Here are some tasty, quick and easy recipes for when you’re feteing on the road. Now, these recipes are not just for the masqueraders; those of us who enjoy the season in the comfort of their homes can try these recipes too! EATS Chicken Pelau INGREDIENTS • 2 1/2 - 3 lbs chicken pieces seasoned with salt, pepper, chives, thyme, garlic, parsley, 1 tsp Worcestershire sauce, 1 tsp soy sauce, 1 tsp soy sauce • 2 cups rice, washed • 2 cups coconut milk and 2 cups water • 1 large onion sliced • 1 sweet pepper, chopped • 1 1/2 cup pigeon peas or 1 tin pigeon peas, drained • 2-3 tbsp vegetable oil • 1/4 - 1/2 cup sugar • salt and pepper to taste • hot pepper if desired PREPARATION 1. Heat oil in a large heavy iron pot or skillet. 2. Add sugar and allow to burn until dark brown. 3. Add seasoned meat and stir until pieces are well coated with burnt sugar; brown for 5 min. 4. Stir rice into chicken and turn often till well blended; cook for 3 min. more. 5. Add onion, sweet peppers and peas and stir fry for a few seconds. 6. Add salt, pepper, coconut milk and water; bring to the boil, lower heat, cover and simmer until rice is cooked and all liquid has evaporated (about 25- 30 min). Add more liquid if rice is still hard and continue to cook longer. NOTE: Pelau can also be baked in oven. Cover pot with tin foil, place in oven and bake at 350 F for 25-30 min. In this way, rice is less likely to burn and is fluffy. Corn Soup INGREDIENTS • 2/3 cup split peas • 1 cup channa (garbanzo), soaked overnight • 6 – 8 cups water • 1 onion • 3 cloves garlic

• 1 chive stalk • 1 celery stalk • 2 pimento peppers • 4 ears of corn • 1 carrot • 1 cup pumpkin • 1 pk vegetable soup • 1 hot pepper (optional) • 3 bouillon cubes (optional) • Salt to taste FOR DUMPLINGS: • 1/4 cup flour • 1/4 cup cornmeal • Water PREPARATION 1. Wash the channa and pressure cook for about 15 minutes. 2. Pressure cook the split peas for about 10 minutes 3. Knead the dough for the cornmeal dumpling to a semi-stiff dough and cut into 1/2 pieces. Set aside. 4. Clean and chop the corn into 1/2 pieces 5. Chop the rest of ingredients (carrots, pimento, chive, celery, pumpkin) and add to pot of water. 6. When boiling, add corn, dumplings, split peas and channa and allow to simmer for about 20 mins or until the corn is cooked and the dumplings float to the surface. Stir occasionally. Oil Down INGREDIENTS • 8 ozs. cooked salt fish, flaked • 2 chives • 2 pts coconut milk • 1 large or 2 small breadfruit cut into 4-6 sections • 1 whole hot pepper • 2 sprigs thyme • 1 stick celery, chopped • Salt PREPARATION 1. Soak meat overnight in cold water. Drain. 2. Remove the breadfruit core and peel, and in a saucepan, put alternate layers of breadfruit, meat and salt fish. 3. Tie chilli, thyme, chive and add to the pan with celery and coconut milk. 4. Cover tightly and bring to the boil. Reduce heat and simmer for about 45-50 mins until everything is

cooked and tender. When cooked, the liquid should all be absorbed and the stew oily. 5. Remove herbs before serving and add salt to taste. DRINKS Guinness Punch INGREDIENTS • 12 oz Guinness® stout • 1/2 cup sweetened condensed milk • 1/16 tsp cinnamon • 1/16 tsp nutmeg • Unsweetened cocoa powder PREPARATION 1. Gently pour a well-chilled Guinness into a small mixing bowl or glass that will hold all of the liquid ingredients. 2. Add the sweetened condensed milk, spices, and cocoa (if it's wanted). Stir or whisk well, and pour the mixture into glass. Strawberry Daiquiri INGREDIENTS • 1 fl oz (25 ml) light rum • 1/2 fl oz (12 ml) strawberry schnapps • 1 fl oz (25 ml) lime juice • 1 fl oz (25 ml) crushed strawberries • 1 teaspoon(s) granulated sugar • ice cubes as required PREPARATION 1. Shake all the ingredients together in a shaker with ice cubes. 2. Strain the mixture into cocktail glass and serve. Sea Breeze INGREDIENTS • 1 fl oz (25 ml) vodka • 1 1/2 fl oz (37 ml) cranberry juice • 1 1/2 fl oz (37 ml) grapefruit juice • 4 ice cubes crushed • 1 slice(s) of lime PREPARATION 1. Pour the vodka, cranberry juice and grapefruit juice into glass over the crushed ice. Stir well. 2. Float the lime slice(s) on top and serve with a straw.

