Rejection—in all its forms—really, really stings. Your dream job gets offered to someone else, the boy you like prefers blondes, and your ‘loyal’ dog ditches you at the first sight of a fluffy tail. Big or small, rejection is a hard pill to swallow. And, although our battered egos may need time to recover, it’s important to believe that when the answer is no, there may be a better yes down the road. Take Alwijn Burger of BLOMBOY fame on p.16. He says he only started working as a florist because he was fired from three waitering jobs in one month. Instead of buttering bread rolls he found himself doing flowers for Queen Elizabeth II. Not a bad rejection, right? So too this month’s cover girl, ANA KUNI, says that if it wasn’t for a quiet modelling season in France, she would never have spent her time wandering around all the great art galleries of Paris—which led her to her becoming a full-time artist. & HiS MuSe For this month’s cover we brought two creative minds together—and a little magic happened… Meet artist ana Kuni and flOrist alwijn burger Of blOMbOY

‘Flowers should never be given or created to impress—if so, you are missing the point’

A Love AffAir with fLowers

SA’s king of blooms, Alwijn Burger of BLOMBOY, talks to us about his floristry work. How did you get into flowers? I was born in Bedford—a charming little village in the Eastern Cape—now famous for its October Garden Festival. I went to school in Grahamstown but spent my weekends in our glorious pastorie garden. This is where my love affair with flowers began. And your time in tHe uK? At the tender age of 18 I was very confident about my abilities and my self-taught skills in floristry, but I upped and went to the UK where I ended up working for two well established floral firms—both Royal Appointment businesses. wHAt wAs tHAt liKe? At these firms I received a conservative, but invaluable schooling in traditional floristry. The fact that the same people who taught me the basics were responsible for Princess Diana’s wedding bouquet still blows my mind.

tell us How BlomBoy BegAn? I refer to BLOMBOY as my nom de plume—a nickname and passion project that became a brand. It was a very organic process, born from a need to make flowers a bigger part of my diverse creative output. wHAt’s your Advice for turning A pAssion into A Business? Do what you love, fight for it, fail at it, and keep doing it. wHAt Keeps you motivAted? My ambition is to play a role in making the world a more beautiful place. I used that line long before Miss America did. wHAt do you do wHen you’re not focused on flowers? I am never not focused on flowers—in fact, I dream in flowers. I concentrate on defining, improving and reinventing concepts, spaces and happenings. Flowers are my favourite medium in which to do so.


If you could do a flower creatIon for anyone—who would It be, and why? That would be my friend’s six-year-old daughter, Rood. She still believes in magic, and has the purest appreciation of flowers. Flowers should never be given or created to impress—if you do so you are missing the point. anythIng excItIng In the pIpelIne? Yes. Always. Keep ’em guessing is what I say… any flower trends you can predIct? The flower industry is sadly not a very green industry at the moment. Rethinking sustainability and our petal footprint will, I believe, cause a shift in our creativity and the creations we produce. WHERE DID YOU GROW UP? I grew up in post-Soviet Ukraine, in an industrial city with grey buildings and streets. I was scouted to join a modelling agency at 15—and in few months I was on my way to Tokyo where my modelling career started. Japan has always been a major inspiration for me. It has helped me shape my artistic style—enhancing it with gentle subtlety. SO HOW DID YOU END UP IN CAPE TOWN? I came to Cape Town for a modelling job about 12 years ago and never left. I fell in love with the place. The mountains, the ocean, the sunsets, the food, the people … I just love this city. HOW DID YOU COME TO BE INTERESTED IN ART? As far back as I can remember I would always draw and paint. I started art school when I was six. Since then I’ve always travelled with pencil and paper. It means I can sketch

wherever I am … on a plane, a train or in my hotel room. HOW DID YOU TURN A HOBBY INTO A BUSINESS? I had a very quiet season in Paris while modelling and I spent most of my time walking around galleries. I felt inspired so I bought watercolour paints and started painting—and it was magic for me. It was so satisfying. From that moment I knew this was what I wanted to do full-time. HOW DID THINGS GO IN THE BEGINNING? It was not easy to make a career out of a hobby. But I kept being true to myself, telling the story of a Warrior Woman, and people seemed to like it. The response I got through social media gave me confidence to do my first show. Thankfully, a snowball effect followed. TELL US ABOUT WARRIOR WOMAN? Warrior Woman features in most of my paintings. She is a conscious, creative, compassionate being, living in harmony with her inner and outer world. She is gentle but fierce, wild and undiscovered. HOW DO YOU STAY INSPIRED? Inspiration comes from anywhere, but nature is my unlimited source

