Holy cow, how did it become January of 2022 already? The truth is as you become older, time seems to move at an accelerated rate. Remember what it was like as a kid to look at summer vacation and feel it would last forever? Well, for me at my advanced age, summers go by with a blink of an eye. It seems that at one moment I’m shucking some corn for a summer dinner and the next moment I’m worrying about a turkey for Thanksgiving. I swing back and forth between approaching the new year with bright eyes and high hopes and acknowledging the promise of the new year also comes with a lot of baggage. Yes, I need to eat better, smoke less, drink less, go to the gym more, become better organized, learn more about the new computer and software I’m forced to use and keep up with the changes in popular culture so I can speak intelligently with my staff. Or maybe not. As I often do, I turn to some of my newspaper heroes for their perspective. Mark Twain wrote in 1863 “New Year's Day - Now is the accepted time to make your regular annual good resolutions. Next week you can begin paving hell with them as usual. Yesterday, everybody smoked his last cigar, took his last drink, and swore his last oath. Today, we are a pious and exemplary community. Thirty days from now, we shall have cast our reformation to the winds and gone to cutting our ancient shortcomings considerably shorter than ever. We shall also reflect pleasantly upon how we did the same old thing last year about this time. However, go in, community. New Year's is a harmless annual institution, of no particular use to anybody save as a scapegoat for promiscuous drunks, and friendly calls, and humbug resolutions, and we wish you to enjoy it with a looseness suited to the greatness of the occasion.” The great columnist and short story writer Ambrose Bierce was known as “Bitter Bierce” during his life for his cutting observations in his “Devil’s Dictionary,” also took a sanguine approach to the New Year. He defined “year” as “YEAR, n. A period of three hundred and sixty-five disappointments.” Hey, that is a bit bitter, even for me! But even a jaded old newspaper guy like me has a soft side and I do look at a new year as an opportunity for growth, change and new starts. I hate making resolutions as inevitably I don’t follow them, but there are projects that I know I will finish next year. If I say them aloud that might jinx them, though, but I know I will be able to complete them. As they actually happen, I’ll let people know. In the meantime, I know in 2022 I will be happy to contribute in a small way to this publication which shines a light on our wonderful area with so many interesting people, places, events and businesses. estauranteurs Michael Presnal and Ralph Santaniello have brought back fine dining to Agawam where they opened The Federal restaurant back in 2002. “We are looking forward to celebrating our 20th anniversary in May,” said Santaniello. Recognized as one of the “10 Best Historic Restaurants in Massachusetts,” The Federal built in 1862 is known for its Greek Revival architecture. It was a private home for many years before being turned into a men’s hunting and fishing club. In 1936 it became the Federal Hill Club and was owned and operated by the Moretti family as a premier restaurant for over 50 years. Since then, the dining establishment has undergone many iterations, its last being called Cappacio before being purchased in 2002 by Santaniello and Presnal. Neither were strangers to the

restaurant business. “I spent a lot of time during my youth in a neighborhood known as the Flats in Holyoke. My parents owned Amadeos, a restaurant and pizzeria, where I helped out making pizzas and eventually ran the restaurant for them,” Santaniello said. But Santaniello’s destiny would lie elsewhere than the family business, which was eventually sold and still in operation. Instead, he headed to Martha’s Vineyard, where his soon-to-be brotherin-law Michael Presnal, a graduate of New England Culinary Institute - “He and my sister were longtime school sweethearts,” said Santaniello - was about to open his own restaurant called Alchemy after working as executive chef at prominent restaurants such as Savior Faire. “I went to the Vineyard to help Mike out for the first couple of years with

