Having spotted a gap in the market Conor Blandford (Salon Manager) and Nick Mutton (Chief Operating Officer) started their business with a clear objective to build a chain of luxury tanning salons to accommodate the expanding consumer tanning and beauty market.

GET YOUR GLOW ON... The decision to build their first salon in Chepstow was taken as research indicated that quality tanning facilities were wanted in Chepstow as no other comparable facilities exist within a 30 minute drive, coupled with the fact Conor and Nick both live just outside Chepstow, making the location an obvious initial choice.

Our first question is probably one of the most asked - Are sunbeds safe, and what are the positive effects of tanning? Glow (Chepstow) uses Ergoline sunbeds, which offer a controlled way to tan and provide appropriate levels of UV to ensure sufficient levels of Vitamin D are achieved and maintained. Tanning in sunlight means the body can be subjected to different levels of UV rays, depending on the time of day, location in the world, month of the year and so on. With a sunbed, a tanning programme can be developed to ensure skin type and the type of sunbed being used, are taken into consideration to ensure that over exposure, including the possibility of burning, is avoided. Tanned skin protects against sunburn, thought to be the main cause of melanoma. If you avoid getting sunburned, the benefits of moderate sun exposure will far outweigh any risks.

Do tanning accelerators really work? Tanning accelerators, or tan promoters as they are also called, are products that can speed up your tanning session to give you more colour with less time spent in the sun or in the booth and are very popular with customers. When exposed to UV rays (from the sun or sun bed), your skin produces a pigment protein called melanin as a protective measure. The more you expose yourself to UV (whether in the sun or on a sunbed), the more melanin your skin produces and the darker your skin will become. Of course when your exposure to UV rays is greater than what the melanin in your skin can handle, you can develop a sunburn.

What do you foresee for the future? We are both passionate about the salon in Chepstow and have a number of plans to build further salons in Portsmouth, Bath, Torquay, Brighton and Cheltenham as well as expanding Glow (Chepstow) to include full day spa facilities such as a sauna, steam room and spa pool. Glow (Chepstow) opened in early July 2014 and in just one year has joined the Chamber of Commerce in Chepstow and has become one of the ‘in places’ to be in Chepstow with several thousand customers visiting the salon regularly. One of the contributing factors for this success is word of mouth due to our presence on Facebook (GlowChepstow) which has over 3,300 likes and Twitter which allows us to communicate with our customers and to promote special offers.

Cue Notes was officially set up in Spring 2015 and this year marks its big launch but the band members have been playing together for many, many years. Wye Life talks to Anna Davies.

CUE NOTES The drummer (Al) and the keyboard player (Tim) were in music college together and singer (Anna) and the sax player (another Al, confusing, I know) played their first corporate gig together in February 2003.

Collectively, they’ve played in function bands, rock bands, jazz bands, big bands; you name it, Cue Notes have played it. The concept of Cue Notes therefore is to cater for any event, throughout that event. So if a client is holding an event with a drinks reception and a party in the evening, they can provide a jazz trio or a lounge music piano duo at the reception, and a full six-piece pop and disco party band in the evening. For a wedding, they can even offer a suitable repertoire for during the ceremony and signing of the register.

Hi Anna, We know you’re busy so thank you for making this time for a chat. First off, what type of music do you play? Quite simply: everything! Our tag line is “the music of here, now and then, right on cue”. We play jazz, swing, soul, pop, Motown, disco: you name it, we do it. If there is a particular song that a client wants for an event, we can provide that, no problem!

To give an example, at a gig we did last Friday (Henry’s Park Place, Cardiff), we played tracks by Dusty Springfield, Aretha Franklin and Van Morrisson one moment, and then Pointer Sisters, Pharrell Williams and Bruno Mars the next. All of the musicians in the band have decades of professional performance experience and we all contribute our influences and inspirations to the band. Your band also has another name Jazz Soul Patrol - tell us a bit about the reason for two names. Jazz Soul Patrol has been together for six years and largely Cue Notes is made up of the same musicians. I lived in Sweden for 18 months and so the band had fewer gigs in that time, but upon my return in Autumn 2013, we pushed Jazz Soul Patrol, and we have been so busy since then. We have residencies in at least four venues in Cardiff and private events in between. However, we don’t just play Jazz and Soul, and so a new brand (not band) was in order. Jazz Soul Patrol has not gone anywhere, but its versatilefunction-band big brother is a truer reflection of what we do. The Jazz and the Soul is definitely still there, along with the other genres too. Who are your main influences? Caro Emerald, Roberta Flack, Aretha Franklin, Celine Dionne, Barbara Streisand, Joan Sutherland, Ella Fitzgerald, Betty Carter, Nina Simone, I could go on. Do you have any favourite venues? We love different venues for different reasons. The Cameo Club has a great 22

crowd who support us without fail. We love seeing the familiar faces who, after more than 12 months residency, have become friends! Tim and I love 73 Cathedral because we do a lounge-music piano/ vocal duo there. We recently did an engagement party there where the bride and groom to be had seen us perform there before, and tracked us down over social media. But then in contrast, we love the Friday night crowd at Henry’s Cardiff. Having the whole bar dancing to Stevie Wonder and Aretha Franklin after a hard week at work is a great thing to share and the energy is fantastic. Much like the genres of music we play, we love the diversity and get a kick out of the contrasts. What advice do you have for anyone who wants to form their own band? It sounds boring, but it’s all in the preparation: the marketing can come later, but make sure you have good set lists, good musicians and a good sound. You are your best advert, so once all of that is in place, the gigs should take care of themselves. Immediately after a gig, I like to chat to the audience, to see what they liked (or didn’t!). Musicians often make the mistake of only playing what they want to play, but it’s so important to play what the crowd want to hear. And last but not least, will you tell us a little known fact about yourself? In 2005 I sang in a band that supported Dionne Warwick at the Celtic Manor Resort- it was a true professional highlight!

