The Spectrum of Cultural Cuisine Understanding where your residents lie on the spectrum will enable you to provide the cultural food experience they expect.
Cultural cuisines within the last decade have appeared quite frequently on many healthcare menus. With the changing demographic of long-term care, retirement and broadening taste buds of the next generation, it is more important than ever to better understand the spectrum of cultural cuisine.
The spectrum of cultural cuisine can be applied to cultural foods from many different countries.
Authentic Chinese
When it’s not clear where a recipe or product lies on the cultural spectrum, people can feel disrespected or disappointed in the food served. For example, a dish like sweet and sour pork fits the whole spectrum. There is the Canadian Chinese version where you have diced pork with sweet and sour sauce, the authentic Cantonese version where the pork is battered, deep-fried, then stir-fried with pineapple, peppers and sauce, and something at the center where you have diced pork and pineapple.

This article will use Chinese cuisine as an example. The cultural spectrum for Chinese cuisine includes Canadian Chinese food at one end, authentic Chinese food at the other end and in the center, a mixture of the two. Also important to note is that China is a large country with a complex culture. Its cuisine differs greatly from region to region.
Canadian Chinese
If you were serving the Canadian version to an authentic Chinese group, they may feel disrespected and unhappy with the food due to the lack of due diligence on your part. In addition, in today’s world of sharing, these examples can be made public on social media which can hurt a company's reputation. It’s also important not to stereotype a culture. An example of this would be fortune cookies and pagoda take-out boxes, these are not authentic Chinese items. Instead, understanding the culture and talking to individuals from that culture will allow you to present more genuinely. While this article focused primarily on Chinese cuisine, the spectrum of cultural cuisine can be applied to cultural foods from many different countries. Especially in Canada, a country with a rich immigrant history. As different cultures have become represented in Canadian society their foods have sometimes been adapted to Canadian tastes. Being aware of the spectrum of cultural cuisine will ensure that you provide the appropriate food based on your resident population's personal cultural preferences.
Tips on how to get it right!
Understand where your residents are on the cultural cuisine spectrum. Research the specific culture. Vet the recipe or product with someone that is from or familiar with the culture. Clearly present assumptions and adapt based on the feedback.
