Designing and decorating a home, using colour, pattern, texture or art and accessories are the secrets of the trade that only the professionals know. You may not be ready for a major renovation, but designers know that small alterations can make a big difference if properly executed; and some are just simple organisation and editing of what you already have in the space. Organising is always a great place to start, because you can start that project immediately and this helps edit the overuse of “things” throughout the home which gives the added benefit of creating more storage after you have put everything where it belongs. For example; when you open your linen closet, it’s likely you stand there looking at it thinking that you will never find all the pieces for the sheet-set you bought six weeks before. That’s because it’s all piled in there with all the other sets from over the past decade. A simple solution is to take the sheets and pillow cases and put them all into one of the pillow cases of the set. Do this with all your sets and soon enough that linen closet will be opened and closed in no time flat. Design has guiding principles of scale and proportion, colour, pattern and lighting. These are

essential tools that a designer uses to create living spaces of your dreams. A room’s palette should underscore its architecture, while its pattern should add visual intrigue. The combination of the two should make you feel at ease in the space. Small rooms can be striking – especially when you apply a few tricks of the trade. You can fool the eye with mirrors, which reflect and amplify light and create the illusion of twice as much space.

Some other secrets to follow: • Add under-cabinet lighting to your kitchen, it will bring your backsplash to life. • To help create balance and scale, use symmetry – pairs of pictures or chairs. • In large rooms include enough upholstered pieces to keep echo to a minimum. • The view – if you have a great one, install surfaces and furnishings made of materials like steel,

stone, wood and glass which typically reflect the colours and textures of the landscape. • Use furniture in the correct proportion and scale to the room, steal pieces from other rooms and mix it up a bit. Do this periodically and your home will never be boring. • Do not fill large rooms with lots of small furniture pieces. Use large furniture and less of them – the same applies in reverse for small scale rooms. • If you have a passion for art and photographs, then take your cue from them, they can dictate wall colours, fabric textures and even furniture placement in a room. I hope some of the above gave insight into how a designer thinks of a space. Always remember that each room has its own personality and usually rooms are quite clear on what they want to be like, you just need to listen. Let the kitchen serve your family by carefully adapting its layout to accommodate your needs, adding materials and appliances that are hardworking as they are pleasing to the eye. Bathrooms are places to get away from it all, so make sure yours includes soothing elements. Your bedroom, a refuge, should embrace calming colours, textures, furnishings and fabrics that relax you. In the end, the only perfect house is the one that is right for you – not a house that is someone else’s idea of how you should live.

Easter Extravaganza!

Mesclun Greens with Candied Pecans, Goat Cheese & Champagne Vinaigrette INGREDIENTS: For the pecans: • 1 cup (4 ounces) pecan halves • 2 tablespoons organic maple syrup • pinch salt For the salad: • 10 cups mesclun greens (or favourite mixed greens such as green or red leaf, Boston, bibb, or romaine) • 3 ounces goat cheese, crumbled

DIRECTIONS: For the pecans: Preheat the oven to 375 degrees. Lightly oil or line two baking sheets with parchment paper. In a small bowl, combine the pecans and maple syrup and toss gently to combine. Spread the pecans in a single layer on one of the prepared baking sheets. Roast in the preheated oven, stirring once, until the syrup is bubbling vigorously, about 5 minutes. Immediately scrape the glazed pecans onto the other prepared baking sheet, spreading them in a single layer. Sprinkle with a pinch of salt and set aside to cool.

INGREDIENTS: For the vinaigrette: • 1 cup mild olive oil • 1/4 cup champagne vinegar • 1/2 cup champagne • Salt and freshly ground pepper • Pinch sugar, optional Preparation: Whisk together olive oil, champagne vinegar, and champagne. (You may use a blender for this if you wish.) Season to taste with salt and pepper. If the vinaigrette tastes too sharp, add a pinch of sugar and whisk until dissolved.

Refrigerate any leftover salad dressing and use within 1 week. Yield: 1-1/2 cups, enough for 6 to 8 salads For the salad: Place the greens in a large bowl, drizzle with about half of the vinaigrette and toss to combine. Add as much of the remaining vinaigrette as desired and toss again. Divide among individual plates, sprinkle with the cheese and reserved pecans and serve immediately.

