Heavenly Pairings Get the perfect union of sake and sushi, as well as wonderful signature dishes, at this Strip restaurant Nearly every visible table is full midway through Thursday-night dinner service at Nobu Las Vegas at Caesars Palace. Open seats at the bar are quickly filled as visitors in town for Shot Show, World of Concrete, and Sports Licensing & Tailgate Show mill about in the kinetically social, business casual atmosphere of the lounge, where the sound system’s volume is optimally set to allow both music and conversation to be heard. Some make it a point to come here every year for the superlative dining experience. Key to that experience is pairing sake with an exquisitely prepared delicacy. For neophytes, Nobu Junmai Daiginjo TK 45 is an appropriate introduction. Medium-bodied and creamy, “The Premium Sake” complements the pleasurable flavor explosions provided by six tender pieces of yellowtail jalapeño sashimi, pictured. Small-bite lobster tacos and nigiri made with snow crab or Japanese wagyu can be enhanced by the “Music Sake”—Honjozo Ongakushu Koshu. Rich and full-bodied, it’s aged to the wavelengths and frequencies of classical music. Rare, silky-smooth Nobu Daiginjo YK35 satisfies sake connoisseurs and

goes well with black cod with miso, a favorite of Nobu co-owner Robert De Niro. It’s been 11 years since De Niro wielded a ribbon-cutting samurai sword for the opening of Nobu Hotel with partner Nobu Matsuhisa, who opened his adjacent restaurant with a traditional sake ceremony. There are now more than 50 Nobu restaurants around the world, and the hotel brand continues to expand, with many more in the planning stages. The Caesars Palace location is the only one in the U.S. with teppan tables, which Matsuhisa made expert use of during the 10th anniversary celebration last year. It’s the preeminent way to experience items from the teppanyaki tasting menu, including marvelously marbled A5 waygu, cooked on flat griddles and served with signature sauces. A to-go menu is available from 5-8 p.m., and a dedicated sushi bar is manned by a crack crew of chefs wise to the ways of raw abalone, barracuda, mackerel and sea eel. Here’s to Huzzah! Pound your tables and hoist your tankards at this medieval-themed dinner show

Looking for something to do in Las Vegas but can’t decide whether you want to see theater, sports or engage in some audience participation? Or maybe you just want a nice meal? At Tournament of Kings, you can do all the above. It’s one of the longest-running shows on the Strip and has something for everyone: • Theater. This show can be seen as a straightforward coming-ofage tale at the time of King Arthur, complete with a larger-than-life villain and good overcoming evil; • Sports. You will get to see a “competition” between several different countries—Austria, France, Hungary, Ireland, Sweden, Spain and Romania—complete with jousting, javelin tossing, a race and more, most featuring some of the most well-trained horses you’ll ever see; • Audience participation. You and your family will be seated in one of the different country’s sections, all different colors so you can easily tell one from another. As the proceedings unfold, you root for your country by banging on your tables, raising your hands and shouting “Huzzah!” You will be surprised how quickly you really get into the various events. The outcomes might be scripted, but it never feels that way; • A nice meal. Every attendee receives a meal that can be eaten without the use of flatware: a Cornish game hen, potatoes, corn on the cob and a dinner roll (menus will be adjusted for vegans, kids, gluten allergies and more). Adults can enjoy a cocktail or a beer— and, yes, you can request flatware if you really need it. Richard Sherman, director of entertainment for Excalibur and Tournament of Kings, told Las Vegas Magazine that the show truly stands alone in the pantheon of Strip entertainment. “We like to call this show the ‘crown jewel of our castle,’” Sherman says. “If you have younger kids and you’re looking for a family outing, this is an excellent thing to do … It’s a way to get out and do something with your friends and be loud and root for something and see something that you don’t get to see every day.” –Ken Miller

A Frame of Mind

Latest gallery exhibit explores a multitude of visions

Quiet your mind, then step inside the Bellagio Gallery of Fine Art for a look at some of the most intriguing artists of the past few decades. The newest exhibition, ICONS of Contemporary Art, takes one through a variety of modes of expression, from sculpture to embroidery and videos. Demecina Beehn, director art & culture for MGM Resorts, said, “In this micro-survey of preeminent artists, we offer multiple points of connection to sensuality, architecture, play and experimentation both visually and conceptually.”