Carnival is a time of the year when people cater to the food buying public. At the Queen’s Park Savannah, the food shacks are up and already, some are doing brisk trade. Outside the fetes and Calypso tents, the vendors (with their food badges neatly displayed on their person) are also conducting quick business. Indeed, Carnival may be about the spectacle, but it is also about our bellies. There are many of us, however, that “don’t meddle with outside food” for various reasons and choose instead to cook for themselves. However, things can get pretty tricky when it comes to transporting the delicious meals you’ve prepared to the North Stand. When you are transporting food, you need to consider two main food safety issues: keeping the food protected from contamination and, if the food is potentially hazardous, keeping it cold (5°C or colder) or hot (60°C or hotter).

How to Protect food from contamination

It is important to protect food from contamination by keeping it covered at all times. You can achieve this by using containers with lids or by applying plastic film over containers. Materials used to cover food should be suitable for food contact, to ensure that they do not contain any chemicals that could leak into the food. Aluminium foil, plastic film and clean paper may be used, and food should be completely covered. Packaged products should not need additional covering. Previously used materials and newspaper may contaminate food and should not be used.

Temperature control

When potentially hazardous foods are transported they should be kept cold (5°C or colder) or hot (60°C or hotter) during the journey. Alternatively, you could use time, rather than temperature, to keep the food safe while it is being trans-

ported. If the journey is short, insulated containers may keep the food cold. If the journey is longer, you may need to use ice bricks to keep food cold and heat packs to keep food hot. Place only pre-heated or precooled food in an insulated container, which should have a lid to help maintain safe temperatures. Insulated containers must be: • In good condition and kept clean at all times; • used only for food; • kept away from other items such as chemicals, pet food, fuel and paint; • be filled as quickly as possible and closed as soon as they have been filled; and • kept closed until immediately before the food is needed or is placed in other temperature-controlled equipment.

Transport considerations

• Containers of cool food should be placed in the coolest part of the vehicle. • If the inside of the vehicle is air-conditioned, cold food may be transported better here rather than in the trunk. • Vehicles should be clean. If the vehicle is normally used for carrying pets or dirty equipment, the food carrying area should be thoroughly cleaned or lined to prevent any contamination. This may not be necessary if food is transported in an insulated container with a tightly fitting lid. • The journey should be properly planned and should be kept as short as possible. • When collecting ingredients, cold foods should be collected last and immediately placed in insulated containers or cool bags for transporting to the preparation facility. • When taking prepared foods to a venue, pack the food into insulated boxes as your last job. • When you arrive at the venue, make it your first job to unload any hot or cold food and place it in temperature controlled equipment.

Stories by Nyerere Haynes Experience has taught me that successful Carnival liming in Panorama or cooler fetes is dependent on the capabilities of the cooler chosen to chill beverages, salads and whatever else is required to be cold for maximum enjoyment. Selecting the right cooler for the job depends on the expectations of the lime and of course, the size of the crew. These options should encompass the needs of different types of limers…

Cooler Bag:

The solo limer is values his mobility and is constantly on the go liming at various points on the road and in the fete. The cooler bag allows him to at any time have 12 cans of cold beers on his person. It also allows him to avoid having to get into ridiculously long lines every time he needs a cold one. But when he does get into that line it will be for at least 12 cans of beer that will keep him stocked for a good part of the lime.

28 Quart Roller cooler:

This portable refrigeration device is best for the road and can easily store, transport and efficiently chill 36 cans of beers, with ice. This average can now allow users to estimate how design their drink list break down. These coolers are usually sturdy and take the weight of an average sized human. The telescoping handle and wheels makes for easy movement and with the handle down it makes quite a comfortable seat.

50 Quart cooler:

This cooler will see a crew of 12 through a night of beers, soda and rum easily anytime. These coolers usually come with reinforced swing up handles that make carrying easy and some even come with wheels. Thermal insulation allows at least 5 days of coldness once properly topped up with ice. These bad boys can hold up to 50 cans of beer with ice! So the onus is on the crew to mix and match drinks accordingly.

