Medieval Gainesville

F

or two weekends each year, the kingdom of Hoggetowne opens its gates. Performers in period garb sing and dance in the streets, while knights joust on horseback and magicians captivate the crowds. Tucked away in the enchanted forest of the Alachua County Fairgrounds in Gainesville, this medieval marketplace will come to life January 31-February 2. Hoggetowne is home to more than 160 talented artisans from across the country who journey to the Faire to sell and demonstrate their wares, offering medieval crafts such as weaving, blacksmithing, leatherworking, wood carving and glass blowing. Fairgoers can browse through a selection of delicate medieval jewelry or glimpse into their future with a mystical fortune teller. The Faire’s eight stages will feature the forgotten skills of full-flight falconry, gripping aerial acrobatics and oldworld magic come to life. Jugglers, knife throwers and gypsy dancers add to the excitement as they fill the streets of Hoggetowne. Visitors can also engage in traditional medieval games of chance and skill. They can shoot arrows or hurl battle axes at targets, or they can navigate their way through a winding maze. Thrilling human-powered push rides, as well as camel and elephant rides, attract eager children and adventurous adults. Produced by the City of Gainesville Parks, Recreation and Cultural Affairs Department, the Hoggetowne Medieval Faire draws more than 55,000 guests each year. On Saturdays and Sundays, the Faire is open from 10am to 6pm and costs $15 for adults and $7 for children age 5 to 17. The Faire is free for children younger than 5. Pets are not permitted. healthbriefs Early Warnings of Heart Troubles Differ for Women

W

omen may worry more about breast cancer, but in reality, heart disease is the top killer of American women, claiming 300,000 lives a year, 7.5 times the number who die of breast cancer, according to the Centers for Disease Control and Prevention. Although heart disease is more often perceived as a men’s issue, since 1984 more women have died of heart dis-

ease than men. Part of the reason may be that women’s heart attacks can differ from men’s and the American Heart Association (AHA) warns that women often fail to recognize the symptoms, ranging from torso aches and pains and nausea to anxiety, shortness of breath, dizziness and extreme fatigue. They may experience subtle symptoms for months and write them off as byproducts of menopause, heartburn or effects of aging. The National Institutes of Health states that 43 percent of women who have heart attacks experience no chest pain. The difference between the more subtle signs of a heart attack in women and the more dramatic signs in men may help explain why 75 percent of men, prompted to act quickly, survive a first heart attack, while only 62 percent of women do, according to the AHA. “Research shows that women may not be diagnosed or treated as aggressively as men,” notes the Agency for Healthcare Research and Quality, part of the U.S. Department of Health & Human Services.

Nostalgia Arms Us for the Future

H

aving lingering fond memories of happy times, once actually thought to be a psychiatric disorder, have now been confirmed as a healthy and, ultimately, positive activity. Most people experience nostalgia at least once a week and nearly half of those surveyed reported experiencing it three or four times a week, say researchers at England’s University of Southampton. When speaking wistfully of the past, individuals are usually reconstructing happy memories of family and friends, and typically become more optimistic about the future, reports lead researcher and Social Psychologist Constantine Sedikides, Ph.D., who observes, “Nostalgia makes us a bit more human.” The Southampton paper, presented to the American Psychological Association, meshes well with another study confirming that nostalgic memories inspire positive feelings of joy, high self-regard, belonging and meaningfulness in life. In two studies, social psychologists at North Dakota State University found that past fond memories help us become more self-confident and cope better in the present. “We see nostalgia as a psychological resource that people can dip into to conjure the evidence they need to assure themselves that they’re valued,” says lead researcher Clay Routledge.

FDA Moves to Ban Trans Fats

H

eart-clogging trans fatty acids may soon be a thing of the past. The U.S. Food and Drug Administration (FDA) has taken the first step to remove trans fats from its GRAS (generally recognized as safe) list, effectively banning their use in food products. Trans fats, also known as hydrogenated vegetable oils, can be found in many processed foods, including baked goods, microwave popcorn, peanut butter, frozen pizza, margarine and coffee creamers. Created by adding hydrogen to liquid oils to turn them into a solid form, trans fats have been used to improve the texture, shelf life or flavor of foods. For more than a decade, numerous scientific studies have documented that trans fats raise dangerous LDL cholesterol and lower good HDL cholesterol. The FDA’s proposed ban would require the food industry to gradually phase out all trans fats, likely over several months or years, noting their threat to health. Commissioner Margaret Hamburg said the move could prevent 20,000 heart attacks a year and 7,000 deaths. Many food manufacturers have already phased out trans fats since new nutrition labeling requirements were introduced by the FDA in 2006; plus an increasing number of local laws have banned them.

