Talking of celebrations, can you tell us what you’re offering customers for the forthcoming rugby internationals? We will be showing all the autumn international games on large projectors. We have food that you can pre-order before the game (from the wonderful Giovannis upstairs); great drinks offers such as cocktail sharers, bottles of Prosecco, craft beers, and premium spirits with mixers. All of that combined with the fantastic games should make the experience one to remember. 4

We’ve just overheard someone booking their Christmas party - what do you have planned for the festive season? This year we’re going with a Victorian style Christmas carol theme. We have a bespoke menu created especially for us by Giovannis; The Tiny Tim, The Ebenezer, and the Charles Dickens packages. They will be presented as either a sit down or buffet style tiered menu. Our completely bespoke drinks packages will be available, as well as full venue or room hire for bigger parties. WELCOME As some of you will know, I’m a big fan of the Blues, but autumn is the one time of the year I can honestly say I love the reds too (including the rustic browns and golds). Yes, autumn is one of City Life’s favourite seasons and, as I’m waxing lyrical, that leads me neatly to our cover stars for this issue - the talented team at Madame Wax (pages 13, 16 & 17). Giovanni, we know you’re a family man, and you famously treat your staff and customers as part of your family too - tell us a bit about your loved ones. I have two children; my son Gianluca is 24 and he’s making a fantastic movie career for himself over in Los Angeles - he’s just finished filming with the director of The Godfather, Francis Ford Coppola and he stars in an episode of the new series of Criminal Minds. My daughter Ileana is in her final year of university studying media and marketing which will hopefully lead her to the fashion world. I couldn’t be more proud of them both. My two fantastic sisters have had a major impact on my businesses. Tina was a godsend in the early days, she poured so much love and passion into the business before having her wonderful family of 4; and Francesca, who

has been a huge support throughout my life, oversees our restaurants. Francesca has been the backbone of the business since the start. Although she should be taking it easy now, her love for our customers keeps her there most days (and nights!)

and Hounds with Ron Bird, a man who I will forever be grateful too, who gave me my first opportunity, it was due to him that I discovered my passion for helping others.

I’d also like to acknowledge my parents, Domenico & Antonia Malacrino; over 50 years ago they had the courage to leave their homeland with just a suitcase and £10.00 in their pockets in order to give us a better future. They went on to own their own fish and chip shop in Grangetown called Malacrinos.

The flagship of my businesses, The Hayes, is the first of my restaurants opened over 30 years ago. I fell in love with the building and it seemed perfect for my vision that The Hayes would be at the heart of the city centre for years to come. It’s an atmospheric rustic Italian restaurant serving authentic, quality Italian food, just like mamma used to make!

I will forever be grateful to them both and the Hurley family; Cynthia and Ted were my first customers and close friends, this year they celebrated their diamond wedding anniversary in our Park Place restaurant with their loved ones, including their children Clare, Debbie and Mathew. It seems like yesterday that Cynthia was having dinner with the family at my first restaurant, and refused to leave the table until new customers were found and coaxed into my newly opened restaurant.

I was always curious about the other side of the town centre, and the opportunity for my restaurant on Park Place came about by a meeting with property developer John Smart. I designed Park Place to be different to The Hayes – it offers the authentic food our customers know and love in a slower paced, relaxing setting with the opportunity for alfresco dining. Here we can cater for up to 150 people, and regularly do so for special occasions such as weddings, birthdays and product launches.

That’s a great story, can you tell us about your two restaurants? Initially I went to New Jersey, America, and opened a restaurant called The Fox

As a result of your great reputation for producing some of the best authentic Italian food available in the UK you opened your Cookery School in Mill Lane two years ago – what is your ethos behind that? That’s simple; to share our passion for great food and our wealth of knowledge. Led by our experienced chefs, we offer a diverse selection of courses covering all aspects of cooking, from Parents and Children’s Pizza Classes to all aspects of Italian food. You’ll find a full list of classes, events and courses on our website. This is also the base for Giovanni’s Catering - we supply local businesses with our famous pizza balls and Italian meatballs, Neapolitan sauce, delicious desserts and our award winning homemade tiramisu.

