We really hope you enjoy our Usk town feature. Again, talking about celebrating, there’s much to celebrate about this iconic Monmouthshire town. It really does have something for everyone with its quality independent businesses and it’s gaining a bit of a reputation as being a foodie town. Plus, there’s free car parking – always a bonus! We also feature Newent and Kilcot in west Gloucestershire. Among its highlights is the ICBP, which is still open to visit throughout the Autumn and, don’t forget to look out for the new Llama experience at Briery Hill.
Green is good The pulp used in the production of the paper Wye Life is printed on is sourced from sustainably managed Scandinavian tree farms and utilises an elementary chlorine-free bleaching process.

The 13th Century building is home to Annaly and Glyn Goodwin, who run the inn with their two daughters Becky and Kate. We visited Annaly to find out more… We’re a local farming family so the value of local and seasonal produce is important to us. We use as much as we can from local suppliers, preferably a few miles away. We also grow a lot of herbs in our own garden, and my mother grows some soft fruits that we use on the menu. Our eldest son, Phillip is a qualified butcher and provides some of our meat. We pride our menu on the quality of meat we use; our beef is hung for 33 days and reared in Herefordshire. Because of all these little details, we are pleased that we offer prime quality in all our dishes. We have a steakhouse menu and a relaxed dining menu so there is plenty of choices. We can cater to all dietary requirements, so everyone is welcome. Friday’s and Saturday’s are when our Chef can really tantalise your taste buds with our fine dining menu, which brings our wonderful produce and elegance together.
Everyone loves a Sunday lunch, so our carvery is incredibly popular; this includes 33-day matured beef and orchard reared pork with crackling, served with beautiful homemade Yorkshire puddings with lashings of real meat gravy and up to 12 selections of fresh vegetables. We have 6 generously sized rooms recently refurbished with the age of the building kept in mind. With plenty of beams and high ceilings and gorgeous antiques to add a touch of individuality to each room, then we’ve got everything you need. Five of the rooms even have Jacuzzi baths. The Festive season is very popular at Mortimers and the ambience is perfect to celebrate with friends and family around our lovely cosy log fire. We are now taking reservations for our Christmas Day and Christmas Party menus; all tables must be booked via email or phone or you can always call in. Hereford Cathedral Hereford Cathedral has put its 1217 Magna Carta on display in a special exhibition running to 31 December 2017. ‘Law, Life and Landscape’ celebrates the 800th anniversary of the document, which forms the centrepiece of the presentation in the cathedral library’s exhibition gallery. and I think it really hits home how important marriage is to society and to be a helping hand in that is amazing.” “We’re at the point, where we are now seeing people who were married at Lemore, almost ten years ago and they come back to see us. It’s fantastic to see the test of time. Playing such a large role in these individuals and their friends and families memories of this day is something really special. It is something Margaret and I are very lucky to be so involved with.” Marriage is a very important part in many people’s lives. The ceremony and other aspects have changed since it’s archaic beginning, but it’s core aspects remain; the joining of families and to revel in their happiness. Nestled in the heart of cosy Herefordshire is the historic market town, Bromyard. Herefordshire isn’t short of good pubs to visit, but The Inn at Bromyard should be top of your list to visit!