ANY EXCITING PROJECTS IN THE PIPELINE? This year I will continue collaboration with my art partner, photographer Linnea Frank. We’ve exhibited together in Cape Town and Sweden and are planning new projects in Zanzibar and Namibia for our KuniFrank Season 3 Exhibition. I also have a few private and public mural projects to do in the next few months, in London and Paris. Can’t say too much, but stay tuned to my Instagram page. BEST ADVICE YOU’D GIVE A YOUNG ARTIST? Enjoy every moment of your life. It will not get better. It is perfect right here, right now. Try new things. Oh, and wear a protective mask and clothes if using spray paint.

“I can’t explain how happy it makes me to walk in the front door. This home feeds my soul and is 100 per cent my happy place. I never get used to it,” says owner Jess. It is not hard to see why she and her family escape to their family holiday home on the Piesang River in Plettenberg Bay at every opportunity. Unusual for Plettenberg Bay—where imposing, hi-tech houses typically vie for sea views—this single-level, contemporary country-style home makes the most of its peaceful river frontage. In fact, the property is on a tiny ‘island’ accessed via a private bridge over the Klein Piesang River and is almost entirely surrounded by water. Jess loves its location: “The elements are not as harsh as on the seafront and, surrounded by the dense greenery, river and birds, it is supremely tranquil.” The house is constructed with suitably unpretentious materials: corrugated Chromadeck roofing; lofty, exposed-truss ceilings; lots of natural wood trimmings; expansive windows; and floors finished either with glossy white-screeded concrete or with Canadian beech floorboards. The pure white finishes create a cohesive backdrop for the crisp, clean interiors. The décor is quite simple but at the same time very comfortable and homely. “I don’t mind kids and dogs everywhere: this is a place for us to relax and live in so everything is loose-covered and washable. The interior is probably under-decorated, but it’s perfect for us,” says Jess, as she looks out towards the river.

Sit Pretty

Layering rugs under your outside table is a great way to add some colour and a bit of dimension to an otherwise flat space. Although they naturally shouldn’t live outside, what’s stopping you from bringing out an indoor rug for an afternoon under the trees? Better yet, take it up a notch and layer one rug on top of the other. Place the second rug at an angle and place your throw cushions on top— this way your cushions won’t come into direct contact with the grass or ground.

With a low table comes low seating. We love how this trend allows you to get creative with throw cushions, poufs and small stools around your table. Sitting on cushions is a great excuse for your guests to kick off their shoes and get real, real comfy. If you’re in the mood for something bold, opt for bright complementary colours. Or, if you’re after something softer, go for delicate hues and natural shades; they’ll also add a slightly more sophisticated feel.

SETTING YOUR TABLE

If you’re in need of some new décor and cutlery for your garden party … best to pop into @home. Try mixing and matching different colours and materials when setting the table. Here we mixed wooden bowls and platters with stone plates and bowls. Pair items like these with coloured water glasses and big balloon wine glasses and you’re good to go.

The ‘Open Your Heart’ Spring Salad fresh artichoke, cut in half and roasted baby cos lettuce, cut in half and roasted two handfuls of wild rocket radishes, thinly sliced pickled red onions (pickled in red wine vinegar with a little salt and a little sugar), thinly sliced spring onion, finely chopped salt and pepper and a drizzle of olive oil, to taste Prepare the pickled red onions the night before. Roast the artichokes and cos lettuce and place on a platter. Add the rocket, radishes, red onions and spring onion. Finish with a drizzle of olive oil and salt and pepper to taste.

THE LAST SUPPER Twenty-seven year-old artist, CJ Hendry, from Brisbane pushed herself to the limits by locking herself in a room for 50 consecutive days to produce an artwork every 24 hours and publishing them on her social media accounts as proof. The hyper realistic images are part of her Melbourne-based exhibition ‘50 FOODS IN 50 DAYS’ which was coined after CJ read accounts from inmates who were on death row. She was inspired to create 50 meals on beautiful Hermes plates, to juxtapose the luxurious platters with basic food items, believing that if she were ever to be served a final meal, she would want it on one of these plates. Each image has been hand-drawn by CJ with felt-tip pens onto 75 x 75cm canvases and cost around $8800. However, every single piece has already been sold all over the world—some even being sold before she started them. 5 2