Peter Ferrer may not be a chef, but knows good food when he sees and tastes it, and is passionate about bringing a quality offering to Chepstow. Wye Life popped in to find out more.

THE INN CROWD

When was the business established? We opened the Old Forge Coffee Shop (which is attached to the pub but a separate entity) in September 2014 and after renovating the pub, opened our doors on 30th January 2015. It’s a new venture and a complete change of direction.

What style of cuisine will you be offering? I am sure my chef will tell me I am wrong but I think the food is modern British, heavily influenced by the French. It is very much casual dining and the food is what you would expect in a good brasserie in France.

What is your background? I’ve had a variety of jobs from window cleaner to bar pianist. After studying languages at Cardiff University, I qualified as a barrister and have practiced in London ever since.

Tell us about your chef? Aidan Fisher is a star in the making! He knows how to combine flavours in an attractive manner. He was previously four years at the Terry M at the Celtic Manor as a sous chef having started as a pastry chef and worked his way up. He is extremely hard working and is often the first in and the last to leave.

Why did you choose to open a restaurant? I love entertaining friends at home. There is nothing better than a group of friends enjoying a meal and a glass of wine together. Opening a restaurant was a natural continuation. Why did you choose The New Inn? Does it have any historic significance? We moved back to Wales about five years ago and the New Inn was our local pub that was in desperate need of some love and attention. It has been a coaching inn for the past 300 years but unfortunately had fallen on hard times. I fell in love with the building as soon as I walked in and saw the panelled room.

Tell us about the décor? There is a mixture of styles. The Old Bar is a traditional pub with antique beams and fires at either end. The Empress of France Bar is a panelled room salvaged in the 1960s from a cruise of the same name which had been scrapped at Newport. The Lounge Bar is more contemporary. It was a challenge to maintain the traditional feel of the 17th Century building, while blending in the modern extension to the rear in a softer manner. Farrow & Ball colours was the answer. 28

Do you source your produce locally is this important to you? As far as possible, we source locally. Our fish comes from Ashton’s in Cardiff, local cheeses from Vin Sullivan’s in Blaenavon and the meat from Douglas Willis’ farm north of Cwmbran. We encourage our customers to bring in their own produce and we have a swap scheme where they swap local produce for lunch or a beer. Are you open for breakfast, lunch and dinner? The Old Forge Coffee Shop is open from 9.30am to 5.00pm Monday to Saturday. The New Inn is open Wednesday to Sunday from 11am. We don’t have a breakfast menu, but I am sure if you ask the chef will be happy to rustle something up. Where do your customers come from? Mainly from the Chepstow and Newport area, though the word is slowly spreading. We had a family from Canada who were staying at St Pierre’s who said the meal was the best they had had in the UK!


Are your prices affordable? We are very competitive in terms of the manpower that goes into the dishes. The home-made burger and chips is £9 and, although we have dishes which go up £25 per dish, we have tried to offer a wide selection at different prices.

We have a wide variety of customers from businessmen using the WiFi to catch up on a little work or having meetings, right through to mothers with children (we have a kid’s corner including a play café). 29

Are you open for Sunday lunch? If so, what is the offering? Yes, we do a traditional Sunday roast. It varies from Sunday to Sunday but usually includes roast beef, chicken or pork and a vegetarian or fish option. The truffled cauliflower cheese as a side dish is particularly rated.

Tell us about the coffee shop. What is the offering? We have a brilliant local coffee roaster based in Bristol who supplies us with seasonal coffee beans. A proper cup of coffee should be silky smooth and we train our baristas to stretch the milk. Apart from great coffee, we offer homemade cakes and panini’s and typical coffee shop type fare.

What are your future plans? I think one step at a time. We have only been open since January and the priority is making sure that we can offer consistent service and quality food. If we make a success of this, then who knows! 8 A4

St John’s on-the-Hill, Chepstow has a reputation for not only providing boys and girls with a superb academic education, but it also prides itself in offering a welcoming and nurturing environment where children are encouraged to develop their personalities as well as their intelligence. In June it was announced that it had merged with Dean Close School in Cheltenham.

FIRST CLASS Wye Life went back to school for a morning and talked to the head of St John’s on-the-Hill, David Griffiths, to find about what makes it such a brilliant school.

Please explain briefly what St John’s on-the-Hill offers? St. John’s offers co-educational schooling for children aged 3 months to 13 years. Not only do we have an excellent reputation for our academic achievements, we also offer lots of sport, music, drama and art opportunities for every child. We cater for the full range of abilities and our children range from amongst the most able on a national level to those with learning needs. What makes St John’s so good? Our superb team of staff and our incredibly supportive parents. The word ‘community’ is often used by schools but in our case it has real meaning. We do not have rules as such, but instead a brief and general code that all children are encouraged to follow. The ‘St. John’s way’ encourages children to be the best that they can be in all that they do.

