Welcome to the third edition of Woof!
It has been a great couple of months here at The Kennels with the Festival of Speed taking place on the estate. We’ve also had some great events including our Comedy Evening, Catch & Cook event and much more.
Looking ahead we’ve got some exciting events coming up including our Outdoor Cinema where James Bond’s No Time to Die will be the film on show. We also have a Game Masterclass with our Head Chef, Dan Turner and our Bonfire Night extravaganza in November.
The Goodwood Revival is not too far away so if you would like a table for lunch or dinner over the event, please email kennelsreservations@goodwood.com. Our Vintage Market returns on Saturday 20 August so do make sure you join us to get Revival Ready! It is set to be a brilliant day with some excellent stall holders.

Glenfiddich was a sporting lodge on the family’s Gordon Castle estate where they went on holiday every year to enjoy the grouse-shooting, deer-stalking, and fishing. It was originally a rustic retreat built by their ancestor, Jane, Duchess of Gordon, in the 1770s. The single-storey dwelling was tucked into the hills in a sheltered position overlooking the Fiddich, a tributary of the Spey. Large sash windows embraced extensive views of the surrounding countryside – its construction coinciding with the rise of the Picturesque movement. Here, the children ran freely among the hills enjoying the fresh air and swimming in the river and burns.
Queen Victoria visited Glenfiddich for a few days in 1887 accompanied by Princess Louise and attended by Lady Churchill and General Sir Thomas Biddulph. Unfortunately, their luggage was delayed, so the Queen – much to her annoyance – had to go down to dinner ‘in our riding-skirts, and just as we were.’
After dinner, Lady Churchill read Pride and Prejudice by Jane Austen to the Queen, before they retired to bed.
Lady Muriel describes the interior as she remembers it: ‘Everything was as plain as possible, the long passages being covered with coco-nut matting, and in all the rooms wide open hearths where peat was burned... The drawing-room had many unique features, the largest of the armchairs being covered with
Gordon tartan; the tables painted white.’ As the main sport was deer-stalking, many of the objects reflected this: the handles of the table-knives were made from stag’s horns. The ‘Shankery’ was a room named after Geordie Shanks, the much-loved family head gillie. It was ‘a large room where waders were dried, fly-books sorted, reels oiled, etc. etc.’
The teas at Glenfiddich were very popular with everyone, especially after a long day on the moors. Hot scones were made on an old-fashioned griddle over a peat fire. Oatcakes were baked by Mrs Lipp, Lady Muriel remarking: ‘Perhaps the happiness of Mrs Lipp got into her baking – I think it must have been so, for in Scotland, or in any other place, I have never enjoyed teas as much as hers.’
Although Glenfiddich was sold by the 9th Duke of Richmond in 1946, its memory still lives on in family lore; when Hound Lodge was converted into a sporting lodge in 2016, it drew its inspiration from Glenfiddich Lodge.

Sit under the stars at The Kennels for a fantastic evening with Bond, James Bond as the big screen shows No Time to Die
Oscar winning No Time to Die finally made the big screens in 2021 after its release was postponed due to the pandemic. In this film, Bond has left active service and is enjoying a peaceful life in Jamaica, but this is short-lived when an old friend from the CIA turns up asking for help. His mission is to rescue a kidnapped scientist which turns out to be harder than
first thought, leading Bond to find out about a mysterious villain armed with dangerous new technology. Starring Daniel Craig, Rami Malek and Lea Seydoux, it is a film not to be missed!
Traditional movie treats, including burgers, popcorn and ice-cream will be available to purchase to ensure you are equipped for the ultimate outdoor film night out.

