WELCOME There is much to celebrate at this time of year. With Christmas just around the corner, it’s the best time to spend with friends, family and loved ones. Cosying up under cwtchy blankets, watching your favourite programmes, eating wholesome, one-pot meals (and too much chocolate!). There’s nothing better. Ok, we might not be millionaires but enjoying good health, surrounded by the ones you love reminds us about really what’s important - that’s what makes us truly rich. Please shop local, it matters. Please bear in mind that your local small businesses need your support more than ever at this time of year. It’s usually around Christmas and New Year when they need your custom most it’s what’s needed to keep their doors open and we’d all be sorry if they weren’t available. So if you can support your local business - please do. Yes, it’s easier to take the car to an out-of-town retail park or big supermarket to buy what you need but please stop and think: could I get this product/ item from my local supplier? If the answer is yes, then buy it from them instead. It can make all the difference to your local community.

A new kitchen should be a pleasure to spend time in - an inviting place at the heart of the home. Having recently met with Daniel Bullock of Alexander Bullock Furniture, we can easily understand why he is the go to kitchen designer for celebrities. His reputation for creating beautiful kitchens is growing and deservedly so. We chat with Daniel to find out more. What is your background Daniel? I went to art college in Newport which gave me a great foundation in art and design. I specialised in 3D design (as it was called) which was based around using woods, metals and plastics. Specialising further, I graduated with a degree in furniture design from Northumbria University and moved back to south Wales to work. Having worked with several furniture designers and cabinet makers to gain invaluable experience, I started Alexander Bullock Furniture with the help of the Princes Trust in 1998. I opened with a small workshop in Llandaff North before settling for the last ten years at Curran Embankment. Talk us through your team… Throughout the past seventeen years I’ve been keen to share my skills and passion for furniture. I have always taken on apprentices and this long term ongoing training is still very much a part of our philosophy today.
Our team has grown steadily over the years and all of them have come through our apprenticeship program.
We also have two final year apprentices Kenton and John, and David a first year mature student.
Martin our foreman and cabinet maker has been with us for over ten years. He organises the day-to-day running of the workshop. Ashley has been with us for over eight years and is our finisher and a cabinet maker. Mathew is our dedicated installer and cabinet maker. We don’t employ sub-contractors as I feel it is difficult to get the consistent quality we require. Mathew was fifteen and at school when he came to us for a work placement. He was incredibly keen - so much so he asked if he could be considered for an apprenticeship the following year. We told him to make sure he got all his GCSEs and we would consider it. He did, and he’s been with us ever since. Jemima has only recently joined the team as my design assistant. She has a degree in Fine Art and is currently training to be a cabinet maker as well as learning the design side of the business.
What do you think is special about Alexander Bullock Furniture? I believe we offer a truly bespoke solution to furniture and kitchen design. We take time to listen to our clients’ needs and design furniture to suit those requirements. Off the back of that tailored design package our skilled and dedicated cabinet makers, finishers and installers produce high quality furniture. So often you get one or the other, but rarely both. Because each project is designed individually for each client we have a huge variety of styles, materials and finishes. Each project is as unique as the clients who commission us.

Do you follow trends? There are trends within design of course, but we try to design with the client in mind rather than following the herd.
BEAUTIFULLY BESPOKE Does this mean that you’re expensive? A fully bespoke service doesn’t have to be expensive. We are in full control of the design and production process and can tailor our furniture/kitchens to most budgets.
Why the move to the new workshop? The new workshop move has been on the cards for the past few years - there have been several benefits to moving. We wanted a better environment for our visiting clients. We wanted to improve our production and staff welfare facility. We also have the opportunity to have a fully functional kitchen space and design studio/showroom. We’re not quite there yet, but watch this space.
What kind of projects do you enjoy the most? The variety of people and projects we work with keeps me motivated. There’s always a problem to solve or a challenge to overcome. Without sounding corny, it’s the best job in the world - at least for me.

