WELCOME

Well, who would have believed it? It’s been ten years since we launched our first issue of Vale Life magazine. This came after a bottle of wine with good friends. They suggested that with our joint skills of graphic design and public relations, we could start our own magazine. What a journey it’s been! City Life Cardiff came shortly after. In the early years we accomplished this with just three people. It wasn’t easy! Two years ago we published Wye Life and, more recently, West Life. We quickly realised that we needed help. So, we have become employers to salespeople, designers, copywriters and distribution people. We are continuing to grow and will soon be launching our latest addition, Gower Life, with further titles on the drawing board. As anyone in business will know, running one is hard. You never switch off, you work much longer hours and are always juggling the work/life balance (which isn’t always achieved!). I know it sounds cliched, but being able to meet so many interesting people, and being able to provide careers for hardworking people makes it all worthwhile.

We’re a great little team and we couldn’t do it all without them. Not forgetting hearing from our advertisers that the work we do helps make their tills ring. It doesn’t get any better. We still get the same thrill when seeing someone read one of our latest issues as we did when our first magazine was on the streets and can’t see that changing. Onwards and upwards as they say! Choosing a venue for your wedding is the first step to creating a truly unique occasion but, with so many to choose from, how do you know which one will be the right one for you?

HOLM HOUSE

Nicole and Jaimie Hepburn chose Holm House for their big day on the 2nd December 2016. Here Nicole tells us why it was the right choice. What do you both do for a living? I am an Operations Manager at Deloitte LLP and Jaimie is National Consultant Manager at Stream Claims Services. How long have you been together? We have bene together for six and a half years. Where did you meet? We met though friends on a night out in Cardiff. How did Jaimie propose? He took me to London for the weekend to see my favourite band. The next day we were walking along the river just near Tower Bridge. He had to force me to sit down as I was so cold and just wanted a tea (apparently I didn’t make it very easy for myself) as he ‘wanted to show me something’.

So, we sat on a bench and he popped a Tiffany box on my knee! Why did you choose Holm House for your wedding venue? Holm House was my first choice, once Jaimie proposed. It is such a beautiful venue. It is in Penarth, which is my home town - it’s in a lovely setting and grounds, and an ideal size for us. We didn’t want a big wedding and it meant that everyone could stay over and we could all have breakfast the next day together. The venue had looked so pretty the previous Christmas, it was exactly what I wanted. Did you shop around? A little, but that’s because I didn’t think we could afford a wedding there. Nowhere else came close really. Who was your wedding co-ordinator and how was the process? Our wedding co-ordinator was Elaine Edwards and she was fantastic. 16

I took her some bubbles and chocolates to say thanks for all her hard work as it was the most fantastic day. She decorated the place perfectly and was on hand if I needed her. Tell us about the big day. My bridesmaids, family and I got ready at my mum and dads. We had Prosecco and nibbles and a great time; presents arrived - it was fab! We got married in All Saints Church in Penarth at 2pm. The cars I had ordered didn’t show up (they had got the wrong day!) so my sister drove my bridesmaids to the church in her Clio and my dad drove my mum and I. We were late, but it didn’t matter, it was quite funny - my sister couldn’t park, so I was waiting at the church for them for ages to arrive! Then we went for photos on Penarth Pier and walked back up to Holm House. We had our dog sitter walk Danni, our dog, down for photos (she had her collar and lead embellished with flowers by our florist!

We arrived at Holm House and enjoyed drinks and canapes, then we sat down for dinner, listened to the speeches, had the most amazing six course taster menu which is something I really liked - I didn’t want the standard wedding fayre so this was perfect, so different - everyone raved about the food after. The drinks kept flowing, we had the best man and groom’s speech after dinner, then the evening guests arrived.

Holm House had put a selection of cakes with ‘congratulations’ in our room which we thought was a lovely touch.

We had our first dance about 8.30pm and it was brilliant. The DJ set up was so pretty and not tacky at all which is what I really didn’t want. The evening buffet was also a hit - Jaimie is from the East End of London so we had posh pie mash and chips and Croque Monsieur - I am a lover of all things French. The wedding cake was a tower of Welshcakes made by my friend’s nan.

Would you recommend Holm House to others? Absolutely.

The day went so quickly and before I knew it, it was 3.30am and we thought about turning in.

What did you choose as your wedding breakfast? We opted for the taster menu which consisted of cauliflower foam, scallops, seabass, venison, a selection of mini deserts (like an afternoon tea) then petit fours.

Did you have a honeymoon? If so, where did you go? We had a mini moon and went to the Scarlet Hotel in Cornwall. We are off on our proper honeymoon in two weeks to Croatia.

For 2017, residents of Penarth can look forward to a spectacular fashion week planned for October of this year. Over six days (9th – 14th October 2017) many venues local to Penarth will be hosting fashion and beauty related events, all to raise funds for the Royal National Lifeboat Institution’s Penarth station.