How does St John’s on-the-Hill compare with other schools? St. John’s is different to many other schools because we go up to the age of 13. This means we are better placed to offer a range of opportunities for the children for responsibility and development which are not available to them elsewhere at that age. However, all schools in the locality are very good and parents must consider what is the ‘best fit’ for their child and themselves. We always welcome prospective families with open arms and visits can be arranged at any time. You recently joined forces with Dean Close. Please tell us more about this. Dean Close is an outstanding co-educational school in Cheltenham. The amalgamation of the two schools is very much a win-win situation. It gives Dean Close a foot-print in the area and St. John’s the chance to make significant investments into its future. The investments will be in the buildings and fabric of our site but also in the educational and pastoral opportunities available. For example,

Dean Close has a String Quartet in Residence who will visit to work with our musicians, and a professional rugby coach who will add something to our training programme. Where do pupils come from geographically? Most children who attend St. John’s live within a 20 mile radius. We serve Chepstow, Monmouth, Newport, Ross-on-Wye, Lydney, Coleford and the wider Forest of Dean, but we also have some children who board, including international students. With the merger with Dean Close, we will be working to promote St John’s to the broader area and hope to attract more children as we grow stronger. We are an excellent location for families located in the M25 circle who seek an outstanding education for their children in a green environment as we have the Wye Valley, Forest of Dean and Severn Estuary right on our doorstep and Chepstow offers a safe environment. However, we are also within 40 minutes of Bristol and Cardiff and, with a train station in the town, we are just two hours from the centre of London. What achievements has St John’s enjoyed recently? Our last full inspection was in 2012 and we were graded as outstanding across all areas. What are your aspirations for the future at St John’s? St. John’s has always been about high quality care for its pupils and this will remain the case in the future. We are about to go through a period of considerable investment which will improve our material conditions


considerably and enrich our resources. No matter how good we are now, or how good we become in the years to come, we will always strive to do better. Dean Close headmaster, Jonathan Lancashire, explains his reasons for wanting to acquire St John’s on-theHill Preparatory School Senior schools like Dean Close really need there to be a strong preparatory schools sector across the country. Parents need excellent local schools for their young children, even if they might be willing to look further afield when their children reach the age of 13, and we need Heads of those schools advising families on suitable destinations. St John’s-on-the-Hill has a hugely loyal following, among old pupils, parents and staff, and this isn’t surprising. It is a place where generations of children have grown up and been well educated; it is respected in the locality for its standards, its sporting success and its links to good senior schools. It is small enough to feel very secure and nurturing, it’s a flagship for co-education and with its day care nurseries it fits into family life from the very beginning. The snag is that this is a very tough proposition financially. Small schools up and down the country feel the pressure of regulation and compliance, like all small businesses. In addition they often have to maintain historic buildings, to

provide high-quality IT infrastructure and new facilities, all within limited budgets. So perhaps the long-term answer lies in the sort of arrangement that St John’s and Dean Close have come to. St John’s gets Dean Close’s financial backup, sharing of exciting resources and people, and the scope to develop joint projects. Dean Close gets St John’s trusted knowledge of the locality, some excellent pupils moving on at 13+, and a more secure base for the future. It really is a win-win.

MONNOW MARQUEES BRINGING THE OUTSIDE INSIDE

How long has the business been established and how did you get into this business? Our first marquee was collected from the manufacturer in France in September 2002. At that time we operated another business and had hired a marquee for a trade show and what arrived was extremely disappointing. We decided after that to buy our own marquee and use it for trade shows etc. People got to know that we had made the purchase and that our marquee was being looked after and was clean and tidy so people started asking to hire it from us and things started from there. Do you supply just the marquee? We are able to supply anything for our marquees from ‘the teaspoon to the tent’. Although I mustn’t call them a tent as our partner Alan Powell gets upset. We provide various options of flooring, windows, roof sheets, linings, lighting, furniture including dance floors, staging, bars, sofa areas, catering equipment, generators, heaters etc. If there is something our client wants, that we don’t have, we will try our best to source it for them.

Are marquees weatherproof? Our marquees are maintained and looked after extremely well and are as weatherproof as they’ve been designed to be - the manufacturers have strict guidelines with regards to marquee construction and various weather types and we adhere to these guidelines at all times. When do you put up/take down the marquee? This depends greatly upon the venue, if we are working at a venue such as a hotel then there will be build and down restrictions that we will have to work to. If the marquee is to be in a client’s garden or field, then there can be a little more flexibility on the build and down times and this often helps the client if they wish to have the marquee built earlier so that they can dress it to their own tastes in plenty of time for their event. If we are working with local authorities or event companies, then we will work to the build schedule provided.

Does the site need to be even? Not necessarily - but we can’t quote a client for an uneven site without a site visit. Over the years we’ve developed our own flooring system that can be used on uneven sites; the framework is installed first, our board flooring on top and then the marquee on top of that. It is lovely to work with clients who require this service, especially on our initial visit as they have thought they could not have a marquee and ‘yes they can’.