What do you love about the Vale? The Vale reminds me of growing up near a small market town. I still love the rural lifestyle, even though I live in the city. For me the coastline is incredible. It’s the one thing that sets the Vale apart from other rural locations. The stunning cliffs at Marcross are a favourite. Happy Birthday Welsh Hearts/Calonnau Cymru Saving Lives Charity at the heart of Wales celebrates its 2nd birthday with their Appeal “Every Second Counts” to get 500 Defibrillators into Cardiff and heart screening sessions for 14 to 35 years of age. Local charity Welsh Hearts Calonnau Cymru celebrates its 2nd birthday this week. Welsh Hearts was founded in 2013 by Sharon Owen and has been focusing on placing Defibrillators in communities and schools through-out Wales and holding free CPR training sessions to the public! Welsh Hearts have trained over 7736 people in CPR and have placed 235 defibrillators across communities in Wales. The aim of this is to drastically improve the chances of those that have cardiac arrests outside of hospital where the first few minutes are absolutely crucial in saving their lives. In Wales there are approximately 8000 sudden cardiac arrests outside hospital each year. It’s shocking that the survival rate is only 3%. Where an AED (defibrillator) is used, the survival rate
is 50% The charity is working with Dr Bob Baron, a GP from Tonypandy, on the RCT100 Appeal to secure 100 plus Defibrillators in the Rhondda Cynon Taf area. Welsh Hearts have also teamed up with ‘Jack’s appeal’. In 2012 Jack Thomas, a fit and healthy A* student who had represented Wales all across Europe in Taekwondo died suddenly from an undiagnosed heart condition. Jack’s death came as a complete shock to his parents June and Grant as Jack had never been ill. Working together with Jack’s Appeal Welsh Hearts go into Secondary and Primary schools teaching CPR and use of a Defibrillator and basic first aid training for younger pupils. Every week 12 young people in the UK die suddenly from an undiagnosed heart condition. Welsh Hearts wish to address this and from January 2016 will be running heart screening sessions for those aged 14-35 years to detect any heart abnormalities. The sessions will be free of charge and offered throughout the whole of Wales. Welsh Hearts have also established a partnership with the WRU to make sure that every rugby club in Wales will soon have a defibrillator and all the members to be trained in CPR.
To date 40 Rugby Clubs have emergency life saving equipment installed in their club and the confidence on how to perform CPR! The charity also works with other sports clubs throughout Wales to provide defibrillators and CPR training! Sharon Owen, Charity Director and founder has worked in the charity sector for over 15 years and felt that more needed to be done in Wales to tackle heart disease. Sharon was also inspired to set up the charity because at the age of 11 during a routine check it was discovered that she had a heart murmur. Although Sharon has been lucky that the heart murmur has not caused any health issues, she was thankful that it was detected as it has meant that she has been more aware of the choices she has made in life. Sharon has also lost loved ones to heart disease which also spurred her on. Welsh Hearts do not receive any funding and rely solely on donations and fundraising activities. SUMMING UP When was the business established? JANET The business was first established in 1976; Neil joined in 1989 and became a partner in 1992. Lewis Ballard Limited was formed on 1st November 2009 when Neil and I took over the whole business.
Who owns the business? NEIL There are four Directors - Janet and I own 80% (40% each). Sian Lloyd and Johanna Evans own 10% each. How many people do you employ? JANET We employ twenty people at present but are recruiting for more. How many clients do you have? NEIL We have 448 clients. Please outline the services you offer. JANET We offer clients a holistic approach which includes business development advice, business coaching, tax planning, inheritance tax, trusts and wealth management. We help them at every stage from starting a business to their exit strategy, ensuring they maximise results and protect and retain as much of their income as possible throughout. Alongside this we provide routine compliance services such as Accounts, Tax, VAT and Payroll. NEIL At this time of year many people are panicking because their tax affairs aren’t in order, the 31st January deadline is looming and they are facing potential hefty tax bills or late filing penalties. Our advice to anyone worrying about this, whether you’ve been too busy or you’ve forgotten, is there’s still time to organise things, but you do need to act quickly.
Find yourself an accountant who will not only help you now, but won’t let you fall behind again. You must know your tax liabilities and how your business is doing in real-time to capitalise on opportunities or nip any problems in the bud. We find that whatever sector they operate in, business owners often face the same issues running their business and that’s where we can help. Do you have expertise in a particular sector? NEIL Our dental and healthcare clients make up about 40% of our businesses. This specialist knowledge has been developed over thirty years and is embedded in our systems. Through our reputation as healthcare specialists we also have strong links with healthcare specialist bank managers, solicitors, IFAs (independent financial advisors) and many other professionals, which means we have the contacts to help our clients succeed, whatever they need.
What do you think sets Lewis Ballard apart from other accountants? JANET Our approach for our clients differs from many other accountants. For a start, we don’t just give them the numbers; we explain what they mean and how to improve them. Our main focus though is adding value to their business and balance to their lives, by asking them what they want and finding ways to help them achieve it. NEIL If business is great, but they want more family time, we help them to build a business that allows them to do so. If, on the other hand, they are happy with their social time and want to concentrate on building a healthy bank balance, we help them to maximise their profits and if, like many people, it’s a bit of both, we help with that too! JANET We look at six areas of balance; Business Balance - to provide up to date figures, Tax Balance - strategies to minimise tax, Saleable Balance - to build a profitable business to sell, Life Balance - to ensure clients enjoy their success, Personal Financial Balance - to reduce personal debt and build personal wealth and Retirement Balance - to provide enough for a comfortable retirement. We are very conscious that we deal with real people and life changes, so we are flexible and offer what they want and need now and look at what they’ll want and need in 10 or 20 years too. People need different things at different stages, so we tailor our services to fit their needs, however we find the sooner they think about the whole picture the more successful they are across their life.

Why are you based in Pentwyn? NEIL We moved to Pentwyn in 2004 when we outgrew our Llandaff offices. It’s ideal for us as it’s so close to the M4 and A48 or all our clients, both local and throughout the UK. and we have onsite parking for our clients and team. We originally had one third of the building but, by 2012, we were bursting at the seams again so we took the plunge and bought the whole unit.
Since taking over fully in November 2009, we have been very focussed on the welfare and training of our team and recently achieved the Investor in People Gold accreditation and ACCA platinum trainer status. We already have a very technical team of qualified Chartered Certified accountants, two Chartered Tax advisors, a Certified Payroll manager, AAT and five part-qualified ACCA accountants to provide expert advice.
We now have lovely new offices, training rooms and meeting rooms for hire and five rental offices too. It has really increased the range of services we can offer, with regular seminars and training to help them grow their business, and wealth and property talks to help them create secure, successful futures.
However we also ensure they are trained as business advisors too, as although it’s important to ensure accuracy in the figures, it’s just as important to know what they mean and where improvements can be made. We aim to have a minimum of ten trained business advisors who will have a huge impact on the local economy by ensuring businesses succeed and prosper. We also aim to train local people and not outsource like many of our competitors as we believe employers have an obligation to put back into their communities.
Where do you see the company in the future? JANET We see our team growing by at least another 50% within the next three years as our clients’ expand and need more support and, also, as we take on new clients looking to dramatically improve their results. We are continually looking to develop the range of services we offer and intend to further expand this. Our team are trained in Kashflow, Xero and Openbooks cloud accounting systems, as we see cloud accounting as the best way to help clients stay up to date and ahead of their competitors and we see more and more clients going this way. Online technology is one of the exciting ways our industry is developing.
Please tell us about your awards… NEIL We are really delighted to have our hard work recognised. We recently submitted several case studies to a national competition organised by AVN and sponsored by Xero, showing the impact we have on our clients lives and, as a result, we are now officially ‘The UK’s Most Inspiring Accountants’ and we also came back from the national accountancy conference as the ‘AVN firm of the year’.