HAS DESIGNS ON FASHION WEEK Every angle will be covered, with opportunities to join events in Penarth’s fashion retailers, beauty product shops, hairdressers, jewellery and accessories, shoe retailers, many offering special event evenings, social soirées, receptions and of course opportunities to dress up and get the bling on! Plans are already in hand for a unique fashion show at Penarth lifeboat station to mark the end of the fashion week. With professional staging, a fashion runway, lighting and choreography the station will be transformed, we will be hiding all (well, almost all!) of out yellow wellies and crew members will mix with models to present a fashion show the likes of which Penarth has not seen before. Normally a scene of frantic activity during a launch, the crew room will become a different type of changing room and the boat house itself will instead of accommodating our lifeboats be transformed to our very own fashion venue. Whilst the focus will be on high fashion and modern haute couture, we’ll make sure that the famous yellow wellies will make an appearance – who knows, we may start a trend. ☺ Afterwards there will be an after show party at Penarth Yacht Club. With raffles and auction prizes already being donated, (but we would always welcome more!) there is ample opportunity to participate in the fundraising event. The events are being coordinated through RNLI Fundraising lead Caroline Eva.

“This is a really great and unique opportunity to help support the crew of the lifeboat station. We are so grateful for the sponsors and participants helping to support our fashion week. Our crews rely on the very best equipment, as they place themselves at risk in order to save lives at sea. By supporting fashion week much needed funds can be targeted to ensure the crews at Penarth have the most up to date, effect, and safe personal protective equipment. The RNLI fashion week will add something different to our fundraising calendar, and something that we hope to build on each year in the future”. Visitors to Penarth’s Victorian seafront will be familiar with the sight of the modern lifeboat station at the southerly end of the Esplanade. Not everyone however will know the full history of the lifeboat station. A lifeboat was established at Penarth in 1861 on the northern shore of the Bristol Channel where vessels frequently stranded on the shoals. The original ‘station’ sat just below the location of the Fig Tree restaurant, in amongst Penarth’s deckchair stall.

RNLI PENARTH With the establishment of the lifeboat stations at Barry Dock and Weston-Super-Mare, it was decided to close the Penarth station in 1905. However, in 1980 it was decided to re-open the station and a D Class inflatable lifeboat became operational on 17 June 1980 some 75 years after the original station closed. With a purpose-built station on the esplanade, Penarth RNLI now accommodates two lifeboats. The smaller ‘D’Class lifeboat, which carries up to three crew members is seen as the workhorse of the station. It’s speed and manoeuvrability make it ideal for working along the rugged coast, and the local islands of Flatholm, Steepholm, and the smaller Sully Island, which although accessible at low tide is quick off twice a day by the tide.

First introduced into the RNLI fleet in 1963, the design of the inflatable D class lifeboat continues to evolve to meet changes in demand and technology. Highly manoeuvrable and usually operates closer to shore than the all-weather lifeboats. Those who have been on the ‘D’ class will describe the ride as being like a roller coaster, and it can be quite unforgiving when it hits the surface of the sea during rough weather. The second boat at Penarth is the Atlantic 85 lifeboat, which carries up to four crew members. With a top speed of 35 knots, and a rigid hull, this lifeboat is able to withstand the very harshest of sea conditions and weather. The Atlantic 85 is part of the B-series of lifeboats, originally designed and developed at Atlantic College. 22

Penarth lifeboat station is one of the busiest in Wales, and the volunteer crews attend between 60 and 70 shouts on average each year. Calls can be to broken down vessels, first aid emergencies at sea, missing person searches and to assist people cut off by the tide – the Bristol Channel having the second largest tidal range in the world. Although not everyone in the crew has a sailing background, all are volunteers and as a crew we have a range of ‘day jobs’ - some from the emergency services, local companies, company directors and several from the marine industries. Our crew members freely give of their time and attend weekly training evenings, formal exercises and of course respond to emergencies as required, at any time of the day or night.


We are tasked by the Coastguard control centre at Milford Haven and are alerted by pagers. Depending on the nature of the calls, either or both boats may be launched, both using specially developed tractors, by members of our shore crew. There is a great community spirit within the crew – we socialise together, support charity events and as a result develop excellent team skills. We all share a desire to give something back to our community, by saving lives at sea, whilst fostering a community spirit. And that is why this year we are wholeheartedly supporting the fashion week fundraising event. More on that in the next couple of pages.

A bespoke suit can be a serious investment but it can make the difference between looking good and looking amazingly good. Fashion designer and tailor, Nathan Palmer will have you looking sharp in no time (well, in about three to six weeks). Luckily for Penarthians, Nathan has opened his own shop in the town.

