WELCOME On my seemingly never-ending travels around Monmouthshire, Herefordshire and south Powys, I’m always amazed by the many new and well-established independent businesses we come across. This issue we’re very proud to introduce readers to some familiar faces and some wonderful new hidden gems. I’d also like to give a special mention to Gill aned Alan of Atelier Gilmar, ‘The Goldsmiths Of Monmouth’, on the opening of their new premises in Church Street – a welcome addition to the Old Town. It’s Chepstow’s 950th anniversary this year and you can read more about the history and events that are planned on page 30. We’d like to wish the old town the very best. We had an excellent response to our planned feature with lots of great independents showing their support - thank you.

TREATMENT FOR THE WHOLE FAMILY We spoke to Melissa Folly, owner of Shires Chiropractic Clinic, to answer some of the most frequently asked questions about Chiropractic care. What is Chiropractic? Chiropractic is a primary healthcare profession that specialises in the diagnosis, treatment and overall management of conditions that are due to problems with the joints, ligaments, tendons, nerves and muscles, especially related to the spine and extremities and the effects they have on the nervous system. What does treatment involve? Chiropractic treatment involves safe, gentle, specific spinal manipulation to free joints in the spine and other areas of the body that are not moving properly. Apart from manipulation, we may use a variety of techniques including massage, ice, heat, acupuncture and exercise as well as advice about posture and lifestyle. Will it hurt? Chiropractic treatment is usually painless unless an area is inflamed. We work with your tolerance and will always alter the treatment according to your situation. What is the ‘popping’? Sometimes a pop will accompany the adjustments that your chiropractor makes to the joints. Lubricating fluids are found between the surfaces of the joints. Some adjusting techniques gap these surfaces apart very quickly. A bubble of gas forms in the liquid due to a change in pressure making a “pop” sound. The same phenomenon occurs when opening a champagne bottle. How do I know if I need treatment? Back and neck pain are the chief complaints for which patients seek chiropractic help. However we do treat all areas of the muscular and skeletal systems.

You should consider seeing a chiropractor if you experience frequent pain in your back, neck or joints, as well as headaches. This is especially so if intense soreness follows an accident, activity, household chores or prolonged periods in one posture. How long does a treatment last and how often would I need treating? The first treatment is the longest, 45-60 minutes. During this appointment we will go through your full case history and undertake an examination to determine the caused. Once this is completed the findings will be explained, discussing what the diagnosis is and what treatment plan would be recommended for you. There will always be opportunity for you to ask questions as we feel it is really important that you understand what’s causing your symptoms. Following treatment times are around 15-20 minutes. The amount and frequency of treatment will then depend upon your individual case and many factors will influence this.

When the pain stops does that mean the problem has gone? In many cases pain is often the last symptom to show up and usually the first symptom to go. Remember pain is just one of a number of symptoms your body experiences when it isn’t working right. Not all signs and symptoms improve at the same rate. Even though you can feel better relatively quickly your body may not have the time necessary to change old habits and patterns of movement. Remember we are working on the root cause of your condition not just the pain. Or key aim when treating you is to get your body moving to its optimum. Which is why we offer patients maintenance treatment once they are free of symptoms, to keep them moving and feeling well.

Situated in the heart of this cosy Herefordshire market town The Inn at Bromyard is a cosy newly refurbished pub in a gorgeous Grade II* listed building with a fabulous timber frame construction, and is popular with locals and tourists alike. Previously the Inn’s Manager, Sue Turton snapped up the lease when it was offered to her. We chat with Sue over a glass of wine…

Realising that the right mix of staff is crucial for any business she was thrilled when her younger son Josh decided to join the business in September last year. Josh is a natural; a great team leader and very popular with the customers. Sue, the aroma from the kitchen is making our mouths water; tell us about the food you serve here... Thank you, our food is all home-made; the menu is quite substantial - there are up to 28 mains on the menu any day except Sundays when we offer a choice of four or five roast meats: sirloin beef, lamb, pork, honey roast ham or chicken. Also on a Sunday we serve a fish dish, salmon or seabass, and also a vegetarian option.

All our produce is sourced locally; within the Hereford area mainly, although our fresh fish is from slightly further afield. Do you run any special events here? Yes, we do have theme nights; our Pie ‘n’ Pint night is extremely popular, a Mexican night is on the cards shortly, and also an open mic night as Josh is keen to show his talents and perform for the locals. We’ll be holding a special evening to trial some new dishes which will be pasta based as many of our customers have mentioned their love for Italian food and the fact that there is nowhere locally to get Italian dishes. Also, Josh is keen to try out his cocktail making skills, so another evening in the planning is a special cocktail tasting night with 2 for 1 cocktails so watch this space! 10

And for those who wish to stay over we see you offer accommodation also... Yes we have five beautiful rooms each with exposed beams; four double rooms which are all en-suite, and one family room which is also en-suite. We also have a private car park with 24 hour CCTV. We imagine your breakfasts are substantial... Absolutely; I cook breakfast each morning as I enjoy chatting with our clients and like to know they’ve enjoyed their stay and slept well. Our breakfast consists of fresh fruit, yogurt, cereals, Full English, (or scrambled eggs on toast etc. if requested) and toast with marmalade, jam and marmite.


Do you hold private functions here? Yes, we cater for birthday parties and funeral wakes etc; we can seat approximately 50 in our restaurant. Opening times for the restaurant are 12pm – 2pm and 6pm – 9pm Monday to Friday (unless earlier bookings have been arranged for the local theatre evening meals) and 12pm - 3pm and 6pm – 9pm on Saturdays, 12pm – 3pm on Sundays.

