Carlene Walker is a chef and loving mother and wife who is passionate about hospital food. She joined the Culinary Strategy & Innovation team as their newest Patient Corporate Research & Development Chef in October 2022. Before joining the corporate team, Carlene was the REC for the Kansas City market as well as the System Executive Chef and Associate Director at Truman Medical Center. With her background working in the field she brings extensive knowledge to the role.

What are you most excited about in your role as the Patient Corporate R&D Chef?
I am most excited about evaluating the dining experience for our patients, from our food being flavor forward to the presentation of our food on a plate. Why can’t food that a patient receives be presented like it is in a restaurant?
What’s the importance of incorporating regional favorites in the patient menu?
Regional favorites are absolutely an important piece of the patient menu, because they offer comfort to the patient. It’s important to bring that comfort to patients to help heal their bodies during their stays in the hospital.
What else is important to the patient culinary experience besides the food?
Also, of course, the joined partnership with the marketing team is helping the food come alive with fun new patient marketing kits, cart wraps, and much, much more!
Are there any trends you’re excited to bring to the patient dining experience?
I’m really excited about bringing bold flavors to the patient menu. Our patient population is continue to change. No longer is it mainly Baby Boomers in the hospitals; we’re seeing more Gen Xers and Millennial. These younger generations’ taste palates and expectations crave adventure, even while in a hospital.
Can you expand on what you mean by bold flavors?
Authenticity is critical in what we put on our menus. For example, if they’re getting Chicken Mole, then they are expecting an authentic version packed with flavor featuring chili peppers, nuts, fruit, chocolate, and spices. There is a growing demand for multicultural cuisine in our country as more cultures continue to intertwine. From a trend standpoint, experimenting with bold flavors continues to explode in popularity, fueled by social media and cultural exposure via travel and increased movement.
For the past eight years, we’ve focused on making our hospital cafés an exciting destination for guests to get food they crave. Now, it’s time for us to transform the patient dining experience. Chef Carlene Walker has been appointed as Morrison’s Patient Corporate Research and Development Chef, and her responsibilities in this role include selecting and vetting patient care recipes, introducing new brands and limited time offers, and serving patients their favorite regional meals. The Morrison Culinary Strategy and Innovation Team has also removed over 7,000 recipes, cleaned up the dirty dozen, and introduced Real Cadence to the patient dining line, all in an effort to enhance patient dining.
Now, it’s time to engage the field, generate excitement, and gather feedback by hitting the road with our Culinary Expos. These expos enable us to share what we’ve been developing at the corporate level, brag about the amazing things the field is doing, and inspire you to make each patient’s meal an amazing experience.
The teams have hosted over 20 culinary expos across the country in all divisions. Attendees are taking what they see back to their units and turning it into action. They’re also collaborating on a larger level with both regional and corporate support.

There’s a lot to celebrate at UF Health - The Villages! Executive Chef Christina Bodanza successfully mentored one of her associates through the Rouxbe program. Chef Annise Belleau recently completed her training and is the first graduate from the Sweizer region. The team gathered to celebrate this huge accomplishment by proudly presenting Chef Annise with her coveted Rouxbe jacket. We look forward to seeing her continue to grow as a culinarian within Morrison Healthcare.
In addition to mentoring one of her associates, Chef Christina completed the Culinary Certification Course and was surprised with her certificate and culinary pin as well. Chef Christina is a great advocate for the culinary profession and is very active in her local ACF chapter. Corporate Executive Chef David Topping says, “We really appreciate Chef Christina’s leadership and the great knowledge she brings to the team at UF Health - The Villages.”
“Chef Christina has the heart of a mentor,” says Regional Director of Operations Ron Cornelison. “We’re also over-the-top excited for Chef Annise. She has really come alive during the course of this program, and Chef Christina has painted a picture of the amazing opportunities available to her as a culinary professional.”