How long has the business been established Nathan? Well, I used to be a professional rugby player and athlete and when I said goodbye to that part of my life, I needed something else to do. I’ve always been interested and had a flair for fashion design, so I decided to take a course at the University of south Wales. I then set up my business in 2014. Where exactly did your passion and flair come from? My godfather was also a tailor. When I was young, I would sit and watch him at work. On occasion, I would help, which he encouraged and I really enjoyed. I inherited his sewing machine when he sadly passed away.

What’s so special about having a bespoke suit made? It gives the client the choice in terms of cloth, fit and detail. I offer a made-to-measure and bespoke service which gives them the best cut for their silhouette, using exclusive cloths and linings. I work with the client to get to know their personality, their lifestyle and tailor make the suit to fit that. From personal experience, (big thighs from my rugby days), I knew how difficult it could be getting clothes to fit. I also make shirts to match perfectly with the suit. Who have your designed suits for? Anyone famous? I don’t mean to drop names but yes, I have been fortunate to work with Ian Wright, Tinie Tempah, Jason Mohammad and Graham Norton, to name but a few. 24

Describe the process. We have an initial consultation to discuss fabric choices and design. Then I take measurements and make notes. Then I go away and work on the pattern-making, fabric-cutting, hand-sewn construction and then we get together again to go over the final finishing details. All in all, it usually takes around six weeks from start t o finish. Do you have a say in the design or do clients have firm ideas? I will offer suggestions if I think a particular cloth or fabric or design would work or the client may show me a picture from a magazine that they’ve seen. It’s a two-way collaborative process. Some clients want to look quite corporate and others like to push the boat out. Another namedrop – sorry – but recently I worked with Mel Giedroyc of ‘Bake-Off ’ fame.

She wanted a sequinned, neon pink, David Bowie type tuxedo jacket but then we decided on a black sequin jacket with velvet collard and tuxedo-style trousers. She also had a traditional tails suit which she wore with a silk top hat. She was fun to work with! How do you get your business? Luckily from word-of-mouth and recommendations. I also take part in Fashion Shows and organised my own VIP fashion show which was held at Hensol Castle. That was also fun. We had rugby legend Gareth Thomas, TV presenter Matt Johnson along with other models strutting down the catwalk. It was so successful that I’m now planning a second show at the National Museum of Wales, Cardiff on 8th December this year.

Yes, there’s nothing sexier than seeing a woman in a fine bespoke, tailored suit, don’t you think? Congratulations on opening your shop in Penarth? Why Penarth? It’s where I live so it made sense. Also, I love that Penarth has a great mix of independent businesses. It boasts a Michelin Star restaurant, quality cafes, bars and restaurants and ladies fashion boutiques, so I thought it was time for a business like mine. It’s going really well so it was a choice well made (excuse the pun!). 25

What excites you about the work you do? It has to be said weddings and events really excite me and get my creative juices flowing. I love creating a style or a theme and love a project where I can create a vision that I have in my head. What has been your greatest achievement to-date? Providing arrangement for royalty has probably been my greatest claim to fame. What makes me a cut above the rest? It’s the personal touch that I give to customers. Being good at what you do is one thing. Being a people person and going above and beyond expectations is another thing entirely. Do you have any future plans that you can share? I would love to open another shop one day but the key is finding another suitable location. Watch this space!

Describe the passion behind your work? Enthusiasm! I still to this day get very excited about my job. Consistently thriving to make the shop look the best it can be at all times and, of course, my outside displays. After all, people buy with their eyes, so presentation is everything! You supply flowers to local businesses. Can you say who? I’m very fortunate to be able to work with many great local businesses including James Sommerin, Holm House, Porsche, Etc and The Hair Business, to name but a few. Who would you like to work for? I have worked for royalty which is a great coup but, without sounding cliché, to me every customer gets treated like royalty when they shop at The Florist.

It all began in 2007 when a young Chef came to Cardiff from Kerala to open his first solo project and first introduced us to his ‘Indian Cuisine Redefined.’ Ten years later and countless awards for his restaurant, Purple Poppadom, Anand George is now unleashing a brand new culinary experience for his thousands of followers. He has just launched his own travel company, ‘Kerala Chef Tours’. What stands out about Kerala compared to other areas of India? Well, I know it is the best! ‘God’s own country as we call it.’ Seriously, Kerala has so much going for it. It lies on the tropical Malabar Coast of southern India, it overlooks the Arabian Sea shoreline and has palm-lined beaches, beautiful lagoons and canals which we call backwaters. Simply fantastic and breath-taking. The cities, like Kochi where I was born, have a great buzz and I call Kochi my spiritual home, just like Cardiff is my spiritual home in the UK.

A NAND GEORGE MAN ON A MISSION Kerala is the land of his birth, but more than that it is also the inspiration for innovative dishes, in ‘Nouvelle Indian Cuisine,’ which he created at Purple Poppadom. Many of these appear in his recently published cookery book, ‘The 5,000 mile Journey.’ We asked Anand, who has also successfully broken into the world of street food with his Tukka Tuk, mobile kitchen, about his next tour to Kerala which takes place between 12th-24th November this year. “It is going well, lots of interest although we only have 8 places in total to fill so I am confident.” says Anand. Why take on such challenges when you could happily stay cooking in your kitchen like most chefs I do love the kitchen, I always will, but outside of that time, my mind is restless and I like pushing the boundaries, maybe even taking chances!