We love popping in to see Lucy and her team at Woods of Whitchurch which is tucked away in the gorgeous Herefordshire countryside. Whether we’re enjoying a much needed coffee and cake or picking up something delicious from their deli or patisserie counters, we always receive service with a smile. Lucy it’s looking great in here, please tell our readers what’s new since we last saw you... We’re very excited to have introduced a ‘featured artist’ in our coffee shop; we showcase each featured artists work for around 6 weeks which is fantastic as there’s always something new to look at. We’ve introduced our afternoon teas and high teas which have gone down extremely well and we’re also offering gift vouchers for these as they make great presents. Our build-your-own salads and sandwiches are available to eat in or take-away, and we’ve introduced a wide range of dietary specific foods like gluten free, vegetarian, organic, vegan etc.

Oh and we’ve extended our range of beautifully fresh fish which is available to pre-order for collection on Fridays. And for the youngsters (and the young at heart) we’re now offering our Woody Wonky Chocolate Factory on Saturdays where you can enjoy freak shakes, crepes, waffles and sundaes. During the school holidays these will be served every day. And we hear you’re offering outside catering now too... That’s right; we provide our outside catering service which includes our delicious cakes, for events such as weddings, funerals, parties etc.

You’ve been extremely busy; dare we ask if you have any plans for the future? Yes, I plan to increase our range of homemade meals to take home and eat, and to introduce a home chef service to cater for small dinner parties. We’re also looking to provide afternoon teas to private parties in the location of their choice, and to make our coffee shop available for private functions. Creating the perfect space and environment when choosing or commissioning a piece of jewellery was paramount to the design of the new studio; above all the two goldsmiths wanted their clients to feel relaxed and at ease in a light airy space. This new space has given them the opportunity to have both a “Drop off ” repair counter and a bespoke seating area for longer consultations. The next project was to design the workshop area, which had to encompass both an area for traditional goldsmithing and new technology.

Having more space than in their previous studio meant that this was easily achieved giving them a more efficient and comfortable working environment with full interactive workshop space. The open plan workshop enables clients to feel involved in the making process; therefore seeing the whole progression through from initial sketches to a final jewel. New horizons always inspire new ideas and their new collection draws inspiration from astronomy and the dark skies prevalent in the Wye Valley and the Black Mountains area. The initial ideas were formed back in 2008 when Gill and Alan were commissioned to design and make five pieces of jewellery to be exhibited at The Chelsea Flower Show on the Gold Winning “The Sky at Night” garden. 18

A family business established in 1960, CHT Joinery continues to produce high quality joinery using traditional methods, specialising in the design and manufacture of bespoke items including windows, doors and stairs. Wye Life chatted with Aimee and Roger Williams about why they hired CHT Joinery to work in their new home and why they felt it was a wise choice.

CHT JOINERY Aimee, we love your home here on the Llandegfedd Reservoir - it’s very picturesque. Thank you. We originally bought the farm and land, then knocked down the old farmhouse and rebuilt what is now our home. It is very tranquil here, we love it.

What made you choose CHT joinery for your own home? Once the plans were passed for our house we obtained quotes from a few different companies. CHT Joinery’s was competitive and, as their quality far outweighed the others, it wasn’t a difficult choice.

How did you hear about CHT joinery? We were project managing a house build about four years ago and CHT Joinery were making and installing the oak windows and A frames. As we have a lot of experience in house building we recognised the excellent quality of their work.

What input did you have on deciding on your beautiful three metre bi-fold doors? We sat down with Paul from CHT Joinery and together we decided on oak as opposed to aluminium for the bi-folds as it’s more in keeping with the property. Paul then created them using the measurements from the plans, and from his knowledge about the mechanisms and what would work best for the size of them.

How was the whole process from start to finish? Because CHT Joinery had our plans from the start of the build, all the windows and doors were made and ready to fit before we needed them. CHT kept them at their premises and installed them as soon as we were ready, which resulted in a seamless build with no delays. When on site they were extremely quick and efficient. All the windows were fitted within two days, and the bi-folds took another two days. We recently arranged for CHT to return in order to make and install the banisters for our stairs and balconies. Again this was efficient and they were so incredibly helpful with their knowledge about specific regulations.


We have to say your windows look absolutely stunning... I totally agree. I think all the bi-folds are brilliant. I like the fact I could include a small window in the set in our bedroom that can be opened independently from the bi-folds. But they all open seamlessly and are so easy to slide open. 2017 is certainly a historic year for the Monmouthshire town of Chepstow as it celebrates its 950th anniversary with a series of events and the release of a special leaflet by the Town Council to mark to mark the occasion.

CHEPSTOW CELEBRATES

The leaflet will be available to schools, residents and visitors on the council’s website and from Chepstow Library, Chepstow Museum, the Tourist information Centre and Chepstow Castle and will help readers understand and appreciate how William FitzOsbern, one of William the Conqueror’s two deputy commanders, founded Chepstow Castle, St Mary’s Priory and the town of Striguil, now called Chepstow, in 1067. Chepstow (Cas-gwent in Welsh) is located on the River Wye, about two miles above its confluence with the River Severn, and adjoines the western end of the Severn Bridge.

Its position strategically close to Bristol and Newport meant that it was an extremely attractive location for the visiting Normans, and the commanding cliff overlooking the river was the perfect spot to build a castle.