This year we expanded the Cookery School to accommodate filming and training, and for other chefs to demonstrate to their staff and to hold chefs tables for their own customers. This is available for hire and can accommodate parties of up to 32. And what can our readers look forward to over the festive period at Giovanni’s? We’re already taking bookings for our special Christmas lunch and dinner parties, which always prove extremely popular. I was sad to hear of her wanting to retire but was pleased that she thought of me to take the shop on. I was and am excited to bring the Boutique 53 brand to Pontcanna and to expand the brand further.

Marvyn, what’s your background, and what led you to setting up your two training facilities? When I was younger I was very overweight and decided something needed to drastically change. I became passionate about training and was always reading and researching fitness and nutrition - as I was getting fitter I started playing more Rugby. Over my playing career I was lucky enough to play rugby in New Zealand, Wales, Scotland and Ireland. With the luxury of plenty of free time around my rugby training. I trained as a personal trainer and nutritionist. I started training clients and fellow players around my rugby training days and thoroughly enjoyed helping others achieve their goals and seeing their characters and confidence grow, it was a huge feel good factor for me. Due to persistent injuries and being diagnosed with CFS/ME illness I was forced to retire from rugby, which gave me the opportunity to go full time with the Personal Training.

The home of Snowsport Wales, and one of the most well established ski slopes in the UK, Cardiff Ski and Snowboard Centre’s slope went through significant changes when management was handed over from the local council to Snowsport Cymru Wales, the governing body of snow sports in Wales. Whether it’s skiing or snowboarding you’re interested in, the centre’s highly qualified instructors have travelled and lived all over the world in pursuit of snow sports and can always be relied on to get you excited about the snow and snow sports. The talented team provide activities for all levels and ages in individual, group and recreational settings. Snowsport Wales run over 11,000 sessions a year and provide special deals for schools, charities and businesses. They run instructor courses, junior ski and snowboard school at the weekends, school events and competitions, and their latest feature is an extended slope which includes a platform for ski racing.

Don’t worry if you have no experience as the centre’s team are used to having a wide range of abilities learning with them. The majority of adult clients they see during the winters are first timers or beginners, wanting to have a few lessons to make the most out of their first, second or third holiday. Similarly, a lot of children who go on a skiing trip with their schools will come for a group of lessons, or join in the fun at the ski and snowboard schools on weekends. For those with little ones that would like to learn, the centre has started a brand new program for children under six years old. With the same two instructors every week, this is a session specifically designed for a safe and fun learning experience. With a maximum of five kids to each instructor, they’re guaranteed great support and guidance. To enhance their schools program, the centre has recently partnered with InspireSki who offer the best school trip experience of a lifetime; giving pupils the opportunity to ski in some of the world’s best resorts for that lifelong, life changing experience. 32

For more advanced clients who are looking at developing their techniques to push themselves from competent skiers to good, technical all-mountain skiers and snowboarders, this is the place to utilise Snowsports Wales’ race club, freestyle club or, perhaps, a series of private lessons. They also have a number of very successful ski racers that begin at this slope, and have progressed through the Ski Club.

Disability Skiing, in the simplest terms, is to bypass your limitation and adapt yourself, be it with training, a guide or special equipment to go on and ski. Any sport can be an adaptive sport, and can be a great way to rehabilitate, boost confidence and find a new (or rejuvenate an old) passion.


Looking to get more involved? Cardiff Ski Club, who meet every Tuesday evening at the Ski Centre, has produced a number of national level ski competitors and continues to introduce the highly competitive sport of ski racing to young people around Cardiff. The Snowboard Club meets on a Sunday night. This club has grown exponentially over the last few years, morphing into a freestyle club, where freestyle skiers and snowboarders can learn and progress under the advice and instruction of experienced instructors. And, when you train like this, you learn to use your entire body as a single unit, which is the most efficient way to develop strength and burn fat. Our functional work outs don’t require fancy hi-tech equipment. Instead we focus around bodyweight exercises and movements, building to advanced calisthenics/gymnastic style exercises, as well as using kettlebells, battle ropes, slam balls, medicine balls and gymnastic rings/suspension trainers.