From Bench Presses to smart Business suit Audi’s new Q5 has a bold, purposeful, hunkered-down look to it that has now become a feature of the new-generation Audi DNA. The new Q5 looks like it’s been doing bench presses and squats and then eased into a smart business suit that doesn’t completely disguise the underlying musculature of its overall form. The new car is pretty much defined by a shovel-nose look to its single-frame grille, and its shoulder line features definite styling that contrasts with the bulbous wheel arches. It’s slightly wider and has a slightly longer wheelbase than the previous car, but the use of more aluminium and high tensile steel in defined areas have seen it shed some 90kg in weight. It comes with two four-cylinder engine options. The two-litre diesel TDI gives 140kW and an impressive 400Nm of torque, for a 7,9-second 0-100km/h time.

The 2.0 TFSI petrol model, a directinjection petrol unit, boasts 185kW and 370Nm of torque for a very sporty 6,3 second 0-100km/h time. The Quattrodrive system provides great safety, particularly in wet weather. Packed full of equipment, the interior is wrought in the usual magnificent Audi blend of good taste and fine finish. The boot, however, at 350 litres can only be described as reasonable for a car of this size. another Bestseller? Jaguar recently began offering a fourcylinder version of its F-tyPe couPe and Convertible, which remains one of the best-selling two-seater sports cars in South Africa. Lest a four-cylinder version sound like a cop-out, it should be noted that Jaguar’s highly-rated Ingenium petrol four-pot motor, turbocharged rather than supercharged, packs a very healthy 221kW punch, along with diesellevels of torque at 400Nm!

This entry-level Jaguar will benefit from a weight-saving of some 52kg over its V6 and V8-engined counterparts, which should make it even more agile in the twisty bits. Jaguar says that the exhaust pipe has been specially tuned to provide a sound to match its respectable 0-100km/h time of 5,7 seconds and 250km/h top speed. But don’t expect it to sound as soul-searing as the V6 or as vicious as the V8!

THE SPECIAL EDITION C MERCEDES-BENZ has recently released a new variant in its C-Class line-up, called, rather oddly, the C-Class Edition C. You can order the Edition C in most of the C-Class engine and spec variants, ranging from the C 180 to the C 300 and also in the C 220 d and C 250 d variants. This special model is based on trim levels featuring the AMG Sports exterior and the Avantgarde interior. The exterior is highlighted by 18-inch five-spoke AMG alloy wheels finished in a high-gloss black, and the ride-height is lower, as the

Edition C comes standard with sports suspension. Interior fillips include special ambient lighting that incorporate a choice of three special hues to illuminate the door sills on night-time entry and exit, LED technology, and all controlled by the COMAND Online system. Trim combinations include a so-called ‘open-pore’ ash finish for the console and longitudinal grain aluminium for the dashboard and door trims. A flat-bottomed steering wheel with multifunction capability completes a rather ‘dashing’ interior. Active Park Control is standard, as are electrically foldable wing mirrors. LEXUS LC IS A STUNNER If Oscars were awarded in the motor industry on looks alone, the LEXUS LC 500 would be courting some serious red-

carpet treatment. The company is pretty pleased with itself, that it has managed to develop its jaw-breaking LF-LC concept car of a few years back into a production car that apparently has the overall driving assurance to go with its knockout appearance. Lexus has always produced brilliantly engineered cars, and reportedly the LC 500 is right up there with the best in a tradition that started some three decades ago. While it is available in hybrid form in overseas markets, for now the LC 500 is only on offer here with a V8 petrol motor. Not that there will be too many complaints about that with LC 500 customers. The 5,0-litre normally aspirated V8 revs to a chortle-inducing 7 300rpm, and includes braai-side snippets such as 32 valves, direct fuel Injection and a 12,3:1 compression ratio. All good sports-car-cum-supercar stuff.

