Food for Thought
Think back on your last really good meal at a restaurant. What was it that made it so memorable? The food? The service? The company? The space itself? Or was it just getting out of the house for a bit and indulging yourself? Whatever it is that defi nes a great meal for you, you’ll fi nd plenty of options on the Las Vegas Strip. It’s no exaggeration to say that our tourist corridor has perfected the art of the meal. And that’s what this issue is dedicated to.
One of the best parts of a great meal is dessert, especially one created in-house that makes the whole table sit up and go, “Whoa!” In this issue, managing editor Nina King interviews Jessica Scott, the corporate executive pastry chef for Miami-based 50 Eggs Hospitality Group, who prepares some of the amazing creations for various venues at The Venetian (“How Sweet It Is,” p. 36 ).

Q&A: Chris Elliman
Art competition winner
finds inspiration
in society
In October of last year, local artist Chris Elliman won Park West Fine Art Museum and Gallery’s Made In Vegas competition, vying against hundreds of other creators. That led to his current special three-month exhibition at The Forum Shops gallery, which kicked off on Jan. 7. Fans can catch Elliman Jan. 28 from 4-7 p.m. for a live painting, a meet-and-greet and a Q&A session. Elliman gave Las Vegas Magazine’s Nina King a look into his process.
What led you to become an artist?
I was never very good at math! I had to pivot to something I was better at and truly passionate about.
Your works seem quite complex. Is it all themed?
Every piece is a journey with intention. The story reveals itself exponentially fast, and the viewer should delve further into the piece to understand the book is not the cover.
Where do you come up with the ideas for your works?
My ideas evolve from studying society. It’s very cool to just sit back and love people from a distance and absolutely love them up close. The culmination of observational wonderment evolves to what I call “visual DJing.” The results are on the canvas.
How long does it take to research each painting, what is the process of creating them, and how long until it is complete?
I consider my work science. It takes a lot of time to cave paint the universe, as it tunnels and builds its way into my heart. Every breath that goes down, I’m excited to know it’s a painting and also a story. I can usually nail it down on canvas in about six weeks.
How did you choose what to enter in the Made in Vegas competition?
The Made in Vegas competition choices started with what makes people happy. Then it’s about life and, tertiarily, it’s about what we are going to do with the culmination of the celebration of our happy stuff. And that’s why I like to win. I love people and art the same.

Worlds Come Alive
Illuminarium was too big to fit inside AREA15’s main building. The latest immersive venue to open at the experiential campus just west of the Strip needed 36,000 square feet for its next-level, cinematographically interactive destination, necessitating a building of its own just beyond AREA15’s LIFTOFF attraction.
Illuminarium’s colorful exterior contrasts strikingly with its surroundings. Inside, a menu of programs is offered in the lobby. Once a program is chosen, a warmup room, divided by two rows of plush white chairs that would not look out of place in a Stanley Kubrick film, provides a preview of what is to come.
In Space: A Journey to the Moon and Beyond, step inside a gigantic room where 360-degree cinematic technology takes you on a journey through the solar system. Sound and sight immersion will drop you on the face of the moon and fly you through stars and dust and debris and right inside the beauty of the cosmos.
For those that like land adventures, there’s also Wild: A Safari Experience, an environment where you truly get a surroundsound sensation, including a floor that rumbles with thunder. “Aweinspiring” doesn’t do justice to the
360-degree scenes and sounds of savannahs and rainforests, where gorillas emerge from the mists of every sightline.
All that exploration can work up an appetite, effectively assuaged at companion culinary experience Lumin Café & Kitchen. The restaurant’s warm, inviting atmosphere was designed by the Rockwell Group, and the menu by cuisine visionaries Elizabeth Blau and chef Kim Canteenwalla. It’s the height of casual dining with an outdoor patio and touches of class such as exquisitely prepared burgers, Parmesan and truffle fries, and mac and cheese with Ritz cracker crust. And don’t miss the new adult milkshakes made with different spirits in flavors like PB&J, Nuts and Berries, Cookie Dough and Berry, Berry Good.
The possibilities of hosting viewing parties for major sports events in Illuminarium’s space are apparent, and the options for adults-only Illuminarium After Dark: Nightlife Reimagined are inviting. Mythical Journey
Few popular rock groups melded all the styles of their time quite so seamlessly as Styx , which shot to fame in the 1970s on the strength of classics (and oldies radio staples) like “Come Sail Away,” “The Best of Times,” “Too Much Time on My Hands” and “Babe.” They’ve regularly toured for decades, and the proof of their popularity shows in the numerous limited engagements they’ve played on the Las Vegas Strip over the years.

