Those of you who know us will appreciate that we’re passionate about our coffee. So you’ll understand our excitement at meeting up with brothers Ian and Paul Hayman, owners of Cardiff ’s newest independent coffee bar.
UNCOMMON GROUND
Ian, while we’re enjoying your coffee, can you tell us how Uncommon Ground came about? Both Paul and I had a passion for coffee before we decided to go into business, and felt there was a genuine opportunity to offer Cardiff something different to the usual national branded coffee shops that crowd the city. So with a combination of Paul’s seventeen years’ experience in the trade, and my creative skills and flair for the visual, we recognised that between the two of us we had the skill set required to succeed in this business. We love that you’re passionate about coffee - can you tell us more about the coffee you serve here? Our speciality coffee is unique to us; in fact we developed our own espresso blend with the help of our green coffee supplier. After a lot of research and tasting a variety of coffees from around the world we’ve settled on a blend of Brazilian, Colombian and Indonesian Sumatran.
As each component of the blend is roasted specifically and separately, the sweet flavours are far more prominent than those often more bitter coffees offered by the big brands.
We do sell our blend as a retail product, so you can enjoy our coffee at home too but, due to the increasing demand for this, we are struggling to keep up with demand for the coffee for our own shop let alone other outlets.
We could happily drink coffee all day long but, for our readers, what else do you serve in your café? We offer a wide range of loose leaf teas and soft drinks. Our menu is designed to complement what we do best so our food includes home baked cakes, freshly prepared brunch items (porridge, toast, pastries) and a very popular Breakfast Burrito. We also serve a selection of Paninis, wraps and soups as well.
What’s your favourite part of your role at Uncommon Ground? Alongside building great relationships with ever increasing regular and new customers, the total creative freedom from the conception of an idea to bringing it to the shop; be that an item for the menu, a new exciting filter coffee, or idea for developing our customers experience within the coffee bar.
Can we buy your coffee elsewhere? Not at present, however we’ve been overwhelmed by the exceptional feedback we’ve had about our coffee, and we’ve had heaps of enquires about supplying other coffee shops, restaurants, and even offices across Cardiff with our coffee.
With this being a family business, and a new one at that, how do you manage your work/life balance? Growing up, both Paul and I have been very close which stems from a close family unit. We both now have families of our own and any time away from the business is time taken with them.

Due to the fact that the business is very much in its infancy the work/life balance is not really an even one at the moment but, in order for a new business like this to succeed, we understand that certain time sacrifices have to be made at this stage. Thankfully our families are very understanding and support us both as best they can. And last, but not least, what do you hope is in store for the future at Uncommon Ground? Getting the roastery side of the business fully open is the next step for sure. This will allow us to cope with the demand for our coffee and allow us further flexibility in terms of what special guest coffees we can showcase in the future.
Alongside this, we will be able to develop the wholesale side of the business and offer our customers the opportunity to take out coffee subscriptions (freshly roasted coffee regularly delivered to your door). Once the roastery is established we will be looking at offering all kinds of coffee training courses from coffee roasting, cupping/tasting and barista training. We are always looking for the business to grow, and additional coffee bars at other locations in the future are certainly not out of the question. What are you waiting for? HELPING THE HOMELESS
Be an Angel, help the Huggard While we all plan to celebrate Christmas, it’s good to stop, pause, and think about those who, for a wide variety of reasons and usually no fault of their own, will struggle this winter. There are lots of great charitable organisations in Cardiff and across south Wales but we wanted to give a special shout out for Huggard (Helping The Homeless). Huggard is a Cardiffbased charity tackling homelessness and helps individuals to overcome the problems and barriers that force them to sleep rough on our streets. The Huggard day centre is open 365 days of the year and they manage a twenty bed hostel with additional emergency spaces and fourteen shared houses with tenant support that accommodate 52 clients. In extreme weather conditions Huggard also opens its day centre at night, to provide shelter for people who would otherwise be forced to sleep rough.
Huggard is run by people, for people. If you can help with a donation or may be able to assist by volunteering or in any other way, please get in touch. As I type this, the wind is howling outside and the rain is lashing aginst the window. I couldn’t imagine being alone, vulnerable and outside in these conditions. A new kitchen should be a pleasure to spend time in - an inviting place at the heart of the home. Having recently met with Daniel Bullock of Alexander Bullock Furniture, we can easily understand why he is the go to kitchen designer for celebrities. His reputation for creating beautiful kitchens is growing and deservedly so. We chat with Daniel to find out more. What is your background Daniel? I went to art college in Newport which gave me a great foundation in art and design. I specialised in 3D design (as it was called) which was based around using woods, metals and plastics. Specialising further, I graduated with a degree in furniture design from Northumbria University and moved back to south Wales to work. Having worked with several furniture designers and cabinet makers to gain invaluable experience, I started Alexander Bullock Furniture with the help of the Princes Trust in 1998. I opened with a small workshop in Llandaff North before settling for the last ten years at Curran Embankment. Talk us through your team… Throughout the past seventeen years I’ve been keen to share my skills and passion for furniture. I have always taken on apprentices and this long term ongoing training is still very much a part of our philosophy today.
Our team has grown steadily over the years and all of them have come through our apprenticeship program.
We also have two final year apprentices Kenton and John, and David a first year mature student.
Martin our foreman and cabinet maker has been with us for over ten years. He organises the day-to-day running of the workshop. Ashley has been with us for over eight years and is our finisher and a cabinet maker. Mathew is our dedicated installer and cabinet maker. We don’t employ sub-contractors as I feel it is difficult to get the consistent quality we require. Mathew was fifteen and at school when he came to us for a work placement. He was incredibly keen - so much so he asked if he could be considered for an apprenticeship the following year. We told him to make sure he got all his GCSEs and we would consider it. He did, and he’s been with us ever since. Jemima has only recently joined the team as my design assistant. She has a degree in Fine Art and is currently training to be a cabinet maker as well as learning the design side of the business.
What do you think is special about Alexander Bullock Furniture? I believe we offer a truly bespoke solution to furniture and kitchen design. We take time to listen to our clients’ needs and design furniture to suit those requirements. Off the back of that tailored design package our skilled and dedicated cabinet makers, finishers and installers produce high quality furniture. So often you get one or the other, but rarely both. Because each project is designed individually for each client we have a huge variety of styles, materials and finishes. Each project is as unique as the clients who commission us.