for South African Wine How SA is producing some of the most sought-after wines in the world BY MALU LAMBERT

ou never know what’s around the corner on the Helshoogte Pass. It’s home to some of Stellenbosch’s most awarded wine estates, though most are obscured from view on the winding road. I’m always surprised, once I drive through one of the unassuming gates, by the scope of the estate that lies beyond. Bartinney is no different. So modest is their entrance that initially I drive past, a quick turnaround and soon I’m on a

dirt road, buffered by the scent of wild mountain fynbos, heading towards the tasting room. Set on the slopes of Botmaskop, the estate looks out over the Banhoek Valley and its vineyards are all on divergent, undulating slopes. “It’s extreme viticulture,” says owner Rose Jordaan. “We have different pruning methods for each vineyard as each one is on a different aspect.” She says this in a way that implies she knows this is meant to be frustrating, but she actually revels in the non-uniformity of the farm—and so do the grapes. We’re at the centre of the wonky vineyards, upstairs in the tasting room, taking it all in. Half a moon hangs in the blue sky behind Rose as she gaily pours us a glass of the recently launched Hourglass Chardonnay 2015. Rose has long, gold-tinged blonde hair that she wears loose hanging in waves, a ready smile lights up her face. The Hourglass Chardonnay 2015 is no ordinary release. “It’s taken us 10 years to get here,” says Rose. “This wine is a fingerprint of the harvest—it’s everything that this terroir is.”

Costing R620 per bottle, only 800 have been produced. It’s Bartinney’s way of hoisting their flag, of entering the South African fine wine market. A small, nascent market true—but one that is growing. There have been a number of new releases entering SA’s fledging fine wine category, such as Plaisir de Merle’s Charles Marais 2013 (750 six-bottle cases at R1050 per bottle). These are wines that are joining the ranks of the more established cohorts of Vilafonté, De Toren, the Sadie Family Columella and Kanonkop’s Paul Sauer. Fine wine trading, particularly of Bordeaux wines, is big business. Wines that never see the light of day sit in warehouses and are traded on computers like stocks. In fact, according to Knight Frank’s Luxury Index (KFLII): “Wine has finally overtaken collectable cars as the most popular luxury investment for the world’s super-rich.”


So where does South Africa—the 8th largest producer of wine globally—stand in this lucrative market? The answer is that we’ve been trying. A few years ago Kanonkop attempted to find a solution by offering investors the opportunity to buy ‘wine futures’ (a method of purchasing wines early while the vintage is still in the barrel). The wines were kept in a temperature-controlled environment at the estate until such time as the investor wanted to sell. The concept unfortunately didn’t take off: the problem boiled down to the frustrating logistics of warehousing. South Africa is now producing some of the hottest and most highly sought-after wines in the world. While the rise of investment wines have seen some SA estates adding a top (tippytop) tier to augment their range, there are a few who have focused on the category exclusively. De Toren—famed for their exceptional Bordeaux-style blends—is an example of one such estate playing the long game. Winemaker Albie Koch of De Toren weighs in on how to define what an investment wine is: “The wine should represent exceptional quality, ageworthiness and timelessness.” He goes on to say that three factors determine if a wine is investment material: “The ageing potential, an increasingly higher demand than supply and an element of scarcity or rarity, which will ensure a higher value for the wine and ultimately make it a soughtafter collectable.” Vilafonté is another wine brand that’s been specifically created for SA’s fine wine market. Co-founder and managing partner, Mike Ratcliffe adds: “Ultimately it is very difficult to create an investment wine as the market is not easily fooled. The most important ingredient as a common denominator for the world’s great investment wines is time and patience.”

Then there’s the question of price. I pose this to Mike, and ask him what the cost implications are when making these kinds of wines. “Price and value has always been and will always remain a relative concept. A true investment wine should always be considered retrospectively as having been exceptional value on acquisition. A wine styled as an investment wine is only distinguished from a true investment wine by the market’s ability to accept the quality, for demand to exceed supply and for the price to be exaggerated by the disproportionate demand. If a wine is expensive at release, and doesn’t increase in value—then it was never a true investment wine.” Mike elaborates that the way forward is looking encouraging, that investment wines from South Africa are being accepted, and fast. “However, the biggest challenge facing the industry in the investment space is supply. made in volumes that by international standards would be considered insignificant. There is little value in producing one barrel of investment grade wines. A second issue facing the industry is unwillingness or a lack of vision in holding back inventory for future release.” Back at Bartinney, Rose thinks there’s another piece of this puzzle to consider: “If you want to make an exceptional wine, you price it at a figure that allows you to farm your vineyards sustainably.” High up here on Helshoogte Pass, taking in the view of the natural riches of the winelands, it’s easy to consider that the concept of investment wines should— as any great wine should—begin in the vineyard. If the investment starts at a (vine) root level, the potential for South African wine reaching great heights is there for the taking.

