as well as what options you have. Think about whether or not you want to file your taxes yourself or if you want to reach out to a professional - there may be more complicated and unexpected tax situations this year that you need to take into consideration. Lastly, gather your relevant documents in advance and anticipate that there could be delays.

2. Utilize the online / virtual options available Online tax filing software is a great resource that is even more popular now with the virtual world that we are living in. You can e-file your Rhode Island State Income Taxes for Tax Year 2020 online and check out the State of Rhode Island Division of Taxation website to download necessary tax forms. Additionally, check online for COVID-19 related information as changes will be reflected on government sites!

Ashley Bendiksen, who won the title of Miss Rhode Island for 2021 - 2022 in the Mrs. America Pageant, is a mentor and professional speaker. She supports teenagers and women as they escape from abusive relationships and develop personally and professionally. Ashley credits her first pageant experience at age 17, later winning the title of Miss New Bedford 2009 at the age of 22, with helping her to initially develop her speaking and business skills. These skills remain central to Ashley’s life and work today. Ashley’s expertise in helping women comes from personal experience as she survived several abusive relationships, from professional experience working with the judicial system and from academics as she graduated from Salve Regina University as the class valedictorian. Currently, Ashley shares her personal wisdom as she mentors teenagers and adults leading them to develop positive mental health, healthy relationships, confidence and self-esteem. She also helps with career planning and learning to be an effective speaker. Her recent book, The Language of Time, describes Ashley’s role as caregiver for her mother who suffered with Alzheimer’s Disease. She relates her own experiences as she strives to create solidarity among caregivers, because caregiving can be so isolating. It is designed to support current, future and past caregivers. As Miss Rhode Island, Ashley will be speaking for a variety of not-for-profit organizations, helping them with their fundraisers and mentoring their youth members. Ashley encourages everyone to develop their speaking skills and recommends that they: • •

Be genuine. Don’t try to be fearless or perfect. Just be yourself and have a conversation with your audience like you were talking to a colleague or friend. Practice. It will make you feel better. You won’t do a great job the first time. You may feel uncomfortable. That is perfectly fine. Don’t give up. Think

of speaking like going to the gym after a long absence or for the first time. You will do better and feel better each time. Select your best audience. Decide who might benefit the most from your expertise. Share your lessons. Think about what you know that your audience wants to know. There are lots of opportunities to speak for not-for-profit community service organizations, chambers of commerce and youth groups. You might initially donate your time for practice or trade your speaking for opportunities to record demonstration footage and garner testimonials. Find a mentor. Identify other successful speakers and see if they will offer you advice. They can help with everything from the craft of effective speaking to finding opportunities.

If you are considering pageant participation for your daughter: • • •

Look forward to her building confidence, self-esteem, leadership, speaking and empowerment skills. Make sure your daughter wants to participate. It is a big commitment. Do not force it. Ashley did not develop her interest until age 17! Find the right pageant for your daughter. There are many different options. Take some time to learn about each one. Select one that is consistent with your values and offers great well-rounded opportunities.

Whether we’re working at home or in an office, most of us are spending eight hours or more, five days a week, sitting at our desks. Finding time to exercise can be difficult with post-work exhaustion and our busy schedules, but it is SO important for both physical and mental wellness. Stand with your feet apart and arms extended straight out, horizontal to your shoulders. Move your arms forward in small circles for 30 seconds, and then backward for another 30 seconds. Repeat twice.

Grab a stationary chair - no wheels! Move your body off the edge of the chair, leaving only your hands on the seat facing forward to keep you up. Extend your legs to a comfortable position and your feet in line with your hips. Lower your body down so that your elbows bend between 45 and 90 degrees. Use your palms to push your body back up. Complete 2 sets of 10 repetitions.

Stand in front of your chair with your feet in line with your shoulders. Keeping your body weight in your heels, lower yourself in a sitting position down to your chair, and then back up to a standing position. Make sure you are stopping your squat before you touch the chair no sitting down yet! Complete 2 sets of 10 repetitions.