Mediterranean flavors blend seamlessly with relaxing décor and an attentive, friendly waitstaff at Amalfi by Bobby Flay, the celebrity chef’s newest Vegas enterprise—and one of the most singular dining experiences on the Strip.
Amalfi is not for the budget-conscious, but you won’t be regretting the extra expense when you sit down to a mezcal Negroni while taking in the light woods and circular blue-tile displays with the catch of the day, a bar curving away from the entrance soaring ceilings and an open kitchen with large racks of wine above that. While enjoying your mezcal Negroni or espresso martini, take a walk up to the fish displays, where you can pick out the exact fish you want. And the fishmongers will fill you in if you have any questions (like we did). It adds a very cool element.
While waiting for your selection to arrive (and choosing your flavoring, ranging from Meyer lemon and capers to red peppers, Calabrian chili pesto or salsa verde), munch on fun antipasti like shellfish fritto misto with pistachio pesto, eggplant al forno
with mascarpone and roasted garlic crema, or tuna tartare with crispy rice. There are also wonderful salads awaiting you, including the Amalfi chopped with lemon vinaigrette and a baby gem Caesar made with black kale, Treviso and garlic croutons.
If you’d rather pass on the fresh fish option, no worries whatsoever—Amalfi has a large menu of alternatives, starting with pasta dishes that range from squid ink fettucine (topped with lobster, shrimp and squid, pictured), to porcini agnolotti (drizzled in a hazelnut-chive sauce and balsamic). There’s also a terrific chicken Parmigiano with bufala mozzarella and arugula olive oil, as well as a series of steak options, including a 24-ounce bone-in ribeye. Whatever you choose, make sure to pair it with sides like roasted acorn squash nocciola, served with toasted hazelnuts and a brown butter dressing, or cremini mushroom polenta, made with mascarpone and Parmigiano white truffle oil. –Ken Miller

Sea It All
Mandalay Bay attraction introduces you to denizens from the ocean’s depths
Odds are your kids have finally seen the movie Jaws (it’s streaming everywhere these days), and odds are they might be a bit … obsessed with sharks as a result. If so, you gotta take them to Shark Reef Aquarium, one of the most unique destinations in the world.
This manmade wonder does feature sharks (and a huge variety of them to boot), but it’s also got more than 2,000 other creatures, all of them in no way indigenous to the Mojave Desert. Get introduced to Komodo dragons, Johnston’s crocodiles and piranhas behind see-through partitions. You quickly realize it’s possible to lose hours here—watching some of these creatures, from Burmese pythons to South American species like pacu, arapaima, razorback catfish and motoro stingrays, can be absolutely hypnotic.
The sharks swim around a simulated shipwreck, visible through a large viewing area (a tunnel allows you to see fish swim all around you). You may not know exactly what type of shark you’re looking at, and that’s understandable; the varieties here include blacktip, grey reef, Galapagos, Port Jackson, sand tiger, sandbar, whitetip reef, bonnet head, nurse … we suggest taking lots of pictures here. Maybe there’s a shark expert back home who can help you figure it all out.
Perhaps the best thing about Shark Reef is that it makes you want to know more about the world you live in, that life is everywhere, and that our perspective is severely limited. –Ken Miller

When Julia Nina Edano says she has the coolest job, she means it—literally and figuratively. “It’s so fun, it doesn’t even feel like you’re working,” says the bar manager for Minus5 Ice Bar at The Linq Promenade. “This is a bar that is completely made of ice, everything except the floor and ceiling are ice.”
One of the biggest questions about Edano is how she works inside a bar made completely of ice. Doesn’t she get cold? “I wear snow pants, snow boots, earmuffs, hat, gloves,” Edano says. “If it’s busy, like on the weekends,
I’m in there all day but I don’t even feel the cold because I’m so busy moving around.”