The gorgeous Grade II building is warm and inviting, regulars and tourists love it, to be honest, it’s hard not to love it! Check out their TripAdvisor reviews and indeed the Inn has been No 1 Restaurant in Bromyard for several months. Every good pub isn’t complete without a good landlady, Sue certainly fulfils just that! She’s even called in the cavalry enlisting her son Josh to join the business. The Inn is brimming with traditional character, this is matched with fantastic menus and barrels of good proper local ale. With locally sourced produce made with experienced craft into fantastic dishes, twenty-eight mains during the week, there’s something to make everyone’s mouth water. The traditional Worcestershire cider is made by the team at Hobsons Brewery and the Thompson family, at Oldfields Farm near Tenbury Wells on the Worcestershire and Herefordshire border. Tenbury Wells has a rich history of cider orchards and was called ‘ my little town in the orchard’ by Queen Victoria. Today there are fewer orchards around but the Thompson family is planting new ones every year. The Thompson family moved to Oldfields Farm back in the 1960’s. The cider was just made for drinking with friends and family but in 2013 the first commercial cider was launched for more local people to enjoy, and it’s grown ever since then. The apples are pressed, fermented and matured for a year before being blended and packaged on the farm. The team has full control and keep their recipe in
the select circle! As well as keeping full control from apple to glass which keeps costs for a craft cider down too as they do everything themselves. Oldfields presses a variety of unique apples from October to November, they have been known to experiment. So along came the sought-after discovery of Oldfields Applesecco. Made from Discovery dessert apples grown in Worcestershire, Herefordshire and Gloucestershire. It is elegant, light, crisp and refreshing with a wonderful aroma of Discovery apples. The ciders have won a number of awards including three stars at the Great Taste awards, only 120 out of 10,000 artisan products win this award and they were awarded the highest number of stars possible! This year Oldfields medium dry was named in the Top 10 British Ciders by the Independent newspaper. 23

I see being environmentally friendly is very important to you, what is the Inn doing to be more so? When the Inn was refurbished 7 years ago, it was designed to be as environmentally friendly as possible. Among other green features we have solar heating roof panels, a rainwater collection tank to feed the toilets, and the highest specification insulation. Our policy of sourcing as much food locally as possible also cuts down on ‘food miles’.

With the darker nights months upon us, we visited Daniel Bowley, the new Head Chef at The Kilpeck Inn to watch him prepare and cook his favourite Autumn dish. Needless to say ‘it was delicious’.
AUTUMN RECIPE FILLET OF BEEF MEDALLIONS, DAUPHINOISE POTATO, CARROTS, CURLY KALE, RED WINE REDUCTION. Serves 2 n 2 x 6oz Fillet Steaks n Rapeseed Oil & Butter for Frying n 3 x Carrots (Peeled & roughly chopped) n Knob of Butter & 20ml White Wine Vinegar n 120g Curly Green Kale (Stems removed) n 10 x Baby Carrots (Peeled & tops trimmed) n Chopped Parsley & Butter n 1 x large glass Red Wine n 1x tbsp Honey n 1 x tbsp Balsamic Vinegar n 1 x Sprig Rosemary
For the Dauphinoise Potato (Make a day ahead) n 4 x Large Maris Piper Potatoes n 3 x Cloves garlic (Crushed) n Sprig of Thyme n Enough Cream to cover potatoes n 100g x Grated Mature Cheddar Cheese Method 1. Put the cream, crushed garlic & Thyme into a pan. Infuse the cream gently on a low heat, remove from heat just before boiling point & set aside. 2. Peel the potatoes, slice thinly with either a knife or a mandolin. Line a small baking dish with grease proof paper, and neatly arrange the potato in layers over lapping each over slightly. Season each layer with salt & pepper. 3. Once you have arranged all the potato, strain the cream over the potato with a sieve to cover. Sprinkle grated cheese on top, bake @ 180 degrees until the potatoes are soft to the touch with a knife. 4. Remove from the oven, cover with grease proof paper and weigh down with a similar sized vessel and tins on top. Once cooled, chill in the fridge overnight. 5. Peel & Roughly chop the Carrots, fry in some butter, then add water & boil. Once carrots are soft, remove from the pan. Puree
in a food processor along with the butter & white wine vinegar. Season to taste. 6. Season the Fillet of Beef generously with Salt & Pepper, and sear in a hot pan with oil. Brown the meat all over, reduce the heat, add some butter, and keep the fillet turning every couple of minutes, basting the meat with butter constantly. For Medium Rare, this process should take no longer than 10 minutes. Allow the meat to rest somewhere warm for 5 minutes. All our meat comes from Neil Powell Master Butchers in Ewyas Harold who source dry aged Herefordshire beef from Willersley Court 7. Add the Red Wine, Honey, Balsamic Vinegar & Rosemary to a pan & reduce until the sauce has thickened slightly and has a shiny gloss. 8. Remove the Dauphinoise potato from the fridge, pop it out of the dish & cut into whatever portion size you desire. Bake in the oven on a well-oiled dish until heated through. 25
9. In a pan of salted water, boil the peeled & trimmed baby carrots for a couple of minutes, then add to the same pan the Kale. Once cooked strain the vegetables in a colander, then add to a pan with melted Butter & Parsley, coating the vegetables in the sauce. 10. Once the Fillet has rested, Slice into 3 or 4 medallions and assemble the dish.

