NATIONAL PREPAREDNESS MONTH September is National Preparedness Month. Would you know what to do in the event of a major emergency? This website will help you learn more about putting together a family communication plan, constructing a preparedness plan, and how to get involved in your community. September is a great month to read up on ways to plan ahead, put together a great plan in case a disaster should strike, and help you to be prepared.
FILL UP BREAKFAST MUFFINS Some days it can be hard to get everyone to grab some breakfast in the morning before they have to hurry to catch the bus or get to work on time. This make ahead recipe will fill everyone’s tummy and give them a great start on their day .Ingredients:
2 carrots, shredded 2 bananas, mashed 1 zucchini, shredded ¼ cup vegetable oil ¼ cup Greek yogurt 2 eggs 1 cup whole wheat flour 1 ½ tsp. baking soda
½ cup packed brown sugar ½ cup rolled oats ½ cup shredded coconut ½ cup chopped pecans or walnuts ½ cup dried cherries or blueberries ¾ tsp. cinnamon 1 tsp. salt ¼ tsp. ground ginger
Directions: Preheat oven to 375 degrees F. Grease 12 muffin cups. Mix carrots, banana, zucchini, vegetable oil, yogurt, and eggs together until well blended. In a separate bowl, blend flour and baking soda. Add the brown sugar, oats, coconut, pecans, cherries, cinnamon, salt and ginger into the flour mixture and mix well. Combine the flour mixture with the egg mixture and mix until fully incorporated. Scoop the batter into the muffin cups. Bake until a toothpick inserted in the center of a muffin comes out clean and the edges are slightly brown (15-22 minutes). Cool for 15 minutes before removing from the muffin tins and moving to a wire rack to continue cooling. Recipe modified from AllRecipes.com and KatieTries2Cook