Does the marquee do any damage to the site it is on? If a client is having our board flooring then it is less likely to cause issues at site and very often you cannot see that we have been to site when we leave. If we are installing matted flooring, then it is placed on a plastic sheeting underlay and can cause yellowing of the grass once the marquee has been removed. The grass recovers well and you’ll soon have your lawn back again. How is the marquee heated and kept cool? We have access to both heaters and air conditioning units that can be used in our marquees to help to maintain a constant temperature. Also our window walls and white walls can be opened easily so you can make the marquee as comfortable temperature wise as you need to. What can we say about Quails? This family run, Usk based business has class and quality running through its veins. Quails is renowned for its kitchens but there’s much, much more to this great independent business. Owners Drew and Sian spill the beans…

QUAILS OF USK Drew, can you tell us where your creative spark began? I took an interest in woodwork at the age of 12, on my grandfather’s lathe - he was a French polisher and upholsterer. From there I started turning wooden bowls and foot stools from local driftwood. Then, as I could use a lathe, I was encouraged by my woodwork teacher, Mr Lovitt at Caerleon School, who became a huge influence for me and I fell in love with joinery. This lead to my first (and only) job with a local shop fitters which lasted just six months, as I left to start my own business.

We know that you’re renowned for your award winning kitchens, do you take on other projects? Yes, we have a dedicated, multi-skilled workforce in our two workshops and they love the challenge of bespoke commissions. We produce complete bedrooms, libraries and wine cellars, studies, walk-in wardrobes, cinemas, dining rooms, boot rooms, swimming pool areas, halls and bespoke individual pieces of free standing furniture. Our specialist joinery department produces stairs, windows, doors and we’re currently constructing a wooden car.

How have you grown your business to where it is today? Our furniture business was launched in 1979, when I was 17, and the business grew with a multitude of projects; designing, making and installing. This required employing extra hands and it was then that I met Sian, who took a keen interest in the business as she had an art/design background. Sian very quickly became a valuable asset and joined the business full time. Hence work became a love rather than a chore, and still is today!

What inspires your creativity? I’m inspired by what is around me. I always see the beauty in creations and admire attention to detail. This has become even more important with the use of the internet. Every project has to start with a pencil and a pad; then a sketch drawing is produced before any electronic drawings. One of my main inspirations is the actual client, visiting them at home and sharing their passion and ideas at the very beginning of each commission. This releases the drive to supply the best quality product for realising our clients dreams.

As our business has developed, and we’ve employed a number of specialists, it’s allowed each of us to focus on our core strengths. I was able to concentrate more on the design aspect, and as a result we opened our Usk showroom in 2002. More recent improvements have seen us develop a second workshop enabling us to produce whatever we need in house, with an eye on quality at all times. This has allowed our business to flourish and we always re-invest by employing an apprentice every year.

Sian, how do you both manage your work/life balance? Keeping a balance is a struggle sometimes, however our work is so enjoyable and the most important thing is we use our sense of humour to create a friendly environment. Spending time with our family is important - we have four children, our daughter is the eldest, and three sons - of which the two eldest work in our business. We love travelling to trade shows and usually manage to bolt on a few extra days. Drew enjoys fly fishing on the Usk, and shooting with the boys - we’re huge Welsh rugby fans and we love watching our 14 year old son play rugby. We hope to release more 42

time as our sons grow with the business; they both joined straight from school Monty’s in design and Harry is Head of Installation. Do you have plans for the future of the business? Definitely. We’re all very excited to be investing in new machinery; a second ‘Living’ showroom, and as we’ve said previously, for our boys to take more leadership of the business. We’re seeing a vast increase in business coming from London with whole refurbishments and, satisfyingly, the more we do the more we are referred by our existing clients. Our website is generating new enquiries and exhibiting at selected trade shows is also bringing more enquiries. As enthusiastic gardeners, Cath and Gwyn Thomas, wanted an additional room with lots of windows so that they could enjoy the fruits of their labour. They had originally thought they wanted a conservatory, but when MPN Windows suggested an orangery, it opened their eyes to exciting new possibilities.

A DIFFERENT VIEW

Wye Life called in on Cath and Gwyn at their beautiful home in Higher End, St Athan on a sunny summer day to find out more. How did you hear about MPN Windows? We saw an advertisement in the local press. What made you want a conservatory in the first place? The property sits in just under half an acre and I (Gwyn) love to grow my own vegetables and Cath loves to grow a large variety of flowers. Our two main reception rooms were quite dark and neither allowed us to appreciate our hard work. Cath is particularly fond of dahlias so, now that we have the new orangery, we have relocated these to the rear of the property so that we can admire them.

Did you get other quotations? Oh yes, from four other reputable companies - some local and national. What made you choose MPN? We are straight talking people and don’t like to be quoted one price and then find out that there are add-ons. The representative who came to the see us, told us that they offered everything in the price except the two p’s: “We don’t pay and we don’t paint!” We liked his style! They weren’t the cheapest, nor the most expensive, but we liked the fact that everything was included in the price and they didn’t want a deposit or monies up front - only when the job was finished. We did have to pay for planning and architects fees, which we originally assumed were included, but we still thought that MPN were the best option for us.

How was the process? The job was project managed by the tradesmen themselves who all seemed to know what they were doing. From start to finish, the boys were lovely, clean and tidy. Cath made endless cups of tea and coffee but she was happy to, as the boys were very polite and considerate. Did MPN go above and beyond expectations in your opinion? Definitely. We would happily recommend them.


What do you love about your new orangery? We have tried out the underfloor heating and it works perfectly. Now that we have been enjoying some warmer weather, we’ve found that we can’t sit in the orangery because it’s too hot, so we’re waiting for our blinds to arrive later in the month – then we’ll be able to enjoy the room to its fullest. We also really love our New Wave bi-fold doors. They can be opened in individual panels which is really handy. All of these features were included in the quotation. The roof is self-cleaning which helps with birds doing what birds are wont to do.