When I look back on everything, I had no specific grand plan, from the restaurant, to pop-ups, to street-food and even the book it has all been about Kerala cuisine, spreading the word. It all fits into place. So, you are on something of a mission then? I think so yes, and the highest expression of my mission is to take people to Kerala and introduce them to our cuisine at first hand, as well as the culture, heritage and beauty of the land. Why did you choose to lead these tours yourself, and not hire guides for example? Because I want people to have an authentic experience that only a local can provide and in my case, someone who has lived and breathed and practised high end Kerala cuisine all his life and with passion, so who better than me! 28

What can people expect from one of your trips? Basically, a small group tour of 350 miles through the kaleidoscope of tastes and experiences that is Kerala, over 11 days from Kochi to Calicut. The tour is very exclusive and comfortable, but you experience life far more than just on your own with a guide book. We will visit the food markets of Kochi, enjoy village life at Kumarakom and cooking demos at Marari Beach and Ayesha Manzil Homestay. Many, many experiences! We will be staying on a luxury Alleppey Houseboat for a backwaters cruise. We will see festival dances at Thalassery, experience a tea and spice plantation tour and stay at Pepper Trails at Wayanad. Never a dull moment! What of the future Chef? What other plans do you have in mind? Who knows? They just come into my head! I want to keep perfecting my food at Purple Poppadom and to get out and about with Tukka Tuk. I want to grow Kerala Chef Tours to complete the circle. In 1973, Bernard Cody established Bernard Cody Motor Engineers. Back then, like most entrepreneurs, Bernard just wanted to make a living that would support his family and do the thing he enjoyed most - working on cars.

I have to declare an interest at this point. I’m also a customer of Derek and Bernard so can recommend them highly.

\ Derek Evans joined Bernard in 1992 and the pair have worked together ever since. This year, Bernard will semi retire from the business and is handing the reins to Derek. We caught up with Derek at the Station Approach workshop near the railway station in Penarth. After 25 years working with Bernard, will you miss him? Bernard’s been brilliant to work with but he’s sixty-five and, although in excellent health, he wants to devote more time to raising money for the charities he has been quietly supporting for over 40 years. It just seemed the right time for both of us, I am pleased to have the opportunity to take over. Will Bernard have any involvement going forward? Definitely. Although the legal ownership will change, he will still be here part time doing MOTs and generally working on his own projects. He has several cars and motorcycles to keep roadworthy so he won’t be bored.

Will there be any change to the services you offer? No, not at all. We’ve earned an excellent reputation over the years so it’ll be business as usual; MOTs, servicing, repairs, engine diagnostics and bodywork. We also undertake restoration projects on all makes of classic cars. What marques do you work on? Anything and everything. There’s not much we haven’t seen over the years and we’ve pretty much worked on every brand and model there is. What types of customer do you attract? We work with private owners and have many commercial contracts. Because of the quality of the service we offer we find most of our work comes by word of mouth and customers tend to remain loyal to us. 37

I recall Derek telling me about renowned motor-sport radio broadcaster, Greg Strange, who even after moving to London, would bring his Daimler down to Penarth for them to work on it. They also renovated an Alvis from Norfolk which was subsequently voted best drophead in the country. I’m not surprised, they’ve been nothing but helpful and you get none of the proverbial BS you get from a lot of garages. Derek taking over is great news and I suspect Bernard, although he claims to be taking a back step, will keep his hand in. We wish them both the very best for the future. Mark Roberts

It takes seven seconds for us to judge another person when we first meet them, so how we dress is vitally important. This is especially important when you’re in the public eye. Nobody knows this better than Professor Roger Scully, academic, author and TV commentator.

It was actually Roger’s fiancee who suggested he might benefit from a fresh eye when it came to his wardrobe. So already being aware of Hawkes in Morgan Arcade, a visit was made and the changes have given Roger more confidence. We met Roger to find out a little more. Please tell us a little bit about your job? I’m Professor of Political Science at Cardiff University and Director of the Wales Governance Centre. My areas of expertise are UK elections, public opinion, and European and British politics. I’m a regular commentator for BBC News, LBC, ITV, Talk Radio, ABC, Radio 5 Live, BBC World Service and on General Election night this year I was working with Sky News on College Green in Westminister, analysing the results as they came in. I’ve written several academic books and papers over the years and I’ve just got a book deal for my first non-academic