70 Quart cooler:

This is where we enter Panorama territory. This cooler is designed to hold 112 cans of beer at optimum coldness and some also come with wheels. Those 2 litre bottles can fit in the upright position. This cooler is for the crew that’s in it for the long haul. The reinforced swing up handles allow for easy transporting. And of course the cooler doubles as seat or stepping stool for anybody interested in rest or seeing over a thick crowd.

Keeping hydrated on the road should be at the forefront of every masquerader’s mind. The physical exertion (palancing) and heat exposure experienced on those two days are intense and a lack of water intake can make it a terrible experience. Here are some ways to keeping hydrated when in mas mode:

Hydration packs:

Stay hydrated on the long Carnival Monday and Tuesday chip with this convenient 1.5-litre hydration pack. The ‘water back pack’ is perfect for the masquerader because of its lightweight and sleek design. It fits snugaly on the back of the user and utilises drip-free, dual action bite valves that deliver sufficient thirst-quenching flow. The suspension harness absorbs shock and breathable mesh shoulder straps provide long-term comfort. They usually feature a storage pocket for securing valuables.

Aluminum Canteens (military issue):

Old school revelers usually carry these around and sometimes they are even filled with water. The 1 Litre canteen is looks ruggedly vintage and keeps water cool. It usually comes with an adjustable harness that can be tightened when necessary (uninhibited wining).

Goatskin Wine Botas:

Like the aluminum canteens, Botas are an old school hit. The goatskin exterior is durable and the inside is lined with taste free latex. It comes with an adjustable harness that straps the Bota firmly to the torso. The screw on cover will stay closed even during vigorous wining.

Get to the drinks truck:

If you find yourself on the road without any hydration system, stay close to the drinks truck and have as much water as your body calls for. Even though beer contains water it’s not a good water substitute. So, keep your head on and stay hydrated.

Party. Lavway. Break away. It’s what we all want to do when the soca music takes over in the fete. And when we see the performers of our favourite soca tunes live on stage… well, that’s another story altogether. Items for your kit • “Vex Money” (some cash to take you home in case of an emergency) • Touch ups for makeup (lip gloss, face powder, etc.) • Mini Perfume/deodorant • Small compact mirror (to check the makeup) • Small comb • Napkins/wipes/toilet paper (in case either runs out at the venue) • Oil strips (to touch up shine) • Panty liners, pads, tampons • Safety pins (a strap could burst, not so?) • Woogie/scrunchie/hair clip (to gather your hair in one if you start perspiring) • Rag or bandanna • Pre-loaded “Fete phone” (leave the fancy smartphones at home) • Your keys • Small bottle of water • Mints, gum, etc. • Antacids (in case of an upset stomach)

Ingredients

• 1 large bunch broccoli, chopped • 2 cloves garlic, minced • 1 onion, chopped

• 1/4 cup (60 ml) long-grain white rice • Pinch hot pepper flakes

• 3 cups (750 ml) vegetable broth or

chicken broth

• 3 cups (750 ml) Moo! Skimmed Milk • 2 tbsp (30 ml) freshly squeezed

lemon juice

• Salt and pepper, to taste

Preparation

Cut broccoli stalks from tops; peel fibrous outer layer from stalks and chop coarsely. Cut tops into small florets; set florets aside separately. In a pot, combine chopped stalks, garlic, onion, rice, hot pepper flakes and stock; bring to a boil over high heat. Reduce heat, cover and boil gently for 10 minutes or until rice is almost tender. Add florets and cook, covered, for about 10 minutes or just until broccoli is cooked. In a blender, puree until smooth; return to pot, if necessary. Stir in Moo! Skimmed Milk; heat over medium-low heat, stirring often, just until steaming (do not boil). Stir in lemon juice and season to taste with salt and pepper. Cooking Tip: Add 2 cups (500 ml) chopped spinach with broccoli florets. Sprinkle each serving with 1 tbsp (15 ml) shredded Cheddar or aged Gouda cheese.