Barbecued Butterflied Leg Of Lamb With Mint INGREDIENTS: • 1 leg of lamb (5 to 6 lb.), boned and trimmed of surface fat • 3/4 cup balsamic vinegar • At least 1/3 cup mint jelly • 1/3 cup minced fresh mint leaves • Fresh mint sprigs (optional) • Salt and pepper

DIRECTIONS:

• Lay meat boned side up. • Slash about halfway through thickest portions, as needed, and pull meat, patting cut edges down, to make the piece even. • Place lamb in a 9 by 13-inch pan. • In a 1 to 1 1/2-quart pan over medium-high heat, stir vinegar with 1/3 cup mint jelly just until boiling. • Stir in minced mint leaves and pour evenly over lamb. • Cover and chill in refrigerator for 2 hours or up to a day. • Turn meat over occasionally. • On a barbecue grill with a lid light

charcoal briquettes. • When briquettes are dotted with ash, in about 30 minutes, spread them into a single layer; scatter 10 to 12 more briquettes over coals. • Set grill 5 to 6 inches above coals. • Lift meat onto grill; reserve marinade. • Put lid on barbecue and open vents. • Turn meat as needed to brown evenly; baste often with marinade. • Cook until thickest part of meat is done to your liking; for rare (140° on a thermometer) in centre of thickest part, allow about 40 minutes total. • Thinner sections will be well done. • Transfer lamb to a platter and let rest 5 to 10 minutes. • Garnish with mint sprigs. • Slice meat thin. • Season to taste with mint jelly, salt, and pepper.

Sea Bass with Wine Sauce INGREDIENTS: • 1/4 cup (1/8 lb.) butter or margarine • 1 1/2 tsp drIed fine herbs mix or 1/2 tsp each dried thyme leaves, dry marjoram leaves, and dry tarragon leaves • 1 tsp each minced onion and parsley • 1/4 cup minced celery • 1 tb of minced Trinidad pimentos • 1 cup soft white bread crumbs • 1/2 pound cooked shelled crab • 1 1/2 to 2 pounds boned and skinned sea bass Wine sauce Paprika Parsley sprigs

DIRECTIONS:

• Melt butter in a 10- to 12-inch frying pan over medium heat. • Add fine herbs, onion, minced parsley, pimentos and celery and stir often until slightly browned, about

5 minutes. • Stir in the bread crumbs and crab; set aside. • Rinse fish and pat dry, then cut into 4 to 6 equal portions. • Lay fish in a buttered 8- by 12-inch baking dish. • Evenly top fish with wine sauce. • Cover and bake in a 425° oven until fish is opaque but still moistlooking in thickest part (cut to test), about 20 minutes if fish is 1 1/2 inches thick, less time if pieces are thinner. • Uncover casserole, mound crab mixture on fish; baste crab with some of the pan sauce, then sprinkle generously with paprika. • Bake 5 minutes longer; garnish with parsley sprigs. • With a spatula, transfer fish to plates and spoon sauce onto each portion.

Brandied Carrots INGREDIENTS: • Carrots - 24 small • Butter - 1 tablespoon • Lemon - 1, freshly squeezed • CHAMBORD (raspberryflavoured liqueur - 3 tablespoons Brandy - 1/4 cup Honey - 1/4 cup Parsley - 2 tablespoons, finely chopped

DIRECTIONS: • GETTING READY 1. In a small bowl, combine the lemon juice, Chambord, brandy and honey. Blend well and keep aside. 2. Grease a casserole or baking dish with butter. 3. Preheat the oven to 350 degree F before baking. MAKING 4. In a saucepan, add carrots and cover with cold water. Add a pinch of salt to the water. 5. Bring to a boil 6. Reduce heat, cover and simmer the carrots until they are tender-crisp. 7. Drain in a colander. 8. Arrange the carrots in the casserole. 9. Spoon the prepared syrup over the carrots to glaze well. 10. Dot with butter. FINALIZING 11. Bake the carrots uncovered, in the preheated oven, for 10 to 15 minutes, stirring once, until golden and glazed.