Stand behind your chair with your feet in line with your hips. Using the back of your chair for support, slowly raise your heels until you are in a tip-toe position. Lower your heels back down to the floor. Complete 2 sets of 20 repetitions.

Sit comfortably in your chair. With your hands placed behind your head, lift the opposite knee up to meet your elbow, and return back to your seated position. Alternate between your left and right side. Make sure you’re engaging your core! Complete 2 sets of 20 repetitions.

Romantic Dinner Recipes If you’re planning a date night at home, these romantic dinner ideas will make the experience even better! Date night should be special, so it’s fun to step outside of your comfort zone and try some new dishes that you can make together as a couple.

Appetizer: Cheese

Fondue

Total Time: 25 minutes | Servings: 6

Ingredients: - 1/3 pound firm alpine-style cheese such as gruyere - 1/3 pound fontina - 1/3 pound gouda - 2 tablespoons cornstarch - 1 clove garlic minced

- 1 cup dry white wine such as Sauvignon Blanc - 1 tablespoon fresh lemon juice - 1 tablespoon brandy - 1 teaspoon Dijon mustard - 1/8 teaspoon nutmeg

Fondue dippers options: baby potatoes, broccoli florets, cauliflower florets, asparagus, button mushrooms, cherry tomatoes, Granny Smith apples, sausage, assorted breads

Directions: 1. Grate all of the cheeses. In a medium bowl, combine the cheeses with the cornstarch, tossing thoroughly to coat all pieces. 2. In a stove-safe fondue pot or large heavy saucepan, bring the wine, garlic, and lemon juice to a simmer over medium-low heat. Add the cheeses to the simmering liquid a little at a time, stirring well between each addition to ensure a smooth fondue. Once smooth, stir in the brandy, mustard, and nutmeg. 3. Arrange an assortment of bite-size dipping foods on a platter. If necessary, carefully pour the fondue into a fondue pot. Serve with fondue forks or wooden skewers. Dip and enjoy!

Ingredients:

- 1 Tablespoon Olive Oil

1. Preheat oven to 375 degrees. In a large oven-safe skillet heat oil over medium-high heat. Season chicken generously with salt and pepper and sear until golden, about 4-5 minutes per side. Transfer chicken to a plate.

- 3-4 Large Chicken Breasts - Salt - Pepper - 2 cloves Garlic (minced) - 1 teaspoon Thyme - 1 teaspoon Red Pepper Flakes (may add only ½ teaspoon for less spice) - ¾ cup Chicken Broth - ½ cup Heavy Cream - ½ cup Sundried Tomatoes (chopped) - ¼ - ½ cup Freshly Grated Parmesan Cheese - Fresh Basil

2. Return skillet to medium heat. Add garlic and cook for 1 minute. Stir in thyme, red pepper flakes, chicken broth, and heavy cream. Cook for 5 minutes, stirring often. Stir in sundried tomatoes and parmesan cheese. 3. Return chicken to skillet and spoon sauce all over the chicken breasts. Bake until chicken is cooked through -- about 15-18 minutes. Garnish with basil and grated parmesan cheese, if so desired.

Dessert: Chocolate

Raspberry Hearts

Total Time: 40 min | Yields: 20 pieces

Ingredients: - 1 cup dark chocolate chips - 2 teaspoons coconut oil - 1 teaspoon raspberry flavor

Directions: 1. Place the chocolate chips and coconut oil in a microwave-safe bowl. Microwave the chocolate chips and coconut oil in 30-second batches, stirring between each round. You may have to do this for 3-5 rounds to get the chocolate completely melted and thin enough to pour into your molds. Stir in the raspberry flavoring.

For Valentine’s Day this year, consider making your sweetheart (or yourself!) this delicious and decedent homemade, 3-course meal that will leave you wanting for seconds!

Next, place the molds on a baking sheet and use a spoon to fill each mold with the chocolate mixture. You should have enough chocolate to make between 20-22 hearts. Then, place the molds into your freezer for at least 30 minutes to set. Once the chocolate hearts have set, you can remove them from the molds. Serve the hearts at room temperature or chilled.