JANET After raising nearly £80,000 for Velindre Cancer hospital in the last 5 years Neil and I are proud to be Velindre Ambassadors and we aim to reach our £100,000 target in 2016, by holding another charity dinner on 5th March 2016 and completing (hopefully) the five day Ride the Rockies cycle challenge in September 2016. NEIL In 2012 we also became the first Welsh business to join B1G1, a global organisation of businesses that support over 600 charities worldwide. We link a different charity to each service we give and every time a client buys we give. It’s great to have such recognition, but what really makes us tick is seeing our clients succeed and our team develop. So many business owners work ridiculous hours with no holidays, just to survive, so when we help them build a business that really works and gives them the life style they deserve, we know we are making a real difference. Successful businesses create jobs and impact on the economy- it’s a win-win that we are proud to be part of and our door is always open to anybody struggling in business and looking to change things - just give us a call and that change can start today.

Stop the block! Can we have a chat about loos for a minute? We know it’s a slightly unsavoury subject, but in Cowbridge, alone there were around 110 sewer blockages over the last year alone, making this popular market town one of Wales’ blockage hotspots. Did you know that most blockages are caused by people flushing everyday items like cotton buds and wet wipes down the toilet; or rinsing things like fat, oil and food scrapings down the kitchen sink? Dwr Cymru Welsh Water launched the campaign in Cowbridge to encourage the public to help reduce the risk of pollution and sewage flooding of local homes. So, why are they running this campaign? Blocked sewers are a very serious problem which costs Welsh Water over £7 million pounds a year to clear. They cause huge human misery, damage to homes and businesses, and can cause major pollution to our beautiful rivers, beaches and wider environment in Wales.
As part of the campaign, customers will learn how they can do their bit to stop sewer blockages from causing flooding in their homes and communities. Individuals and businesses will also be asked to join the Let’s Stop The Block campaign by signing an online pledge. The company’s education team will be visiting schools with interactive lessons. Julian, what can customers expect to see at The Florist this winter? Winter is a magical time of the year. Christmas is just around the corner so our table decorations will be much in demand. I think there’s nothing more beautiful than a stunning centrepiece to set off Christmas lunch or dinner.
imaginative and using this time of year to get married - in some cases the costs for venues and catering can be a little keener but, more importantly than that, it creates opportunities for different themes. Being creative, I love rising to the challenge so welcome weddings whatever the time of year.
This year I’ve designed a range of mantle arrangements and garlands, and we have a gorgeous range of door wreaths that are simply quite stunning. I think they’ll be a big hit with my loyal Penarth customers as they are quite unique and have what I think is ‘the right look’ - wholesome and natural. This year there’s definitely been a move away from the showy or garish.
What about gifts? Can you help with those? Certainly. There’s really nothing more wonderful than having something made especially for you. We’re doing lots of Christmas and birthday arrangements at the moment and, I think, a gift that’s been grown or hand-made, and has had some love put into it, will always be gratefully received.
What about weddings? Have orders slowed at all because of winter? Quite the contrary, I’m enjoying lots of new bookings at the moment and we’re really busy looking ahead to spring and summer - I even have advance orders for autumn 2016 and beyond. What’s exciting though is the rise of the winter wedding - some couples are being quite

Frank Lyman was introduced to Colours of Cowbridge by previous owners, Glyn and Christina Ashfield, three years ago and, during that time, his collections have been so popular that we’re now one of Frank Lyman’s key retailers. Can you tell us a little about your background - and what has led you to where you are today? I started working for Glyn and Christina Ashfield eighteen years ago, originally in their Barry shop, and was asked to manage Colours nine years ago. During this time they closed their other three shops, kept this one, and became semi-retired. Fifteen months ago they decided to step down from the business and asked me to take on the shop knowing that I was passionate about the business and I’d keep the Colours ethos. This was significant for all of us as the store has been established in Cowbridge, as Colours, for 28 years. They’re still very supportive (as you can see they’re here today), and I feel indebted to them both as mentors and friends.

