Donna McCarthy is an artist and educator residing in Southern Rhode Island. She received her undergraduate degree from the School of Visual Arts in New York and her Master’s Degree from Northern Arizona University. She has lived in and taught art for over 35 years in Arizona, New York and Rhode Island mostly in underserved rural or inner-city schools. Four years ago, she fulfilled her lifetime goal of moving to Rhode Island, when her daughter Helena decided to go to Dean College in nearby Massachusetts. Last year Donna and two of her colleagues began publishing a children’s digital magazine, The Bubblah written by and for children from prereaders to high school throughout the English speaking world. It includes activities, stories, art, recipes, physical fitness suggestions, videos, games and puzzles. Children (and adults) are encouraged to submit their writing and art work for consideration for publication. All written material will be reviewed by a professional editor who will provide feedback to authors and, if the article is accepted, iterate with the authors until the article is ready for publication. The youngest artist published was 4 years old. The magazine also sponsors contests to encourage students to develop art and articles suitable for publication. The magazine is published 4 times per year and is available, by subscription at no charge. Donna has published seven books for children. Four of these are in the Some Peoples™ series for pre-readers, one is a stand-alone book for pre-readers (Not Your Everyday Alphabet) and two are for primary school students. The pre-reader Some Peoples books include books about grandmas, grandpas, dogs and teachers. The books for primary school children include: The Ballerina with Really Big Feet and Toenail Soup (a book of silly poems).

Donna Offers some suggestions on helping your child’s development: • Be sure to include art education and creative endeavors in your child’s activities to help with developing autonomy, cognitive ability, decision making, empathy and problem solving • Balance screen time with tactile activities such as reading, outdoor play and manipulating non-electronic things with their hands. • Help your children to dream by fostering imagining. Try to help them see a pathway to reaching their dreams rather than discouraging them because ideas may seem unrealistic. • Encourage your children to be philanthropic and do things for others such as planting flowers, reading stories to the elderly, preparing care packages for the less fortunate. • Read something every night, even if the reading involves comic books. & Stuffing Crescent Rolls

Total Time: 45 min. | Yields: 16 servings

Ingredients: - 2 cans crescent rolls - 1 1/2 cups turkey leftover and shredded - 1 1/2 cups stuffing leftover

- 1 1/2 cups cheddar cheese shredded - 1/3 cup green onions chopped

Directions: 1. Pre-heat your oven to 375°. Separate each crescent roll. 2. Add a bite of cheese, a bite of stuffing, a small pile of turkey, and a sprinkling of green onions in that order. 3. Roll each crescent up, per the instructions on the can, and place on an un-greased cookie sheet. 3. Bake at 375° for 11 to 13 minutes or until the crescent rolls turn a golden brown. 4. They’re best served while warm, right out of the oven.

- 1 leftover turkey carcass (from a 10- to 12-pound turkey)

1. Place the turkey carcass in a stockpot; add the water, onion, salt and bay leaves. Slowly bring to a boil over low heat; cover and simmer for 2 hours.

- 2 quarts water - 1 medium onion, cut into wedges - 1/2 teaspoon salt - 2 bay leaves - 1 cup chopped carrots - 1 cup uncooked long grain rice

2. Remove carcass; cool. Strain broth and skim fat. Discard onion and bay leaves. Return broth to the pan. Add the carrots, rice, celery and chopped onion; cover and simmer until rice and vegetables are tender. 3. Remove turkey from bones; discard bones and cut turkey into bite-size pieces. Add turkey and cream soup to broth; heat through.

- 1/3 cup chopped celery - 1/4 cup chopped onion - 1 can (10-1/2 ounces) condensed cream of chicken or cream of mushroom soup, undiluted

Instead of re-heating and re-serving boring leftovers, transform the remnants of your feast and extend the holiday spirit to the day after, with these fantastic recipes!