James and Julie Dawson opened The Gate for business in October 2012, after a three month renovation project during which the kitchen was completely gutted and re-built to a standard which would allow the preparation of top quality fresh food dishes. Never ones to refuse a visit to a pub we set out to visit James and Julie, and their delightful dogs Hamish and Maggie. James and Julie, can you tell us about your concept for The Gate? From the outset our vision was clear - a traditional country pub serving the local community with a premium fresh food restaurant attached. The décor and the ambience reflect this vision - offering the best of both worlds - cosy low light traditional pub with a range of up to four real ales complemented by the airy and roomy restaurant serving food from a team of five outstanding chefs, passionate about their work. This profile has served us well so far. Our growth has been encouraging. We know from our suppliers that we often buck the trends which have suggested that traditional pub trade is on the wane. Our wet trade (the pub) has increased a remarkable 15% year on year, with food growth being more modest. We put this down to the economic conditions and anticipate positive growth in 2015/16 as the economy picks up.

What type of food can we enjoy here? Our food is British cuisine with an International (mainly French) influence. Our à la carte menu changes about three times per year. The current dishes are all Welsh/British in style but we have, in the past, presented food with influences from across the world: Thai, Chinese, Turkish Moroccan, Italian, and Indian. We use local ingredients wherever possible and source almost all of our meat from Wales. We have an outstanding pool of suppliers who work with us to ensure that we are working with the very best ingredients. Where do you source your ingredients? Main suppliers include: E Ashton, the Fishmonger from Cardiff, who delivers fresh fish to us on a daily basis. Huw Beavan, farmer and family butcher in Abergavenny supplies all of our roast joints for Sunday lunch as well as a range of other Welsh lamb and beef. Castell Howell from Cross Hands in West Wales is outstanding as our main catering supplier. Their Celtic Pride brand meats feature regularly in our dishes. Local fruit and veg supplier PJ Jones also support our business with daily deliveries.

We’ve heard that you run special event nights. Can you tell us a bit about those please? We run a programme of special events throughout the year - some of which are becoming a local institution. The events can be divided into two groups. The first is aimed at fostering community relations and include Christmas events and summer fun-day events. September sees The Gate host the 2nd Llanfrechfa Scarecrow Festival & Family Fun Day. We expect to see in excess of 50 scarecrows erected along the B4236 from Cwmbran to Ponthir. The other group of events are centered around food and drink. Gourmet Nights have proved popular with regular customers - where the chefs present a 6 course meal on a pre-selected theme. We also hold regular food and wine evenings which tend to focus on one country. So far this year we’ve arranged a Spanish and an Italian food and wine evening. Both of these highly successful events were well subscribed and featured guest speakers and special wines to accompany the food. We also indulge James’ passion for Single Malt whisky by hosting occasional

whisky tasting events. Again, these have proved highly successful and introduced some outstanding Scotch whiskies to our customers. On the back of this success, The Gate is hosting a weekend tour to Islay for a group of whisky enthusiasts this October. The itinerary includes tours and tastings in a number of distilleries in the Highlands, Lowlands and Islay. What are your plans for the future? We have spent the first two and a half years honing both our food and our reputation. Whilst we do not plan to seek recognition as a ‘fine dining’ destination, we would like to achieve recognition for our premium fresh food. We have already achieved the status as “The most recommended restaurant” in Torfaen in 2014 and Jon Fryer (our Head Chef) was awarded “Chef of the Year” by readers of Voice Magazine in 2013. We would like to see accreditation in the future from nationally recognised rating organisations and become the place to go in the Torfaen area for fresh food. It’s apparent that James and Julie run a high quality business which is extremely popular with both locals and clientele from far and wide. The charm of this business is that both James and Julie are very much hands on. We have visited The Gate several times and can confirm the food is delicious and beautifully prepared.

THE PARKWAY HOTEL & SPA How long as The Parkway been established? We have in operation now for 30 years. We pride ourselves upon being family owned and family operated for over three generations! How long have you been involved and what is your role? I started at the hotel 15 years ago working in the coffee shop. I have worked in every department and am now proud to be General Manager . How many bedrooms are there? We have 70 bedrooms - doubles with 16 twin rooms and one bridal suite. We have now added an extra ten rooms to make two penthouse suites with balcony and separate lounge, along with eight executive rooms. What type of clientele do you cater for? We cater for all clientele from families to high end corporate clients. We pride ourselves in having something for everyone! Tell us about your restaurants and function rooms. We have a beautiful airy and light restaurant called Ravellos. It is very popular with the locals, serving Ă la carte dishes selected by our Head Chef, Clive Williams, incorporating locally sourced products. We also have a locally famous carvery which is outstanding. We are thrilled to have recently been awarded our first AA Rosette which

shows the hard work and dedication that Clive and his team strive towards. When it comes to food, I love simplicity. When it comes to restaurants, simplicity can be hard to find so imagine how refreshing it is to visit a restaurant that offers just three mains. That’s the ethos of Burger & Lobster. We visit their first restaurant in Wales.