Since autumn 2012, Auto Enrolment has been a compulsory obligation for companies to provide a workplace pension for employees (even if there’s just one employee). The scheme is being rolled out across the UK and not being prepared is no excuse and could cost a business dearly. If you haven’t put a scheme in place or are taking the ‘head in the sand’ approach, beware. To find out more, we talk to pensions guru Andy Parry.
THE PENSION REVOLUTION Does my business have to participate? Yes. Auto enrolment is now a legal requirement for employers to provide all of its workers with access to a workplace pension scheme and automatically enroll certain workers into a workplace pension scheme, paying contributions on its employee’s behalf. If an employer fails to comply and put the scheme in place by its staging date. It will be deemed as acting unlawfully and will incur fines of up to £500 per day. What is my staging date? Your staging is the date set by the Pension Regulator. This is the date, when the scheme needs to be set up by and contributions need to start. Employees would have needed to have been assessed and received any relevant communication. Even if an employer decides to opt for Postponement, employees must have received communication and employees can choose to start on the staging date irrelevant. If an employer does not know their staging date. We can provide it for them. Regardless of the staging date. The Pension Regulator recommends that employers act now in order to manage the process of setting up the workplace pension. Do the employer duties apply to employees who already have a plan? Yes, even if an employee has their own individual pension or the employer already has a scheme in place. The employer will have to comply with Auto Enrolment rules. Existing employer schemes will need to be checked with
the provider to ensure that they qualify under the rules for auto enrolment. However, inevitably there will be added work in continuing with an existing scheme, as there are other tasks that will need to be completed, such as assessing the workforce and communicating to all employees, data management between payroll and the provider, and record keeping. There is also the declaration of compliance that will need to be completed. Employees will have the option of opting out of the scheme. However, they will have to be automatically enrolled again every three years. 32
Do I have to provide the same pension scheme and contributions to each of my employees? No. As long as you provide all workers with at least the minimum requirements, you can provide different schemes and benefit structures to different groups of workers if you so wish. What do I have to do if I appoint you? Between us and the pension provider we will ensure that all your tasks associated with Auto Enrolment are completed with the exception of uploading your payroll data to the pension provider and paying your contributions.

Employers have to remember there are companies who have not started to look at their own situation.
There is also the capacity crunch issue. It is claimed that between January 2016 and 2018, the number of employers reaching their staging date will go up tenfold, reach an average of more than 100,000 a quarter and then over 200,000 in the first few months of 2017. Celebrating a birthday is fun, but celebrating it at a gorgeous hotel on the edge of the Cotswolds is even better! Vale Life’s editor celebrated her recent birthday at the four star Sudbury House, just half an hour’s drive from Oxford.

Location, location… Nestling on the edge of the Cotswolds between Oxford and Swindon, Sudbury House is in a good location within easy access of the M4 and M40. Having been completely refurbished and renovated in 2015, the hotel now offers four star accommodation and facilities with 49 en-suite bedrooms, all with complimentary Wi-Fi and car parking. The hotel is home to two restaurants and a lounge bar and is located on the edge of the Cotswolds in the picturesque market town of Faringdon. Steeped in history... Located in a Grade II listed building now adjoined to Sudbury House Hotel is Restaurant 56. The building, originally a distinguished Georgian house previously owned by Sir William Glock (BBC Controller of Music) is now a fine dining 28 cover restaurant and bar.
The hotel offers a relaxed informal environment and the Magnolia Brasserie is open daily serving a selection of traditional British and European dishes. What about the food? Sudbury House has two restaurants; the Magnolia Brasserie and the fine dining restaurant which is located in the Grade II listed building and has been transformed through sensitive refurbishment and redecoration. It has antique furniture, sculptures and stunning artwork. At the helm is awardwinning chef, Andrew Scott. Choose from a la carte or the Chef ’s Tasting Menu. We enjoyed starters of stuffed Wooley Park quail and Scotch egg and charred and cured fillet of Cornish mackerel, followed by pan fried fillet of Cornish brill and roast breast of Creedy carver duck. 36
For dessert we chose the plum and garden lavender panna cotta and Valrhona Dulcey and pear delice. The food, presentation and service were impeccable. Don’t just take our word for it, check out the review on TripAdvisor for more. And when you’re not eating and drinking… A short walk from the hotel is Folly Hill featuring the Faringdon Folly. Lord Berners was a larger-than-life gentleman and built the tower to tease his neighbours. At the time he insisted it would be entirely useless but today the views from the tower are remarkable and well worth the 104 steps. Throughout Folly Hill, and indeed the town of Faringdon, visitors may spot brightly coloured doves, these follow the eccentric behaviour of Lord Berners who himself dyed his flock of doves in colours of the rainbow.
What is there to see and do around Faringdon? As well as the Folly Tower, you could visit the Old Town Hall, All Saint’s Church, Great Coxwell Barn, White Horse Hill and Badbury Clump to name but a few. If you’re a shopper (like me!) then a visit to the Designer Outlet Shopping Village in Bicester is a must! To sum up… This is a lovely hotel. Spotlessly clean with great food in a picturesque location and combines the classic and contemporary effortlessly. We must mention the staff - all of which were attentive and friendly and couldn’t do enough for us.