Breakfast can be served either in the magnificent dinning room or alfresco poolside. The fishery boasts 1.5miles of left bank Wye where your chances of either a Wye Salmon or Barbel “double” have never been more in your favour. The Oxbow Estate Lake continues to surprise with large natural Carp. Recent examples of over 30lb caught. Access to the fishery is via car in all but the harshest of weather with parking within a few yards of your chosen swim. The estate is bordered with acres of lush farmland and immaculate lawns, there’s plenty to explore, you can fully immerse yourself in nature. There’s deer, badger, birds of prey kingfishers, voles and plenty more to see, if you’re looking for the full countryside experience, it’s safe to say this may be the perfect haven for just that.

WELSH OVERLAND SAFARI What recent tours/walks have you created since we last featured you? We have had a very busy Spring & Summer with visitors coming from far and wide. We still have our set list of 8 tours. However because we have the flexibility to cater to individual groups needs we have visited some new areas. For instance we had a couple enquire about a tour, they had some difficulties and wanted to see the sea! We were able to plan a tour to the Elan Valley, Llanidoes, Machynlleth and to Aberdyfi via The Wynford Vaughen-Thomas monument to enjoy the views of Snowdonia for lunch and then a stop in Aberystwyth for an ice cream before heading back! With Autumn & Winter upon us, what tours/walks can you offer? Autumn and winter both offer visitors the opportunity the see Mid Wales & The Brecon Beacons in a whole new light.

In Autumn you see the changing of the colours of the landscapes, with red and gold colours on the trees (and the fall). Then in the winter your likely to see the snow capped peaks of the Brecon Beacons which makes for fabulous photograph opportunities. What is your favourite winter tour? There are so many to choose from; The Elan Valley estate, near Rhayader which can look stunning in the winter months, but I would have to say a trip to waterfall country would be a favourite. Good Life Publishing launched Wye Life Magazine in August 2015 with Chris Howell at the helm. His drive, motivation and determination has the seen the magazine become very popular. With our Wye Life brand known throughout Monmouthshire, Herefordshire, South Powys, West Gloucestershire, The Forest of Dean and the Wye Valley. A large part of this success has been accomplished with the huge growth of Wye Life’s various social media platforms with nearly 20,000 followers between Facebook, Twitter and Instagram. The sharing of local photography and art images has been at the forefront
of our activity, hence the reason why we introduced the Facebook group ‘Wye Life Magazine Photo Corner’. We now have over 2,800 members and our week day daily themes are very popular with a chosen image each day. Plus every first Monday of the month is ‘Art’ theme.
Our next walk is on Saturday October 21st at 11.00am outside The Savoy Theatre, Church Street and is called ‘The Monmouth Old Town’. We will be touring the Theatre, St Mary’s Church, The Shire Hall and The Nelson Museum; then dining at popular No7 Restaurant in Church Street.
The highlight of each month is a Camera Walk, whereby all levels of photographer can join in. Our youngest member is 11 year old Ruebin Webb, see one of his photographs below, plus we have several members in their seventies. Thus far we have visited The Kymin, Chepstow Castle, Hereford Cathedral, Symonds Yat and Garway Hill.
We are busy planning future walks and hoping to visit the International Centre for Birds of Prey & ‘Walking with the Llamas’ and Kilcot Inn during November, followed by a Christmas themed event in December to be confirmed. Please feel free to join the group and hopefully see you soon on a walk