A Different Breathalyzer Test for Heart Failure

S

imply blowing up a balloon may help doctors test heart function, according to a new study from the Cleveland Clinic. Although such examinations usually require expensive and sometimes invasive procedures, the new test can be done in a doctor’s office in 30 seconds, according to the research findings published in the Journal of the American College of Cardiology. The patient simply breathes into a Mylar balloon, similar to a party version, and the air is passed through a machine to produce an individual “breathprint.” Researchers determined that exhaled breath contains volatile organic compounds that can be easily analyzed to determine potential heart failure.

Zinc Orchestrates Immune Response

M

any have heard that zinc can stop a cold in its tracks, and new research from Ohio State University tells us why; it turns out that zinc gently taps the brakes on immune responses, slowing them down and preventing inflammation from spiraling out of control. The researchers’ work with human cells and animals found that zinc serves to balance the immune response within the cells so that the consequences of insufficient zinc at the time of an infection include excessive inflammation. Of all the zinc contained in our bodies, only about 10 percent of it is readily accessible to help fight off an infection, notes Daren Knoell, professor of pharmacy and internal medicine and lead author of the study, published in Cell Reports. The research team suggests that proper zinc balance is especially important in battling serious and potentially deadly infections. Zinc deficiency affects about 2 billion people worldwide, including an estimated 40 percent of the U.S. elderly.

Happy Marriage, Healthier Lives

A

University of Missouri expert says that people in happy marriages are more likely to rate their health better than their peers as they age. Evidently, engaging with one’s spouse builds a strong relationship that can improve spirits, promote feelings of well-being, and lower stress. Analyzing data from 707 continuously married adults who participated in the Marital Instability Over the Life Course panel study, a 20-year nationwide research project begun in 1980, researchers found that married people have better mental and physical health and are less likely to develop chronic conditions than their unmarried, widowed or divorced peers. Thus, researchers recommended involving spouses and families in treatment for any illness. They further suggested that in cases of a strained marital relationship, improving marital harmony would also improve health.

The Whole Fish Is Best for Blood Pressure

O

ver the years, a broad range of research has confirmed that omega-3 fatty acids found in fatty fish like salmon, tuna and sardines promote heart and brain health. Now researchers at the University of Pennsylvania’s Perelman School of Medicine have found that taking fish oil supplements isn’t as effective at keeping blood pressure under control as eating an actual fish. The animal study published in the U.S. Proceedings of the National Academy of Sciences shows that eating oily fish helped open ion channels, a complex series of membranes in the cells that line blood vessels, letting sodium, calcium and potassium in and out of those crucial cells and helping reduce blood pressure. Because fish oil supplements did not activate the ion channels, they didn’t reduce blood pressure in the same way.

Egg Whites Function Like Blood Pressure Meds

M

aintaining healthy blood pressure is vital for long-term heart health, and scientists have now discovered evidence that a component of egg whites may have beneficial cardiovascular effects. Researchers from Clemson University, in South Carolina, found that a peptide in egg white, one of the building blocks of proteins, reduces blood pressure in animals about as much as a low dose of Captopril, a prescription medication for high blood pressure. The RVPSL peptide acts as a natural ACE inhibitor, functioning similar to the entire family of prescription medications that treat hypertension.

I

n 1977, Dr. Dean Ornish began to think beyond an allopathic medicine paradigm that defined the reversal of cardiovascular disease, including coronary heart disease (CHD) and the hypertensive diseases such as heart failure and stroke, as physiologically implausible. Undaunted by the challenge of funding his research, he pushed forward. Results of his foundational 1986 to 1992 Lifestyle Heart Trial, published in the Journal of the American Medical Association, proved that individuals with preexisting coronary atherosclerosis that make intensive, integrated lifestyle changes can begin to experience improvements in their condition after as little as one year without using lipid-lowering drugs. Based on his 30-plus years of clinical research, Ornish and his col-

leagues further showed that five years of following proper nutrition, fitness and stress management—which must include love and support—can reduce symptoms of CHD and other chronic conditions. He remarks in Love & Survival: 8 Pathways to Intimacy and Health that despite numerous studies showing a medical basis for its occurrence, the reason why CHD is reversible is still the subject of debate. Ornish’s work has paved the way for a growing corps of pioneering integrative physicians successfully collaborating with patients to reduce the leading cause of death for men and women in the United States.