By Matt KelemenAS A TEENAGER , Donny Osmond had the surreal experience of playing Yahtzee against his younger brother Jimmy in Elvis Presley’s suite at the Hilton. Presley famously headlined the Hilton, now Westgate Las Vegas, and the youthful pop star was welcome at the King of Rock ‘n’ Roll’s court. Osmond is the headliner now, paying tribute to Presley as well as Vegas itself at his red-hot self-titled residency at Harrah’s Las Vegas.
Harrah’s Las Vegas, coincidentally, is illuminated in purple by the time
of Osmond’s 8 p.m. shows. Fans that grew up on his music know the royal pigment was his professed favorite color in the ’70s as he went from pop singer to pin-up idol to superstar to superhero. That’s right, in a recurring series of skits on ABC variety series Donny & Marie, Osmond fought for justice as Captain Purple.
Whether he still sports purple socks is a revelation only known to those who have experienced his solo residency, which began the same month as the release of his latest
album, Start Again, in September 2021. New songs such as snappy, optimistic R&B smoothie “Don’t Stop” and “On & On” were woven into sets that related Osmond’s autobiography through his music.
Audience members were invited to make requests from various points in Osmond’s recording history.
Practically born to sing, he joined his brothers’ barbershop quartet after they were discovered at Disneyland and became regular performers on The Andy Williams Show in the ’60s.
Entertainment royalty Donny Osmond returns to his electrifying Harrah’s residency
The Osmonds scored their first hit with “One Bad Apple” in 1971 and Donny quickly became a focal point for the teen idol industry.
Osmond branched off as a solo artist with “Go Away Little Girl” and a cover of Paul Anka’s “Puppy Love.” Teaming with Marie in 1976 for a television show resulted in huge ratings, making Donny & Marie must-see television on Friday nights. He sang medleys of rock hits in his matured voice, harmonized with his brothers and demonstrated his keyboard chops.
Culture in the ’80s reacted against everything in the ’60s and ’70s, and Osmond struggled. His work ethic and family were his salvations, though, and he returned to the charts in 1989 with “Soldier of Love.” He achieved success onstage in the lead of Andrew Lloyd Webber’s Joseph and the Amazing Technicolor Dreamcoat and in 2006 won over Broadway critics as Gaston in Disney’s Beauty and the Beast.
The confidence that Osmond cultivated from musicals showed when he took the stage with Marie for the first time at the Flamingo in 2008. A six-week engagement stretched into 11 years. The siblings literally became the faces of Vegas entertainment when portraits were rendered many stories high on the Flamingo’s Strip-side exterior.
Osmond’s current electrifying residency is a collaborative effort of A-listers such as director Raj Kapoor and choreographers Nappytabs. The combination of dazzling dancers and live musicians with the ambitions of quite possibly the most seasoned entertainer on the Strip make Captain Purple a worthy successor to The King.
It began with a sketch of an idea on the other side of the Atlantic Ocean and quickly expanded into an Italian cuisine empire with its latest (and perhaps greatest) outpost so far: Eataly Las Vegas. Two restaurants, three bars designed with dining in mind, a marketplace, a dozen counters offering delicacies to go and wine, and an 11-seat Chef’s Table reserved for epicurean education are laid out, mercato-style, within the Stripside entrance of Park MGM.
Eataly Las Vegas is practically a daily, year-round celebration of flavorful fare representing every major region of Italy. “The journey here is all about Italian cuisine,” says Eataly general manager Luca Esposito. “We cover Italian cuisine from north to south, so if you get to experiment with our menus, you have everything from each region.”
One Eataly restaurant takes its name from one of the central regions. The handsome, 94-seat layout of Toscana Ristorante & Bar by Eataly provides the relaxing atmosphere of a family-style restaurant. The Toscana journey begins proper with savory, homemade, fried Tuscan gnocco fritto served with an antipasto (go for the prosciutto e mozzarella) and eventually concludes with homemade fior di latte gelato shaved tableside.
Pasta dishes and entrées are the stops in between, and there is no wrong selection—except for not choosing to order wine pairings for each course. Sommeliers such as Dylan Henderson relate encyclopedic knowledge of varietals as well as the design intent of the glasses they’re poured into. If anything comes with truffles, order it. It’s black truffle season through February, which is not overlooked at Eataly. If appetites are focused on pizza or pasta, Eataly provides a no-brainer option in La Pizza e La Pasta. Guests can see pasta (imported from the town of Gragnano in Naples) prepared and dough expertly tossed before being baked to Neapolitan pizza perfection in word-burning ovens.
Cucina del Mercato re-creates the Italian marketplace atmosphere much in the way founder Oscar Farinetti envisioned it as part of the
Eataly concept in November 2002. The counter-to-table approach provides access to an array of delectables prepared in the open by butchers, bakers, chefs and pasta makers. Cold cuts, cheese, bread, house-made fresh pasta and desserts can be enjoyed on site or wrapped and taken to rooms.
It’s very cool that slices of Roman-style pizza are available just steps from the Strip inside Park MGM. Eataly’s wares can be tasted on the fly, but an entire Vegas stay can be built around the Chef’s Table. Up to 11 people can make a reservation and receive first-hand instruction from a master chef on pasta preparation or seasonal cuisine.