Though Overhex produces a number of different brands, including buyers own brands, Ben isn’t shy to name Survivor as his ‘favourite child’. With the festive season and associated balmy days approaching, Ben is particularly keen on the Survivor Sauvignon Blanc: “It is a barrelfermented Sauvignon Blanc, which makes it perfect for complex meals, but it is still fresh and vibrant enough to enjoy on its own (with your legs stretched out in the sun) or as a sundowner matched with tapas.”

Q&A “Distilling is the big love of my life. I am fortunate to live on a farm with my family. We love the graciousness of country living” Just outside Oudtshoorn lies Sandkoppies Farm, home of GRUNDHEIM WINES AND SPIRITS. The farm dates back to 1858. We chat to Dys Grundling, of sixth generation, about what’s been happening in his distilling shed. WHY DISTILLING?

WHAT’S THE DIFFERENCE BETWEEN TEQUILA AND MEZCAL? Just like tequila, MEZCAL is a distilled spirit that is made from the agave plant. The differences lie in the production techniques as well as the types of agave used. Tequila is made from a single type of agave plant (blue agave) and can only be produced in the state of Jalisco, in Mexico, and in small parts of other states. Mezcal can be produced from up to 28 varieties of agave (including blue agave) and is made predominantly around the city of Oaxaca as well as in some smaller regions. Mezcal traditionally has a rich, smoky flavour that makes it fairly easy to distinguish from tequila. One tequila, two tequila—let’s make the third a mezcal.

For generations distilling has been a part of our family’s tradition. I also love making craft spirits—especially now with the interest in small production brands. TELL US ABOUT BLACK MOUNTAIN GIN?

My friend Juan Koen suggested we develop a product. He owns a marketing company and I’m a distiller. Together we joined forces and developed Black Mountain Gin, which was named after the Black Mountain range near Oudtshoorn. WHAT INSPIRED THE DOG IN YOUR LOGO?

Our family is well known for distilling witblits. In the Transvaal they used to call spirits mampoer, in the Cape they called it witblits, and in the Karoo we called it withond (white dog). The bullterrier on our labels is known as a fierce dog and, when it bites, it keeps its grip. Withond has the same effect. WHAT MUSIC DO YOU LISTEN TO WHILE DISTILLING?

Kavalan Distillery, the nation’s only family-owned whisky distillery, is the dream come true of Mr. Tien-Tsai Lee, the founder of drinks conglomerate King Car. Mr. Lee Senior had long dreamed of producing a Taiwanese whisky, but he had to wait until 2002 when the government-owned monopoly on the production of alcohol was lifted. Mr. Lee then took on world-class master blender, Ian Chang, and commissioned renowned whisky specialist, the late Dr. Jim Swan, as Kavalan’s technical expert. Kavalan distillery brings together Dr. Swan’s legacy

with a professional whisky R&D team as well as the highlyspecialised distilling and blending skills the King Car Group has cultivated for more than 30 years. KAVALAN’S FIRST INTERNATIONAL WHISKY AWARD WAS WON IN 2010 AND THE DISTILLERY HAS WON AN AWARD EVERY YEAR SINCE. WHAT WIN ARE YOU MOST PROUD OF? Our first expression Kavalan Classic single malt whisky bested some Scotch whiskies at a blind tasting during Burns Night festivities in 2010. Among Scotch blends and an English single malt, Kavalan received the highest score. This early achievement, just two years after starting, helped propel us onto the world stage. AGE IN THE BARREL IS SAID TO PLAY AN IMPORTANT ROLE IN THE MAKING OF A GOOD WHISKY, BUT YOUR WHISKIES ARE SO NEW. HOW IS IT THAT YOUR WHISKIES ARE STANDING UP TO THE BEST? The subtropical heat and high humidity of Yilan County causes an accelerated maturation. We’ve been able to develop a rich and complex whisky in just a few years, a process we often refer to as ‘maturation redefined’. In the heat of Taiwan during maturation, whisky becomes softer and smoother in a very short time, with subtropical fruitiness and a f loral fragrance. One of our challenges has been to change the methods of whisky production to suit a hot climate. AND HAVE THERE BEEN ANY NEGATIVE EFFECTS OF THE HEAT? Yes. There is a greater angel’s share. WHERE DOES KAVALAN’S NATURAL SWEETNESS ON THE PALATE COME FROM? We use natural spring water from Snow Mountain which f lows underground and is naturally filtered through hard and tightly-packed layers of earth in the mountains. This makes the water smooth, with a natural sweetness to it. Moreover, the water has a nearly neutral pH with the right hardness, creating optimal conditions for the yeasts to ferment. This is also how Kavalan achieves its complexity and creaminess. TELL US MORE ABOUT IAN. Ian was schooled in the UK from the age of 14 and then graduated from The University of Reading’s School of Chemistry, Food and Pharmacy with a Bachelor’s degree in Food Technology. Ian then used this elementary knowledge of microbiology, bioprocessing and f lavours and worked in food-related industries after graduating. A few years later, he decided to return to Taiwan to take care of his family, and it was then that he took on the job at Kavalan distillery. He has been working with Kavalan for more than 10 years. He started in a researcher position in our R&D team back in 2005, and after a series of sensory tests, he was recruited. After that, he worked his way up to the position of blender. WHAT FLAVOUR PROFILE IS MASTER BLENDER, IAN CHANG, LOOKING FOR? An incredibly smooth, mellow and creamy f lavour with fragrant, pleasant and tropical fruity and sweet characters. These f lavours and the aroma are what make Kavalan unique.