Plaque the Culprit

The cause of cardiovascular disease is arterial plaque, a fine layer of fatty material that forms within the

arteries and blocks blood flow. It is largely the result of food and activity choices, plus the degree of inflammation in the arteries. Dr. Steven Masley’s three keys to improving heart health highlighted in his book, The 30-Day Heart Tune-Up, and an upcoming PBS special, concern lifestyle factors capable of shrinking plaque, improving circulation and strengthening the heartbeat. “Abnormal plaque growth is preventable 90 percent of the time,” states the president of Masley Optimal Health Center, in St. Petersburg, Florida. While conducting research on the heart health of nearly 1,000 patients over a period of 20 years, Masley suspected that the traditional assessment approach of measuring cholesterol, blood sugar and blood pressure didn’t effectively address the biochemistry within arteries. Testing intima-media thickness (IMT) using a simple 10-minute external ultrasound confirmed it. The test bounces high-frequency sound waves to measure the thickness of the cartoid arteries’ innermost two layers on either side of the neck. “This valuable tool allows for an estimate of arterial age. A healthy, young cardiovascular system has less plaque and an unhealthy, old one has more,” advises Masley. IMT, a useful tool for preventing future heart attacks and strokes, differs from standard carotid Doppler ultrasound, which looks for artery obstructions suggesting surgery. It is no coincidence that we address our physical and emotional heart by the same name. A

A woman in the group said, “Katherine, I will hold that intention with you if you permit me to hold you accountable to

be the woman you would need to be in order to fulfill it.” Her wake-up call turned my focus from running out to find love to going within to discover the barriers I had against it. Thus I began what became the Calling in “The One” process.

How does it differ from other approaches to finding love?

Many approaches focus on the external reasons love is elusive, such as all the good men are taken, men don’t like powerful women, or just not having met the right person. This approach focuses more on the internal reasons— going within to discover and release one’s own conscious and unconscious barriers. For most of us, a gap exists between how much we think we want love and how much we are actually open and ready to receive it. Until we bridge that gap, we will covertly keep love at bay, and won’t even realize we are doing it.

What are the most common hidden barriers to love?

One hidden barrier is resentment. We only resent people to the extent that we’ve given our power away to them. Uncover your role in what happened. Even if it was 97 percent their fault and 3 percent yours, zero in on that 3 percent, because you’ll only be able to trust yourself to love again once you’ve taken that responsibility. If you still feel resentful, you have not

yet evolved beyond the person you were before. Another centers on old agreements—the spoken and unspoken, agreements we make, usually in an emotional time—such as “I’m never going to let myself get hurt again” or “I’ll never love anyone the way I love you.” Such agreements live in our lives as intentions. They may no longer be conscious, yet still set our course. Another has to do with toxic relational dynamics. To find the best partnership, you need to be your best self. Maintaining a toxic dynamic drains personal power, making it hard to move forward in life. It’s vital to evolve out of this debilitating dynamic so you are in the center of your power everywhere in life. The fourth area, and probably the most important, revolves around the core beliefs you hold about both yourself and others. You might have a reasonably clear sense of yourself around money, career and friendship, but your core love identity might cause you to believe yourself unworthy of a quality partner. Identifying and challenging these beliefs is critical in learning how to break free from them, helping to raise your value in your own eyes and thus in others.

You believe the best way to find a needle in a haystack is to become magnetic and allow that needle to find you. How does one become magnetic to love? Being centered in the truth of your own value and the real possibilities you hold for true love is wildly attractive. Love yearns to embrace us, but can’t come to us if it can’t come through us. When we shift into this place of possibility, we can become profoundly magnetic to love.