Morrison Healthcare Executive Chef Jay “Jay Z” Ziobrowski was recently awarded the American Culinary Federation’s Presidential Medal for his continued commitment to growing the ACF, supporting local chapters, and his personal commitment to the culinary industry. The president of the ACF, Kimberly Brock Brown, traveled to Charlotte, North Carolina, to hand-deliver this medal to Chef Jay Z at a chapter meetup. Congratulations Chef!

Compass Group established its Women in Culinary program to address the gender pay and opportunity gaps in the hospitality industry by intentionally prioritizing women chefs for dedicated training opportunities and leadership development programs. The 2023 Women in Culinary Chef Showcase took place in Dallas, Texas, March 7th to 9th. The dynamic event provided a platform for female culinarians to display their culinary prowess and to be celebrated for their extraordinary talent.
Regional Executive Chef Christina Bennett represented Morrison Healthcare during the program. Chef Christina’s team was comprised of chefs from Bon Appetit, Flik, and Chartwells. During the competition, each team had 30 minutes to gather and create their plan, and then an hour and 45 minutes to execute their menu. Chef Christina’s team put together a sensational menu consisting of the following:

Morrison Healthcare has operated the foodservice at Burke Rehabilitation Hospital since 2019 and has built a strong partnership with their client during that time. In November 2022, the Burke Rehab team worked with their in-house engineering team to complete a $400,000 renovation of their dining café. The idea behind this renovation was to create a destination guests enjoy visiting. Tom Fahev, Director of Construction, and his team performed all construction work of the beautiful space. Once the project was complete, Tom felt it was time to hang up his hard hat and retire, as he had come full circle. Tom’s very first project at Burke had been to renovate the cafe 30 years prior.
The team hosted a soft opening of the space in January and offered complimentary meals to the staff for lunch and dinner. The soft opening was a huge success, so they moved forward with a grand opening in March and featured an omelet bar, pasta demonstration, and live sushi wrapping.

Live Pure at Memorial Hermann Texas Medical Center is a great example of how Morrison Healthcare can deliver customized solutions for their clients. Memorial Hermann was looking for a smoothie concept that would give guests a healthy and delicious option on the go. Using components of Morrison Healthcare’s smoothie brand in combination with the Live Pure products, we were able to meet that request.
Live Pure allows guests to choose from a variety of smoothies and smoothie bowls and customize with their choice of milk base. Live Pure’s products are USDA organic, made with whole foods, and have zero added sugar.
Featured on “Shark Tank” in March 2023, Morrison Healthcare is now offering Bleni as a low labor RAD Solution. Bleni Blends is a convenient smoothie machine offering quick and easy deliciousness at the push of a button. It even has the ability to offer blended coffees! Morrison’s Scan2Go Self-Checkout program offers a seamless checkout experience through tablets located at each café station. By bar-coding all items and capturing accurate item sold reporting, the program ensures 100% item accuracy. This approach is similar to self-checkout programs in grocery stores, providing guests with a familiar and user-friendly experience. With Scan2Go Self-Checkout, guests can quickly and easily complete their purchases, making it an ideal solution for hospitals and other healthcare facilities looking to streamline their operations.
Prisma Health System rolled out Scan2Go across their system over three phases. Most of their accounts also decided to go completely cash-less, removing the need for cash services in their cafés. Since launching Scan2Go at Prisma, the accounts have completed over 33,500 transactions just at the self-checkout kiosks.
Prisma Health isn’t the only Morrison Healthcare account to go cash-less though. Over 30 accounts have implemented this approach, including Roper Health System and Mayo Clinic.
Q: What are the benefits you’ve seen since implementing cash-less Scan2Go?
A: There have been so many benefits from reduced labor to a more efficient check-out process to less human error.
Q: How have you handled the reduction in cashiers?
A: We’ve been able to increase customer service by re-distributing labor into patient facing rolls.
Q: Have you noticed a difference in savings?
A: Since going cash-less, we have seen an incremental savings as well as reduced frustrations surrounding daily safe counts and surprise cashier audits.