Some people are artists and some people are chefs, but 50 Eggs Hospitality Group’s corporate executive pastry chef Jessica Scott marries both worlds. Scott, who joined 50 Eggs in 2020, has her pastry designs showcased inside Las Vegas’ Chica, Yardbird Southern Table & Bar, Spritz and Capri, all at The Venetian, as well as in 50 Eggs restaurants across the country. And those desserts range from simple creations to the showstoppers you’ll find at restaurants like Chica.

The energetic chef has won multiple contests during her career, and recently won the 2022 Culinary Excellence Awards Pastry Chef of the Year title from the Nevada Restaurant Association. “This award holds so much meaning for me as not
only a pastry chef, but also as a Las Vegas resident,” Scott says. “I am so proud to live in this city and have been so welcomed into the community. Receiving an honor such as this reinvigorates my determination to be the best pastry chef I can be.”
The journey to Las Vegas has been filled with many experiences, with posts in Denver and San Diego (where she was raised), James Beard dinners and social media wins for her creations. Scott first lived in Miami when she began her journey with
Miami-based 50 Eggs, but headed to Vegas shortly after that.
“50 Eggs was intriguing because they not only had multiple locations and brands all over the country, but their determination to grow and continue to diversify their brands convinced me that it could be a company where I could accomplish things I only dreamt of,” Scott says. “Now, especially being in Las Vegas, there is no end to the possibilities of what we can achieve.”
It’s easy to understand the success she’s had when the desserts come out after dinner. The visually intense creations encapsulate Scott’s design philosophy as she finds inspiration in multiple ways.
“People and experiences inspire me. I love learning about di erent cultures in the way that families celebrate together with food, and celebrations around the world,” she says. “When creating something new, I treat each dish as a problem that needs to be fixed and break down the wants and needs of the concept to find ways to incorporate the flavors or ideals that are missing from a menu.”
But it’s not always a quick process, and the time required to create her wild desserts can vary widely, sometimes happening in a week, sometimes taking months to figure out. “I always want to make sure
each creation is something I’ve never done or seen before, and it takes time to ‘re-create the wheel.’ I want each dessert to be special, delicious, and memorable.”
Among the items you’ll find on menus across the country are enor-
mous “beach balls” from restaurants like Capri at The Venetian (open to Venetian guests). The striped desserts consist of a candy shell with a chocolate cake interior. Liquid fire is poured onto the chocolate balls, and it melts over the interior, creating a
delicious sauce. A “sand castle” is also on the menu.
A similar process is used at Chica at The Venetian. Lorena Garcia’s stellar Latin cuisine sets the tone for a fun dessert, and The Flaming Skull has become one of guests’ favorite
choices. It’s also one of Scott’s favorites.
“I love The Flaming Skull at Chica!” says Scott. “Seeing guests’ excited expressions when the dessert comes out of the kitchen honestly melts my heart, and who could blame them? From the golden Dia de los Muertos chocolate skull being set aflame at the table, to the hidden (extra lava) lava cake that turns into a chocolate fondue once broken, and accompanied with house-made horchata ice cream and corn marshmallows—what more can you ask for? It’s the grand finale to a full dining experience!”
Attention to detail is one of Scott’s hallmarks, and The Corn shows that—this dessert is a doppelganger for eloté, a delicious ear that is actually strawberry flan cheesecake served with graham cracker chili crumble and raspberry “Tajín.”
The list of Scott’s desserts goes on, but those creations come with technical challenges as well. “The biggest challenge isn’t creating something delicious and intriguing, it’s how you put it in e ect in the kitchen. Every kitchen has limitations with food cost, labor budgets, skill levels, and even just storage. I can’t put a dish on a menu that is going to crash the entire system, but I like this sort of puzzle and finding new and creative ways of making it work!” says Scott.
And she’s not likely to let those challenges daunt her. “I want to continue to create new dishes that awe and inspire, work harder on mentoring my team and growing their career with 50 Eggs, and take every day as an opportunity for greatness.”