Do you offer group sessions or is the training all one on one? We offer a range of sessions. Our standard personal training packages are for single person sessions (one on one) or in pairs - great for couples or to bring your friend along for support. We can also cater for larger groups or sports teams on request. All personal training packages include tailored 34

workout plans, nutritional advice and seven day a week contact for help and advice.

GRIP also run group training sessions on weekday mornings and evenings as well as weekend mornings. These are basically classes for up to ten people, but with two trainers present, giving a ratio of one trainer to a maximum of five clients (unlike many other classes at larger gyms where there may only be one instructor in a group of 25+ people). This means that we can work more closely with clients to ensure correct and safe technique. Also we can get to know people more closely and find out their own individual goals and tailor the exercises to them in order to help them achieve exactly what they want. The group training sessions fall into 4 categories: Kettlebells, Circuit training, and our signature GRIP session (focusing on bodyweight movements, flows and calisthenics) which are £6 for an hour. We also run HIIT (high intensity interval


training) sessions which are more intense and faster paced to get the most out of the workout in a condensed amount of time which are £4 for 30 mins. Can you tell us about Grip Online? GRIP Online is a package that we have developed for people with busy lifestyles who find it hard to find time to get to the gym, or for people who live further away from our facilities but still want help and advice with their fitness and lifestyle. We can design programmes to help them achieve their goals, and we can take into account numerous factors to design the perfect workouts. We take into account what they want to achieve (sports training, fat loss etc), how much time they can dedicate to training, what equipment they have access to, although we can also design workouts that require no equipment at all. And how much space they have/where they will be working out (home/park, local gym etc). Clients can contact us seven days a week for advice.

Yes, our sports massage therapist has skills in sports massage, acupuncture for sports injuries, myofascial release, muscle energy techniques, proprioceptive neuromuscular facilitation (PNF) stretching and postural analysis. However, sports massage isn’t just for people who participate in sports/ activities, it is beneficial for everyone. It can be very helpful to correct postural imbalances which cause us the aches and pains of daily living. “I’m not crazy,” laughs Neil Ballard of Lewis Ballard Accountants. Yet when he cycles into Jasper in the central Canadian Rockies, on 10th September, he will have cycled 405 km, over five gruelling days, crossing one of the world’s most beautiful but challenging mountain ranges. This route is in the ‘Tough’ challenge category.

A ROCKIE ROAD TO CHANGE

So why does a 52 year old accountant think swapping his comfy armchair for a torturous saddle ride is a good idea? I rode from Boston to New York with my wife Jan in 2014 so have an idea what’s ahead, although this ride is much, much, harder. I don’t know what’s more terrifying - cycling up some of the world’s tallest mountains or trying to control your bike as you come back down. My son Chris and I are riding with fifty fantastic Velindre Hospital fundraisers and the camaraderie really helps. When Jan reached exhaustion point on day four last time, this support got her through. Everyone has weak moments, even the cycling enthusiasts and professional sports people taking part.

When you’re a portly pen pusher like me it’s even more challenging. After ten hours cycling on day one, the last thing you want is to get up and go again the next day-never mind the next four! It’s really tough, but nothing compares to what people fighting cancer go through every day. When people ask ‘why do it again?’ I tell them it’s really changed my life. It all began with our first charity dinner in March 2010, which is now an amazing annual event, raising nearly £100,000 for Velindre so far. As a result, we proudly became Velindre Ambassadors and before long, somehow, we’d joined the Boston challenge. It’s like magic! Both 50, overweight, unfit, running our own business took all our time. We weren’t looking after ourselves. 42

Exhausting all the usual routes; gyms, diets, even personal trainers - nothing helped, because work always came first. We were jaded, stressed, miserable, but once we committed to the challenge we had to find training time and that’s when the magic really happened.

The ride also tested us mentally and our self-belief and confidence grew. Now we no longer stress about things, as we know we can meet any challenge.