Chepstow Castle dominates the River Wye; a short distance downhill from the town centre. The Great Tower is the oldest part of the complex and dates from the late 11th century. The castle was extended, both westwards and eastwards, in later centuries, but fell into ruin after the Civil War. There is a large car park in front of the castle, beside the Tourist Information Centre and opposite Chepstow Museum. The castle is now under the management of Cadw (the Welsh Government’s historic environment service), and is open to the public every day of the year, apart from four bank holidays around Christmas and New Year.

Chepstow Castle, and its bridge, is often cited as the oldest surviving stone castle in Britain. The castle was established by William FitzOsbern immediately after the Norman Conquest, and was extended later before falling into ruin after the Civil War. Chepstow Museum will also be marking the occasion with a series of fascinating talks by Marc Morris, James Aitcheson and Rick Turner OBE.

So if you’re a tourist or a resident of Chepstow and want to understand more about how the Norman Conquest shaped the history of Chepstow, the talks will be well worth signing up for.

According to the 2011 census, the population of Chepstow was just over 12,350. I imagine the passionate people of this historic Monmouthshire town will have done their best to increase that number since then. Chepstow is steeped in history and is well worth a visit. Chepstow is on the Welsh western bank of the Wye, while adjoining villages on the eastern bank of the river, Tutshill and Sedbury, are located in England. The Dean Close Foundation is focused on making its nurseries the best they can be, with a wide choice of extra-curricular activities for children, improved facilities and outdoor spaces. Its nurseries: Hedgehogs Nursery in Tutshill, Robins Nursery in St Arvans and Teddies Nursery in Newport, have all been given fresh new looks with an emphasis on the natural world and play.

A big part of the Dean Close Nurseries ethos is to encourage as much free play as possible, with exciting outdoor spaces that can be accessed in all weathers. The nurseries make the most of all their garden areas. 42

Teddies manager, Charlene Burgess, said: “It’s important that our children have plenty of opportunities to be active outside. We encourage an interest in nature with herbs, flowering plants, bird tables and insect hotels. We do lots of learning outdoors and even toast marshmallows on an open fire.”

Good Life Publishing launched Wye Life Magazine in the August 2015 with Chris Howell at the helm. His drive, motivation and determination has seen the magazine grow quickly and is now firmly established throughout Herefordshire, Monmouthshire and South Powys. A large part of this success has been accomplished with the enormous growth in Wye Life’s social media platforms with over 15,000 followers between Facebook, Twitter and Instagram. The sharing of local photographer’s images has been at the forefront of our activity; hence we have introduced

The family-run Butchers Arms at Woolhope has acquired its well-earned reputation by using quality ingredients, and the team are passionate about sourcing fresh, local produce wherever possible. We chat with Landlord and Head Chef Phil Vincent about what’s new since our last visit.

Phil we can see that a lot of time and effort has been spent on your beautiful gardens Yes, and now it’s beginning to show; our gardens are planted with flowers for the tables and arranging; fruit trees, including apple, pear, gooseberry, plum and cherry, our menus will hopefully benefit from them in a year’s time. Our hanging baskets are about to go up and the garden is looking at its best for alfresco dinning or just drinkies by the stream in our beautiful countryside.

Gluten Free foods are becoming one of our priorities and we can adapt a vast majority of the food we serve as we make 99% of our dishes in house.

We know you like your seasonal produce so what’s new on your menus? Our menu favourites remain but we do like to add fresh local produce as the season changes; Woolhope Racks of Lamb should be on the menu soon along with Middle White Pork from Symonds Yat, fresh soft fruits won’t be long so Summer Pudding with Clotted Cream will definitely be a welcome sight.

We also have 5 pairs of Mandarin Ducks in our large aviary in the garden and we’re glad to say that two of the ladies have hatched 8 eggs each so we have 16 ducklings, there are also Diamond Dove chicks, Zebra chicks, Java Sparrow chicks and there’s a pair of Canaries sitting. And of course there’s Max, our African Grey parrot. He’s 16 years old, has a brilliant vocabulary and will keep you and the children amused, why not teach him some new words, no swearing though!

It all sounds delicious, and we can see you have some new attractions at the pub for all the family Yes, our Marine Tank is now situated in the bar area by patio doors, filled with live rock, Corals, and beautiful coloured fish, including a lookalike Nemo and Dory.

We’re on our best behaviour! What does the summer hold for you? We’re looking forward to the return of Barbeque Fridays; every Friday night as long as the weather is dry we’ll be catering for a lighter end of week supper with local sausages, burgers, fish and vegetarian options plus our salad bar. Choosing a range cooker can be a daunting process; we popped along to the experts at Twyford Cookers of Leominster to pick up some tips on buying a cooker to suit both needs and budget…

T W YFORD COOKERS Tell us a bit about your business We started out as AGA renovators 25 years ago. We were approached by AGA Rangemaster to become their only authorised renovator worldwide, which we did from 2006 - 2014 when the business model changed and we became an AGA and Rayburn distributor.

Alongside our AGA and Rayburn sales, we sell a mix of mid to high end cookers which include Lacanche, La Cornue, Falcon, Mercury, AGA Six Four, AGA Masterchef, Britannia, Fisher & Paykel and Rangemaster. We also sell woodstoves and cookware; we’re a Rayburn Heat Centre and a designated Deluxe Rangemaster Studio. We have also just opened our Betty Twyford Homewares shop, which is very exciting for us. This is a large showroom… Yes, we’re proud of our large 3,000 square foot showroom which enables us to showcase kitchen companies and to feature working AGA and Rayburn cookers alongside working induction cookers, fridge freezers and a range of built-in cookers. We hold cooking workshops to explain the beauty of the new generation of AGA cookers and, once a customer has purchased from us, they are invited to attend a free one-to-one cooking demonstration to ensure they are happy with their appliance. What advice would you give our readers who may be looking to buy a cooker? We would advise anyone who is wishing to purchase to come along to our showroom on the Leominster Enterprise Estate. We are easy to find and parking is not a problem. We always greet our customers with a cup of tea or coffee and offer food baked in one of our ovens. The experience is then further enhanced by our staffs’ undivided attention.