Alchemy and that is when I fell in love with the fine dining experience,” Santaniello said. Eventually, Presnal began talking about returning to Western Massachusetts - where he would soon marry his longtime sweetheart - and the pair discussed opening their own restaurant. “We wanted to add our take on fine dining in the area,” Santaniello said. Whether at a fine dining restaurant such as The Federal where you will be pampered, or any restaurant - chain or locally owned - people want a great level of service, Santaniello noted. “That is precisely why they go out. People can cook at home, but don’t want to cook and do the dishes sometimes. When they choose to dine out, they want to be taken care of, whether it’s a pizza and beer they are having or filet mignon. Attention to details and a high level of service is important in the restaurant industry today. You have to put the customer first, second and third and make them happy when they walk through your doors. And if they are not happy, then you have to try to immediately fix the problem and not worry about what it will cost you to make it better for your customer,” Santaniello said. Presnal and Santaniello have dressed up their restaurant with white linen elegance in a quiet, comfortable atmosphere that is matched by a desire to provide customers with the highest level of service married by delicious food that is rich and complex in composure enough to satisfy serious foodies to those who consider a burger their “piece de resistance.” When it came time to create a menu that would define 14 GO LOCAL JANUARY 2022


their style of food, the pair decided upon a “contemporary American cuisine with strong Italian and French influences.” In creating their own “home-grown restaurant,” Santaniello said the ingredients to their inventive dishes are made “as much as possible in-house” - that means everything from pasta to sauces to dressings and more. “We try to use as much seasonal, fresh local ingredients as possible. We have our own huge garden in the summer that provides us with the many herbs, vegetables and more for making our salads. At least 70% of what we incorporate into our dishes comes from our garden, and Mike works with Anthony Tyler, who is the restaurant's chef du cuisine in deciding what to grow each year as they create our new menus together,” Santaniello said. Fine dining has many definitions. For Santaniello and Presnal it means a creative, original, locally-sourced menu paired with a high level of service in an elegant environment. Many industry sources describe it as something for people who might only visit high-end establishments to celebrate special occasions, such as an anniversary, birthday or wedding. In fact, on The Federal website it states that they are “dressed up as a special occasion restaurant, but is sociable and affordable enough for every occasion.” “We hear many stories from people who tell us they held their wedding at The Federal and were now coming back to celebrate their anniversary with a romantic dinner for the two of them. Or it is a Christening, First Communion, Bar Mitzvah or other celebration. And that is incredibly rewarding for us to hear,” Santaniello. “Yet, we still have many customers who come in weekly just to enjoy a good meal,” he added. The Federal - which changes its menu 6-8 times a year recently introduced its Winter 2021 edition. For starters, there are four salads to choose from - red, white & greens, bistro style Caesar salad, 12 ingredient chopped salad or the Federal “harvest” salad, alongside fresh Italian burrata, cider brined pork belly, kabocha squash-mussel chowder, tempura shrimp “SSAM,” and foie gras donuts which is a farmers market compote with spiced sugar. “Hands down our most popular appetizer is our bucket of balls,” Santaniello said about their risotto balls with fresh black truffle butter and snipped chives. The dinner menu is an even split of entrees - five fish dishes and four meat selections with an additional pasta you can add meat or fish to. “Our entrees are a combination of customer favorites and new items that Mike and his chefs want to try. We can’t take big seller classics off the menu like our truffle mac & cheese and chicken Bolognese. We always have braised short ribs in some form on the menu, which can be found now in our wild forest mushroom tagliatelle,” Santaniello said. For fish lovers, the menu offers five seafood selections, GOLOCALMAGAZINES.COM 15