Some of our readers may remember La Cocina featuring in our previous issue. Back then we happily announced that a new tapas bar and restaurant was coming soon to Bridgend and that everyone should get ready. Jump forward to today and Bridgend’s newest taste sensation has finally opened its doors. We caught up with the owner of La Cocina, Dan Apsee, to find out how things were going following the launch in October.
L A COCINA How has business been since you launched? Business has been non-stop since we opened and we’re thrilled with the support we have received. Most customers have already been back again and we’re pleased that we’ve built a loyal customer base already. Can you tell us a little history of yourself and why you opened La Cocina? I’m a Bridgend resident and I’ve worked in the hospitality sector for over a decade. I felt there was a gap in the market in Bridgend for a restaurant that serves authentic Spanish food and quality alcoholic and non-alcoholic drinks, which is why I opened La Cocina. What sets you apart from similar businesses in the area? I think it’s a combination of using authentic Spanish ingredients, serving quality drinks, providing excellent customer service in a relaxed atmosphere that sets us apart from our competitors. Furthermore, there really is no other place like the Courthouse in Bridgend as it’s such a unique venue and we’ve retained many of the original features to keep the character of the building. From customer feedback, a lot of people have said that they’ve been waiting for a restaurant like ours to open as it’s something different and new for the town and it’s got people really excited. Describe the atmosphere in La Cocina. We’ve worked hard on the interiors to ensure we created a relaxed atmosphere where customers feel welcome and enjoy their dining experience with us.
We pride ourselves on being able to cater for all occasions, whether it’s a romantic meal for two or a party of more than 20, we can accommodate to everyone’s needs. What type of dishes and drinks can people expect at La Cocina? All options on our menu are dishes that you would find in Spain and maintaining this authenticity is very important to us. We’ve got a variety of meat, seafood and vegetarian dishes to choose from so there really is something for everyone. Much of our produce is imported directly from Spain to ensure the authenticity of our product. We have an extensive cocktail menu which showcases an array of different ingredients including many of our own creations. Customers can enjoy a selection of fine wines from across the globe as well as champagne and cava. There are also plenty of Spanish beers including San Miguel and Mahou. 39

Imagine getting dressed for your own event without worrying about any aspects of the food; from shopping, preparation, cooking and serving - even to clearing away and washing up. Sounds like dinner party heaven to us, so we popped over to chat with Nick Collins, Chef and Founder Director of Grate Catering and The Pickled Radish, Laleston (and participant in BBC Masterchef, The Professionals).
GRATE CATERING Please tell us a bit about your background Nick. What led you to setting up The Pickled Radish and Grate Catering? I started out in the kitchens of Le Manoir aux Quat’Saisons for Raymond Blanc at a young age. This gave me a real insight into the attention to detail and what it takes to achieve perfection.
My experience encompasses working in restaurants, gaining 2 AA rosettes in a country house in the Vale, catering for celebrities in a five storey luxury chalet in Courchevel 1850, and cooking on a super yacht in the Antibes. Following all of this I became a development chef for a national contract caterer, however driving around the UK all week took its toll so I decided to base myself in my home country of Wales and, seeing a gap in the market for high end fine dining, Grate Catering was born. Looking for a kitchen to base myself in, I found the Laleston Inn and so I launched The Pickled Radish there.
Business grew quickly and we realised we needed another kitchen to keep up with demand, so we took on a unit in Caerphilly and built a state-of-the-art production kitchen there. I’m delighted that this has just been awarded five stars from the council, as has our restaurant in Laleston. What type of events do you cater for? We will cater for any event. We excel at weddings, taking our time with the bride and groom to discuss what they want and bring their dreams to life. We have a large team of chefs, all from a rosette or Michelin standard background. We also cater for many corporate clients around Cardiff and the Vale who have private lunches, dinners, and canapé parties or working lunches. We serve our food in a fun way which will bring a smile to their day, and we take pride in our food being nutritional, seasonal, and of course homemade. We’re currently focusing on contract catering, so look out for that launching in the workplace in 2016. 40
Where do you source your food? I have instilled the ethos in my team that our food must not only be local, but it has to be excellent and local. There’s no point having poor quality meat just because the butcher is in your village.
We are blessed in having amazing suppliers; our butcher, The Farmers Pantry, are some of the best butchers I have ever come across - the meat is always perfect, and local to their farm in Llantwit Major. We aim to use everything Welsh in our business from our flour which comes from Talygarth Mill to our oil - we only use Welsh pressed rapeseed oil, from Blodyn Aur, which has some amazing health benefits. What are the advantages of using a home catering service? There are so many benefits, the main ones being that it’s time saving and stress free. Having a private chef to cook and serve for you has that wow
factor, and can cost less than eating out at a restaurant. We arrive with all the food prepared and finish it off in your kitchen and then clean up like we were never there. We also have amazing front of house staff to serve our clients which adds to the experience. Sounds lovely, and something we’d love to experience. In the meantime, what’s happening at the Pickled Radish over Christmas? Throughout December we have a festive themed three course menu for £29 per head or a five course taster menu for £45 per head. Also, we will be open on Christmas Day for our Christmas taster menu experience which is a celebration of everything Christmas could possibly throw at you. Our events team are also busy with some large private dinners in December; one for Max Boyce, and some pheasant shooting parties on a luxurious private estate in the Brecon Beacons.
Our events chefs will also be flat out on Christmas Day catering at some private homes around Wales. What’s the most unusual event you’ve catered for? That was a wedding where our clients wanted 100% black and white themed food. It was a challenge but it actually looked very elegant. And last, but not least, if you could cook for anyone, who would you choose to cook for – and why? I’d like to cook for Gordon Ramsay, maybe at his home, and with no cameras to see what he would make of my dishes.