It’s not like a bungee jump, which is all over in seconds… We totted up over 1,000 miles before even getting to Boston. This time I’ve trained since January and already ridden 110 miles from Cardiff to Tenby and 60 miles from Brecon to Cardiff for charity, in preparation. Every mile (even when it’s raining) makes a positive change, for the charity and for me.

Annie Cartwright, Director of Skin and Face Clinics in Llandaff village, talks to City Life about the latest skin care techniques, and reveals her top tips on how to carry a healthy glow into the winter months.

SKIN AND FACE CLINICS So tell us more about the training you have been doing over the past few months? It’s a real privilege to be asked to train other practitioners in my field of expertise, and this undoubtedly helps me to stay ahead of the latest best practice in facial aesthetics. In my consultancy role for the UK’s market-leading aesthetics company, I have travelled extensively over the past few months, visiting Kent, Surrey, Sussex, Portsmouth and London’s Harley Street - delivering training to my peers in advanced injection techniques. These included the 8-point face lift and the MD Codes for full-face rejuvenation. This is a new generation of long-lasting, but non-permanent, treatments designed to replace the volume that’s been lost and add support into tissue structures that have been affected by ageing. Do you think the quality of people’s skin can affect their self-esteem? Many of the clients I see want to improve the quality of their skin to help them retain a youthful appearance. It seems that good skin, or the lack of it, can really affect their confidence and self-esteem. We know from scientific studies that we make an association, which is often subconscious, between clear, smooth skin, good health, youth and vitality. I know, from experience, that the changed appearance of skin associated with everything from acne in teens, to menopause in middle-age, can make people feel extremely self-conscious.

As summer tans start to fade in the autumn, I am often asked how people can repair their skin after sun damage, and get a radiance boost as they head into the gloomy winter months. A change in the weather, and the need for central heating, can make skin dryer and appear dull, so this is a great time for simple exfoliation to improve skin quality. It’s also an ideal time to start thinking about peels and micro-needling after the risk of sun exposure is over. I highly recommend the Obaji Blue

Not everything is as it seems in Whitchurch’s most chic nail bar and beauty salon. Whilst on the surface Nail Divas may look like an ordinary aesthetic salon, once you venture inside you will discover just how extraordinary this beauty business actually is.

NAIL DIVAS Although it was first established in the final months of 2002 the business quickly grew due to its increased popularity with its clients, so much so that it wasn’t long before owner Sian Llewellyn had to hire more staff just to cope. However she quickly came upon a problem when she discovered that the available technicians were not all trained to the best standard of beauty. As a qualified and experienced teacher Sian set about training the staff herself to bring them up to the high quality code that she abided by. Word quickly spread about her teachings and in came referrals from other salons, Careers Wales and DWP. Nail Divas now offer a complete range of training courses - including nail technology, beauty therapy, and holistic courses to ensure that the new technicians have the most up-to-date skill set when it comes to beauty.

Not satisfied with the standard way of doing things Sian set about re-inventing the means in which her clients could receive her services as-well as the idea of mobile beauty as a whole. Having always wanted to develop a truly mobile nail service her dreams were answered when she was offered an old Ford transit van. An unusual event I think you will agree but it is what she did with the van that started Nail Divas along the path of re-invention. After re-fitting the van, Sian dubbed it ‘Vanicures’ and can now take the pink spotted wonder out on the road to any venue or space that can benefit from a pop up nail salon.

So a beauty salon that also offers high level training for the next generation of beauty technicians, plus a re-invented mobile service that has revolutionised the nail industry. Surely Sian and her talented team can’t fit anything else into their schedule. Well, you would be wrong to think that. Recognising that the training they were offering was predominantly a social enterprise, Sian created Fourteen-A LTD, a registered charity whose aim was to inspire disadvantaged youths and adults across Wales to help them achieve their career ambitions. With courses partly funded by the DM Thomas Foundation for Young People, the charity is a brilliant stepping stone for those less fortunate people who need the most help. Even with all this going on Sian has a long list of plans for the future and, although a lot of it is under wraps, she has promised to tell us all about them as soon as they are ready. 55

Head chef Gareth Ward at the recently refurbished Ynyshir, Michelin Restaurant with Luxury Rooms in Machynlleth, says, “We want to become the best restaurant in the world, then push on from there.” That’s a bold statement to make but, after enjoying one of his Chef ’s Table experiences, we’d say he’s right on track.