Flourless Chocolate Torte INGREDIENTS: • 16 oz. bitter sweet chocolate – chopped ¾ cup unsalted butter • 1 tbsp coffee liquor • 6 eggs • 1 cup sugar • 1 tsp. vanilla • 1 tbsp water • ¼ tsp. salt • ¼ cup unsweetened cocoa

For the ganache • 8 oz. semi-sweet chocolate – chopped • 1 tbsp butter • 1 cup heavy cream

DIRECTIONS:

• Heat the oven to 300 degrees. Line the bottom of a 9 inch spring form pan with some buttered parchment paper. Butter the rest of the pan and set aside.

• Place the chocolate and butter in a double boiler. Melt the chocolate, stirring constantly. You can do this in the microwave as well. Whisk in the coffee liquor and remove from heat. Set aside and allow cooling. • Beat the eggs, sugar, vanilla, water and salt in a large bowl – until eggs are pale yellow and have doubled in volume. Carefully add in the melted chocolate. Continue beating for about 2 minutes. Add the cocoa. Mix well.

• Pour the batter into the prepared pan. Bake for about 40 to 45 minutes until an inserted cake pin comes out with moist cake crumbs. Remove pan from oven and place on a cooling rack. Let it cool down completely. Cover the cake and refrigerate for at least 6 hours or overnight. • Frost the cake with chocolate ganache or dust it with confectioners’ sugar.

Creamy Vanilla Soy & Roasted Garlic Mashed Potatoes INGREDIENTS: • 1-2 cups of vanilla soy milk or almond milk • 3-4 tablespoons butter, or any vegan butter of your choice • 2- 2/12 pounds russet potatoes, peeled • 1-2 head of roasted-garlic, (oil then salt & pepper and place on foil paper closed up and bake on rack in oven on 400 degrees for approx 15-20min) Salt and pepper to taste

DIRECTIONS:

• Cut potatoes in half, and then cut into cubes. • Add potatoes to rapidly boiling water. • Check potatoes for doneness after 20 minutes. When it breaks apart easily, they are ready, approximately 25 minutes. Strain potatoes, and then add them back into the pot. • Using a whisk or your preferred tool, add vegan butter. Then add vanilla soy milk to potatoes, a little bit at a time, mash-

ing and whisking to get the creamy consistency you want. You may not use all of the milk. • Add salt and pepper to taste. Enjoy! • Note: if you don't want to roast the garlic, you can always melt down vegan butter in a sauce pan over low heat and add some minced garlic and stir about 2 minutes. You can also use the same recipe with roasted shallots or onions.

SERVING 12. Serve the glazed carrots hot, as a side For the ganache Place the chocolate and the butter into a bowl. Bring the cream to an almost boil – when you start seeing little bubbles you are done. Pour the hot cream over the chocolate and butter. Let it sit for a couple of minutes – untouched. Whisk the chocolate and cream until it turns even and smooth.

Replace your old mouldy shower curtain and bath set with new ones every few months and rotate them. It’s the most inexpensive way to give your bathroom a fresh look while adding colour and a theme to your décor.

Replace your kitchen faucet with an updated model. Change the face of your cabinet. If you have solid wood cabinets, strip the colour or finish. Then apply a new stain with a couple of drops (or squeezes!) of yellow or green oil pigment (available at your local craft store) added. The colour will have more depth and more drama! Replace or paint ugly laminate countertops. Try adding beadboard as a backsplash for a traditional or country kitchen. Be sure to cover with a quality paint that can be scrubbed!

If you’re willing to spend a bit more, think about replacing your shower curtain by adding a shower door or add the wowfactor to your bathroom with an inexpensive, easy to clean shower enclosure that gives a sleek, modern appeal to a traditional themed bathroom. Attractive bathroom vanities can work wonders to any bathroom. Choices come in all sorts of styles and sizes from minimalist designs to decorative furniture styles. Usually constructed to fit. An inlaid sink on top, base vanities are ideal storage areas if you have a small bathroom. If you are on a budget, give your existing bathroom cabinets a new look simply with a fresh coat of paint. Wall and stand alone cabinets come in a huge range of sizes and styles, from wooden ones to those with hand painted, distressed or laminated finishes. If you have a small bathroom room, place a mirror on a cabinet door. This is not only useful, but can help create an illusion of space. Change all your fixtures on your sink and bath. CeramicTiles

There is a wide variety of ceramic tiles to choose from. They come in different colours and shapes from tiny mosaics to one foot square.