Christmas and New Year are the perfect times to use ingredients which are in season for cooking up delicious recipes to impress your friends and family. Head Chef at Holm House Hotel, Penarth, Ceiran Thomas, shows us how we can create a stunning dessert which not only looks stunning but tastes even better.
CHERRY PICKED INGREDIENTS For the chocolate n 250g Welsh double cream n 250g Welsh milk n 100g Welsh free range egg yolks n 50g sugar n 250g chocolate (70% dark)
CHOCOLATE & CHERRY FOREST
For the cherry puree n 200g dark cherry puree n 1g agar agar For the branch n 60g Welsh craft beer n 12g egg white powder n 45g icing sugar n 5g cornflour n 25g fine welsh flour To garnish n Cherries preserved in kirsch n Coca nibs n Halen Mon sea salt flakes n Local wood sorrel (this is optional) METHOD For the branch Mix beer, egg white powder, icing sugar, cornflour and fine flour and rest the dough for two hours in cling film in the fridge.
For the chocolate Bring milk and cream to the boil. Mix egg yolks with sugar until pale. Pour boiling liquids over yolk mix constantly whisking - bring back to the heat and mix continuously until the mix reaches 86°C, allow to cool until 50°C and blend in chocolate with hand blender. Line a tray with cling film and set the mixture in the fridge for three hours. Pre heat the oven to 160°C
For the cherry gel Bring the cherry puree to the boil and whisk in the agar agar and boil for 3 mins. Remove and set in fridge for 30 mins.
We had the pleasure of sampling this dessert after our photography session. Our photographer said that the images don’t do this dessert justice. It is gorgeous.
For the branch Shape the dough into a branch shape and bake at 160°C for 6 to 7 mins.
If you want the look and taste but don’t want the fuss and bother of making this yourself, we strongly suggest giving Holm House a call and having Ceiran make this for you. Then you’ll know what we mean!
To assemble Blend the cherry gel mix and put in a squeezy bottle - cut the chocolate into rectangular portions, swipe 10g of puree across the plate, place the branch on the plate and place the chocolate neatly on the swipe. Add a few flakes of salt and decorate with dots of cherry puree, preserved cherries, cocoa nibs and wood sorrel. 46

These restrictions/ interferences are called subluxations and can lead to a range of health issues. Chiropractors use their hands or other techniques to free these ‘stuck’ joints. This release is called an adjustment. Once the joints are moving as they should, nerve interference is reduced muscles can then start to work normally and the spine gradually returns to its optimal working condition.

With thirteen years experience, and knowledge gained from working at a special school in Cardiff, mother of six Elizabeth Stewart has recently launched Sp1 (the name means special one), Wales’ first special needs specific hair salon.
THE SPECIAL ONE Elizabeth, it’s lovely to meet you. Can you tell us how your salon came into being? I’m a mum, and homemaker, with six children; five sons and a daughter. My fifth child (fourth son) Delroy is 22 years old and has Downs Syndrome. When Del was a little boy he had quite a phobia about having his hair cut and the only time I could achieve a trim was when he was asleep. Thank goodness his hair was curly - you couldn’t notice the mistakes! Jumping ahead a few years, Delroy has now left college. As with most people of this generation, employment is very hard to get hold of. And, believe me, even more so if you have additional needs. Marrying the two situations together, and having undertaken a lot of research, I discovered the great need for this service and decided this would be a perfect opportunity for Del to have a secure job.

Tell us a bit about your innovative salon. Sp1 Haircare is a salon specifically for people who have additional needs, regardless of age or sex. The general feel of the salon is that of a mainstream hairdresser; with us offering, and catering for, whatever is requested. As this is such a new venture (basically uncharted territory), we’re prepared to grow our business in relation to our clients’ requirements. If there’s a demand for a nail and beauty section, we’ll oblige.
We’ve liaised with Cardiff and the Vale College to offer work placements to their hair and beauty students as well as work experience to their enterprise skills students.
Apart from the main salon, we also have a sensory area which is completely separate from the salon. We have provided this as a calming area to overcome any possible anxieties our clients may have. It can be used before, during, or after an appointment. The sensory room will also be a place of rest and relaxation if required.
With a fear of getting their hair cut being commonplace in people with special needs, this ground-breaking salon is a safe haven for people with learning difficulties such as Downs Syndrome and autism. So come on Cardiff, spread the word.
We employ two full time stylists, and two part-time staff members who have additional needs themselves. All our staff members will have Makaton sign language training; which can help people who have limited speech and who cannot, or prefer not, to sign. What type of clients use Pugh’s? We have a loyal client base consisting of landscape gardeners, garden designers and property developers. Pugh’s Nursery also works with keen gardeners who are working on any larger projects - sometimes if you’re redeveloping a large space you want an established look and that’s where we can help. Where do you source your plants? Although we travel the world to hand pick the very best specimens (including trees and topiary from Tuscany and cacti from Peru), we stay true to our roots by growing our own selection of shrubs, perennials, fruit and vegetables (including cabbages, tomatoes, lettuces, runner beans, broad beans and strawberries), and both bedding and basket plants (including busy lizzies, begonias and geraniums) at the nursery.
What can Pugh’s Nursery offer? We specialise in larger established trees and shrubs. The kind of plants that are statement pieces. Whilst it’s enjoyable to watch a garden grow, sometimes clients want a selection of trees that are already at 15 to 20 feet, this is where Pugh’s Nursery comes into its own. We also carry a lot of stock on site so we tend not to run short. Can you source particular plants that you don’t hold in stock? Absolutely, as a trade Nursery we grow a huge amount of stock ourselves but have excellent relationships with many trade nurseries around the UK and Europe. Because we have been in the business for over 50 years, we have built up a large resource of every kind of plant imaginable. Starting in 2011 with just twelve bridal dresses, Sentiments Luxury Bridal Wear caught the business bouquet so successfully that they have now had to move to larger premises on two separate occasions to accommodate their increasing clientele. Now found in Talbot Green, we spoke to Sentiments owner Maria Ryan about what we can find in her new store.