The Swedish Dentist

“W

hat is the significance of being a Swedish Dentist?” Dr. Perry Ekstrand has been asked this question throughout the past 26 years—ever since he started practicing in Florida, having moved here from north of the Arctic Circle. One of the key differences is how Sweden has approached the controversy around mercury fillings, also known as silver or amalgam fillings, to replace decayed areas in a tooth. Sweden recommended against using mercury fillings in 2001, and in 2009 completely banned them. Dr. Perry has followed studies done in Sweden and in America and chose more than 20 years ago to become mercury-free in his practice. His first hands-on experience with mercury, which prompted him to make his decision to practice mercury-free, involved a patient in her 30s who suffered mysterious and undiagnosed weakening of her limbs as time passed, to the point that it had become difficult to walk. Her own research led her to believe that her mercury fillings, placed years before, could possibly be the cause. She asked to have all of her fillings replaced with a composite material and crowns where necessary. Within three months of having the work done, she was walking easily again, with no side effects. Dr. Perry has also discovered that mercury-free includes not only replacing these fillings, but also

how the removal of old fillings is practiced as well. He has for many years carefully removed these fillings for his patients with the use of suction techniques and often the isolation of each tooth during the procedure. However, in June 2013, he got a first-hand lesson and a true awakening from an American dentist he met in Orlando, Dr. Matilda Castellini. Her passion was to protect against the potential side effects of mercury inhalation while removing fillings. Her

passion prompted Dr. Perry to take major steps towards better protecting his patients, his team, and himself from the effects of the removal of these mercury fillings. Dr. Matilida, who passed away on July 1, 2013, was diagnosed with a rare cancer that her doctors linked to mercury toxicity several years before her death. Her exposure came, she believed, from her 26 years of placing and removing amalgam fillings. These procedures are still practiced today in an overwhelming number of dental offices in this country. Dr. Perry has made it his mission, after meeting and working with Dr.

Castellini briefly before she passed, to take a different approach. He has invested in the equipment necessary to minimize the risk of removal of these fillings and the side effects to his patients and his team. These steps also include recommendations for foods to eat before and after treatment to help rid the body of the chemical more quickly. Preventing Heart Disease

T

raditional medicine has long focused on the heart function as a mechanical pump. How many times does it beat a minute? How much blood can it pump in a day? When the heart’s valves wear out, replace them; when the arteries get clogged, bypass them; when the heart finally gives out, transplant another one. As fans and practitioners of functional medicine, we need to begin looking at the heart from a perspective of how to prevent the disease process which damages the hearts. Lets take a three-part approach to rethink a program for a healthy heart. Diet/nutrition The standard American diet (SAD) has proven to be a failure. The American public has continued gaining weight, and in spite of spending more money than any other country in the world, the U.S. ranks 37th in health standards among 40 industrial nations. We must increase the amount of fresh fruits and vegetables, preferably organic, that we eat. We must reduce the amount of meat we consume, and when we do eat meat, it should be organic range fed or wild caught meat. We must reduce our dependence on fast food. We must avoid genetically modified (GMO) foods and high fructose corn syrup.

While vitamins are best obtained through eating whole foods, at times this is difficult, so we must look to supplement them. A high quality vegetable-based multivitamin, omega-3 fatty acids, magnesium, vitamin D3, digestive enzymes, and probiotics help round out the list of supplements to help improve people’s health. Those who have heart problems may need coenzyme Q10 to improve the function of the heart, especially if they’re taking statin drugs. Exercise Many Americans love their sports, and professional sports has become a multibillion dollar industry. However, exercise for “the rest of us” has fallen off the map. Many schools have significantly cut back on exercise programs or have cut out gym programs entirely. A complete exercise program includes aerobic exercise, flexibility and stretching, and strengthening. Aerobic exercise is the best way to strengthen the heart muscle; it can be as simple as walking 30 minutes three to five times a week. Flexibility and stretching exercises reduce the possibilities of injury. Strength programs can be started at any age; even a program started between age 70 and 90 showed a 28% strength increase, which helps to maintain healthy bones and reduces the risk of fractures.