Do you follow trends? There are trends within design of course, but we try to design with the client in mind rather than following the herd.
BEAUTIFULLY BESPOKE Does this mean that you’re expensive? A fully bespoke service doesn’t have to be expensive. We are in full control of the design and production process and can tailor our furniture/kitchens to most budgets.
Why the move to the new workshop? The new workshop move has been on the cards for the past few years - there have been several benefits to moving. We wanted a better environment for our visiting clients. We wanted to improve our production and staff welfare facility. We also have the opportunity to have a fully functional kitchen space and design studio/showroom. We’re not quite there yet, but watch this space.
What kind of projects do you enjoy the most? The variety of people and projects we work with keeps me motivated. There’s always a problem to solve or a challenge to overcome. Without sounding corny, it’s the best job in the world - at least for me.

What do you love about Cardiff? Cardiff is big, but not too big. There’s always lots going on yet you can walk through the city or go to a restaurant and bump into people you know. I love being able to walk down from Whitchurch (where I live) to the city centre along the river and through the parks. SUMMING UP When was the business established? JANET The business was first established in 1976; Neil joined in 1989 and became a partner in 1992. Lewis Ballard Limited was formed on 1st November 2009 when Neil and I took over the whole business.
Who owns the business? NEIL There are four Directors - Janet and I own 80% (40% each). Sian Lloyd and Johanna Evans own 10% each. How many people do you employ? JANET We employ twenty people at present but are recruiting for more. How many clients do you have? NEIL We have 448 clients. Please outline the services you offer. JANET We offer clients a holistic approach which includes business development advice, business coaching, tax planning, inheritance tax, trusts and wealth management. We help them at every stage from starting a business to their exit strategy, ensuring they maximise results and protect and retain as much of their income as possible throughout. Alongside this we provide routine compliance services such as Accounts, Tax, VAT and Payroll. NEIL At this time of year many people are panicking because their tax affairs aren’t in order, the 31st January deadline is looming and they are facing potential hefty tax bills or late filing penalties. Our advice to anyone worrying about this, whether you’ve been too busy or you’ve forgotten, is there’s still time to organise things, but you do need to act quickly.
Find yourself an accountant who will not only help you now, but won’t let you fall behind again. You must know your tax liabilities and how your business is doing in real-time to capitalise on opportunities or nip any problems in the bud. NEIL Our dental and healthcare clients make up about 40% of our businesses. This specialist knowledge has been developed over thirty years and is embedded in our systems. What do you think sets Lewis Ballard apart from other accountants? JANET Our approach for our clients differs from many other accountants. Why are you based in Pentwyn? NEIL We moved to Pentwyn in 2004 when we outgrew our Llandaff offices. It’s ideal for us as it’s so close to the M4 and A48 or all our clients, both local and throughout the UK. and we have onsite parking for our clients and team. We originally had one third of the building but, by 2012, we were bursting at the seams again so we took the plunge and bought the whole unit.
Since taking over fully in November 2009, we have been very focussed on the welfare and training of our team and recently achieved the Investor in People Gold accreditation and ACCA platinum trainer status. We already have a very technical team of qualified Chartered Certified accountants, two Chartered Tax advisors, a Certified Payroll manager, AAT and five part-qualified ACCA accountants to provide expert advice.
We now have lovely new offices, training rooms and meeting rooms for hire and five rental offices too. It has really increased the range of services we can offer, with regular seminars and training to help them grow their business, and wealth and property talks to help them create secure, successful futures.
However we also ensure they are trained as business advisors too, as although it’s important to ensure accuracy in the figures, it’s just as important to know what they mean and where improvements can be made. We aim to have a minimum of ten trained business advisors who will have a huge impact on the local economy by ensuring businesses succeed and prosper. We also aim to train local people and not outsource like many of our competitors as we believe employers have an obligation to put back into their communities.
Where do you see the company in the future? JANET We see our team growing by at least another 50% within the next three years as our clients’ expand and need more support and, also, as we take on new clients looking to dramatically improve their results. We are continually looking to develop the range of services we offer and intend to further expand this. Our team are trained in Kashflow, Xero and Openbooks cloud accounting systems, as we see cloud accounting as the best way to help clients stay up to date and ahead of their competitors and we see more and more clients going this way. Online technology is one of the exciting ways our industry is developing.
Please tell us about your awards… NEIL We are really delighted to have our hard work recognised. We recently submitted several case studies to a national competition organised by AVN and sponsored by Xero, showing the impact we have on our clients lives and, as a result, we are now officially ‘The UK’s Most Inspiring Accountants’ and we also came back from the national accountancy conference as the ‘AVN firm of the year’.

JANET After raising nearly £80,000 for Velindre Cancer hospital in the last 5 years Neil and I are proud to be Velindre Ambassadors and we aim to reach our £100,000 target in 2016, by holding another charity dinner on 5th March 2016 and completing (hopefully) the five day Ride the Rockies cycle challenge in September 2016. NEIL In 2012 we also became the first Welsh business to join B1G1, a global organisation of businesses that support over 600 charities worldwide. We link a different charity to each service we give and every time a client buys we give. Since autumn 2012, Auto Enrolment has been a compulsory obligation for companies to provide a workplace pension for employees (even if there’s just one employee). The scheme is being rolled out across the UK and not being prepared is no excuse and could cost a business dearly. If you haven’t put a scheme in place or are taking the ‘head in the sand’ approach, beware. To find out more, we talk to pensions guru Andy Parry.
THE PENSION REVOLUTION Does my business have to participate? Yes. Auto enrolment is now a legal requirement for employers to provide all of its workers with access to a workplace pension scheme and automatically enroll certain workers into a workplace pension scheme, paying contributions on its employee’s behalf. If an employer fails to comply and put the scheme in place by its staging date. It will be deemed as acting unlawfully and will incur fines of up to £500 per day. What is my staging date? Your staging is the date set by the Pension Regulator. This is the date, when the scheme needs to be set up by and contributions need to start. Employees would have needed to have been assessed and received any relevant communication. Even if an employer decides to opt for Postponement, employees must have received communication and employees can choose to start on the staging date irrelevant. If an employer does not know their staging date. We can provide it for them. Regardless of the staging date. The Pension Regulator recommends that employers act now in order to manage the process of setting up the workplace pension. Do the employer duties apply to employees who already have a plan? Yes, even if an employee has their own individual pension or the employer already has a scheme in place. The employer will have to comply with Auto Enrolment rules. Existing employer schemes will need to be checked with
the provider to ensure that they qualify under the rules for auto enrolment. However, inevitably there will be added work in continuing with an existing scheme, as there are other tasks that will need to be completed, such as assessing the workforce and communicating to all employees, data management between payroll and the provider, and record keeping. There is also the declaration of compliance that will need to be completed. Employees will have the option of opting out of the scheme. However, they will have to be automatically enrolled again every three years. 28
Do I have to provide the same pension scheme and contributions to each of my employees? No. As long as you provide all workers with at least the minimum requirements, you can provide different schemes and benefit structures to different groups of workers if you so wish. What do I have to do if I appoint you? Between us and the pension provider we will ensure that all your tasks associated with Auto Enrolment are completed with the exception of uploading your payroll data to the pension provider and paying your contributions.