YNYSHIR We chat with Gareth and his partner Amelia Eiriksson on their vision of Ynyshir since the passing of previous owner Joan Reen. What are your backgrounds? GARETH I was brought up in Crook near Durham. I left school at 16 and was told I had to get a job to pay my way. I went to the job centre and, on the advice of my uncle, I said I wanted to be a chef (we all need to eat!) I started in the pots as a commis in a pub, then read the Good Food Guide and decided to go and work at Hambleton Hall. I spent five years there, moving up the ranks and then moved to Seaham Hall when it had a Michelin Star. After a few years, I moved to Nottingham and spent three years as Sat Bains’ Sous Chef (part of the team gaining the second Michelin star). I then came to Ynyshir to have my own kitchen.

AMELIA I trained as an architect at Nottingham University. Whilst there I had a part-time bar job at Sat Bains, which is where I met Gareth. After leaving Nottingham, I went to work for an Architect in Hereford, where I gained my professional qualifications and became fully qualified. Whilst doing this I was working at the weekend at Ynyshir in the restaurant. In August 2015, I decided to move properly to Wales to help run the restaurant at Ynyshir. Then moved upwards to eventually be a part of the management and help decide on the vision for the new chapter. Please explain the ownership transition... We run the business day to day. John Talbot (business partner in Ynyshir Hall with Joan and Rob since Von Essen) is the owner and took on the whole business after Joan’s death. What is your vision for Ynyshir Hall? Ynyshir Hall is now a Restaurant with Rooms. We want Ynyshir to be a destination restaurant in one of the most beautiful landscapes in the UK, offering something unique and very special, in both food and rooms. 56

Which chef inspires you Gareth? Jiro - he is an absolute legend! His work ethic, aim for perfection and push to always be better is inspiring. He worked hard for his stars but is still pushing.

Simplicity of flavour and experience of taste is my philosophy. I want everyone to come to us and have the tasting menu, try 15 different things and have been blown away by everything that they have tasted. We have the whole of the British Isles as our larder, and we get the best ingredients from the best places. In my opinion, the best fish is from Cornwall, so our mackerel and pollock come from here. The best prawns are from Scotland and the best beef and lamb from Wales so that’s where our supplies come from. The Isle of Wight has the sunniest climate, so the best tomatoes grow there. We just look for the best ingredients from the best places that we can and make them taste the best they can.

Do you have a favourite dish and why? It has to be the St George - has a unique flavour and a very short season. The dish just uses St Georges just in different ways. The flavour signifies the new season. What are your personal ambitions? I would love to be the first place in Wales ever to get two Michelin Stars, but it’s not the be all and end all. I just want to run a successful business and become a food destination; cooking amazing dishes full of flavour. What was your inspiration for the Chef ’s table? When the kitchen was designed, I didn’t want a chef ’s table but the owners did, so it was a part of the deal! I got a new kitchen and they got a table! The table is made from a yew tree that’s been polished up. The wallpaper is a photograph of our landscape. You have a young brigade, please tell us a little bit about them and what they bring to the table? I just couldn’t do it without them. Each one has a passion for the place and the food and wants to be in the

kitchen every day, exploring new ideas and tasting new things. All dishes are tasted by everyone and all opinions are taken on board. The front-of-house and kitchen are all one team with different skills, working off each other and learning all of the time to move forward. Congratulations on setting up the Welsh Dentistry Awards, it’s great to celebrate the industry by recognising the talents of practices, labs and dental care professionals across Wales. Can you tell us what led you to set up the event? I attended the British Dental Awards 2 years ago as a guest of a client. There were hardly any Welsh dentists attending due to the location (Leicester on a Friday evening). I did my research and found there were also Scottish and Irish Dental Awards but no Welsh Awards. As a result I decided to set up the Welsh Awards, and it’s taken a year of planning to organise everything. As you’d expect, the Welsh theme will run throughout with the event being held in the Principality Stadium with ex Welsh rugby player Tom Shanklin as our guest speaker, and the awards are made out of Welsh slate & steel. Hopefully the event will be a huge success and we’ll be able to hold it for years to come.

