Michael Symon Restaurateur takes the lid off his first year in Vegas

Time flies when you’re having fun smoking some of the city’s greatest barbecue and serving truffle fried chicken in a hidden fine-dining room in Las Vegas. That’s what Cleveland-based celebrity chef and TV personality Michael Symon has been doing in his first year at the Palms, where he operates Mabel’s BBQ and the speakeasy-style Sara’s restaurants. He’s a veteran restaurateur but Vegas was the first time he opened two eateries at once: “If someone is trying to maintain maximum sanity, I don’t think I’d recommend it,” he says. How big of a challenge was this two-restaurant endeavor? At this point we have a pretty big team, not only here but overall. Our corporate chef has been with us 18 years and our culinary director has been with us 16 years, so we were able to bring an entire army here and it was still really hard. Opening restaurants is always a challenge, but to do two that are the complete opposite of each other was a special challenge. How has the Vegas experience been for you? I think we forgot we’re a little older than we used to be. We quickly realized we’re in Vegas this time to work and not just have fun like we used to do, and you can’t really mix the two. You can’t be working 18-hour days and then go, “Let’s go do Vegas!” But we learned from it and really enjoyed the whole experience. One reason I really enjoy spending time here now is how you get to know the customers a little bit. There’s a lot of repeat business and that’s been a really pleasant surprise to us, that there’s a really nice dining community here. Sara’s is very original, but it has a lot of vintage Vegas vibes. How has that experience changed in the first year? My original vision was to have

only eight things on the menu, but people want to try different stuff. But the two things that were most important to me on the original menu are our biggest sellers. I wanted to do the best fried chicken in the city and I wanted to make insanely good prime rib. We are one of if not the only place in Vegas actually using prime (beef) for our prime rib, and certainly we’re the only ones that smoke it. You just released a new cookbook in December. It’s called Fix It With Food. Unfortunately I have RA (rheumatoid arthritis) and external lupus so I have a lot of inflammation issues, and this book is all about teaching how to combat inflammation with diet. My triggers are sugar and dairy. Everyone’s triggers are different, but it’s about how you find them and then you pray they’re not beef and bourbon. (Laughs.) So is there a dessert that’s worth dealing with that? Ice cream. My son owns a gourmet doughnut and coffee shop and he’s starting to make his own ice creams. He’s trying to kill me. (Laughs.) I thought I was good to him growing up but apparently not. Every day this week, he brought over a pint of ice cream for me to try. It’s been rough.

A LONG-LASTING LEGEND Cher is an icon in so many ways. She’s putting the icing on the cake of her latest show at Park Theater Feb. 19-29, but she’s starred on several other Strip stages, including a residency at the Colosseum at Caesars Palace from 2008 to 2011. Her musical versatility is at the core of any Cher concert experience, but her uncommon style and legendary fashion sense is an equally

gigantic part of her legacy. And she’s just as edgy in that world: The fashion brand DSquared2 opened its 25th anniversary celebration at Milan Fashion Week this month and unveiled a brand-new campaign starring Cher. Its first image is, of course, a black-and-white shot of the superstar in jeans and a sweater with the word “ICON” etched across the chest.

Raiding the Rock Vault The hard-charging and endlessly fun Raiding the Rock Vault opened the year at its new home, the 172 music club and restaurant at the Rio, and the upstairs nook is quickly proving to be a great home for the six-year-old powerhouse show. It’s a time-tested tour of rock through the generations, opening with songs from the Woodstock era and cruising through familiar favorites like “Hotel California,” “Stairway To Heaven” and “Livin’ On A Prayer,” played by veteran rockers. Check it out at 7:30 p.m. Saturday through Wednesday.

Where did you watch the Super Bowl? Seattle Seahawks running back Marshawn Lynch hosted a Big Game watch party at Moneyline Sports Bar & Book at Park MGM, pouring shots of tequila for guests and enjoying a customized cake adorned with Skittles. Singer Leona Lewis caught Atomic Saloon Show at The Grand Canal Shoppes and visited Madame Boozy Skunkton and the cast backstage after the show. Lewis has been spending a lot of time in Las Vegas lately and it’s no surprise; her husband is German choreographer and producer Dennis Jauch, one of the founders of the No Ceilings Entertainment team that co-created the new Mayfair Supper Club at Bellagio. Back on the Strip for his band’s residency at Park Theater, Steven Tyler of Aerosmith continued his Vegas show-going tour by enjoying an evening at Absinthe at Caesars Palace. Before the big debut of RuPaul’s Drag Race Live! at the Flamingo, RuPaul was spotted at Absinthe and tweeted about the show being “sooo freakin’ GREAT!” On the same night, Drag Race TV faves Alexis Mateo and Coco and Kahanna Montrese were spotted at Atomic Saloon Show. Celebs in attendance at the Vegas Drag Race premiere included music scion Kelly Osbourne, designer August Getty, actors Jeffrey Bowyer-Chapman and Lala Milan, reality star Tiffany Pollard and drag performers Acid Betty, Aiden Zhane, Brita, Crystal Methyd, Dahlia Sin, Gigi Goode, Nicky Doll and more.