DO IT YOURSELF

• Marking, Nipping, & Finishing Circular Shaped Tile Cuts Tile nippers are used to make circular cuts in ceramic tile. They can also be used to make straight or angled cuts although you will find it much easier to use a tile cutter or wet saw to make these types of cuts. Always wear eye protection as very sharp fragments of the tile can shoot from the cut as it is being made.

A creative idea for using ceramic tiles would be to choose more than one colour for your countertop. You can choose as many colours as you like to create an interesting and colourful pattern. The best thing about ceramic tiles is because they come in varying sizes, you can create a picture mosaic or choose to create a random pattern.

Some ceramic tiles are machine made and others are handmade. Of course, the machine made tiles are less expensive. The cost of tile installation is also based on the type of tile that you choose. A plain tile, for example, could cost between $5 to $15 per square foot for solid colours and $20 to $100 plus for patterned tiles. Take into consideration that using ceramic tiles requires that they be grouted and that will add to your cost.

In this example, we are installing ceramic tile on a countertop and it is fairly easy to mark the tile we need to have cut. In some cases it is not possible to mark the tile cut directly. If this is the case, you will need to make a template using a piece of cardboard and then transfer those markings to the tile. Some tiles have very glossy surfaces and it can be difficult to mark the tile cut you need made. If a grease pen will not mark the surface of the tile you can mark the underside of the tile using a pencil.

3 Once the tile has been marked, hold it firmly over an empty container and proceed to take small "nips" or "bites" out of it using the tile nippers. Take your time and keep the "bites" small, otherwise you risk breaking the tile and having to start all over again.

5 When you have reached the marked line, proceed very carefully so as not to “overbite" the marked line.

6 After the tile is completely cut and finished you can use a piece of 60 grit sandpaper or a special rubbing stone used by ceramic tile contractors to smooth the finished edge. Water brings life to any decor from swimming pools to a simple fountain. We have always been told that swimming pools are very expensive and I agree that they should be done by professionals. But a simple water feature can be done as a do-it-yourself weekend project. Sure if you can afford it you can hire someone to build you an elaborate waterfall with stream and fountain. But here’s how this can be done in a very simple way while achieving the same effect.

What you need 1. Vinyl pond liner 2. Fork and shovels 3. Rocks 4. Water plants 5. A pump and spitter Pond liners can be found at any superstore hardware or pet supply store. Purchase a liner that suits the size of pond you would like to build. Then get a submersible pump and a spitter. A spitter is that little ornament that spits water back into the pond via the submersible pump. It can be a stalk or a fish. Choose whatever tickles your fancy.

Connect the hose to your pump and spitter. Submerge your pump and place your spitter in a position to allow good visibility of your spitter and water spraying back into your pond. And that’s it! With a little elbow grease you have created a beautiful water feature without spending a lot!

Preparing the location Choose a nice area for your pond where it’s partially shaded and quite visible for your pleasure. Enabling extra hands excavate to the depth of your likeness. Because your liner is flexible you can use any shape to form your pond. A great trick is using your garden hose to form the shape which helps in giving you boundaries while you excavate.

Making the pond your own Once you've dug your pond out, put your liner in. Using rocks, anchor your liner edge in place. Then fill your new pond with water placing plants strategically in and out of the pond to give a natural look.

How many pond plants do I need? Here is a rule of thumb for deciding how many pond plants to add to your pond. To each square metre of surface (10 square feet): • 2 bunches of oxygenating plants will look after this size of pond • 1 Water lily - there is a massive range of these pond plants to choose from • 1 Bog plant - these pond plants can also be planted around the perimeters of garden ponds. You would of course combine plants into areas and not space them according to this rule of thumb.