Where are the contributions invested? Scottish Widows, who are one of the UK’s largest investment providers. What if the fund goes bust? Employees’ pension funds are protected by the Financial Services Compensation Scheme (FSCS). Employers have to remember there are companies who have not started to look at their own situation.
There is also the capacity crunch issue. It is claimed that between January 2016 and 2018, the number of employers reaching their staging date will go up tenfold, reach an average of more than 100,000 a quarter and then over 200,000 in the first few months of 2017. Which is one of the reasons why the Pension Regulator has written to all employers, providing their staging dates and telling them to act now. There are far more employers staging in a short period of time than there are pension providers and advisers to help the employers with their obligation. This is an unprecedented volume of work for both employers, providers and advisers.

What does an employer need to do in order for you to help them? They can either telephone our offices or email us and we have a short video on our website that is quite informative. We can either arrange to meet the employer face to face or, if the employer does not have the time to meet or feels that they want a lower cost option, we can complete their application by telephone and we can send them a pre-populated electronic application, which will save them time and money. 30

Happy Birthday Welsh Hearts/Calonnau Cymru Saving Lives Charity at the heart of Wales celebrates its 2nd birthday with their Appeal “Every Second Counts” to get 500 Defibrillators into Cardiff and heart screening sessions for 14 to 35 years of age. Local charity Welsh Hearts Calonnau Cymru celebrates its 2nd birthday this week. Welsh Hearts was founded in 2013 by Sharon Owen and has been focusing on placing Defibrillators in communities and schools through-out Wales and holding free CPR training sessions to the public! Welsh Hearts have trained over 7736 people in CPR and have placed 235 defibrillators across communities in Wales. The aim of this is to drastically improve the chances of those that have cardiac arrests outside of hospital where the first few minutes are absolutely crucial in saving their lives. In Wales there are approximately 8000 sudden cardiac arrests outside hospital each year. It’s shocking that the survival rate is only 3%. Where an AED (defibrillator) is used, the survival rate
is 50% The charity is working with Dr Bob Baron, a GP from Tonypandy, on the RCT100 Appeal to secure 100 plus Defibrillators in the Rhondda Cynon Taf area. Welsh Hearts have also teamed up with ‘Jack’s appeal’. In 2012 Jack Thomas, a fit and healthy A* student who had represented Wales all across Europe in Taekwondo died suddenly from an undiagnosed heart condition. Jack’s death came as a complete shock to his parents June and Grant as Jack had never been ill. Working together with Jack’s Appeal Welsh Hearts go into Secondary and Primary schools teaching CPR and use of a Defibrillator and basic first aid training for younger pupils. Every week 12 young people in the UK die suddenly from an undiagnosed heart condition. Welsh Hearts wish to address this and from January 2016 will be running heart screening sessions for those aged 14-35 years to detect any heart abnormalities. The sessions will be free of charge and offered throughout the whole of Wales. Welsh Hearts have also established a partnership with the WRU to make sure that every rugby club in Wales will soon have a defibrillator and all the members to be trained in CPR.
To date 40 Rugby Clubs have emergency life saving equipment installed in their club and the confidence on how to perform CPR! The charity also works with other sports clubs throughout Wales to provide defibrillators and CPR training! Sharon Owen, Charity Director and founder has worked in the charity sector for over 15 years and felt that more needed to be done in Wales to tackle heart disease. Sharon was also inspired to set up the charity because at the age of 11 during a routine check it was discovered that she had a heart murmur. Although Sharon has been lucky that the heart murmur has not caused any health issues, she was thankful that it was detected as it has meant that she has been more aware of the choices she has made in life. Sharon has also lost loved ones to heart disease which also spurred her on. Welsh Hearts do not receive any funding and rely solely on donations and fundraising activities. Despite her full appointments book, we managed to catch up with Annie Cartwright, Director of Skin and Face Clinics in Llandaff, who is helping to shape the future for aesthetic practice in the UK.

The phone hasn’t stopped ringing at the new Coach House Clinics in Llandaff since they opened last year, but Annie Cartwright told us she is still passionate about being the best at what she does. We asked Annie why advanced training is essential for aesthetic practitioners? I don’t think we should ever settle for being ‘good enough’. The market leaders in aesthetics long-term will be those businesses with well trained experts who can pave the way for safer cosmetic procedures that offer more natural looking results. The advances that have been made in the technology of dermal fillers and the way injections are done, mean that we can achieve cosmetic results to improve the appearance of the whole face, including areas such as the chin, that were previously only addressed by surgery. Improvements can be made to the jaw line, chin and jowls, often key features of an ageing face. For the advanced practitioner, the days of chasing away simple nose to mouth lines are long gone. We are now doing advanced facial rejuvenation, rather than simply filling out lines.
What training have you delivered in 2015? This year, in my role as an ambassador and trainer for the UK’s leading supplier of cosmetic products, I’ve delivered training across the country to other practitioners at intermediate and advanced level; teaching injection techniques based on the ‘Facial Codes’, a methodology to rejuvenate the face with the safest and most effective techniques, producing a natural-looking result. I think you should never waste a learning opportunity to stay ahead, and the safety of your client is always paramount. I was delighted to be the keynote speaker at a recent Journal of Aesthetic Nursing conference, highlighting the changes to the code of conduct for nurses, aiming to raise professionalism and improve education among those practicing aesthetic medicine. Aesthetic practitioners need to get better at evaluating why they do what they do, whether treatments are safe and effective, and this means being up on the latest research and best practice.