Mindset Most people have been taught in school that the heart is constantly responding to “orders” sent by the brain in the form of neural signals. However, it is not as commonly known that the heart actually sends more signals to the brain than the brain sends to the heart! Moreover, these heart signals have a significant effect on brain function, influencing emotional processing as well as higher cognitive faculties such as attention, perception, memory, and problem-solving. In other words, not only does the heart respond to the brain, but the brain continuously responds to the heart. (This helps explain why some people often act impulsively and unwisely when they are under stress). The heart’s input to the brain during stressful or negative emotions also has a profound effect on the brain’s emotional processes— actually serving to reinforce the emotional experience of stress. In contrast, the more ordered and stable pattern of the heart’s input to the brain during positive emotional states has the opposite effect—it facilitates cognitive function and reinforces positive feelings and emotional stability. This means that learning to generate increased heart rhythm coherence, by sustaining positive emotions, not only benefits the entire body and mind, but also strengthens the heart. Manifesting Love

T

wenty-two years ago, I looked at what I did not have in my life and decided it was time, and possible, to have it. I decided the things that were missing were true love and a profession I could truly relish. My life as it was did not fill the bill. I did not feel that I was in charge of my life. I consciously made the choice to set out and learn how to change to satisfying results. This search may turn out to be the most important thing we all face in life. It is of great value to develop a process of approaching life that empowers us to be in charge of moving forward through the reality we have. Many of the wonderful people I see as patients have successfully overcome the belief that they could not afford to be well. They have turned their backs on the belief that they could not afford their own health. They have stopped believing that they had to accept what is free, because even though it was free it did not work for them. I have patients who were close to the poverty level of life and have allowed themselves to have money to afford the treatments. They have achieved health and increased wealth—they are hand-in-hand. When I look at these people and see what they are willing to achieve for themselves by letting go of limiting patterns, in spite of the circumstances, I am inspired by them to share with you what you, too, can do. We are all prisoners of our subconscious programs and limiting beliefs about what life can give us. As Dr. Bruce Lipton says, 95% of what runs us is in the subconscious. If we are to move forward, we have to release the limitations imposed upon us by the unknown parts of us. Many people think they have a cleared path to choice, yet the path is

being run by early limiting beliefs that were imposed by people who did not realize how sensitive we are to what is said. When I was an OB nurse, I would try to protect the babies from what was being said by the people in the delivery room. Sometimes they would say something like, “I don’t think this one is going to come out.” This can certainly become a limiting belief. As I started my quest for love and career, I realized I was not really familiar with how it would feel, look, and be to have the experience of true love and career satisfaction in my life. I got to work and developed exercises to educate myself and train myself to allow life the way I wanted to have it—filled with love and satisfaction. The main idea is to practice feeling as if we have what we want even when we don’t. We have to put our mind to saying positively that we have “it.” In this way, many limitations are flushed and our vibration is changed. We are letting go of lack and limitations. We can also benefit by thinking positive statements such as “I have great abundance, satisfaction, and love.” Sometimes it is difficult to generate the feeling in the present, so we look into our past to find something good to build on. I had known only a few people who had shown the kind of love and kindness

I was looking for. One person I could remember a good feeling from was my childhood minister, Rev. Dan Gill. Practice staying connected to the feeling you felt in their presence and learning how to be in the place of unconditional love. As you practice living in the reality you are seeking, it comes. I have realized it is the key to freedom and empowerment in life to learn how to desire something and open the way for it. A woman came to me struggling for breath; she was redfaced, had an irregular pulse, and was clearly in cardiac distress. She decided to find and heal the cause before her follow-up cardiac catheterization was done. She did the work to heal her heart and remove the blocks to heart health. hyroid conditions are nearly epidemic in this country today. In my 33 years of clinical practice of alternative functional medicine I am amazed at the lack of proper diagnostics and treatment in this regard. It seems as though anyone who has a “thyroid” condition is usually placed on one of two replacement hormones and told to have a good life, and the real underlying causes of the thyroid dysfunction are never addressed. You cannot give synthetic T-4 or T-3 hormones without causing other clinical manifestations within a short period of time thereafter. In essence they are just masking the original cause(s) and the under lying complaint is not even being addressed. Therefore, American citizens are becoming very disillusioned and disheartened with the lack of proper clinical evaluation and clinical care with these multiple thyroid manifestations and maladies. I am going to discuss some of the major concerns I have with thyroid misdiagnosis and mistreatment from a medical/ allopathic standpoint. I will touch on the major thyroid issues and the real causes underlying these issues. These thyroid conditions are but a part of many underlying abnormal