book which is due for publication in early 2018. When did you know that you wanted to be a an academic? I didn’t have a career plan when I started university as a student. But I got so interested in the subject that I was studying that I wanted to continue learning about it. I ended up going to America to study for a PhD (at Ohio State University); that gave me a great training which helped me land my first job as a Lecturer at Brunel University in London in 1997. I enjoy teaching my students, and doing lectures and talks across the country, including, most recently talking to big companies about the implications if Brexit. I’ve been lucky that my job has enabled me to travel across Europe, America, Canada and Asia. How important is how you look in your industry? University professors are not famed 38

for how we dress, but I think, in all walks of life, how you dress and how you look does affect how you feel and gives you confidence. Given the outcome of Trump, Brexit and the recent UK election, do you think the political landscape in this country has become more interesting and therefore easier or more interesting to report on? Many of the major political events in the last couple of years have challenged things that analysts have long held to be true. For instance, people studying elections in Britain have long believed that not much changes during a general election campaign, and that divided or left-wing parties can’t prosper electorally. So how do we explain the success of the Labour general election campaign in closing the huge leads the Conservatives


had when Theresa May called the election? That one may take some puzzling out. How did you vote? One part of my job is to analyse opinion polls and elections. So, although I do vote in elections, I don’t ever disclose how I vote. Nor do I offer support between elections for any particular party. All I am willing to say is that I have, over the years, voted for five different political parties. What made you want to change the way you look? My fiancee wanted to see me wearing better-fitting clothes: not so much because she wanted a stylish man on her arm, but for me to have even more of a spring in my step. Why did you choose Hawkes? Originally from Belfast, Tommy Heaney started working in his uncle’s restaurant at the age of fourteen. He has cooked under a number of Michelin starred chefs including, David EverittMatthias and Ollie Dabbous. Vale Life readers may know Tommy from his appearance on BBC2’s Great British Menu.

Do you think the experience has made you a better chef? 100%. Just being around these people is inspiring and we all had very different styles so you learn a lot as well. You just can’t buy this kind of experience. What was your favourite dish? The main was special to me because it reminded me of being a kid on the beach growing up. I was also really pleased with my dessert (the second time around) and when I got a score of 10 for it I was thrilled and then to find out that it was the first 10 that Michael Smith had ever given was something else!

Tommy is our cover star this issue and deservedly so. His appearance on Great British Menu reinforced his reputation and reminded us how lucky we are to have him here in the Vale. Tommy lives in Pen-y-Fai just outside Bridgend. We caught up with Tommy over a coffee at the Great House Hotel, home to his new restaurant. Tell us about your involvement in Great British Menu. How did this come about? I’ve always watched the Great British Menu, it always looks really fun but tough at the same time. I suppose when I was originally approached for it, I was obviously a bit apprehensive about doing it but I thought, if you want to try and push yourself, you’ve got to put yourself up against the best and challenge yourself. Did you enjoy the experience? It’s probably the hardest thing I’ve ever done in my career, you’re definitely pushed out of your comfort zone!

Overall the experience was really good and meeting the other chefs was something else. You’re not just cooking for the judges but the other chefs you’re competing against as well. I’ve definitely taken a lot from it; it was great to get feedback from people who you respect like that, whether it’s positive or negative, it’s all things you can take on the chin and then go on from. What were the highlights for you? Without a doubt the people I met really great people. It’s an experience I’ll never forget. It was a real privilege working alongside some amazing chefs in the Irish heat- Eddie Attwell and Joery Castel are both top blokes. Then in the finals - Selin Kiazim, Tom Brown, Ellis Barrie, Tommy Banks, Michael Bremner, Phil Carmichael and Pip Lacey. I have the utmost respect for them all.

How do you feel you performed? I didn’t really expect to get through to the finals. I just wanted to do my best and not make a tit of myself! All I wanted to do was come out of it knowing that I’d done my best. I suppose getting through to the finals made me believe in myself a little more. Would you do it again? After the show, I was thinking to myself that it is draining. Then I had time to reflect on it and yes I would definitely do it again. I learnt a lot and I’d be more confident I think. I would probably enjoy it a little more knowing a bit more what to expect. Has being on the programme changed your life? Definitely. I have a restaurant with my name over the door now. I’d always planned on opening my own restaurant, so I’d say that the Great British Menu has helped to move the process along more quickly. The Great House in Laleston, just outside Bridgend, has always had an excellent reputation for its rooms and food. The recent change of ownership has reinvigorated this beautiful building and provided a home for one of the UK’s most talented chefs, Tommy Heaney.

“We’re not forcing the menu, just finding what’s seasonal and working with it.” We caught up with Tommy a few days after his partnership with the new owners was announced. Can we stay? Absolutely. We have thirteen beautiful rooms here so, if you’d like to dine and then explore the Vale and surrounding areas, you’d be most welcome. What do you love about the area? I really love the countryside and the beaches. I’m so lucky to have such fantastic local produce on my doorstep and The Heritage Coast is amazing. I also have a local forager who helps make my job a little easier. The Great House in Laleston, just outside Bridgend has always had an excellent reputation for its rooms and food.