BURGER & LOBSTER This is our second visit to Burger & Lobster on The Hayes in Cardiff. We always visit an establishment twice before featuring in our pages. We received a recommendation from a friend who had eaten here and said we must try it. I’ll admit we struggled a little to find it on our first visit, unwisely not taking the time to check location and directions beforehand. Had our friend intimated that it was on the first floor of what used to be Habitat on The Hayes we would have known instantly. Once up the stairs, we were quite honestly wowed by the interior. The old columns and many of the original features have been retained and, if great Victorian engineering floats your boat, you’ll be in heaven. I can’t help feeling the designers have been inspired by Drew Pritchard’s Salvage Hunters TV show - it has that lovely tactile feel about it - open but intimate. Muted, industrial greys and warm wood finishes provide an appropriately stylish feel to the room and the central bar positively glows like a beacon in the evening light while several bar staff mix cocktails and pour drinks. To the right is a feature wall of lobster filled aquaria - very impressive. To the right again, an open kitchen with a brigade bathed in golden light attended by a steady stream of waiters and waitresses. They reminded me of busy bees coming and going from a hive.

As we head to our table, there’s already a great vibe about the place and, as the evening goes on, this only gets better with great music from the resident DJ and Burger & Lobster’s attentative staff attending to our every need. They say people make a great restaurant but you have to have to have a great ambience to make people want to dine there. Clearly Burger & Lobster has got this right. The food offering, as I mentioned earlier, is incredibly simple: you can order a burger, lobster or a lobster roll. 66

As there were four of us dining this time, two went for the burger and two for the lobster brioche roll. Each main is priced at £20 and is excellent value for money. My sixteen year old son is a connoisseur of all things burger so when he says, and I quote, “That’s the best burger I’ve ever tasted!” I’m astonished, not because I don’t believe him, but because he’s actually talking to me. The lobster brioche roll is quite simply scrumptious. Juicy and tasty and ever so filling.


I actually posted on Facebook after including a clip of Mr Creosote from Monty Python’s Meaning Of Life. I couldn’t eat another thing!

Actually, it’s the flight of stairs to the loos that bowls you over. Striking murals adorn the walls and we all agree Burger & Lobster is even more cool than we thought.

Being so full, after fifteen minutes, we decided to share a couple of desserts and opted for the upside down cheesecake and Eton Mess.

Would we return? Absolutely. Burger & Lobster is exactly the kind of restaurant that Cardiff needs.

Both were polished off with gusto and we sat soaking up the atmosphere while one of our party excused himself. “You must check out the loos!” he exclaims on his return.

It’s not trying to be all things to everyone. It knows what its offering and, having eaten there twice, the offering is consistently an excellent one. 67

THE NEST We stopped to taste their legendary Scotch Eggs - but not before a quick chat with owners Neil and Penny Chambers… What led you to launch The Nest? We began by working from home, with Penny cooking and supplying shops with produce and also catering for parties whilst Neil was a freelance artist. From there we set up The Handmade Scotch Egg Company in 2003 and soon realised that we had a very niche product. As the business grew we employed staff and moved into larger premises; settling at Hop Pocket Craft Centre. When it became apparent that we needed bigger headquarters we decided to leave the production where it was and find new offices. Then, out of the blue we heard that Little Verzons might be available. Fate was on our side and we bought 14 acres including empty buildings, derelict poly tunnels and over- grown orchards and then had to decide what to do with it all! Within two months we rewired, replumbed, recycled and upcycled the roadside buildings to create The Nest, our farm shop café. During the early Scotch egg days we would sell our produce at farmers markets, food festivals and agricultural shows. From the friendships that we made with fellow entrepreneurs, we

decided to sell their products and that’s how the deli started. The café became so popular that we had to re-site it to the front of the building and the shop replaced the original café site. We now rent out a site next to our café to Newent Plant Centre, which opened officially on March 1st 2015. Both businesses very much complement each other and the whole venue is an extremely popular destination site. Evolving further, The Nest now has a children’s activity area within the café; there are a number of family and dog friendly orchard walks and an artisan studio is planned for the future. Our ‘pick your own’ orchards open July to September with varieties of damsons, plums, apples, and greengages. Chickens are housed close to the orchard on behalf of Hansnett Farm and you can actually order the chickens, complete with pens, coops, runs etc. What type of food do you serve in your café, and are you licensed? Yes - our premises are licensed for all daytime and Thursday and Saturday nights up to 11pm.

The Nest has wi-fi for those who need to stay connected, and sells local bread, milk and vegetables. On the menu we have, of course, scotch eggs, various toasties, quiches, brunch, bacon butties, eggs, omelettes, plus sharing platters of either local cheeses or British tapas. Amongst our most popular dishes are our Ledbury rarebit and boiled egg and soldiers! Obviously different teas and coffees and cold drinks are available, plus the much-loved carrot cake, sponges, bakes, croissants and tea cakes. We also serve a range of local wines, beers and ciders. What produce do you stock in your deli - and is it local? Knowing who made our food and where it comes from is really important to us. A little bird told us that the Old Railway Line Garden Centre has won the Garden Centre Association’s Best Garden Centre in Wales for the past three years; so we went to see Katie Eckley, manager of the independent, family run garden centre, and daughter of owners Mark and Christina Cleary.

RIGHT ON TRACK Hi Katie, this is obviously a family affair, how long has your family been involved in horticulture? Yes, there are eight of our family members involved in the business. The first 6 x 8 foot greenhouse was opened to the public in January 1990. Mum and Dad sold home grown vegetable plants, shrubs and bedding plants. We are now celebrating our 25th year in business. On Saturday August 22nd we are hosting a party for all our customers; which will include a bouncy castle, live music and lots of cake! Everyone is invited to join us for the day, it starts at 11am until 4pm.