What cooker features would you recommend readers look out for? If the customer is wishing to purchase an AGA cooker, they need to decide if they require ambient heat in their kitchen. This is the comforting heat that AGA owners have enjoyed since the 1930s when AGA cookers first became the object of desire for the house wife struggling with a coal fired range. If ambient heat is not required then we would direct customers’ attention to the new generation of AGA cookers which can be turned on and off - although they can offer ambient heat when winter approaches and the evenings become cooler. If the customer requires a range cooker we have a vast selection on offer to suit modern or traditional settings. We are recently seeing an upsurge in the sales of French cookers. Lacanche cookers offer many unique features such as steam baths and meat and fish smokers. 54

Lacanche offers a bespoke service, so the customer can create the cooker they require. Because we display most of our cookers in a kitchen setting, it’s not hard for the customer to imagine their own kitchens with one of our cookers in situ. Do you install/renovate cookers? We normally arrange installation to make our customer’s experience as pleasurable as it can possibly be. We have a number of installers who run their own businesses but work with us when called upon. In the case of a new AGA purchase these installations are handled by AGA Rangemaster on our behalf. Many cookers are delivered and installed by the supplier but are always under the watchful eye of Twyford Cookers.

We refurbish a limited selection of fairly recent model second hand AGA cookers in our factory in Leominster, in order to offer some of our customers a lower price point. We are famous for our renovated AGA cookers, and we are sometimes asked by previous customers if we can still supply them. What are your plans for the future? We’re always thinking ahead. We intend to offer our showroom as a destination point for customers who are creating an extension or moving to a new home. We offer displays and contact details not only for cookers, but for flooring, kitchens, cookware and homewares. Our Betty Twyford brand offers kitchen textiles; enamelware, laundry and utility products together with our own brand of environmentally safe cleaning products. Our cookware selection is definitely worth a browse as is our expanding range of built in cookers and appliances.

Summer is upon us and we visited Elley Twyford at Twyfords Cookers of Leominster to help prepare and cook this delicious dish in their magnificent showroom. We hope you like our choice and look out for more recipes in our Autumn publication.

AGA SUMMER R ECIPE GIANT JAFFA CAKE

For the chocolate topping: l 200g dark chocolate up the chocolate into small pieces and place in a bowl on the back of the Aga to melt.

n Break

For the sponge l 3 free range eggs l 75g caster sugar l 75g self-raising flour l Grated zest of half an orange (use other half for decoration once chocolate has set) the eggs and sugar together until they have tripled in size and are stiff. n Carefully fold in the flour making sure to knock as little of the air out as possible. n Line a 23cm round loose bottomed cake tin with bake-o-glide or grease proof paper. n Pour the mixture into the tin and place on a grid shelf on the floor of the baking oven. n If not using an Aga pre-heat oven 170C/150c fan/gas 5 n Bake for about 10-15 minutes… keep an eye on it! n When ready turn out onto a wire rack to cool. n Whisk

Jelly filling l 135g pack of orange flavour jelly jelly cubes in a jug. Add boiling water up to 200ml mark, stir until dissolved. Make up to 375ml with cold water. n Line a small sized dinner plate with cling film and pour in the jelly. Make sure that the circumference of the jelly is about 1cm smaller than the circumference of the cooled sponge. n Place the plate of jelly in the fridge to set. n Place

To make up n Once the sponge has cooled and the jelly set you are ready to make up… this is the interesting bit and may well be best if attempted whilst little ones are out of the kitchen. n Place the upside-down sponge on top of the jelly. Place your serving dish carefully upside down on the bottom of the cake. Now flip the right way up so that the serving plate is sitting on your work top and the jelly plate is upside-down on top of the sponge. n Remove plate and cling film (carefully) from the jelly. Hopefully you have a centralised jelly ring on top of your sponge resembling a jaffa cake with the chocolate nibbled off! 56

over the melted chocolate very gingerly helping it along to the edges to get as good a covering as possible with a spatula. n Finally grate over the rest of the orange zest or cut little slices if you prefer…or not if you don’t. n Return to the fridge for 10minutes and then serve to a round of applause…this is obligatory. n Pour

Wye Life introduces this new feature focusing on independent local people striving to succeed in business. We met up with the very talented Michelle Flight of Michelle Flight Photography to find out about her journey and ambitions.

ONE TO WATCH

Michelle’s interest in photography started at a very young age and after many trails and errors her natural progression has seen perfected her skill. She has developed a passion for landscapes, sunrises and sunsets, in particular for ocean and beach shots. Upon starting her Instagram page, Michelle has learnt the skills of editing her images and has built up a strong following of over 2,500 people. In June Michelle launched her Facebook Business page after being encouraged by her many friends and fans of her work. Michelle’s job takes her around The Herefordshire countryside and her brain is a never ending camera. Indeed most weekends Michelle along her faithful dog Willow is outdoors constantly snapping away and can often be seen stopping her car to capture that image she visualised moments before.