Who has taken over? Sanjeev and Elinor, the owners of the Court Colman Hotel just outside Bridgend. The opportunity arose and I think they just thought it would be a lovely fit. Has the transition been easy? It has been great since they’ve come in. We’re certainly all singing off the same hymn sheet. It’s good to be working with such positive partners. Are you enjoying it? Yes, I’ve been here two years now and it just gets better. We’re all on the same wavelength. It’s really fun to be involved with and there are definitely exciting things on the horizon. What changes have been made? What was Leicester’s restaurant is now Restaurant Tommy Heaney. 42

I’m very proud of that. It’s got a more relaxed look and feel which fits in more with my style of food. It’s great having Sanjeev and Elinor as partners. Ultimately, I always wanted to own my own restaurant. Having said that, I’m not an accountant, I’m a chef, so having experienced people around me to look after that side frees me up to do what I do best. We’ve redesigned the restaurant and the menu has been updated. Don’t get me wrong, The Great House already has a loyal customer base so we’re not really upsetting the apple cart. Many of the existing customers who have dined with us since the makeover have said how much they like it – they’re certainly enjoying the food judging by the numbers of returning customers.


Originally it was the food fitting in with The Great House, now the food is leading the way and driving the offering. What will the offering be? Well, I’d like the food to be accessible for there to be something for everyone. We’re not forcing the menu, just using seasonal produce and working with it to bring out the best in the ingredients.

I think that’s what my cooking is all about. The restaurant has been named Hotel Restaurant of the Year at the Food Awards Wales in 2016 and we were delighted to pick the award up for the second year in 2017. We have also been featured in The Michelin Guide so we really want to push on and not let ourselves get complacent.

BEAUTY WITHIN The journey started thirty years ago, in converted rooms in Amanda’s parents’ home in Cardigan, west Wales. Amanda and husband Neil then moved to Cowbridge in 1998 setting up Beauty Within Medi spa in Eastgate, Cowbridge in a small rented facility with just two treatment rooms. Not long after, it was converted into five treatment rooms by Neil and his father in-law. The business grew quickly and five years later Neil and Amanda bought the Master Brewer Pub in a prestigious position in the centre of Cowbridge, opposite the Town Hall. The pub was internally completely redesigned to be an Elemis Day Spa and Cosmetic Laser Clinic. Five years later, an extension was added to accommodate five further treatment rooms, a larger changing room and relaxation room, and a rentable unit. The building now boasts fourteen treatment rooms, a Rasul steam temple, private spa bath, dry flotation tanks and its own private car park with disabled entrance. What are the owners’ specialisms? Neil and Amanda specialise in deciding what new products and treatment combinations will work best for their clientele. Neil specialises predominantly in non-invasive laser/light and associated aesthetic therapies. He is the registered manager and reports to the HIW (Health Inspectorate Wales) who regulate the use of all laser and intense pulse lights in settings throughout Wales.

Architectural Aluminium Installations (AAI) were delighted to work with Swansea based contractors, John Weaver, on a multi millionpound sports facility at UWC Atlantic College. The £4.5 million sports hall provides a new space for the international students of UWC Atlantic College to work together to improve their health, fitness, and wellbeing.

About the Hall The Moondance Sports Hall represents an extension to the College’s already extensive outdoor co-curricular provision, which embodies the original vision of the College’s founder, German philosopher Kurt Hahn. Its purpose is to encourage personal challenge, service to others, initiative, leadership and teamwork.

This is facilitated through a series of physical activities including lifeguarding, kayaking, surfing, mountain walking, emergency first aid and climbing. The Sport Hall’s construction has been in part funded thanks to generous support from the Moondance Foundation, a charity supporting children, education, issues of poverty, medical research, the arts and humanitarian projects. The Hall provides students with gym and multiuse facilitates for activities such as basketball, badminton, indoor hockey, handball and dance. GAUCI ORGANIC CANDLES What is so special about your candles then Spiro? The wax we use is made from soybeans. It is further enhanced with the finest carefully selected botanical oils, adding to its performance characteristics. All our candles use soy waxes and are guaranteed to contain no petroleum, paraffin or beeswax products and all the soy waxes we use in our candle making are 100% vegetable. Where did your passion for candle making come from? I have always had a passion for fire, flames, candles and scents. I don’t know why, but when I was little I used to visit my nan and gramps (that’s Welsh for grandmother and grandfather by the way) at their bungalow in Newport. As they were quite elderly, they would always complain it was cold so they always had a coal fire burning. I used to sit staring into the flames for what seemed like hours just day-dreaming. Looking back, that’s probably where my fascination came from so, as soon as I was old enough, I left home and got my own place. The first thing I bought for my flat was some scented candles from The Pier in Cardiff and my new flat smelled wonderful. Pretty soon I was experimenting with candle-making. Things were a little tight financially when I first started. I used to recycle the scented paraffin candle wax and pour into Pringle crisp containers with string hanging from the kitchen unit. I’m sure it was partly to save money but also an excuse to buy more Pringles! At this point, I didn’t know anything about the chemical make-up of wax – my eco-friendly thinking was to come later as I looked into it in more detail. I was also inspired after a road trip across America. In San Francisco I discovered a candle shop that blew me away! It was full of candles and smelled fantastic – so many different colours and the scent was overwhelming. I couldn’t stop thinking about it and I’ve dreamed of having my own candle making company ever since.