including seared Atlantic codfish with truffled potato crab bisque, smoked bacon and root vegetable “hash” and sunchoke chips; grilled lobster tails, the highest priced item on the menu at $42.95, with sweet potato gnocchi, parmesan mornay sauce, delicata, toasted green wheat, spiced pignolis, pickled mustard seeds, mizuna; and a popular favorite, seared sea scallops with duck leg confit, duck egg, sugar pumpkin puree, endive “salad,” brown butter, duck fat hollandaise, and honey vinaigrette. “Not only is fish a healthy selection, but it is popular when going out because many people don’t like to cook it at home because of the odor left behind. Since this is New England, Mike also prefers to use fish from the Atlantic,” Santaniello said. In addition to the plated entrees - diners can choose from the “you be the chef” section offering eight meat and fish selections such as breaded pork chop, NY strip, grilled breaded shrimp, red wine braised short ribs, seared salmon and more that can be paired with two sides and a choice of sauce. For those who want to pay a little less but still enjoy the fine dining experience, the menu also offers three gourmet pizzas and a Federal cheeseburger. Desserts as they say are “to die for” and there is plenty to choose from - nine sweet treats from a fried “apple pie” ravioli to a sticky toffee pudding cake and from a warm pecan pie sundae to warm Nutella crepes. The “bucket” is also back with gelato or sorbet to choose from. There is even a “pot brownie.” “We put that tongue in cheek title on the menu and what we mean by pot is that it comes in a warm skillet,” Santaniello said about the dessert described as “chocolate mousse, brownie “dirt,” red berries, chocolate sorbet and fresh cream.” At one time before COVID-19, tables would have a free bowl of house-spun cotton candy delivered to their table to enjoy. Santaniello noted that because of the coronavirus and “too many sticky hands in the bowl,” they discontinued the practice. However, you can purchase a bag of the sweet treat to bring home, as well as a box of their chocolate almond toffee - both of which they state on their menu is great to bring home to the babysitter and kids. The Federal also offers a banquet and catering service whether a dinner for 15 or a wedding party of 300. Total event planning is also available. Reservations are required. Hours are Wednesday from 4 p.m. to the last seating at 8:30 p.m., Thursday from 4 p.m. to the last seating at 9 p.m., and Friday and Saturday from 4 p.m. to the last seating at 9:30 p.m.

ou could say cookies were Sheila Coon’s destiny. Growing up, her mother owned a micro-bakery that specialized in two flavors of cookies and Coon would watch with awe her mother’s love of baking and the smiles on her customers’ faces. Coon grew up and earned her degree in paralegal studies, working both as a paralegal and in human services – and even as a chef - but that little girl was still inside of her, inspired by her mother. “I was always fascinated by the fact that she was just as happy with the baking process as the customers receiving them, which fueled my interest in owning my own food business fueled by passion and purpose,” said Coon. Coon always knew she would eventually own her own restaurant or bakery. After divorcing her first husband, she found herself working 18 hours a day and homeless. “I had had enough and began planning a way to create my own business, my own mobile real estate, my own way to stability, so I drafted a growth plan and set about making it come to life,” she said. That was the start of her business, Hot Oven Cookies. Coon and her second husband and business partner David Whittmore Coon made her sweet dream come true, with a little help. With grants and business counseling from SparkEfor All and mentoring from Valley Venture Mentors, help from “The Cookie List Book” and her children

Luis, Nathaniel, Allyssa, Jacob, Jenei, Mia and Amelia, Coon launched her cookie cart in 2017 followed in 2018 by her cookie bakery at 1512 Allen Street in Springfield. Hot Oven Cookies has continuously grown since Coon started sharing her delicious treats. While her mother specialized in two flavors, Hot Oven offers 1,005 different cookies on a rotating basis. “Cookies became my passion when I realized that though they would be the focus of my niche, they could be infused and molded with whatever creative whim that struck me; always keeping our menu fresh and new,” said Coon. Coon’s plans changed a bit since she got started. “My initial plan was to grow to 20 cookie carts and then franchise that model, but after our closing for the winter in 2017, our customers chased us down and demanded we never keep them from our cookies again so we opened our first shop in 2018,” she said. Hot Oven’s flavors are what keep people craving more. “Our menu consists of five ALWAYS Cookies – our ‘Signature Cookies’ - and WEEKLIES Cookies, which is a rotating menu of 1,000 cookies,” Coon said. “The most popular cookie ever is our Guava Cheesecake cookie, our coquito cookie filled with guava and cream cheese and topped with a vanilla powdered sugar topping.” Coon’s personal favorite is the Mudslide Brookie Cookie which is offered weekly in different renditions. Hot Oven specializes in all things cookie, including fresh-baked, Cookie Sundaes, Cookie Sammies, and Take + Bake Dough, which allows customers to bake at their pace and leisure in their home or office and in whatever size they want. Coon said between variety and comfort, Hot Oven Cookies’ customers are always satisfied. “Our cookies are definitely a comfort food, but the fact that we offer three new cookie flavors weekly from a 1,000+ cookie menu also offers them excitement and a sweet adventure,” she said. Coons’ quest to fulfill the region’s cookie needs will continue this year, with plans to open two more shops and one or two more cookie trucks in western Mass. And northern Conn.

