Potato Salad

1 bag of baby potatoes 2 eggs 2 strips of bacon 2 scallions 1/2-3/4 cup mayo 2-3 Tbsp Dijon mustard Salt and pepper Paprika, for garnish

Cut your baby potatoes in half, or quarters depending on their size. Add that to a pot with water, and add in your two eggs so they can cook at the same time. Bring to a boil and let cook for about 10-12 minutes or until they are fork tender. Drain and put them into a bowl of ice water to help them stop cooking, drain and store in the fridge for a couple of hours before you dress them. To make your dressing, mix together the mayo, mustard, salt and pepper. Add to your potatoes along with your chopped hard boiled egg, bacon, and scallions.