At just 36, she is the youngest & first female Captain of the world famous BP Renegades. Even at her young age, she already has 21 years with Renegades under her belt. Her status in the band has clearly been earned through commitment, determination & hard work. As a child, Candice's grandmother's home was right next to the panyard on Charlotte Street (now an army base) and she very often played there. But her real introduction to playing a pan herself came at school, Woodbrook Government Secondary, where at age 15 she learned to play the national anthem on a steelpan. The accomplishment encouraged her, and that very year she officially joined Renegades. In addition to playing, she also steadily worked her way up through the ranks of administration, first as a committee member, then Assistant Secretary, Secretary, Vice Captain and then Captain (now in her second term of office). Despite coming from a broken home (her father, a talented music arranger, fell victim to drugs, leaving her mother to raise her & her sister since she was 2). She earned herself 5 O'levels and completed a course in typing to prepare her for the business world. However, she says that being a part of Rene-

gades taught her more than any institute of learning ever did, & inspired her to take her music education further, attaining Grade 5 and a Music Diploma from UTT. She now fluently reads & teaches music, and was one of the music tutors involved with the Panyard Initiative Program in 2012 targeting youth in the surrounding communities of POS North. She has also been accepted to study for her Bachelor of Arts degree at UTT. She is quite an inspiration to her players, especially the younger female ones coming up, so I wanted to know who inspired the young Candice Andrews. Her response surprised me. Despite the situation, it's her father. She sees beyond just his downfall to how talented an arranger he was for many bands locally and internationally, and instead of dwelling on the negative she instead resolved to never allow anything to impede her in fulfilling her own greatest potential. Her vision is to see steelpan get the respect & support it deserves from the country of its birth. Elsewhere, it is valued and honoured with steelband academies, a prominent place in school musical programs, financial support and national exposure. People come to T&T to learn from our master pan players, arrangers and pan music writers, and their countries benefit from it. Sadly it is not so here, and she is keen to change that.

She has already begun within her own circle of influence - her band. She believes that one of the core elements in the process is changing how 'pan' is perceived here. Steelband’s history is as a 'Carnival thing', deeply rooted in the 'poor lower classes', and violent confrontations were the norm, and that image persists. Therefore she insists on a 'Code of Conduct' for her players. It is drilled into every one (they are given printed instructions!) that they are ambassadors, and must ALWAYS carry themselves in a manner befitting such. She says many of their international tours are a result of someone being impressed not just with their phenomenal musical performances but by the extremely high standard of class and professionalism they display. She graciously allowed me to share their credo, penned by own hand:

As I said… a remarkable young lady.


Imagine our colourful Carnival festival without super shiny, sparkly glitter dust; it would be dull, flat, uninteresting and completely boring, not so? Over the years masqueraders have come to expect some form of glittery embellishment to be added to their costumes, whether it is intrinsically worked into the fabric and accessories or plastered on their bodies and faces, glitter is indeed synonymous with Carnival. People who have played with glitter know only too well that it gets into everything, sticks to almost any surface and is a real pain to remove, but few are aware of the origins of this imaginative invention. Glitter is really an array of amazingly small, flat and highly reflective particles. When applied to surfaces, they reflect light in different angles causing the surface to appear sparkly. Glitter has been around since prehistoric times and was made from several different materials including mica, insects and glass. As early as 30,000 years ago, flake mica was used to give paintings in caves a glittery appearance. Primitive humans are believed to have used cosmetics which may have included a sparkling mineral called hematite. Over 6,000 years ago ancient Egyptians produced glittery cosmetics from the iridescent shells of beetles as well as finely ground green malachite crystals. In addition to glittering surfaces in prehistoric times in the arts and in cosmetics, sparkly fabrics have made their way into the fashion mainstream through the ages. Prior to fabrics made with modern glitter, sequins were sewn or woven onto fabric to give it a glitzy appearance, much like it is still done today in our Carnival costume making. In modern times over 20,000 varieties of glitter are made in a vast number of different colours, sizes and materials. Wine CDD Sauvignon Blanc This well-rounded Chardonnay with a flourish of crisp green apple, hints of tropical fruit tempered by a touch of buttery richness is a great partner for richer fish and seafood varieties, yet is always balanced out by a fresh, crisp citrusy note. A “gourmet” salmon-burger, to please the nomeat eaters! To easily slice the fish, freeze for 45 minutes. SERVES 4 Ingredients: • 1 lb centre-cut salmon filet, without skin and deboned • 3 tablespoons canola oil • 2 tablespoons teriyaki sause • 3 tablespoons minced scallions • salt and freshly ground black pepper For The Wasabi Mayonnaise 3/4 cup mayonnaise • 3 tablespoons lime juice • pinch of grated lime rind • 1 tablespoon honey • 2 teaspoons wasabi paste, or to taste • Toasted hamburger buns or Kaiser rolls for serving