functions and are intertwined with other organ systems which, if left unattended, will never eliminate or relieve the patient’s complaining symptoms. So what is the patient to do? Well, we know there are many forms of thyroid disease and each one of these conditions needs to be addressed specifically for the causation and not just symptom relief. Let me explain. If a person has laboratory studies performed to correlate with patient complaints and a careful physical examination, the treating physician must understand and relate to the patient the cause, and treat accordingly. Let’s take, for instance, hypothyroidism. In functional medicine we know this condition can arise from adrenal gland problems, heavy metal toxicity, mineral and amino acid deficiencies, liver toxicity, kidney problems, gut distress, medicine (including both hormones and drugs), birth control pills,

chemotherapy agents, radiation, and soy products, just to name some of the underlying problems causing hypothyroid conditions. If you have one or more of the above mentioned conditions presenting in the diagnosis of hypothyroidism, how can dispensing synthetic T-4 or T-3 hormone have any effect on successfully treating this condition? That is why there is very little to no success with conventional medical treatment with a hypothyroid diagnosis. These same findings and statements hold true for patients suffering with the other forms of thyroid diagnoses including hyperthyroidism (Graves disease), Hashimoto’s thyroiditis and Euthyroid disease. Americans are now becoming aware that chronic disease states are not responsive to antiquated protocols. The Tooth of the Matter

I

rang in 2014 in spectacular fashion. Having left one party, my goal was to get to the home of some other friends just before midnight, make a dramatic entrance, and surprise them to ring in the new year. Their front walk is tricky. It curves, and then there’s a little wooden bridge over a culvert. In my memory, the bridge sloped down to meet the pavement. In reality, it does not. And so, when my foot met (or missed) the unexpected step, the pavement jumped up and said howdo. To my face. I’m still not sure how it happened. One moment I was vertical and forward-moving, and the next thing I knew, I had face-planted onto the concrete. Indeed I did make a dramatic entrance, although I had not aspired to be bleeding from the face when my friends opened the door. Or to be lisping an unintelligible countdown to midnight from behind an icepack and looking like a freshly caught trout. My friend Jessa says I am vain about my teeth. She is correct. Besides my brain, they are my favorite thing in my head. My father paid the orthodontist handsomely for them when I was in high school, and I consider it money well-spent. I’m also fortunate never to have had a cavity, and therefore never a

filling, cap, crown, or other dental work. So I’ve never dreaded a visit to the dentist. I like my dentist very much and have gone to him since I was 12. He is a nice man. Our relationship is built on 25 years of him patting me on the head and saying, “You’ve got great teeth, kid” after a cleaning, and then we chitchat until I pay him and go my merry way. At my age and amount of grey hair, you start to really appreciate people who still call you “kid.” So it was no surprise that the very first thing I thought after my fall was, “OH NO MY TEETH ARE THEY STILL THERE PLEASE TELL ME I DIDN’T BREAK ANY.” And the second thing I heard in my head was the voice of Jessa saying, “Of course that is the first thing you thought, for you are vain about your teeth.” I was greatly relieved to find that, though bruised and scraped, I hadn’t broken any teeth. Or so I thought, until my fears were realized the next night when a large section of my left front tooth chipped off as I was gingerly flossing. If my life were a movie, that moment would have been underscored like a horror flick, with piercing screams. The Dreaded Worst had happened. I had to go around snaggletoothed for five very self-conscious days before I got it fixed. Thankfully, it was an easy

fix. My dentist does good work. The story has a happy ending. But I learned a lot in those five days. It’s true that we’re our own worst critic. What seems a blatant flaw in ourselves sometimes isn’t even noticeable to others. To me, that chip was the size of Texas. As it turns out, I had to actually point it out to friends who came to survey the damage. And everyone said, “Oh, it’s not that bad.” Maybe they were just being nice – but it certainly helped. Kind words go a long way. It’s terrible to suddenly feel selfconscious, to not want to laugh, smile, sing, or talk because you don’t want to expose what you think is ugly. I have new empathy for people who feel this way all the time. A chipped tooth is a microcosm of real problems, but lesson learned: Any difficulty experienced can become an exercise in empathy for others. They say pride goeth before a fall – but sometimes it goes after. And maybe you needed to feel a little less vain. Lesson learned: A touch of humility never hurt anyone. Imperfection is part of life, being human, and getting older. It isn’t the end of the world. People who love you are still going to love you even when you aren’t perfect, because nobody is. We’re all a little broken. Eventually, you can smile, laugh about it, even forget for a moment about your “fatal flaw.” You know what? Everyone else does. So even when you feel like a human jack-o’-lantern, take comfort in the assurance that it probably isn’t that bad, somebody else is sure to have it worse, you weren’t the pinnacle of perfection to begin with, and your people love you regardless – so try to put it out of your head, get over yourself, and get on with life. How Dumpster Diving Turned Me into a Spud Freak by David Y. Goodman