QUAILS INTERIORS Tell us about where both your passion for the design came from? The more the clients are happy to push the boundaries the more creative we can be, our passion is driven by our client’s expectations. Our two sons Harry and Monty are also involved in the business and both the lads are forward thinking, between the four of us we bounce off ideas which are quite exciting. What inspires you to be creative? I’m inspired by what I see around me. I always see the beauty in creations and admire the attention to detail. This has only become more important with the internet. Every project has to start with a pencil and a pad; then a sketch drawing is produced before any electronic drawings. One of my main inspirations is the actual client, visiting them at home and sharing their passion and ideas at the very
beginning of each commission. This releases the drive to supply the best quality product for realizing our client’s dreams. How has your business grown over the years? We launched our furniture business in 1979, I was 17 the business grew with a multitude of projects; designing, making and installing. This was too much for myself so we brought in a few extra hands and it was then that I met Sian, she took a keen interest in the business as she had an art/design background. Sian quickly became a valuable asset and joined on a fulltime basis. Work became a love rather than a chore, and this holds true to this very day! As the business has developed we’ve employed a number of specialists, it’s allowed each of us to focus on our core strengths. I was able to concentrate more on the design 42
aspect as a result of this we opened our Usk showroom in 2002. Then came to our second workshop enabling us to produce whatever we need in-house,
with a sharp eye on quality at all times. This has allowed our business to flourish and we have always thought it is key to re-invest, we do this by employing an apprentice every year. You’re known for your kitchens, but what other pieces have you completed? We now cover most things wood
made. We have a joinery shop that makes windows, doors, stairs and lantern lights etc. This workshop also allows us to take on a few garden projects which have included Pergolas and shingled roofed canopies for hot tubs etc. We make a large amount of bedroom furniture including beds themselves. The home office space is another area we do a lot of work.
What’s the most interesting piece you’ve created? A year or so ago we completed work for a client who then asked us if we would like to make a car. The vehicle about the size of a Fiat 500 that was completely made from timber. We used Western Red Cedar that was layered up over formers creating a lovely curved shaped to the bodywork. It has since been fitted with electric motors and has been on display in Swansea.

In recent years Usk has been dampened, with the loss of some small businesses but the Town is bouncing back. This year’s Open Gardens weekend was a great success and it was encouraging to see so many businesses showcasing their floral displays. We were delighted to receive a ‘Gold’ award for our efforts this year. The summer bike displays also put the town back in the headlines. What is the attraction to the Inn? Since taking over this June, we have received good feedback on how friendly and welcoming our staff are. This along with the fine culinary skills is seeing many a customer return. The décor has been updated, adding 44
some modern touches to go with the traditional feel of a 16th century Inn. We are excited to extend our beer garden over the winter and continue to touch up areas that need some love and attention. Talk to us about your menu and what you offer to drink? Our main objective at The Castle Inn is ensuring everyone has an enjoyable dining experience. We don’t have an overly extensive range of dishes but we have something for everyone. Our main restaurant menu offers the traditional pub favourites, such as ‘Homemade Pie of The Day’ and ‘Lasagne’. While our ‘Specials’ board changes seasonally and offers delights like ‘Slow Cooked Pork Belly
and Black Pudding Mash Potato’ or how about ‘Seared Duck in a Red Wine Jus’. We offer a range of wellknown lagers on tap, and guest ale refreshes weekly. And you also have rooms to grab some Z’s, tell us about these? We recently extended our accommodation from 7 en-suite bedrooms to 9 with the introduction of two small flats that have been fully refurbished and available for long stay bookings. We always encourage guests to book directly as we are always happy to offer discounted rates, we will shortly be introducing dinner, bed and breakfast stay. We have three suitable family rooms and also accept guests with waggy tails.
Early, I know but Christmas is coming up what have you got planned for the festive period? We have actually been taking Christmas Bookings for the past 2-months! We are delighted to offer a 7-course Christmas Day Menu. Reasonably priced at £69.00 per person. Throughout December we will also be showcasing our Christmas Fayre Menu at just £19.95 for 3-courses. AAI (Architectural Aluminium Installations) of Swansea were delighted to join forces with Morganstone on a large care home in Beddau which was officially opened in September this year. We caught up with Ralph Hughes, Operations Manager of Morganstone, to find out why he chose to work with AAI.

