NOTES
From the Editor The Fun of Exploration
If you haven’t yet been to Resorts World Las Vegas, the newest Strip resort to open its doors, you need to do something about that immediately. The sheer volume of things to do, see and experience here is ridiculously vast. There’s great dining at restaurants like Carversteak, Bar Zazu, ¡VIVA! and so many more. There’s world-class entertainment like Katy Perry, Carrie Underwood and Luke Bryan. There’s also an incredible array of bars and lounges at Resorts World. And in this week’s feature, associate editor Kiko Miyasato explores the property for some of its best hidden-gem cocktails and venues, along with instructions on how to find each and every one (“Hide & Seek,” p. 30). This is an exploration you’re going to want to undertake as soon as possible! But there are plenty of other areas of entertainment in Las Vegas to explore, and this week’s issue is packed full of them. For example, this week is a big one for Las Vegas: March Madness and St. Patrick’s Day. We have numerous options for enjoying both, from where to best watch the path to the Final Four (“Tournament Treats,” p. 11) to where you should look for green beer and a Celtic Feis (“Happy St. Patrick’s Day!” p. 22). Or perhaps you’re on the lookout for a great show while you’re in town. We’ll in-
troduce you to some of the best, from Jabbawockeez at MGM Grand (“Just Dance,” p. 10) and Terry Fator at New York-New York (“Hearing Voices,” p. 13) to iLuminate at The STRAT (“Dancing in the Dark,” p. 17) and Wayne Newton in his one-man show, Wayne: Up Close and Personal, at Flamingo (“Stories and Song,” p. 14). No trip to Las Vegas would be complete without a world-class meal or two. Our recommendations in this week’s issue hit some of the best options: Smith & Wollensky at The Venetian (“Staking Its Claim,” p. 13), Primrose at Park MGM (“Brunch All the Time,” p. 14), Robert Irvine’s Public House at Tropicana Las Vegas (“Seek Comfort (Food),” p. 17), and Bugsy & Meyer’s Steakhouse at Flamingo, which recently added a speakeasy experience (“A Bygone Era,” p. 24). Got kids in tow this week? We’ve got some great attractions you can go to for an afternoon of family fun, from Siegfried & Roy’s Secret Garden & Dolphin Habitat at The Mirage (“A Learning Paradise,” p. 16) and REAL BODIES at Bally’s (“Anatomical Journey,” p. 13) to FlyOver Las Vegas (“Scope the Southwest,” p. 11). One of the best things about a vacation anywhere is exploring once you get there. And no city offers more of that than Las Vegas—with a bit of help from us, of course.

All the Feels If you haven’t been to a David Copperfield show yet, know this: The illusions are grand. They’re not just immensely visual, with lots of lights and dramatic music, they’re often downright emotionally powerful. As much commitment as Copperfield has to his craft, he’s got just as much passion about his past. In bringing his childhood to life, Copperfield enlists the aid of several

“assistants,” including an alien and a dinosaur named “Frank.” We know, we know … it sounds corny, right? But don’t be the least bit surprised when you find a lump in the back of your throat as the illusion unfolds. There are moments during a Copperfield show when you stop thinking about how he does any of the amazing things he does and just ... accept them. Call it believing, call it
what you will—it all feels tangibly real. But mixed in with all this is a genuine sense of fun. Copperfield is very aware of his legend looming large, and takes plenty of potshots at it, keeping the audience laughing and relaxed. And as great as your memories of Copperfield may have been over the years, get ready for a whole new set of them after seeing this show. –Ken Miller

Just Dance
This celebrated crew dominates the stage They wear masks but follow no mandate except their own. Facial coverings sported by the internationally renowned and respected body rockers of Jabbawockeez are more about having audiences focus on their moves than their facial features and expressions. They currently express themselves twice nightly in the Entertainment Capital of the World through Timeless at MGM Grand Las Vegas, save for dark Tuesdays, which essentially means they are the No. 1 dance crew on Planet Earth. It was a long, head-spinning, freestyling way to the top for Jabbawockeez, starting in early ’00s San Diego with original members Kevin “KB” Brewer and Joe Larot gathering like-minded souls who wanted to transcend then-current