Outperforming Markets The National Association of Realtors Research Group recently released a report on the Top 10 Outperforming Markets across the country and Las Vegas made the list! This report takes into account factors such as housing affordability for new residents, attractiveness for retirees and the area’s home price appreciation. Realtor Tamara Heidel notes, “What that’s telling us … is this is a metro market that will probably continue to grow because we have so much going on with industry here with the Raiders and Amazon coming. I think with the tax environment we have, that’s only going to get better.” –AD

Make a Splash … Later The mantra in real estate school used to be for agents to advise their pool-seeking clients to buy a home that already had one, rather than put one in themselves because they would never get their money back out of it. With the rise of technology and modern design aesthetics, some agents are doing a one-eighty. Free Spirit There are more avenues than ever for independent musicians to reach their fans directly. Even so, artists who build up independent fan bases still often cement their success by signing to major labels, and that’s exactly what Southern California rapper Phora did in 2017, signing with Warner Bros. Phora’s two Warner Bros. albums brought his music to a wider audience, but after a little over two years on the label, he decided to return to his independent roots, even creating an Instagram video in which he tears up his record contract. “I need to be that kind of artist that can do my whole own thing,” Phora told Billboard last year. “So when it felt not genuine and I had to change who I was and the music I was making, I was like I can’t do it.” The rapper has taken back control of his career with 2019 album Bury Me With Dead Roses, exploring his familiar personal themes but also branching out by working with longtime hip-hop hitmaker Scott Storch. He’s now free to follow his muse wherever it takes him, which is exactly what drew fans to him in the first place. –Josh Bell

Classic Comedy Fandom of the Lambs The Queen has more competition on the Strip nowadays with the residencies of Lady Gaga, Gwen Stefani and Christina Aguilera, but if you think Mariah Carey has any concern at the notion that any other Vegas headliners are in her league then you are clearly not a “lamb.” Lambs make sure there’s nary an empty seat when Carey holds court at Caesars Palace during her The Butterfly Returns residency. To find out whether you’re a lamb,

a simple test is to search the Internet for current setlists of Strip headliners, maybe add Celine Dion and Jennifer Lopez, and see if Carey’s is the one that resonates with the soundtrack of your own life. For Carey, that soundtrack includes chart-toppers such as “Honey,” “Shake It Off” and “Fantasy.” She even reaches way back to early hits like “Vision of Love” and “Emotions,” proving that she still ranks among the best headliners on the Strip. –Las Vegas Magazine Staff

No matter how many stages some comedians take, the performance remains familiar. This is what it’s like to catch George Wallace at the Westgate. He’s still offering thoughtful observations on the absurdities around us, but today Wallace has been around the world a few more times and has made all sorts of hilarious discoveries. A Successful Crossing When Alter Bridge started in 2004, it was a side project for Creed members Mark Tremonti, Brian Marshall and Scott Phillips, while their main band was on hiatus. But even when Creed returned to active touring and recording, Alter Bridge (which also includes frontman Myles Kennedy) continued on, having established its own identity as one of the most successful hard rock bands of the ’00s. All four members have other musical outlets, but there’s a special chemistry that keeps them returning to Alter Bridge no matter what else they work on. The band racked up a series of rock radio hits in the ’00s, including “Open Your Eyes,” “Find the Real,” “Rise Today” and “Watch You Over.” Alter Bridge’s members are hard rock staples, from Kennedy’s work on Slash’s solo albums to Tremonti’s eponymous solo band and Phillips’ collaborations with members of Sevendust in the band Projected. They bring all of that varied experience to Alter Bridge, and the band’s 2019 album

Walk the Sky is one of its most highly acclaimed, debuting in the top 10 of the album charts in six different countries. That’s not bad for a onetime side project. –Josh Bell

Legendary Evening Dionne Warwick’s career spans almost 60 years, longer than many of today’s biggest music stars have been alive. She scored her first hit in 1962 with “Don’t Make Me Over,” her first solo single after breaking out from her family’s gospel and R&B singing group, and she last made the charts in 1998 with a version of “What the World Needs Now Is Love.” In between, she racked up dozens of hits across multiple decades, including “I Say a Little Prayer,” “Then Came You,” “I’ll Never Love This Way Again” and her signature song “That’s What Friends Are For.” Warwick will showcase hits from throughout her career