What led you down the path of accountancy services for dental practices, and what makes you stand out from other accountancy firms? We understand you wrote a book on running a dental business last year. Yes, over the years I’ve seen many practice owners who see themselves only as dentists and forget they are business owners. In my book I provide clear, simple explanations of how to run a dental practice as the successful business it should be. Copies are available via our website.

Do you have any plans for the future of your business? Yes, we aim to work with more practices, including a wider geographical area. Our current dental clients cover from West Wales along the M4 to Cheltenham and London, and down the M5 to Truro.

Do you offer accountancy services for other professions/businesses? Yes, we provide our high quality accountancy services to a wide range of other business types, from retail and the leisure industry to clients in the television and film industry. What questions would you advise a business owner to ask when choosing an accountancy firm? How much experience does the prospective firm have in dealing with the industry they are in, but the main one for me is the first impression. The aim is to build a long relationship together, so ideally you’ll be working with someone you can get on with someone you feel you can approach.

With so many companies in Wales offering bi-fold doors and windows, it can be difficult to choose the right company. The best endorsement for any company is a testimonial from a happy customer. Rob and Valerie Gooding (and son Jules) allow us into their beautiful home in Dinas Powys to share their bifold story.

POLISHED PERFORMANCE

Who are you and what do you do for a living? My name is Rob Gooding and I am the Managing Director of Fiddes Group. We manufacture a range of wood finishing products, having done so for over four generations. We also acquired a sports line marking business in 2005, Bowcom Ltd, and this now forms part of the Fiddes Group. We manufacture and supply the line marking paints and applicators for various amenity sectors, including schools and Councils through to the Premier League and RFU/WRU major stadiums and training facilities. How long have you lived in Dinas Powys? I have lived in the property for seventeen years, with my wife Valerie who is French and Head of MFL in Secondary School and Jules who is in year 9.

Did you contact other companies for quotes? Yes, one well-respected Cardiff company visited and quoted, however never followed up on their quotation, and then another, who again quoted. We contacted them again to enquire about their quotation - they promised to respond but, again, failed to follow up. Alexander James on the other hand were prompt with their quotation which gave us even more confidence in using them.

What work did they carry out? They supplied and fitted three sets of bifold doors. One set leading off from our kitchen/diner into the garden, the other from our lounge, into the garden and the other from Jules’s room, which again leads off into the garden. How long did the process take? We were surprised at how little time it took. All in all, only three days.

How did you hear about Alexander James? Through Andrew Farmer. I knew Andrew from secondary school.

Were they prompt, clean and tidy? Yes. We didn’t even know they were there, they were so professional. They cleaned and tidied up after each day. They arrived on time on the days they promised that they would be there.

What made you decide to work with Alexander James Bifolds? Namely Andrew. He is very professional and attentive. Although our connection wasn’t the main reason we went with Alexander James, it does help to know and have faith in who you are dealing with.

What difference have the bi-fold doors made to the way you use your property? They advised on what system would be the most effective in allowing more light into our property, whilst remaining sympathetic to the originality of our home generally.

Our house is circa 1915, so low ceilings and quite dark, these windows have lightened the rooms considerably, are easy to maintain and made a significant difference to the overall ambience of the areas in which they have been installed. Our kitchen area was perhaps the most challenging, as there was a large breakfront, with oak doors and pillars which limited the design options. Andrew created a design that maximised the amount of light available, whilst reducing the number of frame and panel breaks to a minimum. We want to install a log burning stove in the kitchen area and they even gave us advice on how best we might do this as they were familiar with all of the Fire and Building Regulations needed. We regularly have friends and their children over and the new space has made a huge difference.

We now make more use of the garden and the patio area and feel like the garden is now more a part of the home. Were they competitive in their pricing? Yes, competitive. Did you find them value for money? Yes, and the follow-up has been very good. 69