We also pride ourselves on the service that we provide. Brides visit us for the experience that we can offer, not just the gowns that we have. You can see from our Facebook reviews that we offer a very personal service, making sure to build relationships with our brides so that they know we will do anything to help them find the perfect dress for their big day. They have allowed us to be a vital part of one of the most important days in their lives, and this relationship ressures them that they can rely on us. Many of our brides who were married years ago are still in touch and become really good friends of ours.
How did Sentiments get to where it is now? Have you always worked in the bridal industry? I originally came from a public health background. However, opening my own bridal store was something that I had always wanted to do as I have a keen interest in fashion and design. So, in 2011 I started Sentiments with only twelve Allure Bridals dresses. Luckily my husband has his own marketing agency and so, with his help, we were able to make all the bits that would have normally been very hard very easy instead. After only nine months we had to move to a bigger premises in Bridgend, and had won two bridal awards; Best New Wedding Business and Best Bridal Retailer. We were also shortlisted for several other national awards.
At the beginning of 2015 we realised that we needed to move again as we were finding it difficult to meet the demand for appointments in our small shop so, in August, we took the plunge and moved to Talbot Green. Since our move a few months ago we have also been shortlisted again for the Best Bridal Retailer award and await the results with eager anticipation. What do you think makes Sentiments special so that clients choose you over other bridal stores? From day one we have always strived to be able to offer something special to our brides and, to do this, we have some of the most exclusive designer dresses available in store including; Sottero & Midgely, Allure Bridals, White One by Pronovias, and Catherine Parry Bridal - an up and coming Welsh designer. 75
What are your future plans? In the immediate future we have a winter sale starting in December that will include many sample gowns at amazing discounted prices. Other than that we plan to continue to run the business the way that we always have. This is what makes us Sentiments. We hope that every bride who walks through the door has the experience that she imagined and indeed deserves. We will have our new collections arriving early in 2016 and will be launching them with designer weekends offering special offers and continue to do what we do best.

What’s new for 2015? 2015 is a particularly exciting year for Waterstone Homes, as we are working on four bold new collections: Dinas Powys, St Brides Major, Ogmore-bySea and Derwen Fawr, Swansea. We have recently completed collections of luxury homes in Cardiff’s Pontcanna and Radyr, and also Saundersfoot, Pembrokeshire. These are not your usual run-of-the-mill housing developments, they are bespoke collections of exclusive luxury family homes in choice areas with as few as fifteen homes (on average) per location. St Brides Major’s collection is quite exclusive as it only has six homes.
When choosing any company to carry out work at your home, it pays to do your research. Russell and Annabel Denty of Newton, Swansea did just that and finally chose to work with Alexander James Bi-fold (part of the AAI Group). We chatted to Annabel at her home to find out more.

Why did you want bi-fold doors? We have lived here for twenty years. We love the area. We have a nineteen year old daughter and a fifteen year old son and we wanted to send them to a good school. Luckily there is a great one here. We were working with our fantastic local builder Daniel Wright of Wright and Phillips as he was working on our kitchen extension and we agreed that a set of bi-fold doors would let more light into the kitchen and allow us to make the most of our garden. How did you hear about Alexander James (AAI)? I researched bi-fold doors online and found the AAI website which led me to the Alexander James website. I emailed the company and arranged for Andrew Farmer to come and visit.
What did you think of Andrew when you met him? I liked his manner straight away. He was polite and professional. How did you find working with AAI? Both the workmen for AAI and Darren our builder worked brilliantly together. It was seamless. The doors were promised on a certain day and that’s when they arrived. They only took one afternoon to install. The fitters were clean and tidy and we wouldn’t have known they had been there. Were there any issues with the doors or did it all run smoothly? There was a minor adjustment needed to the doors and no sooner than I rang to mention this than the fitters came and put it right. 86
“We couldn’t be happier with the end result.” Who does the cooking? I run a family fishmongers business, so the last thing I want to do when I get home after a long day, is to start cooking! Luckily my husband likes to cook and we can now all enjoy meals together at the kitchen table. What difference has your extension and bi-fold doors made to the way you live? I can honestly say it’s transformed the way we live. The house was quite dark before. We’ve also fitted a glass panel to the lounge door so we can now see straight through from the lounge to the garden.
We chose to keep the colours in the house light to make it feel bigger and it certainly does that. I know it sounds cliché when people say that bi-fold doors bring the outside in but it really does! We’re all utilising the kitchen much more now too. I’ve even baked a cake and my husband has volunteered the Denty household to invite the family for Christmas and a New Year’s Eve party! Would you be happy to recommend AAI to others? Absolutely. From start to finish they were a pleasure to deal with and we couldn’t be happier with the end result.