As soon as you enter the intimate gallery, you’re greeted by a room of faux fur and a neon sign (selfies, anyone?), setting the tone for the eclectic collection beyond. Sculptural bronze pieces from Ghada Amer connect and deconstruct the human frame; George Condo’s Constellation II is a strangely disconcerting aluminum and gold leaf bust; Yoshitaka Amano’s large-scale portraits and scenes are created with automotive paint; and Sherrie Levine’s boar sculpture captures the beauty of the animal. palette of materials, techniques, and subjects demonstrates the theme of the exhibit. “While vastly different in their approach, each artist hones a clear voice or style that challenges boundaries, thus exemplifying aspects of their greatness,” Beehn said. Where To Start?

From fish and chips and burgers to kimchi and sushi, this food hall features a mind-boggling array of cuisines One of the more unique dining experiences in the city is found at Resorts World Las Vegas, where Famous Foods Street Eats provides a veritable world tour for foodies in one place. When the food hall opened, a number of celebrated chefs and notable personalities were invited in, from “Lechon Diva” Dedet de la Fuente to the Aoki brothers. Several of the restaurants have even been mentioned in the Michelin Guide. A curated menu in each booth presents so many iconic flavors. For instance, in de la Fuente’s Pepita’s Kitchen, you’ll notice a roasted pig near the clear dividers looking out on the crowd. That meat is used in pork dishes like lechon and truffled rice with shiitake mushrooms and crispy skin. At the Aoki brothers’ Kura Kura Pa, featuring a variety of yakitori (skewered foods) and combos to experience two or three varieties of chicken or pork, plus onigiri. Blood Bros BBQ serves Texas barbecue, Han’s Fish and Chips offers a couple of fried fish options and fries, and Streetbird brings Marcus Samuelsson’s Nashville-style fried

chicken. You can find tacos, milk tea, chicken rice, burgers and more at other booths. For a large meal, the Nori Bar presents a variety of made-to-order handrolls, sashimi and sake, as well as teas and Japanese beer on tap. Order separately or order a set, which lets you taste several for a reasonable fixed price. Another option is FUHU Cha Chaan Teng, the only sit-down restaurant in the food hall. It serves a full menu with selections from several Asian cultures, such as pho, Mongolian beef, clay pot dishes, BBQ pork buns, crispy fried lumpia and a toasted Spam and scrambled egg sandwich, plus whole crispy Peking duck. In the center of the food hall are two special kiosks. Famous Foods’ Sweet Eats has dipped apples, all kinds of pastries and flavored ices. And the impressive Famous Foods Center Bar is decorated with neon signs that evoke a Japanese street scene. The 16-seat bar features an automated self-pour beer system. Nice! –Nina King

On Their Own Terms Best-selling band brings transcendent sound to Vegas stage If Tool had only scored a hit with “Sober” in 1993 and then disappeared, the progressive metal band would still have become legend. The stop-motion video created for the song by guitarist Adam Jones is one of most iconic of the alternative rock era and exemplifies everything Tool stands out for via Jones’ sonic design, Maynard James Keenan’s vocals and a message that’s universal in a song about a specific person. That was just the beginning of Tool’s story. With one early period lineup change, Tool has earned four Grammys in

a five-album career. The band’s members could have cashed in and churned out album after album since debuting with Undertow, but they took their time. Sophomore effort AEnima was released in 1996, and by the following year Tool was headlining Lollapalooza. Major side projects absorbed energy that might have been wasted on excess Tool consumer product, with Keenan fronting both A Perfect Circle and Puscifer. By 2001, the band had established a sound that transcended established conventions of progressive rock and art

metal, and cultivated a fan base that catapulted third album, Lateralus, to No. 1 upon its release. Tool continues to demonstrate a maverick attitude that, along with insistences on privacy and creative control, is an inspiration to young bands that envision career longevity and value authenticity. Giddyup to Downtown