LEVIN DOWN GOODWOOD GIN
Too steep for the plough and abundant in natural English Juniper, Levin Down, derived from ‘Leave-Alone-Hill’, is an ancient hill on the Goodwood Estate.
Juniper
Berries from this plant that thrives on the chalky lowlands of the estate form the backbone of every gin.
Mint
A perennial plant native to England, the leaves lend a delightful freshness to the spirit.
Coriander
The dry fruits are used for their delectable, spicy, lemon flavours and help to keep the gin beautifully dry.
It was here that the Charlton Hunt earned fame, drawing the nobility and gentry of the 18th century to Goodwood. Among them the third Duke of Devonshire, who galloped his horse down Levin Down at so fierce a pace he flew over a five-barred gate at the bottom – and in that daring feat introduced fence jumping to the hunt.
With a character shaped by wild-grown botanicals sourced from the estate, Levin Down Goodwood Gin is handcrafted using traditional methods, distilled with mineral water naturally chalk-filtered through the South Downs. The result is an authentic
London Dry from the wilds of West Sussex – luxuriously soft on the nose and perfectly balanced on the palate – native gorse flower lending a tantalising hint of warm toasted coconut and vanilla to forward notes of zesty citrus and characteristic juniper.

Wild Gorse Flower
This locally grown flower lends a tantalising hint of warm toasted coconut and vanilla.
ESTATE VENISON, HAUNCH PASTY, BLACKBERRY RED WINE JUS
FROM THE KITCHEN AT THE KENNELSThis recipe serves six people.
For the venison loin
1kg venison rump
For the shortcrust pastry
653g flour
375g cold butter
125g whole eggs 56g cold water Salt
For the filling
500g diced venison haunch
250g potato, thinly sliced
250g swede, thinly sliced
1 white onion, finely diced Black pepper Salt
Egg wash for glazing
For the red wine sauce
400ml beef stock
400ml chicken stock
400ml red wine
100ml port
1 sprig rosemary
4 shallots, diced
1 garlic clove
10 blackberries
A beautiful meal to enjoy going into autumn.
To make the venison loin
Trim the fat off the venison and cut into individual portions.
To cook the loin, place in a frying pan over a medium heat and seal the venison until browned all over.
Place in the oven for eight minutes for a medium roast.
Allow to rest before serving.
To make the venison pasty
To make the pastry, tip the flour into a bowl with the salt. Grate the butter into the flour and stir through. Add the cold water, eggs and mix again until the pastry forms a dough. Wrap in cling film and chill in the fridge for at least one hour.
Using a sharp knife, thinly slice all your filling ingredients into a clean bowl, mix well and season with salt and pepper to taste
Remove the pastry from the fridge onto a floured surface and roll out to a 3mm thickness. Using a 10cm cutting ring, press out six pastry circles.
Using the raw filling mix add a teaspoon to each pastry circle. Egg wash around the end of each pastry circle, then lift one side and stick down on the other to create pasties.
Use a fork or two fingers to crimp the edges firmly shut and transfer to baking trays lined with baking parchment and brush with egg wash.
Bake at 180 degrees for 20 minutes or until golden brown on top. Once cooked allow to cool.
To make the red wine sauce
Using a large saucepan over a medium heat add shallots and cook for about three minutes until lightly browned, stirring often.
Add one slightly crushed garlic clove and a sprig of rosemary and continue cooking for a further three minutes, stirring often.
Pour in 400ml of red wine and cook until reduced by two thirds, after this stage add 400ml beef stock and 400ml chicken stock and bring to the boil.
Turn down the heat and simmer until reduced by two-thirds. Using a fine strainer pass the sauce through into a clean pan, add blackberries and set aside until needed.
Plate up and serve alongside your favourite roasted vegetables.
BARKITECTURE
Kevin McCloud MBE spearheaded the project with The Duke of Richmond and invited architects from around the globe to enter. We’re delighted to home three of the kennels and in the next couple of editions we will run through the design and story behind these amazing builds.
First up is Love From by Jony Ive and Marc Newson, who were inspired by their dogs, Dave and Scruff. Jony and Marc blew up the concept of the doghouse by making it an open-ended shelter that eludes to the traditional kennel but is also functional. This kennel can be found in reception so do take a look when you next visit us.
All the money raised from the auction of the kennels went to the Dogs Trust, with over £30,000 raised altogether!

Admission is complimentary with food available throughout the day. Parking will be at Goodwood Racecourse with a free shuttle down to The Kennels.
Now that you have an outfit from the Vintage Market, Betty’s Salon will be coming to The Kennels over the event to get you ‘Revival Ready’. With slots from 7am, the team can give you the perfect vintage up-do!