I have a few favourite properties that we sold in 2015. I am much more of country lass than a town girl so I am typically drawn to the more rural properties that come onto the market. A particular favourite of mine was Old Orchard Barn in Llantrithyd. A Grade II listed barn conversion with just under two acres of land which had breath taking views over the Vale Countryside. It was tastefully decorated in a contemporary country style which complimented the property beautifully, as well as giving it a cosy, family feel. It had easy access to the A48 and was within catchment for good schools - all important points when looking for a family home.
It is difficult to choose one favourite property from all those we have sold in the last year. Having lived in Cowbridge within a short walk of the shops all my life, I can be biased towards those in the Town Centre. Of those sold in the last 12 months, I was very fond of Swn Y Gloch within the Old Grammar School. This was a very well-crafted home making thoughtful use of the existing historic building and natural materials. It has a very pleasant, south facing patio sitting area which opens directly onto the well maintained communal gardens. All within yards of the town!
Sam Dovey My favourite property that we sold in 2015 is Hensol Villas, Hensol. It really grabbed my attention from first sight! It was a lovely brick fronted property with bay windows in a location that’s close to great natural treasures. I could see it as a fantastic family home. The property is located close to a local vineyard, which is a welcome prospect during the summer months; and the proximity to Hensol Castle, a real hidden gem in the Vale of Glamorgan, is magnificent. This property felt cosy and comfortable and would have been the perfect retreat for myself and my partner. Viva La Villas!

We have sold some fantastic properties in 2015, but the one that stands out for me is Kingscombe House. An extremely handsome, Grade II listed property which has recently been sympathetically refurbished within the much sought after village of Llanblethian, just outside Cowbridge. The house retained many period features including shuttered sash windows, flagstone floors, open fireplaces and exposed floorboards - and offered traditional style mixed with contemporary design providing all the requirements for a modern family.
We have sold some lovely properties this year; however I must say that my favourite has to be The Rectory in Llandow. It’s a charming, Grade II Listed character property that needed complete renovation. When I first went there I was impressed with the room proportions but what really sold it for me was the wine cellar! It was a fantastic house to take on and offered huge scope to transform into a stunning family home. It sits within its own grounds and the sale included converted barn. The views out over the countryside are beautiful yet Cowbridge is a 10 minute drive so it’s really convenient.

After creating Superman inspired jewellery and an unbreakable wedding ring for Laurence Fishburne, Cardiff jewellery designer Neil Rayment really is flying high.

As a fan of the superhero and friend of the film’s star Laurence Fishburne, award-winning goldsmith Neil Rayment wanted to create an out of the ordinary tribute in the shape of Kal-El’s Crystal - an homage to Superman’s birthplace, a timeless classic, expertly crafted in platinum and diamonds. “I was looking for something spectacular, I’m a huge fan of Superman and the franchise featured heavily in my childhood,” says Neil, owner and artistic director at Advanced Jewel Craft. “What better place to seek inspiration than the birth place of Superman?” Advanced Jewel Craft attracts clientele as sparkling as its bespoke pieces. The iconic brand has slowly blossomed since its inception in 2004 and is now a firm favourite amongst A-listers from LA to Abu Dhabi. Oscar-nominated actor Laurence Fishburne is one of Neil’s most prestigious clients. The pair met when Neil briefly switched jewellerymaking for acting and appeared alongside him in The Matrix sequels. Neil was honoured to be tasked with designing and creating Laurence and his wife Gina Torres’ wedding rings.

We worked on The Matrix sequels together. We became friends on set and then I found out that Neil’s passion was for jewellery design. Have you kept in touch? Have you been over to Wales to visit him? Yes we’ve kept up with each other but still have not made it to Wales I’m sorry to say. I’ve heard that it’s a very beautiful country.

Neil designed and made your wedding rings. That’s a high pressure assignment - how was he to work with? He was terrific. The basic design was worked out between Neil and my wife. We’re delighted with the result. Can you tell us a little about the inspiration behind the design? Gina wanted something that would be unbreakable for me. I’m a would-be drummer, so I’m always beating things to hell. The platinum band and three diamonds are all a reflection of my personality and style. How involved were you in the design process? I’m very creative but I really felt it was best to trust both Neil and Gina on this one. It was our first custom jewellery experience. Neil often takes inspiration from films. If you could challenge Neil to design jewellery based on one of your previous films, which would it be? Probably King Of New York. I think that would be an interesting challenge for Neil but one I’m confident he could rise to. Created in his Cardiff Bay studio, Advanced Jewel Craft’s pieces are beautiful and exclusive. Neil adopts a personal approach, forging firm relationships with his customers. And while he works with A-list clients, his feet are firmly on the ground. “Jewellery is something that needs personal attention,” Neil says. “You can get entangled in the glamour, the parties, the shows, but the most rewarding thing is to see someone wearing one of my pieces and the pleasure it brings.”

Brogolais Day with joie de vivre We’ve been to a few Beaujolais events in our time and can honestly say this was the best yet. Chris Macnamara of The Brogue Trader organised the event and 178 people enjoyed a fabulous three course meal (Spiro’s Catering) at the iconic Parc Hotel in Cardiff complemented by some excellent bottles of Beaujolais. Guests were treated to live entertainment and a Q&A with three of Wales’ most talented international rugby players. The event raised over £10,500 on the day for George Thomas Hospice and that has been generously matched by Julian Hodge bank taking the total raised to over £21,000 - quite an achievement. Chris would like to take this opportunity to thank the many sponsors of the event and all those who dug deep to ensure George Thomas Hospice received this substantial donation. Proceedings were respectfully paused with a minute’s silence in support of those victims of the Paris attacks. Vive la France!