I SOMETIMES USE A SPLASH OF WINE IN MY COOKING AND THEN, WHEN I TRY TO RE-CORK THE BOTTLE, I FIND THE CORK WILL NO LONGER FIT. WOULD IT BE OKAY TO TRIM THE CORK WITH A SHARP KNIFE BEFORE RE-FITTING IT?

According to a book of wine hints published by the KWV back in 1959 you should not try to trim the cork. Cork is not easy to cut neatly. Rather soak it in boiling water for a couple of minutes to soften it, then it should slip in easily. Today it is probably possible to select any suitable style of wine for cooking, make sure it has a screw-capped bottle, then the problem will not arise.

There are many recipes for glühwein, all varying in strength and spiciness. Here’s a simple one you might like to try: Warm a litre of water and add 6 tablespoons of brown sugar. Add grated nutmeg, the grated rind of an orange and about 6 cloves (to taste), add a splash of brandy and pour in a bottle of red wine. Heat and stir, but do not allow it to boil. Strain into mugs and serve. Contents may be varied according to taste. You can also use sachets of ready mixed glühwein spices rather like tea bags. Many wine shops stock them.

FAQ S CAN I TRIM A CORK? What’s a sure way to remove a red wine stain? Is there a standard recipe to use for glühwein? Can I create a small cellar under my staircase?

I DO NOT HAVE A REAL CELLAR IN WHICH TO STORE MY WINE. IS THERE A WAY TO CREATE A SMALL CELLAR IN A CUPBOARD UNDER MY STAIRCASE? Yes, there is. The

main feature of any wine storage space should be an even temperature, so if you line a cupboard space with 10mm Styrofoam board (you can usually buy sheets from hardware stores and apply them inside the cupboard sides and door using ordinary white wood glue), you should have a reasonably insulated storage space. Cheap wine bottle shelves can be created by stacking boards on bricks laid on edge. If possible select a cupboard that is not against an outside wall, so the temperature does not fluctuate too widely. Once the wine is stored, try not to open the cupboard door more than is absolutely necessary.

I HAVE A RATHER PRECIOUS OLD DAMASK TABLE CLOTH WHICH I WOULD LIKE TO USE FOR A SPECIAL DINNER PARTY BUT I AM WORRIED ABOUT WHAT WOULD HAPPEN IF ONE OF MY GUESTS SPILLED RED WINE ON IT. IS THERE A SURE WAY TO REMOVE RED WINE STAINS FROM GOOD CLOTH?

One method sometimes recommended is to stretch the stained part over a bowl, secure it with a rubber band, sprinkle it with plenty of salt and then pour boiling water over it from about 30cm high. Another suggestion is sprinkling cornflour over it while it is still damp and then leaving it to absorb the wine before brushing off the surplus and repeating as often as needed. A further suggestion is to dilute the red wine stain with white wine. You can also use a proprietary stain remover such as Vanish. Our advice is not to take the matter too seriously. Something old SomeThing new This month we look at Two veRy diffeRenT cATegoRieS—all the spanking new white varieties as well as some much-loved old reds By Irina von Holdt CWM

W

ines are very much like us—each different and individual, with a different personality and character. Some good and, yes, some bad too! They can either be fun or hard work, some live long and become more interesting with age while others are just good for a fling. Perhaps it’s best to find a much-loved life partner—so after some wandering around it will always be good to come home. And so it is with our tastings.