So what difference has opening your own clinic made to your working life? Working independently has given me complete freedom to make my own choices about the quality of service I provide. Yes, longer sessions, usually between 45 to 60 minutes per appointment if necessary, have certainly improved treatment results. We chat to one of his clients, Amanda Coombes, to find out more. How did you hear about The Weight Care Centre? I noticed the advertisement on the back cover of the City Life Cardiff magazine. It grabbed my attention immediately. What made you want to go there? I knew I needed to make a life change, so when I saw what the Weight Care Centre had to offer in terms of a personal trainer diet plan, it drew me in. What plan did he suggest for you? Dr Essam suggested a weekly diet plan for me. It’s actually healthy eating mostly - cutting out carbs. He told me I need to drink five glasses of water a day. He explained how regular exercise and a healthy diet would help restore my metabolism. It most certainly has and, in conjunction with the non-evasive liposuction, has been very successful. How long have you been following the plan? I’ve been on the plan for about seven months and now on a maintenance plan. I am now on a treat day, which is well worth the wait.
Have you noticed an improvement in your weight and body in general? Oh yes, a significant difference. I have lost well over a stone and a half. I feel fitter and more alive. It has put me on a different road. My legs are becoming more toned and I generally feel improved everywhere. Have you noticed a difference in your confidence? Yes as you feel better within, it shows on the outside too. What have the differences made to your lifestyle? I walk regularly now. I always ate well before but am more conscious than ever now. I go to the gym twice a week. I drink water first thing in the morning then throughout the day. It makes a real difference to how you feel. I eat more fruit and leaner meats. I have got to a stage now where I can have a treat day, and eat what I want within reason! I will never go back to how I was. It’s all about progression now and I intend to continue to go to the Weight Management Care Centre. 36
Would you recommend The Weight Care Centre to others? Yes indeed I would. You have to budget for it. But when you’re in a better place with your weight, you might at this stage be able to afford a smaller package. Currently I am having two sessions a week at £7.50. They are worth every penny. I love my trainers Amy and Sarah. I was the most unnatural person in the gym. It must have been hard for them the day they saw Daffy Duck with two left feet enter the gym. They have persevered and remained calm throughout. I believe that I’ve improved and I do feel I have more of a natural affinity with yoga now. I couldn’t recommend Dr Essam and the Clinic highly enough.

Chiropractors use their hands, orthopaedic and neurological tests, and, when necessary, X-rays to locate joints that are misaligned and not moving properly which can cause nerve interference. These restrictions/ interferences are called subluxations and can lead to a range of health issues. Chiropractors use their hands or other techniques to free these ‘stuck’ joints. This release is called an adjustment. Once the joints are moving as they should, nerve interference is reduced muscles can then start to work normally and the spine gradually returns to its optimal working condition.

When was Wales Laser Clinic set up? What’s the background to it? The clinic is brand new. My background is in general practice but I have always had an interest in cosmetic medicine; I’ve helped to set up a number of clinics but I wanted to incorporate a purpose built, regulated, safe and effective tattoo removal and cosmetic clinic. We’ve invested in the very best machines available and a doctor will carry out the treatments here; to my knowledge this is the only such clinic in Newport. What should our readers consider when thinking of laser treatments? We cannot stress enough the importance of safety and in choosing a fully registered and insured clinic to carry out your treatment. The potential damage that unsafe clinics could cause patients is unimaginable. I have seen a number of people who have undergone unsafe treatments and now have scarring to prove it.
Healthcare Inspectorate Wales (HIW) regulates and inspects NHS and independent healthcare organisations in Wales against a range of standards, policies, guidance and regulations. Being a new clinic we are just completing the inspection and regulation process. That way we can provide reassurance that our practitioners understand the importance of safety, and have trained for many years to gain their qualifications. Safety is always our main concern. And how will they know if they’ve chosen a trustworthy clinic? Any qualified laser tattoo removal specialist will tell you that you need a specific type of laser to remove tattoos. The laser you would use for removing a tattoo would be very different from a laser for hair removal or other medical procedures. We have a brand new state-of-the-art machine, which is the most powerful laser in its class. Wrinkle reducing injections have increased in popularity year on year. It is now accepted and part of many peoples beauty regime. Having over eight years experience in such treatments allows for less side effects and greater patient satisfaction. Another treatment, for which we are getting increasingly busy, is for removal of semi permanent eyebrows. TRENDSETTERS Hi Adele, it’s so lovely to see you again. Can you talk us through what’s on-trend in the world of waxing at this time of year? As we enter the party season, everyone is thinking about how they’ll look in that little black dress. Whether it’s Christmas get-togethers or New Year celebrations, us girls want to look good and feel fab in our favourite frocks. As such, lots of women like to wax their legs and underarms - for that total body confidence when wearing their favourite dress.
What does waxing have over shaving? Our clients pay a lot of attention to their grooming. They don’t like unsightly stubble and they enjoy the confidence that comes from having super soft, hair-free skin for weeks at a time - shaving can’t really compete with this. A good wax will keep you hair free for up to three weeks. In comparison, a razor job lasts just a few days. What’s more, unless you have lots of time and you’re pretty flexible, a wax will be more thorough than the DIY shave job you do in the shower.
That said, we’ve found the hottest look right now is a ‘Hollywood’ - and that’s across the board. From students to our more mature clients, it seems everyone wants to take ‘everything off ’ down below! Julie, we love your new premises please tell us what you’ve been up to since we last saw you? Well, as you’ve mentioned we’ve recently moved our salon next door! Our original premises served us well but we felt restricted in the opportunities to develop the salon in the ways we wanted. We’ve now been able to create three separate cutting and colour zones and managed to make this larger space feel comfortable, relaxing and personal without losing the friendly atmosphere our clients love. The ‘White’ room can be used as a VIP area and is perfect for bridal parties looking for a special experience – you even get to choose your own personal music playlist to listen to while we make your big day begin perfectly. We have also expanded our beauty area and services, so we can now look after you from head to toe. From professional make-up to HD Brows, LVL lashes, nails and luxury spray tans in our purpose built tanning room.
What product range do you use here at your salon? We use Goldwell and KMS professional products, as we believe our clients deserve the very best in salon and at home. We have a KMS ambassador working in salon so we can advise on the most suitable products for each individual client, making sure we look after their hair when we can’t be there with them. With thirteen years experience, and knowledge gained from working at a special school in Cardiff, mother of six Elizabeth Stewart has recently launched Sp1 (the name means special one), Wales’ first special needs specific hair salon.
THE SPECIAL ONE Elizabeth, it’s lovely to meet you. Can you tell us how your salon came into being? I’m a mum, and homemaker, with six children; five sons and a daughter. My fifth child (fourth son) Delroy is 22 years old and has Downs Syndrome. When Del was a little boy he had quite a phobia about having his hair cut and the only time I could achieve a trim was when he was asleep. Thank goodness his hair was curly - you couldn’t notice the mistakes! Jumping ahead a few years, Delroy has now left college. As with most people of this generation, employment is very hard to get hold of. And, believe me, even more so if you have additional needs. Marrying the two situations together, and having undertaken a lot of research, I discovered the great need for this service and decided this would be a perfect opportunity for Del to have a secure job.