What does Morganstone offer its clients? We offer a full construction service from land purchase through to completion of the build, and aftercare. How did you hear about AAI? They are known to us through personally knowing each other from previous companies. What work did they carry out for you? The carried out the manufacture and installation of the curtain walling, entrance doors and AOV installation. Who did you liaise with? I liaised with the owner of the business, Mr Alex Richards and the Managing Director, Mr Andrew Farmer.
How did you find him to work with? I found them both very knowledgeable and proactive. Did they give you ideas or did you give him a clear brief? Yes, they discussed issued that they had resolved on similar projects and incorporated this into the element of works. What difference has the work done made to the way in which the building now appears or functions? It gives a large amount of natural light to the internal corridors and also security to the entrance doors.
Would you recommend AAI? I would be delighted to work with AAI again and to recommend them to others. They are on our approved list of sub-contractors who have all had to attain certain standards and criteria for safety, quality and financial status etc. “It’s always a pleasure to build good relationships with other contractors and Morganstone are no exception. A great company and between us we believe we managed to create an impressive building to the area.” said Alex Richards, AAI.

Do you need comfort? Well don’t worry, if there’s one thing I know about it’s comfort food for comfort eating! That good old fashioned classic ‘Bread and Butter pudding’… forget that dim and distant memory of trying to obtain the perfect beach body and get stuck in. Here’s another delicious dish from Elley Westbrook at Twyford Cookers of Leominster .
AGA AUTUMN RECIPE BOOZY BREAD AND BUTTER PUDDING
I’m firmly attached to my Aga, roasts and comfort puds. This is a great recipe to serve up for a dinner party pud or leave out the brandy for the topping off of a family Sunday roast… that bit prior to the unheeded call for help with the washing up. The bit just before the fight for the best sofa (opposite the fire and with uninterrupted view of the Gogglebox). Ahhh family life! Bread and Butter Pudding I have used Hot Cross Buns in this recipe but you can use baps or any kind of bread… brioche is good too. I’ve used an Enamelled Aga Chef ’s dish measuring 24cm x 24cm and 5cm deep. Using a scrap of butter on a wrapper give the dish a good greasing before layering up with the bread and raisins. Ingredients n 6-8 hot cross buns n Butter for buttering buns n 100g golden caster sugar n 3 large free range eggs n 500ml double cream (or single cream or milk) n ½ tsp cinnamon n 150g raisins n 75ml brandy n 1 orange Method n If not using an Aga preheat the oven to 180C. n Soak
the raisins in the brandy in a bowl or jug at the back of the Aga.
n Slice
the hot cross buns in half and liberally butter. Layer these up in your dish.
n Grate
the zest of an orange over the buns and then squeeze over the juice.
n In
a bowl crack in the eggs and whisk. Add the cream and sugar and give another good whisk until the liquid has absorbed the sugar.
n Pour
the raisins in the brandy over the hot cross buns letting any surplus brandy soak into the buns. Even out the distribution of raisins and pour over the cream and sugar making sure all the buns are soaked.
n Leave
to stand for a few minutes before placing into the oven.
n 2 oven
Aga put the grid shelf on the floor of the oven with the cold plain shelf above. Cook for 30 minutes… or until the custard has set and top is Golden brown.
n Otherwise
cook low down in the baking oven for 30-35 minutes.
n Serve
with cream, ice cream, crème fraiche or custard. Hide the scales and Enjoy! 72