Where did the essential oils addition come from? My experience in America opened my mind to the possibilities of using scents and essential oils in my candles. I’d always been interested in meditation (and Karate – it’s a spiritual thing I suppose) and so this seemed a logical step. I tried meditation myself with different scents and soon got a feel for what worked well. And so began my candle-lit journey. Why is organic so important to you? I wanted to share my passion for candles but, as I had become more environmentally aware, I also wanted to make sure that what I was creating wasn’t harming the planet. So, I researched organic soy wax and essential oils to ensure they were friendly before I went any further. Now I have a small workshop where we make our candles and I couldn’t be happier. My vision is turning into a reality and, although we’re only a small business, we’re growing every day as new customers find us and tell their friends. 69

At Gauci, we really don’t want to be the biggest candle business in the world, just the best. And, if we spread a little love and light along the way, that would be nice too. Who buys your candles? I have a small but growing list of private customers. I also stock my candles in a number of independent gift shops and salons. I’ve recently been in meetings with a couple of garden centres as well and I’m hoping so see my displays there soon. My little empire is growing! When Mr and Mrs John and Elma Davies of Bridgend wanted to make better use of their conservatory, they turned to Future Ideal, Barry. Here Mr. Davies tells the story.

We were fed up with not being able to use our existing conservatory. It was too hot in the summer and too cold in the winter. The final straw came when a bird dropped a stone on our existing roof which caused damage. I tried to repair it but after the bird incident and seventeen years of wear and tear, Elma and I decided to invest in a new roof. We had obtained a quotation from a local, well known company who suggested a glass roof for £6k but that’s not what we wanted. We knew that wouldn’t solve our problem. We then saw an advertisement for Future in the local press, (we prefer to use local tradespeople), for a roof which had aluminium tiles which could transform our existing conservatory. Craig visited us and we were impressed with his ideas and suggestions.

We decided to go with Future and were then introduced to Geoff, who is Craig’s right-hand man. From the outset, the company were very professional, easy to deal with and, what we particularly liked, was there was no hard sell - there’s nothing worse. Craig even suggested we raise the roof to give a steeper pitch, which was something we hadn’t thought of. This gave the illusion of more space but also allowed the rainwater to run off much more efficiently. They also lined the aluminium tiles and plastered the underneath which means that the conservatory now looks like an additional room to our home and not just an add on. They also included 10cm of insulation so that the heat stays in a saving on costs, plus the room stays warmer. 80

We were concerned that with a closed in roof, we would lose light in our dining room but as the light from the roof reflects into the room, that hasn’t been the case - just as Craig suggested. We are both retired now. I worked as a chemist at Aberthaw Cement Works and Elma raised our two sons. We are both avid readers and are now able to enjoy spending more time in our new room catching up on our reading. We would have no hesitation in recommending Future Ideal to anyone.

Return on Investment: Headmaster, Simon Antwis of St Clare’s, Porthcawl explains why an independent school education is worth the cost.

‘V ALUE A DDED’ AND THE HALF MILLION POUND EDUCATION

Investing in a private school education isn’t cheap. The typical cost for 7 years in an independent secondary day school can be as much as £85k, and about £150k if you include Prep school, although coastal school, St Clare’s in Newton, Porthcawl boasts far more affordable fees. How do you know if this is good value and an intelligent investment? When you’re considering schools for your child, the prospectus will quite rightly extol the virtues of their academic offer but too often, they quote raw exam results and government standard measures. It used to be “% of A*-C including English and Maths” at GCSE but with the phased launch of the new numbergraded GCSEs we will see: “Percentage C+/5+ in English,” “Percentage C+/5+ in English and Maths,” and what must also be equally baffling to the uninitiated “Percentage attaining eBaccalaureate!”