conventions saturating dance competitions. The road to Vegas began in earnest when America’s Got Talent made them a household name in 2006. Two years later, they reigned supreme on MTV reality series America’s Best Dance Crew. By then, the white masks and gloves, often topped with a bucket hat, had become iconic in the dance scene. The next step was global domination and, in 2010, they became the Strip’s first hip-hop dance headliners with MÜS.I.C at the Monte Carlo (now Park MGM). Jabbawockeez were an instant smash and kept envisioning new shows for bigger theaters. In 2013, they created PRiSM for Luxor, then joined MGM Grand’s A-list of Strip resident entertainers with JREAMZ in November 2015. That
show was so innovative that it ran for five years, culminating in the current iteration. There is no experience in Las Vegas like Jabbawockeez, from lighting, costume design and sound to kinetic choreography that at times seems superhuman. The Jabbawockeez have stated their intention to change the world through dance, and it’s hard to not feel a little transformed after experiencing them live. Appearances at places such as last month’s NFL Pro Bowl in Allegiant Stadium are giving them wider exposure and larger platforms to carry out their mission. It’s like seeing the future now, expressed through extraordinary kinetic movement. –Matt Kelemen MGM Grand, 866.740.7711

An Evening With Silk Sonic is the only way to catch Bruno Mars with neo-soul companion Anderson .Paak. Continuing on selected dates through May 29, the duo will make live music magic exclusively in Vegas. “Silk Sonic Intro,” the opening track from An Evening with Silk Sonic, the album, seems designed to open a show featuring music that pays homage to styles from the pre-rap ’70s. The recording incorporates Philly soul à la The Delfonics, Stevie Wonder’s Original Musiquarium era and layered harmonies laced with the sounds of string sections and glockenspiels. Mars paid attention to the big picture and smallest details, while .Paak made sure the funk was not faked and maintained the flow. –Matt Kelemen Park MGM, ticketmaster.com

Staking Its Claim The two-story Smith & Wollensky pairs warm woods and dark textile colors with an art-deco, bistro vibe, setting the scene for an upscale evening out where the spotlight shines on meat. Here, folks get a sneak peek into the butcher shop, where chefs hand-butcher your chosen cut, which has been dryaged onsite for a minimum of 28 days. The results are rich flavors, intensified tenderness and even marbling throughout all the USDA Prime cuts—filet mignon, porterhouse, T-bone, New York Strip, rib eye and the coveted American wagyu. For a limited time, guests can book the American wine and wagyu experience where the chef and S&W team will pair Snake River Farms American wagyu with five world-class Napa Valley wines by the glass. Classic steakhouse sides, seafood, shellfish towers and soups and salads round out the menu. And we’d be remiss if we didn’t mention S&W’s extensive cocktail program, which we suggest enjoying at the beautiful second-floor bar. –Kiko Miyasato The Venetian, 702.637.1515

Mirage attraction honors legendary duo’s legacy Dolphins have excellent vision and make eye contact with humans. They can distinguish between individuals at the surface visiting them at Siegfried & Roy’s Secret Garden & Dolphin Habitat, but only look with one eye at a time. So says the announcer at a pool deep in the heart of The Mirage, where aquatic headliners Maverick, Osborne and K2 strut their stuff. As nearby exotic big cats sun themselves in late-morning sun, the dolphins are ready to play and interact. Low-impact hijinks and swim-bys segue into aerial maneuvers and increasingly complicated choreography. They perform synchronized somersaults in pairs, then double somersaults. people above the surface as well as below, where observation windows provide an aquarium view of the dolphins. Some folks take off their shoes and have photos taken on the wet deck, while several others in wet suits listen to instructions preceding dives into the pool. Elsewhere in the Secret Garden, a small child calls to a white lion from Southern Africa’s Timbavati region, which subsequently opens its eyes. Timbavati means “the place where something sacred came down to Earth from the heavens,” but Timba-Masai looks majestic whether in repose or while wide awake and holding court. The regal resident presides over a realm that includes spotted leopard Neruda, black spotted
leopard Shadow, snow-white Bengal tiger Cosmo and gold Bengal tiger Svengali. Svengali is a rare heterozygous cat capable of producing white cubs, which late, legendary magicians Siegfried Fischbacher and Roy Horn were committed to sustaining. Secret Garden functions as a preserve as well as a scientific research and education destination. Casual learning is part of the fun. Bronzed signs share information about the big cats, and take-home packets full of activities are available for kids at the exit. Enjoying three decades in the industry What started as a busboy job right out of high school turned into a career that’s lasted more than three decades. Ken Carter, general manager for Andiamo Steakhouse at The D, first got into the industry when he was just 18 years old. “My first job was at Ruth’s Chris Steak House; I was a bus person,” says Carter, born in New York and raised in Las Vegas. “There were very few high-end steakhouses at the time, so it was an exciting time to work there. A lot of famous people would come in, we were making good money and having a great time.” Carter stayed with Ruth’s Chris for 23 years; he moved from busboy to the kitchen, where he worked as a chef for a few years and then taught himself about wine and working the front of the house and moved into management. After two decades with the company, it was time for a change, Carter says. He ended up at The D and at Andiamo just as it was opening its doors for the first time 10 years ago.
“I’m essentially responsible for everything here,” he says. “The chef takes care of the back of the house and the food; the front-of-thehouse responsibilities fall on me, the staff, the wine program, the beverage program. I just keep in mind that I’m not in charge of everyone; I’m more responsible for everyone. Employees, guests—make sure they have everything they need. And keep even keeled—luckily that comes naturally to me. I remain calm and cool. I’ve learned over time how to be a manager. I like to tell people I’ve seen enough to know but you’ll never see everything.” Carter notes that being in management takes hard work and having a strong work ethic—something he gets from his parents, who worked hard every day to take care of their six kids. “At this point I can’t imagine doing anything else in this city,” he says. “I’m 50 years old. I’m 35 years in, 20-something in management. This is what I’ll be doing.” –Kiko Miyasato