Tell us a bit about your innovative salon. Sp1 Haircare is a salon specifically for people who have additional needs, regardless of age or sex. The general feel of the salon is that of a mainstream hairdresser; with us offering, and catering for, whatever is requested. As this is such a new venture (basically uncharted territory), we’re prepared to grow our business in relation to our clients’ requirements. If there’s a demand for a nail and beauty section, we’ll oblige.
We’ve liaised with Cardiff and the Vale College to offer work placements to their hair and beauty students as well as work experience to their enterprise skills students.
Apart from the main salon, we also have a sensory area which is completely separate from the salon. We have provided this as a calming area to overcome any possible anxieties our clients may have. It can be used before, during, or after an appointment. The sensory room will also be a place of rest and relaxation if required.
With a fear of getting their hair cut being commonplace in people with special needs, this ground-breaking salon is a safe haven for people with learning difficulties such as Downs Syndrome and autism. So come on Cardiff, spread the word.
We employ two full time stylists, and two part-time staff members who have additional needs themselves. All our staff members will have Makaton sign language training; which can help people who have limited speech and who cannot, or prefer not, to sign. And, whenever possible, we use any distraction techniques that parents and carers find effective. 50
Delroy is very excited at his new found role as manager, and we’re all hoping this will be our flagship salon and the first of many. There are many ‘Delroys’ up and down the country; we relish the thought of being in the privileged position of giving meaningful employment to them.

It’s been an incredible 15 months and a rather manic summer here, with the new intake of University Students for this academic year all competing for the best students houses or room shares. We have taken on more new landlords and managed properties than I thought possible in a short space of time as well as new staff to manage the demand.

Having worked in the industry in the area for eleven years I have a number of really loyal landlords that have supported Lettings Angels from day one. We also have a huge number of referrals from landlords and word of mouth recommendations, this has allowed allowed us to take the brand from a small to major agency in the area averaging fourteen lets per week in the last quarter.
This is not the first success you have had with a university student is it? That’s right, Jessica Braden joined us last year as part of a work placement through Cardiff Metropolitan University and has, subsequently, been employed on a full time basis during the holidays and part time now she is back studying her third year in Business Management and Finance. We also employ A level student Georgia Prothero who works weekends and over the school holidays around her education commitments. I feel the younger team members bring so much energy and fun to the office;
What is it that makes your customer service standout? All of our staff really care about each individual, whether they be a landlord, tenant or applicant, and we ensure that their demands are not only met on a professional level but also a personal one. We have amazing feedback from tenants week in week out commenting on how they have never dealt with an agency like us. There seems to be some new faces around the office? Yes, for some time, I have been looking for a special person to take some key responsibilities away from myself so 57
So with young members progressing through the ranks, will you be opening a second branch soon? Given our huge internet presence and ability to target any type of demographic, and our high success rate in obtaining high quality tenants for properties ranging from cheap and cheerful room-shares in Roath to executive detached homes in the Vale of Glamorgan, I do not see the current benefit in opening a second lettings office. However, we are in the process of finalising the details of launching Sales Angels next year which will be pure residential sales. So when you’re not busy with Lettings Angels and drawing up plans for new sister company Sales Angels, what do you do for fun? When I’m not in the office I do enjoy gardening and baking. I used to enjoy showjumping but had to sell my horse due to the time commitments that comes with running a company, however I am now getting into the world of motor sport and have jointly purchased an Mazda MX5 which I hope to be able to race next year with a few more lessons! We said we’d be back, and here we are. Intrigued by Manager Richard’s mention of freestyle in our last issue we’re here to find out more about what’s going on at the home of Snowsport Wales - Cardiff ’s Ski and Snowboarding Centre in Fairwater.
CARDIFF SKI & Our brand new freestyle features are all made by a German company called Schneestern, who are responsible for the features found in many of the biggest and more famous parks across the world. They are all full-sized features, fully adapted to dry slopes in order for us to offer the best quality and safest experience possible.
Hi Richard, we can’t keep away; the snow sports bug is getting to us. Last time we chatted you mentioned freestyle skiing, can you tell us a bit more about that please? While we believe we are already the leading freestyle ski slope in Wales, our aim is to become a more prominent slope in the UK through freestyle. This winter we’re holding large freestyle competitions that we hope will attract people from all over the UK. There will be a Welsh open for athletes looking to find a place on the Welsh team, and another massive end of season party similar to Pretzels and Jam which was the rail jam we held in April.
We will be the only dry slope in the UK to feature a professional and purposebuilt stair section, for those looking to develop urban riding (and because they look super cool).
Do you have any other activities here in addition to skiing? Other than skiing and snowboarding, we offer super-tubing. This is where you head to the top of the slope with a big rubber ring (like the ones you get at a water park, but with a plastic bottom) and then slide down- forwards, backwards, sideways, spinning around, in a pair, as a train, over a jump etc. Tubing is much more popular in the summer, when we run drop-in sessions every day, as well as hold private birthday parties, staff events or charity activity sessions.
Our features will also include an 8m butter box, a 6m rainbow box, a 8m roller-coaster box and an 8m industrial pipe for the more advanced (like the ones seen at the top section of the slopestyle course in the Olympics last year), as well as a few others that we can chop and change around to offer a huge range of options and courses.
We’re hooked by the sound of it all. How should we decide whether to start with skiing or snowboarding? It really depends on you as a person. Both sports are super accessible to anyone and everyone; however I’d recommend families with young children try skiing first.
As we’re organising these competitions, we’ve also built a viewing platform and bbq area to make spectating just as much fun as taking part (and believe me, watching freestyle skiing and snowboarding really keeps you on the edge of your seat).
Legend goes that it’s easier to learn how to ski: this is probably because you’re going forwards rather than sideways and everyone knows how to stand up on two separate feet, so it’s less foreign than snowboarding. You can also look at it in terms of how you learn:

SNOWBOARD CENTRE When you learn to ski, you learn the easy way first and the hard way afterwards - so it takes a lot longer to get really good. When you learn to snowboard, there’s only really one way - the hard way. But once you’ve got it, the whole mountain becomes your playground.
Lastly, you have to think what you want out of it. The only thing skiing and snowboarding have in common is that they go downhill over frozen water. The way you do it, the way you approach the mountain and experience the mountain is completely different. Again, if I were to generalise (and this is in no way set in stone at all as snow sports are so diverse and creative) skiing benefits speed, technique and precision while snowboarding is all about playing, exploration and cruising around with your buddies. Never been skiing or boarding before and not sure how to get started? Or want to brush up on existing snow sports skills? Skiing and Snowboarding sound like amazing hobbies that can be done all year round - and now we know that you don’t need snow to enjoy sliding downhill, we’ll be back!

Hi Mark, how are you feeling after the news of the recent planning decision for Lidl? We’re thrilled that what will be such an impressive development has now been passed by the planning committee and will be built directly opposite our current site. The supermarket itself will be built above more than 100 parking spaces and we’ll be ideally situated for their customers to buy their fuel and buy or rent vehicles.