Champion and ex-title holder rematch promises plenty of action It’s as much a part of Vegas’ cultural fabric as the one-armed bandit, the all-you-can-eat buffet and Elvis at the International. We’re talking about Championship Fight Night, when the world’s spotlight shines on the Las Vegas Strip as two highly skilled combatants slug it out in the squared circle. While the buzz is palpable for any title fight in the Boxing Capital of the World, nothing matches the edge-of-the-seat excitement that’s generated when two larger-than-life athletes go toe-to-toe for boxing’s top prize: the world heavyweight championship. Over the past half-century, Las Vegas has hosted numerous heavyweight title bouts that still rank among the greatest of all time, many

involving some of boxing’s most iconic fighters. Muhammad Ali’s stunning loss to Leon Spinks in 1978? It happened here. So did Mike Tyson’s 91-second knockout of Spinks’ brother, Michael, a decade later. And all three epic battles between Evander Holyfield and Riddick Bowe. And both Holyfield-Tyson clashes (including the infamous ear bite heard ’round the word). And George Foreman’s knockout of 26-year-old Michael Moorer that made Foreman, at age 45, the oldest man to ever win the heavyweight title. Las Vegas is firmly part of boxing history. Which brings us to this weekend, when Las Vegas once again takes center stage for the highly anticipated rematch between heavyweight champion Deontay Wilder and ex-title-

holder Tyson Fury at MGM Grand Garden Arena. Both men are imposing (Wilder stands 6-foot-7, Fury 6-foot-9), undefeated (combined record: 71-0-2) and devastating punchers (combined 61 knockouts, including 41 by Wilder in 43 fights). And both have a score to settle: Back in December 2018 in Los Angeles, the duo fought to a 12-round draw. Given the high stakes, the dramatic buildup and the crushing punching power, Wilder-Fury II just might be another heavyweight fight for the ages. At the very least, it’s destined to be another spectacular Fight Night on the Strip. Party It Down The Golden Nugget has been on a roll lately, with its 52 Fridays Concert Series bringing legends of rock to the Golden Nugget Showroom. This Friday finds Grand Funk Railroad coming to downtown Las Vegas to help you party down, with bassist Mel Schacher and drummer Don Brewer celebrating 51 years on the road on their Some Kind of Wonderful tour. The founding members are joined by ex-.38 Special singer Max Carl, former Robert Palmer keyboardist Tim Cashion and guitarist Bruce Kulick, best known for blistering lead work with Kiss in that band’s makeup-less ’80s.

GFR blazed a trail that Kiss would follow, being one of the first bands to exclusively tour arenas once technology allowed rock bands to effectively play venues with five-figure attendance levels. Formed in Flint, Mich., as a trio with Mark Farner on lead guitar and vocals, the band scored big in 1970 with the majestic, wistful “Closer to Home (I’m Your Captain)” and 1973 album We’re an American Band. Entertainers may be the initial allure of The Mayfair, but you’d be mistaken to overlook its menu, a collection of classic supper club fare given a New World twist with an emphasis on presentation. Arguably the most creative dessert presentation is The Cigar, a chocolate and hazelnut confection mimicking a stogie and hinting of hickory smoke. More traditional offerings include a cherries jubilee and a Baked Alaska, which completes the tableside trend by being lit afire for your enjoyment. At The Mayfair, the entertainment doesn’t stop until the very end of your meal!

Michael Harding

Bartender is a jack of many trades As a bartender, Michael Harding has worked in some pretty cool spots. He’s bartended on the Hawaiian island of Waikiki. He was behind the bar aboard a Norwegian cruise line. He helped open the bar Trader Vic’s near the famous Staples Center in L.A. And for the past five years he’s been with BLT Steak at Bally’s, where he also bartends on Sundays during the restaurant’s famous Sterling Brunch. “I’m fortunate enough to work the Sterling Brunch a few times a month,” Harding says. “The food is top shelf, and, of course, the bottomless champagne and bottomless bloody Marys. … You don’t come to this brunch unless you wanna have a good time. The champagne is flowing. Everyone’s in good spirits. And everybody waddles out of here happy.” Behind the bar, Harding loves meeting new guests and tailoring cocktails to their specific tastes. “With cocktails, I like to know what people usually like and then go from there—find out

what spirits and flavors and then make suggestions and tailor the cocktail to their tastebuds,” says the California native. “Once you get past the basics of making cocktails, it gets into what separates you from other bartenders. It’s gonna be your personality. You want to have relatability and be able to feel people out. People who don’t want to talk, people that do want to talk. People who want quick service, not so quick service. People who know what they want versus people who want to hear the whole menu. It’s about understanding your guest.” Besides bartending, Harding is also a member of the Screen Actors Guild, scoring national commercials for brands like Budweiser; he’s also modeled in runway shows for brands including Nike. Harding also dabbles in amateur photography and loves playing sports outdoors like soccer and basketball. Above all else though, “being a good father to my daughter,” he says with a smile. –Kiko Miyasato