Lounge houses historic neon sign and new winter cocktails Warm up with some new winter cocktails at one of downtown’s coolest hangs, Vegas Vickie’s. The lounge is home to the 20-foot-tall neon sign, Vegas Vickie, a cowgirl, complete with hat and boots, who has watched over the famed Fremont Street for more than four decades and now lives inside the Circa Resort & Casino at the lounge named after her. With plenty of seating, the hot spot is the perfect place to enjoy the new winter specialty cocktail menu inspired by different states across the nation. Start with the Raising Arizona, made with Elijah Craig small batch bourbon and mixed with PX Pedro Ximénez sherry, lemon, sage, egg white and fig. Las Vegas has long been considered Hawaii’s Ninth Island, so in honor of the connection, The Ninth Cocktail takes flavors from the islands and blends together Rémy Martin 1738 cognac, banana, salted caramel, Nocino, pineapple two ways, tiki bitters and macadamia nuts. Vegas’ next-door neighbor gets a nod on the menu with the California Love, a mix of Mount Gay XO rum, blood orange, grapefruit, cardamom and pomegranate. One cocktail has remained a perennial favorite on the menu—the Wish You Were Here. It’s mixed with Glen Grant 12-year Scotch, peach, Amaro Nonino, St-Germain, lemon and apple cider vinegar. The bonus of this cocktail is that guests receive a Circa-branded postcard with the cocktail; you can fill it out at the bar and the staff will mail it off for you. New bar and lounge celebrates Italian culture and flavors Stellar cocktails in a swank and welcoming space is what you’ll find at the newly opened Sala 118 at The Venetian. “Really if I ask, ‘What is Sala 118?’ It’s a place that feels like home. A

beautiful, gorgeous home,” said Andrew Pollard, director of mixology for The Venetian. “The mood, the environment, it’s to provide a sense of comfort. The environment that we want to create is

to amplify the DNA of this property and the character. It’s an elevated experience that is indicative of our DNA; that mid-century Italian setting in a modern Venetian landscape.” The vibe and design have an understated elegance, with gorgeous flourishes throughout like the lighting, seating and bar area. The real star of Sala 118 is the cocktail menu, created over a two-month period by Pollard, a longtime and well-respected Las Vegas mixologist whose cocktail creations reside on menus up and down the Strip. His goal for Sala 118 was to take classic, familiar cocktails and present them in a unique and innovative way by using Italian ingredients. “I’ve always had a passion for Italian cocktails, and I’ve always looked for a home to have the opportunity to do this,” Pollard said. “I want our guests to explore, take a journey through Italy, and they’re guided through our menu and guided by our knowing bar staff as well.” And no other cocktail is more indicative of the Italian culture than the Negroni. Sala 118 offers six different riffs off the classic recipe, using different spirits and ingredients that allow drinkers to experience the Negroni in a whole new way. “The Paradise Negroni, which is almost like if a piña colada and a Negroni made a baby, is a very fun, exciting and unique cocktail,” Pollard

Tips/Insider Knowledge The word “sala” in Italian means “room” or “Italian living room,” and the number 118 represents all the islands around Venice that are linked by bridges and canals. A must-try is the limoncello, says Pollard. “Our limoncello is the greatest you’re ever gonna try,” he says. “It’s sourced from a small boutique vendor. It’s life-changing limoncello!” Look for the lion head with a spigot behind the bar. The secret: It dispenses a signature Negroni with signature vermouth and signature bitters.

said. The recipe calls for Porter’s Tropical Old Tom gin, Heirloom pineapple amaro, Luxardo bitter bianco, coconut, Lustau Manzanilla Papirusa sherry and lime bitters. Not often would one find the margarita on the menu of Italian bars, but sticking with the Sala 118 philosophy, they’ve taken a classic that is familiar to everyone and given it a unique twist. And this writer has to say: Out of all the margaritas sampled across the city, this is one of the best versions I’ve ever tasted! This general manager pays it forward For Destyn Hamada, general manager of Brezza at Resorts World Las Vegas, it’s all about the next generation. “I found that I really loved leading a team and cultivating talent and watching them bloom and blossom,” she says. Having mentors throughout her own career is partly how Hamada got to where she is today, she says, and now it’s her turn to be the mentor. While pursuing a career on Broadway, Hamada began working at restaurants in New York City

serving up new creations and some of the most popular dishes from the show. “For 10 years, Jon has been asking me to open a restaurant together and I have always said, ‘No,’” Choi said in a press release. “I know how tough running a restaurant can be, and I didn’t want to risk it getting in the way of our friendship. But with Park MGM as our partner, I knew it was finally time to complete the