One day her ambition is to branch out more as a photographer and already produces lovely postcards of her images which can be found across Herefordshire. More recently Michelle has been commissioned to take photography for Peterstone Court Spa in Brecon and her local themed work is on currently display in their restaurant. She has now started to do corporate launch photography for pubs, restaurants and local businesses and has a few commissions for outdoor portrait photography whereby the finished product is beautifully framed. A few areas of interest are family and pet photo sessions, having had huge practice with her own family. She also plans to start wedding photography as her flair will give her a definitive edge in this market. Michelle is also a member of the Wye Life Magazine Photo Corner and her work is often selected in the daily themes by our expert judge Terry Hancock. 57

How one Herefordshire woman is bringing together the work of local craftspeople to make a unique range of beautiful and practical artisan fire pits, tools and accessories.

A CRAFTY COLLABORATION

When Louise Wright burnt her fingers on her hot wood burner she would have no idea it would lead her to collaborating with some of Herefordshire’s most talented craftspeople.

It was for designing ‘The Woodee’ a stylish and practical tool to safely open a hot wood burner door, that Louise and husband Andrew won a Table Talent competition with Country Living Magazine. Louise launched the artisan tool at their pop up market at the Spring Fair in 2015.

Mum of four, Louise, works from her kitchen table at her home in Dorstone in the beautiful Golden Valley. Her husband and business partner Andrew, and her dad, Seamus Hayes, are both traditional roofers; Louise believes this is where she gets her passion for rural crafts and local materials.

Over the past two years Louise and Andrew have developed ‘The Woodee Range’ in collaboration with traditional craftspeople from across Herefordshire. “We work with a champion blacksmith, award winning tanner, master basket maker, traditional joiner, agricultural engineer, upholsterer, bee keeper and

An advocate of collaboration, Louise believes it makes each of their products totally unique. The craftspeople she works with generally work alone in their own disciplines. “I love weaving together the strands of different crafts into my products. No one else does that the way we do.” She said proudly “each one is like a small rural masterpiece”. Woodee Fire Pits In spring 2016 Louise designed the Woodee Fire Pit. Handmade from thick British steel, the Woodee is cleverly engineered to combine the best elements of a Fire Pit and a barbecue. Standing at knee height, it has a stunning oak leaf pattern cut out around it which allows heat to radiate around your legs. Mortimers Cross Inn is owned and run by local couple Annaly and Glyn Goodwin with their two daughters Becky and Kate. The13th century building is set in the heart of Herefordshire on the main crossroads at Mortimers Cross, and on the edge of Mortimers Trail.

Annaly, what members of your family work here – and in what roles? I run the business along with our daughters Becky and Kate; my husband Glyn helps when he can as he still runs his own agricultural business. I’m responsible for running the kitchen Sunday to Wednesday along with cooking breakfast for our guests, then on a Friday and Saturday I tend to do front of house in the restaurant; it’s great to be so hands on and in direct contact with our customers. Becky is also in the kitchen preparing and cooking starters and puddings and generally helping with our day to day organisation, she also maintains our cellars. Kate cooks occasionally but mainly she’s front of house helping to keep everything running smoothly and she’s responsible for our accounts and most of the admin.

Do you use local produce, and if so how important is this to you? Yes, we’re a local farming family so we know the value of local, seasonal produce. We use all we can from local suppliers, usually within a few miles of us.

It sounds delicious, what are the most popular dishes in your restaurant? Thank you. As we’ve developed our menu it’s become clear that great quality meat, and steak in particular, is extremely popular.

Also we grow a lot of the herbs and some of the tender leaves in our own garden right here, and soft fruits and produce come from the orchard up at my mother’s house.

We have a steakhouse menu and our relaxed dining menu; we can cater for any dietary requirements. On a Friday and Saturday evening we have a fine dining menu which is when our Chef can showcase our wonderful produce in a very elegant way to tantalize your taste buds.

Our eldest, Phillip, is a fully qualified Butcher and supplies some of our meats. We pride ourselves on the quality of the meat we use; our beef is hung for longer, 33 days, and is reared on lush Herefordshire border grassland pastures. This makes our beef prime quality, as found in top London restaurants but served here as standard for our diners. 60

Also, our Sunday lunch carvery is incredibly popular; this includes 33 day matured beef and orchard reared pork with the best crackling, served with homemade Yorkshire puddings and lashings of proper meat juice gravy and a selection of up to 12 different vegetables.


These are all freshly prepared, we even cook throughout service to ensure freshness. The carvery is a great way for friends and family to come together at the end of a busy week, interestingly we find that children will often try different vegetables as there is so much choice which of course broadens their tastes. We see our regulars come back week after week and Sue, who carves for us, has made some firm friends over the last 3 years. Can you tell us about your accommodation? We have 6 generously sized rooms which have been refurbished and are now more in keeping with the age of the building. We’ve used gorgeous antiques to add a touch of individuality to each room; most rooms have lots of beams and high ceilings and 5 of the rooms have Jacuzzi baths. Mortimers Cross is close to historic market towns, national trust properties, and gorgeous countryside; the Mortimer Trail is on the door step so you’ll be spoilt for choice when you stay.

The current owners of Letton Court have lovingly restored this wonderful 15th century building and renowned gardens. Having acquired the badly run down establishment in July 2014, they re-opened the doors in March of this year as an exclusive hire venue.

