WINTER EDITION

Welcome to the fourth edition of Woof!

I always look forward to this time of year at The Kennels, when the decorations come out and the Christmas trees go up. The festive transformation will take place at the end of November in time for our Christmas Market on Saturday 3 and Sunday 4 December. The market is a real highlight for me, I love the hustle and bustle on the Putting Green, the smell of mulled wine and mince pies filling the air and seeing all the handmade, artisanal gifts, decorations and food our local stallholders have on display.

There are plenty of opportunities for you to get into the festive spirit and have fun with friends, family and fellow members, including our annual Après Ski party, Wreath Making classes, Festive Afternoon Tea and much more. We still have a few tables left for lunch on Christmas Day, Boxing Day and New Year’s Day and recommend booking sooner rather than later to avoid disappointment. As we head into the New Year, we will have our annual closure from Monday 2 to Friday 13 January with The Kennels reopening its doors on Saturday 14 January. We look forward to seeing you at The Kennels very soon.

KISS & TELL

There is a magic about mistletoe. Its potent meanings date back to the ancient Greeks, whose mythological heroes used its powers to gain access to the underworld. In Norse and Scandinavian legend, mistletoe is associated with peace, while in Druidic societies, it was thought to be a protection against evil. Our own lingering love of mistletoe dates from the Middle Ages, when the appearance of its green leaves and white berries in the depths of winter linked it to fertility and vitality – hence kissing under the mistletoe. Traditionally a berry is removed for each kiss claimed.

Mistletoe’s current scarcity in England only adds to its mystique. People have long been bewitched by the uncanny way it simply appears, rootless, in great tangled balls, high up in trees. This is because it’s a parasite that feeds off its host tree through the bark. Thriving particularly in fruit trees, the decline of English orchards (according to the National Trust, down by 60 per cent from the 1950s), has been a blow to our mistletoe supplies, which in turn has had a negative impact on wildlife – it provides winter sustenance for birds such as the mistle thrush and the blackcap and supports an array of rare moths and bugs. Although the fruit farms and orchards of Worcestershire, Herefordshire and Somerset still provide some of England’s mistletoe for Christmas revelries, much is now imported. No such measures are required, however, at Goodwood, as head forester Darren Norris happily reports: “We have loads of it, hanging in the big lime trees near the stables. It’s partly thanks to our resident group of mistle thrushes, who eat the berries and then rub the sticky seeds on to branches, which then forms new clumps. The thrushes are very territorial, so they guard the trees over the winter months in order to protect the berries for themselves.” But there is one snag: “The hard part,” says Darren, “is reaching it!”

Ethically produced, the wood comes from very old olive trees that have come to the end of their natural fruiting life and have already been replaced with younger, more productive trees.

This recipe serves 12 people.

CLEMENTINE SPONGE PUDDING

FROM THE KITCHEN AT THE KENNELS

400g butter

150g preserved clementines, chopped 200g syrup from the preserved clementines

200g golden syrup

8 tbsp orange liquor

1 orange, juice of 600g sugar

8 eggs

4 egg yolks

600g self-rising flour

4g ground mixed spice

Grease 12 dariole moulds with butter and line the bottoms with greaseproof paper.

Add the syrup, liquor and orange juice to a pan and bring to the boil, then remove from the heat. In a separate bowl, beat the sugar and butter together until smooth, then fully beat in the egg yolks and eggs. Sift flour and ground mixed spice together and then beat into the mixture until it forms a smooth batter.

Next stir in the preserved clementines into the batter.

Take your moulds and equally pour the syrup into each mould and then top up with the batter. Cover with foil and steam for 60 – 90 minutes.

BARKITECTURE

In the last edition of Woof, we revealed the first of our three new Kennels, which were designed for the Barkitecture exhibition that took place at Goodwoof earlier this year.

The second kennel that we have rehomed is Dome-Home by Fosters + Partners.

This kennel features a geodesic shell structure inspired by the work of Buckminster Fuller, an award-winning architect from America. A celebration of craftsmanship and fine timberwork, it was hand-built by master furniture maker, Benchmark, founded by craftsman, Sean Sutcliffe and designer, Terence Conran. The care and attention of their work brings an energy and integrity to the Dome-Home, making this kennel unique. The bowl-shaped interior has a flexible, removable padded fabric liner that closely follows the geometry of the shell, creating a snug yet practical interior for any canine resident.

New Year’s Eve celebrations at The Kennels includes an extravagant five-course dinner. Champagne is served on arrival and at midnight to celebrate 2023. Dress code is black tie. To book, visit our website.

The Restaurant

The Kennels Restaurant will be open as follows:

The Restaurant is closed Monday –Wednesday and Sunday dinner.

The Bar

The Main Bar, Drawing Room and Terraces opening times change monthly.

CHRISTMAS PUDDINGS

Goodwood Farm Shop will have their indulgent Christmas puddings in stock again this year, made by Farmhouse Cookery in Bosham. They use a very traditional 40-year-old recipe; with vine fruits and citrus peel, soaked in Goodwood Grogger Ale, with a delicate warmth of winter spices and a dash of brandy. These will be available at the Farm Shop and also at our Kennels Christmas Market.

GOODWOOD FARM MEAT CHRISTMAS ORDERS

The Farm Shop will start taking Christmas meat orders in November and will include beef fillet and beef rib, as well as chipolatas, streaky bacon and sausage meat – all you need for pigs in blankets and stuffing! For more information, please visit our Farm Shop.