much a great restaurant as it is a great tribute to a bygone era. The entrance to the venue is actually the “back way,” in the form of a faux bakery (the

way gangsters used to enter restaurants back in the day), which leads to a variety of sights—a see-through kitchen where you can see desserts being prepared or meats aging, archival photos of Bugsy Siegel and Meyer Lansky, a raw bar, and a vast dining area that has a ’20s and ’30s vibe thanks to designer Jonathan Adler, with retro touches like a custom beaded flamingo piece (which reportedly took nearly 100 hours to create). If you ever wanted to get that speakeasy feel, this is the place to be. Speaking of which, a great experience has been made even greater with the addition of The Count Room Live, a new speakeasy-style entertainment experience that will feature a fun mix of live “Prohibition pop” performances by The Moonshiners from 8-11 p.m. on Friday and Saturday evenings, as well as a build-yourown Old-Fashioned beverage cart (choose your spirit). These Old-Fashioned explorations are also available in the main dining room, as well as many other libations, such as the Bramble On, a delicious blend of Hendrick’s midsummer solstice gin, lemon juice, Tattersall blueberry liqueur, Angostura bitters and apple chip. It’s a great way to prepare your palate for the meal ahead. Classic steakhouse staples abound on the appetizer menu, from a seafood tower that goes on forever with Maine lobster, Alaskan king crab, poached shrimp and East and West coast oyster selections, to 17th century onion soup smothered in Gruyère gratin.
A true highlight here is the hand-cut prime beef tartare, one of the best examples of this staple that we’ve encountered on the Strip, amplified by truffle crème fraîche and served with pan-toasted country bread. Please share! The steaks range from wet-aged to dry-aged and hit every popular cut, from filet mignon and prime bone-in ribeye to tomahawk ribeye. Other great main courses include free-range roasted chicken, domes-

tic lamb chops, pan-seared Scottish salmon and seared diver scallops. Sides are, as you would expect, all the classics, from Brussels sprouts and sautéed onions to potato gratin and asparagus, but if you want to go a bit fancier, try signature sides like truffle potato purée, truffle Parmesan fries and lobster mac and cheese. There are plenty of great desserts, but we highly recommend one of the most unique on the Strip, Single Barrel. Caramel mousse is combined with date cake, toasted pecans and vanilla gelato, accompanied by warm salted caramel whiskey. Like the restaurant itself, this dessert is memorable and one you’ll be telling all your friends about.