For The Cucumber Salad 1/2 Kirby Cucumber, thinly slced • salt • 1 tablespoon vegetable oil • 1 tablespoon minced chives

Method: 1. Slice the salmon in chunks and pure in a small food processor for 1 minute. Add 1 tablespoon oil, teriyaki sauce and scallions, salt and perpper and process 30 seconds longer. Transfer the mixture to a bowl, and form 4 large or 8 small, 3/4 inch thick hamburgers. Keep refrigerated. 2. Prepare the wasabi mayonniase: In a bowl mix to combine all the ingredients for mayonnaise and refrigerate. Place the sliced cucumbers in a colander, sprinkle with salt and let

sit for 15 minutes. Rinse and pat dry with paper towels: Transfer to a bowl with the oil and chives. Mix to combine. 3. Before serving: Heat the remaining 2 tablespoons oil in a skillet over medium-high heat, add the salmonburgers, turning once, about 5 minutes on each side. Spread the wasabi mayonnaise on the toasted buns, cover with the sliced cucumbers and place the salmon-burger on top. Serve at once.

It affords the individual the versatility of changing their entire look to suit any occasion, especially at this season. There are the clip-on types that can be coloured and clipped under existing hair with the least amount of fuss. These are quite easy to remove. Also, there are the extensions that are sewed or glued on for a more permanent application. It is best to leave the removal of these types of extensions up to your professional hair stylist as you stand to damage your own hair if you were to try this on your own. Some people are daring enough to experiment with their hair and use brightly coloured perma-

nent hair dyes for a longer lasting effect, but luckily for the not-so-courageous at heart, there are arrays of semi-permanent hair colours that come in aerosol cans and can be carefully sprayed on the entire hair or applied in streaks. These semi-permanent spray-on products are readily available in speciality shops and are a fun and easy DIY, you can try spraying on one colour on part or the entire head of hair or spray sections of your hair in different colours to add some exciting interest. Spray-on colours hold up well during a light shower of rain but staying outdoors in a heavy downpour is definitely not recommended. Here’s what you can try:

Nail art This uses nail polish and a nailbrush. This is where artist values are tested because nail-technicians actually draw (without stencil) designs on the nails. It may be a lengthy process as each layer of nail polish must dry before applying other coats, but on the other hand this type of nail art lasts much longer than the rest.

White Tips/French Tips This look is a classic one for the corporate type and doesn’t entail painting or polishing. The nail is clear with the nail ends coloured white for a professional look and it lasts much longer that the rest.

Air Brushed This type of nail work is the most famous as creatively, anything can be done to the nail. Most people gravitate towards air brushing because they can do their nails according to their moods, seasons or

Preparation 1. Bring a 6- to 8-quart pot of salted water to a boil. 2. Meanwhile, heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. 3. Sauté shrimp, turning over once, until just cooked through (about 2 minutes) and transfer with a slotted spoon to a large bowl. 4. If you think your drink has been spiked and you’re capable enough, call a friend or family member immediately and get yourself to safety. How do you know if your drink has been spiked? Well, I’m sure you know your tolerance to alcohol, so if you

No one should have access to the card but you. Immediately notify your bank if it is lost or stolen. • Keep your Personal Identification Number

(PIN) a secret. Never write it down anywhere, especially on your ATM card. • Never give any information about your ATM card or PIN over the telephone. For example, if you receive a call, supposedly from your bank or possibly the police, wanting to verify your PIN, do not give that information. Notify the police immediately. USING AN ATM • Be aware of your surroundings, particularly at night. If you observe or sense suspicious persons or circumstances, do not use the machine at that time. • Have your ATM card ready and in your hand as you approach the ATM. Don't wait to get to the ATM and then take your card out of your wallet or purse. • Be careful that no one can see you enter your PIN at the ATM. Use your body to "shield" the ATM keyboard as you enter your PIN into the ATM. • To keep your account information confidential, always take your receipts or transac-

tion records with you. • Do not count or visually display any money you received from the ATM. Immediately put your money into your pocket or purse and count it later. • If you are using a drive-up ATM, be sure passenger windows are rolled up and all doors are locked. If you leave your car and walk to the ATM, lock your car. SPECIAL PRECAUTIONS FOR USING AN ATM AT NIGHT • Park close to the ATM in a well-lighted area • Take another person with you, if at all possible. • If the lights at the ATM are not working, don't use it. • If shrubbery has overgrown or a tree blocks the view, select another ATM and notify your bank.
