Kat loves the hills, rivers, streams, and ocean shoreline which provide ideal locations for weddings in Rhode Island. For example, recently she planned a wedding ceremony at sunrise in Narragansett, followed by a day of sightseeing on Block Island and an evening cake cutting ceremony at the North Light on Block Island. Thirty sea lions happened to be nearby. While Kat and her husband moved to Rhode Island a few years ago, they have ties to our state. Craig Kinsley, the Men’s and Women’s Track and Field Throws Coach at Brown University is a Brown University graduate. Craig and Kat also have family living in Portsmouth. Kat recommends hiring a creative photographer who is familiar with planning elopements and small weddings. If you are planning an elopement here are some of the steps that are involved:

•

Select the location, landscape and timing for your event. Do you have a special destination? Do you want to

get married by an ocean, lake, mountain or stream? Kat recommends weekdays, rather than weekends because tourist locations may be less busy. She also recommends getting married an hour or so after sunrise or an hour or so before sunset to avoid crowds and for the best lighting for your photos. Attend to the necessary logistics. Contact the county clerk where you wish to be married. Find out the process for obtaining a marriage license in that county. You will probably need to appear in person a day or two before your wedding with requisite documentation. Find out exactly what you will need so that you will have a successful experience. You might, for example, need to have your social security card, birth certificate, or in a few states the results of medical tests. After the wedding you will need to file appropriate paperwork to obtain your marriage certificate.

While Kat recommends hiring a professional photographer, if you decide to have a relative or friend make your photos she suggests: • Arranging your day to allow your photos to be made early in the morning (during the first hour after sunrise) or late in the afternoon (during the last hour before sunset). • Following the rule of thirds in making photos, so the face (or eyes if close up) are in the middle third of the photo, allowing sky (or other background) above the people and some foreground below the people as well as background on the sides.

Avoiding having people face directly into the sun while taking the formal photos. People are more likely to squint.

Do experiment with back lighting and side lighting with your camera to be sure you get nicely lit photos.

Be sure your photographer can make you feel at ease,

talking with you and/or encouraging you to speak with your partner rather than concentrating on the camera.

Appetizer:

Caramel Apple and Brie Skewers Total Time: 10 min. | Yields: 6 servings

Ingredients: - 2 medium apples, cubed - 1 log (6 ounces) Brie cheese, cubed - ½ cup hot caramel ice cream topping

- ½ cup finely chopped macadamia nuts - 2 tablespoons dried cranberries

Directions: 1. On each of 6 appetizer skewers, alternately thread apple and cheese cubes; place on a serving plate. 2. Drizzle with caramel topping; sprinkle with macadamia nuts and cranberries.

Main Entree:

Grilled Apple Cider Thyme Chicken Total time: 25 min | Serves: 4 servings

Ingredients: - 1 onion - 4 garlic cloves - 2 cups apple cider - 2 tbsp olive oil - 6 sprigs fresh thyme - 1 tbsp apple cider vinegar - 2 tsp Dijon mustard - 1 tsp salt - 1 tsp brown sugar - ½ tsp freshly ground black pepper - 8 chicken boneless skinless chicken thighs Nothing says fall more than a crisp, chilly day of apple picking.

1. Peel the onion and garlic, then roughly chop them and add them to a large ziplock bag (or tupperware).

- 6 large apples (3 granny smith, 3 sweeter variety) - 1/4 cup light brown sugar - 1/4 cup granulated sugar - 3 Tablespoons corn starch - 1 Tablespoon ground cinnamon - 1/4 teaspoon ground nutmeg - 1/8 teaspoon ground cloves - 3/4 teaspoon salt

- 3/4 cup butter, cut into cubes - 1 1/3 cup old fashioned oats - 1 1/2 cups flour - 1/2 cup light brown sugar - 1/2 cup granulated sugar - 1/4 teaspoon salt - 1 Tablespoon ground cinnamon

2. Add in the apple cider, olive oil, fresh thyme, apple cider vinegar, mustard, salt, sugar and black pepper. 3. Smoosh everything together until well combined and then add in the chicken thighs. 4. Carefully turn the ziplock bag over so the chicken is well coated and then place in the refrigerator to marinate for at least 4 hours (up to 24 hours). 5. Preheat the grill or griddle pan. Cook the chicken over a medium high heat for 8 minutes until you have a nice charred crust. Flip the chicken and cook for a further 8 minutes. 6. Check the chicken is cooked through and then serve with a garnish of fresh time and some slices of lemon.

Directions: 1. Butter a 9 x 13 in pan and preheat oven to 375°F. Set the pan aside. 2. In a large bowl mix together the sugars, cornstarch, spices and salt. 3. Peel and core apples before slicing into thin 1/8 – 1/4” slices. Add the apples to sugar mixture and toss to combine. Add the apples to the buttered dish and arrange in an even layer. Set aside. 4. In a medium bowl, stir together the oats, flour, sugars, cinnamon, nutmeg and salt. Use pastry cutter, a fork or your hands to cut the butter into the mixture until it resembles wet sand and clumps together. Sprinkle the mixture evenly over the apples. 5. Bake at 375°F for 10 minutes before reducing the temperature to 350°F and baking for 35 more minutes or until the topping is golden brown and the apple layer is bubbling. In 2010, The Presto Strange O Coffee Co. began its journey on a trailer. According to Smithsonian Magazine, an estimated 22 million tons of salt are scattered on U.S. roads every year. To put that into perspective, that’s about 130 lbs. of salt for every American.

SAFE MELT™ is a powerful de-icing product from Safe Road Services that can be used to reduce the amount of harmful chloride ions introduced to the environment from road salt by as much as 50%. When the ice and snow melts, all of that salt has to go somewhere - which happens to be a big problem for waterways, soil, and our infrastructure. It also damages the vegetation that wildlife feed on by changing the chemical structure of the soil. If you’ve noticed how road salt can corrode the paint on your vehicle if it’s not clean, it’s easy to see how road salt damages roads, bridges, vehicle parts, and equipment after years of heavy salt use. According to the New Hampshire Department of Environmental Services, “The cost of corrosion damage and corrosion protection practices for highways and the automobile industry has been reported to cost a staggering 16-19 billion dollars per year.” That’s where Safe Road Services comes in to make a difference.
