Vegan Apple Crisp

This vegan apple crisp recipe is my favorite self-care treat to bake when I am in need of some warm comfort, when the weather outside starts to gloom, or when gathering with people I love!

Ingredients

Filling

• 8 organic medium apples (4 Granny Smith & 4 Honey Crisp) • 1 lemon (juiced) • 2/3 cup of coconut sugar • 1 ½ teaspoons of ground cinnamon • 3 tablespoons of cornstarch • ¼ cup of organic apple juice

Topping

• 1 cup of gluten-free rolled oats • ½ cup of almond meal • ½ cup of unbleached all-purpose flour • ½ cup of coconut sugar • ½ cup of brown sugar • ¼ teaspoons of sea salt • 1 teaspoon of ground cinnamon • ½ cup of melted coconut oil i. Preheat oven to 350 degrees Fahrenheit ii. Peel and cut apples into thin slices iii. Add apples to a large mixing bowl and top with remaining filling ingredients iv. Toss combined ingredients v. Add filling into a 9x13 (or similar size) baking dish vi. Combine topping ingredients in a mixing bowl vii. Pour topping ingredients evenly over filling in baking dish viii. Bake for 50 minutes, uncovered ix. Let rest for 30 minutes x. Serve (preferably with a steaming cup of coffee)