BACK TO GLORY

The Court and the Rectory were built in the same style of architecture, being designed by the famous Bodley. Of red brick, the Court was one of the few mansions in Herefordshire built on these lines. It was an exceedingly handsome structure, not familiar perhaps to many people, owing to its invisibility from the main road, being hidden by trees which are the growth of centuries. Erected on a natural dais, the terraced lawns afford a charming vista of pastoral scenery with the wooded Bredwardine Hills as a background, celebrated as the site of King Arthur’s Stone, and for the glorious views obtainable from the cairn on Meerbach edge. However it was a different story on Saturday 6th September 1927, when the original property was burnt down in just 2 hours. The owners Mr. and Mrs. T. M. Dew red brick mansion was reduces to ashes by a fire which broke out at half past ten in the morning - a day and time when the village is usually denuded of men, who are drawn to Hereford by the markets.

The Household staff, consisting of four maids and others who responded to the alarm, performed prodigies of valour in trying to save the contents, but the all-devouring flames spread from window to window, door to door, enveloping room after room, with such overwhelming rapidity that their efforts were of little avail. The current Letton Court offers luxury accommodation set within the beautiful Herefordshire countryside and will sleep up to 24 people and can accommodate up to 60 people seated in the drawing room; plus the lawns can easily accommodate marquee style events with numbers of upto 150 people, we can also host wedding receptions. The building has kept all of it’s statement character from the oak cantilever staircase to the ornate ceilings and panelled lounge. These features are now joined by the likes of Farrow and Ball, Colfax and Fowler, Christopher Guy and Timothy Oulton who help give this amazing house a modern and contemporary look and feel. 63

Back in the day, John Wilesmith played for Ledbury Rugby Club for nearly thirty years and when the time came to hang up his boots, it was difficult to walk away from the game. Rugby had bought him so much pleasure and in 2003 he had the idea of the hand painted heroes.

Both the RFU and WRU who showed little interest and it was not until Bill Beaumont, President of the RFU came to Ledbury RFC in 2012, that it was suggested he might provide one of my figures as a thank you. It was well received and as a result he got stuck into painting, honing my skills. His youngest daughter went to New Zealand for a gap year and was having difficulty repaying the amazing Kiwi hospitality....until it was decided that he would send the generous hosts their favourite All Black. Suffice it to say that the reaction to the figures was tremendous. In 2016 he was able to meet All Black legend Sir Colin Meads and hand over his figure, in return for signing his figure.

From these chance meetings he then got a little more organised, arranging to meet Ritchie McCaw, Gerald Davies, and David Duckham to build the signed collection. As Head of Operations the Three Counties Showground, Malvern, John has been able to meet numerous celebrities such as Raymond Blanc, Mary Berry and Adam Henson and produce figures for signature and gain experience! An appearance BT Sport’s Rugby Tonight last April gained further exposure for this special type of rugby memorabilia. He has now produced figures of all of the Six Nations captains as well as Sam Warburton, captain of the British and Irish Lions on their current tour of New Zealand. 64

Lee, can you tell us about your passion for butchery and great meat? That’s down to my grandfather, Les Davies, known locally as ‘Bacon’ – he was a slaughter man and I was raised surrounded by this industry from a very young age. At 16 I was offered an apprenticeship by Neil Powell, of H J Edwards, Abergavenny. My vision of owning my own butchers shop came to reality with the help of family and friends. Our team comprises of me, with 24 years of experience, Paul with 30 years of experience, and Gareth with 10 years of experience; all of who were also fortunate to learn their trade with Neil Powell, and our young apprentice Ieuan Hughes. The newest member of our team is Mark. He has previously been a chef in very high-standard restaurants, working under Michelin starred Chefs such as Marco Pierre White. 70

Mark works front of house and is a huge asset to us in offering advice on the best cuts of meat and cooking advice. Where does your meat come from, and how important is this to you? All our products are sourced locally. We buy our beef from a local farmer, John Jenkins of Talybont Farm who is another acquaintance of my grandfather. Being brought up in a small community, buying locally and supporting small, local businesses is very important to me. In this day and age it’s very much ‘use or lose it’. Can you tell us about your dry aging process? Dry aging is a traditional way of aging beef, exposing naked beef to a carefully controlled environment of optimum temperature and humidity.


“Award winning!” They sound delicious; we’re hoping for a long hot summer – what meats would you recommend for the BBQ? Sausages and burgers are always a must on the BBQ. We offer a wide range of flavoured sausages, burgers and kebabs. We also offer a vast range of marinades and sauces that can be added to any meat on request.

“Extraordinarily tender beef with intense flavour!”

For a change on the BBQ, steaks on the bone such as Tomahawk (rib-eye on the bone) and Porterhouse (sirloin on the bone) are rising in popularity. Do you have any tips on preparing meat for cooking? The main rule of meat preparation is to bring the meat to room temperature before cooking. However, each cut of meat has its own techniques for the best results. Our team are always happy to advise on preparation and cooking when purchasing your meat. Our dry aging unit uses both traditional methods with modern technology using Himalayan rock salt to draw any moisture during the aging process to produce extraordinarily tender beef with an intense flavour. We pride ourselves on using locally sourced native breeds; mainly Welsh Black with some British White and Hereford. All are proudly displayed in our dry aging unit for our customers to see the aging process for themselves. What cuts of meat are the most flavoursome? My personal favourite cut is a sirloin steak from the rib end. You’ve got the best of both worlds with the meat of sirloin steak and the flavoursome fat of ribeye. Any cut of meat with a fatty content to it, such as a rib of beef or shoulder of lamb or pork, will all produce a delicious flavour.

Do you have any specialities? We make all our own sausages and burgers. All our sausages are made using orchard free-range pork, and our burgers are all made using PGI approved Welsh beef and Welsh lamb. We also offer home-cured bacon from orchard free-range pork, and our faggots are homemade.