LOCATION: 360 GULF ROAD, SOMERS, CT FOREST ENTRANCE IS AT 360 GULF ROAD, 1 MILE SOUTH OF ROUTE 190 IN SOMERS.

There is an abundance of recreation opportunities at Shenipsit State Forest. The two primary attractions are the wonderful hiking along the Blue-Blazed Shenipsit Trail which passes over Soapstone Mountain and the amazing views from the Soapstone Mountain observation tower. While the original fire tower is long gone, today’s tower stands specifically for the public’s recreational viewing. As one of only two observation towers in Eastern Connecticut (the other being the monument at Fort Griswold State Park in Groton), the vistas afforded from this vantage point are spectacular as visitors can take in scenes from the Connecticut River Valley to the Springfield skyline.

I-84 to Exit 73 or 74, then follow Route 190 north to Route 171 east to the park entrance.

NIPMUCK STATE FOREST MOUNTAIN LAUREL SANCTUARY

Eastbound on I-84: take Exit 72. Follow Route 89 north to the intersection of Route 89 and Route 190. Go west onto Route 190. The sanctuary entrance is a short distance from the intersection and well marked. Take Exit 73 to visit another area of Nipmuck State Forest. Nipmuck State Forest and Bigelow Hollow State Park in the town of Union lie within one of the largest unbroken forest areas in Eastern Connecticut. Nipmuck is the second oldest state forest in Connecticut. Today Nipmuck State Forest and Bigelow Hollow total over 9,000 acres. The name “Bigelow” is a mystery since no person of that name seems to have been associated with this area. According to older residents of Union, the name is derived from “Big Low” in reference to the deep hollow in which the 18-acre pond of that name is located. The word “Mashapaug” is the Nipmuck Indian word for “Great Pond”.

TUNXIS STATE FOREST

GRANBY/BARKHAMSTED/HARTLAND LOCATION: ALL OF THE MAJOR FEATURES OF TUNXIS STATE FOREST ARE LOCATED ON OR NEAR ROUTES 20 AND 179.

From the junction of Route 20 and Route 181 in Hartland, proceed east on Route 20. For Howell’s Pond, proceed east 1.0 mile and turn left on West Street; follow for 1.4 miles and turn left on Old Mill Road (on some maps as Dish Mill Road); follow 0.2 mile and turn right at the dam. For the Falls Brook Trail proceed 3.4 miles and park in the small pull-off on the right. For the Tunxis Trail, proceed 7.4 miles and park at the trail marker. For Hurricane Brook, follow 7.7 miles and turn left on Hurricane Brook Road; park so as not to block the gate, and follow the path uphill. For the CCC ski area, follow 8.0 miles and turn right on Balance Rock Road. Follow to the end of the road and park, being careful not to block the cul-de-sac (used by school buses to turn around). Follow the roadbed into the woods. After crossing the Blue Blazed Tunxis Trail, look for the ski cabin on the right. For the northern terminus of the Tunxis Trail, follow Route 20 8.8 miles and turn left on Old Town Road. Follow Old Town Road 0.6 miles, and turn left on Pell Road and go about 2.5 miles north to the end of road.