So what services do you offer here at the garage? We now offer used vehicle sales, but still majoring on Vauxhall products as we were a Vauxhall main dealer for over twenty years. Also we have workshops at the rear of the showroom in the Tivoli (an old cinema), and a Texaco branded petrol forecourt coupled with a Mace local convenience store. Finally, in the front of the showroom are the
My own desk is in the showroom - it’s my name over the door and we have an enviable reputation for customer care going back over thirty years. We expect to, and do, see customers over and over again; their families and the next generation of those families.
What makes James & Jenkins different from other garages? We’re family run through and through (my Sales Manager is my brother-inlaw), and our whole team look after our customers with that ethos.
What advice can you give to any of our readers thinking of buying a car? Check the full service history, including any accidents, mileage, number of owners, and it’s condition. First impressions count, does it look well prepared and cared for - if not move on. What’s the car sales climate like at the moment? It’s been a very good year for new car sales; as reported by the registration figures. Used cars have not had the same level of interest in 2015. We did suffer from the emptiness of our old site opposite which was redundant however, we look forward to welcoming our new neighbours in the not too distant future and intend to take full advantage of the opportunity.

Imagine getting dressed for your own event without worrying about any aspects of the food; from shopping, preparation, cooking and serving - even to clearing away and washing up. Sounds like dinner party heaven to us, so we popped over to chat with Nick Collins, Chef and Founder Director of Grate Catering and The Pickled Radish, Laleston (and participant in BBC Masterchef, The Professionals).
GRATE CATERING Please tell us a bit about your background Nick. What led you to setting up The Pickled Radish and Grate Catering? I started out in the kitchens of Le Manoir aux Quat’Saisons for Raymond Blanc at a young age. This gave me a real insight into the attention to detail and what it takes to achieve perfection.
My experience encompasses working in restaurants, gaining 2 AA rosettes in a country house in the Vale, catering for celebrities in a five storey luxury chalet in Courchevel 1850, and cooking on a super yacht in the Antibes. Following all of this I became a development chef for a national contract caterer, however driving around the UK all week took its toll so I decided to base myself in my home country of Wales and, seeing a gap in the market for high end fine dining, Grate Catering was born. Looking for a kitchen to base myself in, I found the Laleston Inn and so I launched The Pickled Radish there.
Business grew quickly and we realised we needed another kitchen to keep up with demand, so we took on a unit in Caerphilly and built a state-of-the-art production kitchen there. I’m delighted that this has just been awarded five stars from the council, as has our restaurant in Laleston. What type of events do you cater for? We will cater for any event. We excel at weddings, taking our time with the bride and groom to discuss what they want and bring their dreams to life. We have a large team of chefs, all from a rosette or Michelin standard background. We also cater for many corporate clients around Cardiff and the Vale who have private lunches, dinners, and canapé parties or working lunches. We serve our food in a fun way which will bring a smile to their day, and we take pride in our food being nutritional, seasonal, and of course homemade. We’re currently focusing on contract catering, so look out for that launching in the workplace in 2016. 64
Where do you source your food? I have instilled the ethos in my team that our food must not only be local, but it has to be excellent and local. There’s no point having poor quality meat just because the butcher is in your village.
We are blessed in having amazing suppliers; our butcher, The Farmers Pantry, are some of the best butchers I have ever come across - the meat is always perfect, and local to their farm in Llantwit Major. We aim to use everything Welsh in our business from our flour which comes from Talygarth Mill to our oil - we only use Welsh pressed rapeseed oil, from Blodyn Aur, which has some amazing health benefits. What are the advantages of using a home catering service? There are so many benefits, the main ones being that it’s time saving and stress free. Having a private chef to cook and serve for you has that wow
factor, and can cost less than eating out at a restaurant. We arrive with all the food prepared and finish it off in your kitchen and then clean up like we were never there. We also have amazing front of house staff to serve our clients which adds to the experience. Sounds lovely, and something we’d love to experience. In the meantime, what’s happening at the Pickled Radish over Christmas? Throughout December we have a festive themed three course menu for £29 per head or a five course taster menu for £45 per head. Also, we will be open on Christmas Day for our Christmas taster menu experience which is a celebration of everything Christmas could possibly throw at you. Our events team are also busy with some large private dinners in December; one for Max Boyce, and some pheasant shooting parties on a luxurious private estate in the Brecon Beacons.
Our events chefs will also be flat out on Christmas Day catering at some private homes around Wales. What’s the most unusual event you’ve catered for? That was a wedding where our clients wanted 100% black and white themed food. It was a challenge but it actually looked very elegant. And last, but not least, if you could cook for anyone, who would you choose to cook for – and why? Christmas and New Year are the perfect times to use ingredients which are in season for cooking up delicious recipes to impress your friends and family. Head Chef at Holm House Hotel, Penarth, Ceiran Thomas, shows us how we can create a stunning dessert which not only looks stunning but tastes even better.
CHERRY PICKED INGREDIENTS For the chocolate n 250g Welsh double cream n 250g Welsh milk n 100g Welsh free range egg yolks n 50g sugar n 250g chocolate (70% dark)
CHOCOLATE & CHERRY FOREST
For the cherry puree n 200g dark cherry puree n 1g agar agar For the branch n 60g Welsh craft beer n 12g egg white powder n 45g icing sugar n 5g cornflour n 25g fine welsh flour To garnish n Cherries preserved in kirsch n Coca nibs n Halen Mon sea salt flakes n Local wood sorrel (this is optional) METHOD For the branch Mix beer, egg white powder, icing sugar, cornflour and fine flour and rest the dough for two hours in cling film in the fridge.
For the chocolate Bring milk and cream to the boil. Mix egg yolks with sugar until pale. Pour boiling liquids over yolk mix constantly whisking - bring back to the heat and mix continuously until the mix reaches 86°C, allow to cool until 50°C and blend in chocolate with hand blender. Line a tray with cling film and set the mixture in the fridge for three hours. Pre heat the oven to 160°C
For the cherry gel Bring the cherry puree to the boil and whisk in the agar agar and boil for 3 mins. Remove and set in fridge for 30 mins.
We had the pleasure of sampling this dessert after our photography session. Our photographer said that the images don’t do this dessert justice. It is gorgeous.
For the branch Shape the dough into a branch shape and bake at 160°C for 6 to 7 mins.