Las Vegas’ pizza scene shines One of the most beloved and exciting restaurant industry events returns to Las Vegas later this month when the International Pizza Expo lands at the Las Vegas Convention Center. the world, but the event does shine a light on the spectacular Vegas pizza scene, and locals always represent their city well at the expo and its various cooking competitions and contestants. California-based restaurateur and pizza legend Tony Gemignani is a regular at the expo, and you can sample his cuisine in Las Vegas
at Pizza Rock, which has locations downtown (702.385.0838) and at the Green Valley Ranch resort in Henderson (702.616.2996). There’s another outlet at Allegiant Stadium, so keep that in mind next time you’re planning to attend a mega-concert or Raiders game. (702.366.0049) popped up just off the classic casino’s gaming floor 10 years ago, originally a hidden gem that locals kept to themselves. But the secret has been out for a while now, and this unassuming eatery continues to grow its fervent fan following thanks to perfect New York-style slices and pies with crispy, chewy crust that packs much more flavor than what you’d expect from a casino takeout shop. Try the unique creamy onion sauce, spinach and mushroom pizza for a vegetarian delight. The great thing about Las Vegas pizza is that, like the city itself, it’s a melting pot of different styles from all over. If you’re a Chicago pizza enthusiast, you can find satisfaction on the Strip or out in the suburbs at Giordano’s, which is stationed at the Grand Bazaar Shops in front of Bally’s (702.850.2420) and in the bustling Boca Park center on the westside (702.342.0721). Chicagoans and true pizza devotees know it’s not all about the deep dish, although Giordano’s certainly serves up one of the best versions of that thick-crust, cheese-packed favorite you can find anywhere in the country. There are also thin-crust options so that everyone in your group will be able to get the bite they want, as well as other Chicago food favorites like a spicy Italian beef sandwich. Miss Behave Beauty Bar offers both sexes the opportunity to get primped and pretty—or handsome—with its wide array of salon offerings. From blowouts, hair extensions, cut and color, classic manicure and acrylics to eyelash application, eyebrow threading, waxing and makeup application, Miss Behave is a full-service beauty bar with a bonus—it has a full-service cocktail bar! “We want people to be here, misbehave, drink, have fun—it’s not like your typical, boring, serious salon,” says salon manager Tamara Bullock. “We want people to have fun when they come here.”

Take a seat at the bar and order your favorite cocktail, or check out the Miss Behave specialty cocktail list. “We worked with a lot of mixologists, and they came here and made a lot of the cocktails special just for us,” Bullock says. For a sweeter treat, try the Pretty Kitty, mixed with Bacardi Dragonberry rum, classic margarita mix, Passoã passionfruit liqueur, Sprite and raspberries. Or opt for a classic sip with the popular The Gold Member, blended with Whistlepig 6-Year Piggyback rye whiskey, apricot, dry sherry and vanilla. The bar also offers champagnes by the glass, rosé, pinot noir and beer.

Resorts World Las Vegas towers over the Las Vegas Strip, and the 100,000-square-foot exterior display that runs down one whole side of the property’s hotel is a sight to be seen. But did you know at the top of one of the hotel’s towers is a beautiful cocktail spot, Alle Lounge on 66? The city views through the floor-to-ceiling windows are phenomenal; the interior design is sleek, sexy and upscale; and the cocktail program and spirits offered are impressive. “We focus on craft cocktails mainly, and we also feature an Old-Fashioned program with eight different varieties of the classic cocktail,” says barback Peter Hundley. Popular specialty cocktails, served in crystal glassware, include the Twilight, mixed with Bombay Sapphire, crème de violette, Chambord, lemon, egg white and simple syrup, and The
Crockford’s Set, a twist on the classic gin and tonic mixed with Beefeater gin, orange lychee, jasmine tonic syrup and Fever Tree club soda. “Middle of the week, hands down, best date-night spot in town,” says Hundley. Live DJs play Top-40 and house music on the weekends; during the week, guests can enjoy live music including a violinist and jazz. Alle on 66 also features very highend sprits like a Macallan program that includes a $200,000 bottle from 1940—a shot of the stuff will run you about $12,500. There’s also a coveted Louis XIII program—where cocktail servers roam the lounge with a special Louis XIII cart (only a handful are in existence, and Alle has two) and mix guests specialty cocktails tableside or small pours of the popular cognac.
How to Find Alle Lounge on 66
Head toward the Conrad Las Vegas lobby and look for the Resorts World store; you’ll see a bank of elevators. The Alle Lounge elevators will take you to the 66th floor beginning at 5 p.m. daily. Bonus: Also on the 66th floor is a mini casino where you can play some table games and grab a cocktail.