Mosaics with Kessa Seale

Kessa Seale, who presently holds the titles of graphic artist, mother and wife, is currently a blossoming artiste in the Mosaic business. She fell into the art form a few years ago when her sister brought home a book on the subject. Curiosity got the better of her and what was just a newfound hobby of doing small pieces on a weekend quickly turned into a full time job (as of 2006). The art form, which she says is actually done on mesh firsthand before being installed, is something that came naturally to her since she was versed in the fine-art realm of painting and creating art with her hands. Her inspirations come from graphical and nature books, since they include all the colours and shapes she needs. Fabric prints, motifs, surfing and tattoo graphics inspire her as well. Kessa, who is constantly busy building templates for other artists, admits that marketing her company online and installing Mosaics balances her career and personal life as if they were her only goals in life. “Having a daughter attending Form one and being a newly-wed no less than 10 months now is time consuming, but I do it. Working from home can have a lot of distractions if there is no organisation, but with a lot of self-motivation and a firm belief in God (and my talent) makes everything flow smoothly and naturally.

Q&A @ HOME: What is the process or how is Mosaic done? KESSA: The design is made on the computer, I then resize, taking away or adding elements (such as the fishes or other elements) catering to the customers’ order, and then finally I print out the designs. Colour is then specified on the print; this is very important since juxtaposed colour becomes an important aspect of the design. Visually, grout can either pull the tiles together or make them appear to separate. Therefore, I employ colours making sure they will be always visible, no matter what colour the Diamond Brite/grout is. As

the tiles are cut they hold fast to the paper until the entire print is covered. @ HOME: Where can it be installed? KESSA: My mosaics can be installed anywhere tiles are installed: consequently, the shower or parts of a bathroom, kitchen, living room, pool or Jacuzzi, or on the floor or walls can be ideal places for the artwork. @ HOME: What are some of the things you look at before you begin working on the artwork? KESSA: Many aspects come into play. For instance, will it be the deep or shallow end of a pool? What’s the best size and colour to use? Is it being installed on a pedestrian or vehicular thoroughfare? Will they will be hung on a wall or directly installed? New concrete or painted concrete are also key elements I look for, and finally whether the area in question needs to be treated first. @ HOME: Do you create designs for your customers or does the client come already prepared? KESSA: I have designs such as Dolphin-pairs, turtles, Hibiscus, beach balls, crabs, coral & clown fish ready for installation and sale. However, customers can also have their own Mosaic designs custom-made. @ HOME: How is it maintained (a few tips)? KESSA: It will be maintained in the same way you would normally clean your tiles. @ HOME: What are some of the designs you have done? KESSA: I’ve done underwater dolphin scenes installed on a wall, a surfing Snoopy, words and numbers for signs, among others. @ HOME: What sets you apart from the rest? What is your unique quality? KESSA: The final Mosaic is on the mesh which ensures an easy and quick installation: it’s exactly what the customers need, and it’s no trouble for the tile man to install. My business is quite economical and we do our best to work strategically and thoroughly in a very timely manner, so that no time is wasted. You could say that I have what they need. WINDOWS WINDOWS look best if they are cleaned on a regular basis, at least twice a year on the inside and the outside. Here are some useful techniques for cleaning windows: • Wash one side of a window with horizontal strokes and the other side with vertical strokes so you can pinpoint which side of the window has a streak. • Use a squeegee on a long handle or a sponge/squeegee combination to prevent streaks on large windows. • Eliminate tiny scratches on glass by polishing the affected areas with toothpaste. • Washing windows should be done on a cloudy day, because direct sunlight dries cleaning solutions before you can polish the glass properly. • Use a soft toothbrush or cotton swab to clean corners. • To give an extra shine to window glass, polish it with well-washed cotton T-shirts or old cloth diapers. Or rub a clean blackboard eraser over a freshly washed and dried window to give it a diamond-bright shine. • Polish windows to a sparkling shine with crumpled newspaper. The paper also leaves a film that's resistant to dirt. • Wash windows from the top down to prevent drips. • Remember that window cleaners pose a threat to woodwork.