To assemble Blend the cherry gel mix and put in a squeezy bottle - cut the chocolate into rectangular portions, swipe 10g of puree across the plate, place the branch on the plate and place the chocolate neatly on the swipe. Add a few flakes of salt and decorate with dots of cherry puree, preserved cherries, cocoa nibs and wood sorrel. 66

Independent coffee shop Le Rendez-Vous opened in 1995 and has been serving freshly baked baguettes and coffees ever since. We popped in to wish owners Paul and Jo Bainton ‘bon anniversaire’ and, with the fabulous aroma of fresh coffee in the air, stopped for a quick chat.

“ They take pride in sourcing good coffee from local suppliers” Congratulations Jo on your twenty years in business - that’s a truly great achievement. How have you seen your coffee shop develop over the years? Thank you. At the start there were just three tables either side of the kiosk in Queen’s Arcade - eventually, as the business grew, more tables were added and then Paul asked the centre management if it would be possible to put some tables outside. After the first year of trading we had twelve tables inside and fifteen outside, but still couldn’t keep up with the demand. On the weekends we had fifteen staff working underneath the escalator, baking bread and making the fillings.

We eventually expanded to a larger unit directly across from the kiosk, keeping both the kiosk and the new unit open but working together. Our lease was due to expire in 2013, so we decided to close the kiosk and have a major refit of the large unit, upgrading the decor as well as our food options. How do you compete with the big coffee shop chains? When deciding to upgrade we had to look at what we could offer that was different to the national coffee chains. When Paul and I go on holiday, I love to sit and have a coffee and Paul loves to sit and have a beer! None of the chains are licensed so we decided to apply for one, which was granted last September, and has proved to be very successful especially during the Rugby World Cup! We also aim to offer a larger, fresher and more flexible selection of food. 68
All our baguettes are baked on the premises throughout the day and so, when served, are never more than an hour old. Our baguettes and sandwiches are all made to order so that customers can have what they like - we always try our best to accommodate all requests. We also have a large selection of Panini, Ciabatta and Focaccia prepared daily, and we can also make these to order for any dietary requests.
Where do you source your coffee? Ferrari’s Coffee, Bridgend have been our coffee supplier for the past 25 years. Carlo Ferrari has shown Paul, myself, and our son Blair around his factory demonstrating how he roasts all the different beans. Whilst we were there one day, Paul noticed a small coffee roaster in the corner of the factory, which turned out to be the original roaster that Carlo’s grandmother had transported over from Italy when they first came here. Paul asked Carlo if we could display this roaster and it now sits proudly in our front window. Can you tell us a secret about Le Rendez-Vous? When Dr Who returned to our screens with Christopher Eccleston as the new Dr Who, they were filming outside in St John’s Square.
One evening at 11pm we had a phone call asking if it would be possible for us to open up the kiosk and set all our tables out. The director was filming and wanted the coffee shop to look open. We set up as requested and we can be seen in the background of one of the early episodes. TESTIMONIALS

Hi Darren, we love the look of your new addition. What made you decide to expand the business? Thank you. The Deli has been a lifetime ambition of mine and I’m thrilled to finally be able to realise my dream. Many of our customers were asking where they could buy local produce and I saw the natural symbiotic relationship between our café bar and a deli. There’s definitely a gap in the market for quality products, sourced from local independents that you won’t necessarily find on other stores shelves, or indeed in supermarkets.
We love the ambience of the Gutsy Goose - relaxed, informal, and evolving throughout the day. Yes, the mood and customers certainly change through the day. The café bar is so popular which we put down to our great food and service. Our menu is modern, honest, British food made with fresh ingredients, flair and style. Our all day dining experience starts with high class breakfasts including our much loved Full Welsh and Eggs Benedict - then moves on to lunches (via morning coffees and cake of course - our homemade brownies are to die for); gin and tonic battered fish and chips, pie of the day, burgers (including our much praised lamb kofta burger), all of which are homemade. We also have an excellent list of daily specials so remember to look out for those on our blackboards. 70
A new addition to our daytime menu will be afternoon teas, which we’re looking forward to as much as our customers. Our chef has a long history in top end establishments but, as we’re an independent and not a chain, he works with complete freedom on our menus and his passion shows in our food. The new deli serves food to go; delicious freshly-made sandwiches, mouth-watering cakes, gourmet coffee, homemade smoothies and milkshakes all to sit in or take away. We know you have your hands full with this new baby Darren, but any further plans for the future? This is a new chapter in my life and I love it. A good pair of leather boots are a must and a pair of black shoes with block heels are much more wearable, we will be introducing fabulous new footwear in the boutique very soon! A little box jacket in black or a neutral colour is great for throwing on over a dress or jeans and they’ll take you absolutely anywhere. A little leather jacket would be a great investment too. The little black dress is a given but don’t be scared of colour - a little red dress will also serve you well! 72

November was Pancreatic Cancer awareness month. Purple Lights for Hope presents an opportunity to celebrate the lives of loved ones dealing with a pancreatic cancer diagnosis and to remember those who have sadly died of the disease, whilst also spreading a message of hope.
THE COLOUR PURPLE Purple Lights has captured the imagination of patients, families, health professionals and campaigners since its launch last year when sixty landmarks and buildings were lit up in the UK, including the Trafalgar Square fountains in London, the SSE Hydro in Glasgow, the Brighton Wheel and the Spinnaker Tower in Portsmouth. This year the number is near to double that.
Linda Reardon contacted Cardiff City Council for their help as they lit up for Pancreatic Cancer awareness last year. On 1st November, thanks to Geoff Cook and Stage Lighting, City Hall, Cardiff was bathed in a purple hue, and looked spectacular. The images can be seen all over social media by searching #purplelights. Friday 13th November was World Pancreatic Cancer Day. A chance for people right around the World to join and remember those lost, support those fighting and to raise awareness. With that aim, iconic buildings were bathed in purple light in support - from Niagara Falls to Sydney Opera House. Lynne Neagle, Assembly Member for Torfaen, and Linda Reardon, together with Linda’s Grandson Santino Palmieri, Andrew Forster (a Pancreatic Cancer patient) and his wife Elizabeth, stood on the steps of the Senedd from 4.30pm as it turned purple, raising awareness of the disease with passers by. Linda Reardon said, “I am so grateful to the Welsh Assembly Government for lighting up the Senedd in purple to mark World Pancreatic Cancer Day. The Senedd looked stunning and could be seen clearly from Penarth and surrounding areas. I am so glad that Anita Jane Harris was able to capture the pictures despite the weather being particularly bad with heavy rain.”