That’s great to know, and lastly - what does the future hold for your business? We currently stock a small range of delicatessen foods; Welsh cheeses & pâtés. In the future we’d love to expand and introduce a deli and charcuterie with the majority being our own produce.

We recently won awards in the Meat of Excellence Awards for our home-cured bacon, steak burgers, lamb & mint burgers and faggots along with a couple of our ready prepared meals we have on offer. Since launching our range of ready prepared meals in January 2015 it has continued to thrive. Sara Ferris has worked in the special effects industry for the past twenty years with skills ranging from building high definition prosthetic limbs for amputees, to working in the film and media industry as a special effects make-up artist. Together with her photographer partner Jon they combined their expertise and set up the phenomenally popular Bumps Babies and Happy Ever Afters. We were intrigued and set off to find out more about their outstanding services…

BUMPS BABIES & H APPY EVER A FTERS

Can you tell us what services you provide? Body casts of any kind; baby bumps, baby hand and feet casts, couple hand casts to mark a milestone such as engagement or anniversary - these are provided either in resin or plaster. We consult with the client to ensure they get exactly the appearance they are after, from colour and finish to the type of plinth they would like their piece mounted on. We provide a home visit service to have the cast taken, or the client can come to us - whichever is more convenient. Every last detail is hand-made to suit the individual’s needs. We also offers a wide range of photography; engagement, wedding, pregnancy photo shoots, through the years photographs of children and adults. Jon is an amazing Photoshop tech too, so the pics are finished to a very high standard.

We also offer beautiful keepsake USB keys in wooden boxes, so as your timeline develops your memories are all stored in one place. Each time we provide a service Jon loads the images onto the key and returns it to the customer. Please talk us through the bump casting process... The cast is usually taken around the 26-30 week mark. Most couples like to be involved in the process often with dad holding mums tummy but this is always discussed and we share ideas with the couple. Making mum feel comfortable is the first stage. Her part is only for 10 minutes but she has to be seated correctly as she will have to be still for those 10 minutes. The moulding material is mixed with water and spread over the areas you want to imprint, then plaster bandage is applied over this to re-enforce the area. 72

Once the plaster bandage has dried we get mum, and dad, to gently flex their fingers to release the mould. All the products are kind to skin and easily cleaned away. After helping mum clean herself from any residue of the moulding materials the mould is then filled with plaster and allowed to dry. Once the cast is dry, this is where the real work begins. The cast is removed from the mould and this is the last time mum will see it for the next 3-4 weeks. We take it back to the workshop where any defects are corrected, sanded, filled and then smoothed, and the detail is highlighted and sculpted back in. The plaster is primed and the finish is applied. This is a long and slow process but well worth the finished result. Although the client doesn’t see the cast until it’s finished, we are in constant contact to ensure no detail is missed - right down to the stone and gold of mums engagement and wedding ring.


And for the photos; what is the best time for a pregnancy photo shoot? We would say around 26-30 weeks. The bump is quite prominent and mum is glowing at this time. Of course a full consultation is given and we ask the client to put together some ideas of the kind of thing they would like. Not all mums are as confident our cover girl. And is there a best time for a new baby photo shoot? Yes, usually around 2 to 6 weeks old as the babies start to get their features and all their little wrinkles are smoothing out. Also this gives mum and dad time to bond with their baby. Mums who’ve had a bump cast taken often ask for their baby to be photographed using their bump as a prop. Do you provide hairdressing and make-up facilities for your photo shoots? Yes, on request; we have a team of make-up artists on hand up and down

the country that will come and make you feel a million dollars for your photo shoot, again she will consult with you beforehand to ensure you look and feel your absolute best on the day. Where do your photo shoots take place? Jon has access to studios all over the country so wherever you are is not an issue. A lot of our clients have them taken at home but it’s really up to each individual. Jon can turn any room into a studio with professional lighting and backdrops. Jon & Sara

WELSH OVERLAND Richard what led to you set up the Welsh Overland Safari? My wife and I have been running a successful self-catering and B&B (Pwllgwilym Holiday Cottages), for the past ten years. Having lived and breathed Mid Wales all of my life, coupled with my passion and knowledge of the area, it was a natural progression to set up a tour guide business after a number of requests from guests.

Can you explain what your tours entail? Pre-tour we will discuss what people are looking to get out of their trip; be it sightseeing, walking or a mixture. Once we have tailored a tour specific to the individuals or group we will arrange a pick up point and go from there. You can expect to see a variety of sights, learn about myths and legends along the way and dine at one of our handpicked local eateries, what more would you want?!

How long are your tours? Our set tours range from a full day, approximately eight hours, or a half day, four hours. This may sound a lot but there is a lot to pack in and you’ll be surprised how time flies. What hidden gems are there to be found in Mid Wales? In all honesty too many to mention. To give you a flavour, I’d pick Henrhyd waterfall - it’s the tallest waterfall in the Brecon Beacons with a ninety foot drop, and a little known fact - it was featured as the Batcave in the Dark Knight Rises movie, you can walk behind it and is very easy to access unlike some of the others in the area. 74

The remotest chapel in Wales, Soar-YMynydd, is always very popular and Llanthony Priory where you will find Cwmyoy Church - our very own leaning tower of Pisa right here in Wales.

Hay-on-Wye is one of Wales’ most famous towns with many visitors descending on the book town for the bi-annual festivals. The Swan at Hay hotel recently relaunched and has put dining at the heart of its operations in a bid to further attract yearround visits to this beautiful town.

H AY-ON-W YE’S NEW FOODIE HOTEL In total, guests and visitors can dine in three spaces at The Swan at Hay Hotel - The Garden Room Restaurant, 1812 Bar and The Market Bar.