Here Come tHe UnUsUal WHites We start with the Unusual White category, always an adventure into the outer reaches of what’s new and

interesting. Names such as Roussanne, Marsanne, Grenache Blanc—all Rhône varieties—are joined by Verdelho from Portugal and we’re seeing a revival of old variety Clairette Blanche. These days that dry white wine staple of the 70s and 80s, Colombard, qualifies as an unusual white much to the amusement of older hands on the panel. There are so many Viogniers now that we are considering promoting it to a category of its own. The Rhône varieties bring a new spectrum of aromas and flavours to our tasting glasses. You may sniff dried scrub, dried herbs, a touch of lavender or green olive and the taste will be softer and smoother with less acidity and never

any of that bright tutti-frutti juiciness— the sort of wine I like to call “grown up”. Verdelho is an interesting one, too. Originally from Madeira where it is a very important variety and gives its name to a particular style of the same name. The Australians have been playing with it for some years now and SA has started to do the same, often using it in blends rather than as a single varietal wine. It has a firm build and is often described as giving a nutty flavour to wine. So how does one compare a newstyle white Rhône with an old style Colombard? Apart from resetting the palate to different acid levels and flavour profiles it’s quite easy. Which is the wine with the most flavour and that gives the most drinking pleasure? Which is the glass we want to return to? Dave starts us off: “I love this category, it’s like exploring the side roads of wine. We need to explore. It’s useful to us and to the members and we never know just what we’ll find.” Nice thought. Claude likes the Sémillons, but Gregory is critical. “Too much pyrazine for me,” he says. “I can even tolerate a bit of brett and some VA (volatile acidity) which can add complexity, but maybe my threshold for pyrazines is too low.” Next the Viogniers come in for criticism. “There are now so many and they’re not all good; they’ve become ordinary,” complains Buks. Claude agrees, saying they lack any real character. This often happens when a variety becomes run-of-the-mill— routine sets in and the passion goes out. Buks pops up, “But I like the Rieslings,” he says. But then he always does. so HoW Does Pinotage Play oUt? Now we’re coming home, we know exactly where we are. But, hey! While we looked away something’s happened— new thinking, new directions and a new look. Remember fat, ripe, meaty Pinotage? Yes, we all do, but now there’s a new kid on the block. It’s lighter, less tannic and more savoury? Savoury? Yes, that sweet, ripe, red berry giveaway of Pinotage has been tweaked away to a new savouriness we never suspected was lurking under the loads of ripe berry and plum fruit. But the panel has mixed feelings.

G T W I N E | Panel Reports “I don’t like these wishy-washy styles. If you want to impress foreigners you need dense, full, ripe wines,” complains Buks. But Winnie looks at it a different way. “Quite a few are like their Pinot parent; lighter, easier and more fragrant, I like that,” she says. Tinashe agrees: “I like this leaner, fresher style. I don’t like the raisin-y, over-the-top wines, particularly those with high alcohols.” But Margaret has her ideas, too. “I didn’t find the fruit and fullness, the body, that I like,” she says. Clive likes savoury, too, and always mentions smoky bacon, but finds too much of the old “rusty nails” flavour, and too much tannin. Mention tannin and the panel climbs right onto a favourite hobbyhorse. “Lovely fruit, but not being managed well, some people are getting it wrong— quite a few with bitter tannins,” from Christine. Clive is adamant: “Tannins don’t belong here.” Dave even more so, as he says quite firmly that as soon as he finds tannin he immediately dislikes the wine. Oh dear, that’s tricky. “I don’t mind it as long as I feel they’ll come around in time, but not green tannin,” adds Clive. “Yes, some awful green tannins, nasty young wines,” shudders Christine. We have, after all, had four full tastings of Pinotage since last we reported so there are a lot of complaints and faults— such as off aromas, off-flavours, the odd acetone character, a return of the rusty nails taste, and the hardy chestnut of unbalanced and/or green tannins. There are also some lovely wines which will find their way into members’ packs. That’s why the panel’s here, to do exactly that. The grumbles change direction and we home in on the fad for coffee flavours from charry oak and again we have differing ideas. Clive explains: “Staves make these toasty, that coffee thing, all those flavours appeal to the public.” “I like the coffee thing,” says Buks stoutly. Tinashe joins in again. “The wines I like I scored very high, but flaws I found are lack of typicity or variety and too

much of that toasty/coffee flavour—it’s not from the grapes.” Buks adds a thought, “I like the toastiness, it goes with Pinotage, but not too much coffee or sugar.” “Very commercial,” Claude mutters. “I miss the exuberant, show-off Pinotage flavours, it seems as if the winemakers are embarrassed by overt Pinotage flavours,” says Irina. “These are all so low-key and polite.” Dave sums up: “This all shows there are different markets producers are aiming at. There’s something for everyone. Pinotage is very versatile.”