Nosh cooking together.” The Chef Truck, near the casino floor, is the perfect spot for grab-and-go or to chill out at the adjacent dining space, which holds just a few tables and high-top seating. Food can be ordered from early afternoon until late in the evening, and we suggest frequenting the truck a few times to get a taste of all the goodies. And there are many goodies! Fans of the Netflix show will see fan favorite recipes on the menu like the mouthwatering Chef Truck Cubano. Choi’s and Favreau’s version of the classic takes a pressed butter roll and stuffs it with eggplant, portobello mushrooms, grilled mojo tofu, cheese, pickles, mustard and salsa verde. The Medianoche is like the Cubano but gives carnivores satisfaction with roasted mojo ham, pork, cheese, pickles and mustard inside a torta-style bun. Another show fave is the grilled cheese sandwich, a classic that gets the two bros’ upgrade with thick slices of buttered griddled sourdough bread piled with Gruyère, Parmesan, yellow and white cheddar—an egg can be added for that extra pop.

A chef’s salad mixes fresh lettuce and veggies with a choice of tofu, pork or chicken added, and the breakfast burrito is plump and filling for that morning-after-partying-all-night hunger. It’s stuffed with pork, eggs, potato, cheddar cheese, salsa verde and pickled red onions. Sides at The Chef Truck are just as much stars on the menu as their main brethren. Not to be missed is the spicy watermelon, a simple but lip-smacking recipe made of cubes of the juicy fruit marinated in kimchi paste and lime. The mozzarella cheese croquettes and ham and cheese croquettes are rich and filling. The plantain chips are ginormous and come with the salsa verde that Choi recommends putting on almost every dish—he’s right, it’s freaking amazing. Another Chef Show favorite makes it on to the dessert menu, the molten chocolate lava cake. You won’t want to share it with friends, but maybe get the group in on an order of perfectly fried and light beignets with a chocolate dipping sauce. “I hope this food lives up to people’s hopes when they try it,” Choi said. Mission accomplished, buddy.

A presidential election year is an optimal time to catch Bill Maher performing standup. His The WTF? Tour is booked through November, with the final Las Vegas dates scheduled days before the election and a recently added show set for Milwaukee right before the Republican Convention is held there. The tour comes at a time when Maher campaigns for sanity in reaction to voices at the extreme ends of the political spectrum speaking loudest while intolerance for opposing opinions seems to be at an all-time high. Maher will be able to riff off

events leading up to the convention and election in real time, or shortly afterward, much as he does on his HBO talk show, Real Time with Bill Maher. That successor to his groundbreaking series, Politically Incorrect, has kept Maher on television consistently for more than 30 years, with his recent foray into podcasting, Club Random

Recent guests have included writer/filmmaker David Mamet, comedian Chris Distefano and country singer Trace Adkins, all three of whom are decidedly to the right of American politics’ 50-yard line. Maher is unconcerned about being canceled for the figures he invites to indulge in conversation, cocktails and cannabis. Pundits may remark that he’s transitioned from being a liberal to a libertarian, but Maher insists he has remained consistent in his beliefs as the goalposts around him have moved. “I haven’t changed,” he says halfway through his 2022 HBO special, Bill Maher: #Adulting. “I really haven’t. I am still the same pot-smoking, childless, unmarried libertine I always was. I have many flaws, but you cannot accuse me of maturing.”

He now boasts an even dozen HBO comedy specials in a career that began at comedy club Catch a Rising Star in the late ’70s. Born in New York City, Maher attended Cornell University before heeding the call of stand-up stages. He graduated to appearing on talk shows and starred in 1983 ensemble comedy D.C. Cab, but his trajectory plateaued for the remainder of the decade. He found work on films and television, losing a gig as correspondent of Saturday Night Live’s “Weekend Update” to Norm Macdonald, until Comedy Central offered him Politically Incorrect six years

before Jon Stewart took over The Daily Show. The format called for a panel of four guests of diverse backgrounds and opinions. After the show was canceled in 2002, Maher was scooped up by HBO, and has enjoyed immense success since. Real Time guests come solitary or in pairs, with Maher matching wits before a live audience with major political figures such as California governor Gavin Newsom. His two most popular YouTube videos are conversations with conservative podcasters Ben Shapiro and Jordan Peterson, the latter of whom Maher was a “big fan” of at the time of his first meeting. It’s safe to say Maher is still left-of-center. He’s not woke, though. Maher challenges the status quo of the right and left. He’ll continue to do so as long he has the energy and people seek sanity during insane times.