What products and services are popular here? We run events throughout the year which we list on our website and update regularly. In our award winning plant area we have top quality shrubs and trees, and offer a two year hardy plant guarantee. Our 150 seater restaurant serves hot food all day, with our popular Railway Roast on Thursdays and Sundays, and afternoon tea is served daily from 2.30pm. We also have our farm shop which stocks food and drink from over sixty Welsh or local producers. Our shop sells gifts and homeware items to suit all occasions and we have a premium range of outdoor furniture during the spring and summer months. In the winter we produce a fabulous Christmas display, complete with Santa’s Grotto and live reindeer! We installed a clothing department just over twelve months ago which has proved very popular with our customers so we’re hoping to develop this collection further over the coming seasons.

What advice would you give to someone starting a garden from scratch? Try and plan what you want to achieve but don’t complicate it too much. Some people can be put off by the thought of gardening being hard work and time consuming but it doesn’t have to be! You can always come to us with an idea and we can suggest ways in which you can achieve your dream garden without overworking yourself. You’ve won numerous awards, which are you most proud of? We’re thrilled to have won Best Garden Centre in Wales and the West for the last three years running. Each year we try our best to provide our customers with the best quality of service possible. This year, for the first time, we also won an award at the prestigious Garden Retail Awards for our Wild Wednesday events. These children’s events are on every Wednesday during Powys school holidays and aim to entertain children for an hour or so - they’ve been so popular we’ve had to add extra sessions to cope with demand! You’re obviously extremely busy. Dare we ask if you have any plans for the future? Absolutely - we aim to develop our events further, to focus on families and meeting the needs of our community.

Bryngwyn Manor commands one of the most expansive vistas in Herefordshire, with gardens and grounds of around four and a half acres. The Grade II listed Victorian house boasts marble columns, stone archways, stained glass windows and gargoyles. Rumour has it that the original owner, Sir James Rankin, 1st Baronet, regularly used to ride his white stallion up the main solid oak stairs.

TO THE MANOR BORN Phil Meadows and Raymond Chew purchased the gothic manor house via Hunters, the largest independent network of sales and lettings agents in the UK, and the fabulous transformation began…

Is this your first renovation project? Our background is locating buildings or small residential care homes and extending them into much improved residences. Then we appoint a manager to run each home, and we can take a step back. How did you find this property - and what made you choose this as your next project? We were searching for our next project and found Bryngwyn Manor, which at this point was in a state of disrepair, via the internet. We arranged a viewing via Matthew Addison, and fell in love with the Manor at first sight. Basically the whole Manor was gutted and it took a year to replace all the windows to the original style and to start constructing the twelve 2-3 bedroom apartments. Currently six apartments have been completed in the main block and three quarters of the two wings are finished. We’re both very much hands on; we decide jointly on the way forward and we employ a small team of specialist builders who we’ve have been employing for the past 10 years. For instance we sourced the solid mahogany doors (to match the original doors) from Indonesia and had it shipped over.

Are you emotionally attached to the property? Would you live here? Yes there’s a huge emotional pull towards the manor. So much so that we’re currently converting opposite ends of the Manor, I (Phil) will be moving into the original Town House over the summer and Raymond will move into the original ballroom once it’s completed in spring 2016. What advice would you give to any of our readers who may be thinking of buying a property to renovate? Location is key, and having the vision to see the end goal. Times will get difficult and you may feel disheartened, however with drive, and belief, you will get there in the end. What made you choose Hunters Estate Agents to market the apartments? We originally purchased the property from Matthew of Hunters, and indeed Hunters were very involved at the design consultation layouts and have always been there to offer much valued help and support. Any plans for the future? To continue to develop the business by working with exceptionally talented people to build the Beetle Juice brand and help us to take the party throughout the country!

Kieran, tell us a bit about your background? I moved to Cardiff in 2008 to study at Cardiff University and never left! I completed an Undergraduate and Master’s Degree and was elected Vice President of Finance and Commercial Development at Cardiff University Students’ Union (developing their club nights, organising a Summer Ball for 3,000 students, improving their food and drink outlets and managing the pennies of a £7 million company). How long have you had your business, and what led you into this business? The Beetle Juice story starts in 2012 in Farnham, Surrey when brothers Julian and Jonny and friend Harry had the idea of converting a 1970’s VW van into a cocktail bar to ‘take the party to the people’. Since then the business has gone from strength to strength - increasing the fleet from 2 to 10 bars and doing new and exciting events, including; music and food festivals, sporting events, private parties, weddings, corporate events, and school and university balls. In winter 2015 I was approached by the boys with an exciting opportunity to introduce Beetle Juice to Wales and the South West. Since then I’ve developed some fantastic links with various venues and have booked up my bar, ‘Alice’, for a number of exciting events this summer, including Polo and Celebrity Golf at the Celtic Manor, weddings, private parties, jazz festivals, fetes, pop-up cinemas and much more.

What type of events do you work at? We do a whole range of events and operate in a very flexible way. We do weddings, private parties (birthdays, anniversaries, celebrations etc…), music festivals, food & drink festivals, hen and stag do’s, fetes and more. If you have an event and somewhere for us to park up - we’re there! Also, we’re able to work alongside venues that already have a bar in a ‘dry hire format’ - that way, the Beetle Juice bar acts as a clean, convenient and attractive way to extend your bar area outside for weddings, parties, corporate events and many other events! We work particularly well at Manor houses, Barns, Castles, Lodges and venues that have beautiful gardens and grounds! What areas do you cover? After creating Superman inspired jewellery and an unbreakable wedding ring for Laurence Fishburne, Cardiff jewellery designer Neil Rayment really is flying high.