Pancreatic Cancer is the fifth biggest cancer killer in Wales and, sadly, is on the increase. It is projected that by 2020 it will be set to overtake breast cancer as the second biggest cancer killer in Wales. The survival rate is just 3.7%, and that figure has not changed in over forty years. Linda Reardon lost three members of her family to the disease in the space of five years. Her mother, Lynne Ball, passed just seven weeks from diagnosis. Linda runs two online support groups on Facebook - Team Wales for Pancreatic Cancer and Families in Support of Pancreatic Cancer. There is also a support group that meets on the fourth Friday of the month at St David’s Hospice, Newport, from 1.30pm to 3pm. If we are ever to see survival rates improve we really do need to make people aware of the symptoms. 73

We would particularly recommend the couple’s massage – sheer bliss! Other areas for guests to enjoy include the fairy-light bedecked roof terrace and roof top champagne bar. Lunch, snacks and refreshments are available in this stylish setting throughout the day, accompanied by chill-out music and resident DJ every Friday from 5pm. After creating Superman inspired jewellery and an unbreakable wedding ring for Laurence Fishburne, Cardiff jewellery designer Neil Rayment really is flying high.

As a fan of the superhero and friend of the film’s star Laurence Fishburne, award-winning goldsmith Neil Rayment wanted to create an out of the ordinary tribute in the shape of Kal-El’s Crystal - an homage to Superman’s birthplace, a timeless classic, expertly crafted in platinum and diamonds. “I was looking for something spectacular, I’m a huge fan of Superman and the franchise featured heavily in my childhood,” says Neil, owner and artistic director at Advanced Jewel Craft. “What better place to seek inspiration than the birth place of Superman?” Advanced Jewel Craft attracts clientele as sparkling as its bespoke pieces. The iconic brand has slowly blossomed since its inception in 2004 and is now a firm favourite amongst A-listers from LA to Abu Dhabi. Oscar-nominated actor Laurence Fishburne is one of Neil’s most prestigious clients. The pair met when Neil briefly switched jewellerymaking for acting and appeared alongside him in The Matrix sequels. Neil was honoured to be tasked with designing and creating Laurence and his wife Gina Torres’ wedding rings.

One of Hollywood’s real diamonds Laurence kindly took time out of his busy schedule to explain more about his experience of working with Neil. How did your friendship with Neil come about? We worked on The Matrix sequels together. We became friends on set and then I found out that Neil’s passion was for jewellery design. Have you kept in touch? Have you been over to Wales to visit him? Yes we’ve kept up with each other but still have not made it to Wales I’m sorry to say. I’ve heard that it’s a very beautiful country.

Neil designed and made your wedding rings. That’s a high pressure assignment - how was he to work with? He was terrific. The basic design was worked out between Neil and my wife. We’re delighted with the result. Can you tell us a little about the inspiration behind the design? Gina wanted something that would be unbreakable for me. I’m a would-be drummer, so I’m always beating things to hell. The platinum band and three diamonds are all a reflection of my personality and style. How involved were you in the design process? I’m very creative but I really felt it was best to trust both Neil and Gina on this one. It was our first custom jewellery experience. Neil often takes inspiration from films. If you could challenge Neil to design jewellery based on one of your previous films, which would it be? Probably King Of New York. I think that would be an interesting challenge for Neil but one I’m confident he could rise to. Created in his Cardiff Bay studio, Advanced Jewel Craft’s pieces are beautiful and exclusive. Neil adopts a personal approach, forging firm relationships with his customers. And while he works with A-list clients, his feet are firmly on the ground. “Jewellery is something that needs personal attention,” Neil says. “You can get entangled in the glamour, the parties, the shows, but the most rewarding thing is to see someone wearing one of my pieces and the pleasure it brings.”

Brogolais Day with joie de vivre We’ve been to a few Beaujolais events in our time and can honestly say this was the best yet. Chris Macnamara of The Brogue Trader organised the event and 178 people enjoyed a fabulous three course meal (Spiro’s Catering) at the iconic Parc Hotel in Cardiff complemented by some excellent bottles of Beaujolais. Guests were treated to live entertainment and a Q&A with three of Wales’ most talented international rugby players. The event raised over £10,500 on the day for George Thomas Hospice and that has been generously matched by Julian Hodge bank taking the total raised to over £21,000 - quite an achievement. Madame Wax celebrates first birthday Madame Wax wanted to do something a little different for their first birthday party so they raised money for the two dog charities they support. All of the staff have dogs, so it’s a charity close to their hearts. They raised £1,260 which was split between the Welsh RSPCA and Cardiff Dogs Home. POACHED JERSEY OYSTERS WITH OYSTER VELOUTÉ Bohemia Bar & Restaurant provides unrivalled Michelin Star dining in the heart of Jersey. Head Chef Steve Smith, who has held a Michelin Star for over ten years from the age of just 24, has created a truly outstanding dining experience with his ingredient and flavour driven tasting menus. Bohemia has been listed as the best restaurant in Jersey and has received its highest score yet of seven in the Waitrose Good Food Guide 2016. Here Steve explains how to prepare oysters and shares with us one of his favourite recipes using this produce. Opening Large Oysters n When working with large oysters, that are too big to fit snugly in the palm of the hand, start by laying them on a cloth on the work surface with another cloth on top (The curved shell should be underneath). n Insert the oyster-knife point as close to the hinge as possible. Work it in to a depth of about 2cm. n Once the knife is in, pick up the oyster so the rounded shell sits in the flat of the hand. Twist the knife downwards and inwards to loosen the two shells and separate them at the hinge. n The meat is attached to the top shell by an adductor muscle.
Move the blade along the top (flat) shell and loosen the oyster from it without cutting into the fleshy part. n At this point oyster and oyster juices will sit in the rounded sell as though in a cup. Discard the flat shell. Washing oysters and clarifying the juices n As you open each muscle empty the juices into a bowl, expect about 200ml juice from 10 - 12 large oysters. n Pass the juice through the finest sieve and reserve. n Rinse the oysters in this juice to remove any grit or traces of shell. n Take them out of this liquid and reserve. n Sieve the juice again and store for the sauce, the poaching emulsion and the oyster mayonnaise - about 350ml in all. INGREDIENTS Oyster Velouté Recipe Serves 8 n 60g finely diced shallots n 100ml Noilly Prat n 100g oyster juices n 120g fresh oysters n 200ml double cream n 200ml crème fraîche

METHOD n Put the shallots and Noilly Pratt into a medium-sized pan. Reduce by half over a gentle heat so that the shallots become transparent. n Add half of the oyster juice and half the oysters. n Bring back to the boil and reduce by a quarter. n Add double cream and crème fraîche then bring back to the boil, take off the heat and blend. n Return to the pan and add the remaining oyster juices and oysters. Bring to the boil and take off the heat. n Add Chardonnay vinegar and blend. n Pass the sauce through a fine sieve. n Add lemon and salt as necessary.