Ingredients: - 2 1/2 cups of stuffing - 4 cups of stale 1 inch bread cubes - 1 1/2 cups half n half - 1 - 2 pears - 1- 2 sprigs of rosemary - 5 eggs

- 1/4 tsp salt - Some cranberry sauce - Extra chopped parsley - Leftover turkey shredded - 1/2 cup shredded cheddar cheese

Directions: 1. Place half and half in a saucepan with the rosemary. Bring it to a boil and turn off the heat. Add the shredded turkey and let the herbs steep for about 20 - 30 min. Then remove the rosemary sprig. 2. Preheat oven to 350°F, and butter a 9 x 5 inch oven proof dish. 3. Break the eggs into a bowl, and whisk them with the cooled rosemary infused milk mixture and turkey and salt. 4. In a large bowl, place the stuffing, bread cubes, pears and parsley and mix to combine. Add the custard (milk, egg, turkey mix) and mix well. Pour half of this into the buttered dish. Pour some cranberry sauce on top, and place the other half of the bread pudding mix over it. Push down and leave for a few minutes to help the bread pieces soak up the custard. 6. Spread some more cranberry sauce on top and sprinkle cheese and salt over it. Cover with foil and bake in preheated oven for 20 minutes. Uncover and bake for a further 10-15 minutes until the cheese is bubbling and the custard has set. Serve warm, with maple syrup.

Pump your septic prior to having guests over. The last thing you want to do is have a septic emergency pop up just as you and your guests sit down to eat! Properly dispose of grease. That holiday ham sure is delicious, but you should never dump the grease down the drain. It can cause damage to your system! Dump grease in a glass jar and throw it out. Cut down on water usage. Try to limit the amount of water you use, for example only run the dishwasher when it is full. Flush with care. An important reminder to only flush natural waste down the toilet. We get it, nobody likes fruitcake, but don’t flush it!

Typically septic pumpings should be performed every 2-3 years, but with COVID-19 more people have been staying home the past 2 years. Pumpkin Spice White Hot Chocolate

Apple Cider Mojito

Ingredients:

Ingredients:

1 1/2 cups whole milk

4 oz apple cider

1/2 cup canned pumpkin puree

3 oz cinnamon simple syrup (ingredients & recipe included)

1/2 teaspoon pumpkin pie spice

3 oz Applejack (Liard’s)

Pinch of ground cloves

4 oz white rum

1/2 teaspoon vanilla

Diced apples (skin on)

Pinch sea salt

Mint leaves

2 ounces of white chocolate (roughly chopped)

Cinnamon sticks

Whipped cream

Cinnamon Simple Syrup Ingredients

Instructions:

1. In a small saucepan over medium heat, combine milk, pumpkin and spices. Cook stirring constantly until just simmering 2. Remove from heat and add chocolate (reserving some for garnish) and stir or whisk until melted. 3. Pour into mugs. Top each mug with a generous amount of whipped cream, a few shavings of white chocolate and a sprinkle of pumpkin pie spice or cinnamon. 4. Serve immediately

1. Place 1/4 cup sugar, 1/4 cup plus 1 tablespoon water and half of a cinnamon stick in a small pot. 2. Bring the ingredients to a boil and then turn off the heat and allow the mixture to sit and cool to room temperature. 3. Pour into a mason jar and store in the refrigerator until ready to use.

Mojito Instructions: Tip: You can make a larger batch (8-10 servings) in a slow cooker: Add 6 cups of milk, 2 cups canned pumpkin puree, 2 teaspoons pumpkin pie spice, 1/4 teaspoon ground cloves and 2 teaspoons of vanilla extract to a slow cooker. Use a whisk to combine as fully as possible. Add 8 ounces of finely chopped white chocolate (or white chocolate chips). Set the slow cooker on low for 2 hours or until the chocolate is fully melted and the mixture comes to a good temperature

1. Combine cider, cinnamon simple syrup, Applejack and rum in a cocktail shaker or glass measuring cup; shake or stir well. 2. In 2 serving glasses, muddle mint to desire. Fill both glasses with ice. 3. Add small handful of diced apples and your cider mixture evenly into the 2 glasses. 4. Garnish with a cinnamon stick and extra mint leaves.

According to Smithsonian Magazine, an estimated 22 million tons of salt are scattered on U.S. roads every year. To put that into perspective, that’s about 130 lbs. of salt for every American.

It also damages the vegetation that wildlife feed on by changing the chemical structure of the soil. If you’ve noticed how road salt can corrode the paint on your vehicle if it’s not clean, it’s easy to see how road salt damages roads, bridges, vehicle parts, and equipment after years of heavy salt use. According to the New Hampshire Department of Environmental Services, “The cost of corrosion damage and corrosion protection practices for highways and the automobile industry has been reported to cost a staggering 16-19 billion dollars per year.” That’s where Safe Road Services comes in to make a difference.