How to Find RedTail
From the casino floor, head to The District and make a right; Wally’s will be on the corner. Go past Wally’s, past the giant globe, past Miss Behave and look for the giant red beer cups. Once inside RedTail, you'll spot three tall doors on the left-side wall of the bar and lounge: Behind those doors are the karaoke rooms.
While RedTail isn’t hidden, the sports bar-meets-lounge-meets-college bar hot spot is hiding a fun time: karaoke! You could wander around the whole space and not spot the karaoke rooms. But once you find them, or ask about them, you and your group can settle into one of the three rooms (the design allows the walls to be moved to make one massive room if requested) designed with comfy sofas, chairs, cool lighting and huge screens for displaying

the words to the next song you’re going to belt out. RedTail guests can order popular specialty cocktails like the Happy Ending, mixed with Grey Goose vodka, fresh strawberries and strawberry puree, fresh-squeezed lemon juice and tropical Red Bull. Or go for their twist on the margarita with the Farmer’s Breakfast, mixed with Avion blanco tequila, matcha, cucumber, cilantro, lime juice and simple syrup. “Since we’re more a sports bar
and lounge, we make our cocktails more accessible and not overly complicated for our guests,” says bartender Sam Migliozzi. “They can just get something that’s delicious—but it’s still crafted cocktails. They’re all really drinkable.” Once your group is done with karaoke, try your hand at giant-size Jenga or beer pong, pool, cornhole or free arcade games. On the weekends enjoy live DJ sets; during the week, enjoy live music like cover bands and dueling pianos.

If you love intimate bars with a clean, fresh design with touches of luxurious furnishings, make your way to Baccarat Bar. Be careful, because you could walk right past—it's set back and off to the side among Crockfords Las Vegas’ gaming tables. Once inside, you can choose to take a seat at the petite, six-seat bar, at one of two small sofas that would snugly fit you and your sweetheart, or at one of the two small tables with just a few chairs (perfect for hanging with your buds). You getting the picture here? There are only 15 seats at Baccarat Bar, and this adds to its exclusivity and speakeasy vibes. When it comes to cocktails and spirits, it’s all about the best and highest-end offerings. “The program here is to make sure that our high-roller players
are given everything they need to be content with our liquor program,” says bartender Andres Moreno. “We have Macallan 15-year and 30-year, Louis XIII, Hennessy Paradis; we’re trying to offer the top-tier bourbon, cognacs and Scotches. We have hard-to-get liquors, and for us to have these liquors and offer them to our guests, it says Resorts World is going above and beyond to make sure guests are happy and taken care of and get what they deserve.” Baccarat Bar also offers a menu of handcrafted cocktails like the earthy, sweet specialty cocktail the Cherry Blossom. This cocktail is mixed with Japanese Roku gin (a more smooth, easier-on-the-palate gin), fresh-squeezed lime juice, dragon fruit syrup and a splash of Chareau aloe liqueur.
How to Find Baccarat Bar
From the Crockfords Casino & Lounge, walk through the lounge, veer to the left and go past the gaming tables and slot machines. Walk past the casino cage and into the baccarat room. Once inside the room, stay to the right and you’ll come upon the Baccarat Bar.

The best definition of “hidden gem” at Resorts World Las Vegas is Here Kitty Kitty Vice Den. This writer herself has walked past the bar many times and had no clue it was there until told about it. The front for the speakeasy space is Fuhu Cha Chaan Teng, a store and eatery inspired by the stalls in Singapore. Once inside, the intimate bar offers bar-top and lounge seating, and the cocktails are a practice in modern mixology. “Every bartender here is amazing and very talented,” says bartender Rylen Komeiji. “You tell them what you want and like, give them a couple minutes and you’ll
have something amazing in front you. Our cocktails are very unique and, since it’s an exclusive speakeasy, we wanted the cocktails to be exclusive, too.” Here Kitty Kitty also offers many Asian-inspired specialty cocktails like the Best Little Whorehouse, mixed with green-tea infused baijiu (which is a popular Chinese alcohol similar to vodka but with a higher proof and more pungent), cognac, lemon juice, honey and peach. Or try the Black Moon Rising, made with Suntory Whisky Toki, white port, freshsqueezed lemon juice, egg whites and fresh blackberries.