The First dishes, of which there are four choices include ‘Charred Prawn, Pink Peanut, Bean Sprouts, Coriander, Lime’ and ‘ Potato, Charred Onion, Smoked Eel, Fermented Onion Dressing’.

The 30 cover Garden Room restaurant is open daily under Head Chef Jerry Adam. The Garden Room dinner menu is available Tuesday - Saturday and the aim is to offer as many seasonal Welsh dishes as possible using local produce.

The Second dishes, again of which there are four choices include ‘Partridge Breast, Jerusalem Artichoke, Mushroom, Back Fat’ and ‘Poached Trout, Brown Shrimp, Mace, Cucumber, Sea Vegetables’ or ‘Crisp Tofu, Celery, Mushroom, Hemp’ For Thirds, guests can select from four choices including ‘Passion Fruit Curd, Coconut, Meringue, Yogurt’ and ‘Dark Chocolate Tofu, Coffee, Hazel Nut, Vanilla’.

The Garden Room’s dinner menu is priced from £40 per person and each guest will effectively enjoy five courses. The guest selects a First, Second and Third dish and in between two other smaller courses are served.

Jerry’s most recent role was at Michelinstarred Ynyshir in Wales. Jerry also worked at The Swan at Hay’s sister hotel Llangoed Hall for three years, under head chef Nick Brodie. Prior to that Jerry spent time at other Michelin-starred destinations including the Bath Priory. Jerry also oversees the two more casual bars. A bar menu is served in either the 1812 Bar (named after the date the hotel was built) with 25 covers or The Market Bar. The Market Bar overlooks the functioning market and dogs are welcome in this bar. The design is rustic with wood salvaged from the original stables.

I’ve also noticed that I’m filled with energy - which I wasn’t before. I’ve now dropped down from seeing Anne to one hour a week to see how my body responds to that. I read Anne’s first book and was amazed at the healing stories in it. Anne is a fantastic, lovely person and I think she’s very brave doing what she does.

The launch of The Swan at Hay Hotel Welsh rugby and television personalities attended the launch of The Swan at Hay Hotel on 1st February. The Swan at Hay held its launch in the heart of Hay-on-Wye. The hotel underwent a complete refurbishment and is home to nineteen bedrooms, a restaurant, separate bar and a wedding and events hall. The grade II listed Georgian building was built in 1812, however a coaching inn on the site was first mentioned in the early 1700s.

Lewis Ballard Accountants Fabulous Fifties Night Cardiff based Chartered Accountants, Lewis Ballard held their annual Charity Dinner in aid of Velindre Cancer Care Hospital at Mercure Holland House in Cardiff.

After creating Superman inspired jewellery and an unbreakable wedding ring for Laurence Fishburne, Cardiff jewellery designer Neil Rayment really is flying high.

STAR STRUCK What better way to commemorate the cinematic release of Man Of Steel than with a stunning jewellery creation inspired by Superman himself? As a fan of the superhero and friend of the film’s star Laurence Fishburne, award-winning goldsmith Neil Rayment wanted to create an out of the ordinary tribute in the shape of Kal-El’s Crystal - an homage to Superman’s birthplace, a timeless classic, expertly crafted in platinum and diamonds. “I was looking for something spectacular, I’m a huge fan of Superman and the franchise featured heavily in my childhood,” says Neil, owner and artistic director at Advanced Jewel Craft. “What better place to seek inspiration than the birth place of Superman?” Advanced Jewel Craft attracts clientele as sparkling as its bespoke pieces. The iconic brand has slowly blossomed since its inception in 2004 and is now a firm favourite amongst A-listers from LA to Abu Dhabi. Oscar-nominated actor Laurence Fishburne is one of Neil’s most prestigious clients. The pair met when Neil briefly switched jewellerymaking for acting and appeared alongside him in The Matrix sequels. Neil was honoured to be tasked with designing and creating Laurence and his wife Gina Torres’ wedding rings.

One of Hollywood’s real diamonds Laurence kindly took time out of his busy schedule to explain more about his experience of working with Neil. How did your friendship with Neil come about? We worked on The Matrix sequels together. We became friends on set and then I found out that Neil’s passion was for jewellery design. Have you kept in touch? Have you been over to Wales to visit him? Yes we’ve kept up with each other but still have not made it to Wales I’m sorry to say. I’ve heard that it’s a very beautiful country.

Neil designed and made your wedding rings. That’s a high pressure assignment - how was he to work with? He was terrific. The basic design was worked out between Neil and my wife. We’re delighted with the result. Can you tell us a little about the inspiration behind the design? Gina wanted something that would be unbreakable for me. I’m a would-be drummer, so I’m always beating things to hell. The platinum band and three diamonds are all a reflection of my personality and style. How involved were you in the design process? I’m very creative but I really felt it was best to trust both Neil and Gina on this one. It was our first custom jewellery experience. Neil often takes inspiration from films. If you could challenge Neil to design jewellery based on one of your previous films, which would it be? Probably King Of New York. I think that would be an interesting challenge for Neil but one I’m confident he could rise to. Created in his Cardiff Bay studio, Advanced Jewel Craft’s pieces are beautiful and exclusive. Neil adopts a personal approach, forging firm relationships with his customers. And while he works with A-list clients, his feet are firmly on the ground. “Jewellery is something that needs personal attention,” Neil says. “You can get entangled in the glamour, the parties, the shows, but the most rewarding thing is to see someone wearing one of my pieces and the pleasure it brings.”