It’s been one of the Strip’s most beloved chophouses for more than three decades, but the true test of its reputation came recently when Phil Ruffin, the owner of Treasure Island who recently purchased Circus Circus from MGM Resorts International, appeared before the Nevada Gaming Commission to discuss his plans for the iconic north Strip resort. One of the commissioners all

but required the mogul to maintain The Steak House exactly as it exists right now. Why would you change a legend? The menu is simple, the service is friendly and the highest-quality Midwestern beef is aged on premises and cooked to perfection on a mesquite charcoal broiler every night in this old-school dining room. As a new decade dawns in the Entertainment Capital of the World, the future is happening now at HyperX Esports Arena Las Vegas inside the Luxor. Sooner than later there will likely be sections of casino floors reserved for competitive gaming, with a rising generation of esports enthusiasts coming to Vegas to test their skills against the best of the best (similar to how poker players do today). HyperX Esports Arena was a harbinger of things to come when it opened in the spring of 2018, with 30,000 square feet of pioneering design and technology geared toward creating a gamer’s paradise. Nearly two years later, the schedule has settled into weekly themes augmented by big-dollar tournaments. Fortnite devotees can walk in and start the weekend by competing against the best of the best in Las Vegas for $2,000 in cash prizes at Friday Frags, with $565 going to the win-

ner. Visitors looking for a place to satisfy their need for Mario Kart can stop by and be streamed on Twitch during Saturday Night Speedway, possibly driving away with $200. A love letter to his hometown, it peaked at No. 12 on Billboard’s Top 200 list. That same year, the music-charting magazine officially honored Manilow’s “hot streak” of 26 top 40 albums, a dozen top 40 singles in the previous 15 years and at least one top 40 album in each of the previous five decades. dancers. The superstar never seems to leave the stage, sitting still only when he’s mesmerizing the crowd from behind the piano. International Theater’s grand stage utilizes dynamic backdrops and sets befitting a songbook of this scope. Even with so much space at his disposal, Manilow can’t be contained. A complex circular structure lowers from the ceiling and extends across the auditorium, enabling the entertainer to literally bring the show into the audience and up to the balcony. The man whose mind gave birth to many advertising jingles (from Band-Aid bandages to State Farm Insurance) never takes himself too seriously. Self-deprecating humor pokes fun at hair and clothing from previous eras, especially when crossing into “Copacabana” territory. Audience members are presented with 3D glasses and glowsticks to join in the frivolity for a pair of riotous sequences. With countless awards and a legacy that’s hard to match, Barry Manilow could simply sit at a microphone and deliver a satisfying show ... but that’s not his style. Manilow: The Hits Come Home! is the star’s biggest production yet, a true blue spectacle and everything that a Manilow fan could wish for.

In the Action The entertainment entity that brought circuses into the future has taken another great leap forward by creating the first live-action thriller in Las Vegas. R.U.N (Luxor, 855.706.5433) captures the aesthetic inspiration behind Cirque du Soleil productions and channels it into cinematic-level excitement, complete with stunts and special effects. Filmmaker Robert Rodriguez was called on to write a scenario reminiscent of Sin City, with the film noir narrative unfolding chapter by chapter and

visuals that will seem familiar to followers of graphic novelist Frank Miller. As a grave-sounding narrator provides commentary, the audience is drawn into a fictional Vegas underworld where two clans fight for supremacy. Our protagonist has just crashed a wedding, and he’s not sticking around for cake. He sprints for his life through the venue as a brawl breaks out and his destiny becomes entangled with the wedding bride. Stunts, fire, explosions, a torture

scene and a live car chase test the limits of Cirque capabilities. It’s also immersive immediately upon entering the venue. Motorbikes propel between seating sections toward the stage before performing airborne tricks. Projected graphics and a gripping soundtrack composed by Tyler Bates (300, the John Wick franchise) contribute to an atmosphere that’s more darkness of at the edge of town than circus of the sun. –Matt Kelemen