You could consult league tables but ranking on these is dependent on the criteria considered and largely based on attainment measures and not progress measures so can also be misleading and confusing. I just wish more independent schools kept life simple and quoted their Value Added figures. As a parent, you obviously want to be able to compare schools but what you really want to know is the impact School X will have on your child in a meaningful and quantifiable measure. I often request politely of prospective parents, who are looking at other schools as well as ours “Ask the Headteacher what the school’s VA figures are at GCSE and A-level before you decide.” What is Value Added? Value Added is the difference between how well a pupil SHOULD have performed at GCSE/A-level and how well they DID perform. It is calculated by baseline testing pupils at various stages in their school career 82

and using data from these simple, stress-free tests to compare with years and years of previous pupils’ results (across a huge sample of schools) and their final GCSE results, to make guideline predictions as to what a pupil (of that ability and that test score) is MOST LIKELY to achieve. When the results come in, the MOST LIKELY grade is subtracted from the ACTUAL grade to give a points difference and +1 is equivalent to a whole GCSE or A-level grade. Over the journey from Nursery to Sixth Form at St Clare’s, pupils achieve a combined VA equivalent to more than a whole grade. At St Clare’s a C grade that should have been a D grade is of equal value to an A* that should have been an A grade. They are both +1. They both open doors at the next academic level, get your child into a higher performing university, help maintain their Value Added journey right until their first job and both create more opportunity for your child to start their earning

In fact, research by the Jobs website Adzuna shows a graduate will earn a similarly larger amount than a nongraduate. So it would seem that a £150k investment over a 16 year education

could be returned as a £500k return over a 40 year career.

There are excellent state schools offering good Value Added education and equally some independent schools that don’t. It’s also vital to remember what’s important for you and your child and that a Value Added education should never be at the expense of your child’s wellbeing, safeguarding and happiness. A simple search online via various social media platforms can reveal a fair amount of information about a person. It is important to review regularly who can see your social media account and what it shows, to ensure that you are not giving away too much personal information. If for example, a person pleads poverty, yet their Facebook account shows evidence of foreign holidays, or car purchases, it will not look good if that person is claiming not to be able to afford to make maintenance payments, for example. Social media profiles show a great deal about a person’s circumstances, including their living arrangements. A simple statement such as referring to “our home” could indicate cohabitation. A person could be checking in to their new partner’s location more often than not during the week, or may be openly making plans about cohabitation or engagement via social media.

Such statements could be used as evidence in court proceedings. Any disparaging remarks about a spouse could lead to defamation claims. Individuals making threats or intimidating comments on social media could face police action or could be on the receiving end of an injunction application. Deleting comments may not undo the damage as the post may have already been shared or re-tweeted. Problems may also arise in other areas as a result of ill-advised social media use. If a couple decides to resolve matters without resorting to court, whether by mediation, or collaboration, the presence of social media postings of any nature may increase conflict between the parties, and could cause the collapse of negotiations. The ability to broadcast thoughts in an instant can have a detrimental effect and so maybe people need to think before venting their feelings on social media. 84

People need to be careful even upon the conclusion of their case, and consider setting up a new email account or at least changing their passwords, especially if devices are linked via a cloud. K ITCHENS & FURNITURE When Tony and Gemma Morgan from Cowbridge were looking to design their new kitchen in their fully remodelled home, they chose Bespoke Kitchens and Furniture to carry out the work. Here Gemma tells us why.

What made you choose Bespoke Kitchens to carry out the work? We approached a number of cabinet makers in the area. Owner Simon Edwards invited us to his workshop to see a beautiful boot room in progress. As soon as we saw it we were sold! Did you shop around for quotations? Yes, I had four different quotations. Bespoke wasn’t the cheapest, but we felt that Simon had the best understanding of what we were looking for. From the beginning Simon answered our (many) emails then, once the drawings were ready, he met with us to go over every detail before work began.

Did you have a firm idea of what you wanted or did you leave it to Simon to design? We knew the style of kitchen that we wanted, and had some basic idea of the layout. Simon gave us some great ideas. We originally wanted a dresser style unit opposite the island, but he suggested creating full height units and fitting them around our fridge freezer - it’s one of my favourite aspects of the kitchen now. It’s great for entertaining as it’s open plan to the dining area. We knew that we wanted marble or quartz for the worktops and Simon obtained quotes for us from several companies in the area. We have larder units behind it which we use for breakfast goods and snacks, it all works really well. 88

What form did the process take? We initially met at the workshop, then had several emails, calls and face to face meetings at the house before Simon presented us with the drawings to approve. He was very approachable and was able to offer us advice and suggest other trades to help with other aspects of the renovation. Were any building works required? We fully renovated the house - at one point we were left with a slab and two walls! We employed a building company for the building works and managed the other trades ourselves. The full renovation took almost two years - double the time that we had anticipated!


The kitchen design was drawn up in a few weeks and Simon fitted it himself with several of his team in around two weeks. How do you know use the room as opposed to how it was before? The space wasn’t actually there before - it’s all part of a new extension that’s been added to the house but it’s a fantastic entertaining space, it’s taking me a while to get used to having so much cupboard space. We are both delighted, it’s our favourite room in the house. It’s a hit with our daughters Madeleine and Arabella as well.

Would you recommend Bespoke Kitchens to friends, colleagues, family? Absolutely, Simon has given us the kitchen of our dreams. It is the only part of our renovation that was completed on time and on budget. Simons attention to detail and customer care really set him apart from the rest.