L

ong ago, before I saw the light, I didn’t grow potatoes. Potatoes come from the store in big, cheap bags. Why would I bother growing something so inexpensive and plebian when I could grow delicious foods like tomatoes, peppers, herbs and garlic? So for years, I didn’t plant potatoes. Until the year I met my friend The Professor. He was a respected teacher at a venerable private college, married to a professional woman and living in a nice house in the suburbs. He was also a secret dumpsterdiving addict. And we’re not talking hitting the trash for furniture and pallet wood: no, he was after big game. Just-expired expensive cheeses, flats of frozen beef, organic berries and whole-grain breads from the boutique grocery. Frankly, the profusion—and sheer dollar value—of what he retrieved blew my mind. What does that have to do with potatoes? Well, one time, after making me swear not to reveal his secret identity, he took me along. We careened through back alleys in his car, lights off, gloves on, tipping the lids of dumpsters and keeping our eyes open for both unsavory lurkers and local sheriffs. It was a rush, yet the thing that really struck me about the evening was how much food we waste as a nation. One of the foods we found scattered about in profusion were potatoes. He told me he didn’t even bother picking them up most of the time; but me, being a gardener and seeing many bags of potatoes covered in eyes and young roots, couldn’t resist saving www.GoNaturalAwakenings.com

some to plant in the backyard. So I did. I dug a long bed, buried the dumpster potatoes haphazardly in the early spring and waited. A few months later, I pulled up baskets of spuds in all different shapes and colors, and discovered something unexpected: homegrown potatoes taste amazing. Imagine the best French fries you’ve ever had, then double their rich, crunchy flavor. Picture a bowl of steaming mashed potatoes, and imagine that they have as much (or more) sheer deliciousity as the savory gravy ladled over the top. Since that year, I’ve grown potatoes every chance I get. Down here in Florida I don’t find them to be remarkably productive, but they’re more than worth having in the garden. Dinner guests are consistently amazed by the velvety richness of our homegrown spuds. They’re so good, we sometimes serve them as the main course. So—how do YOU grow YOUR own deliciously incredible spudtastic potatoes? It’s easy. First, find yourself some seed potatoes. This is easier than you might think. People will tell you emphatically, “Don’t plant store-bought potatoes!” They then mumble strange phrases like “viral contamination” and “sprout inhibitors.” Though it’s true that some potatoes for sale in the grocery store have been coated in chemicals to keep eyes from forming, I’m 99.7% certain not all of them have. I go to the local organic grocery to buy my seed potatoes and

have never had trouble getting them to sprout. As a bonus, you can usually find a beautiful variety of tubers, including those radical blue ones that look so danged cool they basically prove the existence of a Creator God. Potatoes, unlike their cousin the tomato, are somewhat cold tolerant. Once you have your seed potatoes, cut them into a few pieces with at least one “eye” each (or keep them whole). Let the pieces dry out a bit before you plant them or rot may creep in. Then, plant your pieces six inches apart, eyes up, about four inches deep, in rows three feet apart. If you have compost, throw some in when you plant. Straw or mulch also work great with potatoes. As your little plants peek above the ground, “hill them up” by pulling extra soil from in between your rows. This keeps young tubers from emerging from the ground and turning green in the sunshine. If they turn green, don’t eat them. The alkaloid solanine will make you feel achy and awful. Trust me: been there, done that. (As a quick note: if you suffer from any kind of regular aches and pains, the top two foods you should avoid are wheat and potatoes.) After a few months, depending on your potato varieties, the tops of the plants will die down—and then it’s time to dig! This is my favorite part of growing potatoes since it’s the closest thing to unearthing buried treasure I’ve ever experienced. (Except for dumpster diving, of course.) Dig carefully, then set your potatoes in the shade to dry out a bit before bringing them in the house. If you don’t wash the potatoes, they seem to keep a lot longer in storage. This is the time to plant! You’ve got until the end of this month, so get out there and do it—you won’t regret it. There’s really nothing like the flavor of homegrown organic spuds.