In a small bowl, whisk together the remaining 2 tablespoons olive oil, lemon juice, balsamic, and crushed red pepper flakes. Taste and season lightly with salt and pepper. Pour the dressing over the roasted broccoli. Add the baby kale and pomegranate arils. Gently toss to combine. Transfer the salad to a bowl and top with Feta and sliced avocado.

In a heavy saucepan over high heat, combine the shallots, wine, and lemon juice. Boil the mixture until it is thick and syrupy. This will take between 10 and 15 minutes and Reduce the heat to very low and add the cream, salt, and pepper. Whisk in the cubed butter, a little at a time. When the butter is fully combined and the mixture is emulsified, remove it from the heat. Serve the sauce immediately.

A good thing ABOUT GETTING OLDER The older I get the LESS EMBARRASSED I get

T

he older I get the less I am embarrassed by the pitfalls and stumbles of daily life. When I set off as a callow young wine writer more than 30 years ago I was always slightly on edge and sure I was about to make a fool of myself. I now make a fool of myself regularly, but am no longer embarrassed by it. Wine is the kind of subject that trips many people up. There’s so much to learn and it’s so humbling to come across somebody who really knows about it. When I joined the Cape Argus I knew nothing about wine. I had grown up in a family that regarded wine as a fancy drink that was opened at smart dinner parties and—rather like broccoli—was not actually meant to be enjoyed. It was a duty to be borne bravely, like inviting the bank manager to dinner. In any case, the selection of wines available from the bottle stores in Noupoort and Colesberg back in the 1950s consisted of Nederburg Riesling (which turned out not to be a real Riesling at all) and a sweet red concoction used by the Anglican vicar for the Sunday Communion service. The Afrikaans churches were rather secretive about their nagmaalwyn. I suspect they might have felt slightly guilty about enjoying it. The Methodists used grape juice. The incumbent wine writer at the Cape Argus in those days was a very well-

educated and knowledgeable clothing importer called Simon Rappoport who really knew a great deal about wine. The head of the Food and Drink section of the newspaper was a rather snooty lady called Florence, married to an English water colourist of great pretension who wore pin-striped suits and smelled of moth balls. They both disapproved strongly of Simon and referred to him as “that Jewish haberdasher”. One day he refused to write a sentimental piece about “Jolly wines for Christmas,” and was summarily dismissed. He was a very serious and respected oenophile and later became one of the founder members of the Wine-of-the-Month Club’s tasting panel.

‘I now make a fool of myself regularly, but am no longer embarrassed by it’ I was summoned to Florence’s desk and told briefly that I would be writing the weekly wine column from then on. I protested loudly that I knew nothing about wine, but the lady looked down her aristocratic nose and barked: “You’re meant to be a journalist. Find out!” The Cape Wine Academy had not yet been founded, so I signed up for a week’s wine introduction course at the Gilbeys company and went to stay at the delightful Devon Valley Hotel and attend lectures.

Soon after I graduated from Gilbeys the lady Florence ordered me to escort her on a trip to “visit the wineries”. In trepidation I made an appointment to interview Mr Frans Malan of Simonsig, one of the big names in the industry. We were ushered into the Holiest of Holies—a private cellar deep under the reception area, where Mr Malan had lined up his latest vintages. “What would you like to taste first?” he asked. “I’ll have a cup of tea,” Florence interrupted firmly and loudly. I could have died. To Frans Malan’s credit he didn’t turn a hair. He simply asked one of the staff to go to the house and fetch a tea tray. Florence sipped while we tasted. A little later I was at Delheim with a young photographer when Spatz Sperling was introducing me to his new vintages. “I don’t drink that stuff,” the photographer announced. “Don’t you have any beer?” I cringed. Again, Spatz obliged without a murmur. Wine people are incredibly patient. After more than 30 years steeped in wine I am no longer embarrassed. Wine is fun. It’s easy-going and it creates friendships. There are few rules that cannot be broken. Not even a beer or a cup of tea would embarrass me now.