As a fan of the superhero and friend of the film’s star Laurence Fishburne, award-winning goldsmith Neil Rayment wanted to create an out of the ordinary tribute in the shape of Kal-El’s Crystal - an homage to Superman’s birthplace, a timeless classic, expertly crafted in platinum and diamonds. “I was looking for something spectacular, I’m a huge fan of Superman and the franchise featured heavily in my childhood,” says Neil, owner and artistic director at Advanced Jewel Craft. “What better place to seek inspiration than the birth place of Superman?” Advanced Jewel Craft attracts clientele as sparkling as its bespoke pieces. The iconic brand has slowly blossomed since its inception in 2004 and is now a firm favourite amongst A-listers from LA to Abu Dhabi. Oscar-nominated actor Laurence Fishburne is one of Neil’s most prestigious clients. The pair met when Neil briefly switched jewellerymaking for acting and appeared alongside him in The Matrix sequels. Neil was honoured to be tasked with designing and creating Laurence and his wife Gina Torres’ wedding rings.

We worked on The Matrix sequels together. We became friends on set and then I found out that Neil’s passion was for jewellery design. Have you kept in touch? Have you been over to Wales to visit him? Yes we’ve kept up with each other but still have not made it to Wales I’m sorry to say. I’ve heard that it’s a very beautiful country.

Neil designed and made your wedding rings. That’s a high pressure assignment - how was he to work with? He was terrific. The basic design was worked out between Neil and my wife. We’re delighted with the result. Can you tell us a little about the inspiration behind the design? Gina wanted something that would be unbreakable for me. I’m a would-be drummer, so I’m always beating things to hell. The platinum band and three diamonds are all a reflection of my personality and style. How involved were you in the design process? I’m very creative but I really felt it was best to trust both Neil and Gina on this one. It was our first custom jewellery experience. Neil often takes inspiration from films. If you could challenge Neil to design jewellery based on one of your previous films, which would it be? Probably King Of New York. I think that would be an interesting challenge for Neil but one I’m confident he could rise to. Created in his Cardiff Bay studio, Advanced Jewel Craft’s pieces are beautiful and exclusive. Neil adopts a personal approach, forging firm relationships with his customers. And while he works with A-list clients, his feet are firmly on the ground. “Jewellery is something that needs personal attention,” Neil says. “You can get entangled in the glamour, the parties, the shows, but the most rewarding thing is to see someone wearing one of my pieces and the pleasure it brings.”

Welsh Hearts is an exciting new charity set up to save lives in Wales and to raise awareness of heart disease. We got to meet the founder of Welsh Hearts Sharon Owen and find out what inspired her to set up the charity and to share their successes so far.

Why did you set up Welsh Hearts? Many people may be surprised to hear that heart disease accounts for a third of all deaths in Wales, where the death rate is higher than the in the majority of countries in Western Europe. This shocked me and it’s a cause close to me on a personal level as I have a heart murmur and whilst it does not affect my day-today life I am very aware of the problems it could cause in the future. I wanted to raise awareness of heart disease and save Welsh lives. I have worked in the charity sector for a number of years so had a great foundation to set up Welsh Hearts in 2013 and I am so proud of what we have achieved in a short space of time. What has Welsh Hearts achieved since it was launched? Welsh Hearts is all about managing and preventing heart disease in Wales. There are 8000 sudden cardiac arrests in Wales, with only a 3% survival rate. However when a defibrillator is used, the survival rate increases to 47-50%. We launched the Dai Fib Appeal because our ultimate aim is to place a defibrillator next to every fire extinguisher in Wales. In the last two years

we have distributed 180 defibrillators in communities across Wales and with the help of over 200 medics we have trained over 6,340 people in CPR and how to use the life saving equipment. We are also very excited to launch a heart-screening program in January 2016 for 14-35 year olds to detect any cardiac abnormalities. Where does your job take you geographically? Welsh Hearts takes me all over Wales. My job involves a lot of travelling up and down the country - giving talks, demonstrations and meeting with various people in the medical profession who give up their time for free to further the work of Welsh Hearts. Do you work alone or do you have a team working with you? I couldn’t do this job and achieve all of the above without the great team behind me. I am very lucky to have support and commitment from volunteers, those in the medical profession and people throughout Wales who attend our fundraising events and get involved.

How could the people of Wales get involved in Welsh Hearts? We are in urgent need of volunteers who can fundraise for us by setting up their own events and helping to spread the word. We are also always in need of Trustees and volunteers to help with the running of Welsh Hearts so if you have skills in finance, admin, marketing/PR and have a couple of hours to spare we would love to hear from you. We also offer free CPR and defibrillator training so if you are interested in this for your local community please get in touch. What makes you happy? I love musicals and am planning on getting back on the stage and doing a musical next year to raise money for the charity. Watch this space. Wife and mother-of-two Louise Powell was the victim of a sudden cardiac arrest. Thankfully, there was a defibrillator nearby, along with trained members of the public, who were able to save her life. But there aren’t enough defibrillators or trained people in Wales to give the best chance of survival during the first few crucial minutes. We are the charity at the heart of saving lives in Wales.