TELL US WHAT THIS BOOK IS ABOUT? It’s a biography of J. Michael Wallace who grew up in the Springfield mill village of Indian Orchard and his many death-defying moments that led him to become one of America’s most successful competitive gas balloon racers. The book tells the story of his early life as a weapons design engineer as the Springfield Armory, his near death helicopter crash in Vietnam, and his courage to return to the air with the sport of ballooning. The majority of the book chronicles his most dramatic adventures in Ballooning among the over 750 flights he has piloted over his lifetime.

WHAT WAS THE MOST DRAMATIC BALLOON FLIGHT?

There were many, but certainly his flight in the famed international Gordon Bennett Gas Balloon Race in 1995 was the most dramatic. Although the Race organizer had received permission to fly into Belarusian air space, that message apparently didn’t get to the Belarusian military authorities. Belarusian helicopter(s) shot down one of the competitors, Wallace’s good friend Alan Fraenckel and his co-pilot John Stuart-Jervis, and forced Mike Wallace and his co-pilot Kevin Brielmann in their Balloon down into a live-fire artillery range in a Belarusian swamp the size of Rhode Island. Held by the Belarusian authorities for several days, it took the good efforts of Congressman Richard E. Neal and the U.S. State Department to get him and his co-pilot…and their balloon….. released back to the U.S.

WHAT INSPIRED YOU TO WRITE THIS BOOK?

I have known and worked with Mike Wallace for almost 30 years. We worked together to create the Aquarium at the Springfield Science Museum; The Dr. Seuss Memorial Sculpture Garden; the Museum’s Welcome Center; the renovations and upgrades to all of the city’s library branches, and the creation of the Lyman and Merrie Wood Museum of Springfield History. He approached me in 2014 to help him record his life story so he could leave it for his grandchildren and great-grandchildren who might someday wonder who their grandparent was and his many life lessons overcoming adversities and life mistakes. To tell his story completely, I proceeded to interview 25 family members, friends, business associates, and ballooning co-pilots at my Watershops Recording Studio to complete his story and verify his accounts. After completing over 50 hours of interviews, I convinced Mike to let me tell his story in book form. He finally agreed and A Ballooning Life is the result of this seven-year effort.

We had one customer recently who had invested in gold coins, but was then faced with healthcare expenses that were not planned for. People want to feel good during these trying times, and jewelry puts a smile on their faces and makes them feel good after being trapped in their houses during the pandemic,” Rosen said. “Unlike clothing or flowers, jewelry has intrinsic value that lasts. Gold will always be gold,” he added. Chicken Bolognese

2 Pounds ground chicken 1 Large bone-in chicken breast 1 Parmesan rind 1 White onion, diced 3-4 cloves garlic, minced 1 large carrot, chopped finely 2 cans crushed tomatoes 1.5 cups chicken broth 1/2 cup red wine 1/2 cup mascarpone 1-2 tbsp Italian seasoning 2 tbsp butter 1 tbsp olive oil Basil, torn plus more for garnish Parmesan, for garnish 32 GO LOCAL JANUARY 2022

In a dutch oven, start by browning your chicken breast on both sides. Remove from the pan and set aside. Add olive oil and butter and let it melt. Once melted add in your onion and carrot and sauté for about 5 minutes, I use a food processor to get a fine mince on them. Add in garlic and continue cooking for another minute. Add red wine and let reduce for about 5 minutes. Add in ground chicken and cook through, about 10-12 minutes. Once cooked through add in crushed tomatoes, chicken broth, your bonein chicken breast, Italian seasoning, and your parmesan rind. Bring to a quick boil and then simmer for about 4 hours. Remove chicken breast and parmesan rind and add in your torn basil and mascarpone. Serve with your favorite pasta and enjoy!
